Virgin Hotels Edinburgh NOW OPEN The first phase of Virgin Hotels’ UK debut is now open, with the grand opening to take place in the autumn. Virgin Hotels, the luxury lifestyle hotel brand by Virgin Group founder Sir Richard Branson, has opened its latest outpost in Edinburgh in soft launch today for hotel guests, and will open to the general public from 14th June. Phase two of the property and the official grand opening is scheduled for autumn.

This first phase of the launch is the soft opening of 54 Chambers, in addition to multiple dining and drinking outlets, all with their own unique space and distinct design. This includes Commons Club, Virgin Hotels’ flagship restaurant and bar that acts as a modern-day social club, and the Funny Library Coffee Shop, offering a selection of teas, coffees, house-made pastries and sandwiches creating a cosy communal space boasting a range of local literature to enjoy next to the roaring fire.

The second phase launch will bring guests even more Virgin charm and playfulness, when it officially opens in early autumn 2022. All 222 Chambers and Grand Chamber Suites will open, as well as the remaining dining and drinking outlets. This will include Eve, an all-day dining space, and Greyfriar’s Hall, a 19th century church that has been beautifully restored and repurposed as a special event venue and a rooftop sanctuary with unobstructed Edinburgh Castle views. Virgin Hotels Edinburgh opens in the landmark India Buildings in Edinburgh’s Old Town, just moments from Edinburgh Castle, joining several noteworthy local restaurants, music venues and boutique hotels. A collaboration between Virgin Hotels and Scottish architect studio Four-by-Two; the designers have worked to preserve notable elements of the original building while adding some sophisticated Virgin touches. ‘GURA GURA’ TO MAKE UK DEBUT AT THE YARDS Longmartin Properties Ltd, a joint venture between Shaftesbury and the Mercers’ Company, announces Gura Gura, a brand-new Asian bar and kitchen concept, has signed at 19 Slingsby Place, The Yards, for its debut restaurant within Covent Garden.

The 2,900 sq ft UK debut restaurant, due to launch in mid-October, will serve a mix of sushi, sashimi, dim sum and small plates, with highlights from the Wok menu including

Lantern Chilli Prawns, Thai Style Basil Chicken and Bulgogi Style Beef. Set across two floors within the new and revitalised The Yards, Gura Gura will host 110 covers taking visitors from laidback afternoons to high energy nights. A unique cocktail offering will be available with a walkthrough ‘wine tunnel’ at the entrance of the restaurant. Designed by Orphic Design Studio and founded by experienced restauranteur Gobind Chona, Gura Gura will be studded with Asian

heritage, displaying a distinct and authentic interior. This follows the latest news that over the summer months, The Yards will welcome back Persian-inspired ice cream brand, Darlish and become home to a dedicated Piaggio food truck. Contributing to the growing alfresco offering at The Yards, the Piaggio food truck will be used exclusively by existing restaurant tenants and create a rotating offering of takeaway street food within the destination. And while the level of accommodations and expectations will be important to prepare for ahead of the rush, the main focus is that there will be more money on the table than in years past, which many within the industry are in desperate need of after operating under two years of uncertainty. In order to grab their deserved piece of the pie, the bulk of organisations in travel and leisure use public web data to make better decisions and ultimately gain full market visibility. While years ago you may have been able to call a travel hotline, airline or hotel to make a direct booking — (using words, I know exhausting) today everything is done online, which makes public web data a valuable, not-so hidden secret, and an absolute must have in every travel and leisure professional’s toolbox. Within this highly competitive and overlysaturated market, industry professionals use web data to effectively benchmark themselves against their competition, looking into everything from booking prices to hotel breakfast policy, and so on.

This is because with the weighted shift to online booking arrangements there are now thousands of considerations, levels of accommodation, pricing platforms, and other online travel agents, like Booking. com, Kayak, etc., that consumers are essentially able to peruse through freely when planning their next trip.

