EDITOR THIS WEEKEND, MY FAMILY AND I PAID A VISIT TO MEET THE newest addition to our family, Jaycie, who, at press time, was a whole 12 days old. This meant I was also able to spend time with Jaycie’s now-big sister, Jenna – a 4-year-old redhead with the cutest personality. During our visit, I read to Jenna and practiced writing letters with her on her LeapPad. The LeapPad tablet gave her a star for writing the letter correctly; otherwise, the program would simply ask her to try again. Repeatedly Jenna was unsuccessful writing a letter, and she would say, “I can’t do it,” and hand me the tablet. I kept telling her to try again and not give up. Every time she succeeded, a smile of pure joy lit up her face – and melted my heart. In this week’s Arts & Culture section, we feature our second Ready Readers column (turn to p. 70), which emphasizes the importance of reading to children. Reading this week’s column, I reflected on my time reading with Jenna and how special it was for us both. I hope the column inspires you and the little ones in your life to do the same. And in this week’s Abode feature, we showcase Retta Leritz, a St. Louis interior designer and chief executive officer of Retta le Ritz design studio (p. 27). Leritz fondly recalls her childhood days as inspiring her career today. The story is a fun and informative look into Leritz’s past, present and future, all while showcasing her colorful and contemporary eye for design. All the best,

That has been a tremendous asset for us because it gives us global connections and has grown our relocation business exponentially.” Horlacher notes that since the company is so St. Louis-oriented, it’s important for Janet McAfee’s agents to give back to the community they live in, work in and love.

“The definition of ‘Realtor’ is synonymous with service to the community,” she says. “We do a company United Way campaign, and all of our agents have different charities they work on.” Because Janet McAfee is local and independent, the office has a real team environment, Horlacher says. “It’s corny, but we are like an extended family, and some of us actually are family,” she says. “Our jobs can be very difficult. It’s very important to have a good environment where you have a support network and the camaraderie.” Last year was Janet McAfee’s best ever, but Horlacher notes that “you can’t rest on yesterday.” “We’re charging ahead in 2016,” she says. he St. Louis Symphony recently hosted Four Seasons of Fashion at Powell Symphony Hall. Guests enjoyed cocktails, hors d’oeuvres and a chance to bid on silent-auction items, followed by a vintage-couture fashion show and performance, with Champagne, dessert and fashion viewing after the show. Cameron Silver – renowned fashion director and founder of LA’s premier vintage boutique, Decades – brought a runway presentation of classic couture from Versace, Christian Dior, YSL and more, beautifully interwoven with a chamber performance of Vivaldi’s The Four Seasons, led by Concertmaster David Halen with St. Louis Symphony musicians. Proceeds from the event (presented in partnership with the Symphony Volunteer Association) support the orchestra and its community and music-education programs. he St. Louis Crisis Nursery celebrated its 30th anniversary at its annual Razzle Dazzle Ball, themed “Once Upon a Time.” The sold-out event welcomed 600 supporters who were dressed as princesses and princes to enjoy dinner, silent and live auctions, and dancing. CEO DiAnne Mueller and board president Jim Wagner greeted the guests. Millie Cain and Stephanie Hall co-chaired the fairy-tale event. Hugs and Kisses Awards went to the Foundation of the Year, The Saigh Foundation; the Couple of the Year, Steve and Sally Mitchell; and the Funder of the Year, St. Louis County Children’s Service Fund. Also, the Young Professional Hero Award went to Celisia Harris and Shawn Vinson. The event raised $300,000 to help the St. Louis Crisis Nursery continue its mission to prevent child abuse. ateway180 hosted its seventh annual Open Your Heart for the Homeless Gala – Art Live! on April 1 at the historic Randall Gallery. The evening began with an open-bar cocktail reception. During it, guests enjoyed locally renowned artists creating artwork for all to view and experience. They similarly enjoyed live music by The Bottoms Up Blues Gang, mingled, bid on silent-auction items and took part in the Tombola Wall, an artistic and dramatic display of suspended, tumbling boxes that served as an entertaining “grab bag” fundraiser. Following the reception were dinner, a live auction, artistic and delicious Ices Plain & Fancy ice cream treats, dancing and art gazing. Gateway180’s mission message was delivered by keynote speaker Michael Henderson, owner and CEO of Phoenix Risk Assessment. Chairing the event were John and Margaret Simon of The Simon Law Firm, founders of Project XOXO and advocates for ending family homelessness. Funds raised from the gala will enable Gateway180 to provide more than 60,000 bed-nights to roughly 2,000 women, children and family members experiencing homelessness here in 2016 alone. Gateway180

