COVID-19:
WHAT WE KNOW. WHAT WE DON’T (YET) KNOW. WHAT WE CAN DO TO PROTECT EACH OTHER. BY STEPHEN P. ELLIOTT, M.D., LIVING WITH INTENTION, INC.
It first appeared half a world away, in east central China, in a city called Wuhan, a city most of us had never heard of before. The first reported case appeared in late December, barely 6 months ago. From there it spread. Rapidly. Like wildfire. The first true pandemic in a century. The cause? A tiny little virus, mysterious and deadly, that had never before been seen on this planet. Based on the initial reported symptoms, the virus was quickly given an appropriate name: SARS-CoV-2, for Severe Acute Respiratory Syndrome Coronavirus-2. And, as we all now well know, the disease it causes was also given a name: COVID-19 (CO for corona, VI for virus, D for Disease, 19 for 2019). COVID-19 has, very literally, changed our lives. And it has done so almost overnight, and in ways we never could have imagined a few short months ago. But before I go any further let me say this: I am not an expert in infectious disease, virology, or the history of pandemics. There are a lot of very smart people — physicians, researchers, and academics — directly involved in the day to day battle against COVID-19 and/or deeply involved in COVID-19 research, who have a much keener and deeper understanding of the rapidly growing tomes of information we’re learning about this novel virus. What I’m offering here are some highlights that I hope you’ll find helpful.
FIRST: WHAT DO WE KNOW NOW THAT WE DIDN’T KNOW, OR DIDN’T KNOW AS WELL, A FEW MONTHS AGO? For starters, the manifestations of this virus are far more unpredictable and varied than we first suspected. At first glance, COVID-19 appeared to cause respiratory problems. In larger urban areas like New York, emergency departments were swamped by folks with rapidly progressive shortness of breath, and hospital ICUs were clamoring for respirators to meet the demand. Now we know that COVID-19 is far more than just a respiratory bug. It can trigger blood clots and strokes. It can cause kidney failure. It can even directly damage myocardial cells (the cells that make up the muscles of the heart). In others, COVID-19 appears to cause nothing bad at all. Many people breeze through their encounter with COVID-19 without even knowing they have it, completely asymptomatic. Why the difference? Why is COVID-19 fatal for some and relatively harmless for others? That’s not entirely clear; not yet, at least. That said, we’ve learned more than a little about the “how,” the specific mechanism that gets triggered that makes COVID-19 deadly
dangerous. And that “how” appears to involve inflammation. When COVID-19 kills, it does so by triggering the immune system to produce a severe inflammatory response, causing a major overproduction of dangerous chemical messengers called cytokines. If that inflammatory response involves the lungs, the end result is respiratory failure. If that inflammation primarily involves the kidneys, the kidneys shut down. If that inflammatory response attacks the myocardial cells, we see heart problems. CHILDREN: In the early days, it appeared as though children weren’t really being affected by COVID-19, or, if they were, their symptoms were transient and relatively minimal, like many adults. Now, we know more and we know better. In some children, we’re seeing that same overwhelming and deadly inflammatory response evident in some adults. In fact, we’re seeing it with such increased frequency that we now have a name for it: Pediatric Severe Inflammatory Response Syndrome. The bottom line: Kids, too, are affected by COVID-19. ADOLESCENTS AND YOUNG ADULTS, too, are being affected and dying. Where initially it was the elderly that were being hit the hardest, now we’re seeing more and more younger adults and even adolescents hospitalized, and being placed on ICU ventilators, and dying. No one is immune. When it first appeared, many were comparing COVID-19 to the flu. And, while there are similarities, one huge difference has clearly emerged. While influenza has historically demonstrated a mortality rate of about 0.1 % (1 person dying for every 1,000 cases of the flu), COVID-19 is far more deadly, with a US mortality rater somewhere in the range of 4-6% (4-6 people dying for every 100 cases of COVID-19). Far more deadly, indeed!