I always wanted to be in the culinary world, first as a pastry chef but once I found myself in the kitchen at the age of 16 working at a classic French restaurant in the South of France, I knew I wanted to stay in the kitchen. Fast forward 15 years of working in various kitchen around Europe and here I am – I think it shows that you should never give up and that hard work always pays off.

Tea For Refugees was inspired by a member of The Restaurant Club (TRC) who reached out on the group to ask for recommendations for a not-too-expensive (for obvious reasons) place where she could treat the two Ukrainian refugees she was housing to afternoon tea.

During the 2020 lockdown, The Restaurant Club ran an award-winning campaign to support independent restaurants by fundraising to buy meals from them to feed the NHS - the restaurants got paid and the staff got fed – it was a win-win! The campaign raised almost £70,000 and delivered 12,000 meals to hospitals across London and Herts including The Royal Free, North Middlesex and the Whittington.

TRC reached out to a hotel who kindly offered to host them all for tea with their compliments. Out of this wonderful gesture, Tea for Refugees was born as a way of giving host families and their refugees a special outing

SPA THERAPISTS ATTAIN QUALIFICATIONS TO HELP CANCER PATIENTS A dedicated group of spa therapists from Windermere have completed a professional qualification that has trained them to help with the treatment of cancer patients. Katie Read, Hannah Ford and Beckie Gibson from Low Wood Bay Resort & Spa have completed an Oncology massage qualification through the accredited Jennifer Young Training School. Their training has included Level 1 and advanced cancer awareness, as well as holistic facial, hand, nail and foot treatments.

Physical and emotional benefits are well documented from reducing pain, nausea and anxiety through to improving circulation, mood and wellbeing. “Katie, Hannah and Beckie are now qualified to offer oncology massage, facials, manicures and pedicures for cancer patients which means we can offer a range of specialist recovery treatments here at Low Wood Bay,” explains Annabel Berry from English Lakes Hotels Resorts & Venues. “These types of treatments are not currently fully recognised as standard in our industry and have not been given due prominence. We want to change that and ensure every client who steps through our doors can be cared for and looked after when they are going through really difficult times in their life.” Head therapist at the spa Beckie Gibson adds: “Taking part in the oncology treatments training has been a very rewarding experience for me as a therapist. These types of treatments should be much more widely available, so I’m glad we can now offer them. HOW TO DESIGN A BEDSIDE TABLE, ACCORDING TO INTERIOR EXPERTS Bedside tables aren’t just for putting your lamp on and placing a glass of water on. With the right design, you can reinvent this multipurpose piece of furniture as a stylish storage solution for accessories, books, cosmetics, or even valuable possessions. The design not only defines the style of the bedroom interior but also had to meet these practical uses. Here, interior design experts reveal their top tips for choosing the right one. 1) Remove the clutter Your bedroom should be a sanctuary — your sanctuary from the outside world and your refuge at the end of a long day. Your bedside table should have everything right where you need it but hidden away where you don’t have to look at it. This way, only your stylish favourites are on display, and you have an organised setting. Vanessa Arbuthnott shares her stylish storage solutions:

“When you put your hand out for your water glass, you don’t want to be knocking things over in the dark! Choose a bedside table with a shelf under the tabletop for books and magazines, as this will provide extra storage space and keep your reading choices close to hand. If you don’t have this, mount a small shelf that you can easily

reach above or beside your headboard to keep your phone, books or a glass of water. To save space on your bedside table, you also have an option to wall mount a lamp or clip it to your headboard. I find lamps give more directional light, and a switch is easier to use than having to track down to find the switch.” 2) Choose the right table lamp Bedside lamps are your room’s finishing touch. They come in a range of styles to suit every room, from traditional to mid-century modern and everything in between. With a range of materials, such as ceramic table lamps, marble table lamps, metal table lamps, and wood bedside lights, you will always find the right one for your space. Interior designer, Kane Hughes from MyJobQuote, outlines what to consider when choosing your table lamp: “Finding the perfect lamp to light your bedside table is like finding the perfect shoe to match your outfit. A modern, classic, antique, or retro look? There are many different table lamps available in all these choices to suit your style. A swivel arm lamp can position light where it is needed while reading a book in bed, whereas a table lamp can set the perfect mood for relaxing evenings in your bedroom. Opt for touch settings, for easy switch off when you

