INVITE MORE BEAUTIFUL When I think of classic beauty, what comes to mind are days gone by, when everything just seemed to be a little more elegant. These days, I rarely put on a dress unless I’m going to a wedding. I haven’t made a double-layer cake since Girl Scouts back in the late 1970s, and much of my free time flies right by without any appreciation of the lush, seasonal flowers blooming right outside. Well, with one exception. I am absolutely passionate about peonies (see more about my floral pride and joy starting on page 41). Growing peonies is the one outdoor effort I’m happy to make every year. I have a large peony garden dedicated to the flower and every morning finds me out in the garden, eagerly looking for new buds and blooms. My daughter says it’s like Christmas each spring in the McVey household!
Kelly’s family members Kaylynn Nickander, Kari Perry and Ava Perry pick flowers from her peony garden last year. “My niece is so insightful. She said, ‘Aunt Kelly, holding these flowers makes me feel elegant.’ She was right,” Kelly says.

My mom is an incredible cook who devotes herself to preparing memorable, delicious meals. Health Care or Disease Care? THE AMERICAN HEALTH CARE SYSTEM IS BROKEN. In fact, I’ll go further than that: Health care in America isn’t really health care at all. It’s “disease care” or “disease management” or “emergency care”. Call it anything you want. Just don’t call it “health care”. We don’t promote health. We treat disease. Has it always been this way? Not at all. Over the past generation, medicine has changed. It’s become big business. The focus has shifted from patient to profit. It’s an industry now. The result? Doctors today are frustrated, overwhelmed, and even burned out. They spend their days seeing too many patients in quick, in-and-out appointments. They look at and touch their computers more than they do their patients. They take care of their employers. They take care of their insurers. They take care of their documentation. They don’t have time to care for their patients. Not the way they’d like to. Not convinced? Consider this: When your physician enters the exam room, he or she always wrestles with two questions: First, “What’s the right thing to do for this patient?” Second, “What will insurance allow?” All too frequently, the answers are quite different. Miles apart, in fact. Now, there’s a lot to be said for Convention Medicine. Conventional Medicine is extremely good at treating acute problems: a sudden illness, a serious injury, a medical emergency. Where Conventional Medicine falls short, however, is chronic disease. When it comes to preventing and treating chronic disease, Conventional Medicine fails.
Is there an alternative? Yes there is. Here’s what real Heath Care looks like. First, where Disease Care addresses symptoms, real Health Care investigates and treats the true “root cause” of those symptoms. Where Disease Care reflexively writes prescriptions, real Health Care uses more natural treatments emphasizing nutrition and life-style changes. Where the Disease Care model treats disease after the fact, real Health Care aims at preventing disease from happening in the first place. Where the Disease Care model divides the body up into parts, each with its own specialist (cardiologist, endocrinologist, etc.), real Health Care embraces the complex interrelatedness of all parts and treats the whole patient. Where Disease Care patients are discouraged from taking an active role in their own care and are often ill-informed about their condition, real Health Care patients are educated by their physician and empowered to take an active role in their journey toward more optimal health. Does real Health Care exist? Yes it does. It exists in the world of Functional and Integrative Medicine. While it’s a small movement today, it’s growing steadily. It’s the medicine of the future. Morgan Deno Verrill was an active teenager involved in numerous activities including competitive cheerleading when she began complaining about fatigue and soreness. As many parents with a child in these sorts of activities would, Karen Deno blamed it on the intense level of competition combined with a heavy school schedule. But regardless of how many naps her daughter took or how late she slept in when her schedule allowed, the complaints didn’t go away. As a matter of fact, they became worse. Morgan’s joints were swelling to a point at which she became immobilized with pain. “When she couldn’t close her hands due to the swelling, I got concerned … but tried not to show it,” Deno recalls. “We went to the doctor who didn’t know what it was, but knew it was beyond his expertise.”
Lab work included an antinuclear antibody (ANA) test that was positive. Those results, in conjunction with her symptoms, led to a diagnosis of lupus as well as rheumatoid arthritis. Unlike many diseases in which you receive a diagnosis and a set protocol of treatments, Morgan’s uncharted journey, along with that of her family, was just beginning. In an effort to get an effective treatment regimen, the family traveled to the Cleveland Clinic before getting a handle on medications. The battle was far from over.