I understand the face of homelessness because I came here, homeless, by way of Hurricane Katrina. I’ve had over 178 foster kids that entered my home homeless, and now I coordinate homeless and fostercare services for the St. Louis Public Schools, where we have over 5,000 students identified as homeless and 52 students identified as being in the foster-care process. My challenge is staying connected with students after they graduate from high school and facilitate that process through college.

A ROOM WITH A VIEW By Robyn Dexter
T
he client came to Jennifer Johnson of Ethan Allen in Chesterfield with a challenge: a partial-hexagonal room in a 1923 historic estate. He had just purchased the home on the river bluffs of Alton, Illinois, and wanted a style that would work for his new home, but wasn’t “too traditional,” Johnson says. “He wanted quality, and he wanted an updated style that would work well in his traditional home,” she says. The home has panoramic views of the rivers, and each room has a unique character with architectural details. The “four seasons room,” pictured here, focuses on the river view and has cozy, durable seating for the client’s dog-friendly spaces. The room, being uniquely shaped, has many windows and doors. Johnson drew inspiration from the shape of the room and the textural elements. “The space plan had to focus on the river view and provide comfortable, durable furnishings,” Johnson says. “I needed to add warmth and lighting due to the cool-gray tones in the walls.”

etta Leritz fondly recalls rearranging the furniture in her childhood bedroom until it was “just right.” From an early age, the St. Louis designer and chief executive officer of Retta le Ritz design studio possessed a keen eye for interior décor and a penchant for self-expression – both passed down from two other designing women named Retta Leritz, her mother and grandmother, who expressed their distinct personalities through elegant and quirky dress, as well as mixing modern and antique décor in their homes. The third-generation Leritz, a well-known local fashionista – often highlighted as a best-dressed St. Louisan, including in LN in 2014 – fell in love with fashion and, in turn, interior design from a young age, losing herself in the editorial spreads of Seventeen magazine and the former VH1 TV show Fashion File. “I began to learn the importance of expressing oneself through not just fashion but through the environment in which I lived,” she says. While attending Miami University in Oxford, Ohio, Leritz took her passion for fashion a step further and began to design and sew her own clothes. Because the school didn’t have a fashion track, Leritz took costume-design classes through the theater department and went on to discover the school of architecture, where she was accepted into the interiors program. “To me, interior design captured the same sense of self-expression as fashion, simply in a different form,” Leritz says. “In one of my favorite school projects, we had to design a residence of our choice, and I chose a larger-than-life townhouse in Manhattan. I created secret passages, unique space plans and dramatic visuals. It was the first time I let my imagination run absolutely wild when it came to an interior, and it made me realize that the envelope can be pushed in residential, interior projects more than in just color and texture.” After working in home-product design at multiple fashion houses in New York, Leritz returned to her hometown to continue to combine her loves of fashion and interior design through the 2003 launch of Retta le Ritz, a paper and stationery company that has grown into a multifaceted interior design studio with a division focused on illustration and product design in Clayton. From stationery products to home design to custom fabrics, Leritz continues to push the creative envelope in multiple areas of the design world, all while providing personalized service for everyone from St. Louis-area residential customers to corporate clients, including Caleres and Saks Fifth Avenue. Leritz’s style is consistently tailored and classic, with a touch of the unexpected. “I am not afraid of pairing unique textures and color combinations, old vintage pieces and new finds,” she says, noting that while she loves to design children’s rooms, her dream interior project is a boutique hotel. She finds inspiration through traveling, perusing design magazines and, of course, studying fashion. “This influence is most identifiable in my work with details – trims and seams – on furniture and fabrics,” she says. “And my color and pattern combinations, as well as some of the unique textures I use, are pulled straight from this research in fashion.” To discover the vision for each new interior project, Leritz gives users of the space a personality-assessment questionnaire, as well as an aestheticstyle assessment through visual homework. “Once we feel like there is an understanding of how the client lives and operates, then we can develop a solid design plan,” she says. “Often, we are lucky to get the design scheme right on the first round. When our clients respond with, ‘Wow, it feels like you are in my head!’ – then we know the process is working.” Among Leritz’s current projects are some eclectic redesigns of several master suites, including custom-made beds, and atypical finishes, such as tortoiseshell tile. This summer, Leritz will launch a new website, and she’s currently developing a new fabrics line. Through today’s ever-growing social media world, Leritz says it’s becoming increasingly easier to connect with new clients. “People tens of thousands of miles away from St. Louis might be interested in a living room bookshelf or a kitchen backsplash, and with one post to Instagram, we have captured their attention and have them following what we do. It is a powerful tool,” she says. “And social media has allowed me to stay in constant communication with my national clients, especially when it comes to larger projects with construction teams.” However, building confidence and trust through in-person meetings with her clients is the key to incredible results, Leritz says. “With each space, my team and I hope clients walk away knowing the design scheme was created for them and for them alone,” she says. “We pull the best style elements of the client and translate them into a space plan and environment that reflects the client’s – not the design team’s – individuality. Helping Your Child Cope With an Illness

