◎◎アメリカのラーメン最前線◎◎ What is “ramen”?

(Basic Information)

Ramen is a noodle dish that originated from China that combines soup, noodles and other ingredients together.

Over time, this dish evolved according to Japanese taste as “ramen” (*1) today, considered a Japanese dish. Although both noodles, the difference between soba and udon noodles is that “kansui”(*2) is mixed into the flour for ramen noodles.

Ramen consists of three key ingredients: noodles, soup, and topping; but preparing the soup is considered most difficult and thev distinguishing element that is the root of originality for each ramen shop.

Therefore, without success in preparing the soup, a “good-tasting ramen” is not possible. Also, the flavor, richness and the texture of the noodles as well as their relationship to the flavors overall is the cornerstone to serving and

enjoying quality ramen. While many methods are used to produce original noodles of special characteristics, each ramen shop generally has their original recipe of soup. The secret to that special blend of flavors is the key element for success.

The main flavors of soup broth offered are shoyu (soy sauce), miso, tonkotsu (pork), and shio (salt). Listing others will be endless, so I will only introduce the basic flavors here. *Similarly, champon is another flavor offered, which is considered separate from ramen.

Noodles

Ramen noodles are prepared by combining flour and kansui (differs according to each shop). Some shops use soba powder for their noodles. Kansui is not considered a requirement, and others use eggs. When producing the noodles, glutin is generated and adds body to the

世界に広がるラーメンブーム ラーメンとは？ ( 基礎知識 ) 元々ラーメンは中国から伝わった麺料理 で、麺とスープに具材を加えた食べ物なのだ が、長年かけて日本風に開発された「ラーメ ン」( ＊注１) は日本食である。同じ麺でも蕎麦、 うどんとの違いは、小麦粉にかん水 ( ＊２) を 混ぜるところにある。ラーメンは、麺、スープ、 具の三構造で成り立っているが、スープ作り が最大の難関でもありそれぞれの個性を作り 出す大元である。従ってこのスープ作りの成 功無しに「美味しいラーメン」はありえない。 そしてスープの味、濃さと麺の食感と風味と の相性がラーメンを味わう一番の要となる。 麺作りも独特な製法であるが、スープは各自 ラーメン店主がオリジナルのレシピを持つの が一般的。その秘伝の味が人気のポイントと なる。基本的な味は醤油、味噌、とんこつ、 塩といった味が主流で、他の種類を挙げると きりがないので、今回基本の基本を紹介する。 ＊同等の種類には、チャンポンもあるが、ラー メンとは区別されている。

る為、どのラーメン店も製粉業者を厳選して いる。製麺時には水分や煉り具合の調整をし グルテンを引き出す。使う水にこだわる店主 もいる。 製麺は自家製も多いが、ほとんどは製麺工 場に各企業、個人がレシピを依頼するのが一 般的。スープと絡ませる為、コシや喉越しの 食感が重要なポイントとなる。 種類は太さ（細麺、中麺、太麺、極太麺など） と形（ストレート麺、ちぢれ麺）などがあり、 生麺を湯がいて用いる。

スープ

こってりかあっさりのスープの濃さ、甘さと 辛さ、脂の量でスープを調節する。スープは 基本の出汁とタレとのコンビネーションにより 「ラーメンスープ」となる。出汁はラーメンの タイプによって異なるが、基本的には鶏がら、 豚骨、牛骨、昆布、野菜などを混ぜて煮たも のをいう。肉から摂った出汁に生姜や長ネギ、 香味野菜などを混ぜて骨髄エキスの臭みをと るところが多い。野菜だけで作るスープもあ る。

タレ

タレは４大スープ、醤油、豚骨、塩、味噌 味の “決め手” となるベースになるもので、 液体、又はペースト状、粉末に味が凝縮され ており、スープと混ぜて完成するが、この後 香味油を加え味を調える店が多い。一般に

Because the noodles must go well with the soup, the body and the texture upon swallowing are important factors. Noodles come in various thickness (thin, medium, thick, very thick) and forms (straight, wavy, etc.), and raw noodles are prepared in broiling hot water.

Soup

The richness, sweetness vs. spiciness, oiliness of the soup is adjusted for each diner. The soup is prepared with the combination of basic soup stock and sauce to produce the “ramen soup.” The soup stock depends on the type of ramen,

but generally prepared from chicken stock, pork stock, beef bones, dried kelp and vegetables mixed and brewed together. Many ramen shops comebine ginger, green onions and pot herbs with the broth from the meat to erase the odor from bone marrow extracts, while others use only vegetables for the soup broth.

Sauce

The sauce is the base and “deciding factor” to define the soup as one of the four most popular flavors: shoyu (soy sauce), tonkotsu (pork), shio (salt), or miso. The sauce is liquid, paste, or powder of the concentrated flavors, mixed with the soup stock for completion. Many ramen shops add flavored oil for additional flavors.

Generally, the sauce is added to chicken or pork broth, but due to the complexity of recent flavors offered, the recipes differ significantly according to each ramen shop.

As mentioned before, ramen is offered in various combinations to offer a good balance, a key factor for enjoying ramen.

There are no set rules for toppings used, so as long as there is a good balance, anything goes. Some ramen shops use shelfish instead of char siu. In the U.S., many customers prefer kimchi or fried chicken. (*1)

ご当地ラーメン

東京 ／醤油味 スープは比較的あっさり目。麺は中太、ち ぢれ麺が多いが、様々なタイプが出回り、時 代により特徴も変わっている。付け麺（スー プをつけて食べる）や油麺（そこに沈んだ少 ないスープに混ぜて食べる）などのタイプも 多い。いわゆる 「昔ながらの東京ラーメン」は、 豚骨や鶏ガラの澄んだスープに和風ダシを加 えスープ。

「ご当地ラーメン」の存在なくては、この ブームは無かったかもしれない。 「ご当地ラー メン」は、日本列島各地方でその独特の味 が楽しめる、いわゆる地方の “ラーメン文化” なのだ。そのタイプ、スープ、味、トッピング、 食感それぞれ違う特徴を持ち、わざわざその 地方に出かけてまで「ご当地ラーメン」を楽 しむ人も多い。個人の好みを地方の名前で表 現する事がある。 代表的なご当地ラーメン 博多 ／とんこつ 典型なとんこつで長時間豚骨を煮立たせ、 髄のエキスから旨味を摂る昔からのスープの 採り方。こってりスープで甘味と旨味がある。 麺は低加水、細麺ストレートで、コシよりも 小麦粉の風味を残したマイルドな麺仕立て。 生にんにくを用いる店が多い。 札幌 ／味噌、塩味 醤油 特徴はラードを使った濃い味、トッピング は油で炒めたりボリュームがある。麺を先に 丼に入れてスープを流し込むのも札幌風。麺 は中太で縮れ麺、コシと強さがある。味噌 味が一般的に札幌風とされているが、現在

The Local Ramen

If “The Local Ramen” didn’t exist, the ramen boom would’ve never occurred.

