ebruary is American Heart Month, and along with the hearts and flowers you might be sharing around Valentine’s Day, this is also a time to show love to that organ in your chest that powers your life. Self-care is the theme of many of this year’s advocacy efforts, and for good reason. Heart disease is a leading cause of death for women and men in the United States, and many Americans remain at risk of getting it, according to the National Heart, Lung, and Blood Institute (NHLBI). People with poor cardiovascular health are also at increased risk of severe illness from COVID-19. Yet heart disease is largely preventable and focusing on improving your heart health has never been more important. “Studies show self-care routines, such as taking a daily walk and keeping 10 LimitlessMagOnline.com | February 2022

doctor’s appointments, help us keep our blood pressure in the healthy range and reduce our risk of heart disease and stroke,” said David Goff, M.D., NHLBI director of cardiovascular sciences. “Simple self-care, such as taking a moment to de-stress, giving yourself time to move more, preparing healthier meals, and not cheating on sleep can all benefit your heart. “ Dr. Steve Iuliano, cardiologist at Atrium Health Sanger Heart & Vascular Institute Lake Norman, puts diet and exercise at the top of the list of things people can do to improve their own heart health. The priority in diet is to move in the direction of a plant-based diet. “The main thing we promote is a plant-based diet and avoiding highly processed foods,” said Iuliano. “A good way to head in this direction is to adopt a mediterranean diet. that

will greatly reduce your risk of cardiac events.” There are a lot of resources available to support a mediterranean diet, which features lots of fruits, vegetables, whole grains and olive oil. The mediterranean diet was recently ranked #1 of 40 popular diets and eating plans reviewed by a panel of health experts for U.S. News & World Report. The ranking considered not just health benefits, but also how easy the plan is to adopt and continue. The DASH eating plan, specifically developed to lower high blood pressure, was ranked #2. Iuliano notes that based strictly on heart health benefits, a vegan diet might be ideal, but may represent too


great of a lifestyle change for many people. “We don’t want to push people away. And nobody should feel bad about having the occasional steak,” Iuliano said. You improve your health by moving in the right direction. Eat less red meat, avoid processed foods, with their excess sodium and saturated fats. And avoid excess sugar. No extra spoonful in your sweetened iced tea. Exercise is the second major area of self care. The motto here is: Just move more. A good benchmark, Iuliano notes, is to set a norm of 150 minutes per week of continuous activity. That breaks down to 30 minutes a day, five days a week. It can simply be walking, but must be continuous. A walk with a pet that stops and sniffs at every tree or shrub on your route will not be effective. The key is sustained activity. Moderate Iuliano says studies show

that developing the habit of including at least this much activity leads to major reductions in risk of cardiac disease. Along with the aerobic exercise, some regular strength training -- weight lifting or resistance training -- is important for maintaining muscle mass, which among other things, increases your metabolism and helps with weight control. The education website of the American College of Cardiology, www.cardiosmart. org/exercise provides good information about making an exercise plan. Of course, if you do have heart disease or another heart condition, check with your medical team before taking on new activities. Beyond eating better and moving more, it is important for your heart health to reduce the impact of stress in your life. “We have become much better over the

