Editorial Estimados lectores: Son ya varios los meses que venimos trabajando en la entrega veraniega de KE Magazine. Una edición especial, ya que la situación sanitaria que hemos padecido ha afectado considerablemente al ocio y la hostelería. Pero esto no ha podido con nuestra ilusión por ofrecer un contenido de calidad. Nuestro destino será la maravillosa Costa de Cádiz, haciendo una parada obligatoria en la experiencia “Vivir” del Hotel V de Vejer de la Frontera. Nos sentaremos a la mesa con la excelencia de Vega Sicilia y la innovación culinaria del fitoplancton marino. Charlaremos con Paloma Cuenca sobre su proyecto Clínica Golden y nos daremos un paseo por el puerto de Sotogrande, que está llevando a cabo nuevos proyectos. Y para completar la edición, podrás disfrutar de reportajes sobre los enganches en Andalucía, el paisajismo y nuestra sección de Aventura, que te dará a conocer Mongolia y sus Eagles Hunters. Dear readers: We have been working for several months on the new summer edition of KE. It is a special edition as a result of the health situation we are facing, which has considerably affected leisure and hospitality. Y en numerosas ocasiones, con la ausencia de respuestas. Las dudas existenciales que se quedan en eso, en dudas, forman parte de nuestra cotidianeidad. En cambio, existen otro tipo de cuestiones trascendentales cuya solución nos lleva al origen de todo. A la primera estación desde donde parte la propia vida. En este contexto, debemos darle la importancia que merece al plancton marino: a aquellos organismos que hace 2 millones de años empezaron a darle vida al planeta cuando no existía la tierra y era todo mar. Se denomina plancton al conjunto de organismos de talla microscópica que fueron los primeros habitantes del ecosistema marino y que protagonizaron el milagro de la vida, ya que los seres que lo componen utilizaban la luz del sol para realizar la fotosíntesis. De esa manera comenzaban a producir oxígeno para el resto del hábitat, una función que ha ido aumentando exponencialmente en cuanto a su

importancia, debido a que hoy en día estos microorganismos son los culpables de producir el 50% del oxígeno de todo el planeta. Por otro lado, el plancton marino constituye la base de la cadena de alimentación de mares y océanos, ya que son alimento del zooplancton, que a su vez es uno de los manjares favoritos tanto de crustáceos, como de peces. Dejando a un lado su trascendencia en los mares, el plancton marino hace algunos años que desembarcó en la tierra en forma de alimento extraordinariamente saludable para las personas. La referencia mundial de la comercialización de este tipo de productos es Fitoplancton Marino S.L., una empresa gaditana que gracias a su personal altamente cualificado y a sus avanzados sistemas tecnológicos, representa la vanguardia en cuanto a la producción de plancton marino apto para el consumo humano. Desde su dirección nos comentan que desde el año 2014 “somos la única empresa en el mundo que puede producir y comercializar microalgas marinas para consumo humano en Europa”. Y gracias a este hito, pudieron lanzar al mercado el producto por el cual se dieron a conocer: Plancton Marino Veta la Palma, que en palabras de la empresa, “es un potenciador del sabor a mar. Un alimento que aporta sabores y aromas a mariscos y pescados en la elaboración de distintas recetas. Su color es verde intenso, de apariencia consistente. Además, es un producto 100% natural y vegetal. Con una sutil cantidad, Plancton Marino Veta la Palma aporta también importantes propiedades saludables como el omega 3 o vitaminas C, E

y B12; y también minerales esenciales como el hierro, calcio, fósforo, yodo, magnesio o potasio”. Las instalaciones de la compañía Fitoplancton Marino S.L. están situadas en El Puerto de Santa María (Cádiz), donde se procede al cultivo de estas algas microscópicas que posteriormente serán comercializadas como plancton marino. “En nuestras instalaciones contamos con huertos marinos, que son una planta de biotecnología donde reproducimos las condiciones para el cultivo de las microalgas marinas que se dan en la finca Veta la Palma, un enclave de biosostenibilidad situado en pleno corazón del Parque Natural de Doñana. Al ser organismos vegetales, para crecer necesitan la luz y el control de la calidad del agua marina empleada. Cuando alcanzan la densidad adecuada y los estándares de calidad óptimos, se procede al cosechado y posteriormente al proceso de centrifugado y congelación. Seguidamente es sometido la liofilización, donde el producto pasa de estado sólido a vapor y finalmente obtenemos un fino polvo verde, lo que es el Plancton Marino”.

MARINE PLANKTON IS AN ENHANCER TASTE OF THE SEA. A TYPE OF FOOD THAT PROVIDES FLAVOURS AND AROMAS TO SEAFOOD AND FISH WHEN MAKING DIFFERENT RECIPES. plankton constitutes the basis of the food chain of seas and oceans as it is the food source for the zooplankton, which in turn is one of the favourite delicacies of crustaceans, as well as fish. Beside its importance in the seas, marine plankton has made its presence on land in the form of an extraordinary healthy food for people. A global reference in the commercialisation of this type of product is the renowned Fitoplancton Marino S.L., a Cadiz-based company whose employees are highly qualified and use hi-tech systems that have put them at the forefront of marine plankton production suitable for human consumption. The management have added that since 2014 “we are the only company in the world that can produce and commercialise micro marine algae for human consumption in Europe.” Thanks to this milestone we have been able to launch a product on the market known as “Plancton Marino Veta la Palma”, which as the company says “is an enhancer taste of the sea. A type of food that provides flavours and aromas to seafood and fish when making different recipes. It is a dark green colour with a solid appearance. It is also a 100% natural and plant-based product. With a subtle amount, “Plancton Marino Veta la Palma”, provides important properties such as omega 3 and vitamins C, E and B12 as well as essential minerals such as iron, calcium, phosphorous, iodine, magnesium and potassium”. The installations of the “Fitoplancton Marino S.L.” company are located in El Puerto de Santa María (Cadiz), where they start the

process of cultivation of these microscopic algae that are later commercialised as marine plankton. “We have marine farms in our installations, a biotechnological plant, where we reproduce the conditions for the cultivation of micro marine algae at the Veta la Palma estate, a bio-sustainable enclave located in the heart of La Doñana National Park. Since they are vegetable organisms, in order to grow they need light and carefully quality controlled sea water. When they reach the adequate density and optimal standard quality, they are harvested and later centrifuged and frozen. This is followed by freeze drying, where the product goes from solid to vapour and finally we obtain a fine green powder, which is Marine Plankton.” Lastly, an important aspect to mention about the path of the Fitoplancton Marino company is its connection to the emergence of Ángel León, known as the Chef of the Sea and triple Michelin star for his Aponiente or Alevante restaurants.

Finalmente, un aspecto importante a resaltar en cuanto a la trayectoria de la empresa Fitoplancton Marino es su relación con la irrupción de Ángel León, el conocido como el Chef del Mar y triple estrella Michelín por sus establecimientos Aponiente o Alevante. “Hace más de 19 años desde que en Fitoplancton Marino comenzamos con el cultivo de microalgas marinas para diversos sectores como la acuicultura, la cosmética o la acuariología. Pero nunca las habíamos degustado hasta que conocimos a Ángel. Él nos animó a ello, ya que en la búsqueda continua de nuevos sabores para su cocina estaba investigando el mundo de las microalgas. Tras una primera cata pudimos comprobar los potentes matices marinos con intenso sabor a marisco y confirmamos que teníamos ante nosotros un alimento innovador y único. Así nació en 2008 una colaboración que acabaría siendo clave; la unión de Fitoplancton Marino y el Chef del Mar. Este fue el origen de un trabajo conjunto para desarrollar un nuevo alimento que sirviera como potenciador de sabor a mar, el Plancton Marino” afirman desde la compañía gaditana.

Texto: Juan José Casas Rodríguez Hasta ese momento, la exclusiva ubicación empezaba a sonar a nivel nacional e internacional. Pero con la inauguración del puerto deportivo en 1987, se originó el empuje definitivo hacia el desarrollo de Sotogrande tal y como lo conocemos hoy. El hecho de que esta zona fuese ganando vida progresivamente, ayudó a que muchos negocios se implantasen a su alrededor. Por ejemplo, el Club Marítimo de Sotogrande, el hermoso hotel boutique de estilo contemporáneo que cuenta con la particularidad de ser el único hospedaje en el propio puerto deportivo. O también KE Sotogrande, emblemático lugar de encuentro desde 1990 y que gracias a su magnífica ubicación y la calidad de su servicio, constituye todo un icono gastronómico del sur de España. Las más de tres décadas de experiencia del puerto son todo un valor diferencial para sus clientes, aunque una de sus grandes fortalezas es su incesante capacidad de adaptación a los nuevos tiempos. Sin ir más lejos, a partir de marzo de 2020 se abría un escenario imprevisto para todas las infraestructuras marítimas.

From that moment this exclusive urbanisation started to become well-known nationally and internationally. More than 3 decades of experience are real added value to its clients, although one of its greatest strengths is its capacity to satisfy times of change. Without looking too far, from March 2020 we were faced with unforeseen scenario for all the maritime infrastructure.

