D
r. Herbert Silva tried to retire. But after leaving his busy dental practice in Chesterfield, he wasn’t idle for long before his wife encouraged him to “find something productive.” So Silva was soon back to providing dental care, but to a different patient population. “I learned about an innovative partnership between A.T. Still University-Missouri School of Dentistry & Oral Health, a newly established dental school, and St. Louis Affinia Healthcare, a federally qualified community health center, to establish the St. Louis Dental Center and provide oral health care services to patients in and around St. Louis, including the underserved,” he says. Silva now serves as a full-time faculty member and St. Louis Dental Center’s comprehensive care unit director. Silva appreciates the school’s commitment to underserved populations, including veterans. A former U.S. Marine Corps officer and helicopter pilot, he knows his fellow veterans can experience post-traumatic stress disorder, isolation and depression. “Prior to my dental career, I learned to ‘take care of the troops’ during my service in the Marine Corps,” he says. “I am committed to facilitating students, faculty and our partners to deliver the best possible oral health care to those in need. Our collective efforts are rewarded by the value of their smiles.” What began with emergency extractions for veterans expanded into an array of dental services, and in the process, dental students also learn clinical skills. More than 400 veterans have received dental care at the clinic, and Silva notes that they represent every branch of service going back to World War II. “Faculty and students, many of whom are veterans themselves, volunteer in the Saturday morning MOSDOH Smiles for Veterans Clinic in St. Louis and at the Smiles of Hope Dental Clinic in Dexter, Missouri, where we screen and provide extractions,” Silva says. “Those patients travel to St. Louis for full and partial dentures at no cost. Other restorative or preliminary treatment may incur reduced fees.” Insurance is accepted, but most veterans rely on free or low-cost services covered by individual and corporate donors, including A.T.

C
reating healthy meals is the core of metro area business A Perfect Fit. However, clients attest that there’s more to this boutique nutrition concierge company than just cooking. “We offer nutritional counseling, meal planning and grocery shopping for clients,” owner Rachael Lewis says. “I always teach our chefs that we’re not just there to cook – I want you to be a part of the family. So our chefs won’t just ask for your meals. We will ask things like ‘What are your health goals? What are your kids’ health goals? And can I provide you with some ideas?’ So we kind of do it all, but we take it to the next level.” The company does this by customizing everything for its clients. “So we have some clients that are into the fitness world, and they want all their meals prepped and weighed, and they want to know exactly how many calories are in everything,” Lewis says. “Then we have clients that are just busy families that want, say, five dinners prepared so that when their kids get home from school, they don’t have to think about it – they just put it in the oven, and it’s ready to go, but they also know that it’s healthy. On another note, we serve a lot of families with athletes. So we get a lot of requests for ‘high-protein snacks for my son to take to school to have before practice that aren’t these sugary protein bars.’ So just kind of servicing a lot of different needs.” These services include paying attention to food allergies, dietary restrictions and more. “We have a lot of clients that have dietary restrictions, special dietary needs and food allergies, and so our chefs can accommodate that,” Lewis explains. “We also have dietitians. So if we had someone that had, say, kidney issues, and they had to have a low-sodium diet, we can pretty much handle anything that gets thrown at us.” Lewis says what keeps everyone on her team motivated is that they all believe in the benefits of fantastic food. “Health is so individual, and we’re all kind of struggling with our own health issues,” Lewis says.

