ou would hardly think of your great-grandparents’ vegetable garden as a family heirloom, but the seeds from that crop are things to be cherished and passed on down the generational line. Heirloom plants sometimes have an interesting backstory, too, just like that piece of antique furniture or gem necklace that belonged to your ancestor. Take one particular variety of tomato. It is known as the Mortgage Lifter because a Depression-era mechanic in West Virginia cultivated it and sold the seedlings to pay off a six-thousand-dollar debt. To this day, the Mortgage Lifter remains popular among West Virginia gardeners for its immense size and tastiness. Heirloom plants come from pre-World War II farmers and gardeners who grew openpollinated crops, or crops pollinated naturally by wind and insects. Their yield was a mixed bag of fruits and vegetables that varied in color, shape, and size. They took seeds from the most desirable ones and saved them for future generations to plant and enjoy. Most store-bought produce consists of hybrids—specially tailored plants that big companies depend on for their productivity, consistency in appearance, and survivability when it’s time to ship them to stores across the country. According to heirloom gardeners, quality went by the wayside when agriculture became industrialized. Nothing, they say, compares to the taste of an heirloom tomato or the fragrance of an heirloom rose. These authentic traits are disappearing as more heirloom plants go extinct. Historic records show that more than half of the different varieties of bean, tomato, corn, and other fruits and vegetables have disappeared; 86 percent of apple varieties are gone; globally, we’ve lost 75 percent of farmed plant diversity. A Peaceable Kingdom
American Robin The most beloved of birds reminds us about the importance of species conservation.
O
ur perception of the robin as a winged companion has roots in folklore, where the bird often appears showing altruism and kindness toward humans. According to one such tale, on a winter night long ago, it encountered a child sleeping next to a dying fire. The robin used its wings to fan the flames and keep the fire burning hot throughout the night. It was the prolonged exposure to the embers that gave the bird its red breast. Although the American robin was actually named after the European robin (a different species of bird but similar in appearance), our American version lives up to its friendly reputation. While we work in the garden, it is there with us, blithely following the wake of overturned soil, hoping to find worms or bugs. It nests on the ledges of our homes and lays eggs that look as if they had been dyed Easter-blue. It is also quite cute with its plump belly and whistling carol, which comprises “words” of two or three syllables and sounds a bit like, “Cheerily, cheery, cheerily, cheery!” We may think of the robin as our backyard bird, but it can live in a variety of habitats across the continent. For this reason, it is one of the most familiar avian species. The American robin’s remarkable adaptability may offer some protection against land development and the changing climate, but this bird is only one of several hundred species residing in North America. The National Audubon Society recently completed a study looking at annual bird counts from the last thirty years and comparing that data to the current climate model. What they

found was that climate change threatens 314 bird species by displacing or shrinking their ranges of habit within the next sixtyfive years. And that’s the best-case scenario. Audubon’s study is important because it defines the location of many bird species’ habitats and encourages conservation of those precious swaths of land. In the Kansas wetlands and prairies, at-risk species include the American white pelican, the prairie falcon, and the bald eagle. Curbing land development and minimizing global warming seem like overwhelming challenges, but homeowners can do little things at home to ensure the survivability of birds like our beloved redbreast. Planting native fruit trees and shrubs, avoiding the use of pesticides, and simply making backyards and gardens a haven for birds will go a long way toward sustaining their numbers. Now on to our main course. Let’s talk about design principles. A kitchen’s layout should observe an arrangement known as the work triangle. The work triangle is a useful guide to help people think about functionality. Preparing meals, after all, remains the kitchen’s first purpose. Areas for storage, preparation, and cooking make up the points of the work triangle. Imagine drawing a line from the refrigerator to the sink to the cooktop and back to the refrigerator again. Most of the meals you prepare require moving between these three stations, so you want the distance to be comfortable. Think efficiency. Consider adding large windows to brighten your workspace with natural light. Pull-out pantry shelves make it easy to find ingredients and cookware by giving you a top view of the shelves’ contents. The colors of citrus are like an explosion of spring.