Pero Puerto Sotogrande, sin querer perder ni un segundo, emprendió su particular respuesta a la pandemia trabajando a destajo para conseguir la certificación de Marina Safe. “En Abril de 2020, comenzamos un Plan de Desescalada para convertirnos en el primer puerto seguro Marina Safe de España. El proceso duró hasta el 18 de mayo cuando logramos la excelencia y máxima eficiencia en nuestros procesos de confortabilidad y habitabilidad. La certificación Marina Safe fue una muestra de confianza para que nuestros clientes se sintieran seguros en nuestras instalaciones” nos afirma Miguel Ángel Díez, director de Puerto Sotogrande. El Plan Estratégico que se contempla a 5 años pasa por mejorar las infraestructuras portuarias. Entre estas innovaciones, las instalaciones se han sometido a una remodelación del sentido de la circulación de vehículos. Anteriormente, se podía pasar a la zona del puerto mediante dos accesos: la avenida de la playa o el paseo del propio puerto. Pero ahora, a favor de una óptima accesibilidad, el sentido es único. Sobre ello, nos comenta que “esta duplicidad de entradas suponía un exceso de circulación por la zona mas peatonal del puerto, provocando que en zonas donde no se aparcaba, se hiciera. Cualquier aparcamiento en doble línea, nos dificultaba el acceso a los cuerpos de seguridad o bomberos. Antes no podíamos conseguir las 5 anclas porque el puerto no era accesible.

But Puerto Sotogrande, without wasting a moment, undertook its own particular response to the pandemic and worked exhaustively to obtain the Marina Safe certification. “In April 2020, we started a De-escalation Plan to become the first safe port “Marina Safe· in Spain. On this matter, he says that “this duplicity in access meant there was an excess in circulation in the pedestrian area of the port and vehicles parked where there should not be. Any double-parked vehicles made it more difficult for security and fire fighters to get access. That is why we have made an important transformation and directed traffic through one entrance and one exit. Thanks to this initiative we have re-established a more spacious pedestrian area, reorganised spaces and areas where maximum speed is 10 kilometres per hour.”

Por ello hemos llevado a cabo un importante proceso de transformación y dirigimos el tráfico a una sola entrada y una sola salida. Y gracias a esta iniciativa hemos reestablecido una zona peatonal mas amplia, reordenando los espacios y con zonas donde la velocidad a circular no debe rebasar los 10 kilómetros por hora”. Otro de los grandes retos que se marcan desde la dirección de Puerto Sotogrande es la adaptación a un nuevo paradigma de sostenibilidad, ya que desde la dirección portuaria se trabaja en una “planificación estratégica que tiene como prioridad la energía sostenible. Estamos esforzándonos para modificar nuestra huella de carbono. Para llevarlo a cabo, buscamos integrarnos ayudas o subvenciones, como las de Next Generation de la Unión Europea. Queremos llegar a generar nuestro consumo de forma autosuficiente, por ejemplo mediante placas fotovoltaicas. Por otro lado, hemos colocado un punto de recarga eléctrica junto a la gasolinera del puerto. Todos nuestros vehículos de mantenimiento son eléctricos desde el año 2015”. Desde agosto de 2020, este mantenimiento también se extendió al varadero, ya que Puerto Sotogrande asumió la gestión total para ofrecer un servicio integral a sus clientes. “Hemos realizado mejoras en las explanadas y en los talleres. También hemos abierto la tienda de náutica por el interior hacia el varadero, para un mejor acceso de nuestra clientela. Y se ha optimizado la zona de baños y vestuarios, tanto para trabajadores como tripulaciones que vienen desde fuera” manifiesta el director de Puerto de Sotogrande. Todas las iniciativas que conforman el Plan Estratégico buscan la excelencia para continuar siendo referente en el ámbito portuario. Por tanto, estamos convencidos de que los rumbos de las mejores embarcaciones seguirán dirigiéndose hacia Sotogrande. En cuanto al rumbo del puerto, no cabe lugar a dudas: viento en popa a toda modernización.

Another great challenge set by Puerto Sotogrande management is the adaptation of the new sustainability paradigm. Thus, the port management has “a strategic plan with priority given to sustainable energy. We are making an effort to modify our carbon footprint. In order to achieve this we are looking to obtain grants or subsidies such as Next Generation from the European Union. We would like to obtain our consumption in a self-sufficient way, for instance, using photo-voltaic modules. On the other hand, we have placed a recharging point next to the port petrol station. All our maintenance vehicles have been electric since 2015.” Since August 2020, this maintenance also expanded to the boatyard enabling for Puerto Sotogrande to take full control and offer a comprehensive service to its clients. “We have carried out improvements on the esplanades and in the workshops. We have also opened the nautical shop from the inside facing the boatyard, providing better access to our clients. We have optimised the toilets and changing rooms, not only for workers but also for crews who come from another places,” the director of Puerto Sotogrande explains. All these initiatives are part of Strategic Plan that is pursuing excellence and setting a benchmark in the port industry. Therefore, we are convinced that the best vessels will continue heading to Sotogrande. In terms of the direction the port is heading, there is no doubt: the tailwind at full speed to modernisation.

THE SURPRISING VIEW FROM THE CLOUDS SUGGESTS THAT WE ARE HEADING TO A FASCINATING TERRITORY.

Formas casi irreales, combinaciones de dunas, roca y agua, lagos, montañas nevadas... Escenarios de desiertos míticos como el Gobi, o de montañas cargadas de hazañas y conquistas. Nuestro viaje tiene por objetivo conseguir alcanzar las tierras pobladas por trashumantes que se dedican a la caza de animales con la ayuda de águilas. Para ello, tendremos que recorrer pistas que en pocas semanas se verán impracticables por culpa de las nieves. Estamos a principios del mes de octubre del 2019 y las temperaturas ya han descendido a 10 grados bajo cero. Una vez más, el desierto nos muestra a través de sus composiciones de luz, color, formas y volúmenes, una auténtica galería de arte. Tengo la necesidad de parar continuamente, no solo para certificar con mi cámara lo que observo en cada descubrimiento, sino también para dar tiempo a digerir las sensaciones que se van acumulando. La retina intenta asimilar todo lo que se presenta en cada giro de cabeza, sin llegar a distinguir lo real de lo irreal, lo que realmente se ve y lo que uno se imagina. Mongolia es casi un país sin árboles, sin vida aparente en un mundo misterioso que, a costa de recorrer tantos kilómetros en esa especie de vacío, te obliga a reflexionar sobre la realidad de la sociedad del mundo en el que vivimos. Tener la sensación de estar caminando por la corteza de Marte, te aleja de lo ficticio y te aferra a la tierra por la que pisas.

Almost unreal shapes, a combination of dunes, rocks, water, lakes and snowy mountains. Mythical desert scenes like the Gobi or mountains that are filled with challenges and conquests. The objective of our trip is to reach lands inhabited by nomads who hunt animals with the help of eagles. In order to do this, we have to cross terrain which in a few weeks’ time will be impassable due to the snow. We are at the beginning of October 2019 and the temperatures have fallen to ten degrees below zero. Once again, the desert with its compositions of light, colour, shapes and volumes exhibits a true art gallery. I feel the need to stop continuously, not only to certify with my camera what I am observing with each discovery, but also to take in the sensations that are building up. With every turn of the head, the eyes are trying to distinguish the real from the surreal, what you can really see and what is imagined. Mongolia is a country with almost no trees and seemingly without life, and in a mysterious world where you travel so many kilometres in an empty vastness, it forces you to reflect upon the society in which we live. Da igual cómo se llame el desierto o en qué continente esté, el espectáculo es incesante. Las dunas siguen su camino allá donde se encuentren, moviéndose sin prisa, dejando que el viento las acaricie y juegue con sus formas de un modo imperceptible y continuo. Los animales firman con su presencia el lugar en el que nos encontramos. Los caballos parecen querer competir con los camellos por el control de las dunas en las cercanías del desierto del Gobi. Puede que la visión de este grupo de caballos atravesando los cordones de dunas no sea tan espectacular como la de los elefantes en las dunas del Namib, pero en mi caso, disfruto de una representación que, por lo inusual, adquiere tintes de grandeza. Hay ciudades cuya visión no invita a su descubrimiento y menos al descanso. Sin embargo, alcanzar Ulgii es un alto en el camino que induce a tomar fuerzas sin perder el embelesamiento ante los gigantes que la rodean. Estamos en territorio de Kazajos, inmigrantes de Kazajistán que llegaron en el siglo XIX cuando muchos de ellos fueron expulsados por los rusos. En las proximidades de Ulgii, en el corazón de las montañas de Altai, se encuentran las cumbres más elevadas de todo Mongolia. Cimas de más de 4.000 metros en cuyos alrededores los minerales han decorado el suelo con diferentes colores con los que recrearse para combatir la monotonía cromática impuesta por la falta de vegetación. Y es precisamente en ese mundo frío y desolado, donde los kazajos han conseguido sobrevivir a las inclemencias de un clima casi extremo que les obliga a soportar temperaturas de 45 grados bajo cero durante los meses de invierno. Una población, en su mayoría nómada, que tiene en el águila su seña de identidad y casi de supervivencia.

