Serves 4
Ingredients Pastry: 1 c (250 ml) cake flour 1/2 tsp (2.5 ml) salt 2 sprigs of thyme leaves 3 Tbs (45 ml) finely grated parmesan 80 g salted butter 1 large egg, beaten +- 1 Tbs (15 ml) cold water Filling: 500 g Romanita Tomatoes, halved 2 garlic cloves, crushed 3 sprigs of thyme Olive oil for drizzling Freshly ground salt and pepper 1/2 tsp (2.5 ml) corn flour 1/4 c (60 ml) finely grated parmesan 100 g chevin or creamy goats cheese, broken into pieces Extra sprigs of thyme 1 large egg, beaten
Method Place the flour, salt, thyme, parmesan and butter into a food processor. Blitz until mixture resembles fine breadcrumbs. While the motor is running add the egg and water. Blend for a few more seconds until the mixture forms a soft pliable dough. Remove, roll into a ball and then flatten. Wrap in clingfilm and chill in the fridge for at least 30 minutes. Meanwhile, preheat the oven to 180°C. Place the tomatoes (cut side
up), garlic and thyme onto a baking tray. Season and drizzle with olive oil. Roast for 30 minutes. Allow to cool completely. Pick out the slow roasted tomatoes and place them in a medium bowl and gently mix with the corn flour as this will help prevent a soggy filling. Gently roll the pastry out into a circle shape and place onto baking paper. Slide onto a baking tray. Sprinkle the parmesan onto

the base, specially the center. Arrange the tomatoes, goats cheese and thyme in the center of the pastry, leaving a border around the filling. Fold the pastry toward the filling, creating a galette – a rustic open tart. Brush the exposed pastry with egg. Bake at 180°C for 30 minutes or until golden and the base has set. Allow to cool for 15 minutes before slicing. Serve with a crisp rocket salad.

Tydens hierdie sessie het verskeie rolspelers in die plaaslike sitrusbedryf bymekaar gekom om verskeie aspekte van die industrie te bespreek en aan nuwe produkte bekendgestel te word. Francois Froneman van VKB Hoofkantoor het saam met twee ander gassprekers, Michael Koch van Haifa en Marius Boshoff, Nasionale Bemarkingsbestuurder vir Villa Crop, die boere by dié ge-
leentheid toegespreek oor die nuutste produkte wat hulle glo die bevordering van die bedryf sal aanhits. Die studiegroep sou oudergewoonte in die onthaalsaal van die populêre Letaba Junction gehou geword het, maar moes na die saal geskuif word na die verwoestende brand by Junction, vroeër dié maand. Premium Readymix is a newly established ready-mix provider operating within the Tzaneen area. This company boasts the very first Imer Betonmatik 1008 Wet Batch plant in South Africa. There’s no denying that drilling a borehole is a messy business. Limpopo scoops two awards The MEC for Agriculture and Rural Development Mr Basikopo Makamu expressed joy at two Limpopo Female Entrepreneurs emerging with top honours in their categories during the National Female Entrepreneurs Awards hosted by the Minister of Agriculture, Forestry and Fisheries Mr Senzeni Zokwana yesterday evening in East London, Eastern Cape. The two Limpopo Winners are: Paulina Dorcas Maleka: Top Entrepreneur Commercial.
She won the prize money of R250 000, Certificate and a trophy. Selina Mphedziseni Mulobedzi who walked away with the Ministerial Special Award for Disabled Female Entrepreneur. She won the prize money of R100 000. The National Female Entrepreneur Awards are the grand finale of Provincial Female Entrepreneur
Awards where winners are selected to represent individual provinces at the National Awards held under the auspices of the Department of Agriculture, Forestry and Fisheries.
Selinah Mphedziseni Mulobedzi (Vhembe District) Paulinah Dorcas Maleka (Waterberg District) She started farming in 2008 and has shown determination and commitment by working hard to keep her farm operational. She started farming a 2 hectares of land and extended to 8 hectares to meet market demands. Currently she is operating on a 220 hectares for sunflower, 8
hectares for cash crops and 20 hectares for buffalo grass to feed her livestock she plants a variety of vegetables such as butternut, green pepper, spinach and carrots for formal markets and retail outlets. Maleka employs 10 permanent workers and 70 seasonal workers.
Mulobedzi started farming in 2007. She started off with her daughter in law. The Department of Trade and Industry provided her with a cash injection to procure a 10 000 litre reservoir, fencing, poles for nursey, nursery nets and 200 trays for seedlings. She employs five permanent and 12 seasonal workers. The Female Entrepreneur Awards seek recognise, encourage and increase the participation of women in agriculture. In the medium
to long term the project seeks to elevate women from subsistence farming to the mainstream of the sector. “We want to see the awards grow big and bring more women into agriculture,” explained Molebatsi Masedi, spokesperson for the office of the MEC for Agriculture. “Extension officers who are in daily contact with farmers are to be commended for the good work they are doing to provide support and guidance out in farms.”

