the year 2011 was very special for all of us at the Kempinski Bahia. At the beginning, we received an award given by the Kempinski Group, which determines the satisfaction of the employees. The Kempinski Bahia received the highest ranking! Soon afterwards the Kempinski's Executive Chef, Jordi Batallier, who has been with the Hotel for many years, was honoured by the oldest gastronomic academy in Spain, the "Academia Gastronomica de Malaga". He received the José Meliá Sinisterra Prize for the "Best Hotel on the Costa del Sol". This prize recognizes the quality and ability to provide guests with a healthy and delicious cuisine. The Nominations for the Condé Nast Traveler Gold List 2011 and for the World Travel Awards as Spain's Best Resort Hotel followed before the summer arrived. Marbella and the Kempinski Hotel Bahia was crowded with 800 members of the Saudi Arabian Royal Family. Marbella was - once again - the showplace for the wedding of the Saudi Princess Sarah, granddaughter of King Salman bin Abdul Aziz. She invited around 400 princesses to her wedding. Marbella hasn't seen so much royalty since the 1960's.
Talking about weddings: The Kempinski Bahia was the location for countless weddings, birthday parties, baptisms and other family celebrations. On the following pages we peek over the shoulder of a professional photographer, as he captures Juanmi and Isabel's big day. You can see on their lucky faces that this marriage will surely last. The 200th anniversary of Perrier Jouët, which is the House Champagne of the Kempinski Bahia, was celebrated this year. Happy Birthday! Boland himself is live on Air in „The Boland Show“ Monday to Friday at 10am, interviewing some of the biggest names in politics, sports and showbusiness - including Quincy Jones, Paddy Ashdown, Ian Hislop and Ronnie Corbett. Maurice is a tireless charity worker chairing his own ‘Raise The Roof Foundation’ Raising Millions of Euros for the Cancer Care Hospice ‘Cudeca’. The first Christmas Culinary Market to benefit local Charity Organisations was very succesful. The idea was supported by many people and our sister hotels: The German Kempinski Taschenbergpalais sent us the original Dresdner Stollen, the Kempinski Hotel Vier Jahreszeiten Munich sent us Maximilian, the little Lion, and the Kempinski Bruges delivered fine chocolate from Belgium.

„They are very different!” – that is what you hear, if you ask experts. And they do also explain why: “The climate and the soil make them so. Cava is not as acidic because in Spain they have plenty of sunshine, but on the other hand, the acidity can be nice; it makes the wine fresher and allows it to stay longer in the bottle.” Cava is made exactly the same way as Champagne. But still, Cava is not as expensive as Champagne.

he question of what is better (Champagne or Cava), does not only exist since Cava was made. The same question is raised for a lot of other products, such as for wine (Rioja or Bordeaux?), cars (Porsche or Ferrari?), cigars (Davidoff or Cohiba?), DSLR cameras (Canon or Nikon?), etc., etc., and can not be answered to all satisfaction. Because they are all different, beside the basic facts that a car is a car with 4 wheels and a motor, a cigar is made out of leafs, a DSLR camera is using the mirror technique, etc.etc.
Simple said: Don´t ask if Champagne is better or not than Cava, instead admit that they are of course different sparkling wines, and both have their fans, their occasions, their community. So, what is the difference between Cava and Champagne?
Champagne is a sparkling wine – but not every sparkling wine is a Champagne. This is the fact, since the French authorities defended the brand and the use of the term „Champagne“ as a protected designation of origin in the European Union. Before Spain became in 1986 a member of the EU, at least the use of the term méthode champenoise was still allowed for the producers of „champagne style“ sparkling wine. After repeated protests of the
roundabout 300 Champagne producers from the Champagne region, the French Authorities were forced to forbid the use of the word champagne in any description and so opted all the other producers of sparkling wine in France and in the EU to use instead „méthode traditionelle“ to signify that their wine is made using the same production methods as Champagne. In France the sparkling wine from any other region is called Crémant (Burgund, Bordeaux, de Loire, Jura, etc.). Talking about production: Cava is Spain’s sparkling wine – the Spanish version of Champagne, created by the Catalunyan Josep Raventós in 1872. He returned from France, where he has been 1860 and learned how to produce a sparkling wine, using the French techniques. That’s why Cava is made exactly the same way as Champagne. But, Champagne is made only in one region in France, Cava on the other side may be produced in eight wine regions in Spain. Talking about taste: Some prefer the freshness and vitality of young Champagne and Cava, others prefer the baked apple and caramel flavors that develop from a year or more of bottle

