EDITOR ‌AT LADUE NEWS, WE CONSIDER SHEDDING A SPOTLIGHT ON the nonprofits that make an impact on the St. Louis region to be one of our primary responsibilities. Each week, we bring you coverage of area fundraising galas and events, which support a plethora of nonprofits. We have always tried to go beyond the photos to bring perspective to these events – highlighting the mission being served and the good each group contributes to the community. With the launch of our new look this fall, we expanded our event coverage with new two-page and full-page layouts, adding new elements to give you, our readers, a more complete view of each event. While most of the feedback we received has been positive, some readers told us that moving the Gatherings & Goodwill section to the back of the magazine seemed to place less emphasis on nonprofit coverage. We listened to those concerns, and starting this week have moved it back to the front. We hope this change reflects our unwavering commitment to supporting the nonprofit community. You’ll find this week’s event coverage starting on page 13. As your community magazine, we strive to continually improve and look forward to hearing your feedback about how we’re doing. To voice your opinion, you can email me at lreyes@laduenews.com.

Webster University has given me a new insight into feeling really special in this community. I was given the Loretto Award for distinguished alumni last year, and I’ve met such fabulous alumni (as a result). The dean of the communication school, Eric Rothenbueler, is a really close friend, and Beth Stroble is someone that I look up to as a mentor. ssistance League St. Louis began with 79 dedicated, visionary women in 1987. Today, the vision of believing in the power of the volunteer to evoke positive change in the world is exemplified in 430 members. Part of a national, nonprofit service organization, this all-volunteer group has touched the lives of more than 43,300 children and adults in the community with 63,000 volunteer hours this year. Six philanthropic programs assist adults and children at school, in crisis situations and in shelters. Sales from the resale shop Fantastic Finds, annual events and generous contributions help support these programs. DESTINATION

BLUE LAGOON

By Amanda Dahl

A must-see in Iceland, the Blue Lagoon formed as a result of green energy harnessed in the countryside through a geothermal power plant. Amid a black lava field, pockets of milky blue water appear, swirling in mists and begging to be seen up close. That blue water does far more than create a magical setting that encourages exploration. It also has been scientifically proven to carry healing properties. No matter the outdoor temperatures of arctic Iceland, the waters built for bathing keep a constant heat that is at once soothing and revitalizing. On-site research laboratories have created a line of skin-treatment products from silica mud masks to frozen algae masks. Between therapeutic products and in-water massages, this outdoor spa oasis truly is a wonder of the world. Recapture its tranquility in the room where you welcome guests and loved ones alike: the formal living room.

Design Speak A Q&A with Stephan Schubert of River City Casino In October, the title of Pastry Chef of the Americas went to Stephan Schubert, the lanky, affable, German-born executive pastry chef at Lemay’s River City Casino & Hotel at a competition in Quito, Ecuador. Just before Thanksgiving, Ladue News shared coffee with the chef at Lewey Nine’s Café in the casino to discuss his next triumph: the construction of its a walk-in/dine-in gingerbread house for the holidays. How far in advance did you and your team start strategizing on this? In the summertime, we start thinking about it, and then in about two months – like August, September – we have our first real meeting, on how we want to execute it, what is going (to be) involved, what we have to order. And for sure, there are other inputs. Facilities has to order the wood because it’s a wood structure, basically. Because people sit in there, it has to be safe. I know they’re starting right now, cutting everything and putting it up. So it’s a long process, but it’s not like we’re meeting every day; it’s like once a month and then, toward the end, every other week.

What time and material do you foresee this involving? The wood structure, it was like $1,000 or so only for wood. Labor hours, I have no idea. That’s sometimes hard to estimate… but that’s almost a weeklong process for them, to cut everything, to put it together, because it’s basically 9 feet wide and 11 feet long. This time, we have a front porch basically on the thing. This year, we’re going a little bit more Germanstyle, like old Swiss houses. So it will be pretty cool-looking. Right now, we are in the process of producing like a thousand gingerbread shingles. And every year, we try to make the shingles a different design. We bake those ahead of time so we can glue them onto the wood structure. And then we’re doing large cupcakes as decorations, and gumdrops. We also have 30 gingerbread men that are basically replicas of the people who work on the house. Each person decorates their own gingerbread man, the vision that he (or she) has for the gingerbread man. What other specifics can you provide? We try to have three days’ time to decorate

it. Basically, we almost work eight hours a day, sometimes longer depending on what shift comes in and who has the time to decorate. We have three, four people working almost eight hours a day to decorate it. We use icing to glue the shingles on – no artificial glue – and then the mortar around the shingles. And of course, you have “hiccups” because you have a vision, and it never works out that way. How does it feel to go from Quito to this endeavor? It’s a different adventure. Ecuador was a really unique experience… from missing the plane, the hotel room got given away – I didn’t have a hotel room – not getting my equipment. This one, I have more people. I have 10 bakers who are supporting me, and I cannot stress enough, it’s their vision. They’re doing it. I’m only the “face” on it and giving them advice, how they have to go. It’s a different animal. It’s a challenge. And it’s a different reward because you see the kids coming up. It’s more for the kids – and sometimes for older people who look like kids!

