A

lthough the COVID-19 crisis has affected people across the globe, not all communities have been impacted equally. Individuals and families in uncertain housing situations, due to factors such as income loss or abusive relationships, are facing increased difficulty in this time of stay-at-home ordinances and increased layoffs. When the pandemic struck, the Missouri chapter of Covenant House – an organization supporting homeless and at-risk youth – immediately noticed an increase in calls to their shelter, especially for those needing longer-term placement. Predicting the difficulties the pandemic would create for the unhoused population in the metro area, the nonprofit reached out to the Wells Fargo Foundation. “We took stock in what we were doing across the country [and] how we were using our dollars and our people to solve issues,” says Vianey Beltran, VP of community relations at Wells Fargo. “Then, COVID-19 hit.” The Wells Fargo Foundation is one of the largest corporate foundations in the U.S. and works to accelerate economic opportunity, advocacy and success in low-income communities with pillars that focus on housing affordability, small business growth and financial health. “We saw people were losing their jobs and were unable to pay mortgages,” Beltran says. “I wanted to make sure we helped a diverse mix, to ensure we were covering and supporting all of our demographics.” While working with Covenant House and the foundation’s nonprofit sector, Wells Fargo was able to identify two other organizations supporting

similar housing challenges. The additional nonprofits included St. Patrick Center, which provides opportunities for self-sufficiency to those who are homeless or at risk of becoming homeless, and Almost Home, which is an organization working with young mothers to create a better future for themselves and their children. The Wells Fargo Foundation has donated $250,000 in total to the three organizations. hroughout the COVID-19 pandemic, while people, organizations and industries have had to adapt to survive, The Little Bit Foundation, a local nonprofit organization, has found a way to foster hope through impactful initiatives. Enter Feeding Hope, a new program that launched as a way to use Little Bit’s valuable resources to better benefit the community through these unprecedented times. The initiative has uncovered ways to ensure families within its school districts have ongoing access to food throughout the pandemic. “We have an army of people around us helping our kids,” CEO Rose Hanley says. “We create programs as we see the need and gaps in [community] services. With Feeding Hope, we were immediately and almost instinctively aware that there would be families who couldn’t get to [ food] distribution sites – families who can’t get to

pantries or school locations. We decided to create a direct distribution to the most vulnerable families.” By assessing the needs of local families, Little Bit can implement a strategy that is best suited for each client. Some families may have allergies, so the organization completes grocery runs that address unique dietary needs. Other families are able to acquire limited provisions on their own, so the nonprofit supplies pantry staples that it has received through donations. “One family we’ve heard of is a grandma who is in her early 90s, taking care of her six grandchildren,” Hanley says. “[For] another family, [the] mom was at the hospital with her son, who had COVID-19; her other kids were at home, old enough to stay home and watch their brothers but not of driving age. [For] another family, the