The name of the desert does not matter or which continent it is on, the spectacle is nonstop. The dunes go way beyond where they are encountered, moving unhurriedly, letting the wind caress them and play with their shapes in an imperceptible and continuous way. Animals make an appearance in the place we find ourselves. Horses look like they are trying to compete with the camels for control of the dunes near to the Gobi Desert. Perhaps the vision of this group of horses crossing the dunes is not as spectacular as elephants on the Namib dunes, but in my case, I enjoy this representation for its unfamiliarity, which gains a sense of grandeur. There are cities whose vision does not invite you to discover and less to rest. However, reaching Ölgii is a stop on the way that induces you to take strength without losing the rapture before the giants that surround it. We are in the territory of Kazakhs, immigrants from Kazakhstan who arrived in the 19th century when many of them were expelled by the Russians. Near Ölgii, in the heart of the Altai Mountains, the highest peaks in the whole of Mongolia can be found. Surrounding peaks over 4,000 metres high minerals have decorated the ground with different colours breaking the chromatic monotony due to a lack of vegetation. It is precisely in this cold and desolate place where the Kazakhs have managed to survive the harshness of a climate that is quite extreme and forces them to bear temperatures of 45 degrees below zero during the winter months. It is primarily a nomadic population whose distinguishing feature is the eagle and almost their only way of survival.

Después de muchas horas de recorrido por diferentes pistas que nos van introduciendo en las zonas de pastoreo, encontramos las primeras escenas de ese tipo de cultura. Una subsistencia aferrada a una naturaleza en la que no hay nada superfluo. En ella, todo tiene un sentido y hay que saber descifrar sus mensajes, una especie de lenguaje que para nosotros es duro de entender, pero que hay que saber interpretar para encontrar una lógica a un modo de vida que a veces roza lo imposible. En pocas horas estaremos ya en los cero grados, por lo que tenemos que buscar un refugio antes de que sea de noche. Nuestras dos únicas opciones son, montar la tienda o compartir la yurta con alguna de las familias de nómadas. Las yurtas, también llamadas ger, constituyen la vivienda tradicional utilizada por los trashumantes de las estepas del Asia central. Tiene forma circular y es desmontable para poder transportarla sobre los animales durante sus desplazamientos. Su interior es una especie de museo de la artesanía y modo de vida de los pueblos mongoles y kazajos. Simples, armónicos, prácticos, coloridos, bellos... adjetivos que definen el mobiliario que poseen y que tienen que trasladar al menos tres veces al año. Todo dispuesto en torno al círculo que representa la yurta. En el centro, la insustituible cocina que hace las veces de horno y calefactor. Todo gira en torno a ella, es el corazón de la vivienda. En ese lugar se come, se charla y se duerme, aunque la velada de hoy se alargará más de lo habitual debido a nuestra presencia. Poco a poco nos vamos adentrando en la región de las montañas de Altai, territorio de los Kazajos y sus cazadores con águilas.

Una tradición que ha logrado conservarse desde hace 6.000 años, en la que jinetes cabalgan horas y horas transportando un águila a la que han adiestrado para cazar zorros, liebres, marmotas e incluso lobos. Las facciones de estos personajes, diferentes a los rasgos mongoles, les confieren una apariencia igual de altiva y digna que la de sus águilas, existiendo entre ellos un vínculo parecido al de padres e hijos. Incluso sus marcadas narices aguileñas parecen competir con los picos de sus mascotas. Se dice que en la actualidad sólo quedan unos 300 cazadores que utilizan y entrenan estas aves de presa. Las pieles de los animales cazados las utilizan como vestimenta contra los fríos del invierno. El sobrante lo venden en los mercados para conseguir unos ingresos extras en su economía. Los pequeños animales que consiguen cazar, como las marmotas o liebres, terminan en la cocina y sirven de ingrediente añadido a su dieta diaria. Mi objetivo es poder llegar a fotografiar a estos personajes en su medio natural y en sus tareas cotidianas.

After many hours of driving over different tracks, we get to a grazing area and can see the first scenes of this type of culture. It is a subsistence clinging to nature in which there is nothing superfluous. Here everything has a meaning and you only need to decipher the messages. For us this type of language is difficult to understand, but you have to be able to know how to interpret it in order to find logic in a way of life that is sometimes near impossible. In a few hours the temperatures will have dropped to below zero, for that reason we have to look for shelter before nightfall. Our only two options are to put up the tent or share a yurt with one of the nomadic families. The yurts, also known as ger, are traditional dwellings used by the nomadic groups in the steppes of Central Asia. These are circular in shape and can be dismantled in order to be carried by animals on their journeys. Its interior is a kind of crafts museum and way of life for the Mongolian and Kazakhs. Simple, harmonic, practical, colourful and beautiful. These adjectives describe the furniture they own and have to move at least three times a year. Everything is placed around the circular shape of the yurt. In the centre, the irreplaceable kitchen which is as much an oven as it is a heater. Everything is centred around it. It is the heart of the dwelling. You eat, talk and sleep in this place, but this soiree continues for longer because of our presence. We start to move slowly in the region of the Altai mountains, territory of the Kazakhs and their hunters with eagles. It is a tradition that has been left untouched for 6,000 years, in which they ride on horseback for hours and hours carrying an eagle. An eagle

that has been trained to hunt foxes, hares, marmots and even wolves. The features of these people, with different traits to Mongolian ones, confer them with the same appearance of pride and dignity as that of their eagles, which seems to be a similar link as parents and children. Even their hawk-shaped noses seem to compete with the beaks of their mascots. It is said that there are only about 300 hunters who use and train these birds of prey. The fur of the animals they hunt is used for clothing to fight the cold in winter and what is left over, is sold at markets in order to generate extra income. The smaller animals that they hunt, such as marmots or hares, are used in cooking and are an ingredient that supplements their diet. My objective is to be able to photograph these people in their natural habitat and daily lives. This tradition of hunting with birds, which was about to disappear 20 years ago, has regained a new lease of life thanks in great part to the acknowledgement of this Kazakh’s artform abroad and training initiated by young people who want to inherit this century-old tradition. Esta tradición de caza con aves, que a punto estuvo de desaparecer hace 20 años, ha cobrado un nuevo impulso gracias al mayor conocimiento que existe sobre este arte kazajo en el extranjero y de la preparación de algunos jóvenes que desean heredar este saber centenario. Los pequeños acompañan a los mayores en sus salidas de caza, observan como llaman a las águilas con gritos y cánticos que han repetido cientos de veces para que el ave reconozca la llamada de su dueño, o como las tranquilizan cuando se terminan posando sobre el brazo. Muchos de los aprendices emplean también halcones con los que adiestrarse antes de tener un águila sobre su brazo. Normalmente, el entrenamiento con las aves se inicia después de sacar a algún aguilucho de su nido en medio de alguna escarpada pared de montaña. La relación de los cazadores con estas aves puede durar muchos años, por lo que terminan siendo como un miembro más de la familia. Sin embargo, la mayoría de los animales son liberadas después de algunos años junto a sus adiestradores. Ese momento es muy emocionante para sus dueños tras largas aventuras en común. El amor que sienten por sus águilas es lo que les impulsa a despedirse de ellas para que emprendan el vuelo hacia la libertad. A menudo, ese momento es celebrado con el sacrificio de una oveja, una manera de testimoniar la importancia de esa separación. Casi a diario, salen a cazar entre las montañas con unas aves que pesan más de 7 kilos.

En un momento dado, las liberan y el animal busca la presa a la que partirá el cuello con sus potentes garras sin dejar casi ninguna marca. Antes de soltarla para volar, al ave se le quita una especie de capucha que lleva en la cabeza y que sirve para tranquilizarla durante los desplazamientos. Desde la época de Genghis Khan o Kublai Khan, existen multitud de relatos, muchos de ellos descritos por Marco Polo, de la cantidad de halcones y águilas que viajaban en las expediciones para practicar la caza. En la antigüedad, los cazadores con águilas tenían como principal función la de tratar las pieles para su conservación. Además, estos animales eran considerados como benefactores por sus propiedades como soporte espiritual para las personas, sobre todo para las mujeres embarazadas que incluso en nuestros días siguen recurriendo a esta terapia. Nosotros nos marchamos, decimos adiós a nuestros amigos que una vez más seguirán explorando y oteando desde las alturas de las montañas nuevas presas a las que dar caza. Los valles nos van guiando hacia Khovd, un paisaje difícil de olvidar, no sólo por la belleza, sino por las experiencias que nos han hecho vivir a lo largo de estas semanas. Las vivencias de estas jornadas han conseguido que mi mente retome nuevamente el vuelo, cual águila dorada, sobre un mundo fantástico sobre el que volver a aterrizar.

