As you may know, Ladue News is holding a Holiday Wish List Drive for Nurses for Newborns. We’re told that some of the families served by the organization are going with less food on the table because parents are squirreling away their money to buy presents or to save up for the holiday meal. The items on the Wish List are easily obtainable: for instance, gently used infant and children’s clothing (check your basement), toys and books (add to your last-minute shopping list), and non-perishable food items (just grab a few extra items at the grocery store). It may be the most wonderful time of the year for many of us, but it is a difficult time of the year for the poorest St. Louisans. Please be generous. Law gained behind-the-scenes access to the Goodwill Outlet Store downtown, where he captured thousands of leftover items from Goodwill stores nationwide consolidated into bales as high as 5-feet tall and more than 7-feet wide. The bales — some made entirely of plastic toys, others piled high with clothes and blankets — are being transported to other parts of the country and around the world. Law says every object has its own storyline, and he hopes to eventually be able to document each bale’s journey to its destination.

The owner of Genovese Jewelers may purchase a certain stone, like his recent investment in a 16-carat tanzanite, and design a ring around it. Or, he may see a piece his daughter is wearing and can imagine it transformed into fine jewelry with diamonds and white gold. Whatever the inspiration, the results produce one-of-a-kind pieces made in-house, which will soon be offered under a new, branded line. “We’ve gotten so good at the design and manufacturing process that it was time to launch our own line,” Genovese explains. “Those custom pieces are only able to be found at our store, and they’re not just American-made, they’re St. Louis-made.” Established in 1981 by Michael Genovese, Genovese Jewelers has been manufacturing jewelry on-site for 22 years. Each year, Joe Genovese invests in purchasing the latest equipment or technology to design and produce custom pieces

that make up 60 percent of the store’s inventory. Fourteen jewelers have been trained in-house, with three working on computer-aided designs and the rest focused on goldsmithing and diamondsetting. “They are unique pieces, and every day, there is new jewelry available in the showcases,” says Genovese, who is the store’s No. 1 designer. Beyond the branded line, which will officially launch in 2013, Genovese manufactures other jewelry, including a line of larger pastel stones set in untarnished silver. The jeweler also offers a wide selection of popular items like diamond studs, hoops and tennis bracelets. “If you don’t have those three pieces, you have a hole in your jewelry wardrobe,” Genovese says. Designing and producing its own jewelry at the 21,000-square-foot building allows the store to control costs, a major factor in the success of a jewelry business. “I buy the materials and already have the labor available,” Genovese points out.

Now, the beloved former conductor of the St. Louis Symphony and current music director of the Detroit Symphony Orchestra is returning to the roots of his expansive music career for performances with the Chamber Music Society of St. Louis on Jan. 14 at Sheldon Concert Hall and the St. Louis Symphony on Jan. 18 and 19 at Powell Hall. The seven-time Grammy winner will serve as guest pianist and narrator during the Chamber’s Notes from Hollywood benefit—a special compilation of scores by Hollywood film composers, including Leonard Bernstein, Aaron Copland and John Williams. The concert will transport Slatkin back to his childhood, when the L. A. native was surrounded by the music genre through his parents’ musical work in the film industry and his family’s relationships with composers and actors of the storied era. “We were very close with Frank Sinatra and his family,” Slatkin notes, adding that Sinatra was one of the first to recognize and collaborate with classical musicians on recordings. “There was no such thing as crossover at the time. With Sinatra, it was the first time classical musicians were actually listed along with the other artists on the album cover.” Now the laureate conductor of the St. Louis Symphony, Slatkin also will conduct the orchestra for two performances of The Planets, a “colorful and exciting” work by British composer Gustav Holst. The show also will feature Double Play, a one-part atmospheric, other half jazzy piece