L
ast month’s column discussed how parents and caretakers could help themselves cope with the chronic illness of a child. This month, we’ll focus on how to help your child handle the lifestyle changes an illness can bring. Even for those whose children don’t have chronic illnesses, these principles can apply to any type of childhood illness, regardless of severity or duration. Understand the illness. Doing so may involve several steps: Learn what restrictions it may place on your child’s activities and your lifestyle. Review information obtained from the internet with your child’s care providers. Ask questions. Be prepared to explain the illness to your child so he or she can better understand it. Be honest with your child, and use language he or she can understand. Be careful not to provide too much information. Your child may guide you by the questions he or she asks. Help your child deal with his or her feelings.
Simple things like a rash on exposed skin can be a big deal to an adolescent. Missing even a few days of school can be threatening and stressful. Within the realities of the illness, whether chronic or selflimiting, help your child be as normal as possible. Keep a normal routine. Remember, you’re the parent, and your son or daughter is a child who still needs discipline in his or her life. Children are creatures of routine so try to maintain regular family routines such as bedtime, mealtime and chores. Do not take control from your child. Allow your child to be responsible for his or her health care, as much as possible, by giving him or her choices in the direction of such care. Work with others such as your child’s school and activity groups. Don’t be afraid to ask for help, even in what may seem to be a simple situation. Friends and family often want to help so let them know what’s needed.

“ The moment you think, ‘How could you do me like that?,’ you are acknowledging hurt or anger, often resulting in a long-term negative influence that can diminish the effectiveness of any relationship. Rethink the consequences. Share the responsibility. Change your perception.” –An Ottley-ism Relationships create opportunity. Most people have definite opinions about relationships based on experience. What happens in relationships and how they are handled can impact your success. Relationships also can affect business outcomes, contracts and employee relations. Depending on the intensity of relationships and your response to them, they can either enhance or diminish your success. A few of the most challenging relationship considerations include: Being Perceived As Too Good Personally and Professionally. For some reason, too often good is associated with “easy” and “phony” in both personal and professional situations. Be the best you can be. Let misperception be
someone else’s problem, not yours. Also, let time and performance be your response. A natural exchange takes place between our personal and professional lives, with each clearly impacting the other no matter how hard we try to keep them separate. Know your skills and what you bring to a job. Again, be the best you can be. If specific negative behaviors recur, revisit your motives for staying in the relationship, negotiate compromises and seek a resolution. To survive success, decide what compromises to make for mutually beneficial outcomes. Seek opportunities for improvement first. Take the high road as an option. Make a choice without regrets. Move on when you have done all you can. Navigating Changes. In trying to succeed, some people choose mates or employees who appear to be easy to manage and supportively loyal. Then, when success comes, accompanying it can be an increased appetite for more and a sense of entitlement. Too often, this creates a relationship gap. Like any gap, when not addressed, it will grow. Decide to (1) anticipate changes, (2) actualize collective solutions to
fill the gap, (3) navigate transitions, (4) be flexible in building alliances and (5) get through the gap by giving, again, only your best. Transforming Disappointment to Forgiveness Professionally or Personally. Any relationship worth having deserves a forgiveness clause. Allowing hurt and anger to occupy a space in your head and heart is wasteful. Replace a failed relationship with a new or renewed, better relationship. Working out difficulties can be challenging, particularly with emotions that can distort the best of intentions. After everything, sometimes in relationships we feel we can’t live with them, but we definitely can’t live without them. Relationships, whether personal or professional, can only lead to success when the past stays past and we live life forward with no regrets.