years at recognizing and acknowledging the impact of stress on your health,” said Iuliano. One important aspect of this is belonging to and reconnecting with a supportive social group (this is where hearts and flowers work together). Another is to have ready stress-busting strategies. These could include going for a 15 minute run, yoga, breathing exercises, listening to music, or a number of mindfulness exercises. Another great favor you can do for heart is to avoid tobacco. If you don’t smoke, good. If you do, find a way to stop. It can be very difficult, Iuliano concedes, and he notes that Atrium Health, along with other insurers, offer supportive smoking cessation programs. The benefits are enormous -- quitting smoking reduces the chance of a repeated heart attack by 50%. Some media depictions of self-care seem to lightheartedly promote alcohol consumption. Many of us have also absorbed folklore and studies showing a glass of red wine a day is good for the heart. That has been disproven, Iuliano says, it actually does more harm than good. And while an occasional drink may not be a problem, drinking alcohol daily is not good for your heart. Iuliano also cautions about the use of aspirin as a preventative for heart problems. “The risk of bleeding from aspirin may outweigh the benefit. It is indicated for patients with a history of coronary disease, stroke or other vascular disease,” Iuliano said. “People should not start or stop aspirin without consulting their health care provider.” As we age, heart health becomes more of a focus not just for our own habits but also for our primary medical care and routine maintenance. Those tests you get are important. “You should know your cholesterol number,” Iuliano said. “You should consider it one of your vital signs.” If the number is too high, lipid management, either through therapeutic diet or medication, becomes necessary. Keeping an eye on your blood pressure and blood glucose levels is also important in understanding and managing your risk factors. So heart your heart this month. ere it comes again, that special day in February when we focus on really getting to know the one we love and bringing our best selves forward to connect with them and win their hearts. If you’re a fan of the romantic comedy Groundhog Day, you might say that it is February 2, when a groundhog spotting its shadow allegedly predicts the remaining length of winter. Meanwhile, caught in a curious time-loop, Bill Murray’s character, the cantankerous Phil Connors, lives the same day over and over again until he learns the lessons he needs to learn to win the love of the beautiful and sweet-tempered Rita Hansen (Andie MacDowell). There is another February holiday for love, though, and it only comes once a year. Fortunately, you can plan ahead to make sure February 14, Valentine’s Day, is a fun, memorable day. No need for any interruptions in the time-space continuum. Whether you are trying to impress a new partner or prospect or celebrating a love that has endured for decades, look at Valentines Day as an opportunity for fun, self-expression, and growing closer through communication. Let’s start with that communication. There is nothing like asking your loved one “what would you like?” or “how about we do this..?” Studies have shown that as much as many people say they like surprises, at least in terms of gifts, they are most satisfied when they get something they have asked for. And since we are not in a Groundhog Day loop where we can slowly accrue the knowledge, it helps to ask. In a brand new relationship, just mentioning the day ahead of time and casually asking whether you would like to exchange gifts, can avoid misguided efforts and disappointment. But if it’s clear you both want to make a real event out of the day, start thinking about it early. Here is a suggested countdown checklist: 10. Pick and prepare your itinerary. If it’s going to be a weekend in Cabo,

book it now. If it’s going to be a night out on the town, make reservations early. If you are free during the day, consider a walk in a lakeside park or nature reserve, or a relaxed stroll through downtown Davidson. If its dinner in, clear up and decorate the house in advance. Think about flowers, bunting, candles. And don’t forget atmosphere - you will want a playlist of romantic music to enjoy as your prepare and enjoy your meal, and for dancing. 9. Build anticipation. Let the object of your affections know that you are looking forward to the celebration. Leave messages on their devices, leave “sweet nothing” notes around the house and in the car, in a bag, toolbox, anyplace they might be surprised to find them. 8. Surprise them with a nice gift. You know, or you will find out, a favorite perfume or cologne. Or you will find some nice jewelry or an accessory they would love. Or book a trip to a spa (this could be a destination for you both, or an indulgence to be enjoyed later). Practical gifts are not out of line, either, if they are tied to a meaningful activity or passion. Gardening tools and hiking boots could be romantic. 7. Think about creating experiences and memories. Some will say that 2022 is extremely special because for the first time ever the Super Bowl is taking place the day before Valentine’s Day. Whichever event you are more excited about, let it inform your planning — football and love both deserve celebration. Look into other events around that weekend that could make the time special. For example, concerts in mid-February in Charlotte this year include big names from classical to jazz and pop: Andrea Bocelli, Pat Metheny, The Weeknd, Black Violin, and Dua Lipa. 6. Say it! Yes, you are going to buy or make a nice card in advance of the day. Inside, though, or separately, you will need some words of your own to

express your feelings. Now, can you borrow a line or two from an existing poem or love song? Yes, you can. There is no shame in drawing inspiration from, say John Legend’s “All of Me” or The Bangles “Eternal Flame.” William Shakespeare had some good lines, too. But every love has its own story to tell. The process of composing your love letter, or poem, or song, will help you get into that romantic mood. 5. Be prepared. Shop ahead for the ingredients for that special dinner. Decide what you are going to wear. That special gift - have it wrapped and hidden, but available for when you want to present it. 4. Be romantic! Even if, especially if there are some strains in the relationship, take this time to renew those loving habits of kindness, consideration and affection. ComplimentsAlso, celebrate memories you have of past celebrations together. Bring out your favorite photos of yourselves together. If so moved, share some ‘throwbacks’ online with friends #stillinlove. 3. Cover the traditional basics. Some people have allergies, some people think chocolates and flowers are a cliche. But they work for a lot of us. Be sure to order the flowers early whether you are picking them up or having them delivered. If possible, visit your local florist or gift shop in person to make selections and get expert advice and little extras you might not think of otherwise. 2. Celebrate the whole day. You may have work or other commitments during the day, but look for ways to connect as early as possible and as late. Don’t leave out that first “Happy Valentine’s Day!” in the morning, or the last one at night. 1. The point of it all is to have quality time together. Given that February is the month of love, I am going in the opposite direction, keeping with my somewhat offbeat approach to the events in this column. This month’s Moment in Time will focus on little-known and/or significant battles that took place in February. I might even throw in a February divorce or two!

