The mission: To save the diversity of the Tapa. During the last year he organised with the support of San Miguel and the help of the Chefs four gastronomic events, where all 22 Chefs came together in one of their kitchen to create, to cook and to have fun at the same time. The result is a Tapas Recipe Book, far away from being ordinary. A wealth of flavours, textures, aromas and colours of spanish cuisine – a melting pot of tastes and influences, all together in the 80 recipes for new, salty and sweet Tapas with an exclusive touch. THE ART OF SPANISH WINES

SPECTACULAR RIOJA Rioja is the region, which made the Spanish wine recognized outside of Spain. The Rioja wine is the product of a long and varied tradition of winemaking in this area. Like many of Europe‘s most renowned wine areas, some of the Rioja vineyards were founded by the Ancient Romans. The 3 main regions of the area are Rioja Alta, Rioja Alavesa and Rioja Baja. Each region produces its own unique variety of Rioja wine. The Tempranillo grape is the main grape who is used for the production of red wine.

www.kempinski-marbella.com

THE ART OF SPANISH WINES

LA RIOJA:SPECTACULAR If you travel to Spain, something you cannot fail to appreciate is the wine. Of all the wine regions in Spain, it is the wine from La Rioja which is the most well known. Clearly there are many points of artistic and cultural interest in Spain, but there are also many related to the world of wine. Interestingly not many people know that Spain has the world‘s largest vineyard area, followed by France. Still, in comparison to France, where the wine is well recognized centuries, it has only been in the last 25 years that Spanish wine has become popular. Wine has been cultivated in La Rioja for over two thousand years, as witnessed by the numerous archaeological remains dating back to the time of Roman rule.

ITS

LIKE THE STORY FROM AN UGLY DUCK TO A PROUD SWAN

In 2011, La Rioja was named by the world's largest wine portal Smooth.com as the wine region of the Year. It was also last year that La Rioja broke the record with more than 120 million bottles exported. One of the criteria for the award was that specifically Rioja wines offer a wide individual variety. Smooth.com Editor Gregory Dal Piaz: „Rioja is a region to explore, because the wines are too good to ignore. There is no other denomicacion in 2011, who is competitive in terms of offering so much diversity to the consumer“.

Classification of La Rioja: Excellent: 1994, 1995, 2001, 2004, 2005, 2010, 2011 Very good: 2006, 2007, 2008, 2009

Spanish proverb says: Good wine ruins the purse; bad wine ruins the stomach

Kempinski Hotel Bahia Maitre and Sommelier Francisco Gonzalez:

Kempinski Hotel Bahia Executive Chef Jordi Bataller:

Rioja red wines are classified into four categories. The first, simply labeled Rioja, is the youngest, spending less than a year in an oak aging barrel. A Crianza is wine aged for at least two years, at least one of which was in oak. Rioja Reserva is aged for at least three years, of which at least one year is in oak. Finally, Rioja Gran Reserva wines have been aged at least two years in oak and three years in the bottle.

„I personally like to play with the elements of food. I do respect the natural products and always try to give our guests an extraordinary experience in our 5-star hotel. For example if we make a simple Gazpacho, we invite guests to go to our organic garden to pick the tomatoes and peppers themselfes.

Francisco Gonzalez recommends for: • Fish & Seafood If the dish is a white fish, molluscs and small crustaceans, a young white wine will be adequate. For large blue fish or shellfish (lobster) a barrel fermented white is the perfect combination, which will highlight the sweet flavors of seafood. • Meat A good steak should be accompanied by an exquisite young red wine. For other red meat and game a red reserve wine is best. • Tapas For tapas, a young red wine will be the ideal companion. These wines are lightweight and full of flavors, that highlight the flavors of the tapas.