mom has cancer and can’t put herself in harm’s way to go out in public. These are the types of families we identify.” The Feeding Hope program aligns with the organization’s main mission to uplift impoverished children through education. The organization partners with schools to identify and aid children through integrated deliveries of essential needs. By providing coats, proper-fitting shoes and clothing, glasses and more, Little Bit helps children to focus on their personal growth and to improve their self-esteem. “One of the beauties of this [initiative] is, it’s not only stuff,” Hanley says of the true impact of Little Bit’s deliveries. “It’s caring. s a past chair of the St. Louis Holocaust Museum & Learning Center in Creve Coeur, Myrna Meyer – a dedicated volunteer of more than 25 years – is proud that the museum she values so highly has been listed by FamilyLivingToday.com as one of the top 25 destinations for visitors to the metro area. The museum – one of only 22 Holocaust museums in the U.S., which attracts visitors from 48 states and six other countries – recently won a prestigious National Endowment for the Humanities challenge grant of $750,000. Although the HMLC has temporarily closed for expansion, Meyer states: “Holocaust museums are special places that offer an unparalleled opportunity to use the unique history and lessons of the Holocaust to examine what it means to be hopeful in the face of a catastrophe and how we can all come together in compassionate ways today. HMLC has had great success over the last 25 years, and we now need more space to welcome visitors and expand the work we do to meet expectations of the 21st-century museum visitor. The expansion calls for tripling of the space, more modern technology and a renewed focus on the stories of those who lived during the Holocaust.” Meyer met her husband, Jay Meyer, on her first day of work as a recreational therapist at the former Jewish Hospital of St. Louis (which merged with Barnes Hospital in 1996 to form Barnes-Jewish Hospital in St. Louis’ Central West End neighborhood). The couple has now been married 58 years and has two children and four grandchildren. A 2005 Woman of Achievement, Meyer carries her love of family into her community volunteerism, noting: “One of my most enriching volunteer roles throughout the years has been mentoring younger potential leaders.” In 1972, in fact, she received the Jewish Federation of St. Louis’ David N. and Roselin Grosberg Young Leadership Award. Through the years, she has served as secretary of the Jewish Federation Board, president of Women’s Division of Jewish Federation, and allocations committee member of the United Way. Meyer credits her parents for setting the stage for her love of volunteerism, each of them having served as president of the St. Louis chapter of the National Home for Jewish Children. She began volunteering in high school by collecting money door to door for the Jewish Federation of St. Louis. In 1962, she was “a Red Cross lady at a local hospital” and says she recently donated her gray uniform with the badge to the Jewish Community Archives. Meyer says one of her most gratifying acts of volunteerism was helping with the resettlement of almost 2,000 Russian Jewish immigrants here in 1992: “It was a time when they were fleeing their homeland because of blatant anti-Semitism. I was able to greet some of the new arrivals at the airport, help furnish their apartments, and most importantly, visit and welcome them in their new surroundings. More times than not, we became friends, sharing meals and recipes at each other’s homes.” After 25 years, Meyer remains a dedicated fundraiser and advisor for the HMLC. “We are fortunate to be able to educate so many young people and open their eyes to this tragic piece of history,” she says. “Sometimes hearing from someone who lived through this time or a descendant of someone who passed on their stories helps children really feel the events of the Holocaust. This way, they are able to relate and put in perspective some of the issues that they face today.”

he COVID-19 pandemic has changed our lives in many ways. The way we work, gather and think about ourselves and others – and the way we receive medical care – will never again be the same. For several weeks, following the guidance of the American Academy of Pediatrics, the American Academy of Family Medicine and the Centers for Disease Control and Prevention, physicians provided minimal routine preventive medical care, well checkups and immunizations. As we resume essential preventive care, you will likely notice that changes made in physicians’ offices during the pandemic are here to stay. Here are some changes you may see when you return for routine well-child care: Everyone will be screened for fever or symptoms immediately, often before entering a building. Everyone will be masked. You should always

bring a mask for yourself and your children over 2 years old. Appointments should be scheduled in advance to allow for the separation of well and sick children. Scheduling for preventive care visits with immunizations and/or developmental screenings should be prioritized: (1) newborns and young children up to 5 years old, (2) children from 9 to 11 years old due for the HPV vaccine, (3) adolescents requiring vaccines or physicals to resume school or enter college or the military and (4) children with chronic health issues that need to be monitored during well checkups. Newborns should be seen in the office within 24 to 48 hours of going home in accordance with AAP guidelines, due to an increase in requests for early hospital discharge of the mother and the baby. Waiting room chairs will be separated for social distancing. Patients will be scheduled so there are few, if any times, when two families are in the reception area at the same time. Some offices

are asking patients to wait in cars. Payments should be handled virtually when possible via a patient portal or the phone. There may be a barrier between reception and patients. Toys will not be available in the waiting room. The number of parents or caretakers allowed with a child may be limited. Although many things have changed, the important thing to remember is that preventive care, screenings and immunizations are essential and that the safety of you and your children has always been the primary concern of your physician and the office staff.

Senior living facilities in the metro area find creative ways to protect and encourage residents amid the pandemic.