are starting to doze off and for various lighting settings.” 3) Get the height right Achieving the perfect bedside table is a balancing act. It’s essential to get both scale and proportion right as a bedside table that’s too cramped can be visually displeasing, whereas something too large can awkwardly stand out in the room. To create an orderly feel to the room, we spoke to Studio Manager at Rigby&Rigby, James Ashfield, who explains the right proportions for your bedside table: “The ideal height for a bedside table should marry up with the height of the mattress or slightly higher. We like to avoid a client overstretching or reaching excessively down or up during the night. Ergonomics are a critical aspect of our design, and this is why we complete so many customised furniture pieces. When designing a custom bedside table, we take into consideration more than just height. For example, does the client require maximum storage in the form of drawers or cupboards? Or would they rather have an element of open display for ease of reaching items such as tissues, books etc. Equally, an element of cable management may be useful to keep bedside lamp and phone charger cables tidy.”


BEDS & BEDDING Texture is a brilliant way of adding depth to your bedside table. From the cool, smooth feel of metal lamp shades to the rich warmth of wood, the texture you choose plays a vital part in setting your table. Similar to the way varying heights add interest, a mix of textures promises effective visual impact. We spoke to Interior Designer at Helen Green Design, Joanna Benton, who shares her style ideas: “Layering different materials together tonally can add subtle, thoughtful, calm interest to your bedside table. For example, a natural linenwrapped bedside table with a smooth timber bead can provide a soft base for some beautiful translucent glass lamps. “Equally combining contrasting materials together can have a powerful impact and make the bedside tables more of a statement. Textured organic ceramics can look fantastic against a highly polished timber or lacquer bedside. “For a more modern twist, using semi-matt paint finish with textured inset drawers or tops, such as a faux shagreen or faux leather, can really set off playful accessories, pleated fabric shades, Perspex frames, wrapped tissue boxes, on a more neutral base and highlight the juxtaposition of different materials.” 5) Display fresh flowers A little colour and fragrance is a great way to make your bedroom more welcoming. But how to keep them looking as fresh as possible

“Fresh flowers can make your bedroom more welcoming, simply by adding a little colour on your bedside table. They brighten up your space, make the room smell good, and put a smile on your face. Place them in vases around the house or a crystal glass vase. Within three days, they should be opening nicely and will last about five to seven days. To keep the flowers fresher for longer, a little trick I like to use is adding 3 drops of bleach and 1 teaspoon of sugar per litre of water in the vase. This will also keep the water from getting cloudy and inhibit the growth of bacteria.” 6) Add a personal touch As well as being an organised and functional space, your bedside table should be fashionable with the right storage solutions. There’s no need to compromise on style when choosing useful additions such as an alarm clock, accent bowl to keep your jewellery or cable organiser. Anything else can be stored

out of sight in convenient drawers or doubleduty designs. Sylvia James, interior designer at HomeHow shares how to add a personal touch to your nightstand: “No matter what client requirements are, we work to provide them with the perfect bedside table to meet their individual requirements. Bedside tables do not have to be completely minimalist. In fact, a few items of décor such as candles, photo frames or flowers can bring a personal and homely touch to the bedroom. If you prefer a minimal aesthetic, you can still add accessories while keeping things simple with a small trinket box. Statement pieces can include your favourite book or a personalised marble coaster to rest your night-time tea on.”

BOUTIQUE HOTEL GROUP GIVES STAFF RECORD COST-OF-LIVING PAY RISE OF UP TO 14% A boutique hotel group in the UK has given employees a pay rise of up to 14 per cent in response to the rising cost-of-living crisis and recruitment challenges. The Eden Hotel Collection has announced the second of two rises within the space of just six months, amounting to the most significant increases to staff pay it has ever given which has boosted pay for more than 350 staff across the country and has also been weighted to support those at the lower end of the pay scale.