pring brings the first full days when fresh air is welcomed into our homes and thoughts of days spent out of doors begin to come to mind. Not only do they delight the eyes, but the fresh, clean flavors of citrus are also a wonderful way to wake up recipes for this season of renewal. This spring citrus menu begins with a broiled grapefruit and spinach salad, inspired by a delicious breakfast my mother used to serve: grapefruit halves, topped with sugar and broiled to perfection. Here, however, the grapefruit is cut into slices, sprinkled lightly with sugar, broiled, and, once hot, used to top a salad of baby spinach and fresh spring herbs. The grapefruit vinaigrette is quick and easy to prepare, and it will keep well for several days. For an interesting twist, add a sprinkling of poppy seeds to the salad. The entrée is actually a faux citrus dish of what are called arancini, or “little oranges.” These small breaded rice balls are not really oranges at all, but are so named for their appearance. Hand-formed balls of leftover risotto, rolled in a breading mix, are fried to a golden color—hence, the name. Although variations on this theme are usually served as appetizers throughout Italy, when accompanied by a vegetable or salad and hearty bread, they can also make a tasty and satisfying meal. Our “little oranges” were made with a batch of Mushroom Risotto and stuffed with shredded non-dairy mozzarella. Because they can be prepared several hours in advance, up to the point of frying, they are an easy menu item for casual entertaining Roasted peppers are a sweet accompaniment to any meal, and, in this case, using orange bell peppers is a fun variation on the colors of citrus. The roasted peppers are also easily prepared as much as a day or two ahead of serving, making them ideal for a stress-free spring luncheon. The first crop of sweet cherry tomatoes, are wonderful when simply combined with whole cloves of garlic, quality olive oil, and sprigs of Spinach-Grapefruit Salad fresh thyme, and slowly oven roasted. It’s difficult to say what makes our all-time favorite double-crust lemon pie more delicious—the tiny For the dressing: bits of whole lemon in the filling or the unbelievably flaky crust. Handed down from my grandmother, it 1/2 cup freshly squeezed grapefruit juice 2 teaspoons Dijon mustard continues to stand the test of time, and is bound to become your new family favorite, too. salt and pepper to taste 1 teaspoon sugar, if desired 1/4 cup olive oil
For the salad: 1 bag organic spinach 1/4 bag fresh spring salad mix, if desired 2-3 whole grapefruit 1-2 teaspoons superfine sugar
Prepare the dressing first; mix all the dressing ingredients together except the olive oil, then whisk the oil in slowly. Set the dressing aside and prepare the salad. Wash the spinach and drain well. Mix it with the fresh spring salad mix,if desired, and plate. Cut the grapefruit into quarter-inch slices. Remove most of the peel, place the slices on a baking sheet, and sprinkle them with a little superfine sugar. Place the grapefruit slices under the broiler and broil them until the sugar begins to bubble, remove them from the oven, and place two slices on each salad. Drizzle the grapefruit dressing over the top and serve.

This recipe works best with risotto that has been refrigerated overnight, and it is therefore a great use for leftover risotto. Lightly beat the egg replacer for 2 eggs, and stir into the risotto with approximately one-half cup of the bread crumbs until well mixed. If the mixture is too moist to mold into balls, simply add additional bread crumbs. Form the rice mixture into two-inch balls, poke a hole into the center, and place a teaspoon of the Daiya mozzarella shreds inside, closing over with the rice. Lightly beat the second egg replacer in a shallow bowl. Put the flour and the remaining bread crumbs in their own shallow bowls or plates. Roll the stuffed rice balls in the flour, then dip them in the beaten egg replacer mix, and finish by rolling them in the bread crumbs. Place the rice balls on a waxed paper-covered baking sheet and refrigerate them for one to three hours. They can be made earlier in the day and fried later just before serving, or up to about 45 minutes before serving and kept warm, uncovered in a low oven (300 degrees). When you are ready to cook, heat the vegetable oil in a heavy-bottomed skillet. When a small piece of the mixture dropped into the hot oil rises quickly to the top, the oil is ready. Fry the rice balls a few at a time until they are golden and crisp. Drain them on paper towels and serve them hot with the Roasted Cherry Tomatoes and Roasted Orange Peppers.

