TIPPLING CLUB Tippling Club has its origins at fancy
dining destination Dempsey Hill. But it moved into its current location at Tanjong Pagar towards the end of 2013. It now spans across three shophouse units, and features a bar and dining room downstairs, and a private dining and event space with a R&D kitchen at the second floor called Bin 38. While the upstairs evokes a luxurious and elegant feel with plush seating and glossy surfaces, eclecticism reigns in the world below. Faded Peranakan floor tiles in the bar area are set against concrete walls and a timber feature wall is done up with a shou-sugi-ban treatment – a Japanese technique that involves charring wood for a weathered look. A display created from hanging near-empty bottles of
spirit and wines takes centre stage at the bar, while tables made from recycled timber and old metal pipes take up the rest of the floor space. The 34-seat dining room is built around an open kitchen, where the main action is. You can choose to face the chefs as you dine, whose white uniforms provide an appealing contrast against the green subway tiles of the cooking space. Alternatively, you can opt for a table at the wine room where huge amber lights that look like beehives loom overhead. The fundamentally modern European menu changes every three to five months, as Chef-Owner Ryan Clift wishes to keep things new and fresh. But one

particular dish he’s kept on the menu for several years is the Razor Clams (part of the Gourmand tasting menu, $265) – a firm favourite with the customers. There’s a lot going for it: milk-braised parsley root, parsley chlorophyll, parsley chip, tarragon flower, cat’s whiskers, golden purslane and a cream of Brittany purple garlic. But the leading stars are the freshest wild Scottish razor clams you’ll ever taste.
