or years, the culinary world considered France to be the epicenter of gastronomic craft. Aspiring chefs flocked to Paris for their culinary education, while French patrons frequented their local bistros and brasseries. Menus were indulgent, yet simple; relishing in the finest of basic ingredients — butter, herbs, stock. We think of classics like boeuf bourguignon, a stew of beef braised in red wine with carrots, mushrooms, bacon, and herbs, or cassoulet often made with white beans, duck confit and various forms of pork, baked for a long time to create a luscious filling protected by an equally satisfying crust. Reverence for tradition and specificity resulted in a cuisine worthy of influence,
though others in the industry began to challenge the conservative use of ingredients and exclusivity often associated with it. This, combined with the increasing recognition of culinary mastery from other parts of the world began to change the way French food showed up on our tables. It became impossible to ignore the dishes coming from those who were cultivating cuisines using techniques and ingredients imparted by French colonizers. French Onion Soup
It wouldn’t be a round-up of French dishes without pâté. The mostly smooth blend translates directly in English to, “paste.” It is traditionally served baked in a crust (en croûte) or shaped as a terrine, though what makes the paste is relatively flexible — ground poultry, pork, wild game, vegetables, liver or seafood. To try the terrine version, check out Le Caviste: Nothing quite says “bon appétit” like pâté with a glass of Cru Beaujolais. Meanwhile, Ascend Prime spins up a unique application of pâté with coconut waffle, nutella syrup and finishes it off with pickled huckleberry and micro basil.
What is now undoubtedly iconic, this crescent-shaped pastry is made from a combination of sugar, salt, milk, eggs, flour and most importantly: pounded, cold butter. The laborious process of folding and refolding the dough — also known as laminating — results in the impressive layers, which shatter when you take a bite. While this traditional French breakfast food originally made it to the US in 1981 as a frozen, ready-to-bake version, there are several Seattle-based pros treating us all to the real deal.
Known in France as “soupe à l’oignon,” this seemingly simple dish requires the patient thoughtfulness associated with French classics. Beef broth is reduced with caramelized onions that are so broken down, they’re nearly only recognizable by flavor, perfuming the broth with a crave-worthy depth. It’s topped with a large gratinéed crouton with comté cheese.

While there is plenty of speculation about the origins of, in particular, beef tartare, the dish was adopted by the French in the early 20th century and typically consisted of finely chopped beef flavored with ketchup, Worcestershire sauce, shallot, capers, parsley, mustard, and egg yolk. Today, this dish can be found in the original form described, as well as a myriad of pleasurable adaptations including versions made with Wagyu beef and bone marrow aioli or even fresh Ahi in place of the beef itself — looking at you, John Howie and El Gaucho!
Niçoise Salad, or “salade niçoise,” was first created in the French town of Nice. It is traditionally made with tomatoes, hard-boiled eggs, Niçoise olives and anchovies with an olive oil dressing, though chefs and home cooks have riffed on it by adding blanched green beans, roasted potatoes, canned or seared tuna and dressings with whole grain mustard. Equally delicious, this salad is rightfully celebrated in many forms on menus across greater Seattle.
Served in brasseries all over Europe, as well as in restaurants across greater King County, steak is served with a heap of French fries. Because this dish features only a few ingredients, it requires a skilled approach. The steak must be tender, seasoned and uniformly pink from one browned side to the other. The fries must be crispy, seasoned, and fresh from the fryer. The presentation can range from an indulgent pat of flavored butter melting across the top or a cream sauce with peppercorns “sauce au poivre.”