What will be key moving forward is how companies, owners and operators are able to entice travelers back to hotels, while also ensuring that their safety and health are protected and maximized throughout their stays. At the moment, 56 percent of Americans are planning a trip or Spring vacation, yet many still cite Covid-related concerns when organizing travel plans. Consider that 52 percent of Americans named crowds as the main reason they would not be traveling, and 50 percent are prepared to change their plans if a Covid-variant or spike occurs. However, this percentage represents a decrease from the 67 percent who said the same last spring, emphasizing how travelers’ preferences are changing in 2022. Americans are looking to travel, but have prioritized health and wellness, specifically air quality, and operators of a slew of business-types will have to adjust accordingly.

Hotels are an obvious example of this coming adaptation to the new normal, especially as occupancy levels continue to creep back towards pre-pandemic numbers.

Tourists and travelers are beginning to plan flights and travel, and a sense of normalcy is returning. Yet, amidst the COVID-variants that have arisen in recent months, as well as lingering doubts about the safety of air-travel and hotels, the need for proper, fully tested and validated indoor air quality (IAQ) technology is crucial for the hospitality industry. These kinds of systems are also able to offer a host of possibilities for owners, especially when it comes to innovative solutions for profit margins, energy savings and efficiency, more optimized use of hotel space and reduction of mold and odor.

Finally, it will be important for owners and operators to understand what kind of technology they’ll need for their buildings or portfolio, and by enlisting expertise they can address unique issues and obstacles throughout the installation and maintenance process. Commercial buildings will necessitate varied approaches between asset types, as properties such as healthcare centers will need much different and more extensive systems than a smaller space such as a hotel room. Yet hotel rooms, gyms, and other properties will need to provide the same kind of assurances to their customers and companies like AtmosAir are filling this need. André Fu Studio DESIGNS Fiamma FOR CELEBRITY CHEF, Mauro Colagreco AT Capella Singapore It seemed only natural that Capella Singapore would tap André Fu to design Fiamma, its latest restaurant and collaboration with the three-Michelin-starred chef, Mauro Colagreco. Named after the Italian word for ‘flame’, the 138seat Fiamma takes over the resort’s former in-house restaurant, The Knolls, in a long crescent-shaped space that opens out to an incomparable view of the tripletiered lava-stoned swimming pools, a tree-line of thick tropical foliage and Banyans, and the South China Sea beyond. Early in the design process, Fu asked Colagreco what he was aiming for with the menu. “We had a dialogue about the Mediterranean flavours, the honesty of the ingredients, and the atmosphere he imagined the food would be served in.” The resulting design is a reflection of those conversations that also subtly traces Fu’s own European coastal experiences and his intention for diners “to feel both the expected and the unexpected”. It’s been so exciting for me to watch this restaurant unfold. The design is completely in sync with Mauro’s food and his style of cooking - it’s a little bit deconstructed, it’s a little loose and it’s completely contemporary without being uptight or contrived.

To achieve this duality, Fu divided Fiamma into six layered experiences, each room being unique in its design and function, but whose sum of the parts is unified into a single cohesive experience of a lush private residence - from the outdoor al fresco lounge furnished with exotic palms, succulents, and birds-ofparadise in terracotta pots; a semi-private den with a wine fridge and a bespoke decanter table. Meanwhile, the oven chamber features a theatrical space anchored by a wood fire pizza oven, whilst the dining room features a glassedoff kitchen. There is also a private dining room for 16, dressed in timber rafters, a lush wall hung tapestry, alongside mid-century inspired wall lamps.

All the rooms look out into the sixth ‘room’ - a 30m-long terrace lined with hardwood outdoor furniture. Covered with an awning of orange and beiges, its form follows the gentle contour of Fiamma’s elongated crescent shape.