AND FACE MASKS: Three months ago, we didn’t know whether or not these simple measures would help slow the spread of COVID-19. Now we absolutely know they do. Period. End of discussion.
NEXT: WHAT DO WE NOT (YET) KNOW? Lots. Tons. We really don’t know much at all. Our understanding of SARS-CoV-2 and COVID-19 is still in it’s infancy. Does that make this a silly question? I don’t think so. I believe it’s an important question because it helps us identify and spell out what it is that we really need to understand, those particular pieces of information that would help us know how to move forward better, more wisely, more knowledgeably. HERE’S A FEW OF THE MOST IMPORTANT “WHAT WE DON’T KNOW” ITEMS THAT WE DESPERATELY NEED TO KNOW: » We don’t know if someone who contracts COVID-19 from one person, either symptomatically or not, can get reinfected some time later by someone else. » We don’t know whether or not COVID-19, like a number of other viruses, has the potential to cause long-term health problems months or even years following recovery from the initial exposure/ infection. » We don’t know whether or not COVID-19, once suppressed following initial infection, can reactivate (like, for example, Chicken Pox in childhood reactivating as Shingles many years later). » We don’t know to what degree COVID-19 specific antibodies provide protection against re-exposure or possible reactivation. Is there a threshold antibody level that offers protection? We don’t know, not yet, at least. » We don’t know how to treat the virus. And, when we do find an effective treatment, we won’t know for a long time if there are long-term side effects or potential downsides to that treatment. » We don’t know whether or not we can come up with a safe and effective vaccine for the virus. Historically, our track record is mixed.
FINALLY: WHERE DO WE GO FROM HERE? Start by recognizing that we’re all in this for the long haul. COVID-19 is not going away anytime soon. Pandemics, I’ve learned, historically come in waves, and we should probably anticipate the same of this one. Next, make peace with social distancing and face masks: A few months ago, we didn’t know whether or not these simple measures would help slow the spread of COVID-19. Now, thanks to a growing number of studies, we know better. These measures do help. Period. End of discussion. So, when in public, be smart. Wear a mask. Not just to protect yourself, but those around you as well. Because viral particles can remain active on hard surfaces for several hours, clean those surfaces frequently. And you don’t have to use anything fancy, either. While alcohol and bleach are great, soap and water are very effective, too.

