Flavorful dashi is the base for Japanese cuisine. Not only for clear soup, miso soup, but also as soup for noodle dishes such as soba and udon, broiled dishes, rolled omelet, and for various dishes, dashi is crucial. Umami is the principle of the deliciousness of dashi. Our basic

tastes we enjoy is sweetness, sourness, saltiness, bitterness, and umami. Among these tastes, umami plays an important role to balance four basic tastes, round out flavors.

The main umami components consist of glutamate, a type of amino acid; inosinate, a type of nucleic acid; and guanylate. Kombu containing a lot of glutamate, katsuobushi containing a lot

The single word “dashi” covers a lot of genres: Kombu dashi using kombu only, Ichiban dashi from kombu and katsuobushi, niban dashi, prepared from kombu and katsuobushi after ichiban dashi is extracted and broiled with katsuobushi; Iriko dashi, prepared from kombu and niboshi; shojin dashi, prepared from kombu and dried shiitake mushrooms; etc. Above all, ichiban dashi is considered one of the most basic of dashis, popular for the umami from Kombu in addition to the umami and flavor of katsuobushi, resulting in a mild refreshing flavor.

There’s a reason why many types of dashi combines umami ingredients like katsuobushi, niboshi, dried shiitake mushrooms, etc. glutamate in Kombu, inosinate in katsuobushi and niboshi, or guanylate in dried shiitake mushrooms combined together produces a synergetic effect that singnificantly magnified umami taste.According to an evaluation by a long-established restaurant in Kyoto, the synergetic effect of the umami flavors だしは日本食の基本 おいしいだしは日本食の基 本。お吸い物 や味噌汁はもちろんのこと、そばやうどんな ど麺類の汁、煮物やだし巻き卵など様々な料 理にだしは欠かせません。そのだしのおいし さの素となっているのがうま味。私たちが感 じる基本味には、甘味、酸味、塩味、苦味、 うま味の５つがありますが、その中でも他の 4 つの味を調和させ料理のおいしさを生む大 切な役割を果たしているのがうま味です。主 なうま味成分はアミノ酸の一種のグルタミン 酸や核酸系のイノシン酸、グアニル酸。グル タミン酸を多く含む昆布とイノシン酸を多く含 む鰹節、あるいは昆布とグアニル酸を多く含 む干椎茸を組み合わせたうま味たっぷりのだ しが日本食のおいしさの原点なのです。 だしと一言で言っても昆布のみを用いた昆 布だし、昆布と鰹節でとる一番だし、一番だ しをとったあとの昆布と鰹節に水と鰹節を加 えて煮出した二番だし、昆布と煮干を使った いりこだし、昆布と干椎茸を使った精進だし など様々なだしがあります。中でも一番だし は基本のだしで、昆布のうま味に鰹節のうま 味と香りが加わり、繊細ですっきりした味わ いが好まれています。 多くのだしが昆布と鰹節、煮干、干椎茸な どのうま味食材を組み合わせているのには理 由があります。昆布のグルタミン酸と鰹節・ 煮干が含むイノシン酸、あるいは干椎茸のグ アニル酸を合わせるとうま味が飛躍的に強く

Kombu containing a lot of glutamate is one type of sea weed of the Order Laminar ales, Laminariaceae, with a life span of 2~3 years. In Japan, kombu is harvested from a part of Tohoku Sanriku kaigan, centered around the Hokkaido coast. Many of the kombu used for consumption are harvested in its second year at 3~10m (10ft~32ft) before drying in the sun off the coast and shipped. There are mainly 4 types of Kombu. Depending on the coastline where they are harvested, kombu is classified into Ma kombu, Rishiri kombu, Rausu kombu, Hidaka kombu, used to prepare dishes that best enhances the attributes of the respective kombu type. Flavors extracted after much time and effort are now a necessity for Japan.

Arabushi is prepared by broiling raw bonito, then repeatedly smoke-dried, while molding and drying repeated produces karebushi and contains enormous amounts of inosinate. In cooking, the shaved kezuribushi is used, but the style of shaving differs according to its use afterwards. Generally, lightly shaved dried bonito has a wide surface range, most suitable for producing dashi for flavorful clear soup in a short amount of time. On the other hand, arakezuri requires a lot of time to slowly broil the dried bonito to make dashi with umamirich taste full of body and depth for udon and soba dishes. 感じられる相乗効果が起こるからです。京都 老舗料亭の一番だしの評価では、グルタミン 酸とイノシン酸のうま味の相乗効果によって、 昆布だし単独の場合に比べて、うま味を７～ ８倍強く感じられるという結果が出ました。

だしの素材 昆布と鰹節 グルタミン酸を非常に多く含む昆布はコン ブ目コンブ科に属する海藻の一種で、２～ 3 年の寿命があります。日本では北海道沿岸を 中心に東北三陸海岸の一部にかけて広く収穫 されます。食材として利用される昆布の多く は 2 年生で３～１０ｍに成長したものを収穫 後、海岸で天日干ししたのちに出荷されます。 おもな昆布は 4 種。産地によって、真昆布 （山 だし昆布）、利尻昆布、羅臼昆布、日高昆布 に分類され、それぞれの特性を生かした料理 に使われます。時間と手間をかけて醸しださ れた味わいは、日本食にはなくてはならない ものです。 鰹節は、生の鰹を煮たのちに、燻しては乾 燥させる作業を数度繰り返したものが荒節、 その後カビ付けと乾燥を経たものが枯節とな ります。イノシン酸を大変多く含んでいます。 調理には削った削り節の状態で多く使われ、 用途によって削り方が異なります。一般的に 薄削りは表面積が広いため短時間で風味豊 かなお吸い物のだしに向いています。一方厚 削りは時間をかけてじっくりと煮出すためう ま味の強いしっかりしただしが取れ、うどん やそばなど麺類のだしに使われます。

How to prepare Ichiban Dashi

Ingredients 3 liters (approx. 3.2 quarts) soft water 100 ml (approx. 3.4fl oz) water 20g (approx. 0.7oz) ma kombu seaweed 80g (approx. 2.8oz) dried bonito flakes (honkarebushi with the chiai or deep red parts removed)

Place the kombu in a saucepan with the soft water and allow to soak (1 1/2 hours during the winter months and 20-30 minutes during the summer months). If using a large saucepan, go straight to Step 2 as the kombu will have enough time to soak while the water is heating up on the stove.

Heat until just before boiling. When small bubbles appear in the saucepan, take the kombu out. (If the kombu is left in too long, it will spoil, tainting the flavor of the dashi.)

Ichiban Dashi

Ichiban dashi is one of the most important dashi of all Japanese dashi. First, dashi is taken from kombu, then katsuo kezuribushi is added and strained. The number of types of kombu varies according to the store, however, the same restaurant may demonstrate the attentiveness to use two different types of kombu depending on the season. Also, some restaurants use katsuobushi and magurobushi together, an opportunity to showcase the ingenuity and originality of the chef. Characterized for it's delicate, elegant aroma, the dashi is a must to prepare clear soups.