Many of the apprentices also use falcons before placing an eagle on their arm. Training normally begins when the eaglet is taken from its nest from a rock face. The relationship of the hunters with these birds can last for many years and so they become another member of the family. However, the majority of these animals are freed after a few years together with their trainers. This is the most emotional moment for their owners after long adventures together. The love they feel for their eagles is what leads them to say farewell to them when they start their journey to freedom. It is often a moment celebrated by sacrificing a goat, a way of giving testimony to the importance of this separation. Almost on a daily basis they hunt in the mountains with eagles that weigh more than 7 kilos. At a given moment in time they are liberated, and the animal will look for its prey and break its neck with their powerful claws without leaving almost any mark. Before letting it go free to fly off, they remove a sort of hood from the bird’s head which is used to calm them down on journeys. During the times of Genghis Khan and Kublai Khan, there are several stories, many written by Marco Polo, about the quantity of falcons and eagles that travelled during expeditions to hunt. In ancient times, eagle hunters’ main function was treating hides for their preservation. In addition, these animals are considered to be benefactors for their properties as a spiritual support for people, above all for pregnant women and even today they are used for this type of therapy. We are now leaving, saying goodbye to our friends who once again will continue exploring and looking down on new prey to hunt over the mountains. The valleys guide us towards to Khovd, a landscape difficult to forget, not only for its beauty but also for the experiences which we have lived through over these last few weeks. Experiences which have meant that my mind regains its flight once again, that golden eagle flying over that wonderful world it will land on again.

Proyectos que han tenido que ser cancelados o pospuestos. Incluso muchos destinos que se han aislado de la recepción de turistas del resto del mundo. Pero entre tantas restricciones, la irrupción del virus ha provocado que nos quitemos las gafas de lejos y nos pongamos las de cerca. Que nuestras miras apunten a nuestro alrededor, a lo que tenemos más cerca. Y en este sentido, tenemos más que claro que vivimos rodeado de un paraíso terrenal: la costa de la Luz. Por ello, animamos a que hagas maletas y que viajes con nosotros a esta particular ruta por algunos de los mejores sitios que debes visitar de la costa atlántica gaditana. But with so many restrictions, the outbreak of the virus has meant that we have had to set our sights on closer destinations and discard those far away places. In this sense, it is clear that we are surrounded by a paradise on earth, the Costa de la Luz. That is why, we would like to encourage you to pack your suitcases and travel with us on our special route around some of the best places you should visit on the Atlantic coast of Cadiz. Our journey starts from the southernmost point on the Iberian peninsula. It is where water moves between the Mediterranean Sea and Atlantic Ocean, in the heart of the Strait of Gibraltar. The starting point of this trip is indeed Tarifa. It is known worldwide as the capital of wind and water, this town in Cadiz is the most sought

fa. Mundialmente conocida como la capital de los deportes que aúnan viento y mar, la población gaditana es uno de los puntos más demandados de la provincia. Tarifa tiene una gran oferta de actividades deportivas para realizar en su territorio, empezando por la iniciación a los deportes de los que hablábamos al principio; el windsurf (compuesto por tabla, mástil y vela) y el kitesurf (en el que se utiliza tabla y cometa). Además, por su situación geográfica se pueden realizar excursiones en barco para el avistamiento de cetáceos o senderos por el reconocido Parque Natural de los Alcornocales. En el ámbito gastronómico, Tarifa es un referente para los amantes del atún rojo, ya que en sus propias aguas se realiza la pesca de esta especie mediante la técnica milenaria de la almadraba. Si quieres llevarlo directamente al plato, El Mirlo es un restaurante que se encuentra en Punta Paloma y en él podrás disfrutar del atún en sus múltiples variantes con unas vistas espectaculares del Estrecho. También señalamos Carbones 13, situado en la playa de Los Lances, como uno de los restaurantes del momento, además de BIBO Dani García, a quién entrevistamos en antiguas ediciones de KE Magazine Sotogrande y que nos presentó

Morever, in and around the municipality you can also go on a whale watching boat trip or go hiking in Los Alcornocales Natural Park. With regards to the gastronomy, Tarifa is an inspiration to lovers of bluefin tuna and due to the fact that this type of fishing takes place within its waters using the century-old technique of Almadraba tuna fishing. If you like, you can sample freshly caught fish, in El Mirlo, a restaurant located at Punta Paloma and where you can enjoy tuna in its various forms with spectacular views of the Strait. We also recommend Carbones 13, located alongside Los Lances beach. It is one of the restaurants of the moment. Also Dani Garcia’s BIBO, who we have interviewed him in previous editions of KE Magazine Sotogrande and he presented us with his personal concept of the establishment loacted on Valdevaqueros beach.

Nuestra siguiente parada en el camino también forma parte del término municipal de Tarifa, aunque tendremos que avanzar unos 20 kilómetros dirección Cádiz por la N-340. Hablamos de Bolonia, un enclave espectacular por las famosas dunas de arena que hace que sea considerada como una de las playas más bonitas de España. Dispuesta en forma de ensenada, Bolonia se encuentra atentamente custodiada por Baelo Claudia, un asentamiento romano del siglo II antes de Cristo que es muy reconocido en todo el mundo por su particular disposición urbanística. Esta ciudad funcionaba en su época como puerto marítimo, además de ser un referente por su vaivén comercial de conservas y salazones. Siguiendo por la carretera nacional, una parada obligatoria es Zahara de los Atunes, pueblo asentado a orillas del río Cachón y al pie de la sierra del Retín. Entre los cabos de Gracia y de la Plata se ubica la Cala de los Alemanes, la playa más conocida de Zahara, donde pasar una magnífica jornada disfrutando del sol, del mar y de la tranquilidad que se respira. Una vez llegado el momento del almuerzo o cena, siempre es una buena opción reservar en el restaurante Antonio, en primera línea de la playa y con una carta exquisita para probar los mejores productos de la zona. Zahara de los Atunes es una entidad local perteneciente a Barbate, que se encuentra a tan sólo 14 kilómetros y que es otro buen lugar para conocer. Este coqueto pueblo costero se extiende por la zona de la desembocadura del río con el que comparte nombre. Asimismo, presume de cobijar la magnífica playa de Los Caños de Meca, un espacio libre y pintoresco que no deja indiferente a nadie. Sin embargo, no es la única ubicación a la que ir cuando pasemos por allí. El motivo es que el municipio se localiza junto al Parque Natural de la Breña y las Marismas de Barbate y cuenta con mucha historia, por ejemplo, por albergar la batalla de Trafalgar. En el aspecto gastronómico debemos subrayar el Campero, restaurante referente en cuanto a la amplia variedad de platos de atún rojo de almadraba que ofrece. Tras la visita a tierras barbateñas, emprendemos una nueva marcha con el mismo rumbo que adoptamos al inicio de nuestra ruta: dirección noroeste. A nuestro paso discurriremos por Chiclana de la Frontera y su poblado de Sancti Petri. Posteriormente llegaremos a

Our next stop on the way is also part of the municipality of Tarifa, although we have to drive a further 20 kilometres away towards Cadiz on the N-340 main road. We are referring to Bolonia, a spectacular enclave comprising of the famous sand dunes and considered to be one of the most beautiful beaches in Spain. Within an inlet, Bolonia is carefully guarded by Baelo Claudia, a Roman town dating back to the 2nd century BC and recognised worldwide for its extraordinary urban layout. This city was a maritime port as well as being a commercial hub for preserves and salted fish. We follow the main road making a necessary stop at Zahara de los Atunes, which is a town located at the bank of the river Cachón and at the foot of the Retín mountain range. Between the Cape Gracia and Cape La Plata is where the Cala de los Alemanes is located. It is the most famous beach in Zahara where you can spend a magnificent day enjoying the sun, the sea and the tranquility. When it is time for lunch or dinner, booking a table at Restaurante Antonio is always a good option. It is along the seafront and has an exquisite menu where you can try the best food products in this area. Zahara de los Atunes is within the municipality of Barbate. The town of Barbate is situated only 14 kilometres away and is another great place to visit. This charming coastal town is located at the rivermouth of the same name. Additionally, it also where the magnificent beach of Los Caños de Meca is located, an open and picturesque space that will leave no one unmoved. However, it is not the only place we can visit when we go there. The reason is because the borough is located alongside the La Breña and Marshlands of Barbate Natural Park, a place with a lot of history, where the Battle of Trafalgar took place, for example. When it comes to gastronomy we must hightlight El Campero, a renowned restaurant with a wide variety of Bluefin tuna dishes on offer. After visiting the municipality of Barbate, we go back on the road in the same manner as we started our trip, heading north-east. On the way we pass by Chiclana de la Frontera and the town of Sancti Petri. Later we will reach the capital, Cadiz and go around the Bay to Puerto de Santa Maria, Rota, Chipiona and then reaching our final port of call. This is found just between the border of the

la altura de la capital, Cádiz, para bordear su bahía circulando por El Puerto de Santa María, Rota y Chipiona, hasta llegar al último puerto de nuestro viaje. Este se halla justo en la frontera natural de la provincia de Cádiz con Huelva: la desembocadura del río Guadalquivir. Y en su margen izquierda está Sanlúcar de Barrameda, tierra de artistas, de manzanilla y de buen comer, en especial por sus langostinos. Casa Bigote, situado en Bajo de Guía, o Casa Balbino, en la plaza del Cabildo, son sólo algunos de los santuarios gastronómicos cuya visita es un deber. Las visitas guiadas a las bodegas del municipio también son un gran reclamo por parte de los visitantes, ya que en Sanlúcar se encuentra las bodegas de Barbadillo, La Gitana o Argüeso, entre muchas otras. Y para poner el colofón a esta parada, se puede concertar un paseo en barco por el Guadalquivir y visitar el Parque Natural de Doñana, una vía fluvial que ya fue transitada por la expedición Magallanes y Elcano en 1519 en lo que fue la primera vuelta al mundo de la historia. Este reportaje se acaba, pero lo bueno es que Cádiz es infinita. Siempre que se viaja por sus tierras se descubren nuevos rincones. Por ello, nuestra recomendación no se basa en visitar Cádiz de forma estática y dejar que pasen los días de vacaciones. Todo lo contrario. El gran atractivo de la costa gaditana es que como destino, lo mejor es enfocarla como una ruta y hacer de tu viaje un constante camino.