What is lupus and how is it treated?
Systemic lupus erythematosus (lupus) is a chronic, currently incurable autoimmune disease that can damage any part of the body, including skin, joints and organs such as the kidneys, lungs and heart. It poses a treatment challenge in that one person’s lupus is much different from another’s. It is a disease of “flares” (the symptoms worsen or reoccur) and remissions, which often confuses friends, loved ones and coworkers. It is estimated that 1.5 million Americans (and 36,000 Hoosiers) have lupus; 90 percent of those lupus patients are women and two-thirds of those are women of color. While lupus cannot be cured, the symptoms can be treated with medications that help prevent organ damage and suppress symptoms. Finding the right medication to fit the patient becomes the medical version of “whack a mole” — when one symptom is under control, another one can pop up. This was what Morgan Deno dealt with for nearly three years before her 19th birthday.
Striving for a 'normal' life
The once active and popular teen found herself alone on some of those pinnacle high school nights. “My social life definitely suffered. But I was lucky that I had a group of core friends who stuck by me,” she recalls. “Like there was a winter dance that I just couldn’t go to. They came by and took pictures with me. They maybe didn’t understand what was going on, but for the most part that didn’t impact our friendships.”

For mom, Karen, the sadness of seeing her daughter not being able to resume her normal, active routine combined with the fear and frustration of seeing an ill and hurting Morgan took its toll. “There’s no doubt it was intense. She would drape her arms over her dad or brother, and they’d carry her upstairs on their backs. I put her in a swimsuit so her dad could help get her showered. There was a constant wondering about, ‘What was going to make this better?’ There were simply times when I’d shut myself in a room and cry,” Karen says. The financial aspect is another burden many families face. When Morgan was prescribed a medication that cost them $900 per month, Karen took a part-time job in addition to her full-time position. Perhaps the most difficult moment for them both was when Morgan, determined to live a “normal” life, went off for her first semester at Indiana University. “She had been taking a chemo pill as a treatment and experienced hair loss," Karen says. "Clumps of hair were coming out. It was devastating. She was away, and I couldn’t help her.” For Morgan, realizing that her dreams of going to school in Bloomington weren’t going to work was devastating. “I just felt so sick and so tired, I wanted to be home,” she says.
ADVICE FOR CAREGIVERS
Three things Karen Deno shares with other caregivers of those diagnosed with lupus:

There are times when you just have to sit back and listen to the person who is actually going through this. Let them express their fears, their anger, and let them cry. If they want to be negative, let them be like that for a bit. For Morgan, that meant saying everything she was feeling and then we could come back to “This is where we are — how can we do it together?" It’s not uncommon for those who aren’t really informed about the disease to say, “You Look great, what’s wrong?” People don’t realize that it’s a disease that, for the most part, you can’t see. Lupus patients may look great, but boy are they suffering. Morgan would say she felt like her bones were being crushed. As a parent, I was probably a little more critical of others when they backed out of her life. I saw her suffering and wondered why they couldn’t see it. It’s hard not to be critical of those who don’t understand. I have learned a lot about that from my support group.

Acceptance and activism
Finally finding a drug therapy that helped her symptoms and coming to grips with the disease has improved both Morgan’s well-being and psyche. “I’ve accepted that this is the best I’ll be … which sounds sad, but is a better place to be than where I was,” she says. She finished undergraduate classes at IUPUI and earned a master’s degree in genetic counseling. On October 10, 2015, she got married. And through all that, Morgan and her mother have become active participants in the Indiana Chapter of the Lupus Foundation of America. Initially, Morgan saw the “Walk to End Lupus” promoted and announced to her family that she wanted to participate … which rallied “Team Deno” for its first of many Walks. That led to them being on the Walk committee the following year and every year since. Karen received her training as a Lupus Support Group leader, and this year chairs the Indiana Chapter board. “She is my inspiration,” Karen says. “Because of everything she deals with, it puts my life in perspective. I hope I can help someone out there who doesn’t have the support system that Morgan has. We strive to have positive, helpful information at these support group meetings.” “I’m very fortunate to have family and friends who know my limits and support me,” Morgan says. She also has three things she’d like to pass on to other lupus patients: "No. 1: Don’t give up. You may feel like you can’t do something, but eventually you can. No. 2: It’s OK to have moments when you feel sad because you can’t do things with your friends. No. 3: Most important, even though it’s cliché, try to be positive. Even though I have lupus and RA, most people don’t know because I live by those three things. It can be done!” Morgan and Karen participate in the Walk to End Lupus for "Team Deno."

