A HIDDEN HAZARD

Outdoor fun requires annual reminders about the sun, pool safety, insects and temperatures, to name a few.

Food safety conversations are also an integral part of summer mealtimes as we dine out, cook out and let food sit out.

One hidden danger when grilling is the wire bristle brush used to clean the grill. In the past decade, accidental foreign body ingestions from grilled food have increased. Reports reveal more than 100 such injury cases per year led to hospitalizations. Wire bristles on brushes used to clean barbecue grills can become dislodged and remain on the cooking

surface after cleaning and later get imbedded in the meats, buns, vegetables and other foods prepared on the grill.

Although most small bristle hairs pass through the GI tract uneventfully, they can sometimes get lodged in bowel tissue and cause multiple serious complications. Historically, I’ve seen presentations with abdominal pain, bowel perforations and fistulas (bad connections) between the bowel and other organs leading to surgeries and lengthy hospital stays.

It is often difficult to diagnose such ingestions, which can lead to delays in care. Until these concerns lead to improved product safety features, and thus lower risks, it’s important to educate grillers about this hazard. It’s equally important for the medical community to be aware and treat patients accordingly.

This summer you can be more responsible while grilling with the following measures:

 If possible, switch your wire bristle brush to a safer option.

 Inspect your brush for loose bristles.

 After cleaning, check the cooking space for residual small bristles.

 Cook carefully and inspect the food for any bristles.

 If a loved one shows signs of pain in their mouth, throat or continued belly aches after grilling, call your doctor promptly.

Right now, an unprecedented amount of federal funding is available for sustainability efforts. St. Louis is on the fast track to take advantage of this green opportunity. In spring 2024, Bloomberg Philanthropies selected St. Louis to join its Bloomberg American Sustainable Cities.

It’s a three-year initiative to develop local solutions for constructing low-carbon, resilient and economically prosperous communities by maximizing federal funding. The $200 million initiative spans 24 additional cities across the U.S., including Kansas City, Missouri.

According to the St. Louis Development Corporation, St. Louis was chosen because of its previous commitment to promoting sustainability. “Despite facing significant vulnerabilities, the city has persisted in advancing community prosperity and economic development amid the climate crisis,” SLDC said in a release.

Although St. Louis has made strides toward sustainability, many city offices need more funds and resources to make an impact. By joining the initiative, St. Louis gains support in the form of a dedicated Innovation Team (i-team). The i-team will provide expertise in data analysis, insight development, human-centered design, systems thinking and project management. “Innovation teams are uniquely positioned to make big dents in tough problems,” Bloomberg Philanthropies said in a statement. “They are human-centered, tackling challenges by enlisting

residents to help define problems and test solutions. … They are versatile, shouldering challenges across a broad array of city issues and bringing people together across departments to take them on.”

St. Louis will also benefit from multiyear, in-depth policy and technical support, working in partnership with community-based organizations to catalyze public, private and philanthropic investments.

This initiative isn’t Bloomberg Philanthropies’ first. Its previous citycentric project, the American Cities Climate Challenge, is projected to decrease carbon emissions by 74 million metric tons through 2030. Overall, Bloomberg American Sustainable Cities aims to confront the ever-merging crises of climate change and racial wealth inequality. “Tackling climate change and building stronger and more equitable cities go hand in hand,” said Michael R. Bloomberg, founder of Bloomberg LP and Bloomberg Philanthropies, in a release. “Mayors have bold ideas for how to take on both challenges at once, and we’re looking forward to expanding our support for them.”

For St. Louis, it’s exciting to be on the road to change. Per the city’s official X account: “Our city is a leader in driving the fight against global warming, and we are so thrilled to expand our sustainability initiatives with the resources and partnerships of this program.”

Warm Up for Olympic Fun

The 2024 Summer Olympic Games open soon, and Ready Readers recommends a book for young sports enthusiasts before the games begin. “Ready, Set, Go! Sports of All Sorts,” by author Celeste Cortright and illustrator Christiane Engel, introduces children to eight different sports, many of which are featured in the Summer Olympic Games.