Casa Bigote, located in Bajo de Guía or Casa Balbino in the Cabildo Square, are some of the culinary sancturaries that you should visit. Going on a guided tour of the wineries in the borough is another popular activity among visitors. In Sanlucar you can find the bodegas of Barbadillo, La Gitana and Argüeso, among others. Este vino es oriundo de Tokaj-Hegyalja, en el noroeste de Hungría y emanaba del viñedo más reconocido universalmente, el de Oremus. En cambio, esto forma parte del misterio que envuelve a Vega Sicilia, ya que a pesar de que sus suelos están compuestos por arcilla, pizarra, caliza, arena y grava, producen uvas que imprimen un sabor diferente e inigualable a todos los demás vinos.

The company Tempos Vega Sicilia was founded in 1982 when the Álvarez family acquired the vineyard of the same name from the Newman Svaton family. The businessman from Leon got a glimpse of the land and took the wines of Vega Sicilia to the highest level, and over the years making it the top Spanish winery and one of the most relevant worldwide. Located on the left embankment of the River Duero, between the municipalities of Quintanilla de Onésimo and Valbuena de Duero, Vega Sicilia is located 15 kilometres from Peñafiel and 41 from Valladolid. The estate is considered to be located on the oldest geological formation of the Spanish mainland. These lands are stony and arid looking, together with the extreme temperatures in both summer and winter, do not seem to be the most favourable conditions with regards to the plantation of vineyards. However, this is part of the mystery surrounding Vega Sicilia, and even though the land is made up of clay, slate, limestone, sand and gravel, it produces grapes that leaves it mark with a different, unequalled taste to all other wines.

In 1982 the management of the winery was handed over to Pablo Álvarez, and even though he was no expert in wines, he researched thoroughly and travelled around the world until he become an international reference for having accomplished the transformation of Vega Sicilia. Under his management, the winery has gone from being a company of pedigree and only selling in 3 countries, to being recognised internationally for its prestige and maintaining export links in 115 countries with more than 5,000 clients spread all over the world. Horse-drawn carriages in Andalusia Horse-drawn carriages have always been much more than a simple means of transport, it was also a public reflection of the social and economic status of their owners.

Pero paradójicamente el momento álgido en su perfección técnica y estética también coincidió con su decadencia. Efectivamente, el siglo XIX vio nacer otro invento que ha permanecido vigoroso hasta nuestros días: el motor de explosión y con él el nacimiento del vehículo a motor. Su invención marco el ocaso del coche de caballos. Salvo la austrohúngara, todas las cortes europeas pronto abandonaron sus fieles carruajes para adoptar los aires renovadores que suponían la velocidad y los diseños del nuevo ingenio. Así, de un día para otro, de las avenidas pasaron a los museos. Eso para los mas afortunados, porque la inmensa mayoría fueron a parar a cocheras y cobertizos donde comenzó para ellos una larga decadencia, olvidados y cada vez mas perjudicados. Esta, que fue historia casi común a toda Europa, tuvo una excepción singular: Andalucía. Desde mediados del pasado siglo los viejos coches arrinconados en fincas y cocheras han salido a la luz y renacido con inusitada vitalidad. Y con ellos, vigoroso, todo el particular universo que rodea a estos singulares vehículos.

From the 16th century until practically the end of the 19th century they were a great social showcase displaying wealth, luxury and power. The whole of Europe travelled around by horse and carriage. But paradoxically the pivotal moment of its perfection of technique and aesthetics also came with its decline. In effect, the 19th century saw the birth of another invention that has continued to be strong in our time, the combustion engine and the birth of the motor vehicle. This invention marked the decline of the horse-drawn carriage. All the European courts soon gave up their trusted carriages except for the Austro-Hungarian courts, to adopt the new time of speed and design of this new ingenuity. Therefore, from one day to the next, they went from avenues to museums. That was for the most fortunate ones because most ended up forgotten and neglected in carriage houses or barns. This was almost the same story all over Europe, but with one exception, Andalusia. Since the middle of the last century these old carriages have been stored away on country estates and carriage houses, but they have re-emerged and have reborn with an unusual vitality. And with them, that whole curious universe that goes with this extraordinary type of vehicle.

Talabarteros, ebanistas, guarnicioneros, tapiceros, expertos pintores, herreros, faroleros… una serie de oficios que permanecían latentes, mantenidos a base de ocasionales encargos, han recobrado su dinamismo y su fuerza. Los herederos de talleres como Soto, Matapalo, los “carboneros”, Antonio Bazán, solo por citar algunos, recobraron su antigua actividad y además comenzaron transmitir sus conocimientos a una pléyade de aprendices que han venido a garantizar la continuidad del oficio. Además, el empleo de mayoral renace con fuerza y los discípulos de emblemáticos mayorales toman inmediatamente las riendas de sus maestros. Y todo esto es así porque en Andalucía la vida esta en la calle, en ferias y romerías. Se trata no solo de restaurar y conservar, sino también de “enganchar”… salir para exhibirse. Como corresponde a una sociedad viva e imaginativa, como es la andaluza, sus fiestas están en continua evolución…nada sale y entra del baúl cada año sino que todo está en permanente cambio. Los lunares de un año son antiguos y desfasados para el siguiente. La tradición se reinventa y se adapta al dinamismo cambiante de la sociedad. Esta filosofía vital también tiene su reflejo en el coche de caballos. Nunca en la evolución del coche de caballos ha habido tanta cantidad ni calidad como actualmente en Andalucía. También es sorprendente la variedad, el detalle y la belleza de todos los ropajes y adornos que exhiben los participantes: Levitas, sombreros de copa, de ala ancha, mandiles, polainas, caireles, mantillas de blonda, de chantillí, catites …. Lo sorprendente, además, es que todo esto lo consigan particulares que dedican su tiempo y su patrimonio al mantenimiento de toda esta riqueza.

SE TRATA NO SOLO DE RESTAURAR Y CONSERVAR, SINO TAMBIÉN DE ENGANCHAR... SALIR PARA EXHIBIRSE

Saddlers, carpenters, leather craftsman, upholsterer, expert painters, blacksmith, lamp-makers.... A series of occupations that remained dormant, maintained only by the occasional order, now have regained their dynamism and strength. The heirs of these workshops like Soto, Matapalo, the “charcoal burners”, Antonio Bazán, to name just a few, have regained their former activity and have also started to pass on their knowledge to a distinguished group of apprentices who have come in to guarantee the continuity of this profession. In addition, the job occupation of coachman has made a strong comeback and the apprentices of emblematic coachmen have been taking over the reins of the masters. Everything is the way it is because in Andalusia life is in the streets, the fairs and pilgrimages. It is not only about restoring and preserving but also coupling carriages...going out to exhibit. As with any society which is alive and imaginative, like the Andalusian one, its festivities are a continual evolution...nothing comes out and goes back in the trunk every year, there is a constant change. The polka dots from one year to the next are old-fashioned and untrendy. The tradition is reinvented and is adapted to the changing dynamism of society. This vital philosophy is also reflected in the horse-drawn carriage. There has never been a time when there has been so much quantity and quality of horse-drawn carriages than in Andalusia today. It is also surprising the variety, detail and beauty of all the clothing and accessories that every participant displays: frock coats, top hats, wide-brimmed hats, riding aprons, breeches, tassels, lace or Chantilly mantillas, catite hats...Surprisingly is that everyone spends time and money on maintaining this cultural wealth.

Aunque sería difícil una cierta ortodoxia en los hábitos o una homogeneidad normativa sin la existencia de entidades que vigilaran por ello. En esta tarea el Real Club de Enganches de Andalucía agrupa a todos estos aficionados, potenciando su actividad y contribuyendo decisivamente a rescatar todo este patrimonio. Entre las múltiples actividades que realiza se encuentran las llamadas “exhibiciones de enganches”, destacando por su singularidad y belleza las que se celebran en las ciudades de Ronda y Sevilla. Cada año durante el mes de septiembre y en la primavera, y siempre coincidiendo con sus respectivas ferias, tienen lugar estas extraordinarias exhibiciones en sus Reales Maestranzas de Caballería. Enganches a la húngara, a la calesera o a la inglesa; cuartas, medias potencias, cinco a la larga, tandem, tresillos, limoneras, troncos o faetones… En ningún otro lugar del mundo puede verse una concentración tan grande y singular de calidad y belleza. La visita es obligatoria.

The Royal Andalusian Horse-Drawn Carriage Club brings together all enthusiasts, promoting this activity and decisively contributing to preserve this heritage. Every year during the month of September and in spring, coinciding with their respective fairs, there are extraordinary shows at the Ronda and Seville Bullrings. Andalusian calesera-style, English style or Hungarian style harnesses; four-in-hand, pick-axe or spike and five horse teams, tandem, a team of three or a team of four horses, unicorn or phaetons… There is no other place in the world where you can see the biggest concentration, and unique quality and beauty. The visit is a must.