The furniture and fittings, in particular, are an eclectic mix that murmur of relaxed, intimate luxury - a bespoke bronze-cast chandelier in the dining room, walls clad in raw stone and handcrafted plastering, floors swathed in Portuguese Giallo marble, and handmade terracotta tiles in the bathrooms. For Fu, Fiamma represents a unique opportunity to showcase, both aesthetically and emotionally, the allure of Capella Singapore as an island retreat that is, nevertheless, just twenty minutes from the bustling heart of the city. “Fiamma is Capella Singapore’s living room and dining room,” he says. “I want people to think of it as a place to just hang out all day. Much like you might do in a luxurious retreat in the Mediterranean in the summer. “It’s a place that’s not overly casual, nor overly rigid. Where you can dine on wonderful, fresh food in a casual, relaxed setting, and wander off, in the middle of your seafood, out into the sunshine and into the pool.”

For Capella Singapore’s general manager, Yngvar Stray, Fiamma, its design especially, perfectly captures the mood of the resort. “It’s been so exciting for me to watch this restaurant unfold. “The design is completely in sync with Mauro’s food and his style of cooking it’s a little bit deconstructed, it’s a little loose and it’s completely contemporary without being uptight or contrived. “It’s incredible to me how André has achieved this sense of escapism not just for Fiamma, but also the resort itself.”

and symmetry of his work, Fiamma’s setting and menu have allowed Fu to incorporate a touch of deconstruction and rustic modernism.

To that end, Fu’s design is an amalgamation of experiences, of individual moments stitched together with tactile materials and considered colour swatches. Every room quietly references the exterior setting, first the vast terrace with its Balinese pools, then the layers of nature, and finally the sky and sea beyond. In this way, Fu says, “the exterior is no longer a backdrop to the restaurant. Rather, it becomes something that the diners constantly refer to.” Luxury Hospitality Magazine

On every metric, Fiamma is a snapshot of both Fu’s evolution as a designer and his commitment to context: to understand what makes a project unique and then to work hard to enhance that quality. “With Capella Singapore, we’re talking about a resort setting with a unique backdrop. How, then, do we create a restaurant that celebrates that, rather than have it be an ‘André Fu-designed project’?”

SUSTAINABILITY IN GUEST ACCESSORIES This line is cutting edge in both its design and execution. ADA Cosmetics set a powerful intention to create a line that replaced plastic and did away with excessive packaging, and to use durable, renewable and recycling-friendly materials instead.

Making guest cosmetics and amenities more sustainable is an imperative for the hospitality industry. Whether it is biodegradable formulations for cosmetics, plastic and paper use reduction or the use of natural, organic and vegan-friendly ingredients, the demand from guests for sustainable amenity products is soaring.

Whilst these new product formats aren’t yet mainstream, they are part of a bigger sustainability trend. It’s exciting times to be in the guest amenities business. But with all the focus on cosmetics products, it is easy to overlook a whole host of amenity products which are often provided with hotel cosmetics to enhance the guest experience – complementary vanity items. Think products such as shower caps, combs, dental kits and slippers, many of which are used once and discarded. Single use plastic and waste from these accessory items are becoming a hot topic and suppliers are stepping up in this area to offer more sustainable ranges and materials. ADA Cosmetics is one such supplier that has met the challenge of creating sustainable amenity lines both in cosmetics and in complementary accessories. Combs and toothbrushes are made from bamboo, a fast-growing renewable and biodegradable material. The vanity sets contain bamboo cotton pads and buds. A variety of slippers have also been created including bamboo fibre slippers, bamboo thongs and bamboo linen slippers. Such is the success of the Think, Act & Live Responsible brand that ADA Cosmetics is considering developing the range further to take the brand’s uncompromising sustainable ethos beyond “dry goods” accessory items into other amenities. Today, sustainable venues are a fundamental guest expectation. And companies serving the hospitality industry have increasingly sophisticated and eco-conscious offerings in both cosmetics and complementary accessories that are sure to surprise and delight guests.