“The Local Ramen” is the regional ramen culture offering unique flavors of ramen various parts of the island of Japan. The type, soup, flavor, toppings, texture is unique in each region that many ramen fans travel to different regions just to taste the different flavors of “regional ramen.”

Some ramen fans describe their preferences in flavor by the region.

The most representative of regional ramen Hakata /Tonkotsu The traditional tonkotsu (pork) bones are broiled for long hours to extract the flavors from the bone marrows, a traditional style of soup preparation. The soup is rich, sweet and delicious. Little water is added to the thin, straight noodles to emphasize the flavors of flour more than the body, mild in taste. Many ramen shops

Sapporo

Offered in miso, shio (salt), and shoyu (soy sauce). The distinction is the volume and use of lard to produce a rich flavor, with ingredients sometimes stir-fried.

The noodles are first placed in a bowl with the soup added afterwards, a preparation method unique to Sapporo. The medium wavey noodles are chewy and have body.

Generally, miso flavor is considered the Sapporo flavor, but currently, shoyu (soy sauce) and shio (salt) is also served as “Sapporo” ramen in many ramen shops.

The use of lard and butter is also unique to Sapporo, offering rich flavors and high volume.

Tokyo /Shoyu (soy sauce) flavor

The soup is relatively mild in flavor. Medium wavy noodles are used in general, but various types of noodles are available and the characteristics of noodles used are changing accordingly.

Various places offer various styles of soups, such as soup for dipping, or yumen (small quantity of soup in the bottom of the bowl to be mixed with the noodles).

The “Traditional Tokyo Ramen” is served with clear soup prepared with a mixture of tonkotsu (pork) or chicken broth with Japanese style broth.

Kitakata

The history of Kitakata ramen is long, with the first ramen shop opening in 1925.

The characterstic of Kitakata is the use of Takasuimen, or noodles prepared with a lot of water: 40% instead of the usual 35%.

The noodles are thicker than usual and flat, while wavy noodles are chewy. The soup is generally prepared from niboshi (dried sardine), pork or chicken stock, a clear soup of soysauce flavor.

Kumamoto /Tonkotsu (pork)

Considered Kyushu Tonkotsu style, with thicker noodles than the Hakata Ramen. The chicken broth has a rich flavor, but the fairly milder soup is the distinguishing characteristic. Also, the very thin straight noodles are used. In Kumamoto prefecture, garlic is cooked in many restaurants.

How to prepare soup stock (basic method) Supervised by Hideyuki Yamashita: Nippon Trends Food Service Inc.

Ingredients 材料 (serves 4) 1 pork bane げん骨 １個 1 whole chicken bone 鶏ガラ １羽分 Ginger しょうが Japanese leeks 長ネギ Garlic ニンニク Water (3 Liters) 水（３リットル） 1. Throw the bones into broiling water.

When the water broils again, take out and wash clean.

１．骨は沸騰したお湯に入れ、再び沸騰した ら取り出して水で汚れを良く洗います。

2. Place washed tonkotsu and chicken carcass into the newly broiled water and broil for approximately one hour. (Keep the temperature low. At times, scoop out the scum that rises to the surface. Be careful not to mix thoroughly.)

２．新しく沸騰させたスープ用のお湯の中に 洗ったトンコツ、鶏ガラを入れ約１時間茹で ます。 （火加減は弱火で。時々、上に浮いて くるアクを取ります。この時、あまり強くかき 混ぜないこと。）

3. After broiling the bones for one hour, place the potherbs inside the pot: garlic, ginger, and green onions.

３．骨を入れてから約１時間後に用意した香 味野菜のニンニク、ショウガ、長ネギを入れ ます。

4. To best draw out the sweetness and depth of flavors, place onions and carrots inside the pot and broil at low temperature for another hour. (Do not broil too much to prevent the soup from clouding.)

４．甘み、厚みを出すための玉葱、人参を入れ、 さらに弱火でコトコト１時間ほど煮込みます。 （沸騰させすぎると濁ってしまうので注意！）

5. Ten minutes before the soup is done, briefly raise the temperature to high and scoop out the scum that surfaces. Strain the soup with all the contents and take out the vegetables.

５．仕上がる１０分前に、一旦強火にして浮 いたアクを取ります。全部を細かい網でこし て骨、野菜類を取り除きます。

A

s the “Shina soba” evolved to “Chinese soba,” then “ramen,” Nissin Food Products Co., Ltd. introduced “Chicken Ramen” in 1953, which established this product. As instant ramen expanded into China, Vietnam, and then to Southeast Asia, brand recognition of instant ramen increased greatly due to the emergence of a Japanese food manufacturer, a foreign manufacturer handling their manufacturing and sales, and competitive advertising.

Ramen is a hit now, especially overseas. When drawing comparisons with China, a major instant ramenconsuming nation, the answers become more apparent. In Los Angeles alone, ramen shops are concentrated in the southeast areas of Japan Town, Alhambra, San Gabriel, Rosemead, and Roland Heights southwest of Rosemead, an area referred to as the new Chinatown. Also, Little Tokyo is home to approximately ten ramen shops, of which few have lines of customers. Analyzing the overall

customer base, many seem to be young Orientals of whom 60% are ChineseAmericans.

Also, Americans and Latinos constitute many of this young customer base.

Japanese Americans constitute approximately 10% of this population. So why is ramen so popular among young customers? These customers are first introduced to instant ramen in their own country, goes to Japan and taste authentic ramen in Japan, and then come to the U.S. and long to taste the Japanese-style ramen. It’s possible that these customers become patrons at these ramen shops, and customers increase through wordof-mouth. Also, it’s said that the latest increasing new customer base is Mexican and Latin Americans.

Analyzing this information, the picture becomes clearer as we replace the earlier mentioned China with Mexico. If I can make a joke here, I hear people say that Mexican nationals don’t know who the prime minister of Japan is, but they

do know Maruchan ramen. It’s evident that Japan’s ramen culture is contributing greatly to nations overseas.

Next, let’s take a peek into the kitchen of a ramen shop.

First, the food ingredients. Dividing them broadly, first is noodles, second is soup, and third is the soup base to which condiments are added: soy sauce, miso, pork, salt, butter, etc. In Southern California, approximately ten major food manufacturers and noodle manufacturers of small to medium size manufacture and sell ramen noodles. Thick, medium-thin, and wavy noodles vary to a less degree in terms of manufacturing techniques, but many offer unique qualities to meet the demands of their ramen shops. Also, in addition to commercial clients, many also sell their products to private customers.