W

hen Rudi Heider contracted COVID-19 at age 106, he doubted he would survive. But on April 29, he celebrated his recovery on his 107th birthday, making him one of the oldest people in the country to beat the coronavirus. According to a press release from Friendship Village Chesterfield, the senior living community where Heider resides, staff there organized a birthday party with balloons, cards, his favorite pie (lemon meringue) and his family. Through his apartment window, Heider saw and visited with his son and granddaughter for the first time since January. Friendship Village and other senior facilities have been in the spotlight lately for how they’re working to protect a vulnerable population from the rampant virus. Novisitation policies have upset residents and families, but staff are finding innovative and safe ways to allow familial interaction. Candice Brown, vice president and administrator of Barnes-Jewish Extended Care in Clayton, says daily operation requires “a delicate balance” of upholding strict safety precautions while trying to provide a sense Barnes-Jewish Extended Care of community and normalcy. Staff have been regularly scheduling Skype video calls and outdoor courtyard visits between residents and their families to help maintain those lines of communication. “We are blessed to have a courtyard here on our properties where it’s actually fenced in, so we’ve taken advantage of that and used that as an opportunity to have more in-person visits,” Brown says. During these visits, masks are worn and family members stand behind the fence to greet their loved ones on the other side from 6 feet away. “As with anybody, sometimes you need some extra encouraging, and sometimes that comes best from families,” Brown says, “especially when we have folks that are here for rehab, and we’re trying to encourage them to get better.” Courtyard visits proved particularly significant for residents celebrating Mother’s Day. Brown says many gifts were exchanged and happy tears flowed that day, and she expects a similar outcome on Father’s Day. “One of our long-term care patients – and she’s been here for a while – hadn’t seen her son in a long time, and when we took her outside to see him …

she just yelled his name,” Brown recalls. “She was so happy to see him, he was so happy to see her, and it was just one of the most joyous yells I’ve ever heard.” The day before Mother’s Day, residents at Dougherty Ferry Assisted Living & Memory Care peeked out their windows to watch a parade of festive cars meander through. Family members waved from their cars or from the sidewalk. Messages like “I love you” and “We miss you” were scrawled on bright-colored poster boards or on car windows. At Cedarhurst Senior Living in Des Peres and St. Charles, residents are serenaded by local musicians hired to perform “courtyard concerts.” Like the courtyard visits at Barnes-Jewish Extended Care, these concerts require social distancing but allow some face time that doesn’t involve a screen. Courtyard concerts are a widespread effort being organized at Cedarhurst communities in multiple states. “Finding joy in everything we do is one of our goals,” Joshua Stevens, Cedarhurst’s president, said in a press release. “Hosting live music lifts spirits and can also help our talented local musicians. All genres are welcome, whether music from our residents’ youth or songs that get their toes tapping; we hope this will channel the power of music for good.” Before the days of social distancing, Heider’s granddaughter would visit him and sing “You Are My Sunshine” before knocking on his door. Heider says he’s grateful to have survived the coronavirus and to see his family again, but he still misses being with other people. He calls his granddaughter his “sunshine,” and caregivers hope it won’t be long before they can let his “light” in again. Francis community services is to create opportunities, build resiliency and advocate for justice in impoverished areas in and around st. louis. Founded in 2011, st. Francis community services offers free legal representation for people in poverty through family law, immigration law, and housing justice. the organization also provides bilingual services to immigrants, including mental health counseling, youth programming, tutoring and case management. “[We] help families overcome poverty and become self-sufficient,” says executive director Karen Wallensak. the organization works in the same region as the archdiocese of st. louis

throughout st. louis city, county and nine surrounding counties. “We reach out and serve people of all faiths in [those] areas,” Wallensak adds. currently, the covid-19 crisis has caused st. Francis community services to pivot and offer their services online and through video chat. the organization is supplying families that would not normally have access to the necessary technology with the equipment they need for virtual therapy or tutoring. “our staff has been really creative in finding a way to work with our clients,” Wallensak says. “our art and music instructors have had sessions with children via Zoom. the children have created amazing art in this time.”