She continues, “Since the pandemic, there is definitely a move to try to live more sustainably in general, which I believe can only be a good thing. In some respects, we had become a bit of a throw away society and the pandemic made us all stop and think about the products we use in our lives and how much wastage we create. For interior design this means incorporating energy-efficient products into projects whenever possible and being careful to select items made from sustainable materials. As a result, in the lighting

industry we are likely to see more designs from reclaimed and recycled materials, as well as natural materials such as bamboo and rattan”. “As business owners, we are all keen to ensure our production methods and packaging materials are regularly monitored to make sure as a company we make as little environmental impact as possible, another point which our customers appreciate. Where the bulbs are concerned, today’s LED energy-efficient bulbs are up to 90% more efficient than traditional incandescent bulbs, lasting up to 25 years. We are now seeing these already efficient bulbs coupled with smart hubs to ensure lights are not left on and this is likely to become more and more commonplace, as we seek control of our energy usage,” explains Jo. Lighting from Natural Materials Sitting comfortably alongside the desire for more sustainable products is the trend for using natural materials in interior design. As Jo comments, “Lighting designs made from natural materials such as glass, cork, silk, linen, rattan and even seashells are likely to be in demand more than ever for the coming season, as interior designers seek to incorporate organic, natural elements into their designs, which also tick the box of being eco-friendly. Themes of nature follow on organically from this as designers find new and different ways of inviting the outside in, something which takes on even more emphasis over the Summer months”.

Jo explains, “For lighting designs we can expect to see organic materials and shapes of nature mimicked, as well as overall concepts which support circadian rhythms by copying the natural pattern of the sun to provide good levels of light throughout the day”. Lighting is a great way to make a statement in a room and contrary to popular belief, oversized lights or lamps look great in smaller rooms, as well as in larger spaces. I like to see lighting designs like pieces of artwork, and bold designs, tactile textures and sculptural shapes provide interest to a design scheme even when the light is turned off,” advises Jo. Jo continues, “Equally if not more important is the warmth of the light and how the light is diffused through the room. This is a very important factor in our creations and only enhances larger-than-life fixtures. Some of our models have shades with a golden interior to provide a warm hue, some have a design that allows beautiful reflections on the walls, and some will use fabric which is particularly gorgeous to see through and will change colour when the light is lit.” Scandinavian Styling “Nordic inspired interiors are also predicted to be big for SS22 and for lighting this means simple, clean shapes and a muted colour palette with elements of brass and wood. This relaxed vibe has timeless elements to it, incorporating natural materials, and open bright spaces. Under the same ownership as Le Royal Monceau, Paris and The Savoy, London, The Adria’s 24 luxurious suites, rooms and lounges have been meticulously restored. Careful attention has been applied to the historic fabric of the illustrious building. Existing furniture has been up-cycled and re-upholstered in jewel toned velvets, breathing new life into original pieces which whisper of a rich history. Ceilings have been stripped back to reveal intricate cornicing details.

Hung above the antique mirror backdrop is a piece of modern artwork by famed British Photographer David Bache, which depicts the nearby Burlington Gardens.

Luxury Victorian townhouse hotel, The Adria in South Kensington, has reopened showcasing striking new interiors created in partnership with renowned hospitality interior design consultants Hirsch Bedner Associates (HBA). Celebrating the historic architecture, the designers’ brief was to create an elegant 19th century British townhouse. Marrying a heritage, home-from-home feel and contemporary vernacular, with an emphasis on up-cycling and sustainability.

Over 2000m² of Oak basket weave parquet flooring, lends an authentic beauty. Bathrooms feature floor to ceiling marble in oceanic hues of blue and grey, hand-selected to blend perfectly, with bespoke Lowther stands and undermounted Ness cast iron bathtubs.

LAPITEC CHOSEN FOR NEW 5-STAR LUXURY HOTEL, IMMERSED IN NATURE Over 2,000 m² of slabs cover the exterior and interior of the new luxury destination overlooking Lake Lugano.