artichoke. Test tenderness of artichoke by using small knife in same way one tests boiled potatoes. Remove from water, drain and let cool.
using half of crab mixture, fill all sections of artichoke. Spread remaining crab mixture on bottom of lightly oiled 8-inch pie pan, and place stuffed artichoke in center.
Using sauté pan, heat butter over medium heat; then sauté onion and garlic. Deglaze pan with lemon juice. Remove from heat and add lump crab. Slowly blend ingredients, trying not to break up crab lumps. Once cooled to room temperature, add shredded fontina.
Blend together Parmesan and lemon zest, and sprinkle over artichoke. Fill remaining areas of pan with crab. Bake at 400 degrees for 15 minutes, until cheese begins to melt and brown. Remove from oven and drizzle with remaining olive oil.

efore we get started, a bit of a backstory seems needed. I had one goal the summer of 1990: to test-drive everything of interest and decide on my first automotive purchase. I grew up on British sports cars, my masochistic father’s obsession. Finicky and frustrating, autos like the MGB and Austin Healey 3000 can be both immensely maddening and hugely rewarding, often in the same day. I was molded early to think a car should put the driver in intimate contact with the road and respond as if it’s hard-wired to the driver’s medulla oblongata. Anything else was rubbish, as the Brits say. The list of cars I drove that summer was exhaustive – I was on a mission. Once the crankcases cooled, two had left long-lasting impressions: one for all the right reasons (the car I bought, a 1986 Mazda RX-7 GXL), the other for all the wrong (a 1985 Camaro IROC, so bad I felt sorry for its owners, which led to feelings of contempt and smugness). In college, these feelings I harbored at 16 became further entrenched every time I’d get behind the wheel of a Camaro or Firebird. Stomp the gas, and the car squawked, letting out an awful racket, but wouldn’t go anywhere with much urgency. The steering wheel seemed more like a suggestion than a command. Cornering over bumpy pavement sparked enduring panic as the suspension began a squeak-laden, undamped oscillation. And if the driving experience wasn’t bad enough, the build quality was even worse. Third- and fourth-generation Camaros were not good autos – quite the opposite. But the past is the past, and because I’m not 16 anymore, I told myself to stop carrying a grudge. For my last LN column, I test-drove the Cadillac ATS-V and for weeks afterward shook my head in pleased disbelief. After continued research, I discovered the ’16 Camaro was based on the same sublime chassis as the ATS, which made me realize I’d have to face my deep-seated biases and give the new Camaro a fair shake. Would that glorious experience translate? I had to find out. First impressions were mixed. The new Camaro definitely improves visually on the last iteration, but some odd and seemingly disparate design elements remain, and it’s still unnecessarily large. The driver’s position feels claustrophobic, with a shoulder-height belt line and accident-waiting-to-happen blind spot, both traditional Camaro carryovers. Fit and finish both inside and out are excellent, however, with interior materials that feel substantial and borderline luxurious. The greatly modernized user interface also feels intuitive, with lots of “oooh”-inducing cool bits. In short order, I found myself adjusted to the limited outward visibility offered. For this car, the blind spot-monitoring systems are not a nicety, but a necessity. Once adjusted, the hits came rapid-fire. In my first order of business, I made a beeline for my own personal Nürburgring, Highway T from Highway 100 to Gray Summit. As locals who drive it know, this challenging stretch of tarmac will test the capabilities and composure of a car as far as the driver will allow. CliffsNotes version, the Camaro SS does, in fact, deliver the brilliance of the Cadillac ATS-V, but with its own je ne sais quoi. My tester had magnetic ride dampers, which can be factory-tuned from gentle floating cloud to steel I-beam or anything between. The resulting driving dynamics seem intentional rather than the result of GM raiding a parts bin for suitable dampers. The Camaro SS’s tuned suspension is a bit softer than that of the ATS-V, but feels no less capable. The limits of grip simply astounded me. I was carrying speed through corners that I don’t think I’d ever seen before – and doing so easily. Neutral balance and lack of understeer can embolden a driver, and this car delivers both. One slightly bumpy off-camber turn in particular, which would’ve caused a mild coronary attack in an earlier Camaro, was dispatched gracefully. A bit of the old leftright sway remained in the chassis, but in a controlled way – almost like an intentional allusion to Camaros of yore. The Corvette-derived 455-horsepower, 6.2-liter V8 is an absolute peach. Smooth and responsive, it has a linear power band that’s easy to harness midcorner. The Camaro has less of the on-off effect of the ATS-V, instead offering plenty of in-between steps. And fitted with the 8-speed automatic, this car’s 6,500-rpm redline is much less intrusive. When called upon, the LT1 power plant can absolutely hammer – if you feel like burning off a year’s worth of rubber in seconds, no problem. While the Europeans are all supplanting output with turbocharging, Chevrolet has stuck with its bread and butter, displacement. And it works – simply put, this is one of the sweetest petrol-burners in production today. So here I am, served a giant, steaming plate of crow, with no choice but to gobble it down. My anti-Camaro bias has been dispatched completely – I’m a convert. My SS tester had no engineering faults I could find, performing with nearly perfect execution. The only faults involved design, which I believe most shoppers will accept given the on-road transcendence. Many European-auto shoppers will likely find it impossible to overcome the stigma of owning an American pony car, but I’d advise getting over that prejudice. This Camaro isn’t a pony car anymore; it’s a righteous sports car, legit in every way. The old argument of “It might be fast, but it can’t corner” has vanished, and if you hear scoffers apply it to the SS, that application simply proves they haven’t driven the new Camaro. This car should appeal to fans of both muscle cars and sports cars. I can’t stress enough how much it deserves a fresh look.