DO WHAT YOU CAN TO BOOST YOUR IMMUNE SYSTEM: » Get at least 7 hours of sleep, as the immune system rejuvenates and restores itself in deep sleep. » Eat a healthy, low-carb, “REAL FOOD” diet. Processed foods and foods higher in carbohydrates are inflammatory. » Supplements can help, too. Zinc, for example, has long been known to be very important in supporting immune function. While I constantly hear two very different voices and viewpoints coming from the media today, the same is not true of the medical community. There we see almost universal agreement. The vast majority of physicians and health care experts agree on how best to proceed. Cautiously. Socially distanced. With protection. Stephen P. At the time of this writing, the state of Indiana is beginning to emerge from quarantine. Each of us will rejoin the world outside of our homes at our own pace. My first step may be to blow dry and curl my hair, put on some makeup and a pair of jeans (or at least something dressier than sweatpants) and go somewhere. That somewhere may be a walk with a friend at a social distance. It might be a picnic with my husband. Or, if all goes well, it could be the wedding of a couple I care about. Isolation has given all of us time to reflect on what matters most. Cooking, gardening and our homes are more in focus than ever before. We’ve been spending time with our families and communicating with colleagues, family members and friends in new ways. We’ve all had to prioritize what’s really important and what we’re truly passionate about. And now things are changing again. Gatherings with family and friends are bound to start happening. How will the way we celebrate be different than before? I’m not sure yet. Weddings, holidays and birthdays may become more intimate. We may dress differently. We might need to spend more time taking care of ourselves. I’m sure that, however things change, Kit will be here to offer insight and inspiration. THROUGH A PANDEMIC How a Salvation Army program helping families break the cycle of poverty is finding success in spite of COVID-19 COVID-19’s trek around the globe has created hardship for millions of people living comfortable lives. For families already struggling with poverty, the arrival of the virus dashed dreams of debt repayment, improved employment, and self-sufficiency. Without help, many will face eviction and financial setbacks from which recovery is nearly impossible. The Salvation Army has been working around the clock to get this much-needed help to Hoosiers in need. Back in March, it activated a disaster response team to ensure resources like food and emergency financial assistance could be distributed statewide. The organization partnered with Midwest Food Bank to set up a massive food box packing and storage operation at Lucas Oil Stadium, eventually shipping more than 15,000 family food boxes to drive-through food pantries across Indiana. As the pandemic moves through the summer months, The Salvation Army is ramping up its financial assistance to families struggling to overcome the income gap created by business closures and stay-at-home orders. The goal is to get as many Hoosiers as possible back on track before the end of the year, including those already in Salvation Army social service programs like Pathway of Hope, which is tailored to address the unique barriers families face as they struggle to break the cycle of poverty. Case workers and local Salvation Army pastors work side-by-side with parents and guardians to identify barriers, create action plans, connect with resources, and achieve self-sufficiency for the benefit of the next generation.
“Pathway of Hope families need The Salvation Army more than ever before,” explains Susan Solmon, Director of Social Services for The Salvation Army in Indiana. “The obstacles they were facing didn’t just go away when COVID-19 arrived. For many clients, it’s actually compounded the challenges.” In just one example, The Salvation Army has been working with an Indianapolis family for more than a year to help secure Asylum status in the United States. Maya* is a single mother who fled her home country after she lost her husband to political violence. Thanks to the guidance of the Pathway of Hope program, Maya has been able to obtain permission to work and employment, a driver’s license and car, and a home for her growing boys. When schools transitioned to online learning, The Salvation Army helped to secure laptops for her children to use so that they could finish their school year at home. Across Indiana, Pathway of Hope families are still working to overcome barriers, in spite of all the COVID-19 pandemic has thrown at them. They are learning how to manage budgets, earn degrees and certificates, conquer addiction, find stable housing, and raise healthy children. Within the framework of the program, people like Maya are finding the support and encouragement they need on their journey to break the cycle of poverty once and for all. I thought I knew what this year would be like. I expected the outlines of my life to remain stable: Go to work and come home, walk my dog, go to yoga class. I assumed I’d keep dealing with the usual garden-variety stress, but otherwise enjoy my life. But in this strange world where everything has been upended, much of what I count on has been wiped away. Like many, I’ve spent the last months trying to navigate extreme uncertainty, while simultaneously realizing that all of my pre-pandemic preoccupations were rather quaint by comparison. In this new world, self-care is paramount, though it looks a bit different. This is not the stereotypical self-care of yesteryear, with its spa dates, branded products and going off the grid. It’s a deeper process of meeting — not escaping — the internal demands of this unprecedented time. Here are three ways you can open up space for new possibilities in your life, starting today.

1 FIND YOUR FOOTING. Balance is a process, not a destination. Finding (and refinding) our footing requires getting quiet and allowing feelings to surface. In this time of heightened emotions, it’s more important than ever to make space for this, even in a busy schedule. HOW: A few minutes of meditation. Start with just five minutes of solitude, even if you have to lock the bathroom door to get it. Find a quiet place away from daily responsibilities, ideally without your phone. Sit or lie down comfortably, then notice what you feel — sensations as well as emotions. Take a long inhale and sigh it out. Begin to follow physical sensations in the body, and notice where your mind goes. Bring some kindness and breathing room to your thoughts. If you’re feeling fearful, sad or agitated, place your hand on your heart and realize how many others feel that same way in this exact moment. Send some compassion to them and yourself.
3 GIVE TO RECEIVE. What does the future hold? How do I keep myself and my loved ones safe? It’s easy to get caught up in worries and wondering. We could be forgiven for wanting to close our purse strings.
2 MAKE SPACE FOR NATURE.
Try taking regular nature breaks to reconnect to this larger truth. Right in your own neighborhood, you can witness the natural world unspooling its drama and beauty. HOW: Key into nature’s healing power with a morning or evening walk. Notice the sky, the trees, the sounds of insects and birds, the feel of the air on your skin. This kind of walk is not about racking up steps, but about tuning in to your body and surroundings. Beyond the neighborhood sidewalk, you can take to the trail at a state park or an out-of-theway nature preserve.
HOW: Consider the smallest gift significant for its ripple effect. Whether directly giving to someone in need, supporting a nonprofit, sharing garden produce or offering time and attention, you embody generosity, and that benefits the wider world in ways you may never know.