1, 1662

Chinese pirate Koxinga seizes Taiwan after a nine-month siege. I never knew the China and Taiwan issue went so far back.

2, 1943

Last German forces surrender to Soviet Army at the Battle of Stalingrad. The Russian winter claims another megalomaniac bent on dominating the world.

3, 1943

U.S. Captures the Marshall Islands in WWII. The Marshall Islands had been occupied by Japan since the start of WWI. U.S. troops landed on January 31st and took control on February 3rd.

4, 1985

George Foreman divorces Andrea Skeet after 3 years. Maybe she didn’t appreciate his grill. Perhaps she was right.

5, 1945

Gen. MacArthur fulfills his promise and returns to Manila. MacArthur understood the far east better than any other American, making him perfect for managing Japan after the surrender.

5, 1958

A Hydrogen bomb was lost by U.S. Air Force off the coast of Savannah, GA, and was never recovered. N.C. had a similar incident. On January 23rd, 1961, the Air Force accidentally dropped two Mark 39 hydrogen bombs over Goldsboro, North Carolina. Union Gen. William Tecumseh Sherman marched north from Savannah, and Union troops burned

Columbia, SC, in much the same manner and reasons as Atlanta. Charleston thought Sherman would march up from Savanah and lay waste to the city. Sherman chose Columbia because he had an affinity for Charleston, having served at Fort Moultry in the 1840s.

Japan declares Manchuria independent from China. Japan’s war in Manchuria was one of the most brutal in history.

The Battle of Gallipoli began. Great Britain lost 115,000 troops. Most were under the command of Winston Churchill. Yet he recovered politically to lead England as only he could to victory in WWII.

A 13-day siege of the Alamo begins in San Antonio. The first time I saw the Alamo up close, I was disappointed it was in downtown San Antonio!

23, 1945

Perhaps the most iconic war picture was the photo taken when a group of Marines reached the peak of Mt. Soup Season is here There’s nothing more comforting on a cold winter night than a big pot of delicious, satisfying soup. This recipe is no exception. If you’re looking for comfort food fast, this Tuscan Tortellini Soup is for you. Ready in only 30 minutes! Simply add your favorite tortellini to this chicken broth based soup with diced tomatoes, onion, chicken, white beans, heavy cream & spinach, and dinner is ready in a flash! To keep this recipe quick and easy, I use shredded rotisserie chicken, and refrigerated tortellini from my local grocery. This recipe makes 6 servings, but can easily be doubled to serve a larger family or for casual entertaining. Soup is the original one-pot meal. Throw the ingredients in, let it cook, and enjoy! If there are any leftovers, store the soup in the refrigerator in an air-tight container for up to 3 days. You can reheat the soup in a saucepan on the stovetop over medium-low heat until warmed through; or use the microwave. So delicious served with crusty bread!

Tuscan Tortellini Soup Servings: 6 Prep time: 5 minutes Cooking time: 15 minutes

Ingredients

2 tbsp unsalted butter 1 small onion – diced 3 cloves garlic – minced 4 cups chicken broth 28 oz. can diced tomatoes 1 (15 oz.) can white beans – drained & rinsed (cannellini or chickpeas) 1 cup heavy cream 1/4 cup grated parmesan cheese 1 tbsp Italian seasoning 1 tsp salt 1/4 tsp fresh ground pepper 2 cups cooked, shredded chicken ( from a rotisserie chicken or 2 (12.5 oz.) cans of chicken) 9 oz. package of tortellini 4 cups fresh spinach

Directions

• Melt butter in a large pot over Medium heat. Add diced onion & garlic; sauté 3-4 minutes, until onion is tender. • Add chicken broth, diced tomatoes, beans, heavy cream, parmesan cheese, Italian seasoning, salt & pepper. Stir & bring to a simmer. • After soup reaches a simmer, add chicken, tortellini & fresh spinach. (Note -At first, 4 cups of spinach will look like way too much! But, after stirring for 2-3 minutes, the greens will start to wilt and significantly reduce in volume.) • Let simmer for 10 minutes to thicken & for the tortellini to cook. 20 LimitlessMagOnline.com | February 2022