A graduate of Julliard School of Music, Slatkin’s conducting career has included 17 years in St. Louis. “My time was 17 of the most glorious years anyone can ever spend,” he notes. “I left because I felt I achieved everything I could there, and it was time for someone else to put their stamp on it.” Slatkin also had a 12-year stint as music director for the National Symphony Orchestra in Washington, D.C. “It was a very exciting world of symphony, with access to the most interesting political leadership. I became friends with President Bill Clinton and Colin Powell, as well as the

broadcast media you would see on television every day,” Slatkin recalls. “It was a tremendously exciting, intriguing time.” In addition to leading the Detroit Symphony Orchestra, he currently serves as music director of the Orchestre National de Lyon in France. The maestro also has completed more than 100 recordings with orchestras throughout the world, including groups in Munich, Paris, Prague, Stockholm and Berlin. For an intimate look into the personal journey of Slatkin’s internationally lauded career, he has released the book, Conducting Business: Unveiling the Mystery Behind the Maestro. Autobiographical and instructional, the work details how to become a conductor through Slatkin’s own experiences in the industry. “For nine years in Washington, I had a conducting institute where I instructed young conductors on how to make the transition from student to the professional world,” he says. The transition is learned during the real-world experience of standing in front of the orchestra, he adds. Slatkin says through the years, he always has valued the conductor’s responsibility of preserving music

from the past and creating music that will be part of the future. “You’re in communication with the spirits that are on a page. There’s just all these dots and circles on the page, but you’re doing what every doctor wishes they could do—you’re bringing something back to life that existed before and you’re bringing it to the attention of the orchestra and the audience.” For Slatkin, a highlight in the book is a story from his time creating St. Louis Symphony Youth Orchestra, which recently celebrated its 40th anniversary. “It is so gratifying seeing something you started really flourish and grow,” he notes. “And there’s nothing better than seeing young people discover and make music.” Working with young people to develop their musical talents throughout his career, Slatkin is playing a big part in the future of classical music. “Our society has come not to value the treasures of the past—we don’t look upon sculpture, music and other art that helps preserve our history, heritage and culture as we should. Without (art), it takes away a piece of humanity. So it’s good to instill young people with it, or they will be void of it and their lives will not be richer.”

few years back, I shared with you some fairly personal information about my legs.

It had to do with the amazing way they responded to a medically based form of fitness training that I had taken up in 2006. Performed on special equipment under the supervision of a wonderful physical therapist named Casey Breslin, my workouts took about 20 minutes a week. Like many of you, I had been skeptical when I first heard about this approach. I mean, 20 minutes a WEEK? It went against everything I'd ever been taught. But, as we say in radio: the legs don't lie. And mine had never been better. At age 49, I could run 12 miles around Forest Park pain-free. I was barely winded.