This is apparent when examining the ramen section in supermarkets. Before, there were various imported products from Japan lining the shelves. However, due to the rising Yen and regulations, all products on the shelves now are all locally-produced. However, Kitakata

There are three styles of ramen shops.

A. Ramen shops offering original soup base (Soy sauce, tonkotsu, miso, salt, etc. ) to differentiate from other shops.

B. Ramen shops using soup base from food manufacturers, but provide original soup only.

hile several Japanese sake tasting events are held annually in recent years, there are about twenty professional sake sommeliers in the U.S., and consumer knowledge about Japanese sake is gradually increasing.

The goal of this report is to contribute to expanding the U.S. market by providing information about Japanese sake to professionals affiliated with the sake industry, sommeliers and Japanese restaurant industry professionals (approximately 80% of the owners are Asian).

We introduce the pairing of Daiginjo, Ginjo, Junmai, Honjozo sake with seasonal dishes specifically enjoyed in spring, summer, fall and winter. We cover the deep flavors of Japanese sake, their compatibility with various dishes, and over ten various flavors of sake enjoyed from hot to cold, depending on the temperature range.

Rice produced from rice-duck farming アイガモ農法の米

ue to the recently increasing demand for organic rice, many farmers in Iwate Prefecture, Japan is making headlines for producing rice from riceduck farming.

Mr. Takeda, a farmer in the Takizawa village of Iwate Prefecture was recently featured by a local newspaper Iwate Nippo for producing not only rice for consumption, but also sake rice from rice-duck farming.

Takeda’s sake rice “Miyama Nishiki” is produced from rice-duck farming using no chemical fertilizers or pesticides, and is brewed in our brewery.

The benefits of rice-duck farming are that Aigamo ducks eat the weeds and insects, and add oxygen to the rice paddies by swimming in them. Also, dung from the ducks fertilizes the rice paddies.

Approximately ten Aigamo ducks are released per 10 ares (0.24 acres). One challenge of rice-duck farming is the animals that prey on the ducks. One

time, approximately 200 ducks were killed by foxes.

While areas surrounding the rice paddies are barricaded to prevent animals from entering, foxes apparently dig holes to enter the area anyway, so duck-farming can be a challenge. However, Takeda sells his brand of rice with the label, “Takeda family’s rice.”

Sake rice “Miyama Nishiki” offers a very strong rice flavor and produces wonderful sake.

Most importantly, Takeda states he can’t let his own children into any rice paddy full of pesticides and wants to enjoy farming with his children, which is understandable.

Also, by having ducks in the rice paddies, local children may become interested in agriculture, which I think is a great way to pass on Japanese agriculture to our next generation.

の方が新聞などで取り上げられています。 岩手日報で取り上げられた、岩手県滝沢村 の武田さんという農家ですが、食べるお米 のほかにも、酒米もアイガモ農法で作ってい ます。 この武田さんのアイガモ農法で作った無化 学肥料無農薬栽 培の酒造 好 適米「美山錦」 ですが、 うちの蔵に入れていただきお酒を造っ ています。 アイガモ農法の利点は、アイガモが雑草や 害虫を食べてくれて、そのうえ、アイガモが 泳ぐことで酸素が水の中に送られ、しかもフ ンは土にかえって肥料になります。 １０アールあたり十羽のアイガモを話します が、アイガモを狙う動物との戦いが大変で、 キツネに２００羽近く殺されたこともあるそう です。 田んぼの周りには動物の侵 入を防ぐバリ ケードが張ってありますが、土を掘ってバリ ケードの中に入ってくるキツネもいるそうで、 アイガモ農法はかなり大変な農法でもあり ます。

しかし、この武田さんは「武田家の米」と 書いて食べるための米を売っております。 酒米として使うアイガモ農法の美山錦は、 非常に力強く、米の力を感じる素晴らしい酒 が出来上がります。 何よりも、武田さんが言うのは、自分の子 供を農薬まみれの田んぼに入れられない、と いう想いは共感できますし、子供と楽しく農 業がしたい、という考えもなるほどな、と思 いました。 また田んぼはアイガモがいることで、地域 の子供たちも農業に興味をもってくれるそう で、次世代に日本の農業を伝えていくために もこの農法は素晴らしいと思います。

ince obtaining his license as sake sommelier in 2008, and worked as a sake sommelier of “Corkage,” a Sake & Wine shop in San Francisco. When introducing a brand of sake, he describes each distinctive characteristic in great details, as if he produced the sake himself.

Also, only Yoshi is so courteous to understand the mood and preferences of a customer as he pours a serving into a glass. Originally, Yoshi came to U.S. due to his aspirations in the music industry.

Many things that he loved existed in America: films, music, and art. Yoshi has continued his musical career since he first set foot in the U.S. What inspired Yoshi to become a sake sommelier was an offer he received from his part-time job to open a “Sake bar.”

“I always loved Japanese sake, and I also wanted to have a job that passes on the Japanese culture to the United States. Sake sommelier is a job that I am passionate about and confident to continue pursuing in the long run, I job that I find very rewarding. ” said Yoshi.

Yoshi told me about his past experience working at Kubota Shuzo in Kanagawa Prefecture. The real thrill of producing sake is to “raise it.” Sake is a “live” product, and caring for it as it matures is so much fun, he explained.

I attended his sake class.

First, a basic lecture was given on Junmai, Ginjo, Daiginjo. After the lecture on the process of sake-making came the muchanticipated sake-tasting. Five types of sake total were served.

Starter : Tsukino Katsura “Kohaku Hikari,” a Junmai Ginjyo (nama) from Kyoto.

While it’s said that approximately 30% of all Japanese sake is produced in the Kansai area, I wonder if the fruity, refreshing flavor most appropriate as a starter is due to this sake being produced in the same area as “Yamadanishiki,” where the best rice for sake is produced.

Sampler 1: “Hakushika Daiginjyo” from Nara Prefecture.

Smooth and high in aroma, the elegant flavor best suits dishes with subtle flavor.

Sampler :2 “Jozen Mizunogotoshi” Junmai Ginjyo from Niigata Prefecture A popular brand at various restaurants, it’s clean, crisp flavor is mild and smooth.

Dessert: “Kamotsuru” Junmai Ginjyo Nigori from Hiroshima Prefecture Perhaps due to my experience encountering nigori sake that was always too sweet, I really appreciated this sensational flavor. The subtle sweet flavor is light to the palate.

Pairing with Sake and Cheese While some may ask themselves, “cheese with Japanese sake?,” but full-bodied sake goes great with cheese, an experience I enjoyed for the first time!

“Corkage” is a Sake Shop and Bar that is too few in the U.S. A modern sushi restaurant is operating next door, and sake bought here can be taken next door for a reasonable “Corkage” fee. “I want to open a café centered around a Sake Bar,” said Yoshi about his future goals.