SeedS of Hope Virtual fundraiSer When the stay-at-home order hit in March, St. Francis Community Service faced a difficult choice regarding their summer fundraiser. “We were concerned about the wellbeing of our supporters [but] didn’t want to postpone or cancel – this was too important to our agency,” Wallensak explains. “The only way to have some certainty was to have it online. We want our guests to have fun but not put themselves at risk doing that, and still [be able to] support a great cause.” The virtual Seeds of Hope fundraiser will be held on Saturday, June 20, and the platform link will be live the Friday before. The program begins at 6 p.m. after a 5 p.m. live stream of a virtual Mass and will include live music and the presentation of the Instrument of Peace Award to Archbishop Robert Carlson. Raffle tickets for various travel packages, all redeemable within the next two years, are available for purchase online prior to the event. The goal for most people I meet who are 55 and older, is to stay active and independent and to continue living in their own homes as long as possible. Participating in a regular exercise increases your chances of achieving that goal, along with improving your quality of life. Have you noticed you’re slowing down due to nagging aches and pains? Or are you having more trouble keeping up with the things you did easily a few years ago? Have you been told by friends and family, or even your physician that it’s just a “normal” part of aging? Instead of having a good plan in place for combating the changes that happen with aging, are you going to play the “wait and see” game? Hoping things will get better, or at the very least that they don’t get worse? Some of you reading this may think there isn’t anything “wrong” with your physical activity and fitness level. You haven’t gotten to the point of noticing any weakness or declines yet. You’re still able to carry on with your daily activities without too much difficulty or extra effort. You go to the doctor and overall your health is good, you have no major issues or concerns. Even if that’s the case, it may surprise you to find out that you are already on a downhill slope of decline. We reach our peak brain mass, bone density and muscle mass in our 20’s and 30’s! Our job now is to maximize each of these areas as much as possible to delay the decline and to slow the progression of aging. The good news is regular exercise can help you not only maintain, but also improve all of these areas and more. And it doesn’t matter if you’re in your 50s, 60’s, 70’s or beyond or if you’ve never exercised before. A newer concept, which has gained popularity is Exercise is Medicine® (EIM). It’s a global health initiative created by the American College of Sports Medicine (ACSM). It encourages physicians and other health care providers to include physical

activity and exercise programs when designing treatment plans. One of my favorite quotes to come out of this mindset is “If we had a pill that contained all the benefits of exercise, it would be the most widely prescribed drug in the world.” - Dr. Ronald M. Davis. While I agree 100% with this mindset and there is an endless amount of research to support this idea, I find that many people 55+ think this concept only applies to their younger counterparts. Many adults do not believe that exercise will have the same benefits for them, but they are wrong. Exercise is even more important for you as you age. As you get older, you will experience certain changes which are unavoidable. Many of these changes can be delayed or lessened with proper activity. HOME OFFICE HELP

B

ecause of the COVID-19 pandemic, dire necessity may have recently forced many working-from-home area residents to convert their previously unused spare spaces into functional home offices. For such understandably frazzled folks, Diane Mantovani, the owner and principal of Ladue’s Savvy Design Group, sketches the background and potential benefits of her agency’s virtual design services for home offices in the era of the novel coronavirus. “The virtual design process begins with the client completing a questionnaire we provide,” Mantovani says. “This gives us a picture of the function of the space, as well as the client’s likes and dislikes. “We follow that up with a virtual Zoom meeting so we can chat with the client and get more detail. We’ll ask for photos of the room, and we’ll provide a measuring guide so they can give

us all the dimensions. “Once we have all the information required, we put together a custom design plan tailored to the client’s home and needs, including a furniture layout-and-design board.” Happily enough, Mantovani shares that the coronaviral challenges she and her team have faced in providing virtual services have been minimal. “It’s been a relatively simple endeavor to add ‘e-design,’” she says. “During the mandated stay-at-home order, we had struggles with getting product delivered. That was due to the delivery company and manufacturers being shut down. But that has slowly become much simpler, and we’ve moved back into a nice flow with sourcing, ordering and delivery.” Not surprisingly, the government-mandated stay-at-home order issued earlier in the year inspired such services, relates Mantovani, who otherwise reflects on the staying power of those

services beyond the novel coronavirus. “The entire reason I made the decision to offer e-design was the shutdown,” she says. “I knew other designers in town had offered it in the past, but for the Savvy team, personal connection and the relationship with our clients have always set us apart. We appreciate and value the interaction with our clients and vendors. “However, with the current environment, that interaction was forbidden, and I had requests for home office design. This was the solution that made sense. “I think everyone has their own personal feelings about getting back to previous ‘normal’ activities. E-design will provide everyone the opportunity to have a Savvy Design. I think people will continue to use this option.”

hat began as a bright pink, outdated attic bathroom without a shower has now been transformed into a modern, chic bathroom perfect for a metro area high schooler. Designer Janelle Helms of Karr Bick Kitchen & Bath led this bathroom renovation in a Webster Groves home. Helms says the clients wanted the space to be functional and beautiful for their daughter but also appropriate for guests or anyone who might use it after she goes to college. “Before, the bathroom was barely usable, with just a pedestal sink, tiny mirror, toilet and tub,” Helms says. “Now, she has over 9 feet of vanity space and a large, luxurious shower with a bench.”