northwest Italy. The winery lies in the southern part of the comune, with 12 hectares encompassing some of the most important vineyards, such as Cannubi, Bussia and Villero. The Fenocchio family – one of the region’s original winemakers – adheres to traditional styles of wines, producing Barolo from single-vineyard sites and Nebbiolo from the larger appellation Langhe, which cannot be called Barolo. The family also makes a white wine known from the region Roero Arneis, which has a slight floral element – a favorite white. The Fenocchios always have been “stewards of the land,” using natural farming practices and sustainability to ensure quality grapes. Claudio Fenocchio believes advances in winemaking technology enable producers to mechanize operations and to work with greater assurance, as well as with systematic and rigorous control of quality both in the vineyard and in the cellars. Fermentation,
in any case, still lasts 30 days. The Nebbiolo grape from Piedmont is one that is not produced as well in other regions of the world, suggesting why terroir remains so important when it comes to wine. “Our Barolo is aged for five months in stainless steel tanks and two years in Slavonian oak casks, some as large as 50 hectoliters, and is then given an additional year of bottle aging,” declares Claudio Fenocchio. “No use whatsoever is made of small oak barrels – too aromatic for this wine, which would risk modifying its unique personality. hough Webster Groves has been home to some of the gems of the St. Louis food scene for a while now, it’s still under the radar to many foodie types. Olive + Oak, one of the latest eateries to open here, may finally put this municipality on the local culinary map along with so many others around town. Owner Mark Hinkle and executive chef Jesse Mendica, both recent alums of local favorite Annie Gunn’s, have put together a combination of excellent food and drink and convivial atmosphere that has made this restaurant one of the hard-to-get reservations in town in recent months. Located right in the heart of downtown Webster Groves, Olive + Oak is also close to many fine theaters, including Mustard Seed Theatre, making it a great place