alking into the Hammer & Hand warehouse and retail space in the Gate District neighborhood, it’s hard to know where to focus your eye. The shop is packed with brightly colored and beautifully restored home furnishings and décor sourced from India and Bali by owners Christopher and Amy Plaisted, offering a full sensory experience steeped in rich, colorful culture and history. Upon my visit, the husband-and-wife team led me through an impromptu guided tour of the space, weaving our way through century-old bright blue teak doors, industrial-style hand-riveted metal light fixtures, salvaged cabinets with new glass display fronts, all manner of reclaimed wood tables, pillows made of vividly colorful vintage batiks and stacks of one-of-a-kind mirrors with distressed wooden frames made from reclaimed vintage Indian door panels. Running your hand along the time-weathered wood of a low-slung desk from the northwest Indian city of Jodhpur, you get a profound sense of its significant history – this beautiful piece of furniture, repurposed as a sturdy modern media console table, already has endured a lifetime and will likely live several more; we simply become part of its story. These are storytelling pieces, as Amy calls them. “They’re super tough, super durable,” she says. For emphasis, Christopher pounds a hand on the reclaimed Balinese farmhouse dining table we’ve gathered around. “You could have a dance party on this table!” he says. It’s this artisan quality and durability that gives the items at Hammer & Hand the opportunity for renewal and repurpose; it’s also how the shop got its name. “The pieces are all handmade with simple tools, with great attention to detail,” Amy says. “They’re LadueNews.com | december 11, 2015

pieces that will last for lifetimes.” The Plaisteds are Orlando, Florida, natives who met in their hometown while Christopher was managing a small company that imported furniture from India. “We basically had a small shop with myself and my boss,” Christopher says. “We built the business up from $350,000 a year to more than $1 million a year.” “Chris’ passion really opened up doors for them,” Amy adds. “He fell in love with it.” Christopher began traveling to India with the owner, learning how to choose pieces and finding the best local connections for finding and refinishing items. After several years and the birth of their second daughter, the couple took a pause to make some big decisions about where their family’s future would lead. They knew their shared passion was centered on the vintage-furniture business and the desire to create and work together. Mightily equipped with Christopher’s existing relationships with exporters and Amy’s keen eye for design, the pair conceptualized Hammer & Hand in 2009, choosing St. Louis, a location far enough away from Orlando that it wouldn’t draw business from Christopher’s former boss. St. Louis offered many advantages: Amy’s father’s family was from here – and the pair had visited many times – there was little competition at the time and space to rent a warehouse was affordable. India and Bali topped the Plaisteds’ list for furniture origin countries based on the relationships Chris had

built there. “Buying overseas can be very risky if you don’t know who to trust,” Amy says. “Quality control is obviously important, and we have good infrastructure set up in India and Bali to handle this part of the process.” Through the years, the couple has developed a deep love and appreciation for the culture and history of both countries. In Hammer & Hand’s early days, the Plaisteds found their niche in online sales, selling directly through their website and through Etsy. This market has been an asset to their business development. “If a designer’s used us once, they’ll come back again and again,” Christopher says. Online sales carried them through the next five years, until they moved into their current space in September 2014. Flooded with natural light and adorned with plenty of exposed brick, the space is the perfect backdrop for photo shoots, video sets and, perhaps most notably, pop-up dinners. Hammer & Hand’s Silk Rodeo dinner series was always in the back of their minds, in some form. “We love the idea of underground (dinners),” Amy says. “Our business was underground. That was our idea years ago, and we didn’t know how it would end up happening.” A trip to Bali left the Plaisteds with several reclaimed dining room tables, which inspired their longtime friend Bernie Lee, owner of Hiro Asian Kitchen, to oversee Hammer & Hand’s first pop-up dinner in April 2015, served on those same dining

tables. “It was amazing,” Amy says. To date, the Plaisteds have hosted six rounds of Silk Rodeo dinners, featuring both local and national chefs and Asian-themed menus to maintain the geographical focus of the shop. This unique partnership with the culinary community has garnered attention to Amy’s eye for design – furniture and décor pieces from the shop can be found in local restaurants including Southern, Edibles & Essentials, Russell’s on Macklind, Basso and Hiro’s Asian Kitchen. The shop also has pieces in Wobbly Boots Roadhouse at Lake of the Ozarks, as well as restaurants in Brooklyn, San Francisco and Los Angeles. After a break for the holiday season and a trip to India in March, the Plaisteds plan to relaunch the Silk Rodeo dinners but are hoping to kick things up a notch with high-end wine tastings and dinners associated with art or music in the works. They are also building relationships with antique dealers in Hungary, Thailand and Myanmar to potentially build upon the import potential. The future of the shop might shy away from a retail space and more toward commercial and online sales, as well as underground dinners and events, but the universal focus is the same: to bring people together to have a good time. OF DIELMANN SOTHEBY’s International Realty

By David J. Finlay, MD, FACS Like so many others in their forties, I found myself 10 pounds overweight and in a career that only allowed sporadic exercise. The truth is, I hadn’t felt really fit since 1986, when I was in a serious car accident that required major surgery and three months in intensive care. I’m in much, much better shape today. Over the past decade, I’ve run several marathons and pedaled thousands of miles on cycling tours throughout the world, including the 5,705-foot climb to Dante’s View (see photo) in Death Valley, Calif., last March. If it sounds like I play hard, I do. But I work hard as well. My vascular surgery practice keeps me very busy, requiring a greater than 80-hour workweek. It’s difficult to stay in marathon-ready condition on that kind of a schedule. But I have.

What’s my secret? I’ll tell you. I stopped working out at a gym.

Style Speak

Q&A

WITH JULIO ZEGARRABALLON OF ZEE BEE MARKET ‌Julio Zegarra-Ballon, founder and owner of St. Louis’ Zee Bee Market, easily works an 80-hour week, but when asked about it, he simply explains all the positives. After a full day working in planning and forecasting, ZegarraBallon heads to his store, a fair-trade haven located in the hip and worldly South Grand neighborhood. The business, which originally launched as a “mobile retail operation” and website, opened its brick-and-mortar location last year. With its multifaceted humanitarian aspects, this boutique offers a variety of gifts sure to please both the consumer and the conscience. Could you tell me about Zee Bee Market as if I had never heard of it? Zee Bee Market at its core is a social enterprise. We are a retailer that sells a curated collection of handcrafted and fairly traded merchandise from around the world. Every gift we sell was handmade by an artist who worked within the framework of fair trade. The last count I did, I think I have about 32 nations represented. You can come to the store and literally take a tour around the world. What was the driving factor behind being a fair-trade retailer? I was born in Peru. At some point – I want to say about eight years ago – I got connected to an organization that is right here in St. Louis, called Partners for Just Trade. PJT is a fair-trade supplier, and when I first met them, they were working exclusively with Peruvian artisans. It was through that connection that I gained knowledge of fair trade and the social change this model creates. I eventually began to volunteer and serve on their board…[and] I wanted to create a business that made a difference, and fair trade certainly does that.