Peonies Story by Kelly McVey
My sisters Carla and Kari and I all have a passion for peonies. About seven years ago, we started gardening in earnest. What we found amazed us. We’ve grown different varieties, hosted peony tea parties and even passed down our infatuation to our daughters. There’s so much more to the peony than most women know — even if they love the flower. My goal is to educate women on the beauty of all the varieties. Who knows, maybe I’ll have a peony farm one day where women can come out and experience these magnificent blooms.

Here are answers to the most common questions I hear about Indiana’s special flower:
Q | WHAT DO YOU DO ABOUT THE ANTS? A | Yes, peonies attract ants, but I’ve seen more bugs on my sunflowers, dahlias and zinnias. I don’t have a problem with the ants, mostly because they show up early in the bud stage when the peony bud is still hard. Once it blooms, most of the ants are gone. To get rid of the remaining ants, I dunk the whole flower in cool water and swirl it around a little bit. Q | DO PEONIES ONLY COME IN PINK, WHITE AND RED? A | No! There are thousands of varieties of peonies in different shapes and many colors, not only white, pink and red, but also yellow, peach and purple. The shapes can be “singles” that look more like a poppy or “doubles,” which resemble huge garden roses. “Bombs” have a fluffy center and single petals around the outside. There are also semi-doubles, tree peonies and a fairly new variety called the itoh peony that is a combination of a regular peony (herbaceous) and a tree peony. Q | DO YOU HAVE TO PUT PEONIES IN A WIRE CAGE? A | What I have found is that every peony plant is different. Depending on the size of the bloom and the type of stem, you don’t always need to use a cage. In fact, I never use a cage on my peonies. For example, the Do Tell peony is an awesome landscape bush because the flowers are lightweight, sit up nicely on the bush and have many blooms, but they don’t make for the best cut flowers. The Miss America peony isn’t the best landscape bush because the stem twists and shoots out far from the bush so the flowers droop more, but it makes an amazing cut flower. The Coral Charm has heavy stems and large flowers. Its stems will not droop, so they make a nice landscape plant, and they work beautifully as a cut flower. Q | HOW LONG DO PEONY BLOOMS LAST? A | Peonies have different bloom times — early, mid and late. If you plant a good variety, you can enjoy blooms from mid May to the end of June. In my peony garden, I have approximately 30 varieties and 100 bushes; what is showcased here is a small sampling. With a few painless adjustments to the way you live, you’ll be surprised by how much money you can save. Ericka Young, an independent financial coach at Tailor-Made Budgets, offers tips you can use every single day.
Groceries
Use cash to keep your fridge stocked. “We spend 12-18 percent less using cash, and it is finite,” Young says. “When we use any kind of plastic (debit or credit), we don’t feel the purchase and are likely to add in extra items not on the list.” Keep this in mind: Do go into the grocery store with a list. Don't go in hungry. And be discriminating with coupons and deals. Is the coupon or deal offering something you really need or use regularly? If not, skip it.
Clothing
Young suggests “shopping” your own closet first. Take inventory of what you have to see what is missing, worn or in need of repair, and then make a list of only the needed items. That way, you will shop with a purpose and will hopefully avoid buying random clothes you know won’t add value to your closet. Warning: Clothing sales can be a money-spending trap if you’re not smart about how you approach them. Be a savvy shopper by waiting for the end-of-the-season sales. Opposite-season purchases are especially fun because the clothes are new when you buy them and new again when you actually bust them out to wear them!
Gas
It’s easy to forget that driving is money, and even driving short distances add up. So plan ahead, thinking about where you are heading and how you can make the most of each driving trip. Bonus points: Take advantage of grocery store programs that earn you points toward gas. “Many people are able to save up to $1 per gallon simply by shopping at the store that gives them gas points,” Young says. with cheaper gas, while apps like iGasUp point you to stations with the lowest prices in real time.
Entertainment
Sticking to a savings plan doesn’t mean the fun has to stop. Get creative! Dine in, use Redbox, host potlucks with friends and use daily deal websites, such as Groupon, to get steep discounts on new-to-you activities. Restaurant savvy: It’s an unfortunate fact that Americans tend to overspend on dining out. If you have young kids, remedy this a little by visiting kidsmealdeals. com to learn about restaurants in your area that offer discounted or free kids meals. Determine where you’ll celebrate birthdays by first browsing the freebie listings on freebirthdaymeals.org.
Pets
“Pets are family, but we don’t need to indulge as much as we do,” Young says. Dote on your furkids, but keep it within your means! Take your pets for routine checkups and shots at the veterinary practice of a local animal shelter, as regularly scheduled vet visits save money throughout a pet’s life. And when Fido needs pharmaceutical care, don’t purchase the meds through your vet. Instead, get them through your own prescription plan. Filling their bowls: Save money on pet food and treats by buying in bulk or online through amazon.com or petfooddirect.com. You might also find that you enjoy making your pet's meals at home. This costeffective option is also a way to be lovingly aware of the ingredients your dog or cat is consuming (or not consuming).