Cómo organizar las vacaciones con los hijos How can you organise your time with children during the holidays? Acaba el colegio y comienzan las vacaciones de verano para los más pequeños. Se produce un cambio de rutinas y de costumbres para toda la familia, en especial para los niños: cambia la hora en la que se acuestan y se levantan, se separan de sus amigos de clase, cambian los hábitos de comida, tienen más tiempo libre... y es entonces cuando para muchos padres comienzan a surgir dudas sobre cómo organizarse durante este periodo: ¿Cómo reorganizamos el día a día? ¿Deberían continuar mis hijos haciendo deberes? ¿Cuánto tiempo debo dejarles usar las nuevas tecnologías?   En este artículo vamos a proporcionar algunas pautas sobre cómo poder organizar las vacaciones con vuestros hijos de forma que sea un momento de desconexión y disfrute para todos, y no se convierta en una época de estrés familiar. ¿Cómo reorganizamos la rutina?.  En verano es más difícil organizar una rutina marcada ya que suelen surgir con frecuencia planes improvisados. A pesar de ello, es importante que marquemos algunas pautas para dar cierto orden y control a nuestro día a día. Esto generará seguridad en los niños al saber qué pueden esperar, facilitaran las transiciones de un plan a otro y os ayudará a prevenir muchas rabietas.

Debemos tener en cuenta que el uso de estos gadgets no es siempre negativo, son potentes herramientas de acceso a información, fomentan la organización espacio-temporal, la coordinación oculo-motora, el desarrollo de la rapidez de reflejos y memoria, la concentración, permiten la socialización y estimulan la actividad cerebral. Sin embargo, es importante que la utilización se haga de una manera responsable, que tenga un fin productivo y justificado, una limitación de tiempo y que nos aseguremos de que el contenido está adaptado a la edad del niño.  El tiempo de uso en cuanto a videojuegos tanto en consolas, móviles o iPads variará en cuestión de la edad. Como guía general, en niños de 0-3 años se recomienda evitar el uso de estos dispositivos. En niños de 3-6 años no más de media hora el día bajo supervisión, y en niños de 6-12 años no más de una hora al día. Una buena opción puede ser combinar actividades reales en familia con la tecnología, como por ejemplo: cocinar viendo una receta de internet, buscar lugares de interés con ayuda de vuestros hijos, etc. Recordad que los padres son los modelos de los hijos y por tanto, es importante enseñarles a través del ejemplo.    ¡Desde el Centro de Psicología María Sancho - os deseamos unas felices vacaciones!

GANAS DE SOL Después de un invierno con muchas limitaciones tanto climatológicas como de movilidad, al fin ha llegado el buen tiempo y con el término del estado de alarma los desplazamientos a montaña y playas no se han hecho esperar. Es por ello que hoy os voy a hablar de fotoprotección. El sol emite una serie de radiación electromagnética de distintas longitudes de onda. Cuanto más corta es la longitud de onda de la radiación, más energética es y mayor su capacidad de producir daño. Las radiaciones que llegan a la tierra son: radiación ultravioleta (UVA,UVB)), visible (luz azul) e infrarrojo (IR). Todas ellas pueden ocasionar daño en la piel y ojos. El sol tiene muchos efectos positivos en nuestro organismo y es necesario para: Formacion de vitamina D necesaria para la absorción de calcio y depósito en huesos, mejora algunas enfermedades como psoriasis y algunas dermatitis, proporciona calor, estimula la serotonina necesaria para tener sensación de bienestar, estimula la melanogénesis en la epidermis proporcionando bronceado en la piel. Sin embargo, también produce: quemadura solar, cáncer de piel, fotoenvejecimiento( arrugas, manchas...) y lesiones oculares. Es muy importante usar fotoprotector cuando nos exponemos al sol para minimizar los efectos nocivos y seguir una serie de recomendaciones para hacerlo de forma segura:

FOTOPROTECCIÓN SOLAR

• Usar la cantidad suficiente: 2 mg/cm2 de superficie expuesta (para rostro aplicar una línea de producto en dedos índice y corazón). • Renovar la aplicación cada dos horas los 365 días al año en zonas expuestas aunque el producto sea resistente al agua cuando lo usemos en playas y piscina. • En niños no usar spray transparente por el peligro de poder quedar zonas sin él al no verlo en la aplicación. Se recomiendan lociones y gel-crema hasta los 12 años. • No exponerse al sol en las horas de mayor radiación solar (12:00 - 16:00). • Usar gafas de sol y sombrero para evitar daños en los ojos y cabeza. • No exponer a niños menores de 3 años. • Hidratarse a menudo. • No olvidar orejas, escote, hombros y labios. • Utilizar el fotoprotector los días nublados porque las radiaciones UV llegan a nuestra piel.

En este caso, es en el municipio de Carmona. Este lugar fue de las ciudades más fortificadas del reino de Tartessos. Posteriormente se asentaron los fenicios, también los cartagineses y participó con el romano Julio César en la sublevación de la Hispania Ulterior. Carmo, quae est longe firmissima totius provinciae civitas (Carmona es, con mucho, la ciudad más fuerte de toda la provincia). Gracias a su apoyo, Julio César le legó a la ciudad el estatus de municipio. La ciudad ha estado fortificada porque desde su posición podían vigilarse Los Alcores, La Vega y Las Terrazas. Tras la invasión musulmana del siglo VIII, pasó a ser la capital de uno de los reinos de Taifas. Fue reconquistada por Fernando III, que la repobló propio. Pedro I convirtió a la localidad en una de sus residencias favoritas. Solo basta un paseo por sus calles, para disfrutar de una arquitectura rica, bastante bien conservada, lo que no ha ocurrido en otros pueblos andaluces. Con estos antecedentes, queríamos de alguna manera que nuestra intervención fuera en consonancia con dichas influencias. La casa está dividida en distintas terrazas, que se han interconectado, enriqueciendo enormemente, su recorrido, con terrazas, jardín y patios. Esto la dota de un encanto muy particular, en cierta manera recuerda a las antiguas villas romanas que tanto influyeron en los árabes y que dejaron tanta marca en nuestras tradicionales construcciones.

A modo de bienvenida a este jardín, unos azulejos portugueses, que hacen como de lacayos que nos reciben uno con candelabro y velas y el otro con un arpa, en alusión al propietario del lugar, gran aficionado a tañer instrumentos de cuerda. Para el jardín de entrada usamos un empedrado con caliza de pequeño formato, en alusión a las maravillosas calzadas de este mismo material que se encuentran en excavaciones cercanas. Creamos un muro (elemento tradicional en las antiguas casas árabes) con el fin de conferir mayor privacidad a la villa. Y con el deseo de aprovechar bien el espacio y conferirle más masa verde, ubicamos un doble seto de Mirtus communis “Tarentina” y Citrus aurantium: su introducción en España siempre fue atribuida a los árabes, pero las investigaciones modernas han podido demostrar que fueron los romanos quienes la realizaron y se debió al establecimiento de las rutas a la India a través del Mar Rojo. Sin embargo, cuando el naranjo ocupa su sitio definitivo en lo relativo a ornamentación de patio y jardín, es durante y después de la dominación árabe. Hombres cultos que procedían de Arabia, Siria y Persia los introdujeron en sus plantaciones.

Como no disponíamos de mucho espacio, aprovechamos el hueco que quedaba entre el seto de arrayán y el comienzo de las copas de naranjos, que fundimos a modo de espalderas, para colocar espejos que nos ampliaban la sensación de espacio y así reflejaban la bella loggia con arcadas. Aprovechamos el desnivel existente para crear fuentes bajas en los muros que contienen la siguiente terraza. Esta nos conduce a la galería con arcos de crucería en ladrillos de taco, en alusión a este oficio alfarero tradicional desde época romana en estas tierras. Plantamos ejemplares de Phoenix dactylifera, (palmera tradicional árabe) y macizos como setos de Jazminum multipartitum, de porte arbustivo y fácilmente recortable, para formar como setos. Este bello espacio abierto y cubierto, tiene multiples usos; audiciones de música, cócteles, representaciones... Y está comunicado con un pequeño patio donde se colocó una antigua fuente en piedra y nuestras tradicionales macetas, que bien podían ser las que usaban por su diseño y color los antiguos romanos.