52   LadueNews.com | December 11, 2015

What does Zee Bee Market carry? Is there a little bit for everyone? There is the boutique concept, where we would like to provide wonderful handmade gifts that cover as many categories as possible. The second part of the business is to build what I would call the “market,” and that would be the place to get coffee, chocolate, tea, cocoa, jam, snacks – you name it. Personal care is growing, and it is very important to the consumer: soaps, body cream, moisturizers...If I find a supplier that provides those items that are 100 percent natural, I would like to make that available to our customers.

Tell me about the nonprofit aspect of Zee Bee Market. Part of our value is giving back to the community, and so (for one week) every month we partner with a not-for-profit organization that does work right here in St. Louis...and we donate 15 percent of our sales to them. This has been so successful and so wonderful that I have not-for-profits lined up all the way through May of next year. You’re located on South Grand. Why did you choose that area? St. Louis has been our home for about 18 years, and my family has been in the Shaw neighborhood, so South Grand has been our home all along. It’s been the place we’ve chosen to come for incredible food from around the world! One thing that I noticed way, way before I decided to start a business was there was not enough retail space, so when I decided to start Zee Bee Market – which was three-and-a-half years ago – I didn’t have to think twice. I knew in my heart this would be the place to open.

efore statement jewelry became an accessible trend, it started with the starlets, such as Elizabeth Taylor, mimicking the riches of the royals. Taking after those muses, statement jewelry is making a comeback in a big way this winter, creating an effect of timeless style well worth replicating. “There are always people who travel and do extravagant things, living a lifestyle that the rest of the world simply can’t,” says Barry Sherman, owner of Albarré Jewelry in Ladue. “But nice, expensive jewelry is worth the investment when you can afford it. People lose sight of it as an art form. Jewelry is absolutely wearable art.” Jewelry makes a bold statement this season is by pulling from a vibrant color palette. “I have a lot of important pieces in canary and marigold diamonds, or light pinks,” Sherman says. “One of our specialties is custom jewelry. Clients want an important piece that is different from everybody else’s. So, we start from scratch – from a sketch to a wax model to a finished piece – to create exactly what they want.” He describes one particular piece that proved to be a showstopper. “We just finished a necklace of all fancy multicolored, emerald-cut sapphires. It’s a wide choker with different shades of blues, purples and yellows.” Jewelry with stature always has been coveted, but the style of high-end accessories has modernized with a slew of creative designers who think outside the box. Today, elegant jewelry combines a mix of metals and materials previously not considered precious with the expected gemstones that resonate sophistication. “Our women designers are creating signature pieces that are versatile,” says Anne Pokoski of Elleard Heffern Fine Jewelers in Clayton. “They know women want pieces that will go from day to night.” Pokoski lists Margery Hirschey’s statement earrings made from unconventional gemstones such as boulder opal and rutilated quartz, and Lika Behar’s oversized pieces using avant-garde gemstones such as topaz or lapis lazuli, as must-haves in your jewelry collection. Emily Armenta – whose jewelry is carried exclusively in St. Louis by Elleard Heffern Fine Jewelers – uses diamonds, white sapphires and unusual gems in “midnight silver,” her term for an oxidized sterling silver that has been blackened. “Her jewelry looks like sunken treasure,” Pokoski says. “Everyone wants to stand out – but in order for a trend to last, it has to be wearable,” says Elizabeth Eby of Genovese Jewelers in St. Louis. “You don’t need to change your whole wardrobe to get into this trend.” Even if your jewels have a major bling factor, you can dress down a glam necklace by wearing it with a tailored T-shirt, jeans and a pair of pumps. Incorporate statement jewelry with your current collection by layering items to create a bigger impact, such as stacking a set of brushed metal rings or pairing a Y necklace with complementary chains. Gabriel & Co. are designers who focus on a classic style brilliantly infused with on-trend pieces. “Yellow- and rose-gold both are having huge moments

right now,” Eby says. “Add a yellow-gold bracelet to your current lineup, or a rose-gold necklace as a layering piece. A statement link bracelet will never go out of style. People want jewelry that is (not only) timeless, but also unique.” YLANG YLANG in St. Louis also believes in the everyday wearability of your fanciest accessories. “Currently, our favorite statement pieces are by Robert Procop,” says owner Julie Ettinger. “If you are going to invest in Robert Procop’s fine jewels, we say, ‘Don’t save it – wear it.’ Truly, he has the most magnificent color gemstones.” His new line, American Glamour, embodies the essence of unmatched beauty. “Timeless, precious gemstones like (those of) Elizabeth Taylor or Jackie O – they have staying power,” Ettinger says. “Very iconic and always of the moment.” Zoe Kaemmerer, a sales associate at YLANG YLANG, concurs. “People now want color and precious gems if they are investing in a big piece; they want something beautiful and eye-catching,” she says. “Emerald is the color of the year.” Both women recommend mixing similarcolored gemstones to create an impactful piece, like combining emeralds and sapphires or peridot with sleek metal or geometric shapes for a contemporary style. “Sloane Street has beautiful London blue-topaz earrings in a dagger shape,” Ettinger says. Another on-trend designer, Erica Courtney, features a heavily feminine style with pops of color and intricate designs. “Erica Courtney has the most magnificent opal earrings. (The stones are) 100 million years old,” she says. “If you are a brunette, these beautiful and magical opal earrings appear with purple and blue tones; if you are a blonde, you get a totally different tone of yellow and pink,” Kaemmerer adds. “That’s very much who Erica is: She’s all about personalizing.” To incorporate statement jewelry into your winter wardrobe, expand your vision to include unusual metals and opulent gemstones, and pair with both day and evening attire. Simple, classic garment lines will complement these bold accessories and accentuate a jewel piece as powerful and exquisite as you.