Readers will be drawn in first by the energetic, happy children from around the world practicing their skills on the cover. Illustrator Engle employs bright colors to bring the children to life and celebrates traditional and paralympic athletes alike. It’s worth noting that the players are shown in a variety of international locations by dressing athletes in cultural apparel, perfectly aligned for a pre-Olympics read. Author Cortright supplies rhyming four-line stanzas for each sport presented, underscoring the enthusiasm of the players, and providing vocabulary and details not contained in the pictures.

next with children practicing on the rings, balance beam and tumbling mats. Saint Louis University is revolutionizing our understanding of the role computers play in our lives.

In April, the esteemed institution announced the launch of its new state-of-the-art computer lab at the Richard A. Chaifetz School of Business to analyze how people interact with computers. Dubbed The Human-Computer Interaction Lab, research at the facility will be used to enhance user experiences across the internet.

“Eye tracking offers a window into how individuals read and scan information – such as a picture, text or movie – that is displayed to them,” says SLU’s operations department chair Palash Bera, Ph.D. “By relating eye movement behavior with decision-making data, one can obtain a comprehensive picture of the decisionmaking process. Without such technology, it is difficult to identify the cognitive processes of humans making decisions.”

HCI Lab uses computers equipped with specialized eye-tracking hardware, software and virtual reality headsets. This equipment can process a person’s viewing patterns almost

instantaneously, generating vital data that can be used by businesses to better understand how people interact with their digital products. The lab is funded in part through a grant from Purina, which helped launch HCI.

“One example that may be of interest to businesses would be to understand how their customers view and engage with their website,” says Bidisha Chakrabarty, Ph.D., associate dean of research and the Edward Jones Endowed Professor of Finance. “This includes how long their customers spend on their website, what items on the site they focus on, how they make their purchasing decisions and more.”

Yet while the technology presents plenty of benefits for industry use, Dr. Bera says the researchers at HCI plan to conduct multiple eye-tracking studies for academic use.

“While research in tracking eye movements is common in psychology and physiology, there is not much research in business areas such as finance, accounting, information technology and economics,” Dr. Bera says. “For example, a research study can focus on understanding how financial analysts perform investment decisions using investment apps such as Robinhood.”

To some, this kind of “tracking” research may seem a bit scary, conjuring thoughts of dystopian societies from fiction. Dr. Bera points out that there aren’t any privacy concerns with eye tracking, however, because data is analyzed collectively and anonymously.

“Unlike data collection techniques such as surveys or focus groups, eye tracking allows researchers to observe natural eye behavior without directly asking participants,” Dr. Bera says.

Looking ahead, Dr. Bera says the findings produced by HCI Lab will only become more prominent as artificial intelligence becomes more commonplace in society. And, as AI continues to transform businesses and lives, it’s more important than ever for us to understand how we use and trust it.

“In this context, eye tracking can help in understanding the process by which humans trust and use AI technologies,” Bera adds.

Tiger Soup Dumplings

Tiger Soup Dumplings has a new, expanded second location in Des Peres. The casual Chinese eatery, specializing in traditional handmade soup dumplings, debuted in April. The menu features steamed or pan-fried soup dumplings, sides, bubble tea, smoothies and a new addition to the brand’s offerings: Cheung fun, or Cantonese-style rice rolls.

The concept comes from Yue Zhai and Victor Lai, who opened the original Fenton location of Tiger Soup Dumplings in 2018. As reported by Feast last year, Zhai moved to St. Louis from Beijing and learned the tricks of the trade from her mother, Ang Yang, and stepfather, Lawrence Chen, at Soup Dumplings STL – St. Louis’ first-ever xiaolongbao shop in University City.

For the uninitiated, dig into the bao to release some hot broth into a spoon, and then enjoy with chili sauce, vinegar or soy sauce. “For those who have never been exposed to this food, this is a game changer for dumplings,” Zhai says. “The soup is in the dumplings, and [it blooms] perfectly in your mouth.”

Zhai, Lai and their staff can be seen preparing the dumplings fresh from scratch daily, and guests can have the supple, savory pouches steamed or pan-fried for a pleasantly crispy edge. The menu features the same four soup dumpling options as the flagship Fenton shop: pork, chicken, beef, and shrimp and cheese. Pair them with popular sides such as garlicky golden broccoli, refreshing cucumber salad, and wontons in spicy chili oil. “As I learned from my family’s restaurants, I incorporated some Americanized flavors into my menu,” Zhai says.

