For Marbella the summer was crowned by a king sized event: The wedding of the granddaughter of Prince Salman, the Governor of Riyadh. Some 1500 guests filled the luxury hotels in the Marbella Area, including the Kempinski Bahia, to celebrate the wedding of Sara Fahd Bin Salman with Talal Bin Abdulaziz Bandar for several days. La Feria?
Everywhere! But there are few special Spanish ferias, which have achieved fame in the outside world:
Pamplona in the north, where the bulls are let loose to run through the streets, the feria d'Abril of Seville and the feria of the horses in Jerez
de la Frontera, in the south. The feria of Pamplona is fun but touristy, meantimes the ones in Seville and JerĂŠz have less appeal for party crashers as the casetas often only welcome guests with invitations.

Couples parade on their thoroughbred Andalusian horses, high above the crowds of ordinary people. There is no dress code for the people on foot, but the horsemen's clothing is carefully checked at the gates to ensure that it is correct. Some people rent a horse and a costume especially for the Feria.
The Feria De Caballos is all about horses. That is what distinguishes the event from other Ferias and why it receives such international public interest. Andalusian and Carthusian horses have been bred here for centuries and are valued more than luxury cars. They even cost as much.
Andalusian Ferias The casetas at the Feria de Caballos in Jerez de la Frontera are exclusive and often only accessible by invitation, but in hundreds of Spanish cities the casetas are open to the public and ferias in smaller places are often worth visiting.
At the Feria de Caballos, 1.2 million light bulbs in different colors shine for the seven nights of the feria. This is known as "the cathedral of light".
JerĂŠz de la Frontera is the home town of sherry producers Domecq, Gonzalez Byass and Sandeman. It is especially the fino, a bone dry white wine, which is popular with the locals, or the more salty variety from Sanlucar which is called Manzanilla. The bottles are kept in the freezer because this sherry should be very cold when you drink it .
Culture is omni present in traditional Andalusia, it is the glue of the society. Young children learn how to dance Sevillana's, sing Flamenco or ride a horse at a very early age.
Andalusian Ferias Swaying skirts, graceful arm movements and stamping feet - you may jump to the conclusion that they are the same - but Sevillanas is not Flamenco. It is a folk dance with its own strict choreography, where men and woman spin around each other another displaying a mixture of pride and passion.

The Feria is not for the fainthearted. This giant party has much in common with the Spaniards themselves: down-to-earth, traditional and boisterous.
Mid-may, two in the afternoon. The party zone of the Andalusian city Jerez de la Frontera is starting to come alive. For feria novices, this is the best time. The volume of the music is still at an acceptable level for all and the terraces of the cafés are not too crowded. A group of women sing stirring flamenco songs for anyone who wishes to listen. The many striking young girls are dressed up to the nines in their best ball gowns, trying to attract the attention of the noblemen parading past them on horseback. The high point of the feria in Jerez, which used to be horse fair, is the parade of los señoritos, the gentlemen of the city. During the last weekend of the celebrations, the men
of the old sherry families and other noblemen parade around the party zone for hours on their Carthusian horses, which are bred here in the region. The horses are valued more than luxury cars. They even cost as much. The gentlemen are duty-bound to wear a traditional three-piece riders suit with a cap, and police are posted at the entrance to allow only those riders who are correctly dressed to enter.. The old days of the goods trading are gone and has made way for drinking and dancing – but one thing that hasn’t changed is the flirting, which continues unabated. In fact, it was at the Feria d’Abril in Seville where Holland’s Prince Willem-Alexander fell in love with his wife, princess Máxima.

A few words of Spanish is enough: everyone is in a great mood and no one expects a profound discussion on world politics. Hanging out and having fun together is an art, and one which the Spanish have perfected. In contrast to the lively atmosphere at the end of the afternoon, as the evening gets underway it suddenly becomes very quiet. The crowd is either at home enjoying a quick siesta, or off watching a bullfight – an essential part of any feria. According to the Spanish poet Federico García Lorca, Spain is ‘the only country where the celebration of death is a national pastime.’ Around 10pm people came back revitalized. The sounds of upbeat sevillanas, South American
beats, hardcore flamenco and Spanish disco hits spill out of the casetas and mingle as they reach the streets. Despite the cacophony, the revellers persist in conversation. Talking is the Spaniards’ favourite hobby, and since the noisiest people in Europe do it best at full volume, they are in their element tonight. In a large tent where hundreds of couples dancing. The women sway to and fro in their gypsy dresses, throw their arms in the air and spin elegantly around the men. These enticing folk dances are sevillanas, they closely resamble flamenco and, in southern Spain, are danced mainly as an expression of joy. They are danced anytime, anywhere - at parties, but also after winning a football match.
The flamenco fashion changes every year. This year the dresses have long sleeves, ruffles under the buttocks, prominent stitching and low backs.
Although flamenco or gypsy dresses all look the same to the untrained eye, styles quickly come into and go out of fashion. One year it is long sleeves and small polka dots, the next year it is large dots, with lots of frills and flounces. Those with enough money have a new dress designed every year.