February is the perfect time to make a treat for someone sweet! This easy No-Bake Raspberry Cheesecake is irresistibly creamy and oh, so pretty in pink, thanks to tasty raspberry jam! To make this cheesecake even better, we are using Oreos for the crust. And not just the cookie part; we’re using the cream filling too! It’s perfect for binding the crumbs together in the crust. Generally, a no-bake cheesecake requires a firming agent such as gelatin, to create a firm cheesecake filling. But in this recipe, we are using raspberry jam primarily to add that amazing berry flavor, but also because as a jam, it already includes gelatin! Sweet! There are 2 other steps you must do to ensure a firm cheesecake filling: 1. Use full fat cream cheese! Not only is it more delicious, but the fat also helps create a firm cheesecake filling. 2. Refrigerate your cheesecake for a minimum of 8 hours. No less! Of course, if time is an issue, you can always freeze your cheesecake for an hour or so, to help it set up. I hope you love this luscious cheesecake as much as we do! It’s the perfect Valentine’s treat for your sweet!

A Berry Sweet Treat

Raspberry No-Bake Cheesecake Prep Time : 30 minutes Chill Time : 8 hours Servings: 10

Ingredients

½ package - Oreo Cookies ¼ cup (4 tbsp.) unsalted butter, melted 16 oz full fat cream cheese, room temperature 1 cup powdered sugar, sifted 1 teaspoon vanilla extract ½ cup whipping cream, chilled ½ cup seedless raspberry jam Optional garnishes: fresh raspberries, for topping powdered sugar, to dust on top

Directions

Crust • Using a food processor, blend the Oreo cookies into fine crumbs. • In a separate bowl, combine crumbs with melted butter. Mix well and pour into a 7-inch springform pan (or 4- 4 inch mini springform pans) lined with parchment paper cut to fit the base. • Distribute evenly and tamp the mixture down with the bottom of a juice glass to form the crust. • Refrigerate while preparing the filling, at least 30 minutes. Filling • In a bowl, blend cream cheese with a hand mixer until fluffy. Next, add in powdered sugar and vanilla extract; mix until combined. • Add raspberry jam into mixture with hand mixer, until completely combined. Set it aside. • In another bowl, whisk the whipping cream with the hand mixer until soft peaks form. Finally, gently fold the whisked whipping cream to the cream cheese mixture using a spatula. • Pour filling into the prepared pan. Shake the pan gently to release any air bubbles in the filling. Smooth out the top using an offset spatula and chill in the refrigerator for at least 8 hours. • To serve, garnish cheesecake with raspberries and/or dust lightly with powdered sugar, if desired.

How To Transfer To A Serving Plate: • Run a knife all around the cheesecake and remove the springform pan. Insert a knife under the cheesecake and carefully run it all around to detach the cheesecake from the pan’s base. • Using 2 flat spatulas, gently insert a spatula underneath each side of the cheesecake to carefully lift the cheesecake off of the base and onto a serving plate. Note: Keep the cheesecake in the refrigerator, until just a few minutes before serving. Cut the slices as needed, and return the cheesecake to the refrigerator to remain chilled. ne of the things that COVID-restricted travel has dumped on us, personally, is that we’ve been unable to make several of our trips to Paris. I love the city, I love the feel of the place. And, of course, it’s a great place to dine. There’s one place we always try and head to, L’Astrance. I say, “try,” because there’s a little persistence and cajoling required but it’s well worth the effort. The last time we were visiting I called about a month ahead and, basically, pleaded for mercy, telling them that we were celebrating our anniversary. It got us in. L’Astrance is a fabulous experience and I thought you should be in the know. L’Astrance is a tiny restaurant, very tiny. It has just 25 covers and nothing of the over-indulgent luxury of typical three star places of culinary worship. In fact there are many things about L’Astrance that are curiously dissimilar to its peers and that’s why we’re so fond of it. Very unstuffy but with superb dishes and superb wines. There are no menus at L’Astrance, it is all a surprise. You have to trust the