“Always keep a cushion in your checking account, and pay yourself first,” Young advises. A general rule of thumb is to save 20 percent, pay your bills with 50 percent and use the remaining 30 percent for lifestyle choices. “Save up savings equal to six months of income in case something comes up where you can’t work,” says Phil Byers, financial advisor for Raymond James. He also suggests participating in your employer’s 401(k)/403(b) matching program, if they have one, to consistently save for retirement with a little boost from your employer. It's never too late! I’m pretty sure I remember every great cake I have ever eaten. Growing up in a small Indiana town, we didn’t have access to great bakeries. My grandparents, however, lived in Chicago, and for birthdays and holidays they would bring the most wonderful cakes I have ever eaten. Purchased from a bakery in the Loop, the exquisite desserts were called “atomic” cakes, and I believe they were regional. 60 kitindy.com September + October 2015
What I loved most about these cakes of my childhood was the fresh whipped-cream frosting. It’s impossible to guess how many cakes I have made in my lifetime, but it is true that my preferred choice is for fillings and frostings that are made with whipped cream. Cream-based, these are simple to make and forgiving to work with. The cream adds a fresh dimension to the cake itself that is bound to please. The “fresh” can be
the downfall, however — it must be refrigerated. Additionally, time is of the essence because a cake with these types of icings should be served within 12 hours if you decorate and intend to use it as a show piece.

Another marvelous cake coating is Italian buttercream. It is sturdy and luscious, but can be tricky to make. Recently I found these two new recipes that quicken the job, without compromising taste and texture. One is the simple addition of freezedried strawberries to your sweetened whipped cream; it provides a great flavor as well as a stabilizer so that the frosting, when done, will hold its shape.
The other is a “quickie, faux/imitation buttercream” and is made with marshmallow fluff or marshmallow cream. Before you balk at the idea, consider that this recipe eliminates meringue-beating and the sugar going to the cracking point. This one is easy, fun and saves time. The three cake recipes I’ve included here can be made ahead of time, so you only have to add the finishing
garnishments the day of show. The Almond Butter Cake is great for any time of day. You can serve it with whipped cream as well, of course, but it’s not necessary. I have adapted a recipe from a family friend who recently passed. She was one of my culinary heroes, and I come from a family of foodies, so that is quite a distinguished honor.

Almond butter cake ALMOND BUTTER CAKE
/2 cup unsalted butter (softened) 1 cup granulated sugar 2 eggs 11/2 cups cake flour 1 /2 cup sifted almond flour 1 /2 teaspoon salt 1 teaspoon baking powder 1 cup slivered almonds (reserve 3/4 cup for topping) 1 /2 teaspoon almond extract 3 /4 cup pistachio nut milk (regular or almond will do) 1
FOR ALMOND TOPPING
3 /4 cup slivered almonds 2 tablespoons melted butter 2 tablespoons corn syrup
DRIZZLE
1 cup powdered sugar 1 /4 cup nut milk 1 drop almond extract 1 Preheat oven to 350 degrees. 2 For the cake, in a large bowl cream butter and sugar with hand or stand mixer. Add eggs 1 at a time, scraping the bowl after each, mixing until fluffy. In a separate bowl, sift flours, salt and baking powder, and set aside. 3 Puree 1/4 cup of the almonds and the extract with the nut milk. 4 Gradually alternate adding in the flour and milk mixtures to the butter/sugar mixture beating on low, alternating between flour and milk mixtures (about 3 times). Spread into a prepared (parchment lined and sprayed) 9-inch cake pan. Bake for 35 minutes, carefully checking for the top of the cake to spring back when touched with your finger. Remove from oven and cool 5 minutes in the pan on a rack, and then carefully invert cake onto rack until completely cool.

