I get the need for late night vertical drinking to be curtailed but see no reason why restaurants with one sitting, whose guests are distanced and the ambience calm should be penalized. Let’s face it – Hospitality did not cause this second peak, conditions on its operations will not fix the rise in infections either, this is just a stop gap, a breathing period for government to prepare the real message, and we, the hospitality industry are the scapegoat. I am relieved we came back with a model that does not need to turn tables, and feel for those that do and those pubs that will suffer. LIVERPOOL ONE TEAMS WITH SIPSMITH & CAMDEN BREWERY FOR BESPOKE ‘THE CHAVASSE PROJECT’ INSTALLATION Liverpool ONE’s latest initiative to propel post-lockdown visitation is a new bespoke bar concept, ‘The Chavasse Project’, launched in association with Sipsmith Gin and Camden Town Brewery. HOSPITALITY GIANTS JOIN FORCES TO SUPPORT COLLEAGUES THROUGH COVID-19 For the very first time, the hospitality industry has joined forces to provide essential support to those impacted by COVID-19. Marking a first in the industry’s history, CareerScope is a partnership between five organisations: Springboard, Hospitality Action, UK Hospitality, the Institute of Hospitality and the Savoy Educational Trust. Launching on Monday 28th September, the free service will support those within hospitality, leisure and tourism who’ve either lost their jobs or are struggling to find work. Its objectives are to support those who have lost their job due to COVID-19 back into work, as well as those struggling to find work. Its aim is to bring the hospitality community together, providing advice and resources on developing skills, financial and wellbeing support; ultimately helping people get back into work and developing their careers. Some of the biggest names in hospitality have backed the initiative, including Michel Roux Jr, Clare Smyth, Raymond Blanc, Alastair Storey, Wendy Bartlett and Danny Pecorelli. They say CareerScope a vital initiative for protecting the future of their workforce. Michel Roux Jr, chef patron of Le Gavroche, commented: “Each year thousands of young people come to work in our industry, but COVID-19 has forced many businesses to lay off staff to survive. “Post-COVID and post Brexit, I really fear for the future generation of young chefs, waiters,
restaurateurs and hoteliers. As an industry we had to do something about it. In a time of crisis, it’s never been more important to look after our people, ensure they are happy, healthy and ready for work. We must be ready to welcome back those who have long and established careers in the industry, as well as ensuring the next generation of workers are coming through. This is a great initiative and shows that, even when the industry is going through its toughest period, we really care about our people.” The UK is proudly renowned as one of the food capitals of the world. Currently 187 restaurants hold one or more Michelin stars, UK produce is recognised across the globe and we nurture some of the worlds’ best talent. COVID-19 has hit the industry hard. We need to take drastic action to ensure there is the next generation of chefs coming through when the industry recovers, when opportunities for chefs to grow and develop will be stronger than ever. CareerScope is a great initiative to help those who’ve lost their jobs get back on their feet and give them the skills and support to relaunch their career.” CareerScope provides a one-stop industry hub with easy to access content on everything from CV writing and career webinars to redundancy advice, financial support and health and wellbeing resources. A digital training academy will also keep those out of work up to date on essential training, from customer service and food safety, to confidence and assertiveness webinars. Editor’s Review – SCIENCE AFTERNOON TEA AT THE AMPERSAND HOTEL The Ampersand hotel in London is an elegant Victorian building situated in the heart of South Kensington. The 5 star hotel is a member of the exclusive Small Luxury Hotels of the World and the stylish décor lends more than a passing nod to the local museums – the Science Museum, The Victoria and Albert and the Natural History Museum. The award winning Afternoon Tea is served in the Hotels’ Drawing Room, just off the main reception and carries a fun “science” theme. It consists of a selection of sandwiches, tarts, warm scones and a variety of patisserie, as well as some “scientific” surprises.