The attic’s angles made the project more challenging than the average bathroom remodel, but Helms says her team embraced the unconventional space to create something truly special. Custom cabinetry was installed to fit the angles exactly, and a bench was added to the lowest point of the shower, maximizing every bit of space. “We also used the angles to our benefit when designing the custom mirror to craft a wall of interest,” Helms adds. “The daughter is a dancer, so she loved the idea of having a makeup area and a custom counter-to-ceiling mirror.” Helms says the daughter was very involved in choosing the floor plan and selecting materials,

and she “had a great sense of style.” To achieve the desired “old Hollywood glam” look, the Karr Bick team mixed gold and polished nickel finishes throughout the bathroom and lined the shower with floor-to-ceiling polished black marble. “The black marble is stunning with the polished nickel plumbing against it,” Helms says. “The polished nickel shower head and faucets were one of the clients’ favorite details. I think the black wainscot around the perimeter of the room creates a dramatic contrast between the walls and floor. We also added a chandelier above the makeup area for just the right amount of glitz.” Helms advises those dealing with a challenging space to take their time while considering the obstacles and possibilities, and plan the details accordingly. “Visualize how you want the space to function so you can get the most out of the renovation,” she says.

hen Christa Holmes began sharing glimpses of her family’s life on Instagram, she had no idea that it would evolve into her metro areabased business, Why and Whale – a modern monthly subscription box of carefully curated and quality kids’ goods. “I was doing a lot of freelance photography and graphic design and sharing photos of my kids on Instagram,” says Holmes, who attended the University of Illinois to study fine art. “We often got products in return for posts and photos – this was kind of before Instagram had ‘influencers.’ I would just share about all the products we loved. I really had a passion for kids’ products and believed in a lot of the brands, what they stood for and how they helped my kids grow.” Holmes said after growing a following on Instagram, she realized she wanted to stop only promoting other brands and make something of her own. “I decided to put all of those things that we already love into a box, and that’s how the subscription box was born,” Holmes says. “I like to think that the best businesses are born out of solving a problem, and I felt like there wasn’t anything out there [for kids] that highlighted the quality. My focus has always been to choose products you don’t want to throw away, and instead treasure them forever.” Why and Whale is now nearing four years old – an anniversary close to Holmes’ heart. “[My Instagram account] started with my daughter when she was about 1 year old, but my business was launched officially two weeks before my third child was born,” Holmes says. “I actually started the business out of desperation. I couldn’t do freelancing jobs with three kids at home. It was kind of a thing where I was like, ‘OK, I’m clicking the button, I’m opening preorders, maybe no one will buy it, but I have to try.’ “I didn’t start [Why and Whale] knowing it would work,” Holmes continues. “I started it like it

might fail. Everything happened so fast after that, but it all happened the way it was meant to be. It just felt like fate.” Why and Whale started with the classic surprise box, which contains three to six highquality heirloom products of varying brands and is modified by gender and for children ages 3 to 6 years old. “You can always look forward to brand-new and fun, valuable items each month,” Holmes says. “We feature a growing list of cool finds and popular brands. Most are run by moms like you and ethically made in the U.S.” Why and Whale brands include the popular cuddle+kind, Maileg, Minikane, Plan Toys, OOLY, Meri Meri and Wobbel (just to name a few). Why and Whale also has two brand-based boxes – the Maileg Surprise subscription, which is based on little plush mice, and the Holztiger Surprise subscription, which delivers two wooden creatures per month. “[Holztiger is] actually our best-selling subscription right now,” Holmes says. “You can easily grow a collection of wooden toys. It’s a simple way for people to get started with switching to low-tech toys.” Much like the Instagram posts that started it all, the boxes for subscribers found a growing fan base. “I have a really great community of fans that believe in the value of heirloom products and support the makers,” Holmes says. “Whenever they get their boxes, they tag all of the other brands we carry. It’s a really good community.” If customers aren’t interested in the subscription service, Why and Whale also implemented a retail side in 2018. The biggest misconception I get from clients is that small spaces need small design elements,” Kristen Stensby says. “For example, I pull clients away from 4-by-4-inch or even 12-by-12-inch tiles, and over toward larger format pieces in a small space like a bathroom. Look at options, like 18-by-18-inch or 24-by-24-inch porcelain floor tile, and pay close attention to grout placements. Straight sets with cleaner lines [and] less grout will make the space look larger.