Connect the Dots

Hope in an Uncertain World By Benjamin Akande

‌Today’s world is volatile. Unrest rises at every turn, whether here in the U.S. as students address issues of racial discrimination and long-held TENSIONS OR across the ocean as we watch the peoples of the world reel from the aftermath of terrorist attacks, from Paris to Beirut to Mali. It is easy to be despondent over an uncertain future. But I choose to take the path of hope. As someone who has made a career in higher education, I have been blessed to know the power that comes from educating and inspiring others. Even though the path ahead is not always clear, the future is ours to create. I choose to take a path that is bold and visionary. A path that welcomes disparate ideas and empowers those who present them. It is revolutionary, and I’m willing to dispense with or challenge the status quo if doing so means a brighter, relevant future. It means facing our fears and standing tall with our beliefs. It means creating an exceptional place by embracing a broad spectrum of possibilities. I call this exceptional place “Yes.” Yes is farsighted. Embracing yes means preparing

our young people for a future that does not yet exist. It anticipates opportunities before they become apparent. Yes is proactive, not reactive. Yes doesn’t wait for opportunity to beckon or to knock. Rather, it means building a door so large that opportunity finds us. Yes is collaborative. It recognizes that teamwork is perhaps the most critical ingredient of success. It takes to heart an old African proverb that says, “If you want to go fast, go alone. If you want to go far, then we must go together.” Yes celebrates diversity – of ethnicity, race, nationality, gender, religion, life experience and varying intellectual perspectives. Yes creates an educational environment that is welcoming and inclusive. It hears all voices, quickly heeds concerns of all groups and, in doing so, guarantees that there are no marginalized peoples.

Yes fosters significance. It is a place where thought leads to action and action to impact, whether on a college campus, in our communities, around the country or across the globe. Yes means bringing people together to find creative solutions to the innumerable problems that confront our world, including racism, poverty, infectious diseases, dwindling natural resources and geopolitical turmoil. We must choose hope; we must embrace yes. As we close out 2015 and enter the new year, join me in choosing yes, not as an option, but as an imperative. Benjamin Ola. Akande is the 21st president of 164-year-old Westminster College in Fulton, Missouri. He has a Ph.D. in economics and previously served as dean of the George Herbert Walker School of Business & Technology at Webster University.

Hyken’s HOMEWORK Charitable Kids ‌A few weeks ago, my wife and I attended the AIM High night at John Burroughs School. AIM High is a tuition-free summer enrichment program for middle school students who come from challenging circumstances. The evening was a chance for supporters to learn more about the program and also hear some inspiring speakers. All of the presentations were excellent, but one theme echoed with us – how do parents raise charitable children? As adults, my wife and I contribute to many organizations, and I often do pro bono work in my therapy and testing practice. We enjoy giving back, and we also want our boys to feel the same. Modeling, of course, is an excellent way to demonstrate the value of service to others. If you want your children to be compassionate, then you must be that kind of person yourself. More importantly, however, is talking to your kids about charitable work

Ask your kids to take inventory of their clothes and toys that they no longer use. Together, take these items to a local shelter so your kids can see firsthand how others appreciate their efforts. Children need to be passionate about their causes to ensure the intrinsic desire to give develops into a lifelong habit. Happily Ever After

Aslan, Tang

and the Sayad Family By Robyn Dexter

‌Once upon a time…there were

two kittens at Animal House without people to call their forever families. A young girl, 14-year-old Lily Sayad, spent a lot of her time there as a volunteer. She and her sister Adrienne, 10, wanted a kitten – badly. The girls’ mother, Lysa Sayad, wasn’t so keen on getting a kitten at first. After the girls wore her down, she started looking into adoption options in the St. Louis area. “We were told that when adopting cats – especially kittens – it’s better for them to have a friend because they enjoy being together. It’s even better if they’re related or if they’ve grown up together,” Sayad says. So the Sayads ended up with two kittens. “My daughters coerced me into one kitten, which turned into two,” Sayad recalls with a laugh. “We went to visit Animal House, and we found so many different cats and kittens of different ages. We looked around for a long time, and they even gave us toys to help us interact with the cats.” The Sayads played with several cats, but ended up very attached to two brothers, Tang and Aslan. Lily had already gotten to know them through volunteering, and when Adrienne loved them, too, it sealed the deal. “We couldn’t take them home immediately because they were so young,” Sayad says. “They had to be microchipped, neutered and have their last series of shots.”

After the last set of shots, Animal House brought the pair of kittens out to the Sayads’ house to get them acclimated. “It was so sweet because the (Animal House staffers) really bond with all the kittens,” Sayad says. “One of the volunteers even made a sweet needlepoint blanket.” Tang and Aslan were skittish at first, but as they got used to their new forever home, the Sayads really saw them come out of their shells. “Aslan in particular loves to purr like a lawn mower,” Sayad says. “They spend so much time together, and they love to run around and play. But for kittens, they’re pretty relaxed and docile.” Sayad shares a few pointers she got from Animal House upon adopting the kittens: keep them as indoor cats, as it lengthens their lifespans; take them to the vet regularly; and don’t get them declawed, as it’s painful to the cat. She says the whole family has really enjoyed having them, and the girls can’t wait to see them every day when they get home from school. “It’s so funny to watch them run around and jump on each other and wrestle. They bite on each other – playfully, of course – and sleep right next to each other,” Sayad says. To Tang and Aslan, anything is a toy. Ordinary boxes and bags are suddenly the best things in the world. Any

Healthy for the holidays

Three local catering companies dish on how to make your holiday celebrations happy and healthy.