Turn off the heat and immediately add the dried bonito flakes. When the flakes sink to the bottom of the saucepan, remove the film/froth that has risen to the surface.

Add 100ml (approx.. 3.4fl oz) of water to ensure that the temperature remains just below 100 C (212 F).

火を止め、すぐにかつお削り節を加える。か つお削り節が鍋の底に沈んだら表面のアクを 取り除く。

一番だしとは 一番だしは和風だしの中でも最も大切なだしのひとつ。まず昆布でだしをとり、そこに鰹削り節 を加え濾したもの。使用する昆布の種類はお店によって様々、また同じお店でも季節によって 2 種の昆布を使う気配りをする場合もあります。また鰹節と鮪節をあわせて使うお店もあり、料理 人の創意工夫の見せ所ともいえます。繊細で上品な香りが特徴でお吸い物には欠かせないだし です。

To the Japanese, dashi taken from kombu and bonito is basic. Soy sauce, miso paste, etc. and other products are used additionally to enhance the umami flavors. In Vietnam, Thailand and Southern Asia, fish sauce is the foundation of umami, while Americans and Europeans would consider animal protein like meat and cheese to be umami.

To spread umami flavors, the core of Japanese cuisine in the U.S. where culinary traditions are different, I feel it’s important to define these concepts as a whole. While there may be the risk of profound change from the umami of Japanese cuisine, for example, if we use tomatoes as an ingredient to use fish sauce, we can add umami flavors from animal protein to extricate umami flavors considered delicious to American consumers, which can be interpreted as the necessity to create umami flavors for Japanese cuisine.

However, one thing we can’t forget is the importance of passing on the umami flavors of Japanese cuisine, which is also the most difficult part. Without the strong base for umami flavors, the foundation of Japanese cuisine, the possibility remains that Japanese cuisine will

JFC International Inc. was founded by locally Japanese Americans

JFC International Inc. was founded locally by the first generation of Japanese Americans to locally import rice, miso paste, soy sauce from Japan, a company with 100 years of history. Dupont Company was founded in 1906 to import Japanese food products from Japan, which expanded to become the current Pacific Trading Co. Ltd., founded in San Francisco.

Afterwards, Pacific Trading Co. Ltd. opened their Tokyo branch in 1916 to acquire products in Japan. Two companies that were precursors of today’s JFC International joined in 1958 to become Japan Food Corporation. Afterwards, Kikkoman invested in the company in 1969 and the company became an affiliate under Kikkoman Group.

In 1978, the company was renamed from Japan Food Corporation to JFC International Inc. as known today. At the time of foundation, the company sold Japanese food products mainly to Japanese American populations. As time passed,

the company gradually gained consumers among Asian American populations such as Korean and Chinese Americans in addition to increasing local demands, and changed the company name to “JFC International Inc.” accordingly. The company started to sell Japanese products to Asian American and local consumers.

While a small part of the U.S. market sell jasmine rice and other Asian food products, the basic food ingredients for Japanese cuisine sold is rice, miso paste and soy sauce. In addition, Japanese confections, sake, and seafood for sushi ingredients were the main products distributed.

The history of Japanese cuisine in the U.S.

While JFC is a company founded to mainly serve Japanese immigrants, increasing immigrant populations after the war consisting of war brides, other immigrants from Korea, China, Cambodia, and Vietnam gradually changed the form of Japanese food.

Initially, renowned Japanese foods were sukiyaki and tempura before sushi ingredients were accessible.

While sushi was not widely known at the time, sushi today is consumed not only by the Japanese, but also by other

Asian populations along with local American consumers, becoming widespread.

Currently, approximately 10,000 Japanese restaurants are said to be operating in the U.S., in recent years, many of these restaurants are operated increasingly by non-Japanese owners. In Los Angeles and San Francisco with large populations of Japanese Americans, there are restaurants still operated by Japanese owners.

However, in the Southern regions, many restaurants are operated by Vietnamese and Thai owners.

While such trends cannot be avoided, the large task of passing on authentic Japanese cuisine and the promotion of true Japanese cuisine remain not only for JFC, but for our industry as a whole to be addressed seriously.

To pass on authentic Japanese cuisine

I believe Japanese cuisine will expand more and more in the U.S. Along the way, when we address how to preserve and pass on authentic Japanese cuisine, the chefs may not be Japanese but Asian.

However, it’s important to remember the food ingredients are still Japanese food.

Passing on authentic Japanese cuisine is a task we must all achieve by overcoming industry-wide challenges. To do so, we as a supplier must bring original authentic Japanese food products.

While chefs from Japan immigrating to the U.S. are declining, thankfully, Japanese corporations such as chain restaurants and izakayas are expanding to the U.S., centered around New York City, and also to Los Angeles and San Francisco. Therefore, I think it’s important to have these Japanese restaurants to establish roots in the U.S.

Also, another idea is to invite chefs from Japan to continue education and enlightenment efforts. Last year, the Culinary Institute of America held a festival to introduce Japanese culinary culture, where Japanese chefs active in various markets were invited to lecture about the essence of Japanese cuisine, which I find very important. I feel it’s fine for chefs who learned the basics of Japanese cuisine to create fusion cuisine. However, if chefs don’t know the basics of Japanese cuisine, authentic Japanese cuisine may become extinct.

While no one can stop the evolution of Japanese cuisine, it’s important to teach the roots of Japanese cuisine. As long as the basics are passed on, I believe Japanese cuisine will ultimately return to a form that satisfies the demand for quality.

Therefore, education and enlightenment of professionals are undoubtedly important. Manufacturers and distributors of Japanese cuisine must exert this effort in this time to reflect on how to pass on Japanese cuisine as an industry.

The world’s first beer-flavored beverage with alcohol level of 0.00%, “Kirin Free” is introduced to Southern California

“Kirin Free,” the world’s first nonalcoholic beverage with an alcohol level of

0.00% is now available for a limited time in Southern California starting October.

A great hit in Japan since it’s release in 2009, last year’s sales totaled over 5 million cases. Because Japan’s beer-flavored beverage market expanded greatly after the release of this product, success in the

After limited sales in Southern California until the end of the year, sales and consumer response will be considered as we look forward to expand distribution to other U.S. regions after the New Years.

Currently, Kirin Free is distributed in Japanese American supermarkets and Japanese restaurants in Los Angeles, Orange County, and San Diego.

While this product is not widely recognized yet, consumers who sampled the beverage at Japanese American supermarkets and restaurants commented “delicious” and responded favorably.

The beverage is so close in flavor to beer that some consumers even asked, “Are you sure there’s no alcohol in it?”