The house is divided into different terraces, gardens and patios, which have been interconnected, enhancing the route greatly. This gives it a very particular charm in a way that is reminiscent of old Roman Villas which greatly influenced the Moors and left such a mark on our traditional constructions. As a way of welcoming you to this garden, there are Portuguese tiles, which have the appearance of servants who are there to greet us, one with a candelabra and candles and the other with a harp as a reference to the owner of the property, who’s very enthusiastic about playing string instruments. For the entrance we used small limestone pavings as a reference to the marvellous roads found in nearby excavations where the same material was used. We built a wall (a traditional element in the old Arabic homes) giving a greater sense of privacy to the villa. As a way of making the most of the space and making it greener, we placed a double hedge of Mirtus communis “Tarentina” and Citrus aurantium: its introduction in Spain had always been attributed to the Moors, but modern researchers have been able to demonstrate that it was the Romans, as a consequence of the opening of routes to India across the Red Sea. However, the orange tree truly becomes part of the decoration of a patio and garden during and after the Moorish occupation. Men who came from Arabia, Syria and Persia introduced it to the plantations. Since we did not have much space, we made the most of what was left between the myrtle hedge and where the top of the orange trees start, which we blended in as a kind of trellis, then installed mirrors to widen the sensation of space and hence the beautiful loggia with arches could be seen in the reflection. We took advantage of the existing slope to create low fountains with walls for each terrace. This leads us to the gallery of rib vault arches made of rustic red bricks, a reference to the traditional potters from Roman times in these lands. We planted Phoenix dactylifera (traditional Arabian date palm) and hedges of Jasminum multipartitum, bushy and easy to trim to create hedges. En la terraza de arriba, aprovechamos el muro trasero para crear un juego de pilastras entre los cuales se colocaron paños de azulejos y gárgolas que además de tener la funcionalidad depuradora, la convierten en una agradable fuente. La zona de baño comunica con un porche donde se colocaron nuestras macetas con Laurus nobilis y en arriate, Viola odorata y Acantus molis, todos usados en la jardinería antigua. Conectamos desde aquÌ con un pasillo que atraviesa un patio sobrio, con bojes en bola y desde el que podemos acceder a la segunda entrada de esta casa.

And this is connected to a small patio where we placed an old Stone fountain and our traditional pots, which by design and colour could be those used by the Romans. We took advantage of the back wall to create a set of pilasters where we placed tile cloths and gargoyles, which also served as a purifier, making it a pleasant fountain. The bathroom area connects to the porch where we placed pots with Laurus nobilis, and a flower bed of Viola Odorata and Acantus mollis, all of them used in an old garden. We connect a passageway from here, which passes a simple patio with Buxus bushes, with access to the second entrance to the house.

El Campo de Gibraltar, con su inigualable posición estratégica entre dos continentes y dos mares, tuvo gran importancia en época romana.

A journey through history The Campo de Gibraltar is an unparalleled strategic area between two continents and two seas, of great importance during the Roman times. Textos: Adela Duclos (Arqueóloga y Periodista) Queremos invitarles a viajar en el tiempo para conocer las ciudades que hace miles de años habitaron aquellos que antes que nosotros valoraron la riqueza y belleza de este territorio. Nuestro viaje comienza en Sotogrande, mejor dicho, en Barbesula, nombre de la ciudad donde vivían nuestros más cercanos antepasados. El pequeño cerro y el llano que ocupó la ciudad están situados junto al Cortijo Los Canos en Pueblo Nuevo. Aunque ahora apenas se sepa de su existencia, en otra época fue el lugar elegido por algunas de las familias más prestigiosas del sur de Hispania, como los Fabii Fabiani o los Cervi, para construir su hogar. De hecho, un miembro de esta última fue uno de los líderes políticos de la ciudad, Caius Cervius Quintianus, a quien conocemos gracias a inscripciones en piedra halladas en el entorno. Otro personaje que pisó antes que nosotros el suelo de Sotogrande fue Aelia Domitia Severiana. Esta mujer fue flaminica perpetua, es decir, sacerdotisa del culto a los emperadores y emperatrices divinizados, un puesto de gran importancia. Tal fue el papel destacado que alcanzó esta “barbesulana” que su familia, con permiso del gobierno local, pagó un pedestal en su honor dedicado a la diosa Juno (diosa de la maternidad) con una estatua de plata de cien libras de peso. Recorremos unos 18 kilómetros dirección Cádiz hasta llegar a Carteia, en San Roque. Esta fue la primera colonia que los romanos fundaron fuera de Italia, cuando en el 171 a.C. se instalaron allí más de 4000 hijos de soldados romanos y mujeres púnicas que habitaban la zona anteriormente. Su escalera monumental al templo o el teatro son solo un leve reflejo de lo que debió ser esta colonia romana, una verdadera ventana a la Bahía de Algeciras.

We would like to invite you to travel in time so that you get to know the cities inhabited thousands of years ago and whose inhabitants valued the wealth and beauty of this land long before we did. Our journey starts in Sotogrande, better known as, in Barbesula, the name of the city where our closest ancestors lived. The city was located on a small hill and plain alongside Cortijo Los Canos in Pueblo Nuevo. Despite the fact that its existence is barely known these days, during another period of time it was the chosen place for some of the most prestigious families in southern Hispania, such as Fabii Fabiani or the Cervi who decided to build their home there. In fact, a family member of the latter family was one of political leaders of the city, Caius Cervius Quintianus, who we know about due to stone inscriptions found in the surroundings. Another character who walked around Sotogrande before us was Aelia Domitia Severiana. This woman was an eternal flaminica , in other words, she was a priestess devoted to the divine emperors and empresses, a position of great importance. Such was the distinguished role that this Barbesula-born woman reached that her family got permission from the local government to pay for a plinth in her honour dedicated to the goddess Juno (goddess of maternity) together with a hundred pound silver statue. We travel some 18 kilometres towards Cadiz until we get to Carteia, in San Roque. This was the first colony that the Romans founded outside Italy, when in 171 B.C. a settlement of more than 4000 offspring of Roman soldiers and Punic women who inhabited the area before. The monumental staircase to the temple or the theatre is a small reflection of what the Roman colony must have been like, a true window to the Bay of Gibraltar.

Continuando con nuestro recorrido, hacemos parada en Iulia Traducta, actual Algeciras, donde en alguno de sus Thermopolium (establecimiento donde se servía comida) podremos probar los manjares de la zona acompañados de alguna salsa de pescado: garum, muria, liquamen o hallec. Estas procedían de pescados completos o de los trozos de estos conservados en sal dentro de piletas en las fábricas destinadas a ello, la de Iulia Traducta era una de las que tenía mayor capacidad productiva de todo el Imperio romano. Nada mejor tras una buena comida que una función de teatro con vistas al mar, nos dirigimos a Baelo Claudia, en Bolonia (Tarifa). Esta era el puerto principal al que llegaban los viajeros procedentes de Tingis (Tánger), y es que el Campo de Gibraltar siempre ha sido un lugar de encuentro entre culturas. Su perfecto urbanismo, el cual conserva edificios como el teatro, el santuario a la diosa Isis o su impresionante basílica con sus columnas aún en pie presididas por la escultura colosal del emperador Trajano, hace que parezca una Roma a pequeña escala. De vuelta a casa nos paramos a contemplar el atardecer sobre el Parque de los Alcornocales desde el Cerro del castillo de Jimena, bajo el que se encuentra la ciudad romana de Oba. Las últimas excavaciones realizadas en la zona han sacado a la luz una gran plataforma sobre la que se levantaría un templo, en este nos paramos antes de volver a la carretera para pedir a los dioses por un buen final de viaje. Algunas de estas ciudades esperan ser visitadas, como Carteia o Baelo Claudia; otras ser descubiertas, como Barbesula, todas esperan no ser olvidadas y nuestro deber es cuidarlas, ya que son un pedazo de nuestra historia.

We continue on our journey stopping at Iulia Traducta, present day Algeciras where in one of its Thermopolium (an establishment where they served food) we can try one of the delicacies of the area accompanied by a fish sauce: garum, muria, liquamen or hallec. These came from whole fish or pieces preserved in salt in pools at the salting factories, and in Iulia Traducta was one that had the greatest capacity of production in the entire Roman Empire. Nothing better than after having a meal is to watch a play with views of the sea, we head for Baelo Claudia, in Bolonia (Tarifa). This was the main port for travellers arriving from Tingis (Tangier) because the Campo de Gibraltar has always been a meeting point of cultures. Its perfect urban layout where all the buildings are preserved such as the theatre, the sanctuary in honour of the goddess Isis and its impressive basilica with its columns still standing with the colossal sculpture of the Trajan emperor presiding, it looks like Rome on a small scale.. On the way back home we stop to admire the sunset within the Alcornocales Natural Park from the top of Jimena castle, and the Roman city of Oba which was located below. The latest excavations have uncovered a large platform where a temple was built. We stop here before when get back on the road to ask the Gods for a pleasant end to our trip. Some of these cities are waiting to be visited, such as Carteia and Baelo Claudia; others to be discovered like Barbesula, but never to be forgotten and our duty is to look after them as they are a piece of our history.

Han pasado ya unos 40 años desde la creación del singular Clase G. Algunos elementos emblemáticos confieren al Clase G su distinguida apariencia: la llamativa manilla de las puertas y el sonido característico al cerrarlas, el robusto listón protector exterior, la rueda de repuesto en la puerta posterior, el diseño extravagante de los intermitentes y el asidero para el acompañante, imprescindible al circular fuera del asfalto. Estos detalles singulares son los que certifican la autenticidad del Clase G. Un vehículo que impresiona con su expresivo diseño exterior. Campo a través no conoce rival, ni lo ha conocido nunca. Pero el arquetipo de los todoterrenos brilla también en la ciudad por sus propiedades de conducción. El nuevo Clase G entusiasma con un mayor confort de conducción sobre firmes asfaltados. El rey de la naturaleza salvaje conserva también su corona en la jungla urbana. Hay cosas a las que no estamos dispuestos a renunciar. Permanece invariada la central de mando para una movilidad sin límites en terrenos sin compactar: las llamativas teclas que activan los tres bloqueos de diferencial. Pero, al mismo tiempo, ha cambiado mucho. El diseño interior completamente reestilizado alcanza un nuevo nivel, el máximo. Los rasgos formales y el canon de dimensiones del habitáculo no permiten albergar duda alguna: estamos ante un todoterreno digno de la sigla G, dominante, anguloso, emblemático.