Food and wine culture goes together – and in Spain people always serve wine with lunch and dinner. I think the Spanish wine, especially the wines from La Rioja, have a long history and are very competitive in my opinion. The right wine supports the taste of every dish, and particularly the Mediterranean food.“

Reserva and Gran Reserva wines are not necessarily produced each year. Also produced are wines in a semi-crianza style, those that have had a couple of months oak influence but not enough to be called a full crianza. The designation of crianza, Reserva etc. might not always appear on the front label but may appear on a neck or back label in the form of a stamp designation known as Consejo

SPANISH GRAPES INCLUDE:

RIOJA

AND OTHER REGIONS

TEMPRANILLO (Red): The Tempranillo grape varietal is believed to be a variant of Pinot Noir, and to have been brought to Spain by pilgrims during the Crusades . The name derives from the Spanish word temprana (which means early), because the grape usually is harvested during late September. It has generally been planted throughout Spain and in the Rioja region, but thrives particularly well in the Rioja Alavesa. Tempranillo prefers a soil that is rich in calcium and limestone. This varietal is thick skinned and produces wines of deep color, but not necessarily high in alcohol. Naturally, Tempranillo tends to be lower in acidity and more "malic," which means that wines made solely from this varietal will hold back their color but not loose fruit over time. Generally, Tempranillo is blended with small amounts of Garnacha, Mazuelo and/or Graciano to compensate for lack of acidity and longevity. GARNACHA (Red): This varietal is Spanish in origin, influenced by the Mediterranean. It is grown in the Penedès region, where surrounding mountains keep the humid climate locked in. More commonly used for blending, Garnacha has a relatively long growing season, but buds break later in the Spring than Tempranillo. It is low in malic acid, which can cause easy oxidation. However, the wines it produces are high in alcohol, 15 to 16 percent is not unusual. The wines from Garnacha tend to have a more fruity sweet flavor, which makes them perfect for rosÊ wines. GRACIANO (Red): The grape makes a soft, subtle, aromatic wine that is long lived. It is traditionally picked in mid-October. Today there are Graciano grapes in France than in Spain. MAZUELO (Red): Originally from Aragon in Spain, this varietal is one of the most widely planted varietals in the world. Mazuelo buds late in the Spring, making it susceptible to frost. It produces high yields, is thick-skinned, rich in color and high in tannins and acidity.

THE ART OF SPANISH WINES

REMARKABLE TIMELINE:  The history of Rioja Wine began in 11th century BC with the Phoenician settlers.  The French influence took over in the 19th century in Rioja and some of the greatest wines were produced using the long oak ageing method, taken up very enthusiastically by the Riojans.  In 1970 the Regulations for Denominación de Origen were approved and in the early 1990's the esteemed "Calificada" nomination was awarded to the Rioja region which made it the first Denominación de Origen Calificada (DOCa) in Spain. The Bodegas YSIOS (Photo) is one of its kind in the country, if not in the entire world. The sculptor and painter Santiago Calatrava made this avant-garde breathtaking Winery. The facility has a wavelike structure, with its rolling wooden contours that seamlessly integrate into the foothills of the Sierra de Cantabria mountains of Spain. The Name Ysios is a combination of the two Egyptian gods, Isis and Osiris.

There are many unique items on the market for wine enthusiasts. Whether for your own home or as a special gift unusual wine accessories are an eye catcher. From the bottle holder in elegant high heels style to the useful wine rack which looks like a piano, which also holds wine glasses – from modern to classic, there are some must haves, like the “Roots” Decanter, which will surely grab your guests’ attention.

Strelitzia is a genus of five species of perennial plants, native to South Africa. The genus is named after the duchy of MecklenburgStrelitz, birthplace of Queen Charlotte of the United Kingdom. A common name of the genus is bird of paradise flower, because the resemblance of its flowers to the bird of paradise. It is one of the many flowers that grow in the Kempinski Hotel Bahia Gardens.