Although circumstances are different from Japan, laws concerning drinking and driving are becoming stricter in this country, a greater automobile society than Japan. Therefore, I believe we have a greater chance of expanding into the market. We are thoroughly confident in our concept and flavor, so I think the challenge lies in how

far we can extend our efforts to introduce this beverage. Our current goal is to sell 4,000 cases by the end of this year, but the focus is not on actual sales figures, but to introduce this beverage to American consumers to see how we can get them to accept this beverage. We are most interested in finding out what aspects of this beverage are favored by our consumers to build our consumer base.

Beer-flavored beverage for beer fans

Because Kirin Free is a beer-flavored beverage containing no alcohol at all, this product like beer can be enjoyed safely by consumers who have to drive, work, play sports, are pregnant, ill, or not able to consume alcohol due to health reasons.

Beer-flavored beverages in the market prior to the introduction of this product is said to be non-alcoholic, but in reality, such products currently in the market do contain subtle amounts of alcohol.

This subtle amount of alcohol originates from the manufacturing method of non-alcoholic beer. Beer ingredients must be fermented to create the beer flavor, and during this process, subtle amount of alcohol is produced.

To make this non-alcoholic, there are two ways: first, to eliminate the alcohol after the beer is created; and second,

飲まれた方からは 「本当に 0.00％なのか？」 「気分が良くなるのだけど、運転しても大丈夫 なのか？」という声が多々寄せられています が、運転シュミレーターを使って運動能力に 影響が出ないかどうか独自調査をした結果、 まったく影響はでないことが証明されていま す。ターゲットは全てのビールユーザーです。 ビールを飲まれない方は、そもそもこのビー ルテイストがお好きではないと思いますので、 ビールの味を楽しみたいけれども、なんらか の理由で飲めない、今日はアルコールをやめ ておきたいという方に愛飲していただきたい と思っています。

Before we introduced Kirin Free, we also sold products containing 0.5% alcohol content at a time when regulations for drinking and driving were becoming stricter in Japan and consumers indicated concern over the lowest alcohol content.

Also, we heard from many consumers who aren’t only drivers, but pregnant ladies and consumers of non-alcoholic beverages for health-conscious lifestyles, who voiced concerns over the lowest alcohol content remaining in the body, which inspired us to develop a beer-flavored beverage with alcohol content of 0.00%. The concept started very simple, to produce a beerflavored beverage with 0.00% alcohol content, but we struggled greatly to overcome challenges in developing the beer flavor without fermentation. It took us two years to develop this product since initial conception.

Upon swallowing, this beverage is very easy to drink, characteristic for it’s fruity aroma and hint of sweetness. This flavor is especially popular among ladies.

Also, one bottle contains only 60 calories, very low compared to common beers, another characteristic of this product.

Market research conducted in the U.S. showed great responsiveness to low calorie products, another area we see as an opportunity more than Japan.

We receive comments from consumers who tried this beverage,

such as “Is this really 0.00% for alcohol content?” and “I’m feeling tipsy, am I ok to drive?” Our survey using driving simulators to test the effect of the beverage on sports ability proved there are no effects.

This product is targeted to all beer consumers. For those who don’t consume beer, we assume those consumers don’t enjoy the taste of beer itself, so we hope this product is consumed by those who want to enjoy beer but cannot for some reason, or prefers not to drink beer on a particular day.

Kirin Ichiban renewed

Aside from this Kirin Free introduced in the U.S., we sell two types of beer: Kirin Ichiban and Kirin Light, distributed only in the U.S. market. The content of the famous “Kirin Ichiban,” recently celebrating 20 years of distribution in Japan, was largely renewed in 2009. Malt 100% is used to further enhance the original umami flavor of the ingredients along with the refreshing flavor of conventional Kirin Ichiban.

When preparing beer from malt and hops, wort is made and filtered.

The initial extraction of wort filtration is called single wort or first press. Kirin Ichiban only utilizes this first press, characteristic for it’s clear palate with no crudeness. This renewal to 100% malt enhances the umami flavors of natural ingredients. Renewal to 100% malt in the U.S. from the beginning of this year brought the quality close to the Japanese level. The content and label being unified, we are strengthening our sales.

Japanese restaurant “Torafuku” offers delicious rice steamed in Kamado, offering umami visually 大かまどで炊くご飯のおいしい日本食レストラン「寅福」

T

he basic umami of rice is flavor, sweetness, luster, and other factors recorded in the mind from past experience. Therefore, there aren’t actually much umami in the actual rice itself.

Because Japan’s culinary traditions centers around rice, sake, mirin, vinegar is made from sake, in which umami is generated as the rice changes in form.

Torafuku is equipped with four large Kamado (metal pot used to cook rice and other foods), in which up to 4.4 lbs (2 kilograms) of rice can be cooked at a time.

Approximately 66 lbs (30 kg) of rice is cooked in one day. Besides white rice, brown rice and a seasonal rice dish are available, three types of rice in total offered. Because many people don’t understand the process of cooking rice due to cultural differences, the rice cooking inside a kamado is actually shown to

お米から作る天然うま味調味料 かまどの底に付いたおこげや余ったご飯を 毎日たくさん捨てていましたが、非常にもっ たいないと思い、米麹を混ぜて発酵させ、天 然の自家製うま味調味料を作るようになりま した。簡単に言いますとアルコールの含まれ ていない甘酒です。天然のみりんのような感 じで、甘さがあるので、砂糖やみりんの代わ りに使うことで、お米から作られたうま味を 料理で楽しんでいただけるようになりました。 アメリカ人が身近に感じるうま味と言えば、 昆布や鰹節は一般家庭で受け入れてもらうこ とは難しいと思いますので、やはり醤油や味 噌だと思います。例えば、トレーダー・ジョー ズなどで味噌味のディップや醤油が普通に売 られていますから、これがうま味と言うもの ですよと言った方が理解されやすいと思いま す。文化が浅いので、うま味のメカニズムを 説明しても良く分からないと思いますから、 天然アミノ酸、が含まれていますという説明 だけで充分ではないでしょうか。

ご飯に対する喜びが変化している 最近の電子炊飯器は美味しくご飯が炊ける 物が増えていますので、炊きたてをその場で 食べるのであれば、家庭でも充分に美味しい ご飯を楽しめると思います。米は洗い方がと ても重要です。最近のお米は昔と違ってぬか の臭みがほとんどついていません。昔の習慣 でお米を良く洗うのが染みついている方も多 いと思いますが、そんなに洗う必要はありま せん。最初に汚れを落とす程度に洗い、あと は綺麗なお水を使って美味しいお水を含ませ てあげれば、簡単に美味しいご飯が炊けます。 お鍋でも美味しいご飯が炊けますが、火力 が重要です。焦げないように強火で炊くのが ポイントです。米がかまの中で踊る最初の 10 分ほどを強火で炊きます。あとは弱火でコト コトし、最後は蒸しです。 開 店当初は日本の 伝 統 的な文化 継 承を 色々提案してやってきましたが、それを喜ん で下さるアメリカ人の方はごく稀で、分かり 難いく、堅苦しいと感じる方が圧倒的に多 かったと思います。アメリカ人を対象にして考 える場合は、基本的には炊きたてのご飯を寿 司に移行させるプロセスをプレゼンすること で、非常にフレッシュであるという印象を持っ

Before, the kamado lid was removed to serve the rice until recently, where rice is now displayed on top of the kamado. The kamado below broils hot water to produce steam, which cooks the rice placed above the kamado where it’s stored. The ricecooking process made visually easy to understand for diners, many who take photographs as they express interest.