before catching that venue’s latest production, Bosnian/ American: The Dance for Life. The dining room is more than spacious, made to feel even more so by the high ceilings. Also, this area of Webster has street parking and a couple of larger public lots, making it easily accessible. You can tell a lot about a place by the care its proprietors take with their beverage program. Many restaurants obsess over the food, but don’t give much thought to the drink portion of the equation. Such is not the case at Olive + Oak. The wine list has some great by-the-glass options, including a Barolo and a Barbera, which don’t show up in small formats often around town. Likewise, the cocktails are carefully crafted here, listed by numbers instead of names. I tried the No. 94 ($10), a curious combination of rum, Madeira, muddled grapes
By Matt Sorrell and basil. Rum and Madeira are certainly not the first ingredients I’d think to put together, but this concoction works incredibly well. In the mood for some meat, I started off with an order of the hand-cut steak tartare ($14), which is a superb way to whet the appetite, three dollops of nicely seasoned meat accented with egg yolk and grilled bread. The Tuscan kale salad ($12) is also a fine segue to the mains. The eponymous greens are served atop crispy potato patties, a nice contrast, and topped with grated egg and a mild sweet-pepper-and-sherry dressing. This salad could easily serve as an entrée – we had it split up to share. Olive + Oak has some fine seafood options, including oysters, shrimp and tuna. I was particularly attracted to the Hama Hama clams ($20) on the entrée list. This

warm and comforting bowl includes plenty of said clams along with potatoes in a savory and smoky bacon-and-tomato broth, akin to a Manhattan chowder. Spring means ramps, and Olive + Oak’s spring ramp tagliatelle ($18) makes good use of this earthy bounty, incorporating them into the pasta itself. The noodles are then seasoned with black pepper and Parmigiano-Reggiano. We paired it with a glass of Château Valcombe Epicure ($10), a refreshing dry rosé. The menu also includes some large-format shareable dishes, including whole fish, which we definitely need to explore further!

Story: From 1992 to 1995, as Yugoslavia was dissolving into the constituent states that had composed the eastern European nation in the 20th century, a reign of terror by various ultranational militants resulted in the genocide of tens of thousands of people, most of them Bosnian Muslims in BosniaHerzegovina and Croatia. More than 1 million Bosnians were displaced from their homes during the ethnic cleansing by murderous extremists. Many of them immigrated to St. Louis, resulting in the Gateway City now being home to more people of Bosnian extraction than any other city outside of the native country. While Bosnian immigrants have brought their culture and memories to the United States, their children born, raised or both in St. Louis reflect both their parents’ backgrounds and their own assimilation into 21st-century America. Highlights: Mustard Seed Theatre artistic director and playwright Deanna Jent spent the past year interviewing people in the vibrant Bosnian community in south St. Louis to gather material for this one-hour, one-act presentation that had its world premiere in the beautiful Grbic Restaurant banquet hall last weekend. It’s a pleasant and important story that depicts the resilience of the Bosnian people – not only to survive, but also to revitalize their adopted new neighborhood in St. Louis. Other Info: With the involvement of Dr. Ben Moore, co-founder and director of the Bosnia Memory Project, language consultant Daniela Sales, translator Elma Salesevic and others in the local Bosnian community, Jent’s story weaves together the culture and opinions of a new generation of Bosnian-Americans raised here with flashbacks to the terrors in eastern Europe more than 20 years ago. There’s also an ongoing substory of a folk fable about a young sheep that dares to break from the flock to pursue its aspirations to become a dancer, all the while fending off the attacks of a wily wolf that wants to kill it. Director Adam Flores draws on the skills of several local Bosnian-American residents
who merge their talents in this ensemble effort. Those who attended the opening-weekend shows also enjoyed delicious dining, such as goulash, the house salad and an imported beer called Nektar before or after the performance. Subsequent showings will take place at Fontbonne University’s Fine Arts Theatre, which will house Kyra Bishop’s set design. That design successfully integrated into Grbic’s handsome interior of brightly colored walls with myriad emblems and designs and a raised platform on which much of the action occurred. Flores keeps his players moving fluidly from one part of the stage to another as Jent’s script veers between the fable, the terror in Bosnia and the new generation gathering at a coffee house and recollecting seeing the Gateway Arch and other local landmarks for the first time. Bosnian/American: The Dance for Life succeeds as a tribute to the valiant spirit of a people and culture driven from their homeland to start life anew in a land a continent away, rather than as a drama driven by plot and character development. That’s OK, though, because its message of hope and love is universal.