Optima, Sakata se kool vir somerproduksie Kool is oorspronklik ‘n wintergewas wat gedurende herfs geplant word, deur die winter groei en in die lente geoes word. Met die verloop van tyd is nuwe variëteite geteel wat geskik is vir verbouing regdeur die jaar selfs deur die winter. Die verskeidenheid van kole wat vandag beskikbaar is, wissel in grootte, vorm en kleur. Die verbruiker kan kies en keur tussen koolkoppe van verskeie groottes, vanaf babakool tot koppe van 4 kg en selfs groter. Die vorms van die verskeie koppe kan ook wissel tussen spits, plat, semi-rond en rond. Daar is selfs ook ‘n keuse tussen groen kool en rooi kool. Vandag se baster variëteite beskik verder oor goeie siekteweerstand wat nodig is vir die produsent om ‘n goeie oes te verkry en om chemiese bespuiting te verminder. Suid-Afrika en Afrika is uniek in die sin dat ons hou van groot koppe vanaf 4 kg en selfs groter. Sakata se koolvariëteit Optima, bied presies wat die produsent verlang – goeie kwaliteit groot koppe met uitstekende siektebestandheid: Optima beskik oor intermediêre weerstand teen Swartvrot en is dus hoofsaaklik geskik vir areas waar die Swartvrot druk baie hoog is - veral met die huidige wisselvallige klimaatsomstandighede, bied dit die produsent addisionele versekering van goeie kwaliteit koppe. Die sterk groeier neem ongeveer 80 tot 100 dae om bekwaamheid te bereik nadat dit verplant is, afhangende van die temperatuur. Die groot raam beskerm die koppe baie goed teen sonbrand asook windskade. Optima se koppe is semi-rond tot rond met ‘n kopgrootte tussen 3 en 5 kg - afhangende van die plantpopulasie, kan dit selfs groter wees.

Voor opkoms kan kunsmis saam met die bedvoorbereiding ingewerk word.
Saailinge Dit is baie belangrik dat goeie kwaliteit, sterk saailinge geplant word. Swak saailinge lewer swak kwaliteit, klein koppe wat op die ou einde ‘n lae opbrengs te weeg bring. Die produsent moet ook seker maak dat die saailing se groeipunt nie beskadig is nie, aangesien dit daartoe kan lei dat die plant geen kop kan vorm nie, of meer as een kop vorm wat nie bemarkbaar is nie. Die saailinge moet verder ook nie te lank raak in die saailaai voordat dit uitgeplant word nie, aangesien lang saailinge na uitplant kan verwelk en beskadig kan word deur die son. Dit is belangrik vir die produsent om gebruik te maak van ‘n betroubare saailingkweker om te verseker dat die aanplanting van die begin af met goeie kwaliteit saailinge gevestig word. Sommige produsente poog om kostes te spaar deur hulle eie saailinge te kweek, wat gewoonlik lei tot swak kwaliteit saailinge wat verskeie probleme tot gevolg het soos swak plantjies, lae uitsny persentasies, swak eenvormigheid, siektes in die veld afkomstig van die saailinge, swak wortelstelsel en nog baie meer. Asian Cabbage Salad with Ginger Peanut Dressing Prep Time: 20 mins. Serves: 8
Ingredients
1 teaspoon sesame oil a dash of Sriracha (Hot Sauce) 1 small green cabbage shredded 1/2 small red cabbage shredded 3 large carrots peeled and shredded 1/4 cup chopped green onions 1/4 cup chopped peanuts
1/4 cup natural peanut butter 3 tablespoons liquid honey 2 cloves minced or pressed garlic 1 tablespoon grated ginger a pinch sea salt 2 tablespoons soy sauce Instructions 2 tablespoons rice vinegar Add the peanut butter, honey, garlic, gin2 tablespoons lime juice ger, sea salt, soy sauce, rice vinegar, lime 4 teaspoons vegetable oil
juice, oils, and sriracha to a medium bowl and whisk well until combined. Add the shredded green and red cabbage to a large bowl, along with the shredded carrots.