Similar to natural rice wine in flavor, the sweetness is substituted for rice and rice vinegar to create dishes using the umami flavors made from rice.

In terms of umami to be familiarized among Americans, I believe it would be difficult for katsuobushi to be accepted into the homes of American diners, so I think soy sauce or miso have more possibility. For example, miso-flavored dip and soy sauce is sold at Trader Joe’s, so it’s possible to introduce umami in this fashion. Because American culture is still young, I believe getting Americans to understand the mechanism of umami is difficult. Therefore, I believe explaining that umami contains natural amino acids is sufficient.

Excitement about rice is changing

Because many recent rice cookers steam rice deliciously, one can easily enjoy freshly prepared delicious rice at home. How rice is washed is important.

Since recent rice has little aroma of rice bran, it’s not necessary to wash rice thoroughly despite traditional habits.

Rice is initially washed to remove any impurities before soaking in fresh water to steam easily and deliciously.

While nabe (pot) can be used to cook rice, heating power is important. It’s important to cook the rice in high temperature while avoid burning the rice. The first ten minutes is cooked in high temperature while the rice is jumping inside the kiln.

Afterwards, rice is cooked in low temperature and finally steamed at the end.

When the restaurant first opened, many ways to pass on Japanese culinary traditions were proposed, but very few Americans appreciated such efforts.

For most American diners, it was difficult to understand and considered rigidly formal. When targeting American diners, presenting the process of freshly cooked rice transitioning to sushi preparation laves a very fresh impression.

While the Japanese appreciate freshly steamed rice with miso soup and grilled fish, and to those diners, we want to provide what we feel is the most delicious food possible. Therefore, we use charcoal for our grilled dishes to have these diners enjoy the aroma of charcoal as one type of umami.

While flavoring of dishes is becoming richer in trend in recent times, it appears that white rice alone seems no longer sufficient for our diners. We leave furikake on the tables for diners to use freely, but American diners use it in large quantities. The joy of consuming white rice and appreciating its flavor is diminishing in our culture as a whole, perhaps a sign that our society is becoming prosperous. On the contrary, brown rice and coarse cereal rice is favored among the health-conscious diners and ladies.

The recent trend witnessed is the gradual transition to foods with a purpose. Many American diners request sushi made with brown rice, and I think it’s important to respond to consumer needs according to the times.

Some customers purchase rice balls here and take it to the movies with them, so I see changes taking place. Bento boxes, not fast food but convenient, enticing to the eyes, and delicious after cooling, is also a part of Japanese culinary traditions.

In the future, I look forward to tuning into these aspects of Japanese cuisine to incorporate them into our business.

nly one month remains until the end of this year. 2011 was marked by earthquakes, heavy rainfall, heat waves, snowstorms, and countless other natural disasters. Also, economy wise, rapidly appreciating yen, instability in the Middle East, EU financial crisis, and other chaotic situations continued, largely affecting consumer consumption at the receiving end.

Now, at the end of this year, we’d like to report on “Japanese sake that changed philosophies, delivery of and how to enjoy Shouchu.”

At food pairing events at many restaurants, wine is compared with other wines, sake compared to other sake; shouchu brands are compared to other shouchu brands, and other parallels are drawn similarly. While this works to evaluate subtle differences in flavor, what about sampling from a different angle, from the consumers’ perspective that is enjoyable and generates the “Wow” factor from consumers?

い自然災害に見舞われた 2011 年だった。ま た、経済的にも急激な超円高、中東情勢不安、 EU 金融不安など混沌した情勢が続き、末端 の消費にも大きく影響している。 さて、今年最後は「視点を変えた日本酒、 焼酎の提 供、試 飲 方法 」をお伝えしたい。 多くのレストラン現場やフードペアリング会で 通常行われているのが、ワインはワイン同士、 日本酒は日本酒同士、焼酎は焼酎同士の並 列な比較である。これは、確かにその微妙 な味の比較をするのには良いが、 消費者にとっ て違う「ワオー」を喚起させる、楽しくさせる ために違う角度で試させてはどうだろう。 たとえば、チーズの盛合わせに赤ワイン、

“Dassai” is the sake to be savored, not to become drunk or to be sold 酔うため、売るための酒ではなく、味わうための酒が “獺祭”

発泡にごり酒がアメリカ初上陸 山田錦を 100％使った純米大吟醸酒しか 造っていない獺祭は、2003 年にニューヨー クに進出し、その１年後にはロサンゼルスで も販売を開始しました。獺祭磨き二割三分、 獺祭純米大吟醸５０など主力製品を中心に ニューヨークで４種類、ロサンゼルスで３種 類が市販されています。そしてこの７月から は新たに獺祭発泡にごり酒５０がアメリカに 初上陸し、ロサンゼルスでは計４種類の獺祭 が楽しめるようになりました。 発泡にごり酒は、爽やかな香りと微妙な発 泡性、そしてにごり酒だからこそ分かる山田 錦特有の甘みが楽しめます。非常に華やかで きれいな香りであると同時に、口に含んだ時 に純米大吟醸としての骨格も感じられます。 炭酸ガスが最後にキュッとしめますので、お 酒としての締りもあり、鶏の唐揚げなどの揚 げ物やチリソースのかかった料理などとも相 性が抜群なのが特徴です。シャンパンと同じ く、瓶の中に詰めた後で再発酵していますの で、ワインに親しまれているアメリカの方々 にも楽しんでいただけると思います。

