Make Room for

SPRING

H

ow about removing some clutter from your home to make room for spring? A spring clearing could help you enjoy the new season with renewed energy for fun, less stress and more convenience. We asked two local experts for some motivation and tips for sorting through your stuff, and making your home work better for you. Cindy Greer is the owner of Transition With Care, an A+ Accredited senior move management company. “We think it’s important to make room for spring year round!” Greer said. “We are routinely preparing our clients for relocation to smaller houses, 55+ communities, and retirement communities in the Charlotte and Lake Norman area.” Greer notes that with the real estate market as hot as it is, people need to have a handle on their stuff if the home sells quickly. “We see homes selling within days, which really accelerates the transition process” Greer said. Beyond the practical side of being prepared for a move, decluttering can have emotional benefits. “We work with a lot of empty nesters and see firsthand how the physical and emotional weight of our clients belongings lifts as we help them make sense of their stuff,” Greer said. “Whether you are making a move or not, we think it’s never too early OR too late to create that fresh spring feeling by decluttering your home. Kim Wilhelm, owner of File the Pile, in Huntersville, agrees that spring is a great time for clearing things out. “For one thing, in April, after you have done your taxes, it’s a good time to file away all the past year’s paperwork.” The changing season also means you are going to be spending more time outdoors, Wilhelm points out, so it is a good time to tackle the garage. “Take an inventory of what’s in your garage,” Wilhelm said. “Put like items with like, sorting out what belongs to garden work, sports equipment, automobile.” Set aside anything that needs repair or replacement. Check if that fertilizer or seed is still good. Throw out the old, get new. For the items you still want and need, the next task is to “find a home for them.” That can mean putting things on shelves, whether built in wallmounted units, or the free-standing five-shelf system which you can buy from a home improvement store. It is often best to have garden tools hanging on wall hooks. Smaller items should be kept containers. “Put what you can in clear containers and label them,” Wilhelm advises. “You don’t have to get a fancy label-maker,” she said,”Just tape and a sharpie will do.” Back in the house you might want to start with clothes. You’re going to be putting winter clothes away, so, again, Wilhelm says, take stock. Put like items together. How about all those sweaters? Any that are worn out? Maybe you didn’t wear one of them for a few seasons. “Why store things

you’re not going to use?” Wilhelm asks. “Did I wear this? Does it not bring me joy anymore? Then it’s time to sell or give it to someone else.” Look for duplicates, too. You don’t really need ten plain white t-shirts. If they are in good condition you can donate them or cut them up for use as cleaning rags. Clothes should also be stored in clear containers where possible. Wilhelm approves of the new trend to use velvet hangers. “They are very popular for a reason,” she said. “Clothes don’t slide on them. They don’t dig into the sleeves. And they are more compact -- you can fit many more clothes in the same space.” Wilhelm recommends organizing the closet by types of clothes and using dividers between sections on a rack. These can be labeled to make it easier to find things and put them back in the right place. Regarding footwear, Wilhelm says toss those old shoe boxes. You are better off using clear containers for those seldom-worn party shoes, and a wooden or cloth divider on the wall to keep your other shoes off the floor. A hanging shoe divider near the front door is also a good idea. What about the sock drawer? Separate winter socks from spring socks. Throw out socks with holes and those sad single socks that have somehow lost their partners. Use drawer dividers. Wilhelm likes the honeycomb style dividers for socks, you don’t even have to fold the pair, just poke one end of the pair of socks into a cell.


Your pantry is another area to look at. Take your inventory, dispose of expired goods, and consider donating duplicates that you won’t be able to use before their expiry dates. When organizing kitchen and pantry, Wilhelm says, it is best to keep the items used most often at eye-level, whereas that heavy mixer can go on a bottom or top shelf. Finding a home for everything is important. And the junk drawer is not the answer, though Wilhelm says “Those are a lot of fun to clean out.” The process again is to empty the drawer, sort like with like, and find a home for the items. You don’t have to spend money on containers, either, you can often repurpose things like a cellphone box. Wilhelm and Greer both point out that getting organized feels good, but the greatest gift to your future self is to maintain that organization. Greer says “making this activity more of a routine part of life can take the drudgery out of decluttering.” She advises that certain areas are especially prone to expanding year by year: bookshelves, closets (clothing, coat & linen), china and kitchen cabinets. “Don’t overwhelm yourself,” Greer said. “Just take it room by room. If something is broken -- toss it! If you haven’t read, worn or used items in the last 2-3 years, consider donating them to a local charity, church, school or animal shelter.” Keep a heavy duty trash bag in your closet year round for clothing donation, Greer advises. And keep a plastic bin in your garage for donation of bulky items. That way, once you decide to donate something, it has a place to go.