This location of Tiger Soup Dumplings also offers a more traditional dim sum dish: rice noodle rolls, cooked in a specialty steamer imported from China. The rolls come with fillings such as wagyu beef, shrimp, chicken, corn and egg. “Its main ingredient is rice flour, which is spread thinly on a plate, steamed and topped with sweet soy sauce. It tastes interesting, smooth, soft and chewy,” says Zhai, who puts her own twists on the classic dish. “In the future, we will provide fried and avocado-flavored rice rolls.”

To pair with the tasty fare, choose from a selection of boba tea options and fruity beverages like Strawberry Boba Coconut Milk Tea, a Mango Dragon Cloud smoothie, and Tiger Fruit Tea made with pan-seared fruit, jasmine tea and grilled lemon. The bold, balanced flavors across the food and drink menu are all available to enjoy in a comfortable, contemporary setting where Zhai and Lai hope to provide a unique experience for St. Louisans.

“I always tell my staff, the service starts the moment the customer walks in the door. The smell of the restaurant, the position of the sauce bottle, the look in your eyes and your greeting are all factors that make the food more delicious,” Zhai says. “When these details become a perfect closed loop, I think my customers will always stay in my tiger circle.”

MAJOR MILESTONES

It may be the middle of summer, but July also marks the beginning of Union Avenue Opera’s 2024 season, as well as St. Louis Actors’ Studio’s annual LaBute New Theater Festival.

This year, Union Avenue Opera will celebrate its 30th anniversary season. It’s also the 10th anniversary of St. Louis Actors’ Studio’s LaBute New Theater Festival, which is named for well-known playwright, screenwriter and film director Neil LaBute.

UNION AVENUE OPERA

UAO’s season will include Bizet’s perennially popular “Carmen,” a concert version of Verdi’s “Aida,” and Stephen Sondheim’s “Into the Woods.” Performances will run from July 5 to Aug. 24.

Scott Schoonover, founder and artistic director of UAO, says: “Each of the three operas … has something to offer diverse tastes, and all might be considered appealing to new audience members.”

Schoonover notes that “Carmen” always is the most-requested opera in UAO’s audience survey. “I think people love the music and the dramatic, libertyloving, rebellious character of Carmen,” he says. “The show also has kids, a big chorus and a colorful orchestration, all of which make it memorable and popular.”

“‘Aida’ is a show that has traditionally been performed on a much bigger scale and stage than we can offer,” Schoonover says. “We decided to let the story, powerful music and amazing singing stand on their own, rather than deprive our audience of ever hearing this particular opera on our stage.”

The 30th season will close with a production of Sondheim’s “Into the Woods.” Schoonover says: “Sondheim is a personal favorite, as is ‘Into the Woods.’ The story is touching, full of surprises and has several powerful themes that catch you off guard.”

ST. LOUIS ACTORS’ STUDIO

Of SLAS’ LaBute New Theater Festival, founder and artistic director William Roth says: “I so value my 12-year creative relationship with Neil Labute,” a playwright who has courted his share of controversy in recent

years, in part because of his often incendiary works that can be shocking and offensive.. Roth is an ardent supporter of LaBute, however, and says that LaBute “lending his name and talents to foster new works in the theater is just another example of his generosity and commitment to the arts.”

To celebrate the 10th anniversary of Actors’ Studio’s LaBute New Theater Festival, which runs July 12 through 28 at the Gaslight Theater, Roth and LaBute recently published a new book titled “Unlikely Japan and Other Plays: Ten One-Acts from Ten Years at the LaBute New Theater Festival.”

The annual LaBute New Theater Festival features several plays by other playwrights as well as a new contribution each season from LaBute himself. The festival, Roth says, has grown organically: “More and more playwrights hear about us and send in scripts each year. It’s exciting to travel to other cities and meet writers that know of the festival.”

“I love the festival,” he adds. “So many hardworking writers out there, all hoping to have their creations brought to life. I’m fortunate to have a stage for them.”