ています。もともと、 「日本で一番磨いた酒 を作ろう」と始まったのが、二割三分の成り 立ちです。２０年前に開発した当初は２５％ 精白でしたが、出張中にある大手メーカーが ２４％精白の純米大吟醸を市販していること を知り、帰りの新幹線の中から「あと２％磨 いて２３％にしてくれ」と精米担当者に電話 をしたのが発端でした。今振り返ると、当時 ２３％まで磨いて最初に作ったお酒は、品質 的に完成度があったとは考えられません。し かし、２３％のお酒を出したことで日本中の 酒蔵から注目が集まり、同業他社からの批 判勢力が強まって徹底的な批判にさらされま した。しかし、これがこのお酒の成り立ちに おいて大きな力を発揮しました。批判される ことによって、品質に磨きがかかり、精米歩 合に相応しい日本で一番のお酒を目指してき ました。それが獺祭をここまで伸ばしてきた 原動力となりました。石が飛んでこなければ、 今の獺祭はなかったと思います。 この２割３分の技術を用いて全てのお酒を 作っています。５０％精白の純米大吟醸５０ は一番ローコスト、ロープライスの商品です が、わが社の６０％の売り上げを占める主力 商品です。同じ作り手が同じ原料を使って作 るのですから方向性は一緒ですが、二割三分 と比べるとグレードの差ははっきりと分かり ます。それは価格差による手抜きではなく、 香りがさわやかできれいな甘みも見えます が、口に含んだ後の余韻とエレガントに差が あり、酒の奥行きが違います。わが社にはバ リュー・フォー・マネーという発想はありま せんので、米の磨き以外では手抜きは一切考 えず、日本全国のお酒と比べて遜色のないも のを造るように常に心掛けています。

To aim for sake production unique to Dassai

Dassai, using only 100% YamadaNishiki Junmai Daiginjo, expanded into New York in 2003. Distribution started in Los Angeles a year later.

Dassai 23, Dassai 50, etc., and other major products are sold, four types in New York and 3 types in Los Angeles.

Starting July, the new Dassai Sparkling Nigori will be introduced in the U.S. for the first time to allow a total of four types of Dassai products in Los Angeles.

Sparkling nigori offers a refreshing aroma, subtle foam, and sweetness that is unique to Yamada-Nishiki, apparent due to the nigori style. Aside from it’s pompous, beautiful aroma, the framework of the Junmai Daiginjo is apparent when sipped. The carbonic acid clinches the sake flavor, characteristic for its compatibility with fried dishes such as fried chicken, or dishes with chili sauce. Same as champagne, the beverage re-fermented inside the bottle to be enjoyed by American consumers accustomed to wine.

Asashi Shuzo Co. Ltd. does not produce sake that merely sells or intoxicates, generated from the philosophy of mass production, but sake production that strives for joyful consumption and Dassai-like flavors. Using only Yamada-Nishiki, the highest echelon of sake rice, only Junmai Daiginjo is produced with rice polish rate of under 50%. As a result, the sake as a presence when sipping due to the sweetness from rice unique to Japanese sake, characteristic for it’s long aftertaste on the palate after allowing. Single item sake does not hold individuality, but all sake products share a commonality of “refreshing aroma and clean sweetness.”

The most Dassai-like of all is Dassai 23, made from Yamada-Nishiki rice polished to 23%. From the beginning, Dassai 23 was originally made with the goal to “produce the most polished sake in Japan”. When Dassai 23 was first developed 20 years ago, the rice was polished at 25%. However, after learning during a business trip

Looking back, the completion rate of sake made initially from rice polished to 23% cannot be considered high. However, introducing sake made with rice polished to 23% garnered attention from sake brewers nationwide, followed by all-out criticism from other competitors, which played a large role in the early development stage of this sake. Due to the criticisms received, quality improved as the manufacturer strived to produce the number 1 sake in Japan that ref lects the rice polish rate, the driving force that led to Dassai’s growth to this day.

Without the cast stones, Dassai today wouldn’t exist.

We produce all of our sake using the technology acquired from Dassai 23. Dassai 50 made with rice polish rate of 50% is our lowest costing product, yet

However, when compared to Dassai 23, the difference in grade is obvious.

This difference is not a reflection of the lowered price. The aroma is refreshing with clean sweetness to the palate. After sipping, there is a notable difference in the aftertaste and elegance, and the depth of the sake flavor. Our company does not embrace the concept of “value for money,” so we don’t hold back any efforts outside of rice polishing, and we always strive to produce sake that is in no way inferior to other sake produced throughout Japan.

Kosher certification obtained, expanded sales anticipated in the U.S.

Foreign sales targets cannot be limited to local Japanese American consumers alone, for the general public must accept the sake for sales to grow.

that initial sake sales climbed in New York City instead of Los Angeles with a large Japanese population. While a lot of business transactions with high figures take place in the East Coast, much of the higher socioeconomic group resides in the West Coast. Therefore, the development of Los Angeles market here is very important as Los Angeles has become a large market in recent years. We are based here in Los Angeles with distribution expanding to Las Vegas, Arizona, and other states. Japanese sake is considered to be exotic to foreign markets overseas, where high-priced products sell first.

Therefore, Dassai 23 constitutes a major part of foreign sales.

The Jewish community plays an important role for sake sales in the U.S. In addition to their large population, the Jewish community produced standards to identify safe products to observe religious practices. We have acquired Kosher certification that is helping to expand sales in the U.S. We only make Junmai Daiginjo, but our strict adherence to traditional manufacturing efforts were recognized, and we attended the certification party

by Kosher Japan (KJ) held at a mansion in Beverly Hills. We are convinced that sake made according to traditional methods overcome cultural barriers.

Currently, approximately 10% of our manufactured products are shipped overseas. Because export to overseas market is crucial to the survival of Japanese sake in our opinion, we will strive to sell half of our manufactured products overseas in the future, of which half of that, or 25% of manufactured sake, needs to be sold in the U.S. for us to meet our goals in our opinion.

While this may sound bold, I would like to request restaurant professionals to change out their sake brands once a year. By refreshing their sake selections with new brands, their menu will also be refreshed while new manufacturers producing quality sake will be given the opportunity to expand into the market.

Born in 1950. After graduating from Matsuyama University, Sakurai was employed by Nihon Sakari Co. Ltd. After serving the company for four years, Sakurai was hired by Asahi Shuzo Co. Ltd, but quit. After employment at other companies, Sakurai became the 3rd CEO of Asahi Shuzo Co. Ltd. in 1984. Persisting on producing Junmai Daiginjo using 10% YamadaNishiki rice, Sakurai proposed the production of Dassai 23 with the goal to produce “the best sake in Japan utilizing the highest rice polishing rate,” which shocked the industry.

Looking back at the “Great East Japan Earthquake Part 3”

rapped inside a bullet train in a tunnel during the Great East Japan Earthquake. With no information coming in, we had no idea what was happening.

Soon, a voice continuously announced, “Inside this bullet train is the safest place. Please do not exit this bullet train and head home.” Glancing out the window, I saw many people walking inside the tunnel. “What’s going on?” I wondered as I watched before realizing the Tohoku Shinkansen is a “non-smoking” area. People who wanted to smoke went outside to enjoy their cigarettes.

I was impressed to see that rules were being observed under this emergency situation, and that women and children were prioritized for distributing relief aid following a discussion among cooperative passengers.

Because we’re seated in the dark, I couldn’t tell the time when I glanced down at my watch. After over 20 hours of waiting, we finally heard the announcement, “help arrived.”