arian Steen, an award-winning St. Louis artist, began drawing and painting in the third grade. Recalling an early moment when she received an award for her painting of a little boy in overalls, she says: “I knew then that I wanted to be an artist and never looked back.” Now, as an artist for more than 40 years, she says she fell in love with the medium of watercolors “because of its fluidity and capriciousness.” Steen sells her abstract artwork through galleries, at street fairs and directly from her studio. Petite in stature with a magnetic personality and warm smile, she says: “I love meeting the people that buy my art.” The two-time breast cancer survivor recalls the time she told her doctor that he was her customer before she became his. Born and raised here, Steen lived with her parents and brother in University City until high school, when they moved to Olivette. She graduated from Ladue Horton Watkins High School, studied at the University of Cincinnati and transferred to Washington University in St. Louis’ School of Fine Arts. She graduated with a Bachelor of Fine Arts degree in 1965. After graduation, she taught junior high school art until she started a family. When she divorced in 1978, she tried to figure out how she could earn a living. “I taught workshops for years and eventually started doing outdoor art festivals, which I love,” she says. One of two street artists on the committee that created the Saint Louis Art Fair, Steen says that inspiration for her paintings “comes mostly from the world around me.” She adds: “I look at the world through my artist’s eyes and think I see things differently than the average person.” A favorite painting of hers evolved after she saw a “wonderful rust stain on a purple truck.” Over the years, Steen has developed numerous watercolor and collage works, including her Passage, Quilt, Seasons and Thicket series. She also teaches art programs at her grandchildren’s schools each year. Steen met her husband, retired Olivette Police Chief Rick Knox, one night when he was on duty as an officer. When her dog was growling at her bedroom window, he was the one who answered her 911 call. “He calmed me down, and we got to know each other as friends over the next couple of years until we started dating,” she says. The couple lived together for 10 years before getting married in 1995 at the Missouri Botanical Garden. Together, they have turned their home into a showcase for art. “We acquire much of our art, which includes paintings, sculptures, teapots and lithographs, by trading with other artists at shows,” she says. Steen has served the community on the boards of Women and the Kemper and the Women’s Society of Washington University. Recently, she joined the board of Art As Healing Foundation, a nonprofit that creates art with cancer patients. In past years, while volunteering her time with the National Council of Jewish Women, she taught art at the St. Louis County Juvenile Detention Center and at an orphanage. She has also participated in mentoring programs at the St. Louis and Belleville art fairs and was recently accepted into the Art and Culture Program at St. Louis Lambert International Airport. A mother of three daughters and grandmother of six, she says her main form of exercise is “walking 2 to 4 miles as many days as possible” and taking barre and yoga classes. However, her favorite way to exercise her mind and body is riding Shadow, a Tennessee walking horse that lives at Meramec Farm in Bourbon, 70 or so miles southwest of Ladue: “It’s absolutely beautiful there. I love to travel with friends through the pastures, roads and woods. I am a cowgirl wannabe.”

The geospatial industry needs talented people and a chance to connect with more opportunities in the private and public sectors – St. Louis seems to really put forth the effort to build that foundation for companies wanting to grow.
P
roject Geospatial’s Facebook site describes it as “a webcast and blog focused on increasing awareness and education about geospatial technology” – but what, many folks may wonder, does geospatial actually mean? Merriam-Webster defines the term, which first appeared circa 1970, as “consisting of, derived from or relating to data that is directly linked to specific geographical locations.” Adam Simmons, the local nonprofit’s founder and CEO, expands on that definition: “The ‘geospatial’ in our title, Project Geospatial, has to do with the continual exploration and understanding of location – basically, ‘the science of where.’ That’s a little vague, but for good reason – the geospatial community branches out to many disciplines.” In his work, Simmons aims to examine and explain the overarching importance of geospatial knowledge: “Everything that exists in our world has a location, and understanding where things are, how things move – including people – and how that affects our environment is key to better understanding how our world works, to solve complex problems involving war, food and water resources, space exploration, urban planning, public health, transportation and more.” While recognizing the metro area’s considerable history with geospatial matters – perhaps most prominently with major locations of the federal National Geospatial-Intelligence Agency currently in Arnold and St. Louis – Simmons argues that the area’s once-modest geospatial profile has risen greatly, and even globally, of late because of two big factors. “The first is the announcement of NGA renovating their presence in St. Louis with their new western headquarters and scaling up their facility footprint, personnel and business opportunities offered locally,” he says. “The second has more to do with the state of the industry as a whole. In the past decade, the geospatial industry has gone through a significant revolutionary shift from being primarily centered on the public sector to now incredibly and increasingly viable in the private sector. This means that other industries, such as agriculture, mining, energy, health care and others, have recognized the value of incorporating many aspects of geospatial technology into their business – and quickly.” The financial sector, Simmons adds, has responded with both present and potential investments – an exciting turn of events for the metro area. “The combination of these factors has transformed St. Louis into a new hub for the geospatial industry, where opportunities are increasing exponentially,” he says. “The geospatial industry needs talented people and a chance to connect with more opportunities in the private and public sectors – St. Louis seems to really put forth the effort to build that foundation for companies wanting to grow.” Mentioning the explosive capabilities of smartphones – with other technologies, like satellites and, almost inevitably, drones – Simmons touts “democratizing the technology, products and services offered by the geospatial industry” and “a massive transition in the balance from being government-focused to supporting more commercial or private endeavors.” In that light, Project Geospatial, he continues, seeks to “create awareness of what’s happening within the geospatial industry of both the public and the private sectors and try to make it easier for them to see ways they can work together to innovate and support one another. “We also want to educate people on opportunities across the spectrum and provide thought-leadership insights of where that balance is going for the path forward. As location data and privacy [together form] a major concern as this technology has evolved, we want to keep people aware about the good this industry does for the benefit of all.” Finally, in a world seemingly awash in information, Simmons muses on Project Geospatial’s overall role in contemporary society. “Ultimately, our mission is to tell great stories about geospatial technology so [people] understand how important ‘where’ can be,” he says. “We want people inspired to look at geospatial careers, to better understand why they should study these areas in school and for people across sectors to be excited to work together to use geospatial data to solve big human problems. “St. Louis is on the leading edge of this important industry in the U.S. and globally – in an industry all about location, this is the place people should want to be.”

Clay’s clientele as a nail technician mostly includes women, whom she originally targeted with her signature products, but her cuticle oil and body butters proved a hit among men as well, her customers report. “Many would come in and be like, ‘I need another jar – my husband took that one,’” she says
with a laugh. Since then, Clay Cosmetics has expanded to include items for anyone, including sugar-based and whipped body scrubs, unscented and whipped body butters, and shower melts. Clay explains that the Golden Goddess body shimmer enhances your skin with a natural glow, while Clay’s cuticle oil tackles nails at their root or nail bed. “If your cuticles are dry and peeling, the oil will really help,” she says. “Our product … helps, even with scarring.” Expect to see Clay all around St. Louis at popups and shows, where she encourages people to put her products to the test. “I hope [the products make my clients] feel good,” Clay says. “I hope they feel moisturized. T