[Japanese maples.] One of the great things about Japanese maples is that there are so many ways to use them in a landscape,” Jim Graeler says. “You have upright varieties as well as lower, weeping [assortments]. Japanese maples can be a statement plant. We travel to Oregon two to three times a year to see our specialty plant material. When we design one into a job, it’s almost been hand-picked to belong in that client’s yard.

fter a late winter and spring blackened by the COVID-19 pandemic Barb Flunker’s Wild & Crazy may well come as a balm, a tonic, a restorative worthy of the legendary alchemical elixir vitae. The 48- by 72-inch oil on canvas pictured here, which Flunker painted last year, should, in short, make the average viewer conclude that the coming season might just offer hope after all. “My entire life, I have enjoyed being by bodies of water, streams, rivers, oceans,” the Ladue artist notes. “The vastness, the movement and the sounds of the water fill me with enormous amounts of energy and joy. “While absorbing the views and sounds over time, I realized that the waters may be a metaphor for life: No matter how strong the storm, calm waves always follow. With this internalized energy and vision, and the paint colors chosen reflecting the vibrancy within, my hands spread the thick textural oils onto the canvas. This process takes over until the work is complete.” Flunker otherwise expresses the hope that her “interpretation of the seas” communicates “vibrancy and joy,” adding that Wild & Crazy “hangs well horizontally and vertically.” Her invocation of natural waterways certainly seems apropos in light of the present painting’s jubilant fluidity. The kineticism of its oils exudes a nearly tactile presence; the viewer can almost feel its bold yellow seething and surging onto its equally bold orange. At the same time, Wild & Crazy‘s (no pun intended) streamers of blue and green convey an impression of greater depth, coursing this way and that in whiplash fashion – zigzags of magnificence.

Flunker’s work, for some interlocutors, may bring to mind the so-called action painting of Jackson Pollock, the tormented mid-20th-century American abstract expressionist, albeit happily sans Pollock’s almost claustrophobic presentation. Then again, by this time,

invocations of Pollock mean little if anything. Perhaps only 20thcentury American pop nonesuch Andy Warhol has been dragooned into more visual art-related discourses and dialogues – and the “energy and joy” of Flunker’s Wild & Crazy more than ably stand on their own.

The book features text in a child-friendly font, strengthening the innocence of the narrator. She balances shades and tones masterfully, celebrating the vibrant rainbow hues of a tropical rainforest, the rich, dark depths of an undersea

world, the African savannah’s arid calm and the bright, breezy life along a shoreline. Most engagingly, her unique portrayal of the human characters in this beautifully diverse family can be readily recognized in their animal counterparts, potentially prompting a seek-andfind game on each spread. Life With My Family should provide creative opportunities to explore science, math and art for engaging children learning from home. Children might want to compare their daily experiences with those in the story, providing inspiration for developing, acting out and telling their own stories.

Amid the COVID-19 quarantine, some of the area’s 2020 James Beard Awards finalists had more than a dash of extra time for food and family – and they made the most of it. “I’ve cooked more meals at home in the last six weeks than in the last six years, which has been a really nice experience to have with my family,” says Michael Gallina, executive chef and co-owner, along with his wife, Tara, of the acclaimed Vicia, serving up vegetable-forward cuisine in St. Louis’ Central West End neighborhood. “My wife, Tara, and I take turns coming up with menus and ultimately try to find things that we can enjoy alongside our 20-month-old daughter, Olivia.” On rotation at the Gallina house are some seasoned favorites: beef Bolognese and pasta, taco night, and chicken thighs and vegetables cooked on the grill. “We’ve also had fun making fresh pasta and pizza dough – things we don’t typically have time to do on our days off,” says Gallina, who swears by several long-lasting grocery store must-haves, including “a good pasta sauce you can enhance, local brown rice and chicken thighs in the freezer.” The award-winning chef even has been cooking restaurant specialties for his family at home. “The vegetable fried rice from Vicia is a favorite we’ve made at home and is super easy to make,” he says.