Croque-Madame The Croque-Madame, not to be confused with a Croque-Monsieur, is an open face sandwich of sorts with ham, gruyere cheese, béchamel sauce and a fried egg on top. As if the layers of salty ham, decadent white sauce and oozy cheese weren’t good enough, the dish is rumored to be named after a lady’s wide brimmed hat. The key to a good version is one that has crispy edges of toasted bread and cheese, while maintaining a molten center. Luckily for us, several spots in the area have achieved just that. Poulet Rôti Poulet rôti — or roasted chicken — takes form in a variety of ways around the city. Café Presse requires an hour to prepare their version for good reason. Roasted to order, the chicken arrives with a plate of crispy fries and heap of mayonnaise. This is perhaps the place where eating that much mayonnaise feels the most acceptable, and we’re here for it. Simultaneously, Bastille has a different take on the classic by pairing the half chicken with fresh corn polenta and marinated peppers. evin Benner grew up in the Bellingham area, where the food scene is a bit different than in larger cities. He describes his cooking style as French-inspired, but derives many of his ingredients from locally sourced farms and vendors. After gaining years of experience working in bakeries, on lines, and across the country, he eventually found his home at Seattle’s AQUA by El Gaucho, where’s he’s going on his second year as executive chef. How did you get your start in the industry? I was about 17. I ended up working at a bakery doing their bread program out in Lynden for a couple of years. Then I talked a guy into letting me work at his steakhouse and work on the line there. It was a steak and seafood place, pretty high volume during the weekends, so I kinda did the line guy thing. I was there for two years. And then I moved from up there and went into a golf and country club as a pastry chef. That was probably one of the more fun jobs I’d had up until that point. I started to gravitate to buying from local farms. I’d work with three or four of the local farms, and I’d go to the farmers market, and I got a good relationship with the farmers. I really liked that, being able to see the circle of all of it and support the community. I was happy to do that but at the same time, I felt like I needed to kind of earn some chops. I really wanted to work a bigger line and move to a bigger city. I had the opportunity to stage in New York, in Manhattan. It was about a week, then they offered me a job. I jumped at the opportunity. I was probably there five, six months. I missed working with the farms. I realized that where I was in the Seattle/Bellingham area, that the quality of the stuff we can get is better in my opinion. I came back here. I worked as the executive chef [at Semiahmoo Golf & Country Club] for a while. That got me back into working with the local farms, which was a big, huge plus for me. From there, [I moved] over to Cedarbrook Lodge in Seattle. I was there about five years. At that time, I bumped into Jason Wilson and we would chit-chat, and that’s kind of how I ended up at AQUA, in a nutshell.
What is your favorite part of your job? I’d probably have to go back to being able to work with the community on a lot of stuff. So putting money back into that, whether it’s farms, or a small microgreens company, or maybe a cannery where we send our stuff to get canned for the winter. We get fresh pasta from up the street from a guy who does a great job. A lot of that — those relationships — that’s my favorite part of doing what I do now. All these people are so devoted. Seeing that is cool. What do you recommend from AQUA’s menu? Well, we’re on the water, so I like to cook for where I’m at. So really any of the seafood is great. The dishes are tailored to the specific fish and flavors. It’s hard really, it’s all really fun. The scallops we get are great. The salmon around Washington, you can’t really beat that. Mushrooms are going crazy, so any of the dishes with mushrooms would be something that you might want to try out. What are some challenges you’ve faced and overcome? I knew when I got in that [AQUA] wanted to make a change. That’s the plus side about what they want to do. They knew that they had been in an old menu that didn’t move, didn’t change, was the same year-in and year-out. They had been running with that for a good while, and I knew that they wanted to change it. They wanted to have it be fluid and move with the season, and something that was more up-to-date. What are some of your favorite restaurants in the Seattle/Bellevue area? Well, I don’t get out a lot, I wish I did. I will say Ascend Prime in Bellevue is really cool. That’s probably made a bigger impact on me than a lot of places lately. I wouldn’t be able to eat there every week, but if you get a chance to go, it’s pretty cool. The Lakehouse is really cool — I have to give props to my buddy Joel, he’s doing a great job over there. My wife and I frequent Miller’s Guild quite a bit. We like that because it has a cool vibe. It’s got that funky kind of rock-and-roll vibe so that’s a fun place to go. What do you think the future is for AQUA by El Gaucho? It’s pretty bright, the direction that we’re going and moving right now is a positive one and it’s kind of an exciting time to be able to be creative. I think that’s the path they’re wanting to go on. It’s going to be good and evolve into this higher-end fish house, something that people are going to be able to come in and get to see things that they aren’t going to see at the other restaurants on the water. It’s not standard fare anymore, so I think that’s pretty cool. I think it’ll just keep going that direction. MENU Spring 2020 - Spring 2021 29

A