his year, the color scheme for my annual borders and containers will be confetti! In a normal year, I typically use a restricted palette, with a few complementary colors or shades of analogous ones. However, because of supply chain issues, there are just no guarantees of what plants will be available in the spring market, so buy for quality and personal delight – design theory be darned. If you start planting with a completely mixed color plan, the result will come across as intentional. By contract, if you have a more rigid design scheme, but can’t get the goods to accommodate it, the off-plan colors will appear more obvious, and the lack of cohesion will be apparent. If you need a bit of design glue, limit yourself to bold colors or soft pastels, but not both. Me? I am going to cover the map. My first trip to a garden center, in March, produced serious sticker shock. Everything is more expensive this year than last. Herbs are up nearly 30 percent with some vendors, and perennials are up almost as much. Woody plants, trees and shrubs are also up, but not quite as much, probably due to the multiyear nature of their production. Even fern baskets – a staple of the summer patio market – have risen by

15 to 20 percent. But with labor shortages, rising fuel prices for heating greenhouses and running delivery vans, and overall inflation for pots, soil mix and labels, this comes as no surprise. Plan to shop early and often. Find out what days your favorite vendors receive new shipments (usually midweek), and be there that evening or the day after. It does take time to get stock from the truck to the shelves, but some popular items are sold out before they are even put onto the sales benches. If you see plants that you like, buy them on the spot. Don’t wait because resupply is uncertain. By letting go of the landscaping rules, you can have lots of fun this year! Just go a little bit crazy. Try big and bold plants like sunflowers, cleome and bodacious castor beans (but not if you have grandchildren or outdoor pets, as such plants’ seeds are poisonous). Make a splash with voluptuous scarlet amaranthus or vivid canna lilies. A wide swatch of colorful zinnias will always bring a smile (and butterflies). Spill out of your containers with chartreuse sweet potatoes and hot pink petchoas (Petunia x Calibrachoa). Replace your Russian sage with sky-blue salvias. Be brave and plant some okra in the middle of lower-growing bedding plants. Take advantage
of the hot new hibiscus varieties. Add a banana tree. If you need any inspiration for wild border combinations, just look up some Victorian garden images, or take a drive through Henry Shaw’s Tower Grove Park – one of the best-preserved Victorian parks in the world. It’s time to loosen the gardening laces and unleash your inner gardening sass. Go, get dirty and have some fun!

M
ore than 90 percent of deaf children are born to hearing families who use spoken language as their main form of communication. However, many of these families see American Sign Language as their only option. Central Institute for the Deaf is changing that perception and giving deaf children the opportunity to use the language of their family. “We’re specialists in teaching listening and spoken language,” says CID executive director Heather Grantham. “Being able to listen and talk is something most parents don’t expect when their child has a hearing loss, so when you see our students speaking and listening, they report feeling an instant sense of relief.” CID serves children from birth to age 12, with a robust evaluation program that assesses how children perceive, produce and understand language. Early academic skills are also assessed to ensure students are in the right setting, whether continuing at CID, moving to a sign language program or attending a local public school. Furthermore, CID also has on-site audiologists who work to make sure the students have the best possible access to all the sounds around them every day. If a child’s hearing aid or cochlear implant malfunctions, help is immediate. “You can tell that CID cares about the individual student and meets them where they are,” says Patrice Howard, a CID board member and mother of a CID student. “They encourage students to succeed and encourage them to do better. My son is always coming home having learned something new.” CID began in 1914 with the mission not only to teach the deaf but also to train other professionals to do so. Today, CID has online and on-site resources serving thousands of educators, speech-language therapists and pediatric audiologists, impacting approximately 18,000 children who are deaf and hard of hearing worldwide. “For over a century, the St. Louis community has provided not only volunteer support but also financial support that enables us to make scholarships available,” Grantham adds. “The financial resources have been astounding. They have brought hope and life-changing help for many families who never thought it would be possible to send their children to CID.” “This school has done so much for us,” Howard concludes. “Having a community of families that have the same struggles is priceless. My son treats these teachers like they’re an extension of our family. This school is great, and I would recommend it to any person who is looking for help for their child.”