T

he holidays are a time to celebrate with family and friends, and many of our traditional celebrations center around food. This is great – unless you have health concerns that prevent you from eating certain types of foods, often the very ones that are featured at holiday fêtes. Options abound for tasty, festive eats that also accommodate special diets and healthy eating, with local catering companies offering a variety of meals to satisfy glutenfree, low sugar, vegetarian, vegan, nut-free and more. “Gluten-free is still the most requested specialty meal, closely followed by dairy-free and nut allergies,” says Gregory Ziegenfuss, executive chef at Butler’s Pantry, which offers catering for corporate functions, social events, galas and weddings of all sizes. “At Butler’s Pantry we always treat special requests as if there are medical food allergies involved, even if it’s a personal dietary request. We work with clients to prepare alternative options that are very similar to the meals being served to guests with zero food allergies. We have found that this is satisfying for all because no one feels left out due to personal dietary choices or food allergies. And the alternative options are just as delicious.” Holly Cunningham, president of Hollyberry Baking and Catering Co., agrees that gluten-free options are some of her most-requested retail specialty items. In addition to catering corporate and social functions, she recently opened a retail “catering-to-go” market and café, Nourish by Hollyberry, in Warson Woods. “In general, our customers are more health-conscious,” Cunningham says, “so the fact that our menu items do not contain added preservatives and are made from real ingredients is what our customers want. Items that do not contain any added preservatives and come from real ingredients are popular – these are what people want, and that is all we give them.” Some of Cunningham’s best sellers are also among

her healthiest options and include such items as Merry’s Mighty Good Meatballs, which are glutenfree and contain puréed kale, zucchini, carrots and onions for depth of flavor. Another popular entrée is pretzel-encrusted chicken with honey-mustard sauce, and crowd-pleasing healthy side dishes include herb-roasted root veggies and broccoli with butternut squash cheese sauce. Ann Marie Lemcke, owner of The Art of Entertaining, which specializes in small-function catering and gourmet carryout from its store in Webster Groves, says gluten-free favorites include her blackberry chicken over pecan rice and grilled vegetables. The secret is in marinating and grilling the vegetables whole instead of slicing them first, which prevents them from becoming too oily and helps maintain their crisp, hearty character. “We’ve perfected it,” she says. “It’s also low-sodium, which is another important dietary requirement for people.” Among the panoply of special dietary needs, glutenfree foods are among the easiest to prepare and present, according to Dr. Mildred Mattfeldt-Beman, chairwoman of nutrition and dietetics at Saint Louis University. “You can get quite creative with nut and rice flours,” she says. Imagine, for instance, Christmas cookies made with delicate almond or hazelnut flours. “It takes a bit more skill to make, but caterers have that skill.” Butler’s Pantry has made a concerted effort to keep gluten and nuts out of as many menu items as possible, Ziegenfuss says. “For instance, we use no peanut oil, and all of our soy sauces are gluten-free. A top priority in the first quarter of 2016 is designating each and every current menu item as to whether it is glutenfree, dairy-free or nut-free.” Some popular offerings have already been designated, but the task in total will involve roughly 10,000 items. People with diabetes and those looking to lose weight often seek out low-sugar options for holiday

celebrations. Mattfeldt-Beman notes that this type of diet is healthy for everyone, not just those with special dietary needs. “This is the diet we should all be following,” she says. “It’s more critical for people with diabetes, but we should all be looking for nutrition from whole foods and healthy, complex carbohydrates.” Mattfeldt-Beman believes fresh flavor should shine through without large doses of sugar, salt or fat. She notes that spices, like cinnamon and cardamom, can add deep, festive flavors to baked goods, and savory items should also be richly seasoned and enjoyed in small amounts. For example, she opts for small portions of high-quality, flavorful cheeses instead of dousing dishes in low-fat, largely flavorless alternatives. Professional caterers recognize the importance of highlighting flavors through careful and creative preparation. “Our butternut squash mac ’n’ cheese offers an alternative to the standard dish by including butternut squash purée to add to the healthfulness of the dish,” Cunningham says. “The sauce is smooth and cheesy but with less guilt and added nutritional value.” Other popular Hollyberry dishes include a fall harvest salad with fresh apples, dried cherries and a house-made pumpkin-maple vinaigrette, as well as a cauliflower mash made with both russet potatoes and steamed cauliflower whipped into a texture similar to classic mashed potatoes. Ziegenfuss takes cauliflower even further: “You can even make diet-friendly cupcakes out of cauliflower,” he says. “We’ve done it, and it was delicious. Another cauliflower alternative is a roasted cauliflower steak. This dish provides a hearty, tasty option for vegetarians.” Portion control and savoring truly special meals are key to healthy holiday indulging, Mattfeldt-Beman adds. “The holidays are a time to celebrate food,” she says. “Enjoy a little of something wonderful instead of a lot of something mediocre.”

Dinner ...