5 For the topping, while the cake is cooling, toast the almonds in a saucepan over medium heat until their color develops. Add the melted butter and corn syrup; stir until combined. Spread on top of the cooled cake. 6 Blend together the drizzle ingredients and then drizzle over the cake. Slice and serve.
CHOCOLATE STRAWBERRY CAKE CHOCOLATE CAKE
3 ounces dark chocolate, melted 2 cups cake flour 1 /2 teaspoon salt 11/2 teaspoons baking soda 6 tablespoons unsalted butter 11/2 cups brown sugar 2 eggs 1 teaspoon vanilla 3 /4 cup milk 1 Preheat oven to 350 degrees. 2 Melt chocolate in the microwave, checking and stirring about every 7 seconds; set aside and let cool. Sift together flour, salt and baking soda and set aside. 3 In a large bowl, beat the butter until soft; add brown sugar and beat on high for 3 minutes. Add eggs in a slow stream, carefully scraping the bowl as you add them. Add vanilla and then slowly add the chocolate; mix for about 30 seconds. Alternately add the flour mixture and milk to the butter/sugar mixture. 3 Pour into a prepared (parchment lined and sprayed) 10-inch cake pan. Bake for approximately 30 minutes; cake should spring back when touched with your finger. Remove from the oven and let cake cool for 10 minutes in the pan on a rack; when cool invert on a rack to cool completely.
CHOCOLATE GANACHE
(Prepare about 30 minutes prior to assembly) /3 cup heaving whipping cream 6 ounces semisweet chocolate, chopped

1 Bring heavy cream to a boil, and cook about 2 minutes. Add chocolate, letting it sit for about 5 minutes and then stirring until smooth. Let cool, occasionally stirring, until it is thicker but still pourable (about 30 minutes).

FREEZE DRIED STRAWBERRY WHIPPED CREAM
4 pints heavy whipping cream 1 cup powdered sugar 1 teaspoon vanilla 11/2-ounce package freeze-dried strawberries (I like to crush mine in the bag) 1 quart fresh strawberries (to slice garnish) 1 Whip the cream until soft peaks form. Add sugar and vanilla; continue to whip until combined. Gently fold in dried strawberries.
CAKE ASSEMBLY
1 Carefully slice the cake layer horizontally in half. Work with the bottom piece first. Fill a pastry bag with the strawberry whipped cream. Cut a hole at the tip of the bag (about the 3/4-inch size). Pipe strawberry cream around the outside of the cake. Arrange enough sliced strawberries to fill top of the cake layer, and then pipe and cover the layer with the strawberry cream, reserving about half of it to cover the cake. Carefully place the other layer (top side up) on top; gently press down. Cover the cake with remaining cream. Chill. Arrange the remaining strawberries on top and drizzle the ganache down the sides of the cake.
LEMON BUTTERCREAM CAKE

LEMON SYRUP
1 cup sugar 1 cup water 2 tablespoons corn syrup 2 lemons, sliced into 1/4-inch slices 1 /2 cup coarse sugar (granulated works fine as well) 1 Place sugar, water and corn syrup in a saucepan and bring to a boil over high heat. Continue to boil, stirring occasionally, for 20 minutes. Reduce to medium heat; add sliced lemons and cook for 15 minutes. Remove the lemon slices and drain, reserving the syrup for the cake and buttercream. Let the lemons dry out a bit, and then sprinkle both sides with coarse sugar.
LEMON BUTTERCREAM
32 ounces marshmallow cream 3 cups unsalted butter (cut into 1-inch pieces) 2 /3 cup lemon juice 2 teaspoons grated lemon zest 1 cup powdered sugar 3 tablespoons reserved lemon syrup 1 Beat the marshmallow cream using an electric mixer set on low; mix in the butter and beat until smooth. Mix in the lemon juice and zest; and then powdered sugar. Continue to beat on medium-high, and then add the syrup in a slow stream. Check consistency; you may not need all of the syrup.
CAKE & ASSEMBLY
2 9-inch prepared vanilla butter cake rounds (I use a cake mix. It’s easy and the texture works. Follow directions on box.) 1 Slice each layer in half horizontally. Start with bottom layer and brush with lemon syrup. Fill a pastry bag with the lemon buttercream . Cut a hole at the tip of the bag (about the 3/4-inch size). Pipe around the edge and fill with buttercream. Continue with each layer in the same fashion. Spread the buttercream on the cake exterior, creating a crumb seal. Chill for about 20 minutes. 2 Using a large star tip, fill your bag with the remaining buttercream, and pipe vertically from top to bottom of the cake. Pipe small rosettes on the top of the cake. Cut the reserved sugared lemon slices into small triangle pieces, and garnish the rosettes.