Why isn’t there an English translation for the Japanese term “umami”? なぜ、 「うまみ」は英語にはないのか？

T

he concept “umami” exists in various countries worldwide, for some reason in the West, the basic concepts of taste: acidity, sweetness, saltiness and bitterness were never recognized. While similar terms like “savory taste” is used to describe such flavors, the meaning is slightly different.

In a recent conversation with a French-American wine sommelier, I’m sure my choice of words weren’t the best when I stated to him, “umami is a very valued taste by the Japanese and refers to the compatibility between Japanese sake and the food,” to which he responded rather crossly, “every country has their own version of ‘umami’ that they cherish.

The only difference is that there isn’t a single term that best defines that taste in their vocabulary.” Of course, I am also aware of the various umami flavors found worldwide, which made me wonder why such terms don’t exist.

One possibility is due to the term originating from “dashi,” or soup. Dashi is a concentration of flavors, a unique form of soup stock considered unique worldwide. Compared to soup stock in China and the West, where flavors are extracted from “extraction of umami flavors from

broiling” meat and vegetables for a long period of time, dashi is a unique Japanese method of extracting flavors in a short period of only several minutes until the water broils. Contrary to the rich and high-calorie soup stock made in the West, the Japanese soup stock is mild, yet uniquely rich in flavor.

One basic concept in Japanese cuisine is to “capitalize on the flavors of each food ingredient,” which is why the soup stock is not flavored as much as possible to best enhance the ingredients as the basic method of preparation. Therefore, dashi = umami was long recognized as a “taste” in its own right. However, in the West, soup stock was recognized as a base to which many condiments (salt, pepper, spices, butter, etc.) are to be added, so the umami of the soup stock as a “taste” in itself was never recognized.

Flavors such as “umami” and “koku” (‘richness,’ this term unfortunately doesn’t exist in the English language either) are not only limited to compatibility with Japanese sake, but also extends to compatibility with wine as well. Next time, I want to expand more about the compatibility between “umami” and sake. “煮込みうまみ抽出” に対して日本のだしは水 が沸騰するまでのわずか数分程度でうまみを 独特に抽出してしまう。西洋のカロリーの高 い濃醇なものとは違い、さっぱりはしている が味わいがあるものになっているのが特徴で ある。日本料理の原点は「素材を大事にする」 こともあり、このだしになるべく手を加えず、 種（具）と調和させることを調理の基本とし たため、いわゆるこのだし＝うまみは一種の “味” として認識をされていたからではないだ ろうか。しかし、西洋ではそれは単に多くの 調味料（塩、こしょう、スパイス、バターな ど）や材料を入れる一つの下地としてしか認 識されていなかったため、そのストック単独 に含まれている「うまみ」を単体の「味」とし て認識することはなかったのであろう。 日本人のこだわるこの「うまみ」や「コク」 （悲しいがこれも英語にはない）は、実は日 本酒にかかわらずワインとの料理相性で非常 に役に立つことなので、次回は、この「うまみ」 と酒の相性について書いてみたい。

JETRO Shochu Seminar held

JETRO（日本貿易振興機構）主催焼酎セミナー開催

here was Premium Japanese Shochu Awamori event on February 10th 2011. One of the JETRO/Japan Sake and Shochu Association’s educational projects is to deepen the knowledge of the Japanese Shochu for the American market. A majority of the people in the U.S. may think “Sake” when they think of Japanese alcohol. However, in Japan, “Shochu” is a lot more popular than the Japanese sake.

The location was the Intercontinental Hotel in Century City. Hosted by JETRO Japan External Trade Organization. At the Shochu event there were 50 high-end selections from 16 Japanese Shochu suppliers. Most of them are available in the markets in the US but a few items are ready to be in the US market in the near future. The Shochu tables were lined up the along with the wall of the event room. And the appetizers which could be perfect match with the different types of Shochu had been served throughout the event at the center of the room. This event consisted of two sections: one was opened to INDUSTRY BUYERS ONLY 2pm-5pm, and the second one was opened to the public 6pm-8:30pm.

JETRO Los Angles Chief Executive Director had a speech at the beginning of the event he addressed that “I am pleased to introduce to the audience and guests Premium Shochu and awamori from Japan at this event today. This event is the largest selections of Premium Shochu awamori event in the US. The number of Japanese restaurants has been increased recent years rapidly especially 1.5 times in the last 5years. I am very happy to see the trend. I believe that the number of the Japanese Premium Shochu and Awamori popularity will be increased along with the trend.” Mr.Kimura has seen that recognitions of the Japanese Premium Shochu and Awamori will be more prevailing.

The Lecturer was Master Sake Sommelier Shochu advisor Yuji Matsumoto. Shochu seminar by Mr.Matsumoto was conducted in a professional way and included the most basic definitions of what Shochu is, which describes the differences of distilled alcohol and fermented

methods alcohol, and the differences of Honkaku One time distillation method (true which is original meanings in Japanese) and multiple distillation method, and there are the diagrams of how to find your favorite Shochu with food pairing and flavor characteristics depending on your palate.

I think the general consumer can find great tips how to select their favorite Shochu by his excellent lecture and diagrams. Four Basic flavors of Shochu are Rice, Potato, barley and awamori. Each one of the diagrams on The Power Point screen can find useful tips.

One is to explain how to drink the particular flavor if Shochu. Second one is to explain how to match certain food items with particular Flavor of Shochu. Third one is to explain how to find your favorite Shochu depending on your taste buds.

And he mentioned that there is a tangling law which may make consumers and importers confused the definitions of the Shochu. Under this law the Shochu has to be licensed as Soju which is the same category as Korean Soju. This kind of confusion may prevent from spreading a popularity of Japanese Premium Shochu.

There were the 4 cocktail samples of 4 different ingredients and each were prepared “on the rocks,” which were barley, Rice, Potato and Awamori.

Barley Shochu Cocktail ingredients are tomato juice and ponzu and shichimi (red pepper) which tastes like a Bloody Mary, Rice Shochu cocktail ingredients are pomegranate juice ratio of one to one, Potato Shochu cocktail ingredients contains orange liquor, Awamori Shochu ingredients are mint, lime and syrup and soda. This is like mojitos. Mr. Matsumoto also suggested that the consumers are mostly new to Shochu so the cocktail flavor in the US needs to be adjusted to the consumer’s palates.

Hopefully this event will help the popularity of Japanese Shochu in US.