So what has happened since then, you might wonder? After all, how many times have you known people who were gung ho on some health and fitness regimen, only to find themselves right back where they started a few months later? That's why I'm back today with an update. Are you ready? My legs – in fact, my entire body – are stronger and more fit than ever. I notice it when I'm hiking or kicking the soccer ball with my kids or when I'm doing yard work. Even my posture is better. I know what you're thinking. You're thinking: Charlie, this is not much of a story. But it should be. You see, after age 30, most people lose eight to 10 pounds of muscle a decade. By the time you reach my age – 53 – the speed of muscle loss roars into high gear – unless you do something to reverse it. This matters because muscle, it turns out, is the gatekeeper of longterm health. Next to quitting smoking, doctors now say the single most important thing an adult can do to live a longer, healthier life is to build strength. That – along with the fact that I have two young children I need to keep up with – is why I started going to 20 Minutes to Fitness six years ago. It is why I continue to go today. That's the funny thing about exercise: it really only works if you CONTINUE to do it. No fitness regimen will do any lasting good if you join up as a New Year's resolution and quit by March. But 20 minutes, once a week? That is something I can stick with. It works with my busy schedule. It doesn't bore or injure me. t’s the most wonderful time of the year, darn it! And if you’re not bursting with joy at the prospect of all the decorating, baking, gift-buying, card-sending and party-going packed into the next couple of weeks, then there must be something wrong with you. Not really. In fact, many people find the holidays the most stressful time of the year. But it doesn’t have to be this way. “Some of the biggest stressors during this time are our high expectations, demands on our time and finances, as well as recent losses,” says Laurie Chappell, St. Luke’s Hospital education coordinator. “If someone is experiencing a significant loss, whether it’s the death of someone close to us, a job loss, a divorce or something else, we need to realize it’s okay to be sad during this time. We can’t make ourselves be happy all of the time just because it’s the holidays.” Stephanie Capparelli, a licensed professional counselor and certified bariatric counselor with SSM Weight Loss Institute, agrees. “The actual stress is not so much the activities, per se; it’s the demands we place on ourselves to complete all of these chores, go to all of these parties, stretch our finances beyond our means and often take on much more than we are capable due to a feeling of obligation or responsibility.” So what are the alternatives? Experts recommend starting by simply shifting our expectations. “Things don’t have to be perfect,” Capparelli says. “Some parties can be skipped, not all gifts need to be purchased, and everyone’s favorite pie doesn’t need to be made. Find new ways to celebrate that will work to reduce stress instead of create it.” Edith Varley, principal of The Varley Group Inc, a business and organizational consulting firm, notes that unmet expectations are the root of all conflict. In order to change unrealistic and unhealthy expectations, a mental shift is needed involving reflection on how we can change our circumstances to invest our time and resources in the people and activities we love most. “Maybe this holiday you decide that instead of giving gifts to each other, you’ll provide a gift to a family in need, or you volunteer as a family for some cause worthy of your time,” Varley says. “You create a new tradition, stop running and being worn out, and turn the holiday into a holy day in your family life.” Chappell agrees and adds that stress is more manageable when we prioritize healthy habits, continuing to eat well, exercise regularly and get enough rest. She also recommends taking at least five minutes each day to be quiet and simply reflect, pray or meditate. Slow, deep breathing is a particularly powerful stress management tool, she adds. Varley notes that parents monitor many of these healthy behaviors for their children: nutrition, rest, and appropriate media use and friends. Take the same care of yourself, she advises. “The biggest tip is to be aware,” Chappell says. “Be aware of what the holidays mean to you and act accordingly. Be aware of your stressors and then take some action to diminish them even if you cannot eliminate stress.” By Connie Mitchell

HEN A CONTAMInated batch of injecta b l e s te ro i d s wa s linked to 541 cases of fungal infections this fall, causing 36 deaths, officials immediately looked for the source. Although no cases were reported in Missouri, people across the country wondered about the safety of the drug supply. Yet the contaminated steroids were not made by one of the major pharmaceutical companies. Instead, they were manufactured by the New England Compounding Center, a company that produced ‘compounded pharmaceuticals.’ For those not familiar with medication compounding, the recent headlines may have created the wrong impression of an important skill at the root of modern pharmacy practice, says Jake Wilson, president of Bellevue Pharmacy. “Because of these very unfortunate events, compounded pharmaceuticals may have been portrayed as

some sort of rogue and untrustworthy substances created in a back room somewhere. That really couldn’t be further from the truth,” he says, adding the reality is that compounding medicines is what pharmacy has always been about. “The foundation of pharmacy practice is the relationship between the physician, the patient and the pharmacist, and our compounding pharmacists are passionate about taking care of patients. Only the advent of mass-produced pharmaceuticals has decreased compounding over time.” Most prescription medications are massproduced and dispensed as provided by the manufacturer. However, some individuals need prescriptions personalized to a dose or delivery method not available from major pharmaceutical companies. For example, individuals who cannot take pills may need a certain type of medication prepared in a liquid or topical formulation. Children may need a smaller dose than is typically available. Compounding pharmacists customize prescriptions to meet these kinds of special needs. Hospital pharmacies often compound

medications for patients. “Compounding can go from simple to extremely complicated,” says Patrick Berry, director of retail pharmacy services for Mercy St. Louis. “Certification is beginning to become available and more common. Being members of compounding organizations also provides a great deal of depth to the pharmacy practice. And, of course, experience is a major factor.” Berry points out that Mercy has been continued on page 61