We learned that 200m ahead of the bullet train that stopped was a tunnel for escape purposes. An announcement indicated preparations are underway for an aid bus to pick up passengers. I later found out that passengers from bullet trains that stopped on the tracks and not inside a tunnel were taken to the nearest station following the earthquake, and that the unique circumstances of the disaster that occurring inside a tunnel had delayed relief efforts.

With the pending arrival of aid, passengers who now shared a bond of cooperation inside the bullet train rejoiced together. The passengers were divided into two groups: residents of the Tokyo area and Aomori prefecture. After the group was divided, the groups escaped the bullet train. 助が来ました」という連絡が入ります。 ちょうど止まっている新幹線の 200m 近い 先に脱出用のトンネルがあるとのこと。やっ とそこへ救助のバスが用意できる見込みが出 来たと、アナウンスがありました。 後から聞いてみたら、トンネル内ではなく、 線 路の上で止まっているだけの新幹線の乗 客は歩いて最寄りの駅に地震後移動したよう で、トンネル内で被災、という特殊な事情か ら救助が遅れたようです。 救助の見込みが立ち、新幹線内で妙な連 携が出来た乗客同士、喜び合います。そして まずは東京方面と青森方面の 2 つに分かれ ます、との話でした。東京に行く人、青森方 面に帰る人、これを分けてまずは新幹線から 脱出します。最初は東京方面へ移動する人が 新幹線を降ります。しばらくして、青森方面 に帰る人が新幹線を降りる予定でしたが、か なりの時間待たされました。どうしてこんな に遅いんだろうと思ったら、その理由がやっ とわかりました。それはバスの用意が間に合 わなく、当初は青森方面にバスで帰してもら えるはずだったのが、急きょ福島市内の避難 所に青森方面に帰る人は移動することになり ました。 岩手に帰れるのか？

It has been very popular great aroma, smooth sake, nowadays traditional flavors such as Kimoto, Yamahai has also been popular in New York.

-It sounds all the great factors are here, what does your company visions in the future?

Yamamoto: To have education in restaurants is important task for us. To give them the right knowledge is the key to spread Japanese food culture in the world.

Currently more than half of Japanese restaurants are owned by Chinese descents and Korean descents and non-Japanese descents. Some started by imitations, so they do not have enough deeper understanding of Japanese foods or Japanese sake. It is very important to educate them to understand what really Japanese foods about. Without that it would prevent to grow reputations of Japanese restaurants. It could not be accomplished the ideal growth of Japanese food culture in America. So we develop the educational programs in company. Yamamoto: I think it is possible. There is a movement to cultivate Preferred sake rice, Yamada nishiki in California. So in the near future I can imagine local sake can be higher quality and can be compared to Japanese Jizake Premium sake.

-To vision internationalizing Sake in the future, it will be more spreading sake globally. However Japanese Jizake (Premium) will be facing competitions.

Lastly, what is your next project?

Yamamoto: It is Shochu. Honkaku (Premium) Shochu. This has been very popular in Japan. So it has great market potential in America. I am planning to market strategy of shochu along with Sake.

Distilled Alcohol has more strict regulations but another words it can be more potential market to explore which benefits for restaurants. I would like to introduce Japanese Shochu Culture, process, descriptions; types of shochu such as rice, barley, buckwheat, potato that can be enhance the enjoyment of the premium shochu.

After returning to Japan, became the International Business Division Executive Director and expanded the business by purchasing England Scotch Whisky Company and American Bourbon Whisky Company. Went to Beijing to help establish Takara Sake Beijing in China. Dried (Instant) Noodles 乾麺 ( インスタントヌードル ) Part 1

he topic of dried noodles cannot be avoided when discussing ramen. As you know, instant noodles are considered to be one of the greatest inventions of the 20th century by Momofuku Ando. Since “Chicken Ramen” was introduced in 1959, the demand of instant noodles knew no limits until today. Also, this food product not only dominates the global market in terms of “shelf life,” “distribution,” and “productivity,” but also contributes to society as emergency food to distressed areas.

The production of instant noodles outside Japan started in 1963 when Myojo Foods Co. reached a joint venture agreement with Samyang Foods of Korea. In the U.S., major instant ramen noodle manufacturers are Maruchan, Inc., Nissin Foods, Sanyo Foods, and Myojo U.S.A., etc.

According to research by the World Ramen Association, the annual world demand for instant ramen at the time of 2010 was approximately 95.4 billion meals. The top demand was in China for 42.3 billion meals, followed by 14.4 billion meals in Indonesia,

then 5.3 billion meals in Japan, 4.8 billion meals in Vietnam, and the U.S. ranking number 5 at 4 billion meals. The country with the top annual consumption of instant ramen per person is Korea at approximately 70 meals, followed by Indonesia at 62 meals, then Vietnam at 54 meals, Malaysia at 44 meals, and Japan ranking at number 5 at 41 meals.

The U.S. is 12.5 meals per person. Apparently, “convenient, affordable, and delicious” instant noodles are accepted worldwide.

Fried and non-fried noodles

Fried noodles are produced using the technology of gelatinization of noodles, the basic for making instant noodles, but freezedried since the 1970’s. Non-fried noodles are hot-air dried or steamed instead of fried with oil. The defining characteristic is the chewiness of the noodles. In the U.S., major brands are “chukazanmai” by Myojo U.S.A., or “GreenNoodle” by Eon Foods. Also, many noodle products using rice instead of flour is increasing.

1. Cut scallops into bite-size pieces and lightly sprinkle salt, pepper and starch. Marinate shrimp in ginger juice and sake.

n October 11, the Ministry of Foreign Affairs of Japan announced that corporations overseas as of 2010 reviewed by cities had the highest number in Los Angeles, with 64,000.

The figure is the same as the population of Kitakata-shi, Fukushima, home to one of the three major flavors of ramen that I reported on for this magazine, and also consistent with the 140 ramen shops in the Los Angeles area by coincidence.

Currently, the Japanese yen is strengthening at approximately 75 yen per dollar. What was inconceivable until only recently, many small and mid-size Japanese corporations are in business in the noodle industry. From the frame of reference of half a million dollars to start a local company, business can now be conducted by investing only 100,000~200,000 dollars. In addition, information gathering and market research is now done a lot faster due to the prevalence of the internet. Also, may go out to look for restaurants on sale to start their business.

Restaurants are not opened brand new, but purchased with furnishings to minimize renovations to start with small capital as a target. To take on the local noodle businesses in Los Angeles, many restaurants are fast becoming chain operations. With restaurants

expanding into the U.S. from Japan, this trend will likely continue along with local businesses. I spent the 1980’s dreaming of opening my own restaurant. Thirty years later, Japanese cuisine is now stable and a new generation of Japanese professionals is expanding into the U.S. with fusion B-class gourmet Japanese cuisine.

Many of the owners are very young in their 40s. Naturally, younger employees are preferred for hiring with no necessity for artisans. So why is it that more restaurants aren’t opened by individual owners?