5 Star Burgers

“P

eter and the Starcatcher,” currently showing at The Rep, is a prequel of sorts to the beloved Peter Pan story. It’s a production for the whole family, so it only makes sense to take the fam out for a feast beforehand. I humbly suggest hitting up 5 Star Burgers, more or less just down the road in Kirkwood, a family-focused eatery with some pretty tasty offerings. 5 Star Burgers debuted in Clayton a few years ago to rave reviews and became so popular that in 2013 the ownership opened up another location just a bit to the west in Kirkwood – with a third scheduled to launch in March 2016 in Creve Coeur. The second spot is located on Kirkwood Road, is easily accessed via Highways 40 and 44 and other major area

roadways, and boasts plenty of parking around back. Fans of the original location shouldn’t worry, though – the food definitely maintains the quality of the flagship restaurant! The burger selections are broken down into Burgers (sort of a list of go-to’s) and Specialty Burgers. From the standards, we ordered the Dad’s Green Chile Cheeseburger ($10), an old favorite from our Clayton visits. The tender rare patty comes topped with crispy-battered, deep-fried chiles, pepper jack cheese and some spicy green-chili mayo. We love beef, but we decided to spread our wings a bit and try The Potsticker ($10). This Asian-inspired burger is based on a local pork patty served up with some Vietnamesestyle slaw and sweet peanut hoisin sauce on the side so you can top it as you see fit. Pro tip: The hoisin sauce

By Matt Sorrell works well for dipping onion rings and fries as well. Since we dined during happy hour (4 to 6 p.m. daily), we got a serious break on our sides. We noshed on battered onion rings ($2), fries ($1.25) and fried pickles ($2). The pickles come with a tangy tzatziki sauce that tastefully augments the crispy dill cukes. Since local drafts are half-priced during this timeframe, we opted to imbibe a couple of Civil Life Brown Ales ($2.50 each) as well. While burgers are definitely the main attraction at 5 Star, the menu holds something for everyone, even those who eschew the charms of meaty patties cradled between buns. There’s a solid selection of sandwiches, hot dogs and salads to be had, along with a lengthy list of confections that include some boozy grown-up shakes, perfect for sweetly taking the edge off. Plenty

of beer, wines and cocktails are available for this purpose as well. One of the things that makes 5 Star stand out from the crowd (aside from the burgers) is its commitment to the environment. In addition to sourcing antibiotic- and hormone-free Angus beef from Creekstone Farms, the company is heavily into recycling, including reusing its frying oils (made from rice bran) for biodiesel fuel and feed, among other uses. If you’re on the go, there’s also an online ordering system that makes it easy to get a to-go order if you can’t stick around to enjoy your burgers onsite.

5 Star Burgers, 312 S. Kirkwood Road, Kirkwood, 314-394-2250, 5starburgers.com/missouri

Story: Lord Leonard Aster, in the service of Her Majesty Queen Victoria in the year 1885, is one of the very few bona fide Starcatchers in the world, a person who can collect the magical “starstuff” that falls from shooting stars. Right now, in fact, he’s on a mission for the queen to take a load of that valuable commodity to the island of Rundoon, where he will destroy it in a volcano so that it doesn’t fall into nefarious hands. He’s accompanied by his daughter, Molly, an apprentice Starcatcher, aboard the ship, which also happens to have a trio of orphan boys stowing away below deck. When pirates seize the vessel and imprison Lord Aster, it’s up to Molly and the boys to keep the trunk of starstuff away from the brigands, not knowing that it was switched on shore with another trunk and placed aboard another sailing vessel. What ensues is a battle of wits between Molly, the pirate leader Black Stache and others aboard both ships, plus a group of daffy mermaids, a nasty crocodile and a subsequent shipwreck. With the help of the boys – Ted, Prentiss and the Boy with no name, who is later given the appellation Peter – the good guys prevail. But at what cost? Highlights: Based on the first of a series of novels by St. Louis writer Ridley Pearson and humorist Dave Barry, “Peter and the Starcatcher” was adapted by Rick Elice into a play that won five Tony Awards when it premiered on Broadway in 2012. A touring production played here early in 2014. The Rep’s holiday offering this season is a fanciful rendition of this audience favorite that is longer on wordplay than on swordplay. It features an energetic cast of a dozen versatile performers who move at breakneck speed to translate the whimsy of Pearson and Barry’s characters to the stage with comic precision that offers entertainment for adults and older children alike. Other Info: In true humbug spirit, I admit that I found “Peter and the Starcatcher” as uninspiring the second time around as I did on an initial viewing last year. Perhaps it’s a life-long lack of interest in J.M. Barrie’s play, “Peter Pan,” and subsequent novel, for which this two-act comedy serves as prequel. That’s an opinion decidedly in the minority, though. The audience on opening night was regaled with the clever antics of players who populated scenic designer James Kronzer’s barebones set, which consists of a bare floor and an abundance of trap doors, a ladder leading to the stars and sundry props that trigger the show’s abundant laughs. Black Stache, the once and future Captain Hook, is given the play’s best performance by Jeffrey C. Hawkins. Looking and sounding quite a bit like a younger Eric Idle, Hawkins strolls through his manic moments drolly dropping lines that showcase Pearson and Barry’s (and Elice’s) talent for clever writing. Part of the problem with Elice’s script is that the

two and a half hours it takes to tell this tale could be trimmed by 30 minutes and actually improved as a result. Another problem is Elice’s use of racy dialogue, such as “cleaner than the sheets in a convent,” in a show that purports to be family-oriented, which it is for the most part. Script, know thyself. Besides Hawkins, there’s engaging work by Betsy Hogg as Molly, a role she played in the closing Broadway company. Hogg fills Molly with grit and spirit as well as a young adolescent’s yearning for first love in her rapport with the boy who becomes known as Peter Pan. The latter is portrayed effectively by Spencer Davis Milford as a mistreated lad who finds his own heroism, motivated by his attraction to Molly. Others having fun in the campy cast include Jose Restrepo as Black Stache’s intrepid right-hand man (remember that), Smee; Andy Paterson as Molly’s alliterative nanny, Mrs. Bumbrake; and Nick Vannoy as the crude but kind-hearted lout Alf. Clinton Brandhagen is a suitably stiff-upper-lip Lord Aster, Jesse Munoz is Aster’s chum, the valiant Captain Robert Falcon Scott, and Arturo Soria is Bill Slank, the conniving captain of the ship Neverland. Andrew Carlyle and Sean Mellott play Peter’s pals, Ted and Prentiss, respectively, while Natalie Morgan Fisher nicely essays a number of smaller roles. Blake Robison’s direction grants his versatile cast the freedom to roam The Rep’s spacious stage, abetted by the help of movement coach Casey Sams, music director Patrick Sulken and sound designer/ orchestrator Matthew Nielson. If you like “Peter Pan,” knock yourself out with “Peter and the Starcatcher.” Hawkins and the rest of the cast work hard to bring the audience a good time.