HEDDING IN THE ST. LOUIS ENVIRONS IS SOMETHING TO behold. Shedding, in general, has become year-round because our pets live in the lap of luxury. In the old days, pets had a thick coat of hair to stay warm in the winter, then shed to get ready to cool off in summer. Now, our critters get the benefits of heat in the winter and air conditioning in the summer. This throws the natural shedding cycle out of whack and hair falls out constantly throughout the year. This is called ‘non-essential’ shedding—it serves no purpose. Given that, how can we keep as many hairs in their follicles as long as is naturally healthy? There are many theories, potions and practices that have worked for clients through the years. No. 1 is brushing, brushing, brushing! The more you brush, the more ‘shed-ready’ hair you remove (and the less of it ends up in your cereal). You see, hair grows in three phases: growth phase, resting phase and finally, the fall-out (purposeful shed) phase. It is the first two stages that, if extended, could result in significantly reduced shedding. A product called LoShed does that. It has been around for 20-plus years, and it does work. More is not better, however, so don’t shellac your dog or cat because you’re happy with your initial results. It is a spray that claims to extend the first two phases of hair growth. They say a 70-percent reduction in shedding is considered ‘excellent’ results. Heck, most people would be happy with 40 percent. And, for the record, I do not shill for them—I’ve just seen the results. Another very successful way to reduce non-essential shedding is to use some natural, nutritional supplements. One of my favorites is Eicosaderm, a spray form of vitamin/fatty acid supplement that has proven to be wonderful in all sorts of ways. Just spritz it in the breakfast bowl and go. It simply makes for a healthier skin and hair coat. Healthier skin and coats shed less, period. Of course, there are medical conditions that can cause crazy shedding like hypothyroidism, allergies, fleas and hyperthyroidism. We can address those with medication, supplements and possibly grooming help. The continuing evolution of higher-quality diets has helped put vets out of the dermatology business. As pet foods get better at addressing any number of preventive maintenance issues, our pets benefit greatly. Also, we, as consumers, benefit through lower costs derived from compet i t i o n fo r a m u c h i m p rove d p ro d u c t . Thus, we can afford to give our pets a nutritional diet that helps keep them out of the vet’s office. Here’s hoping that you’re coping with the strange cycles of shedding that seemingly define 2012. Also hoping these tips can help, and surely your vet has a few tricks of their own to offer. Sometimes it takes longer to sweep out the exam room than it took to see the patient! My mother had wonderful taste, too. All I want for Christmas is: Another successful year for Sallie Home. I have the very best staff in St. Louis. ESTLED AT THE BASE OF BLACKCOMB AND WHISTLER mountains, this well-planned village is considered among North America’s finest ski resorts and one of the largest ski areas on the continent. Ski junkies from all over the world flock to this mecca of well-groomed crosscountry trails, snow mobiles, marked ski runs and heliskiing (no, thank you!). From November to July, fun in the snow awaits, making it the longest skiing season in North America. A recent travelogue had this to say: Ragged peaks, high cliffs and impossibly blue lakes overlaid by snowy blankets that dazzle in the bright sunlight. No hyperbole here...and I wish that I had said that. The pedestrian-only Village Stroll is a shopper and gourmet’s delight, with more than 200 shops, 90 restaurants and 30 bars and pubs for soothing those aching muscles after a full day on the slopes. High on Santa’s list will be: Edgewater Lodge, a charming and delicious dining experience lakeside; Araxi, formal dining right in the Village featuring Pacific Northwest cuisine at its finest; RimRock Café, a Whistler favorite for 20 years—try the trio of halibut, ahi tuna and grilled prawns; Bearfoot Bistro, wonderful and formal; and The Keg Steakhouse and Bar. For après-ski, try Dusty’s Bar & BBQ and Garibaldi Lift Co. for late-night reveling and dancing. There is a plethora of marvelous hotels, inns, condos and resorts to choose from, but I have it on high authority that Santa will be bringing Mrs. Claus to The Fairmont Chateau Whistler this month. A dog- and kid-friendly, ski-in/ski-out resort, it defines mountain luxury. With four outstanding dining venues, the Chateau offers the finest selections from elegant dining (The Wildflower and The Mallard Lounge) to more informal fare (The Grill Room and Portobello Market). I particularly liked the European, deli-style of Portobello—great for soups, sandwiches, coffee and fresh