In earlier years, it was the wandering gypsies who really brought the festival to life. They traded cattle, made music and sold flowers.
The visitors watch the spectacle, they point out the local celebrities and gossip about the beautiful women. After the show, which lasts for a couple of hours, the more prominent members of society head back to their own casetas. People enjoy a carnivorous feast of jamón iberico (the best smoked ham on the planet), menudo (a stew with tripe), pork chop sandwiches, meatballs in sauce and fried green peppers. Hardly refined, but definitely tasty! Here, everyone drinks sherry, sips a glass of rebujito - fino mixed with 7Up. This Andalusian-style alcopop is a popular feria drink, because you get
happy fast and drunk slowly. At the feria the atmosphere never gets unpleasant, even though there are sometimes hundreds of thousands of people around. The police have very little to do here.

rancisco Gonzalez has been with the Kempinski Hotel BahĂa for nearly a decade. Recently, he was named sommelier and is now master of over 10,000 bottles of champagne, cava and wine.
Wine is a passion for Gonzalez, and he thinks that as a sommelier he can bring a different element to the dining experience. Where wine suggestions are concerned, a sommelier inspires confidence in the guest. One of a sommelier's most important abilities is to pair food and wine. This allows guests to try something new, rather than always choosing the same bottle. Sommelier Gonzalez gives guests the opportunity to match their flavor profile with the food, and entice them into trying something a bit more adventurous, which could well become their new favourite. Sr. Gonzalez: "Don't choose your wine based on price alone. The most expensive wine in the house may actually not be the best choice for your particular meal. Trust your sommelier to chose the right wine for you".
Why did he become a Sommelier? "My transition to becoming a sommelier was not that easy. For me it was necessary, I had to respond to the passion that drove me. I felt that I needed to go back to school and get a certification, in wine that is.
Sharing good food and wine is part of a good lifestyle. That is, after all, the point. Wine is no good when you're alone, at least not for long. It is best when shared in company, with friends. The certificate I have says that I passed the sommelier class. For me it says that I am privileged to share my knowledge about wine with others. That is why I became a sommelier."
INTERVIEW WITH THE SOMMELIER
Here on the Costa del Sol we are blessed with some great regional wines. Which wine would you recommend to accompany a typical mediterranean fish plate, and which one would you recommend for beef, for example our Angus steak?
Francisco Gonzalez:
I like this question very much, because I am a great lover of our rich regional products and I always try to promote them to our guests. But still, on the other side it’s a tricky question for me, because we have so many good elaborated Andalusian wines
and a wide variety indeed.
We have a very traditional dish: Fried Fish from Malága, accompanied by a typical Salad of roasted peppers. For this dish I recommend either Manzanilla from Sanlucar or Vino fino – something that everyone visiting Andalucia should try. There is also the Baron Rivero from Axarquia, which contains Moscatel grapes, Chardonnay and Doradilla (grape from Malága), which is a perfect match for the Mediterranean fish from the grill. For our Angus Filet we have the Lagarejo Crianza 2006 from Ronda on our winelist, which has a great personality. This wine has a good body, which in the beginning might have too much barrique. But after breathing, the wine surprises everyone! Here I don‘t want to forget to mention the great wines from Ronda, the Vetas Petit Verdot from 2005 or the Descalzos Viejos 2006 – perfect examples of the art of wine making in the mountains of Malága.

Is it always better to decant red wine, even if it is a younger one?
Gonzalez :
It is not necessary to decant a young wine or one with little aging in the barrel. Decanting is basically done for two reasons : First, to let the wine, which had at least 12 months in the barrel, breathe. And secondly to separate the sediment, which was formed during aging in the barrel. Personally I prefer to open the wine aproximatly 15 minutes before serving, and let it breathe in the glass. This way you can perfectly follow the evolution of the wine.
What is the best temperature to serve wine?
Gonzalez :
Outside temperatures and the season influence the serving temperatures – we feel different in summer than in winter. Red wine should be served between 17° and 18°, because once the wine is in the glass the temperature will increase at least 2° more, so the drinking temperature lies between 20° and 21°. White and rosé wines should be served at around 10°, so we get to aproximately 12° in the mouth. Don‘t forget that for every wine, cold as well as heat, are enemies.