ホテルにおいて、JETRO（日本貿易振興機構） と日本酒造組合中央会の主催により焼酎セミ ナーが開催されました。このイベントは、日本 で親しみのある焼酎をアメリカの市場に深く 浸透させることを目的として開催されました。 今回のセミナーは２部制で行われ、第１部 はレストランなどの食品関連業者向けに午後２ 時から５時、第２部は一般消費者向けに午後 ６時から８時３０分まで開催されました。メイ ン会場では、日本から１６の蔵元が５０種類も の焼酎を紹介しました。また、この焼酎セミ ナーには、今回出品した１６すべての蔵元が参 加し、参加者は蔵元の話す貴重な話に耳を傾 けていました。 今回出品された銘柄の中には、すでにアメ リカに進出しているものと、これからアメリカ の地へ進出を目指そうとしている銘柄も見られ ました。メイン会場には、本格焼酎・泡盛の 各酒蔵のブースが壁に沿って並びました。中 心には焼酎とマッチしたオードブルが用意され ました。 焼 酎 セミナ ー を 主 催 した JETRO Los Angeles の木村茂所長は、 「今回の本格焼酎 泡盛イベントはアメリカで今までで一番多く の酒蔵を招いての会になります。日本食レスト ランの数が、過去５年で 1.5 倍も伸びていま す。これは大変喜ばしいことで、今後焼酎・ 泡盛の普及につながってほしいです。 」と語り ました。 隣のレクチャールームでは、マスター酒ソム リエ（焼酎アドバイザー）松本裕司氏を招き、 焼酎についての講義が１部、２部のそれぞれ

２回行われました。講義の内容は蒸留酒と醸 造酒の違い、焼酎の原料の違いなどがやさし く解説されました。 本格焼酎と焼酎の違いは本格焼酎では原 料の香りが色濃く抽出されるという点に触れま した。そして参加者にとても役に立つ表が提 示されました。４つ原料が異なる焼酎の風味 とその特質を生かした飲み方の表。料理と合 う適切な焼酎の見つけ方表。個人の味覚、好 みに合わせた表です。一方焼酎を輸入する時 の消費者、問屋などを惑わす矛盾が生じやす い法律にもふれました。焼酎として輸入するに はカリフォルニア州条例法では韓国産の “ＳＯ ＪＵ” として登録しなければならない点です。 このような困惑し易いことが普及を妨げてい る要因と思われる点など、実用的情報がわか りやすく説明されました。 最後には各代表的な原料の焼酎をロック で、A. 麦 B. 米 C. 芋 D. 泡盛その下には各風 味を使ったカクテルが用意されました。１．麦 焼酎トマトジュース七味ポン酢 Bloody Mary を思わせる味わい。 ２．米焼酎ざくろジュース １対１の割合。３．芋焼酎オレンジリキュール、 アメリカ人に受けが良い。４．泡盛焼酎ミント ライムシロップと炭酸水モヒートと呼ばれるカ クテルを思わせるドリンク。松本氏は、 「焼酎 は、ほとんどの消費者にとって新しいものなの で、舌に慣れた味から紹介そして試すと抵抗 無なく受け入れられるのではないか」とアドバ イスしました。 このイベントが各業者の焼酎啓蒙に結びつ き、焼酎の認識がアメリカで高まることを願い たいものです。

Fifth year of growth and challenge: Largest Japan Pavilion in history held during New York International Restaurant & Food Service Show 5 年目の成熟と挑戦 ニューヨーク インターナショナル・レストラン＆フードサービス・ショーにて 過去最大規模のジャパン・パビリオン開催

T

he largest international trade fair in the U.S., the “International Restaurant & Foodservice Show of New York 2011” was held at the Manhattan Jacob K. Javits Convention Center from Sunday February 28 to Tuesday March 1. This year marks its eighteenth year for the international trade fair with various food, beverage, hotel and restaurant service providers and food industry professionals. Over eighty new companies attending for the first time with over 600 booths exhibited, over 10,000 new products displayed and over 18,000 attendees.

This year, a special site named the “Japan Pavilion” was held at the international trade fair. “Japan Pavilion” was first established in 2007, and this marks their fifth year held. This year was the largest event held with eighty organizations and corporations attending, thanks to cooperation from both the public and private sectors. The opening day was so packed with many attendees arriving that it was difficult to walk!

This year, mainly five organizations participated in the “Japan Pavilion”: The Japan External Trade Organization (JETRO), commissioned by the Ministry of Agriculture, Forestry and Fisheries to organize an exhibit and introduce Japanese agricultural and fishery products, food products, and drinks.

Council of Local Authorities for International Relations (CLAIR) introduced regional products from four prefectures: Aomori, Tottori, Shizuoka, and Ishikawa. Japan Sake and Shochu Makers Association introduced sake and shochu from about eight Japanese

breweries selected from nationwide.

Also, dinnerware, knives and cooking utensils demonstrating high Japanese technology was exhibited by five companies with support by the Ministry of Economy, Trade and Industry (METI).

Individual participation by twenty corporations were organized by Organizations to Promote Japanese Restaurants Abroad (JRO).

The first evening, the first “Celebrating the Foods of Japan” was held with support from the Consulate General of Japan in New York, JETRO and CLAIR at the residence of the Consulate General of Japan in New York, attended by corporations, many local industry professionals and media representatives.

Speeches were presented by Ambassador of Japan Shigeyuki Hiroki, who just assumed office in late February, along with Yasuo Hayashi, Director of JETRO; Masaaki Akagi, NY Branch Manager for the CLAIR, etc., with comments such as “Japanese foods like miso, wasabi, and udon are now part of the English vocabulary with endless possibilities for the future. I want to contribute to the further expansion of Japanese food,” and “I felt the power of Japanese corporations from the convention hall today,” etc.

This year witnessed a notable increase in fine products that meets the demands of the U.S. market. This is the fifth year that “Japan Pavilion” was held, and due to past experience and knowledge gained by both organizers and exhibitors, notable improvements were made in product development by many corporations based on thorough preliminary surveys conducted. ショー・オブ・ニューヨーク 2011』が、2 月 28 日（日）～ 3 月 1 日（火）、マンハッタン のジェイコブ・ジャビッツ・コンベンション・ センターで開催された。今年で 18 回目の開 催となる同見本市には、食品・飲料、ホテル・ レストランサービスなど、食関連のプロダク トなどを扱う貿易会社から小売店まで、初出 展の 80 社を含み 600 以上のブースが立ち 並び、新商品は 10,000 点以上、来場者は 約 1 万 8 千人に及んだ。 今年も同見本市内に 『ジャパン・パビリオン』 と称した特設会場が設置された。 『ジャパン・ パビリオン』は 2007 年に第 1 回目が組織 されて以来、今年で 5 年目の開催。今回は、 官民協力のもと 80 の団体・企業が出展する 過去最大規模のイベントになり、レストラン 関係者やバイヤーなど多くの業界関係者の注 目を集めた。特に初日は同会場をめがけて多 くの来場者が殺到、歩くのも困難なほどの混 雑ぶりだった。 今回、 『ジャパン・パビリオン』の組織に関 わったのは主に 5 団体。日本貿易振興機構 では、農林水産省の委託を受け、26 社の日 本企業をとりまとめて出展、日本産の農水産 品、食品、飲料などを紹介した。自治体国 際化協会は、青森、鳥取、静岡、石川県を