The first thing to do was select from a range of teas, we went for Jasmine and an orange-infused tea, both were fragrant and refreshing – a pleasing alternative to standard breakfast tea.
There are a couple of options to choose from when having afternoon tea at the Ampersand. There is the, for want of a better word, standard Science Afternoon Tea or the Science Tea-pot Tales Afternoon Tea, which has the addition of 3 tea-based cocktails. The “tea” itself commenced with an experiment to mix our own lemonade. The ingredients were presented in laboratory beakers, pipettes, syringes and test tubes and provided an entertaining and novel way to start our afternoon – and also provided an indication of things to come. The first of our cocktails arrived in glass teapots. An Earl Grey infused with vodka and Kamm & Sons and the addition of dry ice cubes presented a delightful spectacle. The drink itself was initially interesting but then the various flavours came to the fore, of the three cocktails we had, this was our favourite and went down extremely easily. By this time, the food had arrived. We had a selection of savouries that included smoked salmon & avocado blinis, roast beef and horseradish in brioche rolls, chicken and sun-dried tomato mayonnaise bun and a feta and broccoli tart. All were delicious and fresh, personal favourites were the beef and horseradish and the chicken and tomato mayonnaise – at first it seemed a fascinating combination, but it works and to the extent that we ordered a second round. At this point, we received our second cocktail – a mix of Copperhead premium gin, Roots mastic liqueur and

butterfly-pea flower tea. A beautiful lilac in colour – until a clear liquid is added and the science happens in front of your eyes, no spoilers. At the centre of any afternoon tea are scones, jam and cream. The Tea-Pot Tales was no exception. There were plain scones and, what I can only describe as incredible, Gruyere and Thyme scones with truffle butter, together with homemade Pimm’s and berries preserve and gorgeous thick clotted cream. To round off our fantastic experience, we indulged in some wonderful cakes and sweets. There was a curious fruit jelly served in a petri dish, a sublime chocolate and caramel “planet” mousse with chocolate spaceman, a colourful plum macaroon with lime to be added via a pipette and a coconut and orange half-moon cake. Up to this point, we had sat with two small brushes on our table; we finally got to use them on a wooden box containing chocolate “soil”. With homage to the Natural History Museum around the corner, we had to brush away at the soil and “discover” a chocolate fossil and dinosaur biscuit – very simple, yet satisfyingly fun and imaginative. We completed our tea with our third cocktail, green tea infused with rum and various fruit juices – this brought a bit of a punch to the end of a wonderful couple of hours. The Ampersand hotel brings an imaginative and “scientific” approach to the most British of traditions – the Afternoon Tea and with it a wonderful experience. Keeping customers safe in the post-COVID-19 “new normal” requires both staff and customers to take a considerable amount of ongoing extra care during service. What’s more, even after ensuring there’s plenty of space between customers, and staff are following the appropriate hygiene procedures, there’s still measures hospitality venues can take to ensure optimal cleanliness and maintain the positive customer experience. Contactless and APMs in a post-COVID norm Contactless is a first-choice method of payment for consumers today. It’s vital that hospitality establishments ensure they are prepared to accept contactless or alternative payment methods (APMs). In doing so, it ensures staff members and customers don’t need to handle cash, which can act as an infection vector. What’s more, providing a variety of payment methods doesn’t just come down to preventing the spread of COVID-19, but the need to deliver excellence within the hospitality industry. And the fact is, hospitality is evolving due to the rise of home delivery services, which has been particularly utilised during this pandemic. Venues that have never offered

Bisushima: NEW ROOFTOP RESTAURANT AND BAR TO SERVE UP PROGRESSIVE JAPANESE CUISINE OVERLOOKING TRAFALGAR SQUARE
Launching in winter 2020 will be Bisushima: a modern Japanese restaurant with a transformative vibe and atmosphere, taking diners from a tranquil breakfast, through to a lively and up-tempo dinner service. Located within the newly refurbished Page8 hotel, Covent Garden, the restaurant occupies the sixth floor. The 6,000 square foot venue proudly boasts a separate bar area and two large external roof terraces, directly overlooking iconic Trafalgar Square and the bottom of Covent Garden. Accommodating over 190 covers in total, it’s easily set to become one of the largest rooftop venues in the area. Bisushima is the creation of Chef and Restaurateur, Sergey Men, alongside his business partner Ruslav Ugarov. Having worked as a sushi chef in kitchens across the world, Sergey has developed a signature style he is proud of, turning high quality produce into well-balanced and flavoursome, modern Japanese food. Bisushima will place an emphasis on harmony between the guests, environment and the food. Harmony and balance are often described as fundamental principles that reveal the essence of Japanese philosophy within art, design and daily life. Example dishes include Toro tataki with quinoa and pak choi salad; Shime saba oshizushi (Seared cured mackerel pressed sushi with ginger, shiso and sesame); Unagi Shirayaki with porcini mushrooms and miso infused spinach puree and Hojicha Crème Brulee with Blackcurrant ice cream. Discussing the restaurant concept, Segey said: “Bisushima has been a dream