s with dozens of other professional, community and college theaters locally, Stray Dog Theatre’s artistic director, Gary Bell, was forced to reassess his company’s situation in March 2020. “When we had to halt our production of ‘Annie,’ I knew in April that my artistic and creative sensibilities would not survive a long shutdown,” he says. “So I had a conference with Stray Dog Theatre’s associate artistic director, Justin Been, about how we could weather such a time, and we came up with our ‘acting pods’ – individually sealed pods with plexiglass on three sides that could house an individual actor. Each pod came equipped with a state-of-the-art microphone. Our board approved the purchase of the microphones and eight high-end cameras, so we could film and then stream productions.” That idea bore fruit when Stray Dog was able to present its production of “Lobby Hero” later in 2020. “‘Lobby Hero’ was one of the shows scheduled for our canceled season,” Bell says. “It was the next show coming up directly after ‘Annie.’ Our safety protocols were intense. We rehearsed ‘Lobby Hero’ outside on our Tower Grove Abbey [Stray Dog’s home theater] lawn, socially distanced and masked. “Then,” Bell continues, “we brought the [ four] actors into the theater individually and had them access the acting pods one at a time. Once safely inside the acting pods, actors could then remove masks. Justin and I remained masked at all times

while filming and directing the actors.” Once they had accomplished the difficult task of safely producing “Lobby Hero” within strict COVID-19 pandemic protocols, Stray Dog turned to another, different artistic venture. Its broadcast production of “Poetober,” Bell says, “was also recorded individually with actors. Each actor arrived on different days and times to ensure safety.” Last summer, as cases of COVID-19 were decreasing throughout the metro area, Stray Dog and other local theaters began venturing back onstage. Bell adds: “We decided to begin our Limited Series 2021 season when COVID began to wane in July 2021. We decided to start outside with [our production of] ‘Art’ [on the lawn in August], then moved into the Tower Grove Abbey in October.” Once back inside its actual Tower Grove Abbey theater, Bell says, “We concentrated on masks, vaccine requirements, sanitization and social distancing endeavors. Before every show/ production, we reviewed our health and safety protocols and implemented and changed them based on the federal [Centers for Disease Control and Prevention] and Missouri state requirements.” Other precautions included finding plays with smaller casts. “We began our Limited Series with two and three actors per performance,” Bell explains. “We then rescheduled the shows we had licensed previously pre-COVID based on the number of actors in the productions – putting the productions with smaller casts closer to the start
of the season and the productions with larger casts later in the season.” While scrambling like other theaters to remain solvent during the pandemic, Stray Dog was able to find financial help from outside sources, such as federal, state and local government entities and various arts organizations. “Rob Ogden, our exceptional and talented executive director, worked extremely hard to access the assistance we needed to stay afloat,” Bell says. “That was extremely crucial in getting through these rough times.” Stray Dog operates an after-school program and other community efforts in addition to its regular theater schedule. Those had to be considered as well when the pandemic hit with such a devastating impact. Bell adds: “We also created a virtual after-school program with the guidance of the Saint Louis Public Schools, so we could continue our Arts-in-Mind After-School Program.” Amid the uncertainty of the past two years, Bell adds that owning its own theater property, the Tower Grove Abbey, was of major benefit to the company. “Having our very own theater was immensely helpful in continuing our streaming and virtual work during this crazy time,” Bell says. “We didn’t need to search for a place to create, and we could control the safety measures we wanted to enforce to keep everyone as safe as possible.” Bell and his talented cohort are now hard at work on their next venture, “Triassic Parq, The Musical,” which will run through April 30 at the Tower Grove Abbey.

T