支援、4 県から約 20 社が出展し地方色豊か な商品が並んだ。日本酒造組合中央会では、 約 8 つの酒蔵を中心に日本全国の酒・焼酎 を紹介。また、経済産業省支援のもと、日 本の高い技術力を誇る食器や刃物、調理器 具など食まわりの製品を提供する 5 社が出展 した。さらに、独自に出展した企業約 20 社は、 特定非営利活動法人日本食レストラン海外普 及推進機構が中心にとりまとめた。 初日夕刻には、在ニューヨーク日本国総領 事館、日本貿易振興機構、自治体国際化協 会主催のもと、初の試みとなる『日本食品関 連企業交流会』も開催され、会場となった 在ニューヨーク総領事・大使公邸には、出展 企業をはじめ、現地の業界関係者、メディア 関係者らが大勢集まった。2 月末に着任した ばかりの廣木重之大使、日本貿易振興機構・ 林康夫理事長、自治体国際化協会ニューヨー ク事務所・赤木正明所長らよりスピーチがあ り、 「日本食材は、味噌、わさび、うどんなど、 英語として定着しているものも多く、まだ大 きな可能性がある。今後ますますの普及に努 めたい」 「会場から日本企業の情熱とパワー が感じとれた」などのコメントが寄せられた。 今年の傾向としてまず挙げられるのは、米 国市場の実情に合致した商品群が増えてきた ことだろう。 『ジャパン・パビリオン』の開催 も 5 年目となり、主催者・出展者両方に経験

Also, for the increasingly healthconscious U.S. market, many corporations appealed to the healthy qualities of their products. “Brown rice pasta” is made from brown rice and gluten-free (by Kobayashi noodle company, Gifu prefecture); “Aguni no Shio” are natural salts low in sodium and high in minerals (by Okinawa Seasalt Research Institute, Okinawa Prefecture); “Grain Konnyaku”effective in fighting obesity and lowering cholesterol (from Ohara Company, Ishikawa Prefecture); “low-sodium soy sauce”and “Organic Tamari Soy Sauce”(by Yamasa corporation, New Jersey) were products that created buzz.

Another trend witnessed this year is “appeal to the mass.” Due to the desire to expand Japanese food “beyond certain high-end restaurants, but to have everyone consume Japanese foods more casually” and to “have families cook and enjoy Japanese food,” JETRO held a

live cooking demonstration for various izakaya-style and other dishes like okonomiyaki and udon, which was a hit.

Also, “Nori Chips,” or seaweed processed similar to chips for easy consumption (by Yamamoto Nori Company, Tokyo), and “Miso Easy” (by Marukome, California), or flavored miso packaged in tubes, and other unique products were introduced and drew the public eye.

“Japan Pavillion” demonstrated countless efforts to promote and further establish Japanese foods in the U.S. market, an event that is surely effective in determining the direction for both the public and private sectors for further maturization and challenges to be overcome by Japanese foods in the U.S. market

用『有機たまり醤油』 （ヤマサ／ニュージャー ジー州）などが注目を集めた。 もうひとつの傾向は「大 衆化」。 「一部の 高級レストランに出かけて食べるだけでなく、 もっと広く気軽に日本食材を取り入れてほし い」 「一般家庭でも日本食を調理してほしい」 という意図で、日本貿易振興機構が、居酒屋、 お好み焼き、うどんをテーマに調理・実演デ モを開催し好評を博した。また、海苔をチッ プス状に食べやすく加工した「ノリチップス」 （山本海苔／東京）」や、チューブ状の容器に はいった味付き味噌「ミソ＆イージー」 （マル コメ／カリフォルニア州）などユニークな商 品も目を引いた。 さらなる日本食普及と定着に向けてさまざ まな試みが行われた『ジャパン・パビリオン』。 今後ますますの成熟と挑戦に向けて、官民共 に確かな手応えを実感し方向性を明確にでき たイベントだったのではないだろうか。

Difference between NY and LA : Part 2 ＮＹとＬＡは違う国 ～その 2 ～

ew York and Los Angeles is very different. The biggest contributing factor to this difference is the density of population, in addition to the approximately 20,000 people commuting to Manhattan. The population in the Los Angeles suburbs is a little over 13 million, with Los Angeles population being over 3.8 million, with moderate population density according to national standards.

On the other hand, Manhattan ranks second in population density according to the 2010 census, while Los Angeles ranks approximately 80th. Beverly Hills and Hollywood gives Los Angeles a wealthy

Compared to New York, Los Angeles has fewer places to enjoy hard liquor.

Also, Los Angeles is a region with heightened awareness for healthier lifestyles.

Los Angelinos generally don’t stay out late but go home early. Restaurant

patrons in Los Angeles head home like withdrawing tides past 8:00PM, while New Yorker patrons are just beginning to dine at 9:00PM. Also, perhaps because New York serves as the financial district and central headquarters to many corporations and foreign offices, the amount of money spent in restaurants seems to differ greatly. I believe this is where the notable difference in customer service between the east and west is generated, for in New York, servers are recognized as professionals of an established occupation with careers, with top servers enjoying high compensation for their service.

Servers in New York develop their careers from one restaurant to another, while in Los Angeles, such opportunities

for career growth seems limited for professional servers, leaving me with the impression that fluidity for professional servers aren’t established here in Los Angeles. Perhaps due to this reason, fewer restaurant servers in Los Angeles offer professional service compared to New York. I hear many restaurant managers in New York say, “Too many servers in Los Angeles are aspiring actors” (although the same can be said about New York).

Also, one big challenge is the management of branches. Original store locations are proactive in developing skills with established teamwork, but training of new employees can’t be done overnight.

Therefore, too much public notoriety can become an issue. To be continued...

で東と西の根本的なサービスの違いが生まれ てくると思う。NY ではサーバーがプロフェッ ショナルとして職種が確立しており、キャリ アがあり一流となれば収入もかなり大きい。 NY のサーバーはレストランからレストランへ キャリアアップしていくが、LA ではそのよう なキャリアアップの機会が少ない為にプロの ウエイターとしての流動性は確立されていな いように見受けられる。それゆえか LAでサー バーがプロフェッショナルと感じるレストラン は NY に比べ少ない。NY からのマネージメ

ントが良く口にする言葉では “LA のサーバー は役者の卵ばかり”。 （NY でも多いのだが）。 又、遠隔地のマネージメントという問題も大 きいであろう。オリジナル店では技術の熟練 が進んでいてチームワークもできているが新 しい従業員を訓練して、育てていくのには一 朝一夕にはできない。回りの注目を浴びすぎ るのも考え物だ。上記２件とも開店当時に大 きな注目を浴びてゲストが殺到した結果、ま だ不慣れな従業員で満足のゆく食事とサービ スを提供できなかった。 次号に続く

A Japanese-style Chinese restaurant opens! 日本の中華料理レストランがオープン！

he phrase “Japanese-style Chinese cuisine” is no doubt rarely heard in the states. In Japan, “Chinese” cuisine is among the top most popular casual cuisine, but this fact is rarely known.