Built on a lush green slope, with views directly over the Italian side of Lake Lugano, Air Retreat & SPA is a brand new 5-star luxury hotel set within a 40,000 m² park, and home to five restaurants and three swimming pools, tennis courts, a fitness centre, a private beach, and a wellness centre of 1,500 m². The rooms and extensive facilities of the resort are housed in an architectural complex that blends perfectly with the landscape. Inaugurated in the summer of 2021, the structure was designed by R4M Engineering around the concepts of “freedom, light and air”, the motto of the resort. This philosophical approach permeates not only the range of services offered by the hotel, part of the Leading Hotels of The World group, but the building itself, designed by the Milan studio to limit environmental impact and obtain green certifications through the

use of technologies, equipment and materials of the highest standards. The solar panels, cutting-edge heating systems, home automation solutions for controlling consumption and, in the interior spaces, the warm wooden surfaces, are joined by a high-performance ventilated facade made from large size Lapitec slabs, a material produced from a mixture of 100% natural minerals, free of any chemical additives, dyes or other petroleum derivatives. The central block, with a pitched roof and distributed over three levels, is punctuated by large galleries along the front that play on arched, rectangular and square openings for each floor - all of which is emphasised by the lighting design curated by architect Giorgio Colombo. Here the sintered stone in the Bianco Artico tone and the Lithos finish completely covers the entire volume, with large vertical panels of 150 X300 cm that extend into smaller elements, with the same

susceptible to impact, scratches or damage, making it an ideal material for both vertical and horizontal surfaces in outdoor contexts.

MASSIMO IANNI LUXURY HOSPITALITY MAGAZINE SPEAKS WITH MASSIMO IANNI, FOUNDER OF MASSIMO & PARTNERS CONSULTANCY ALL ABOUT LUXURY HOTELS AND EXQUISITE DEVELOPMENTS HE HAS WORKED ON.

My career started when I was very young - I studied hospitality in Switzerland, and straight after the course ended I experienced a very intense and stimulating 15 year career with the Hyatt group. In 2000 when I turned 35, I decided that it was time for a change (I always think a significant life change should happen every 15 years!) and I had identified a clear niche in the market. I could see that developers were starting to embark on the creation of independent hotels. This was a very innovative approach back then (almost 25 years ago!) although now as we know, this is mainstream. I launched Massimo & Partners so that I could combine my corporate management skills and my creative abilities, and with my team I started to offer a turn-key service so that we would cover the full curation of a project from feasibility to actual start up. Since then we have collaborated on many unique projects with world-renowned architects and designers such as Phillipe Starck (Armani Hotel Dubai), Pierre Lissoni (Casa Fantini), David Chipperfield and Fosters in London. I now have taken on the role of guardian of the concepts that I create and execute. Each concept I develop is unique (I never work twice on the same project) and each has a very strong purpose and lifestyle component. Our expertise goes form

feasibility, to planning, team building and coordination, positioning, branding and marketing, all the way to staff selection, training and the actual opening. Talk us through the company aims. At Massimo & Partners our aim is to create unique experiences and rituals for the hospitality world at large. We are on a constant search for excellence, for sustainable and financially viable projects, very much rooted in their communities, that bring together creativity and execution skills. I love the theatrical component of hospitality and I believe that our role is to entertain and please our guests, giving them a strong purpose for visiting our hotels and properties. What has been your journey into the industry? What have been some of your best experiences? This is a journey of almost 40 years with over 35 new hotels launched. We also have future collaborations in the pipeline. My team between South America and Europe/ Middle East consists of 25 staff all with the unconditional passion to create and strive for the very best. Iconic projects we are working on currently include the Armani Hotels and resorts, The Faena Hotel Buenos Aires, The Blue Lagoon Retreat in Iceland and he Conservatorium in Amsterdam. We are very excited about our future plans which include a unique new project in Saudi that will revolution the sense of purpose for its future guests. Who inspires you? My surroundings inspire me. I am privilege to be on the road 80% of my time and people, places and culture are my greatest source of inspiration. Connecting images to memories, gives me in general my inspiration. I also read a lot and I stay on top of trends and industry news. What are some of the luxury hotels you have worked on?