Is it Time to Review Your Estate Planning Documents?

W

hen should you review your will, trusts and other estate planning documents? And what should you be looking out for? “I advise clients that anytime there is a major life change such as a marriage or divorce, the birth or adoption of a child, always look at their estate planning documents,” says Danielle Feller, a family law attorney working in the Statesville office of Daly Family Law. You should also have a review if you have moved from out of state. Outside of such events it is also a good habit to check the documents every few years to see that everything is in order and ask yourself “is that what I still want.” Feller warns that “if you do not tell your loved ones what you want to happen to your estate, the state will tell them.” People assume that if they die without a will everything will go to their spouse so there is nothing to worry about. However that is not always the case. Estate planning documents comprise: your will, trusts, health-care power of attorney, durable power of attorney for finances, living will (advance directive). When you are setting up or reviewing these instruments, experts also recommend looking at insurance policies and any financial accounts that have beneficiary designations. Feller said she recommends that clients with larger estates also consult with a financial planner or CPA to review the documents for their tax implications. In addition to making sure our estate is settled according to our preferences, another goal many of us share is to make the process as simple as possible for our loved ones. In addition to making sure your documents are in order, Feller also advises putting as much of your estate as possible in non-probate assets such as insurance policies, accounts that have a beneficiary designation. Joint accounts with survivorship, P.O.D. bank accounts, or living trusts. A revocable living trust is a way to assign all your assets to a vehicle that is not subject to probate, but settled according to the preferences stated when

set up. For those who have a living trust, Feller advises them to be sure that their will has a provision stating that any new assets should be assigned to the trust. This is called a “pour-over will.” If you find you want to make adjustments, minor changes to a trust can be made with an amendment, and small changes to a will can be made with a codicil. But Feller warns that if there are extensive or numerous changes, it is better to avoid future confusion by replacing the whole document. Feller advises people who have moved to the area from out of state to make sure your estate planning documents qualify in North Carolina. Along with making sure your will meets all technical requirements in this state it is also best to register new Power of Attorney documents, since banks and other institutions are not required to accept designations from out of state documents. “Little details can trip you up,” says Amy Shue Isaacs, an attorney with the McIntosh Law Firm, in Davidson. Isaacs works to make sure the process is painless for clients, but stresses the need to make sure estate planning documents meet technical requirements. This is particularly true for people who written their own wills with forms available online. “The substance of the will may be fine, but there are details that need to be done correctly,” Isaacs said. Naming the executor of the will is important, as is the requirement for two notarized witnesses. The goal is to have a “self-proving will” that won’t meet any obstacles when it is offered for probate. Isaacs notes that the witness requirement can be a problem. She has seen cases where somebody had taken their will to be notarized at a UPS store for example and just asked two other customers who happened to be in the store to sign as witnesses. When questions arose later, nobody knew where to find them. “You may have paid zero dollars for the will, but if an attorney has to spend four hours tracking down the document witnesses, there have been

no savings to the estate,” Isaacs said. “It is most often most cost effective to make sure the documents are done correctly to save time and expense later.” Another tip Isaacs shared is to make sure you and your loved ones know where the original copies of all the documents are. But please not in an extra-creative “safe place” that nobody would ever think to look later on. “Out of sight is out of mind,” she said. “We can forget ourselves where we might have stashed something, and family later on would have no idea. You don’t need to hide your will, just keep it safe.” A safe in the home, or a filing cabinet in the home office are best. Some law firms will keep the original at their offices. In that case it is best to have a copy at home stamped with the information that the original is with the attorneys. Isaacs also stresses the power and the importance of beneficiary designations on life insurance policies, and retirement accounts, such as a 401k. The designations typically list a primary beneficiary and a successor. These assets are kept out of probate and beneficiary simply has to send the death certificate to get the distribution. Because the designations supersede anything in the will it is very important to keep them updated. Isaacs says it is not at all uncommon for people who have divorced to inadvertently leave a former spouse on a beneficiary designation. That can be an unpleasant surprise for the surviving current spouse. Changes in tax law might be another reason to review estate planning documents, especially for those with larger estates. Isaacs notes for example that, barring future changes, the current estate tax limit of $12 million will revert to the earlier $5 million limit in 2025. Trusts also need to be updated to reflect life changes and protect estate assets from creditors or divorcing spouses of adult children, Isaacs said. “As life changes, make adjustments to make your estate planning documents continue to work for you,” Isaacs recommends.