Mrs. Claus will have a hard time leaving such relaxing amenities and getting Santa back to the North Pole in time for Christmas Eve deliveries. As grand as all the amenities and edifices are here in Whistler—and believe me, they’re grand—nothing can compare to the magnificence of what Mother Nature has to offer. Standing atop snow-covered Blackcomb Mountain, surrounded by whiteness and quiet, I thought of these lines by poet Robert William Service in The Shooting of Dan McGrew: Were you ever out in the Great Alone, when the moon was awful clear, And the icy mountains hemmed you in with a silence you most could hear. DURING A 50-PLUS YEAR HIGH SCHOOL coaching career, Ron Holtman has garnered numerous wins and countless respect in the St. Louis athletic community. After coaching a variety of sports at Saint Louis University and Marquette (Alton) high schools, Holtman came to Saint Louis Country Day School (now MICDS) where he spent 39 years as the head football coach. Over that span, Holtman’s teams reached the Missouri state football playoffs 16 times, winning seven championships. When he stepped down from the position in 2004, his 382-101-8 career record (321-69-5 at MICDS) placed him in the top ranks of coaches with the most victories and highest winning percentage in Missouri prep football history. Holtman also taught history at MICDS, and has coached golf there for more than 40 years, winning five state titles. Today, he works with the alumni and development office and is preparing the golf team for the upcoming season. Recently, Holtman was honored for his impressive career with the Metro Legends Award at the St. Louis Hall of Fame enshrinement dinner. LN caught up with Holtman to talk about that evening and his success through the years.

Q&A Congratulations! What did it mean for you to receive such an honor? I was rather astounded, and at the same time, very pleased to accept it personally and on behalf of MICDS and the other schools where I’ve worked. It’s an accumulation of years getting to do what I enjoyed: coaching and teaching. But the idea of ‘living legend’ is pretty difficult to grasp. I qualify for one half of that—I’m still living! What was your favorite part of the evening? There was a large group of supporters from the school—alums, parents, students I coached and taught—who attended the event, and that meant a lot to me to see them there. At one point during the evening, I was being interviewed by a former student of mine, Tom Ackerman, and suddenly a song broke out. In the audience, former players and students were standing up, singing the Country Day fight song. That really registered with me because they know how much that song and being involved with the school means to me. What is it about coaching and teaching that you love? The most gratifying part is being able to develop a relationship with the kids you’re working with.

Ron Holtman I don’t think there’s any difference between coaching athletics or teaching in a classroom— you have to use the same principles. I realized how lucky I was to be involved in this profession.

With seven state football championships and five state golf titles, what is your secret to success? I was very fortunate that MICDS and every school I’ve worked at had a very strong program, and the schools appreciated both athletic and academic excellence. I just made sure I maintained the integrity and quality of those programs. It was my job, but I never looked at it as hard work. Do you have a favorite career memory? One of my most happy, gratifying achievements was winning the state championship in 2004 in double overtime over a very strong Harrisonville team, which also was the last football game of my career. That was one of the better ones. What have you enjoyed about coaching golf? It’s different from football. With golf, many of these kids come in prepared and know how to play the game. Sometimes, instead of coaching, you’re just managing the game and making sure the kids

stay on track, and the rest is up to them. The opponent is the course and yourself, rather than some tough guys on the other side of the field.

Do you have any advice for high school coaches today? I think the majority of people who go into this profession do it for the reason that they love it and they’re going to do the best job they can. They may have different approaches, but they have a real zeal for what they’re doing and a sense of fairness. There’s no magic formula—I’ve just been very fortunate, and I’ve had a lot of fun. The St. Louis Sports Hall of Fame also inducted or presented awards to the following individuals and groups: Bob Costas, Glenn Hall, Don Coryell, Jim Edmonds, Al Trost, Harry Gallatin, Bill DeWitt Jr., Orlando Pace, Ken Boyer, David Gall, Jim Hanifan, Ellen Port, Dr. Stan London, Dr. Richard Lehman, Teri Clemens, Bill Seebold, Tom O’Toole, the Boys & Girls Club of St. Louis and the Webster University baseball team.

I mean what on earth could possibly eclipse the birth of that baby?