What has been your favourite project and why? I consider all of them unique and great moments of creation and execution. Clearly having the privilege to be part of the opening of the tallest tower in the world in Dubai for the Armani Hotel, has been one of my career highlights. But memories of the opening of a lodge in Patagonia, for a glacier experience with a group of only 40 explorers per day, has been a unique encounter with nature and the challenges that such an isolated place generates. What are some of the key travel trends this year that you are seeing? Sustainable, purpose driven journeys. The reason for a trip is becoming more and more important, having to answer the following questions: what does this represent for me, how does this impact the planet and the communities, what will I take back home. Less vacations, with longer stays. More genuine, non-frill experiences. Connectivity should both form a technological point of view, but more and more, form a human point of view. The opportunity to be “active” and contribute in many ways. Edutainment - learn while being entertained. What are the plans for the future? At Massimo & Partners we are looking forward to continuing to push ourselves in creating and curating even more challenging projects. I am about to start a new venture in Japan, and I am fascinating by their culture and heritage. I am passionate about how I can bring a new dimension to an already very high quality and excellent hospitality offering, in one of the most refined and sophisticated country in the world. Future plans closer to home include working closely with my talented team, to keep on nourishing them and stimulate their passion for our amazing sector.

THE SAVOY ANNOUNCES APPOINTMENT OF CHELSIE BAILEY AS HEAD BARTENDER OF THE AMERICAN BAR The Savoy team is very happy to share news of the appointment of Chelsie Bailey to the role of Head Bartender at the world-renowned American Bar. She will join the hotel on 19 July from London bar Happiness Forgets, where she is currently General Manager. Chelsie began her career in the south west of England, managing popular Bristol bars such as Red Light and Filthy 13. After winning several competitions including Speedrack and Chivas Masters in 2016, and Monkey Shoulder in 2017, Chelsie won the coveted Bacardi Legacy Competition in 2019 in the UK and finished in the Top 8 in the world. In January 2020 Chelsie made the move to London and Happiness Forgets as General Manager, where

she worked throughout lockdown looking after their cocktail delivery service and preparing for their reopening. Chelsie has a WSET Level 2 in wine and spirits, and is known for her creativity when it comes to cocktail and menu development, so brings a wealth of experience to the American Bar. Commenting on her new role, Chelsie said, ‘I’m thrilled to be joining The Savoy team and working with such a group of talented and dynamic people; together writing the next chapter of the American Bar’s history. The Savoy has always had a reputation for innovation and quality; so the role carries with it a sense of responsibility and challenge, but that is what’s so exciting about this iconic position within the bar industry.’ The American Bar first opened in 1893 and is the oldest surviving cocktail bar in Britain. DOWN HALL APPOINTS LINDEN BEATTIE AS GENERAL MANAGER Essex country house hotel, spa and estate, Down Hall, has appointed Linden Beattie as its General Manager. Linden joins at an exciting time for the property, which is currently finalising its latest round of refurbishments to its bar, lounge and terrace, following a £2.8 million investment.

With over 18 years of experience in the premium hospitality sector, Linden brings a strong record in profit improvement, employee development and customer service to the property. Following the hotel’s recent phase of investment and development, Linden’s first task will be to successfully launch the F&B spaces at the property, as well as driving business development, recruitment and training, whilst working to ensure an outstanding level of service across the board. Linden joins Down Hall from The Waterfront Hotel, Spa & Golf Wyboston Lakes Resort where he progressed from Hotel Manager to General Manager. He played an integral part in raising the hotel’s profile and customer service standards. This was recognised through numerous awards and accolades including AA four silver-star status, a listing in ‘The Sunday Times Top 100 Companies to Work For’ as well as an AA One Rosette Award. He was also instrumental in the hotel reducing single use plastics by 20% in a year following their pledge to do so. Of his appointment, Linden says: “I am thrilled to be joining Down Hall at such an exciting time for the property. “I’m looking forward to leading the team as we navigate our way through a post-pandemic world and establishing Down Hall as one of the finest countryside hotels and wedding venues in the UK.”