Q&A

with

David Robertson of St. Louis Symphony By Connie Mitchell ‌Among the most festive concerts of the St. Louis Symphony’s season, the annual New Year’s Eve Celebration will mark its 10th anniversary this year, presented by BMO Private Bank. Ladue News spoke with St. Louis Symphony music director David Robertson about the upcoming New Year’s Eve event. What are the crowd and atmosphere like during this special New Year’s Eve performance? Why do you think this annual tradition is so popular? The annual New Year’s Eve concert attracts an extraordinarily festive crowd. People are there to have fun. It’s a lot of fun for the musicians, too. I think many of our female players could make a number of bestdressed lists from that night alone. I think it has become

76   LadueNews.com | December 11, 2015

so popular because people know that they will not only be entertained with some of the best music in the world – but they’ll be surprised, too. That element of surprise is rare, but we’ve managed to keep it up for 10 seasons. How is the program chosen? Is there a specific theme or feeling you are trying to evoke through the musical selections? There are all sorts of ways these programs come together. Many times it’s a matter of chance – someone suddenly becomes available, or maybe I just hear an old tune, or a new tune, and think, “What would go well with that?” It’s kind of like putting together party music. What can guests look forward to at this

season’s New Year’s Eve concert? Will there be anything special to mark the performance’s 10th anniversary? Since we’ve been keeping these shows a secret for this many years, I’m not about to give away any hints now. What’s coming up for St. Louis Symphony in 2016? So many things. A tour BMO Private of California, a Shakespeare Bank New Year’s festival in February and Eve Celebration March. I’m very excited about “From the Canyons 7:30 p.m., Thu., Dec. 31 to the Stars” by Olivier at Powell Hall Messiaen, which will include images of the desert For tickets, call 314southwest that inspired 534-1700 or visit the work. r. Bryan Deloney, Chesterfield, is bringing one D of the newest advancements in natural health and healing to local residents. Deloney is helping

patients reverse health challenges, such as excess weight, diabetes, sleep apnea, thyroid disorders fibromyalgia and autoimmune issues, using the NutriMost Resonant Frequency Technology (NRF).

NRF technology takes a hormonal fingerprint to determine the exact blueprint a person needs to follow to bring their body into an optimal state of fat burning and health. First, patients undergo a fast, painless scan of their body’s cells by using the comprehensive electroimpedance resonant frequency (NRF) technology. This allows Dr. Deloney to take a “hormonal fingerprint” of every factor that affects weight gain, including fat burning, fat storage, metabolism, the organs involved, hormones, neurotransmitters, vitamins, minerals, metals, toxins, bacteria, viruses, mycoplasma, candida, parasites and nanobacteria. It gives him the capability of measuring and assisting the body’s innate healing abilities. NRF technology is so advanced and specific it can determine hormone imbalances, organ function weakness, and much more.

Deloney explains, “we determine your personal recipe for healthy weight and healing using resonant frequencies”. When the cells of your body are exposed to “pollen” or “bacteria”, the exposed cells elicit a cellular response. Everything in life has a resonant frequency (vibrational frequency, how the molecules vibrate)…including pollen, bacteria, hormones, neurotransmitters, etc. If your cells are exposed to the resonant frequency of pollen, without the presence of pollen, your cells will have the same response as if they were exposed to the pollen itself.

Everyone Gains Weight Differently Due to Hormones NRF technology can target your hormone imbalances and get to the cause of your weight gain, overcoming weight loss resistance and solving your weight challenges. Using this understanding of resonant frequencies, Dr. Deloney can determine precisely what the body needs to bring it into its optimal fat burning zone and keep it there. This is done by measuring the baseline of each factor being measured (hormone, neurotransmitter, heavy metal, bacteria, virus, organ, etc.), and then the doctor can determine what supplement or formula is needed by observing what the effect of that item is on the baseline (whether it makes it more coherent or less coherent). The program displays the results as a circle with red and green dots around it. From here, it identifies the biomarkers (vitamins, minerals, hormones, neurotransmitters, toxins, microbes, etc.) that are out of range regarding the fat burning zone. Once the out-of-range fat biomarkers are identified, the program will determine exactly what is needed to bring the biomarkers back into fat burning. It will identify what is needed nutritionally; but more than that, the foundation of the whole program is the ability to determine the exact “recipe” for each person’s fat burning. The program creates a “recipe” for hormones/neurotransmitters, a “recipe” for detox and a “recipe” for the fat burning formula.