A happy ending — a gift from the chef Michelin starred chef, Pascal Barbot. You tell them your dislikes and allergies and choose the length of the meal. Then you’re in Barbot’s hands. We opted for the seasonal lunch menu which turned out to be some ten, very small courses. I added the “wine surprise” to my courses. What that consists of is a wine paired with each dish. The wine is named only when you get to discuss it with your server. Kind of like a vinous version of Jeopardy. Huge kudos to the restaurant. I slipped up by not telling them, as I made the reservation, that my wife, Mary Ellen, and dairy products are not on good terms. I brought up the topic when they inquired about allergies. To their great credit they created an adaption or a replacement dish for every course. All delicious and made on the fly at a moments notice. Very impressive. I won’t bore you by going through every dish of our lunch, much as I’d like to relive them. Just a couple will give you a feel for the place. tarts. One of them, the Crème de Parmesan, was like taking a bite of some flavorful fresh air that exploded in your mouth. So simple, yet so amazing. Our first course was Pascal Barbot’s “Tarte au foie gras, champignons et agrumes.” A crunchy and lightly caramelized pastry base that’s topped with layers of thinly sliced, white button mushrooms. That is sprinkled with citrus zest such as orange and lime. Then comes thin layers of crisp green apple and creamy foie gras. Finally, there’s a top layer of mushrooms sprinkled with some dried porcini powder. On the plate, with the tarte, there’s a large drop of intense lemon confit puree and a drop of concentrated hazelnut oil. A complexity of flavors that all work together. Amazing. When it came to vinous Jeopardy, I was zero for three on the first three course. Then came the moment. The first red wine rang a definite bell. As I described it to Mary Ellen I recalled the last time we were at L’Astrance I had gone through the same description. This was their “trick

wine” that fools almost everyone. So there was a look of genuine surprise when I told our server that the wine was from the Langedoc region and, unusually for that region, was not a blend but was made from 100% Cinsault. A strike for Team America! The happy ending? We had a nice touch at the finale of the meal. I had mentioned that we were celebrating our anniversary. We were presented with a gift of two egg shells, one lit by a candle and one containing a sort of egg-nog. Delicious. The whole lunch takes almost three hours. You leave feeling fulfilled but far from stuffed. A simply amazing experience and, yes, it left us yearning to return. If you ever find yourself in Paris, run, don’t walk to L’Astrance. I read that the restaurant is relocating and reopening in 2022, so I won’t include their phone number. Just look it up and call ahead, plead for mercy if you have to. And then enjoy unique and incredible dining. It’s certainly something you’ll be able to talk about when you get back to Lake Norman.

No Patient Left Alone

W

e are all weary of the restrictions, masking, social distancing and other intrusions of COVID. We want a return to pre-pandemic normal. Early days efforts to save lives and control the spread of coronavirus, resulted in health care facilities restricting patients and residents from having visitors, including spouses, parents, close family members or caregivers. Many patients and residents, even those who were not diagnosed with COVID-19, experienced severe anxiety, depression, and diminished quality of life as they were deprived of physical connection with their loved ones. With the passage of the “The No Patient Left Alone Act,” the State of North Carolina ensured patients and residents of hospitals, nursing homes, adult care homes, hospice, and other treatment facilities regular visitation with friends and family of their choosing. Health care facilities must allow “compassionate care” visits during difficult circumstances including: end-of-life, a new resident struggling with a new environment, a grieving resident, a resident who needs family or caregiver assistance with eating or drinking, or a resident experiencing severe emotional distress. The facility may require compassionate care visitors to submit to health screenings and follow safety guidelines, including wearing personal protective equipment. Visitors who do not pass a health screening or who tested positive for an infectious disease may be restricted access. The COVID-19 pandemic has reminded us that we need each other. Without human connection, the quality of our lives is diminished and impaired. We need visits with family and friends, regardless of where we live and whether we are in the midst of a global pandemic. Alone is not a good place for humans.

I have to admit that the whole concept of New Year’s Resolutions never really resonated with me because in most cases, people were committing to “this year will be different” goals, like losing weight, creating a good budget, cleaning the garage etc. All good goals but many were repeated from the year before and probably would be again. Why is that? My premise is that emotions and passion drives action not obligations. This year, consider putting the check list away and create your goals for your re-invention period driven by the need to experience life to the fullest, whatever that means to you. If a financial plan focuses on the function and not the feeling, then maybe it misses the point. With today’s available software programs, creating a basic functional plan has gotten somewhat commoditized but creating an experience plan with supporting financial assets is still an art. Similar to writing a book where each chapter has its own unique subplot, adding to the overall story, life in retirement should be considered, in phases, not as an overwhelming whole. Here are a few steps to get you started: 1. Internalize the term re-invention vs. retirement for this stage in life. The first invokes optimism, excitement and possibilities. The latter implies completion, endings and stagnation. 2. Introduce the questions why and why-not as you consider your re-invention goals. 3. Make non-financial goals the driver to financial actions. This replaces the fear of running out of money with the motivation to do. The journey over the destination. As an example, my January Limitless article focused on the decision process to start social security benefits. Functionally, that is a decision about personal health, current employment expectations and potential spousal benefits (if applicable). Add a few “Why” questions to the function questions and you may find a different result. Make 2022 the first year that you create a mental, physical and social interaction plan as the foundation of your overall financial plan. “Wealth is the ability to fully experience life”- Henry David Thoreau