Roasted Cherry Tomatoes 1 pint cherry tomatoes 2-3 tablespoons olive oil salt and freshly ground pepper to taste 2-3 sprigs fresh thyme
Preheat the oven to 300 degrees. In a bowl, toss the cherry tomatoes and the olive oil with a little salt and freshly ground pepper. Place them in a shallow baking dish and add the sprigs of fresh thyme. Roast the cherry tomatoes for one to one and a half hours or until the skins just start to brown or burst, stirring occasionally. Remove the thyme and serve the roasted tomatoes with a garnish of additional fresh sprigs of thyme, if desired.
Roasted Orange Peppers 2 orange bell peppers 1-2 tablespoons olive oil
Broil the peppers whole, turning them as each side browns. Remove them from the oven and place them in a brown paper bag. Close the bag up tight and set it aside for fifteen to twenty minutes, allowing the peppers to steam. Remove the peppers from the paper bag; their skins should now be easy to remove. Cut the peppers into quarters, deseed them and remove any large veins, and cut the pieces into quarter-inch-thick strips. Place the pepper strips in a shallow bowl, drizzle them with the olive oil, and set them aside for at least thirty minutes. If covered and refrigerated, the pepper strips will keep for four to five days Make extra and enjoy them on toasted slices of a baguette with an assortment of your favorite olives.

Mix the sugar, flour, and salt together in a bowl. Add the softened butter and blend well. Add the beaten egg replacer and beat the mixture until smooth. Stir in the water with the lemon rind and lemon and mix well. Set mixture aside and prepare pie crusts.

Wood Savers celebrates 25 years of preserving wood across South Central Kansas This business took off with a bang, as homeowner demand for a company that could properly clean, stain, and seal decks, fences, and siding grew.

n 1990, Wood Savers was one of the first companies in Wichita to preserve exterior wood. Owners, Bob and Judy Tracy, gave up their eight-to-five jobs fifteen years ago to work as a team, so they could give their customers the utmost in service. “We’ve never looked back,” says Judy. “Our customers come first and last in the process, as our philosophy has always been to let South Central Kansas home-owners know that they can trust us to do an outstanding job, and we’ll always be there to provide assistance when needed.” Today, they are proud to say that, along with their very experienced staff, they have expanded the business to include extensive repairs, rod-iron installation, and decorative deck enhancements along with preservation work. “Our business has grown every year, since we started,” Bob says. “I’m my own competition. In the last ten years, Wood Savers has expanded their work from the sealing of decks and fences, to refinishing log-cabin and cedar-siding homes. Preheat the oven to 400 degrees. Beat together the egg, water, and vinegar and set aside. Cut the Crisco into the salt and flour until it resembles peas and cornmeal. Pour the liquid over the flour mixture. Stir and toss lightly together until the dough comes together. Then gently form into 3 balls. Shape one ball of dough into a circle and using a cloth-covered rolling pin,
lightly dusted with flour, gently roll the dough out from the center to fit the bottom of an 8-inch pie pan. Place the crust in the pan and pour in the lemon filling. Roll out the second ball of dough slightly larger, place over the top of the filling, and using the extra dough, pinch the edges together and seal with a little water, if necessary. Brush the top with the reserved beaten egg replacer, and sprinkle with the 1 tablespoon of sugar. Vent the top of the pie and bake on the middle rack of the oven for thirty to thirty-five minutes, or until the top is golden brown. The third ball of dough can be frozen for later use as a single-crust pie. Or use some of it to form lemon leaves to top your pie, and bake the remaining scraps sprinkled with a bit of sugar and cinnamon. After all, there’s no reason why you should have to wait to enjoy a piece of this delicious pie crust!