Spaniards like to spend time with family and friends, and to eat slowly – Cava is not as alcoholic as red or white wine, so it’s perfect

aging. In 2009, a 184-year-old bottle of Champagne PerrierJouët was opened and tasted from Experts: still drinkable, with notes of "truffles and caramel“… Talking about prices: Cava is with around 15 Euro/bottle for a broader community affordable. Expensive Cava cost around 60+ Euros (Gran Reserva). Champagne prices are from around 40 Euro/bottle and can reach that price 100 times more with no limit to the sky. The factor, that Champagne is only produced in one small region in France is of course relevant for price strategy and makes Champagne since ever exclusive, special and luxury. So, at the end the question is answered in terms of admitting that both sparkling wines do indeed have their differences beside the fact, that they are produced the same way. Different grapes, which are growing in different soil and in different climate zones, bring different taste into the sparkling wine.
Some more facts: • Benedictine monk Dom Pérignon (1638-1715) invented champagne • Champagne is made out of only 3 grapes: Pinot Noir, Pinot Meuniere, Chardonnay • Cava is made mainly of 3 grapes: Macabeo, Parellada, Xarel-lo (all native spanish), although other grapes, such as the native grape Samsó, as well as Chardonnay, Pinot Noir and Subirat are used • Champagne bottle ages a minimum of 15 months (Vintage 36 months) • Both, Champagne and Cava, are produced in varying levels of dryness: brut nature, brut, extra brut, sec, demi-sec and dolsec Talking about sparkling wines in a group of friends you could end up chatting the whole night with lots of arguments and opinions – my advise: better you just open a bottle of either Cava or Champagne – enjoy and have fun!

Did you know...? ҉ Since 2010 the declared Global Day of Champagne is October 28 ҉ That Austria has a “Day of Sekt” on the October 22 ҉ That Prosecco is similar to Champagne, a protected grape and designation in Northern Italy ҉ That Asti is a natural sparkling wine, made of only one fermentation, from only one grape – the moscatel – from only one region in the Piedmont: Asti and Langhe in Italy ҉ That Germany did implement the TAX for the sparkling wine, called Sekt, in 1902 to finance the troops of Kaiser Wilhelm II for the war?
҉ That in the USA its legal to call sparkling wine „champagne“ – that is the reason why France implemented an “Office of Champagne”, solely with the purpose to educate US customers about the uniqueness of the wines of Champagne and why there is a need to protect the Champagne name ҉ The smaller the bubbles in sparkling wine, the better the booze, because smaller bubbles mean more total bubbles, which help release the wines flavour in the mouth ҉ Sparkling wine can be produced with 3 methods: a) Methode traditional (the typical champagne method) b) Bottle fermentation (transfer method) c) Charmat process (tank fermentation) ҉ That $275.000 has been paid per bottle (!) of a shipwrecked Heidsieck from 1907

anniversary
The Champagne House PerrierJouët celebrate its bicentenary with the unveiling of BiCentenaire — the very first Living Legacy champagne designed to be passed on to future generations. An exclusive guest list gathered for the unveiling of a new kind of Champagne experience by the house renowned globally for its Belle Époque Cuvée. Guests were also treated to the unveiling of a new work of art commissioned from American artist Daniel Arsham, designed to embody the spirit of Bi-Centenaire—A true invitation to celebrate life. Perrier-Jouët Bi-Centenaire tells the unexpected tale of a great vintage wine with two stories. The first takes place today: A champagne-lover treats himself to a magnum of Perrier-Jouët Belle Epoque 1998. Many years later, a descendant in turn enjoys a magnum of Belle Epoque 1998, passed down through the generations, preciously stored in a private cellar in Perrier-Jouët for up to 100 years. To achieve this elegant defiance of time, the vintage has been carefully chosen for its exceptional ageing capacity by current Cellar Master Hervé Deschamps, the only seventh cellar master in the house’s 200 year-history.