he highly anticipated Chicago-based Asian and Latin fusion eatery Saucy Porka has arrived here at last, opening its third outpost – its first outside of Chicago – on Jan. 24. The opening marked a homecoming of sorts for founder and chef Amy Le. The St. Louis native has partnered with her brother, Phil Le, to bring her unique quick-service menu to midtown St. Louis. “I’m excited to be part of this growing food community here,” Amy Le says. “We’re the second-generation immigrant kids that grew up in restaurants and went on to do our own businesses. These are our own interpretations of what our parents did. My mom says, ‘You took what I did and accomplished so much more than what I could imagine.’” The siblings grew up in the industry and honed their hospitality skills by helping out at their mother’s businesses, Hunan Royal in south St. Louis County and Ho’s Chinese Kitchen in St. Peters. For the past 19 years, Phil Le has worked for So Hospitality Group – which oversees Drunken Fish and Kimchi Guys – and most recently served as its director of operations. Amy Le went on to pursue a journalism career in Chicago, which eventually led to a social media and marketing position with then-startup Grubhub as its 14th employee. The job inspired her to reconnect with her culinary roots, and it wasn’t long before she was back in the kitchen and running her own catering business and, subsequently, a bánh mì food truck. During this period, Amy Le connected with fellow food truck operator Rafael Lopez. Together, the chefs developed a series of collaborative dishes showcasing both of their cooking styles. Malaysianborn Amy Le, of Vietnamese descent, and Lopez, of Puerto Rican descent, found commonalities between the comforting home cooking of both of
their cultures. By creatively combining elements of each, Saucy Porka was born. “When we were coming up with the name, we wanted it to represent how bold our food was and how it has a lot of personality and bite,” Amy Le says. “‘Porka’ is Puerto Rican slang for a lot of attitude and sass. ‘Saucy’ is that attitude, but it also refers to all the sauces and marinades we cook with. And even though pork is the star of the
show and is representative of a lot of Puerto Rican and Asian cooking, we offer a lot of vegetarianand vegan-friendly items, too.” In 2013, Amy Le and her husband, John Keebler, opened the original location of Saucy Porka in downtown Chicago, followed by a Hyde Park neighborhood location in 2018. Although Lopez has since departed the company to pursue a career in accounting, the former executive chef ’s influence carries forth at Saucy Porka’s third location in St. Louis, which fills an approximately 2,200-square-foot space previously occupied by Kaldi’s Coffee Roasting Co. Menu items include Le and Lopez’s flagship dish that landed them on Food Network’s “Diners, Drive-Ins and Dives”: paella with jasmine rice simmered in coconut milk with Puerto Rican sazón seasoning, sautéed with Chinese sweet sausage, mild Spanish sausage and edamame, topped with slow-cooked guajillo (pepper) pork and scallions. Additional highlights include chorizo egg rolls with ground pork, sweet potatoes, red cabbage, Chihuahua cheese and onions, served with jalapeño aioli; a ropa vieja (shredded beef brisket in tomato sauce) bánh mì with mayo and kimchi on a toasted baguette; and “bacos,” or bao-style tacos with filling options such as guajillo shrimp with corn salsa and chipotle aioli. he Contemporary Art Museum St. Louis recently landed its latest laurel by being named a 2022 host organization for the annual summer ArtTable Fellowship Program. In a mid-February press release, CAM announced the receipt of the new honor, which comes from the eponymous New York City-based organization “supporting women-identifying individuals in the visual arts.” Via a nationwide membership network and community initiatives, ArtTable strives to “expand opportunities for women from diverse backgrounds and at all stages of their careers, fostering a stronger future for all women in the arts,” the press release explains. CAM will choose an ArtTable fellow to assist in readying for the 10th Great Rivers Biennial exhibition, running from Sept. 9 through next Feb. 12. Beyond taking part in planning, researching and designing that exhibition, the press release notes, the chosen fellow will work on special 10th-edition programs and activities. Yearly, a jury of nationally recognized arts professionals selects the local artists that the exhibition features, each of whom receives a stipend of $20,000 and an exhibition at CAM. The 2022 jury selected this diverse trio: Yowshien Kuo, a multimedia artist whose solo exhibition “Western Venom” ran at the museum from September 2020 to February 2021. Yvonne Osei, whose own website describes as “a Ghanaian artist living in the United States,” represented locally by Clayton’s Bruno David Gallery. Jon Young, a tribal member of the Catawba Indian Nation of Rock Hill, South Carolina, who primarily works in sculpture. Supporting the Great Rivers Biennial is St. Louis’ Gateway Foundation, which “strives to enrich St. Louis life and culture by supporting efforts to acquire, create and improve tangible and durable art and urban design,” its website states. ArtTable granted only 18 fellowships this year. The fellowship program dates from 2000

and, according to the press release, “provides quality real-work experiences and mentorship to women-identifying students and/or emerging professionals from backgrounds generally underrepresented in the visual arts field.” A paid program, it ranges in length from five to eight weeks, states the press release, during which fellows work closely with leaders in the field “to gain exposure to a range of professional