RIHANNA The sexy pop star landed a new gig last week: She was hired as a runway model for the now notoriously racy Victoria’s Secret fashion show. The lingerie designer let the singer strut her stuff, sporting a lacy bra and panty set under a short, sheer robe. Rumor has it she was the hit of the show. Although apparently nobody told her where the runway ended, as she continued out the door in the outfit and hit the town for sushi and dancing.

HOLLY MADISON The former Playboy playmate and Girl Next Door, and current pregnant nesting housewife was recently hospitalized with severe morning sickness. Madison was quoted as saying she was vomiting all the time, and something just felt really wrong, so her doctor told her to go to the emergency room. It’s true that can be scary. I mean, after seven or eight fuzzy navels, you usually just vomit once or twice, and then it’s over.

OU KNOW WHAT? I GET IT. Well, I mean I’m starting to get it. Kids grow up. They walk, they talk. They learn to add and subtract; and eventually, they reach a level of algebra that surpasses my diminished capacity. They learn how to play a sport or a musical instrument. They may even pick up a second language. However, here’s something you might not know: They drive. And we’re not talking Big Wheels or those little imitation things that buzz up and down the driveway—actual cars. Last week, Cranky turned 15. It was a Sunday and it was pretty much like any other day; well, any other birthday. She chose where she wanted to go for dinner, opened a few gifts, replied to 72 Happy Birthday texts and read the 2,000 wall posts from well-wishers on Facebook. You know, pretty much like when we were kids. All in all, it was a very pleasant day. At least that’s what I was thinking as I settled in for the evening to catch up on an old episode of The Mentalist. That’s when it happened. It seems like that’s when it always happens—like that moment in a slasher flick when the main character finally breaths a sigh of relief, safely tucked away in a closet, and suddenly, the ax smashes through the door. Mom, can you take me to the license bureau tomorrow? I want to get my learner’s permit. Um, what? I quickly circle the wagons and prepare my defense—I knew that law degree would pay

TANGENTIAL THINKER off at some point. Well, you know there’s a test, right? To my surprise, she is prepared with her response. I know there’s a test. I told you I’ve been studying. Silly me. When a child is in their room ‘studying,’ I just assume they are talking on the phone or watching TV. I’ve taken four practice tests, and I passed two and failed two. OK. I’m liking my odds—factor in nerves and the oh-so-cozy atmosphere at the DMV, there’s no way she’s passing that test. So off we go. In she goes. Out she comes. Out she comes with a suspiciously official-looking document. She passed. By one question, she passed. I drove us back to a less-congested area and was promptly ordered to surrender the wheel. The remaining blocks passed in a blur. I can recall a few winces, a dashboard grab and a strong leftward lean—as if willing the car not to hit a mailbox. I know the policy about drinking and driving, but I’m wondering what the rules are for passengers. Well, 352 more days of this and she’ll be on her own—a licensed driver. Then I can stop worrying. Right?

ALWAYS WANTED TO BE SOME SORT OF ‘BUFF’—TURNS out I am a movie buff. I also happen to love all things Hitchcock; well, most things Hitchcock, and frankly, I thought I knew quite a bit about the man. Turns out that wasn’t the case, and I have this film to thank for enlightening me. Hitchcock is quite simply an intelligent and brilliantly acted film about a genius and his many obsessions. Our story begins late in Alfred Hitchcock’s (Anthony Hopkins) career. Paramount offers him script after script, and he rejects them with overt disdain. Then he discovers a novel called Psycho, the story of Ed Gein, the most notorious serial killer of the time. Among other atrocities, Gein exhumed his dead mother and kept her in her bed. Psycho is going to be Hitchcock’s next film…of course, not if the studio or the censors have anything to say about it. Hitchcock finances the film himself; and with the help of his wildly capable wife, Alma (Helen Mirren), and devoted secretary, Peggy (Toni Collette), they go to work. He casts Janet Leigh (Scarlett Johansson) in the lead role, Anthony Perkins (the uncanny James D’Arcy) as Norman Bates, and Vera Miles (Jessica Biel) as the sister. Hitchcock slaves tirelessly over the film; meanwhile, he walks a fine line between voyeur and pervert as he perpetually scours the landscape in search of the illusive Hitchcock blonde. I cannot tell you how much I enjoyed this film. Hopkins and Mirren are both on the Oscar short list after this fabulous journey back to the golden age of Hollywood.