Nature reveals what remains unchanged in this altered world. No matter what, plants still flower, fruit and fall. The seasons turn. These are things we can count on — an eternal regenerative process that brings comfort and perspective.
But giving makes uncertain times less overwhelming. As an Amazonian tribesman says, “I store meat in the belly of my brother.” Sharing wealth makes life richer, no matter what lies ahead.

A POSITIVE MINDSET MADE LAUREN BARR’S WEDDING TWICE AS SPECIAL She’d set the date, bought the dress, picked the flowers and rented the tent. But an unexpected guest showed up early to Lauren Barr’s wedding: COVID-19. In May, around the time of her original bridal shower, Lauren and her mother, Pam Barr, talked about the wedding that, like so many others this year, just couldn’t go on as planned. The admission spurred tears, yet both Lauren and Pam stayed resolute in their commitment to preserve the special occasion in a positive light. Lauren, 28, an occupational therapist at Methodist Hospital, and her fiancé, Zach Decker, 27, a commercial electrician at Gaylor Electric, kept their spirits up by making sure their big day would stay big. “The most important thing to me is to be married to the person I love,” Lauren said. “I didn’t feel I could wait another year.” Their plan: To marry on their original date, in an intimate family ceremony. “It’s fitting that the people who mean the most to me will be together that day,” Lauren said. Quarantine showed Lauren how much she valued time with her closest family members, so it was meaningful that the ceremony, at the Noblesville First United Methodist Church, would include the couple’s parents, grandparents and siblings.

HERE COME THE FRIENDS: Lauren and Zach’s closest friends showed up to surprise them after their family-only church ceremony.
Still getting ready
When it was time to announce new plans to guests, Lauren and Pam researched what others had done. “The postcards and messages were so negative,” Lauren said. “We wanted to let people know we were still getting ready and looking forward to celebrating together.” The front of Lauren and Zach’s postcard read “Love is not cancelled” and the back detailed their new plan: “A celebration in thought and prayer this year, and in person next.”
Twice as nice
Lauren and Zach, Noblesville High School sweethearts who’ve dated for nine years, planned a reception for 250, including their many mutual friends. That event will now take place on June 13, 2021, under a tent at the Noblesville property of Zach’s friends Lynn and Troy Vogt. As planned, bridesmaids and groomsmen will wear shades of navy and taupe. After a vow-renewal ceremony, a live band, the Jai Baker Trio, will play into the night. “The band was the first thing we booked,” Lauren said. A hog roast prepared by a friend and sides from City Barbeque will add to the laid-back atmosphere. White flowers, greenery and peonies will give the whole event a rustic, natural feel. Holding a first anniversary reception will double up on some expenses – flowers, pastor, tuxes and hotel stays – but the wedding planner, site owner, food vendor and band all switched over their contracts with no upcharge. Plus, Lauren gets to wear her wedding dress twice. “My mom is happy about that,” Lauren said, a dimple appearing in her cheek.
The silver lining
Pam is glad Lauren and Zach are so excited to be married. She’s grateful she and Lauren’s dad, Craig, are working and healthy. “Lots of people’s lives have changed forever,” Pam said. “If a family member passes away or you face financial devastation, you can’t have a Plan B.” Lauren and Zach’s honeymoon, a trip to the Florida Keys, won’t happen this year, but they’ve got a Plan B for that, too: a camping trip to Lake Monroe, where they got engaged last summer. Lauren encourages brides facing challenges now to really think about what they want, focus on priorities and stay positive, as she’s tried to do. “We have an opportunity to celebrate twice. That feels good!” she said. “Who gets the chance to celebrate one year of marriage with everybody they love? In 10 years, we may look back and think: This happened for a reason.”