Let the Balancing and Healing Begin Once in this balance state and fat burning zone: • You experience no hunger or cravings, unlike other weight loss programs • The typical fat loss is between ½ pound and 2 pounds of fat per day • You will have more energy, better sleep, and you will be in a better mood • Your hormones will become more and more balanced • You will enter a state of autophagy, which helps the body overcome all sorts of health challenges The NutriMost Ultimate Fat Loss System is safe, fast, and effective. You’ll clear out harmful toxins and balance your hormones as you lose fat at an unbelievable pace. Typical results see patients losing 20 – 40 pounds in 40 days. And the best part? The results are permanent. Following your 40 days of fat loss, NutriMost will reset your metabolism and weight set point, so you can keep the weight off for good. This safe, doctor-supervised system works in just 6 weeks, guaranteed.

ne million lights. It’s a number that’s practically unimaginable until you see it for yourself – but that’s exactly what visitors of the third-annual Garden Glow at the Missouri Botanical Garden experience. And the display is all the more dazzling this season, expanded from last year’s 600,000 lights. Bigger and better than ever, visitors and guests can light up their holidays by taking a stroll through the 30 light displays and installations with their families, friends and significant others, which kicked off Nov. 21 and runs until Jan 2. Since launching in 2012, Garden Glow has quickly become a holidayseason favorite for families across the St. Louis area. Its spokesperson, Katie O’Sullivan, says the Garden has steadily added about 400,000 lights each year to hit the one million mark. In its first year, there were 18 installations; this year, that number has climbed to 30. All of the lights featured in the Garden Glow are LEDs and use only a fraction of the energy needed to illuminate regular strands of holiday lights. “We’ve really expanded our footprint and the undertaking,” she says. “We begin work on some of the installations as early as summer, pretty much as soon as the Lantern Festival is taken down.” This year, the Lantern Festival wrapped up in late August, giving the staff about 13 weeks to illuminate the gardens.

So how do the installations come to life? The Garden partners with two companies that specialize in bringing large-scale events to life to conceptualize the installations, and the Garden’s staff carries it out from there. O’Sullivan says the biggest installations are probably the maze and the Climatron, which is renamed the Illumitron during the Garden Glow for the blanket of 22,800 white lights that enrobe its exterior. The Garden’s event staff and crews are the ones who carry out the installation of the displays. There are about 30 people who work to make sure all the lights are put up and working correctly, O’Sullivan says. She adds that the most hectic part of getting the Garden Glow together is making sure all the electrical components come together, coordinate and, of course, light up. “People who have come the past two years have really been able to see all the expansions,” O’Sullivan says. “We had about 100,000 people both of the first two years. We’re hoping for more this year.” Visitors can expect a few changes: The Garden has reversed the route through the Garden Glow to better move people through the displays and to ensure photographs taken in the snow globe are done at the beginning of the route, rather than the end. They’ve also done away with wristbands and will instead be checking time-marked tickets at the door so people are moved through in a more

orderly fashion without bottlenecking certain installations. “We don’t want to push people out of the Garden, obviously, but that staggered entry time has really helped us,” O’Sullivan says. “It makes it a better experience for everyone involved.” Now, she says, all they can do is hope for continued good weather so visitors can enjoy the Garden Glow to its full potential. “It’s hard to keep everything lit in the rain and ice,” she says. “We’re glad people are still interested in our third year. We want to continue to expand in the next couple of years.” As in years past, guests of the Garden Glow can enjoy countless photo opportunities, holiday music and food and drink. The interior of the Tower Grove House will be adorned in Victorian-era holiday décor, which is done by the Garden’s education division and volunteers. Visitors will have the opportunity to pose in oversize picture frames, enjoy hot cocoa and s’mores, and listen to Christmas music. DINING & ENTERTAINMENT: Feature Story

A Season

N

othing says the holiday season like fine food and fine wine. Aleks Jovanovic, general manager and wine director at Truffles and Butchery, knows this and takes it to heart. This time of year (and the rest of the year, too) he’s busy making sure the two sister businesses run smoothly and produce the best products for St. Louisans this holiday season. This year, for the first time in about five years, Jovanovic says Truffles will be open for Christmas Eve dinner. He says it’s already booking up, along with the private room, which has a few openings, too. “What we have learned from our previous experiences is our customers and people who visit us for the holidays are really excited to have the full menu offered, instead of a limited menu,” he says. In addition to the full menu, there will be new specials specifically crafted for this year. Jovanovic hints at lobster and Colby beef. “There’s quite an opportunity to dine the traditional Truffles way and totally splurge on specials for the holidays, too,” he says. Jovanovic notes the success of the full

Thanksgiving meals Truffles offered this year, and he says they plan to offer similar deals and meals for Christmas and New Year’s, as well. While customers are enjoying fine dining, they also can enjoy a glass of wine off Truffles’ wine list – the most comprehensive in the state of Missouri. “We’re able to offer more than 100 wines by the glass,” Jovanovic says. “That will continue to increase.” How can they offer such a deal without customers having to purchase an entire bottle? Truffles features a Coravin system that enables servers to extract wine from the bottle without exposing it to oxygen. “We’ve been testing it for more than a year, and it’s limitless as far as we can tell,” Jovanovic says. “We’re able to offer rare and special wines by the taste and by the glass on a wine that you’d typically spend a few hundred dollars on the whole bottle.” Jovanovic says the Coravin system offers a “sip of greatness” to the customers, and Truffles is one of the few places that sells the wine system. “It’s a fantastic gift for anyone with a wine cellar,” he says. “You can have a glass without worrying what will happen to the rest of the bottle if you don’t drink it.”

LadueNews.com | december 11, 2015 | A lAdue news speciAl promotion

This holiday season, Jovanovic also recommends giving the gift of a class at Butchery. These classes are offered either one-on-one with a chef or for up to six people. Attendees learn the art of butchery in a comprehensive way that ends with the participants taking half a hog home. “After the class is finished, we have a sip of wine and have a discussion about the class and the restaurant,” Jovanovic says. “Then, they get to take their half a hog home, which can be enough for a whole winter. It’s a really neat concept.” He also recommends Butchery and Truffles gift cards, which can be used in a variety of ways. Their gift baskets can be customized with a variety of spices and rubs, steak packages and grill packages. Truffles also offers daily-made artisan gluten-free bread, which Jovanovic says has been very popular. “Customers that are buying it don’t even necessarily need the gluten-free aspect of it,” he says. “They’ve just realized how delicious it is.” Truffles & Butchery, 9202 Clayton Road 314-567-9100, todayattruffles.com