Crisp asparagus, tender greens, tasty spring peas, crunchy leeks, earthy spring mushrooms, spring onions, new potatoes, tarragon and dill… all will be coming into their peak of flavor soon! Here are 2 simple recipes to help you celebrate this beautiful new season and spring your plates forward with nature’s fresh spring green vegetables!

Spring Vegetable Orzo with Sea Bass Servings: 4 Prep time: 10 minutes Cooking time: 25 minutes

This simple, Greek-inspired recipe features orzo, spinach, scallions and fresh herbs. It is light, but satisfying thanks to all those vegetables. Orzo pasta makes this dish as appealing as risotto, but without all the stirring! Zesty feta cheese gives it creaminess and tang, while herbs & lemon zest brighten up the flavors. The orzo and vegetables could make a complete meal on its own, or it makes the perfect complement to roasted fish, such as Sea Bass.

Ingredients

2 tablespoons unsalted butter (or olive oil) 4 large scallions, thinly sliced 2 garlic cloves, minced 5 ounces baby spinach leaves (5 cups), coarsely chopped 1 teaspoon kosher salt 1 ¾ cups low-sodium chicken or vegetable stock 1 cup orzo 1 teaspoon finely grated lemon zest ( from 1 lemon) ½ cup crumbled feta, plus more for garnish ½ cup frozen peas, thawed (optional) 1/2 cup chopped fresh dill or flat-leaf parsley 1/2 cup pine nuts, toasted (optional) 2 tablespoons olive oil 4 sea bass fillets (approx. 4 oz. each)

Preheat the oven to 350 degrees. Melt butter in a large skillet over Medium heat. Stir in about three-quarters of the scallions (reserving green parts for garnish) and garlic, and cook until softened, stirring frequently, about 3 minutes. Stir in stock and bring to a simmer. Stir in orzo and a sprinkle of lemon zest. Cover and simmer over Medium-low heat until most of the liquid is absorbed, about 10 minutes, stirring occasionally. Add chopped spinach, adding in batches if it doesn’t all fit in the pan at once, and 1 teaspoon salt. Continue to cook, while stirring, until spinach is wilted, about 3 minutes. (Note: Add a splash of water if needed, to get the spinach incorporated.) While orzo cooks, heat 1 tablespoon of olive oil in a separate skillet. Brush sea bass fillets with 1 tablespoon oil, and season both sides with salt & pepper. When the pan is hot, add fillets and sauté until browned, approximately 2 minutes each side. Finish cooking in the oven (top rack) for about 10 minutes. Finally, stir crumbled feta and peas (if using) into orzo, cover the pan, and cook for another 1 minute, to finish cooking and warm the peas. To serve, sprinkle orzo with chopped parsley, lemon zest, more feta and the reserved scallions, alongside sea bass. Finish the dish off with a squeeze of lemon.

Soup for Spring! This Creamy Asparagus Soup recipe is such a wonderful combination of flavors. Leeks and tarragon combine with the asparagus to create such a bright, fresh flavor profile. The soup is lightened up and made “creamy” with potatoes and a little sour cream, so it’s not overly rich, rather, just rich enough. This simple soup is elegant enough for spring gatherings, yet easy enough for weeknight meals. Perfect as a first course, or makes a lovely lunch with crusty bread and a crisp white wine.

Creamy Asparagus Soup Servings: 6 Prep time: 20 minutes Cooking time: 30 minutes

Ingredients

1 large white or yellow onion, diced 2 medium leeks, split lengthwise, washed, thinly sliced (trim off roots & coarse dark green parts) 2 tablespoons olive oil 3 cloves garlic- minced ½ pound yellow, yukon or white potatoes - peeled & diced 6 cups vegetable stock (low-sodium) ¼ teaspoon white pepper 1 teaspoon kosher salt 2 lbs. chopped fresh asparagus (approx 2 lbs to start, then trim the tough ends off) Note: reserve a few tips for garnish 2–3 tablespoons fresh tarragon 1/4 cup fresh basil or Italian parsley ½ cup sour cream (Not non-fat, does not blend well)