The answer is apparent when looking at Japan as a country. The population is aging with decreasing number of children born. Another reason is the lack of successors for Japanese restaurant owners. Also, restaurants are sold to many Korean and Chinese American owners.

In the early 2000s, manners on how to enjoy ramen became a problem. Because ramen is a soup dish, some stated that one shouldn’t make sounds to sip the soup. I experienced this myself. In one restaurant, my group enjoyed ramen without paying attention to our surroundings.

At a neighboring table, three diners who were seated left their table. Perhaps the reason was that they couldn’t understand the Japanese style of producing sipping sounds when eating noodles. At the time, I remember local diners placed ramen

noodles and soup in the ceramic spoons when they ate.

Some diners who couldn’t eat very hot food requested the soup not be so hot.

As of today, ramen and noodles are available as Japanese food, and understand that the Japanese style of eating ramen and manners surround it are one way to enjoy the “deliciousness” of ramen. In one sentence, I can’t say if the non-Japanese got accustomed to ramen or if ramen got accustomed to foreign consumers. I don’t know the answer to this either.

ル店と共に今後もこの傾向は続くと私は見て いる。将来は自分の店を持ちたい、独立した いと夢に向かって進んで行った 1980 年代。 それから３０年が経ち日本食も安定期に入り、 新しい時代の日本人が創作Ｂ級グルメと称し て進出している。そしてオーナーも４０代と 大変若い。当然採用する従業員も若い人達 を優先し、職人を必要としない。ではなぜ個 人による独立する店が増えないのか。それは、 日本の国を見ると答えが見える。高齢化と少 子化である。そして日本人の経営者に後継者 がいなくなったのも原因のひとつである。そ して店の売却先が、韓国系、中国系になった。 2000 年初頭ラーメンの食べ方、マナーが問 題になった。ラーメンはスープであるから、 音を立ててはならないという意見である。実 際に私も経験した事がある。ある店で、私達 が周囲を気にせず食べていた時である。隣 のテーブルのアメリカ人客３人がテーブルを 離れたのである。その理由はズルズルとい う音を立てて食べる日本人スタイルが理解出 来なかったのであろう。当時外人はスープと 麺はレンゲに乗せて食べていたことを思い出 す。そして猫舌のためにスープは熱くしないで、 という要望もあった。しかし今はどうだろう。 ラーメン、うどんも日本食として提供されて、 食べ方もマナーも日本人スタイルが “うまさ” を感じさせることを知った。それは一言で言 えば、外人がラーメンに馴染んだのか、ラー メンが外人に馴染んだのか、その答えは私に もわからない。

fter welcoming their new executive chef, Bushi-tei has freshend up their menu in their new step forward.

The pioneer of “Japanese French Fusion,” Bushi-Tei has brushed up their quality for the past 6 years as a high-end restaurant representative of Japan town. Young chef Michael Hung provides a menu stressing the new theme “umami,” captivating local customers.

“Umami is a revolutionary element to classic French cuisine,” says Hung, who states that by switching from umami and sweetness conventionally derived from butter and animal fat to stock with abundant umami, flavors of food ingredients are enhanced so the food is consumed more healthily and deliciously.

Ichiban dashi is prepared from kombu for Japanese flavors. However, umami is not only Japanese flavors necessarily, but sometimes prepared using anchovy, olives, wine added to Japanese stock, miso, shrimp and squid for example.

Umami is also extracted and prepared

using kombu and vegetables of course, but also from mushrooms, sausages, and dry seafood to add variety to expand flavors. Hung’s culinary creations offer mild menu selections with emphasize on original flavors of food ingredients. His techniques utilize basic French concepts with vegetables for side dishes broiled in dashi or utilizing Japanese food ingredients and umami, culminated to a kaiseki-style finish. Also, the presentation is creative and luxurious.

Born to Chinese and Philippino parents raised in the U.S., Hung’s childhood environment provided abundant opportunities to learn about Asian culture. His culinary style was not acquired from any special school, nor did he learn from a Japanese chef.

“Cooking is not learned from textbooks, but from actually cooking,” says Hung, who acquired his skills from his parents’ cooking, friends, and working at restaurants, learning in various environments.

San Francisco’s top French restaurant “Jardiniere,” Hung currently holds his first post as executive chef.

Recently, Hung is especially particular about creating fermented dishes, entirely original dishes using pickled plums, tofu, pickled vegetables and miso, etc. “I find it interesting to make with balanced saltiness and umami flavors extracted, only possible with fermented food products,” said Hung. He places importance in expanding the flavor to balance and clinch the bitterness, spiciness, sweetness and umami f lavors.

“Chinese cuisine also offers similar culinary merit for utilizing bitter, spicy, sweet and umami f lavors.” His culinary creations are more “cross-cultural” than “Japanese French,” manipulating umami to create a Japanese twist to the French palate.

“Omakase” courses are a culmination of originality accentuating fresh, local and homemade food ingredients.

For example, locally acquired white tuna is flavored refreshingly with cucumbers and black sesame, while homemade silky tofu is created into a mousse, mixed with perilla, wasabi and ginger juice, with seasoned dried food to add texture.

The tenderly prepared Seared black cod is flavored with umami, delicate with creamy aroma accentuated by yuzu. The main dish of pork loin hints at the chef’s Chinese background, along with sweet tomato flavor.

The side dish of okra adds two different textures with a mild balance due to miso. Desserts prepared by the pastry

chef doesn’t clash with the previous four courses served, a thin crepe that contains concentrated sweetness of fruits, rolled sensitively and sweetly. Overall, dishes that emphasize the original flavors of food ingredients are closer to kaiseki courses than French. To ensure freshness, food ingredients are purchased just enough for the number of diners with reservations that day. Prices are the best in San Francisco for the value: $55 for five courses.

Wooden materials from an old mansion dating back to the Edo Period in Nagano prefecture is used for the interior. Dark brown walls with deep warm ambiance is lighted with dimlylit low light fixtures for a warm, cozy dining space.

Service provided by owner Takumi “Tak” Matsuba himself is very courteous, resulting in high customer satisfaction.

Wine and sake is selected by Matsuba himself. While pairing options are not offered in the menu, mixed pairing selections mainly with wine and also sake is recommended for customers upon request.

Also, Bushi-tei recently started to offer Sunday brunch: a menu offering mild Asian flavors combined with American favorites. Egg noodles, udon, and somen noodles are all prepared by Hung from scratch. Highly curious in nature, Hung prefers to serve his original foods as a chef and artist. A new star chef’s “Japanese French” creation begs for further exploration.

In

a corner of Chelsey district in Manhattan, there is a restaurant where the line stretches outside the restaurant during lunchtime. “Tebaya” is a fast-food restaurant renown for their chicken wings, a specialty of Nagoya city.