Emily and Tommy envisioned their wedding as a celebration of their families. As their guest list included — literally — hundreds of guests from their respective clans, a reception space for 300+ was a must. After a ceremony at the Indiana Landmarks Center, guests enjoyed cocktail hour at the Central Library branch of the Indianapolis Public Library’s Simon Reading Room, followed by dinner and dancing in the airy Atrium. Candlelight and a bounty of fresh fruits and vegetables created a magical harvestthemed setting for this romantic November wedding.

Emily, whose family owns a produce distribution company, and Tommy, an electrician, both come from “extremely large” families. Their mothers are both one of seven, and Tommy’s dad is one of 15, so they knew they’d need plenty of space for their wedding. They found it at the Central Branch of the Indianapolis Public Library. “We walked in, and I knew right away,” Emily said. The mix of old and new just felt right. Cocktail hour for guests in the historic Simon Reading Room gave the couple time to sip champagne in the reception area before guests joined
them for a “grand reveal”. When the doors opened, jaws dropped. Trellises and centerpieces of florals and fruit transformed the atrium into a whimsical palace. After the wedding, the couple donated fruit to Wheeler Mission and flowers to Random Acts of Flowers, who shared the bouquets with nursing homes and Peyton Manning Children’s Hospital.

Ariana and Joel Mathews, who met through mutual friends in their local church community, began dating when they lived up the street from each other in downtown Indianapolis. Because of their shared love for Downtown, they chose to marry there, at The Sanctuary on Penn. The event space, a former church, created the joyful-yet-sacred environment they’d dreamed of for their wedding. Plus, it was spacious enough to comfortably host their large wedding party and 200 guests.
Soulful Simplicity Ariana and Joel wanted their wedding to reflect both their spiritual and cultural connection. Their personal vows, worship music performed by friends, and sermon gave the event a solemn tone. The pastor touched on recent and relevant history, including the story of Mildred and John Loving’s quest for justice as an interracial couple. Then it was time for the joyful and glad. Ross David, a solo guitarist from Chicago, performed songs in both English and Spanish, as did the DJ. “We value different cultures,” said Ariana, a communications professional whose
family has lived in Mexico. “Having close friends who represent many cultural backgrounds has brought so much richness to our lives — and our wedding party!” Small touches like antique book centerpieces reflected Ariana’s background in writing and storytelling. “Environment is everything,” said Joel, a real estate broker. “The historic building really brought it all together.”

When they scheduled their wedding date for only seven months after their engagement, Sydney and Christian knew the pressure was on. Acting as her own wedding planner, Sydney researched how to create her dream wedding on a budget. She designed the invitations herself, arranged her own bouquet, and learned calligraphy in order to hand-letter the signage. It all came together at Mustard Seed Gardens, the perfect backdrop to Sydney and Christian’s purposeful, Christ-centered wedding.
A Focus on Faith
Faith is a shared foundation for Sydney, an interior designer, and Christian, a second lieutenant in the Army Reserve, so when the couple started wedding planning, they had a few adjectives in mind: purposeful, intentional, natural. Sydney wanted a venue that could provide an outdoor ceremony and indoor reception. Enter Mustard Seed Gardens. “The owners started out with the mustard seed of faith,” Sydney said. “That was a component we really liked.” Sydney designed her own invitations, arranged the table décor herself using the DIY
package from The Flower Boys, and even had custom-made handkerchiefs created for her parents. She honored her Filipino heritage by including a symbolic coin, candle, veil and cord in the ceremony. A memorable foot-washing ritual emphasized the couple’s Christian faith. “It comes back to what Jesus did for his disciples,” Sydney said. “It’s all about, ‘How can I give to you?’”

What’s a premarital agreement?
Also known as a prenuptial or antenuptial agreement, a premarital agreement is simply a contract between two people that enables them to decide certain legal rights, generally to property, debts, income and other financial matters rather than having the laws of the state imposed upon them. Such agreements help people ensure transfer of property to their children, particularly in a second or subsequent marriage, and avoid costly litigation should the marriage end by the death of a spouse or divorce.
Why is a premarital agreement beneficial?
Each state has laws that mandate how assets, debts, income and other financial matters are shared between spouses when a marriage ends. In Indiana, for example, if divorcing, one party doesn’t have the opportunity to share in the future income of their spouse, even though the spouse may earn a significant majority or all of the family’s income. This can be especially painful if one spouse gave up a career or employment to raise children. In Indiana, alimony isn’t available and spousal maintenance is permitted only in limited circumstances. However, with a premarital agreement, a couple can agree prior to marriage that if one gives up a career or employment to raise children, the non-income-earning spouse can share in the other spouse’s income for a certain time, amount, percentage or other terms. So, if the couple plans to have children, the agreement, when drafted carefully, could provide future security to the non-income-earning spouse. Premarital agreements are an especially helpful way to lay financial groundwork for second marriages.