The culinary and design teams behind The PresTon in the Central West End created a vision for the small-plates restaurant in The Chase Park Plaza that’s sensational for any occasion.
T
ucked inside the history-rich Chase Park Plaza is The Preston, one of St. Louis’ newest restaurants. Since opening in February, The Preston has garnered a reputation for exquisite plates and ambrosial drinks in a vintage-meets-modern setting carefully crafted by the culinary, drink and design staff. The restaurant is named for architect Preston J. Bradshaw, who designed The Chase Park Plaza in 1922. Born in St. Louis, Bradshaw designed many hotels and automobile dealerships in the 1920s around the city. In addition to the restaurant, his name graces one of its potent potables, Good Night Mr. Preston – a modern twist on the traditional Manhattan that adds Benedictine. The restaurant mixes old and new, glamorous and casual, fun and sophisticated, contemporary and oldfashioned. The dining room’s high ceiling features the original embossed tin tiles painted white, with large, gray-painted columns offsetting it and the white walls. Hardwood flooring brings a natural charm, while the gallery accent wall contributes asymmetrical detail to
the room. Add in an open kitchen, a marble-topped bar and tables set with vintage patterned glassware for an atmosphere that pays homage to the history of the Chase in a modern setting. Matching the opulence of the environment are food and drinks conceived by a team of talented culinarians – executive chef Kyle Lipetzky, chef de cuisine Collin Smelser and executive pastry chef David Laufer. “We want to make a statement with this restaurant,” says Lipetzky, who oversees the food program of the entire hotel. “We wanted to be a place where we would come to enjoy ourselves – a cool place with a good vibe.” Creating a place that the chefs would visit would in turn create a hangout for gourmets and gastronomes. “That’s what we wanted to be, a happening spot with good music playing in the background and an equal emphasis on cocktails, desserts and savory foods,” Smelser adds. The Preston highlights a small-plate dining experience, with dishes portioned and priced to encourage guests to order multiple plates to share. The menu is filled with a variety of familiar and unfamiliar
items, everything from charred octopus with brown-butter gnocchi to chicken-liver mousse with homemade apple butter. Ingredients aren’t tied to a specific cuisine; the warm baby kale salad, for example, incorporates Italian taleggio cheese with a Japanese-style miso vinaigrette. “It’s pairing things you recognize with different things you wouldn’t expect or think about doing,” Smelser says. “The menu is food I want to eat. If I go out and I see someone has a chicken-liver mousse or something along those lines, I’m like, ‘Yeah, I want it!’ It’s not always things you see everywhere, but it’s something that I like to eat and enjoy.” Don’t overlook the desserts either, as Laufer’s creations go beyond the ordinary by combining familiar flavors in new and exciting ways. His chocolate melt, for instance, plays on the childhood staples of peanut butter and jelly: a salted-peanut gelato with peanut brittle and fresh berries is encapsulated in a 62-percent Swiss couverture chocolate sphere that has a beautiful sheen and a novel snap when broken. Tableside, hot, salted caramel is poured over the sphere, causing the dessert to “blossom” like a flower, revealing the deliciousness inside. “I’m trying to make an experience, something that’s interactive with the guests and gets additional senses in your mind than just from eating,” Laufer says. To stand up to the recherché dishes and lavish desserts, Joshua Johnson and Sasha Alms, the duo known as “Cocktail Collective,” developed and run the drink program, creating an array of cocktails based on twists on beloved classics and new inventions. “The one that I’m really proud of is one that Sasha created, The Mayfair,” Johnson says of a libation that features gin, lemon, egg white and hibiscus liqueur. “Sasha came up with it one day; I tried it, and I was flabbergasted. The presentation is just beautiful: It has a nice frothy head from the egg white, and then we garnish it with a couple of dashes of Peychaud’s bitters and make a nice design.” With an equal focus on savory food, drinks and desserts, The Preston has ensured a something-for-everyone experience for its guests, in an environment its namesake would be proud to patronize.