Sam is a struggling young actor in New York City. To make ends meet, he toils away, taking reservations in the cramped, windowless basement office of a tiny restaurant in Manhattan. A typical day for Sam is dealing with upper-class sorts, making calls for the ‘best’ table at the trendy establishment, as well as taking myriad and maddening orders from the maitre d’, the executive chef and his co-workers. He also gets to listen to the sundry excuses offered by his talent agent for Sam’s painfully meager acting assignments. Not only is the restaurant ‘fully committed,’ as in the parlance preferred by the executive chef that indicates ‘filled to the brim’ with diners, but Sam is on the brink of losing his sanity, as well, especially with Christmas approaching and his prospects of going home to South Bend, Ind., increasingly unlikely.

HIGHLIGHTS This one-act comedy has been a hit ever since it was conceived by playwright Becky Mode and performer Mark Setlock in 1998. A single performer, Greg Fenner, essays an incredible 41 roles in the 90-minute work.

Somehow, director Gary Bell precisely navigates Fenner through this mind-numbing maze of characters, each of which the actor presents as different from the others in his whimsically creative fashion. It’s a tour de force performance that is all the more ingratiating for the way that Fenner keeps focused on the story rather than capitulating to easy laughs, resulting in a remarkable and frenzied evening of achievement. Fenner’s work is anchored by the portrayal of Sam as a genial, energetic young man who resorts to periodic, impromptu exercises to re-energize his spirits after each flurry of frenetic phone calls. He’s also the arrogant executive chef, the timid receptionist, the officious maitre d’, etc. Fully Committed is an engaging and charming piece and a smart choice by Bell for a holiday offering. That’s especially so with the gifted Fenner decking the halls of Tower Grove Abbey with his magnificent performances—all 41 of them. BY MARK BRETZ

Gerard Butler needs to fire his agent. How on earth he attaches himself to these projects, I have no idea. I mean, I muddled through The Naked Truth, where he wooed the flinty Katherine Heigl. I threw up a little into my mouth during Bounty Hunter with the lovely Jennifer Aniston. I tried to go see his surfing movie, Chasing Mavericks, but apparently between the time I pulled out of my driveway and the time I parked my car, it had left theaters. Here, I draw the line. George (Butler) is a washed-up sports star who has lost everything. In an attempt to win back his wife, Stacie (Jessica Biel), and son Lewis (Noah Lomax), he volunteers to become the children’s soccer coach. Forget match.com or the bar scene—become a soccer coach and desperate, libidinous soccer moms will be on you like chrome on a bumper. I can’t really tell you much more after that. Viva Sorella! MIA SORELLA, THE NEW restaurant from brothers Jamie and Steve Komorek, wh o ow n t h e p o p u l a r Trattoria Marcella in South City, aims to take fresh, traditional Italian fare out to West County. A casual, family-friendly vibe pervaded the restaurant. It was by no means Trattoria West, but definitely had its own personality. The atmosphere was more laid back, thanks to the open kitchen and spacious bar at the front of the space. Planning ahead is a wise move before dropping in for a bite. Mia Sorella doesn’t take reservations; and though we visited early in the evening in the middle of the week, every seat was taken by the time we left, so expect a bit of a wait. The cocktail list was actually pretty lengthy, and it was good to see so many classics available, but the execution was a little off. For instance, The Southside ($8) was billed as containing gin, tonic, ginger liqueur, lemon juice and absinthe. A traditional version of this drink has mint, and the fizz from seltzer or club soda instead of tonic, but we were game to try this variant, and especially curious to see how the addition of ginger and absinthe would play out. But the tonic overpowered everything, and the result was a tall gin and tonic. Fortunately, the cocktail ‘fail’ was mitigated by some tasty apps and entrees. The Warm Prosciutto and Fontina Spiedini ($8) from the Antipasti selections was a great way to start. Two skewers of meat and cheese, served on a bed of baby arugula that had just a bit of balsamic and olive oil drizzled over it, was a sort of appetizer and salad all in one, and a savory yet light way to start off. The Angel Hair Puttanesca ($12) was a hearty combo of pasta and the traditional spicy red sauce of capers, black olives and anchovies. For an extra $5, we added scampi to the mix, which were huge and tender with a light breading. The Herb Crusted Scampi ($17) from the Secondi list, were grilled and served around a cauliflower cake with tomato, BY SIDNEY LEWIS