40 years have gone by since the creation of the unique G-Class. Some emblematic elements that distinguish the G-Class appearance: the striking door handles and the characteristic sound when you close them, the robust protective exterior panel, the exposed spare wheel on the tail gate, the extravagant design of the indicators and the handle for the passenger side, essential when driving off road. These unique details are what certify the authenticity of the G-Class. It is a vehicle that impresses with its expressive exterior design. It has no rival cross country, nor has it ever had one. But the archetype of 4-wheel drive also shines in the city for its driving qualities. The new G-Class stirs up excitement with greater comfort of driving over asphalt. The king of the wild preserves also its crown in the urban jungle. There are some things that we are not willing to renounce. The control panel remains unchanged for a mobility without limits on uneven terrain: the eye-catching keys that activate three fully locking differentials. Yet at the same time it has changed a lot. The interior design has been completely restyled reaching a new level, the maximum. The formal features and the standards of space in the interior leaves us with no doubt, here is an off-road vehicle worthy of the initial G, dominant, angular and emblematic.

Texto: SMQ-Señor Marqués Tenemos medio coche suspendido en el aire, o al menos una de las ruedas, mientras el resto apoyan las 2,4 toneladas firmemente sobre la tierra. Y si miramos por debajo podemos ver su compleja tecnología. La tracción integral y los bloqueos de diferencial con una acción de bloqueo del 100% siempre han estado presentes en el Mercedes Clase G, al igual que el bastidor de largueros, también llamado de travesaños o escalera. Si en todos los turismos y SUV convencionales la carrocería es monocasco y auto portante, en el G el chasis de largueros soporta los órganos mecánicos, y la carrocería va acoplada encima. El Clase G vio la luz en 1979, y se ha convertido en el modelo más longevo de Mercedes. Es un automóvil con un estilo atemporal, tan propio de un jeque árabe como de un empresario rural o de un actor de Hollywood. El caso es que gusta mucho, y la clave está en su línea angulosa. Para conocer a fondo la nueva generación del Clase G hemos viajado a las montañas Schöckl. Estamos cerca de la ciudad austriaca de Graz, donde se fabrica el Clase G, y por aquí encontramos desniveles de más de 1.000 metros e inclinaciones de 450. Hay una placa en el pilar B donde proclama orgulloso “Schökl proved” (probado en Schökl), y al volante este nuevo modelo se siente menos rudo y más práctico que los anteriores. Grandes pantallas digitales dominan el interior y un asiento motorizado te da masajes o te refrigera la espalda.

We have half the car suspended in the air or at least one of the wheels, while the rest is supported by the 2,4 tonnes firmly on the ground. And if we take a look underneath we can see the complex technology. The four-wheel drive and the differential locks with a 100% block action that has always been a part of the Mercedes G-Class, as well as the body-on frame design, also called beams or a ladder frame. All the conventional cars and SUVs have a monocoque or self supporting body, but the chassis of G-Class supports the mechanical components, and the bodywork is hitched above. The G-Class was developed in 1979, and it has become the longest running Mercedes model. It is an automobile with a timeless style, so characteristic for a Sheikh or a rural businessman or even a Hollywood actor. The fact is that it is well liked and the key to its popularity are its angular lines. In order to gain a thorough understanding of G-Class, we travelled to the Schöckl mountains. We are near to the Austrian city of Graz, where the G-Class is manufactured, and where we find gradients of more than 1000 metres and slopes of 450. There is a plaque on the B pillar proclaiming proudly “Schökl proved”, and at the wheel of this new model it feels less rough and more practical than its predecessors. Big digital screens dominate its interior and a motorised seat gives you massages and cools your back.

En el Dynamic Select los conductores pueden elegir entre cinco modos como en otros modelos de Mercedes: “Comfort”, “Sport”, “Eco” e “Individual”. ¿Y si lo que queremos es subir una pendiente de roca? No se preocupen, cambiamos a “G-Mode” y se activa uno de los tres bloqueos del diferencial o se conecta la reductora “Low Range”. Nos encontramos al volante de un G500 (137.657 euros), cuyo motor 4.0 biturbo rinde 422 CV y lo que es más importante en estas circunstancias, un par motor de 610 Nm. Para los que siempre quieren más también se comercializa poderoso el G63 AMG de 585 CV y un precio en España de 183.150 euros. Más razonable parecen las versiones diésel: G350d (286 CV) que parte desde los 122.700 euros, y G400d (330 CV), desde 126.725 euros. Entonces, ¿qué ha cambiado de verdad? Es nueva tanto la carrocería como el bastidor de acero que la sustenta. Solo hay tres piezas que permanecen: los tiradores de las puertas, los limpiadores de los faros y la tapa de la rueda de repuesto. En lo que se refiere al interior, es más amplio y hay más espacio tanto delante como detrás. Al fin y al cabo, cada vez se usan más lo 4x4 como coches con chófer. Y todas las medidas que tienen que ver con la eficacia off-road se han mejorado ligeramente, con una altura libre al suelo de 24,1 cm (+6 mm). De vuelta al asfalto rodamos por las carreteras secundarias austriacas con una comodidad que se acerca a la que ofrece un Clase E. La experiencia de conducción ha cambiado radicalmente respecto al modelo anterior. Gira, se apoya y frena mejor, y se debe a varios factores fundamentales. La dirección, ahora de cremallera y con asistencia eléctrica, es más rápida y tiene mejor tacto. Otro punto clave es que se ha modificado la suspensión, con doble trapecio delante y eje rígido atrás, con cuatro barras longitudinales y una barra Panhard. Ahora el paso por curva es netamente superior y da mucha más confianza que antes. La agilidad se ve mejorada por una notable rebaja en el peso total de 170 kg, gracias a una nueva combinación de acero y aluminio. Tras pasar un día con el gran G nos sentimos realmente impresionados. Ahora hay por ahí muchos super-SUV pero, quizá con permiso del Range Rover, solo hay un supercar genuino en el mundo de los auténticos 4x4.

Back on the road we drive around on B-class roads in Austria in a comfort similar to an E class. The driving experience has radically changed with regard to the previous model. As you turn, it handles and breaks better, and this is due to some key factors. The steering, now a steering rack with electronic assistance, is faster and has a better feel. Another key point is that the suspension has been modified with a front double-wishbone and rigid rear axle and four longitudinal railings and Panhard rod. It is clearly superior now when going around a bend and is much more self-assuring than before. The agility has improved due to a significant reduction in the total weight of 170 kg, thanks to a new combination of steel and aluminium. After a day with the great G wagon, we feel really impressed. There are now many SUVs out there, but perhaps with permission from Range Rover, there is only one genuine supercar in the authentic 4x4 world.

Frore de Carme, añada 2016, uno de los vinos excepcionales de la Bodega y con él creamos un vino submarino sumergido durante 12 meses a 20 metros de profundidad en la Ría de Arousa aportándole carácter a este por su ingravidez, temperatura constante y corrientes submarinas. Una producción limitada de 630 botellas. I have the pleasure of presenting to you “PEZIUM”, a marine treasure that Eladio Piñeiro surprises us once more and delights our palates. Frore de Carme, vintage 2016, one of the exceptional wines from this winery and with it we have created a submarine wine that has been submerged to a depth of 20 metres for 12 months in the Ría de Arousa estuary. This gives it character due its weightlessness, constant temperature and marine currents. It features a limited production of 360 bottles.

Half a century of the best polo in Sotogrande THE INTERNATIONAL POLO TOURNAMENT CELEBRATES ITS 50TH ANNIVERSARY THIS SUMMER.

Esta edición tan especial trae dos novedades destacadas: el regreso del alto hándicap y la unión de los tres grandes clubes de Sotogrande - Ayala, Dos Lunas y Santa María - que convertirán este evento en uno de los más importantes del universo polista actual. La competición tendrá lugar del 26 de julio al 28 de agosto, en los niveles de alto, mediano y bajo hándicap. Un intenso calendario deportivo que comparten este año los tres clubes de polo de Sotogrande. Además, la entrada será libre en las tres sedes que albergarán esta 50 edición. Serán 34 días del mejor polo que contará con la esperada vuelta a Sotogrande del número uno del ranking del polo mundial, el argentino Adolfo Cambiaso. Durante el verano los equipos competirán por los tres trofeos ya tradicionales: la Copa de Bronce, Plata y Oro. Además de un deporte competitivo y visualmente espectacular, el Torneo ofrece a los visitantes diferentes espacios de ocio y entretenimiento. La moda del Shopping Village; propuestas culinarias en el Gastro Garden; atracciones y juegos para los más pequeños en la Kids Area. Además de los espacios VIP de hospitalidad. El Torneo cuenta con el apoyo de Turismo Andaluz, Diputación de Cádiz y Ayuntamiento de San Roque.
