The Egg!

The tradition of dyeing eggs in the spring actually predates Christianity, although it is very heavily associated with the Christian holiday of Easter. Lots of families get together and dye beautiful hard boiled, yummy eggs! Ancient Egyptians, Persians, Phoenicians and Hindus all adapted the egg as a symbol of new life and rebirth in the spring. More than 2,500 years ago, Zoroastrians decorated eggs for their New Year celebration, called Nowrooz. During the Passover Seder, Jewish tradition holds that hard boiled eggs, called Beitzah, are dipped in salt water and eaten. A common game at Greek Easter is to crack eggs against each other and the person whose egg lasts the longest (by not cracking) is the winner and is assured good luck over the coming year. Ukrainian eggs are famous all over the world. The eggs called Pyysanka are brilliantly decorated and dyed from dried plants, roots, bark and berries. From Poland, Drapanka eggs are dyed shades of brown using onion skins and etched to create designs. However you choose to decorate, they are a universal symbol of new life. Republic of India • India is located in Southern Asia between Burma and Pakistan. It is a little more than one-third the size of the United States. That’s still the seventh largest country in the world at 1,269,345 sq. mi. • The capital of India is New Delhi. The largest city is Mumbai. Other major cities include Kolkata, Chenni and Bangalore. • The highest mountain in India is Kanchenjunga, standing at 28,209 feet, which it shares with Nepal. Kanchenjunga is the third highest mountain in the world. • The population of India is over 1.2 billion people! That’s also the second highest population in the world. • The currency of India is the Rupee. • The government of India is a Federal Republic. It is the largest democracy in the world! • India’s weather varies. Northern areas have winter snow, while elsewhere it is generally hot. The rainy season begins in June and lasts four to seven months, depending on the location. Periods of heavy rain there are called monsoon. • India belongs to the continent of Asia. Neighboring countries are Bangladesh, Bhutan, Burma, China, Nepal, and Pakistan. • India was under British rule until 1947. Mahatma Gandhi is famous for the important part he played in gaining India's independence. • India was the home of an ancient civilization called the Indus Valley Civilization. This civilization was the first urban civilization in southeast Asia! • The most popular sport in India is cricket, with the Indian team being the first to win the Cricket World Cup on home soil when they won in 2011. • India is famous for chutneys—fresh or cooked relishes—that are used at almost every meal. Nuts, chilies, fruits, herbs and spices are common chutney ingredients. • The national symbol of India is the endangered Bengal Tiger. • India is well known for it’s dance and musical culture. Media is very popular, including films and television. • The most popular religion is Hinduism. India has the largest Hindu

population in the world. • The Taj Mahal (a famous mausoleum and popular tourist attraction) is located in the region of Agra. It took 22,000 workmen and 22 years to complete. • The mainland comprises of four regions, namely the great mountain zone, plains of the Ganga and the Indus, the desert region, and the southern peninsula. • Cows can be found freely wandering the streets of India’s cities. They are considered sacred and will often wear a tilak, a Hindu symbol of good fortune. Cows are considered one of humankind’s seven mothers because they offer milk as does one’s natural mother. • India is the world’s largest producer of dried beans, such as kidney beans and chickpeas. It also Taj Mahal leads the world in banana exports with Brazil as second. • The lotus is sacred to both Hindus and Buddhists. The Bahá'í house of worship in Delhi, known as the “Lotus Temple,” is shaped like a lotus flower with 27 gigantic “petals” that are covered in marble. • Indians made significant contributions to calculus, trigonometry, and algebra. The decimal system was invented in India in 100 B.C. The concept of zero as a number is also attributed to India. • The national fruit of India is the mango. The national bird is the peacock, which was initially bred for food. • India is the world’s largest tea producer, and tea (chai) is its most popular beverage.