KEMPINSKI GARDENS

Guests call the Kempinski Bahia a small paradise, maybe because of the lush gardens, where one can always find a perfect place to relax and enjoy

KEMPINSKI GARDENS

One of the great glories of the Kempinski Hotel Bahia is the garden, which won two awards for best garden in the year of the inauguration of the resort. But in case you should conceive of a garden as an outdoor occurrence, the integration of hotel and foliage gives a parklike feeling, where strolling out of one and into the other gives little clue as to the dividing line. In the gardens, the three swimming pools interconnect through cascades and seem almost as if they are part of the landscape.

he region of Málaga is rich in products castañas and wine from Ronda, citrus fruits and vegetables from the coast, olives and avocados from Antequera. Not to forget the fresh fish and the legendary Jamon Serrano, to name just a few. It is rare known fact, that for example Italy is one of the main importers of products from the Málaga region, followed by France, Germany, Switzerland and Portugal, which are big buyers of olive oil. And who knew that Japan is the country that imports the most Andalusia products ?

Kempinski Executive Chef Jordi Bataller (left) and Sous Chef Carlos Reyes in the Kempinski own organic garden.

Mediterranean cuisine is recognized worldwide as healthy cuisine. Statistics prove that people live longer and healthier lives if they treat themselves to Mediterranean food.

Vegetables from the Kempinski Bahía own Garden Eden There comes a time in life when one starts to care about food. For the Kempinski Hotel Bahia Executive Chef Jordi Bataller it started very early. As a food lover par excellence he “plays around with the elements”, as he says. No vegetable is too simple and no fruit is too ordinary for Bataller, to not experiment with it. The tomato is one of the basic ingredients in Mediterranean cuisine. It’s the elementary ingredient for the “Gazpacho”, a cold soup of raw vegetables, originating in the southern region of Andalucia. Gazpacho plays a major role in Andalusian cuisine. It is made of tomatoes, pepper, garlic and olive oil. Gazpacho is especially popular during the summer to cool off.

know that our guests do expect more”, says Bataller. This inspires him to play

around with the elements and make spectacles where there is no spectacle. He explains: „In the kitchen we always respect the elements. But I like to play with them a lot. Take for example the simple Gazpacho: - I remove the juice from the tomatoes, and make an ice cube out of it. - With the rest of the tomato I make a puree. -Take note, that this is still the same element, but we play with different textures. - Now you can celebrate making the Gazpacho in front of the guest, by - placing the ice cube into a cocktail glass, adding the purée, the pepper and the - fresh herbs, which come from El Huerto, our organic garden. Voilá, there you have the fresh Gazpacho, made in front of the guest. Its easy and gives the guest a little “WoW“-effect. This makes it different and a new experience for the guest.“

The world's only Smurf Village is located just an hour's drive from the Kempinski Hotel Bahía. The Andalucian village of Júzcar has an area of 33 square kilometres, a population of 221, 175 houses, a church and a small cemetery. Last spring, every building in the village was painted in a dazzling Smurf blue, with 4,000 litres of paint. Sony Pictures came up with the idea to promote the premiere of the movie Smurfs 3D in summer, which turned out to be the hit for Júzcar. According to the agreement between Sony Pictures and the mayor of Júzcar, David Tirado Fernandez, the village was due to be re-painted white again late last year. But the citizens of Júzcar voted against this on December 18. The Smurf Village was such a huge success for everybody. Usually, the village is visited by about

300 tourists each year. Last year, after the blue paint job, Júzcar registered more than 80,000 visitors. The village is permanently holding Smurf Fairs, and hosting events like a Smurf Moonlight Fun Run and a Smurf Painting Competition to make sure the fans keep coming. The "MercaPitufo“ (or Smurf Market ) offers sweets, Smurf gifts, Spanish products like cheese and ham, cosmetics and handicrafts. Children can get a Smurf Make-up for just €1.50, and photographs with the Smurf characters are free. On weekends and holidays, the town offers special Smurf Excursions for children aged 4 to 10 throughout the village, full of games, workshops, gifts and surprises.