Gai Choy Lona Luo – chef and owner of Lona’s Lil Eats, offering fresh Asian cuisine in St. Louis’ Fox Park neighborhood – also stayed busy during the quarantine, splitting her time between cooking for her family and preparing food for first responders. At home, Luo’s go-to meal is stir-fry veggies with rice or quinoa. At this time of year, she says she loves finding and picking wild veggies and roots to spice her dishes, to go along with the staples she always has on hand from the grocery store, including gai choy (mustard greens) and jasmine rice. Because fresh food is the key to every quality meal, Luo says that “if it’s fresh, I’ll buy it and cook it.” Loryn Nalic – chef at Balkan Treat Box, the Balkan-inspired restaurant she owns with her husband, Edo, in Webster Groves – also has been cooking a range of fresh dishes at home. “We’ve been eating a lot of veggie sandwiches, and I’ve also made a lot of sweet-and-spicy stir-fry noodles,” Nalic says, adding that her restaurant’s leftover pides (wood-fired Turkish flatbread with a variety of fresh veggie and meat toppings) also have been on the stay-at-home menu. Among must-haves in the Nalic pantry are chile sauce, ajvar (a roasted red pepper-eggplant spread), yogurt and her faves – chocolate milk and dark chocolate. Nalic says preparing food at home during quarantine is what you make of it. “The thing about cooking at home during this time is looking at what you have and jazzing it up and making it better,” she says. “You look at a box of mac and cheese and think, ‘Ugh, I have to eat boxed mac and cheese,’ but if you throw in some really good fresh cheddar, peas, broccoli – and chicken, if you’re a meat eater – you can make it a meal.” The main factor in home cooking is not overthinking it, Gallina says: “When cooking staple items like sauces, ground meat and rice, make more than NALIC’S PANTRY STAPLE you need for one meal, as it will open the door to lots of other great meals the next day that w ill require less work.” So bon appétit!

White Wine Cake nonstick cooking spray 3¼ cups cake flour, sifted 1 Tbsp + ½ tsp baking powder ¾ tsp fine sea salt 2 sticks unsalted butter, softened 1½ cups granulated sugar 1½ cups sweet white wine b erries and floral decorations of your choosing

Goat Cheese Frosting 1. In the work bowl of a stand mixer fitted with paddle attachment, beat goat cheese and butter together until smooth. 2. With the mixer turned on low, gradually add 3 cups of powdered sugar. If frosting seems too loose, add extra cup of powdered sugar. 3. Add the milk and vanilla, and beat until they are incorporated and frosting is fluffy.

Goat Cheese Frosting 5 oz soft goat cheese 1 stick unsalted butter 3-4 cups powdered sugar 1 Tbsp whole milk ½ tsp vanilla

White Wine Cake 1. Preheat oven to 350 degrees. Spray three 6-inch pans with nonstick cooking spray, and dust with flour. Set aside.

2. Whisk together flour, baking powder and salt in medium bowl. Set aside. 3. In work bowl of a stand mixer fitted with paddle attachment, beat butter on medium speed until smooth. Add sugar and beat for 5 more minutes until light and fluffy. Stop occasionally to scrape sides of bowl. 4. Turn mixture on low, and gradually add flour mixture in three batches, alternating with wine. Then, turn up speed for 30 seconds to make sure everything is incorporated well. 5. Evenly divide batter among prepared pans. Bake for 35 minutes or until a toothpick inserted in center comes out clean. Let cakes cool on wire racks for about 15 minutes until removing from pans. 6. For cake assembly, level off tops of cakes with serrated knife. Place one cake layer on each plate. Top cake layer with ¹/³ cup of frosting, and spread to edges of cake. Repeat with next two layers. Cover sides with light layer of frosting, and scrape edges with bench scraper or offset spatula. Remove or add as much frosting as you like. Top with berries and floral decoration. Place in the fridge until ready to serve.