La Maison Belle Epoque a haven of luxury...
Since the Cuvée Belle Epoque Perrier-Jouët can be considered a work of art, signed by one of the masters of Art Nouveau, the Maison decided to create an exceptional environment for this Cuvée dedicating the historic home of the family Perrier. Currently in the Maison Belle Epoque are about 200 works (tables, chairs, dishes, beds, cabinets, lamps, etc.) of the most important masters of Art Nouveau: Majorelle, Rodin, Daum, Lalique, and Gallé, a master glassmaker of the legendary Nancy school, which in 1902 created the anemones, who decorate each bottle of the cuvées Perrier-Jouët Belle Epoque. Far from wanting to make a museum, it was to create a house full of life and that its walls housed all guests of Maison Perrier-Jouët, returning to each of these objects of art its main function. In this privileged environment, friends of the Maison share moments full of poetry and fantasy between these curves and arebesques female flowers. The house, set up in an intimate garden, offers exclusive pleasures: an amazing story worth telling, extravagant decor worth seeing, touching art objects, unique flowery aromas to discover. Here all the senses are in suspense beautifully…

Just 200 guests from 10 countries attended the private launch, set in the stunning glass courtyard of the iconic Ecole des Beaux Arts in Paris, symbolizing Perrier-Jouët’s passionate family spirit for passing on artisanal and artistic craftsmanship. Guests enjoyed a unique exhibition of photographic portraits by legendary Studio Harcourt, showcasing iconic examples of family legacy including French Movie Stars Alain Delon and daughter Anouchka, Catherine Deneuve and son Christian Vadim, American model and actress Jerry Hall and daughter Georgia May Jagger, French
artists Jean-Charles de Castelbajac and son Louis-Marie, the world’s oldest Circus dynasty Patriarch Sampion Bouglione and son Francesco, France’s oldest Jeweller Olivier Mellerio and daughter Emilie and Italian legendary wine maker Marquis Antinori and daughter Alegra. A sumptuous champagne-paired celebratory dinner followed, orchestrated by notorious French Chef Jean-Louis Nomicos, who reinterpreted superbly the 1911 Perrier-Jouët Centenary menu paired with Perrier-Jouët Belle Epoque Cuvées, including the exceptional Cuvée Belle Epoque 1998 in magnum.
The elegant and romantic champagne Perrier-Jouët was chosen for the fairytale Royal wedding celebrations at the marriage of HSH Prince Albert II of Monaco and Miss Charlene Wittstock, with its personalised Perrier-Jouët’s iconic prestige cuvee Belle Epoque 2002 served in magnums at the official wedding dinner. The 500 distinguished guests, including European royalty, Heads of State and other notable personalities, enjoyed the remarkable Perrier-Jouët Belle Epoque 2002 vintage which rounded off the dinner by Michelin starred Chef Alain Ducasse. The House of Champagne Perrier-Jouët was itself born of a marriage between its founders Pierre Nicolas Perrier and Adèle Jouët 200 years ago in 1811. Hervé Deschamps described the wedding as the “ultimate expression of elegance and refinement of Perrier-Jouët distinctive signature style”.
1811-2011 The living Legacy Daniel Arsham’s unique diptych sculpture, revealing glimpses of the bottles through an original and distinctive architecture, is designed to express the philosophy of this champagne. Daniel Arsham: "It was this spirit of Perrier-Jouët continuity that I wanted to illustrate by creating a diptych that combined both the essence of PerrierJouët and my universe. My initial inspiration came from Perrier-Jouët’s vines and its cellars, the detail of Emile Gallé’s anemone flower.“ Perrier-Jouët Bi-Centenaire is available in very limited quantities (100 pieces only) at the Champagne House’s Boutique in Epernay and by appointment only including a privileged hospitality experience. It is also available through the exclusive Pernod Ricard network for an average RSP of 10 000 euros. The 200 year-celebration shows clearly, that exceptional skill in wine-making is truly worthy of bequeathing as a legacy to the next generation who embody the same art de vivre.