native of Chicago, Chef John Howie has taken the Seattlearea restaurant scene by storm. He is the owner of three restaurants — Seastar Restaurant and Raw Bar, John Howie Steak, and Beardslee Public House — and a relatively new distillery called Wildwood Spirits. He and his restaurants have accumulated a long list of honors over the years, including a Crystal Beverage Award, a Washington Good Neighbor Award, and an Award of Excellence from Wine Spectator. As if this weren’t enough, he’s also deeply committed to giving back to the community. He even received an Excellence Award from the Overlake Service League and Bellevue’s mayor, honoring his exceptional service. When did you first become interested in food? What did your earliest cooking experiences look like? I have always been interested in food! One of my earliest food memories is making popcorn when I was 5 years old. The babysitter burned the first batch and, since I had watched my mom make it many times, I convinced the babysitter to let me play on the stove with hot grease and popcorn. I remember that my popcorn turned out well, if I do say so myself. My mom and grandmother were very good cooks and, although they were not gourmet chefs, the meals they served were always well-prepared and well-seasoned, something I grew to appreciate in my food. The foundation they provided helped me develop a diverse palate that has served me well. How did you first enter the Seattle food scene? When I was 15 years old, I needed a job and was hired to work as a pantry chef at Emmett’s, a fine dining establishment owned by the Cohen family located on what is now Bellevue’s auto row. months of being hired, I was able to produce every item on the menu. I was also the only line cook/chef there on Sunday and Monday nights, so I ran the whole kitchen before I was even 16. What inspired you to start Seastar? I spent years honing my craft in kitchens around Seattle and developing my own restaurant philosophy as a fine dining executive chef, but opening my own restaurant was always the eventual plan. I had a desire to share the food I love with others, and to have complete autonomy to create, prepare, and serve in a space of my own. Our mission from the beginning has been to be the Pacific Northwest’s premier seafood destination, and we strive to deliver on this every day — from offering a diverse selection of seafood to creating new and unique preparations that showcase what is fresh and in season. Since opening Seastar, I have infused my passion for culinary innovation in other restaurant concepts (including John Howie Steak and Beardslee Public House), but the foundation is always to provide guests with evolving seasonal menus that feature the highest quality, sustainable meat and seafood with locally sourced ingredients. What inspired you to start Wildwood Spirits? Have you always had an interest in craft spirits? In addition to infusing innovation into the food we serve, our restaurants also strive to be on the leading edge of artisanal cocktails. As craft spirits increasingly gained popularity, we chose products from small distilleries that would allow us to create distinctive, unique offerings for our guests. My company wine director, who is the inspiration and palate behind what would become our award-winning Wildwood Spirits Co., and I appreciated these spirits, but wanted to create something different, perhaps even better. We felt there was an
opportunity to make spirits with a stronger focus on quality that would also showcase superior products from Washington state. It was our intention to produce spirits that would be held in high regard and, considering the distinguished awards the distillery has won, we are happy we embarked on this delicious endeavor! If you could order only one thing at each of your restaurants, what would it be? John Howie Steak: Bone-In USDA Prime NY (Delmonico) cooked over a live mesquite fire, medium rare. Seastar: Cedar Plank Roasted Alaskan King Crab Legs served with a creamy butter sauce that I created for my wife. Beardslee Public House: It’s difficult to choose just one, but I’ll go with the USDA Prime Hamburger with our Soft House Baked Potato Bun and our Fresh Made Russet Potato Fries. You and your restaurants regularly donate to charitable causes. Can you talk about the relationship between your work and your philanthropy? Is there a particular cause that’s close to your heart? Having my own restaurants has allowed me to give back to my community, something that has always been important to me. When I worked for others, the decision about which philanthropic causes to support, or not support, was not mine to make. Having my own business has given me the freedom to support as many philanthropic causes as I can. In fact, since opening Seastar in 2002, we have been able to support hundreds of charitable organizations, totaling more than $6 million of donated time, restaurant goods, and services. I have always felt called to do as much as I can, and one of my greatest joys is seeing the fruits of my labor provide for my community. It is difficult to choose one or two favorite charities, but I will say causes that support children are especially close to my heart. These include Seattle Children’s Hospital (both my sons were patients there), Northwest Children’s Foundation, Muscular Dystrophy Association (my youngest son has a mild form of MD), and Strong Against Cancer, an initiative to fight childhood cancer. I am also a big proponent of Imagine Housing because I respect the way they work to provide safe and stable housing via a hand up instead of a handout. Food Lifeline is another one of my favorites because I admire what they do to not only help families and children who are experiencing hunger, but also the collaborative work they are doing to eliminate hunger in our state. What would you consider your greatest professional achievement? My favorite industry honors are probably being nominated Outstanding Restaurateur by the James Beard Foundation Awards and receiving invitations to cook at the James Beard House on five separate occasions. My proudest achievement overall is the ways in which our business has provided for me and my family, for the great people who have worked with me over the years, and what we have been able to do in our community. BAKE’S PLACE: THE ART OF COMBINING FINE DINING AND LIVE MUSIC.