The Cat in the Hat came to read to us and the students had fun dressing up as some of the characters from Dr. Seuss’s books. We also enjoyed having the Jr. High students come to read to the elementary classes as well as challenging each student to read on their own. 1 pound lean ground beef 2 (8 ounce) cans tomato sauce 1 (1.25 ounce) envelope taco seasoning mix 1 (8 ounce) can refrigerator crescent rolls 1/2 pound cheese, shredded 1 cup shredded lettuce 1/2 cup chopped tomato 1/4 cup sliced black olives Dairy sour cream (optional) Preheat the oven to 375 degrees. Brown the meat on the stovetop in a large skillet on medium heat and drain. Add the tomato sauce and seasoning mix. Simmer 5 minutes, stirring occasionally. Press the crescent roll dough onto bottom and sides of ungreased 12inch pizza pan to form crust. Prick the bottom and sides with a fork. Bake 10 minutes or until golden brown. Spread the meat mixture over the crust. Sprinkle cheese over meat mixture. Continue baking until the cheese melts. Top with lettuce, tomato, and olives. Serve with sour cream if desired.

Creamsicle Cheesecake 1 graham cracker pie crust 16 ounces cream cheese, softened 1 (6 ounce) can frozen orange juice 1 can sweetened condensed milk 10 ounces Cool Whip Mix the cream cheese, sweetened condensed milk and orange juice with a mixer. Fold in the Cool Whip. Pour into the crust and chill 1 hour.

Macaroon Egg Nests 1 1/4 cups all-purpose flour 2 teaspoons baking powder 1/4 teaspoon salt 3/4 cup granulated sugar 1/3 cup butter, softened 4 ounces cream cheese, softened 1 large egg yolk 1 tablespoon vanilla extract 1 tablespoon orange juice 1 medium orange peel, grated 5 cups sweetened flaked coconut 25 to 30 chocolate eggs, unwrapped Combine the flour, baking powder and salt in medium bowl. In another medium bowl beat the sugar, butter and cream cheese until creamy. Add egg yolk, vanilla extract, orange juice and grated orange peel, then beat well. Add the flour mixture to it and beat until well combined. Stir in 4 cups coconut. Cover; refrigerate for 30 minutes or until firm enough to handle. Preheat the oven to 350 degrees. Shape the dough into 1 1/2-inch balls. Roll balls in remaining coconut. Place on ungreased baking sheets. Bake for 12 to 15 minutes or until lightly browned. Remove from oven and immediately press one chocolate egg on top of each macaroon. Cool for 1 minute; remove to wire racks to cool completely.

Do You Have Food Allergies? Lots of kids have food allergies! Some are allergic to seafood, milk, eggs, wheat, soy, peanuts - just to name a few. So, they have to watch what they eat at all times. No cheating either! Everyone has an immune system. That is what protects you from germs and diseases. Your immune system makes antibodies that help you fight off bacteria, viruses and other organisms that can make you sick. If you have a food allergy, it means your immune system mistakenly treats something in a food as if it’s dangerous to you! Your immune system releases “mast” cells to release chemicals in your bloodstream. One of these chemicals is called histamine. Histamine causes symptoms that affect your throat, respiratory system, skin, digestive system, eyes and nose. A food allergy can either react right away or wait a few hours. Some of the signs are tightness in the throat, hoarseness, wheezing, nausea, stomach pain, diarrhea, vomiting, hives, tingling in the tongue or lips, rach or runny nose. In the worst of cases, the tongue could swell, blood pressure can drop, breathing tubes can narrow, it affects the heart, the blood vessels and more. Children at risk for this kind of reaction have to be very careful. If you think you may have an allergy to a certain food, talk to your parents. They will take you to the doctor to get it checked out. There are special doctors that are called allergists whom your family doctor may send you to. The allergy specialist will ask you questions about your problem and also ask about anyone else in your family who may have allergies, eczema or asthma. The allergist may also want to do a skin test to see how your body reacts to a very small amount of the food that is troubling you. The doctor will use a liquid extract of the food. They also may want to test you for other common allergy-causing foods to see if you react to them. Do NOT try this at home. It’s best

to do this at the doctor’s office because they have medicines to use if you have a reaction to the tests. Some allergists will take a blood sample (a RAST test) and send it to the lab mixed with some of the food you may be allergic to. There is no special medicine you can take for a food allergy. Some allergies can be outgrown and others you can have the rest of your life. The best way to deal with it is to AVOID eating what bothers you and READ the package labels to make sure the food is not part of the ingredients. Plus ALWAYS HAVE AN EMERGENCY PLAN with your doctor and parents if you have an accident.