Japanese-style “Chinese” is basically Chinese cuisine, but “Chinese fusion cuisine” by immigrants to suit the Japanese palate is the more accurate description. Such evolutionary dishes include fried gyoza, fried rice, yakisoba, gomoku chukka, kanitama bowl, and countless other dishes. Despite sharing the same origin, ingredients, wrappers, and noodles are arranged to suit Japanese preferences, and these are not found in traditional Chinese menus.

Among these various dishes, ramen is considered the most evolved and popular, and widely considered to be Japanese food today. On the other hand, Tan Tan Men still maintains the original form from Chinese cuisine, but the Chinese version has no soup and the flavoring is apparently different. In the U.S., while many Japanese restaurants are opening, we still don’t see many “Japanese –style Chinese” restaurants. “YU RAKU” opened recently in San Mateo last year is one of these rare restaurants in the Bay area. Approximately 90% of their customers are Japanese, who are now regular patrons.

Owner Sakae Yuizumi is a veteran chef with thirty-six years of experience and managed “Eikatsu-,” a Chinese

restaurant in Japan for over twenty years.

Yuizumi came to the U.S. for her Family, and helped open various ramen shops and Japanese restaurants before finally opening her own. YU-RAKU’s menu lists all the standard favorites seen in Japanese-style Chinese restaurants that make one reminisce of old times. Popular menu selections include the Chuka don, Subuta, Gyoza, Ankake crab fried rice, Kaisen Men, Tan Tan Men, etc.

The fried rice is especially prepared thoroughly with pork, minced onions, and egg mixed and flavored evenly. Most Japanese customers order this item.

When asked for a recommendation, I was told, “Our Hamamatsu-style gyoza is especially good.” Yuizumi is from Hamamatsu city renown for their gyoza, and gives special consideration for the ingredients used. One characteristic of their gyoza is that Chinese leek is used in small quantity to bring out the sweetness of the cabbage. The gyoza ($4.50) is fried golden brown and slightly soft. The inside is juicy and the sweetness from the cabbage is evident.

Among their ramen dishes, the “Kaisen Men” ($12.50) is the most popular.

Using an abundance of seafood, this ramen is flavored with salt with elements of both Japanese as well as Chinese with the use of paitan soup. Less oily than the traditional ramen, the “Kaisen Men” is easy to eat and considered a “healthy

ramen” due to the abundant use of vegetables and seafood. Yuizumi states the soup is made from scratch with chicken parts and genkotsu, or ankle joints from beef.

The genkotsu is more expensive than tonkotsu, or pork bones due to the more quality fatty meat. Drawing out the bone marrow extract to the fullest, vegetables are used to erase the odor, and the soup is rich in flavor and delicious! The mediumwave noodles are Yuizumi’s original recipe custom made by Yamachan.

Although customers are mainly Japanese, many local American and Chinese diners are increasing in numbers.

One possible concern to be anticipated is that “Japanese-style Chinese food” makes sense to Japanese diners, but raises questions for local diners who are confused. Seeing the sign, some customers ask, “Don’t you offer sushi?” while other American diners expect to see teriyaki and tempura on the menu. On the other hand, due to the recent ramen boom, many regular local diners come to enjoy their “ramen.”

The interior of the restaurant has depth. To leave a “clean” impression of the restaurant to diners is one of the owner’s policies that she holds dear. As a chef, Yuizumi is especially insistent on maintaining her stance of “preparing foods with clean hands.” A large TV monitor is installed in the back with the Japanese channel broadcasting at all times. Due to the nature of offering Chinese cuisine, the turnaround is fast.

Many customers tend to want to eat and leave quickly, which makes the restaurant run efficiently in response. The ability to seat and cater to various customers from single diners to large groups is another draw of this restaurant.

Reviewing the regular patrons of this restaurant, I realized there were so many customers who longed to enjoy “Japanesestyle Chinese cuisine.” Similar to how the Chinese also offer sushi, Japanese and Chinese cuisine continues to evolve here in the U.S. I look forward to seeing unique evolutions of Japanese cuisine.

any buzzed-about restaurants, bars and boutiques are opening in the lower Eastside district of Manhattan. A city of many immigrants settling with an ambiance of a distant past, the city came to life only recently within the past four to five years. However, this restaurant is operating for the past nine years, supported by the locals.

“Soy Restaurant” serves Japanese style home-cooked meals.

Stepping into the entrance blending well into the city ambiance, the interior ambiance was warm like a home more than a restaurant. With children playing, toys scattered about and photographs on the wall, the cluttered and folksy interior offers a very at-home ambiance.

“I want customers to feel like they’re visiting a friend’s house when they come to our restaurant,” said owner & chef Etsuko Kizawa. Her background in the production and wholesales of hand-made purses is unique for a restaurant owner and chef. Kizawa’s decision to open a Japanese restaurant was inspired by the terrorist attack that shook our nation on September 11, 2001.

At the time, Kizawa lived in the lower East Side and witnessed. Where the world trade center crumbling to the ground was visible, and the smell of smoke permeated the area long after the attacks. One day, Kizawa thought, “I want to do something

that has meaning and helps others,” and decided to open a restaurant that offers simple, quality, healthy home-cooked dishes that not only tastes good, but also energizes customers inside and out.

The term “Soy” used in the name of the restaurant is a basic ingredient in Japanese cuisine. Tofu, soymilk, miso, soy sauce, soybean flour, and a variety of foods are made from soy, a healthy food ingredient abundantly used in this restaurant’s menu according to their concept. Eleven appetizers, three soups, three salads, two types of rice dishes, five entrees, five tofu dishes, and several selections of “Today’s Special” is offered using seasonal ingredients. Desserts, smoothies, baked desserts all use an abundance of soy products.

The most popular dish is “Spicy Tuna & Avocado Bowl” and “Vegetable Curry” ($8.50), “Tofu Steak” ($8.50). The more lesser known among local American diners, the “Kenchin Jiru” ($5.25) is so popular that customers are said to become hooked upon their first try. Each dish is not fancy, and some Japanese customers may even think, “I can make this for myself.” However, the flavors offered here cannot be recreated in your own kitchen, a flavor that you’re sure to want to savor again.

No advertisements are used to gather customers, who come by wordof-mouth. Japanese customers constitute less than 10% of the customer base. With high demands for delivery and take-out, customers who dine-in vs. order delivery or takeout at Soy Restaurant is approximately the same. When asked why advertising isn’t use to gather customers, she replied, “When the demand gets out of my sight or control, then the quality suffers. I want to provide dishes at a quality that I’m personally satisfied with consistently.”

