Long before exquisite estate homes, a championship golf course and a lavish clubhouse stood in what is now the community of Isleworth Golf & Country Club, the area was a prime citrusproducing operation with a fascinating history dating back more than a century. Decades before golf icon Arnold Palmer ever conceived the idea of building Isleworth, the 1,600 acres of citrus land along the Butler Chain of Lakes was already a community in its own right. Called Isleworth Groves, the property was dotted with homes and barracks for grove workers and their families, a packing house, a chapel and the Chase Family homestead. Just as they had shaped the area’s citrus operations, the Chase Family played a major role in developing neighboring Windermere.

But the structures on the property have now been replaced by monumental statues, lush fairways and distinctive singlefamily homes. To commemorate the 25-year history of Isleworth Golf & Country Club in 2011, Isleworth Living will resurrect our community’s history in a five-part series called Celebrating 25 Years of Isleworth. We begin with these historic photographs, which provide an invaluable glimpse into Isleworth’s pioneer years. The remaining four installments will publish throughout 2010. Isleworth chef competes on international level Russell Scott finishes second in cooking challenge with Brazilian flair

Russell Scott has cooked for professional athletes, dignitaries and captains of industry behind the gates of Isleworth. He has headed kitchens in famed hotels and country clubs, including Hotel Nikko in Los Angeles and Virginia Country Club in Long Beach, Calif. This fall, the executive chef of Isleworth added another distinction to his resume as he competed for a chance to represent all of the Americas in the 2010 Global Chefs Challenge that takes place in January. Scott, who was selected as the US representative after winning the 2008 USA’s Chef of the Year title, finished second in the semifinal round of the global cooking challenge that took place in São Paulo, Brazil. Canada placed first, earning the right to represent the Americas at the Global Chefs Challenge, and Chile came in third. Chefs from four North and South American countries competed in a mystery basket competition where they prepared a menu using a preselected list of ingredients. They were required to use salmon and shrimp for the first course, corn for the second course, chicken for the third course, and coconut and mango for the dessert course. “I am honored to have had the opportunity to represent Isleworth and the US in this competition,” Scott said. “It was a close competition, with just two tenths of a point between us and Canada. We had the opportunity to sample some terrific regional Brazilian cuisine and can’t wait to recreate some of these dishes for our members and guests here at Isleworth.” No stranger to competition, Scott competed on both the 2000 and 2004 American Culinary Federation National Team and helped lead the 2004 team to victory at the International Culinary Art Exhibit in Germany. Now that his competitive cooking circuit has concluded, Scott has turned his attention to the next best thing – holiday cooking. See what recipes Scott has in store for the holidays.

CHESTNUT STUFFING Ingredients ½ lb. breakfast sausage ½ cup celery 1 cup onions ½ loaf (1 lb.) bread, large diced ½ tsp. sage, ground, dry ¼ tsp. thyme, whole, dry

¼ tsp. pepper, black “28 mesh” 2 cups chicken stock 1 egg 1 tbsp. salt 1 cup chestnuts, split 4 tbsp. butter

Instructions Measure all ingredients and have at your side. Brown sausages in a heavy gauge soup pan. Add celery and onions. Saute until soft. Add pepper, sage and thyme. Cook for an additional 2 minutes. Add bread and mix in to coat the bread with seasonings. Add chicken stock and blend well. Mix in salt, egg, butter and chestnuts. Transfer to baking pan and bake for 15 min. at 350 degrees. Remove and let cool. Cover, label, date, refrigerate and reserve for Thanksgiving sandwich.

CRANBERRY RELISH Ingredients ½ cup sugar, caramelized 1 cup port ½ cup cranberry juice Juice from 1 orange

3 cups cranberries, fresh 2 tsp. ginger, fresh minced 2 apples, skinless, diced 1 tsp. lemon and orange zest

Instructions Simmer the port, cranberry juice, orange juice and sugar until the sugar is dissolved. Add the cranberries, ginger, apples and zest. Simmer slowly until the liquid becomes syrupy. Chill and serve.