basil and a little lemon. The cauliflower cake was the real star of this dish, creamy but not mushy, and surprisingly flavorful. Oddly, the scampi were actually fewer in number and smaller in size than the ones served as add-ons to the pasta. We paired this dish with a glass of Girard 2010 Russian River Valley Chardonnay ($10), which was serviceable; but in hindsight, we should’ve gone with something a bit heavier, like a good pinot noir. For dessert, Budino ($6), a chocolate pudding with caramel and topped with whipped cream, served in a jar, was a sweet, rustic way to finish up. There also was a wide selection of other dishes available, including an array of pizzas and paninis, as well as classics like Fruitti Di Mare and Chicken Milanese, and lunch service was also an option. Confit Turducken Deep-Fried Q: Chef, with the holidays around the corner what to cook is the center of conversation at my house. It always comes down to deep-fried turkey or a Louisiana-style turducken. A family divided. Please help me, what do you think? A: What a dilemma! Deep-fried turkey is popular in St. Louis; and the turducken, which was reintroduced by Chef Paul Prudhomme, involves the process of stuffing a bird within a bird. In this case, a chicken within a duck within a turkey. These roasted creations are found from Iceland to Persia, where the largest stuffed item on record is eggs in a fish in a chicken in a lamb in a camel. The delicacy is served at wedding dinners of sheiks and other VIPs, and holds a Guinness record. Both of your choices are great, and I don’t think I can decide which I like better. So here is a recipe that I think will settle—once and for all—the battle of the birds. It takes time but the wait is well worth it. As an added touch, I made a peach and pecan butter and rubbed it over the skin before serving.

Editor’s Note: Chef John made his first-ever deep-fried turducken last month and gave LN staffers the honor of being the first ones to taste-test his creation. The triple-bird masterpiece was a huge hit…in fact, we’re still talking about it…

INGREDIENTS

The Confit

For The Brine

4 bunches fresh oregano

Fresh ginger root (approx. 5 inches), peeled and split

Bring water to a boil in large, deep pot. Add ingredients for the brine. Boil 10 minutes. Refrigerate overnight. The next day, add the chicken, duck and turkey to the brine. Make sure the meat is completely submerged. Cover and refrigerate for two days.

Roll the birds together; and using butcher twine and a trussing needle (this is a large sewing needle that is used to stitch the meat and skin back together), sew the two ends back together tightly. If you do not have a trussing needle, you can tie the bird together in consecutive knots about every inch down the length of the bird. Be sure to tie the wings and legs close to the body.

Debone and shin the chicken and the duck. For the turkey, remove the breast cavity and thigh bones, leaving the wings and leg bones for presentation. If you do not know how to do this, most butchers will do it for you at no extra charge.

Lay the turkey skin side down on your cutting board, season with salt and pepper and spread your favorite stuffing (mine is an andouille corn bread) thinly over the meat. Next, lay the boneless and skinless duck meat down and repeat the seasoning and

Now that your birds are tightly trussed, rub the entire bird skin of the turducken with the rub and let rest for about 4 hours. In large roasting pan, place all dry ingredients on the bottom of pan, layering the bacon on top. Place the turducken on top of herbs and bacon. Add bacon fat and butter; and then fill enough oil to cover the entire bird. Cover and place in 275-degree oven for approximately 3 1/2 hours. Use a thermometer to make sure the internal temperature is at 160 degrees. Have your fryer ready when the turducken is done. Carefully remove turducken from oil, and let rest for 15 minutes before deep-frying. Deep-fry for about 7 to 10 minutes until golden brown, and remove.