Without advertisements, locals still flock to her restaurant consistently. “Customers stop me frequently, saying, ‘I’m going to the store, can I get you something?’ or ‘I enjoyed the drink I had the other day,’ even when they’re not dining at my restaurant. Over time, I have regulars who strike up friendships at my restaurant, or play with my year-and-ahalf old son.

Subtle considerations are made for diners who come alone: various toys, puzzles, and magazines available to bide their time comfortably. “I want to be a mother-like presence like one in a traditional dining hall, greeting everyone with a smile,” said Kizawa about her goal. This restaurant seems to operate on intimate people-to-people connections, long forgotten by our modern society today.

anai rose in the first morning of 1985 with unusual tension.

Yasuhiro Nakasone, prime minster of Japan, departed Japan’s Haneda Airport at 10:30AM Japan time, crossed the International Date Line and arrived in Los Angeles past 3:00PM the same day.

At the airport awaiting his arrival was acting protocol chief C. Murdock, Los Angles mayor Tom Bradley, Ambassador to Japan Michael Mansfield, and Assistant Secretary of State Paul Wolfowitz.

After Nakasone’s arrival, five representatives from the Japanese American community stepped forward to pay their respects. The five representatives are: Frank Sato, National Director of Japanese American Citizens League in Washington, D.C.;

Rose Ochi, Vice President of JACL, Kaoru Tsutsui of the Nanka Kenjinkai Kyogikai, Koshiro Torii, President of the Japanese Chamber of Commerce of Southern California (JCCSC); and Kanai.

985 年の最初の朝を、金井はいつになく 緊張のうちに迎えた。 日本国総理大臣・中曽根康弘は、日本時 間の午後１０時３０分に羽田を発ち、日付変 更線を越えて同日の午後 3 時すぎ、ロサンゼ ルスに到着した。 空港には、マードック儀典長代行、ブラッ ドレーロサンゼルス市長、マンスフィールド 駐日大使、ウォルフォビッツ国務次官補など が顔をそろえた。在米日系人の代表は、一 歩退いた場所で日本の首相を迎えたのだが、 その中に金井の姿もあった。 中曽根到着後、在米日系人を代 表して 5 人が表敬訪問した。代表５人とは、日系米市 民 協 会（Japanese American Citizens League） 全 米 会 長でワシントン DC 在 住 のフランク・サトウ、同協会の副会長ローズ・ オーチ、南加県人会協議会会長の津々井馨、 南加日商会頭の鳥居甲子郎、それに金井で ある。

Kyogikai is the Nanka Nichibei Shoukou Kaigijyo. Nanka is an abbreviation for Southern California, and the organization was founded in 1949. Shoukou (commerce) is abbreviated and refers to the past progress of the Rafu Japanese Society from before the war, an organization representative of the Japanese American community in the greater Los Angeles area.

Kanai joined as a representative because of his appointed role as President of the Nanka Nishou Kai a month later, as well as his role as role as President of the Nanka Gunma Kenjinkai, the same prefecture where Nakasone is from. Both of Kanai’s parents are from Gunma prefecture, where Kanai spent long vacations in his adolescent years at his grandparents’ agricultural community. Due to this reason, Kanai serves the Gunma Kenjinkai in Los Angeles.

Not only for the Nanka Shokou or JACL members, but also for many community members who contributed to community

development and the improved social status of Japanese Americans, Nakasone’s visit was a joyous occasion.

The Japanese Prime Mister embarks into the U.S. for a meeting with the President, not in Washington, D.C., but to Los Angeles in the Pacific coast, where the President was summoned.

Putting aside the fact that President Regan was from California, Nakasone’s style was different from past Prime Ministers of Japan.

Kanai had a meeting with Nakasone in a VIP room at the Century Plaza Hotel.

In Nakasone’s speech, the message that resonated most with Kanai was “‘If we continue on this path, Japan will be left an orphan in world economy.’ Therefore, I told Mr. Nakasone, ‘Please send young people, not as expatriate employees, but young people who have the guts to walk alone when necessary. Please send as many of them here as possible.”

Soon after, I was to have a moving

experience at the same Century Plaza Hotel. A GOP Convention was held, attended by President Regan, followed by a luxurious fundraising celebration.

Our members from JCCSC with Japan Business Association (JBA) purchased thirty tickets for three tables to attend.

Our motivation for attending was to support and express gratitude to President Regan for the Japan-U.S. summit at the beginning of the year. The party finally started, and when the courses were brought to our tables, members seated at our tables clamored with excitement as we gasped, “Wow!”

Among the hors d’oeuvres, we found sushi. This was a luxurious party for GOP supporters with each attendee paying $1,000 to attend, so each attendee was from the affluent wealthy social class in Southern California. We saw this as proof that sushi achieved the level of fine dining.

南加日商の正式名称は、南加日系商工会議 所。南加は南カリフォルニアの略で、創立は １９４９年。 「商工」の二文字を冠してはいる が、戦前の羅府日本人会の流れをくみ、ロサ ンゼルス圏の日系社会を代表する組織の一つ である。 金井が代表に加わったのは、1 か月後に南 加日商の会頭に就任することが決まっていた からであり、また中曽根の出身地群馬の南加 県人会会長でもあったからだ。金井は両親が ともに群馬の出身で、子供時代に長い休み は、たいてい祖父母のいる群馬の農村で過ご していた縁から、ロサンゼルスでは群馬県人 会に属している。この南加日商や JACL のメ ンバーに限らず、日系人の地位向上やコミュ ニティの発展に取り組んできた多くの人々に とって、中曽根訪米は胸のすく出来事だった。 日本の首相が年頭にアメリカに乗り込み、大 統領と膝詰めで会談する、それも首都ワシン トンまで出向くのではなく、大統領を太平洋

に資金集めを兼ねた盛大なパーティーが催さ れました。 私 たち日商、 それ に JBA と呼 ば れる貿 易懇話会のメンバーが３テーブル分３０枚の パーティー券を買って出席しました。 年頭の日米首脳会談に対するお礼の意味と、 日米貿易摩擦を解消するため、レーガンさん にもっと頑張ってもらいたいという思いからで す。いよいよパーティーが始まり、テーブル に食事が運ばれてきたとき、私たちのテーブ ルでは、 「おおっ」というどよめきが起こりま した。 オードブルのなかに寿司があったのです。 共和党の支持者が集まる、会費が一人 1000 ドルという豪華版のパーティーですから、出 席していたのは南カリフォルニアの上流社会 の富裕層ばかりです。その席に寿司が出た。 寿司が高級料理としての地位を確立した証明 だと私は思いました。