When it doesn’t advance your goals and provide security for your future. Some people make the mistake of believing they’re financially secure because they’re likely to receive child support if their marriage should end. But bear in mind that child support is to be used for children — not the financial security of the parent. In Indiana, child support terminates in most circumstances when a child turns 19. If you’re presented with a premarital agreement that doesn’t seem to provide long-term financial security for you, don’t agree to the terms. Rather, be upfront and forthcoming with your future spouse. Obtain your own legal counsel and make sure you understand and approve the terms of the document. Then discuss your financial expectations, goals and concerns with your attorney, who can suggest options for arriving at terms acceptable to you, your beloved and your financial future.

The family brought the home theater experience outside by housing the TV in a custom-built motorized lift cabinet. When the TV is stored away, it stays protected and the room instantly looks more open. When it’s in use, the space becomes a perfect setting for outdoor movie nights.

The Corinthian team raised the ceiling height on the patio, allowing natural light into the home, and creating an open and airy space. “When adding a covered patio space, you’re essentially extending your home’s roof overhang by 12 to 14 feet, which can close off the natural lighting coming into your home,” Rob said.
THROUGH THE LOOKING GLASS
To seamlessly connect indoor and outdoor spaces, the family opted for a retractable glass wall that literally opens up the living room, creating an uninterrupted flow from inside to outside. Rob said double sliding-glass doors are a good alternative to a retractable glass wall. Single sliding glass doors just don’t accomplish the same effect.
ALL-WEATHER WIFI
Since the family spends so much time on the patio, it only made sense to bring the Wi-Fi outside, too. Traditional extenders and Wi-Fi boosters often aren’t enough to bring functional internet outdoors, so a mesh wiring system was installed to ensure a strong connection. Now they can easily connect inside and out.

Summer ushers in a rainbow of fresh produce and fragrant herbs. With lettuce and tomatoes from the backyard, and peppers and parsley from the farmers market, seasonal salads are a gift to the senses. Toss together your favorite finds and voilà ! You get dinner on the table without turning on the oven. For convenience, salads can be prepped ahead of time. Just mix your ingredients together and store them in the fridge in single-serving containers. When ready, all you have to do is take out the salad, pour in the dressing and shake it up. Perhaps the true differentiator between a good and a great salad is the dressing. Vinaigrettes are best for delicate greens like spinach or arugula. Creamy dressings — Caesar, for example — need something robust, like romaine. Honey Lemon Herb Vinaigrette
Try it as a spread or dressing with grilled or fried chicken, or as a zesty dip for crudités
Pair it with seafood, such as grilled tuna or salmon
Raw honey and freshly squeezed lemon juice keep this Honey Lemon Herb Vinaigrette light and bright. TO START, grate two lemons (more if you savor that sweet-and-sour taste). After grating, it’s time to juice. One lemon generally yields two tablespoons of juice, and you’ll want to have at least four tablespoons (a quarter cup). So if you squeeze those lemons dry, you should have enough. In a medium bowl, whisk the zest and juice with

about one teaspoon of Dijon mustard. (You can always add more later.) Mix in two to four tablespoons of raw honey, again to taste. A small fistful of freshly chopped parsley adds some color, and one minced garlic clove gives it punch. Add kosher salt and pepper, to taste, and finish it off with a splash of salad oil. Store in the fridge in a tight-fitting jar. Just give the jar a shake when you want this goes-well-with-anyseafood-salad dressing.
Thanks to its smoky heat and creamy texture, this dressing goes with just about everything—as a spread for sandwiches, as a dip for veggies and, of course, salad. TRY IT AT HOME by starting with one cup of your favorite mayonnaise, be it homemade or store-bought. Put the mayo in a food processor with one cup of sour cream and a splash of both buttermilk and red wine vinegar. Toss in some Parmesan cheese, cracked black pepper and one Hidden Valley Original Ranch® seasoning packet. Then infuse the dressing with one grilled chipotle chili pepper. Be sure to check the heat! You can always add more peppers if you want to set your mouth on fire. After pureeing the ingredients, store the dressing in a tight-fitting jar in the fridge. For a thicker consistently, let it chill for an hour.