I
n the heart of downtown Bellevue is Bake’s Place — something so unique, there’s nothing on the Eastside like it. What started in Issaquah 21 years ago as a jazz and blues club has become a Bellevue destination for modern cuisine and cocktails. Bake’s Place is all the more special for the art of combining fine dining and live music. Tula’s, the renowned jazz club in downtown Seattle hosted its final show this year, but Bake’s Place is doing its part to keep this classic duo alive. Hosting staples of the Seattle jazz community like crooners Greta Matassa and Darelle Holden, Bake’s Place draws jazzers and foodies alike. General manager Chris Peterson talks about the evolution of the Bellevue hotspot, from jazz club to a venue for all types of music, to a full-fledged restaurant, and why he loves what he does. You’re a partner and General Manager at Bake’s Place. How did you come into that role? I actually started this location with [partners] Craig and Laura nine years ago. Bake’s Place has been around for about 21 years total. I opened it as sort of the concepting chef nine years ago and then went on to do some other things... I have a chef now but I work closely with her on the menu and we collaborate on everything. It’s a great working relationship. We have turned into a full-blown restaurant which is exactly what we wanted to do. The initial concept was really, we were a venue and we served food. The reality was, that didn’t make any money. So we had a fine line to make that transition from that concept to being a restaurant and bar that has live music. I know that sounds like the same thing, but it’s not, because the restaurant piece drives our everyday.

What kind of music can guests expect? You know honestly, it’s across the board. We started as a jazz and blues club, and we now, sadly, do much less jazz. So we have everything from jazz to singer-songwriter, R&B, soul, blues, rock, and then what’s really big now is sort of the high-level, tribute bands, and that’s really what our Saturday nights have turned into. It’s tribute styles of the really high-quality, like the Eagles tribute band, Tom Petty tribute band, Jimi Hendrix and Van Morrison, and Steely Dan, all these great bands over the years. We’ve managed to find some really top quality acts, so it feels like, on a Saturday night, you’re really coming to a full-fledged concert. The food is fantastic. We’ve got a serious commitment to craft cocktails. We have an extensive bourbon collection. We’ve become probably the most unique concept that you’ll find in this area because we’re able to do all of those things. How often does your menu change? We change it seasonally. We keep core items, you know, some of our staples like the crispy chicken, and we’ll always have a steak on there. We’re committed to having at least a couple of great seafood items. And then our happy hour, the bar food is critical. Our sliders are fantastic. So it ranges from really high-quality bar food all the way up to some almost fine dining level dishes. That’s our thing. Happy hour gets crazy here, it gets really busy, and then we transition into the dinner hour, and then we become that sort of listening room later at night. People are having dinner and enjoying themselves. I would call our menu American, committed to the local bounty using European techniques but really committed to local products and produce. We’re conscious of
the dietary trends that are out there. And our goal is to really be able to accommodate no matter what they’re after. If we can make it, we’re going to do it. How do you come up with your cocktails? We rotate the cocktail menu pretty frequently. We’re always running what I would call “Specials” or “Monthly Features.” It’s a collaboration between my bar manager, a couple lead bartenders, and myself. We bounce ideas off each other and test, test, test, constantly testing these things. It’s a creative process that works really well. We like to incorporate either new products or local products when we can. In addition to the menu itself, we have daily programs like Tiki Thursdays where we’ve got an extensive tiki menu, we have Whiskey Wednesday, we brought on things like Moscow Mule Monday where we have a few different variations on the mule. We try to be part of national programs like Negroni Week and... [w]e do another program called Tasting Tuesday where we’ll bring in a local spirit, wine, or brewery and have a couple of hours of impromptu education, tastes, and prizes. We’re really trying to appeal to our audience in terms of cocktail quality but also just a variety of programming which is a lot of fun. The Triple Door Seattle The Triple Door is a wacky place, one we can’t resist. Whether it’s for a burlesque variation of the Nutcracker, concert with dinner by Wild Ginger, or cocktail near the sprawling fish tank, this institution is beloved. Owners Rick and Ann Yoder renovated the space in 2002 with the purpose of creating a, “comfortable space that would connect performers to their audience.” Though as many original touches as possible were preserved, the sound quality has been heightened for a truly euphoric entertainment experience. TEATRO ZINZANNI Re-opening late 2020 in their new headquarters located in Woodinville, this venue embodies the character and community spirit of Woodinville Wine Country. The planned grand opening this fall will offer its world renowned circus shows that include aerial performances partnered with comedy, music and dining.