Mainly a take-out style fast food restaurant, Tebaya’s food is professional quality. Chicken wings are fried twice in soybean oil, dressed in the special company recipe before sprinkled with white sesame and pepper for an aromatic finish. Unnecessary oil is eliminated to trap the collagen inside, the outside is crunchy and the inside is juicy with umami flavors from the meat juice overflowing.

The sweet and spicy sauce is highly compatible with tebasaki chicken that once you pop one in the mouth, you can’t

help keep reaching out for more! Aside from their famous tebasaki chicken, other popular menu selections include “Teriyaki Chicken,” “Japanese Style Curry,” “Unagi Hitsumabushi,” and “Chicken Katsu Sandwich.” Since August, a chef experienced in bento and airline cuisine joined, and bento boxes are now available. After attempts to cut costs in areas not noticeable to customers, the profit structure improved dramatically.

One factor for their success is persistent marketing efforts to “provide delicious food at a reasonable price,” and their success in this obviously effective, yet difficult area. Without increasing menu items unnecessarily, Tebaya maintains their stance of providing “chicken dishes centered around tebasaki” with increasing variation, paying attention to their flavors and volume to be accepted by American diners. Also, after researching the customers and menu selections of other neighboring restaurants and taking into consideration that many of their clients are business professionals, Tabeya’s decision to increase their prices at a time when other restaurants are struggling in their competition to provide lower fees was also effective.

other unique methods and strategies to capitalize on search engines. Tabeya also spends time training their employees, striving for their consumers to want to return by providing mindful and courteous service.

Kora states “people” are the most important element to get customers to love Tabeya, and for the restaurant to expand into numerous locations in the future.

Even after spending a lot of time training, it’s important to increase people who share the same philosophies according to Kora, who feels this is the part he savors most in the restaurant industry. Perhaps several years later, it may not be too far into the future before Japanese fast food restaurants emerge and various sections of New York City.

Will this be the key to defeat the stagnate atmosphere looming over the Japanese – U.S. Mutual Tradings’ Japanese Food and Restaurant Show garner attention for proposing a popularized dining scene 日米市場の閉塞感を打破する鍵となるか

he “18th Annual NYMTC Japanese Food and Restaurant Show” was held by Mutual Trading Company at the Metropolitan Pavilion in Manhattan on Saturday October 8. This year’s theme was “Japanese Cuisine Renaissance-Fresh Ideas Start Here!”

Sixty-six companies exhibited booths this year, the largest number of participating companies in the history of the show. Sake, shouchu, seafood, condiments and various other new products were introduced. Visitors totaled over 1,596 and the venue was lively.

A seminar and kitchen demo proposing popularized, casual cooking especially drew attention in this year’s show. Aside from the usual crowdpleasing sushi, booths were set to serve ramen, roasted dishes, and kushiage (skewed dishes), the lively ambiance similar to a summer festival. The sushi

instructor was Eiji Ichimura from restaurant “Hatsuhana,” ramen instructor was Shigetoshi Nakamura from “Ramen laboratory Nakamuraya,” Jiro Iida of “Aburiya Kinnosuke” instructed the seminar for roasted dishes, and the kushiage instructor was Kenichi Watanabe from “Onya.” Each restaurant chef serving as instructor for these seminars is accomplished in their respective areas.

At each booth, seminars and kitchen demos were held consecutively four times a day, flocked by visitors. At the ramen seminar, visitors learned how to make tsukemen, popular in Japan. Many attendees listened intently to learn how to prepare tsukemen, still relatively new to New York City. At the sake and shouchu seminar, seminars were held in Chinese and Korean also, indicative of the high interest level from non-Japanese. In the kitchen appliance section, ceramic whetstone, sushi conveyor belt systems and other innovative products ahead of its time were introduced in large numbers.

Also, Tsukiji Masamoto held a seminar on how to sharpen kitchen knives, which garnered attention.

“Because the Japanese market is withering due to consumers less willing to spend, many Japanese companies are expanding into the U.S. market with high anticipation towards the recent Japanese cuisine boom. On the other hand, the lasting recession is having a stagnate effect on the American restaurant industry. To break through this rut, many

―日本食大衆化の促進、アメリカ人の食文化のメインストリームへ―

he largest Japanese Restaurant Show in the U.S., was held at Mutual Trading Company headquarters in Los Angeles on Saturday October 15.

The 23rd Annual Restaurant show targeting restaurant owners, chefs, and investors, is a venue for retailers to sample Japanese food products. This year, 84 companies consisting of domestic Japanese food manufacturers and related companies participated in the show, the highest number of participating companies in the history of this food show. Over 1,700 visitors attended the show this year, which surpassed last year’s attendance.

Sake breweries, food manufacturers, food processing companies, and manufacturers of culinary machines all strived to enhance sales efforts through sampling of their products and demonstrations.

Participants actively networked to gather and exchange industry information about the latest products and industry trends.

This year’s theme was “Japanese Cuisine: Advancing More to Mainstream Popularity.” We spoke to Noritoshi Kanai, Chairman of Mutual Trading about why he decided on this theme.

“Currently, we’re experiencing the third major recession since I came to the U.S. The impact from the Lehman Shock in 2008 is still being felt, with many companies struggling in sales worldwide.

The restaurant industry is no exception to this, and we’re also seeing a drop in sales

figures. When pondering the future of Japanese cuisine, I realized that Japanese cuisine will be popularized for the masses, which led to this theme.

B-class gourmet cuisine is garnering attention in Japan, and ramen shops are also popular here in the states. While the recession continues to offer numerous challenges, the power of Japanese cuisine (culture and food ingredients) as a brand is fast becoming widespread knowledge. Future Japanese cuisine will expand further by encompassing its existing form along with the popularized version for the masses.”

This year’s restaurant show showcased the Mutual Trading Casual Dining Arcade, Seafood Market, Izakaya Alley, House of Noodles, LA Kappa Bashi Market Place, Chinaware and Lacquer ware Fair, Jizake Pavilion, and seminar venues, where visitors eagerly made their rounds to various booths.

At the seminar venue, ramen seminars focusing on ramen noodles and soup, a seminar about the appeal of quality tuna acquired from Uwa Sea frozen at very low temperatures, titled “Ultra Low Temperature Seafood” seminar, a shouchu seminar proposing fast and easy-to-make cocktail menus, seminar to sharpen kitchen knives, a sake seminar held by a master sake sommelier were offered, where participants listened intently.

For the restaurant industry professionals, this Japanese food show provides a rare business opportunity to network and discuss business directly with food manufacturers. We look forward to next year’s show!

During the war, Kanai was sent to the Japanese army as a student at the time, while Hitomatsu, also a student, was sent to the Japanese navy. After the war, both resumed their studies attending seminars

by Professor Atsutaro Yamanaka. When Hitomatsu had business trips to the U.S., he visited Mutual Trading Company’s office in Los Angeles. Kanai also made it a point to have breakfast with Hitomatsu alone during his business trips to Tokyo.