Grindstone Public House’s Bacon Vinaigrette is on hiatus from its menu, but the chefs have kindly shared it for you to TRY AT HOME. As you’d expect, this vinaigrette starts with bacon. Four strips of thickcut bacon, to be exact. Dice the bacon into small squares and fry it to crispy perfection. Transfer the bacon to a papertowel-lined plate, but leave the drippings in the pan. Mince two garlic cloves and sauté
them in the bacon drippings for a couple of minutes, until fragrant. Then add roughly three tablespoons of stoneground (or Dijon) mustard and two tablespoons of honey to the pan and swirl around. Finish it off with salt and pepper, to taste, and a quarter cup of apple cider vinegar. To play with the taste, add more vinegar or salt and pepper. As long as there’s bacon, you really can’t go wrong.
You could eat three salads a day for seven days and still fall short of the total number of salad combinations at Grindstone Public House. (There are 35.) Add in the restaurant’s special and seasonal salads — the Tuna Poke, the Harvest Apple — and you’ve got even more options. With five salads and seven dressings, Grindstone has leafy green prescriptions for every palate. Love sweet and sour? Order the Grilled Salmon Salad with Honey Lemon Herb Vinaigrette. If you like a little spice, there’s the Southern Fried Salad with Chipotle Ranch Dressing. You can also carve into a classic Iceberg Wedge. Grindstone’s Executive Chef William Reyes had a hand in creating recipes for the house-made dressings offered here.

MONON EXPANSION Carmel has expanded another section of the Monon Greenway, widening it from a single 12-foot path to an expanded 140-foot wide section, south of Elm Street, with added trails for more bicycling and walking, one-way streets for cars and an interior section of fun features such as water sprays, a playful climbing structure for kids and bocce ball. Always free and open to the public, it’s a perfect place to spend some casual time with a few friends or family members.

Carmel’s award-winning parks, trails and pathways are all open and ready for your next outdoor adventure. Hop on a bike and conquer the CAB (Carmel Access Bikeway), pack a picnic and enjoy one of the many park playgrounds. TAKE IN UNDERGROUND TREASURES The weather is always predictable inside “Indiana’s Underground” — the southern part of the state’s cave and cavern system. The network includes Indiana Caverns, Marengo Cave, Squire Boone Caverns and Wyandotte Cave. You’ll find underground boat tours, spelunking, the Rock of Ages and remnants of the Ice Age, respectfully. Squire Boone Caverns Zipline Adventures offers three different zipline options, including a familyfriendly two-hour canopy course for $59 a person. It includes six ziplines, one swinging suspension bridge and a bird’s-eye view of the caverns. You can also beat the summer heat with the $59 Twilight Zip, where thousands of lights shine the way. The Squire Boone zipline is operating at full capacity.
Hop into a canoe or kayak from Cave Country Canoes and see nature — and life — from a fresh perspective. They offer a variety of tours for kids (ages 3+) and kids-atheart. The 7-mile, 14-mile, and two-day, 21-mile trips explore the Blue River, which noodles its way through south-central Indiana. To get to the launch site(s), you’ll need to take one of Cave Country’s buses, which are cleaned multiple times each day.
CAMP IN STYLE Lately, people have been buying up RVs and campers, eager to escape their homes and sleep under the stars. If that’s the case for you and your family, check out O’Bannon Woods State Park or the 900+ acres that make up Harrison County Parks, which are open to camping. You’ll find hiking, mountain biking, horseback riding, swimming, canoeing and fishing. You can even rent an RV if you don’t have your own. 1.