Directions

In a large stock pot, saute onion and leeks in 2 tablespoons of oil over Medium heat, for 2 minutes, stirring constantly. Turn heat to Medium-low and continue cooking until softened, about 3 minutes. Add garlic and saute for 1 more minute, until garlic becomes fragrant. Add vegetable stock, salt and pepper, and diced potatoes, and bring to a boil. Cover, simmer on low 15-20 minutes until potatoes are fork tender. Add asparagus, turn heat up and return to a boil, and cook for 2-3 minutes, until tender yet vibrant green. Don’t overcook or you will lose the lovely color. Remove from heat and let cool a bit. In batches, carefully blend soup in a hi-speed blender until creamy and very smooth, adding in the herbs. The herbs will give it this glorious color. Blend really well, so there are very few specks of herbs. Return to the stove and reheat gently (do not boil, or you will lose the lovely color). Whisk in ½ cup sour cream, if using. Season with salt & pepper to taste. Serve warm with a swirl of sour cream if you like, blanched asparagus tips, and fresh tarragon or chives. 20 LimitlessMagOnline.com | April 2022

n the Caribbean, with just a little digging, you can come up with some, off-the-beaten-path locations that are off the normal tourist routes and that serve up some exquisite and local cuisine. Not rum bars and tee shirts but bistro-like havens from all that. That’s what we came up with on our last visit to Saint Lucia, the Pink Plantation. The Pink Plantation is a little way out of the capital, Castries. Getting there is its own adventure. You head up a very steep, very narrow, very curvy road. You have to be extra careful on the tight bends, a truck might be headed right at you. Actually, the steep road is part of the Pink Plantation’s attraction. The restaurant is situated high above the town and the bay and boasts a spectacular view. After an “interesting” ride you arrive at a narrow gate and go onto the property. Vehicular pandemonium turns to lush tranquility. Welcoming is just one of the attributes you enjoy at the Pink Plantation. Because of COVID 22 LimitlessMagOnline.com | April 2022

restrictions, we arrived way before our lunch reservation. This turned into a great opportunity. One of the restaurant owners suggested that we take a tour of the property’s vast gardens and introduced us to the gardener, Chris. A home run. Chris used to be a guide in the island’s rain forests and knew a thing or two about plants. In fact, we found out that he had planted a fair amount of the garden, himself. We had an exclusive and informed half hour wandering around this awesome place. Then we went from welcoming to accommodating. The restaurant opened its kitchen early, just for us. That turned out to have several side benefits. Because we were early, we were the only diners in the restaurant. As well as really attentive service, we were treated to what I thought was the prime table. Wow, what a view. We looked out beyond the lush foliage down onto the town of Castries and its bay. Out in the distance, through the haze, we could see the island of Martinique. And, as if by magic, there was a short rain storm. After the

rainstorm, all of the foliage glistened in the sunshine. Spectacular. Add to that, the fact that we were in for a great lunch. In the Caribbean I inevitably head in the direction of the fish-of-the-day. It’s generally local and freshly caught. The selection that day at Pink Plantation was a serving of grilled Mahi-Mahi along with rice and a salad. There’s no local wine in the Caribbean, its more likely to be local rums. I opted for a glass of Sauvignon Blanc and followed that with a Cabernet Sauvignon, both from California. My wife sipped on orange juice, I went with fermented grape juice. This was a captivating moment. An absolutely stunning view, a well prepared dish and a glass of wine to go along with them. As we were well into our lunch, other guests started wandering in. I’m sure they were in for a great experience but it’s hard to believe that it could ever match ours. We’ve spent a good bit of time in Saint Lucia. It’s a spectacular place. I’m sure we’ll be back and I’m sure that the Pink Plantation is high on our destination list.

All About Guardianship

uardianship over a loved one may be necessary when either a disabled minor is six months from turning eighteen or an adult family member is suffering from mental health issues, serious illness or condition, impairment, or some other disability that prevents a person from managing their own affairs or make or communicate important decisions about the person’s self. In order to become guardian over an individual, you must file a petition with the Clerk of Superior Court and participate in a hearing. The Clerk must find by clear, cogent, and convincing evidence that the individual is incompetent and that a guardian should be appointed. There are three main types of guardianships in North Carolina: 1. Guardian of the Person – power to manage the care and custody of an individual. 2. Guardian of the Estate – power to manage a person’s finances and other business matters. 3. General Guardian – has the powers of both guardian of the person and guardian of the estate. Each case is different and it will depend on the specific facts and circumstances as to what type of guardianship is needed. The guardian appointed will depend on the specific facts as well. It may be an individual, a corporation, or a disinterested public agency. Making the decision to have a loved one declared incompetent can be a very overwhelming. Most people feel a sense of guilt when having a loved one declared incompetent. Additionally, families may disagree as to who should be guardian over a loved one. We threw in a few bags of pale malt in place of the traditional light crystal malt typically used to add a touch of sweetness and body to balance the well known bitterness of the west coast IPA. For the hop contribution, classic techniques mixed with a modern hop blend of Galaxy, Vic Secret, and Idaho 7. The name Flying V pays homage to a favorite kids sport movie, The Mighty Ducks. Our brewer was inspired to brew this beer after a trip to Colorado and enjoying the reemergence style at all the craft breweries in the Denver area.
