In the Gaelic language, ‘Aqua Vitae’ was called ‘Uisce Beatha’ or ‘Fuisce’ which, when it was anglicised, became ‘whiskey’. Ireland is both the home of whiskey distilling and the source of its name.

from the centuries-old art of Irish whiskey making? This is the incomparable influence of blending and maturation from independent Cognac producer, Maison Camus, France. The legendary House of Camus is behind the shaping, polishing and finishing of our Lambay Irish Whiskey, with Master of Maturation & Blending, Yonael Bernard at the helm. The oak casks are our helpful and patient assistants in our pursuit of the perfect finish. Shipped to the shores of Lambay from the Camus cellars in Cognac, these casks have been carefully selected for their rich aromas by the Master Blender. Other allies in our quest for perfection? In the case of our Single Malt, Cask Strength and Malt whiskeys, the understanding of wood maturation. Founded by two main influences – the fruit components from the wood (cognac cask) and the interaction of our unique maritime atmosphere surrounding our casks. The spirit arrives to the island and is expunged into these casks on-site and lie in the traditional cognac style (on their sides) to receive the full influence of the Irish Sea and unique micro-climate on Lambay. And for that special flourish we take water from Lambay’s own Trinity Well, at bottling stage to craft our remarkable whiskey.