of mine for many years so I’m delighted to finally bring the idea to life. I want the restaurant to be a transitional space, with the whole experience depending on the time of day you visit. For example, in the morning we will be serving the only Japanese breakfast in London. It will be truly authentic, healthy and balanced with a huge amount of natural light and calming atmosphere. Then throughout the day it will be informal and laid back, a place of comfort and sanctuary away from the hustle and bustle of London on the streets below. “Moving into the evening, things shift gear. A big part of Japanese culture is entertaining and drinking in the evenings, an energy of endless possibilities. “Overlooking the lights of London, Bisushima will be the place to be for delicious, authentic sushi and modern dishes with Japanese essence, accompanied by interesting wines, sake and cocktails. The evening is when the restaurant will truly be alive and humming with excitement.” The interiors of the restaurant have been designed with the concept of Shinrin-yoku (nature therapy) at the forefront. With the mission to create a sanctuary in the city, the team have taken great inspiration from nature. Two dedicated concept retail spaces, a seasonal programme of evolving collaborations, workshops, exhibitions + tastings, new + renowned talent, including visiting craftspeople, chefs + bartenders. Opening 22nd September 2020 in London, Pantechnicon is a celebration of contemporary creativity and craftsmanship that explores Japanese and Nordic cultures through food, drink, retail and design. LATEST OPENINGS Overlooking Café Kitsuné and is an intimate but open gallery space hosting Sachi (meaning ‘happiness’ and ‘fortune’ in Japanese), a 30-seat pop-up dining spot for lunch and dinner featuring comforting Japanese dishes including seven-spice chicken, agedashi dofu and cold prevention soup. The gallery pop-up is a preview of the mainstay 100 seat Sachi restaurant, bar, cocktail lounge and street terrace on the lower ground floor, opening in Spring 2021. Sakaya is an immersive bar and boutique bottle shop tucked away on the east side of Halkin Arcade with a selection of handcrafted Japanese barware, spirits and wines featuring whisky, umeshu and sake selected by Sake Samurai, Natsuki Kikuya. The space will also play host to tastings of rare and precious bottles and blends. Both Sachi and Sakaya will open on 5th September. On the second floor, inspired by travels across the Nordics, is Eldr (meaning ‘fire’ in Old Norse), a 70-seat restaurant with seasonal menu showcasing Nordic cooking methods and traditions; pickling, foraging and cooking with fire. Menus have been designed to celebrate Nordic techniques with a sensitivity to British ingredients to bring something new to the London scene. The robust yet sleek space holds the industrial feel of the rest of the building, offset with a state-of-the-art open kitchen, complete with counter dining, for diners to take in the theatre of the Nordic chefs. On the third (top floor) is the 130-seat Roof Garden at Pantechnicon, a bar and dining roof garden for all seasons with a fully retractable electric glass roof and all-day small plate and snack menu from the kitchen at Eldr with
main dishes for lunch and dinner. The garden is designed by Finnish horticulturalist and garden designer, Taina Suonio and boasts some of the best roof space in the area with an expansive south-facing terrace. The Nordic kitchen team is led by internationally trained Finnish Head Chef Joni Ketonen. The Nordic cocktail menu will change seasonally, curated by bartendersin-residence from award winning bars and restaurants from across the Nordics; kicking off with Icelandic mixologist Siggi Sigurdsson, a winner at the 2019 Bartenders Choice Awards. New Concept Stores The Edit on the ground floor showcases a curation of 150 Japanese and Nordic brands including handcrafted gifts and products, from designer tech and ceramics to outdoor equipment, footwear and fashion accessories. The Studio on the first floor brings together a wider range, including a selection of beauty products from Bijo, whose mission is to introduce Europe to the Japanese wellbeing lifestyle.

It was then that the building’s horse and carriages used to transport furniture were given the name Pantechnicon. And so Pantechnicon entered the English dictionary, and the eponymous removal lorries still exist. With respect for its heritage, today Pantechnicon has been sensitively repurposed to meet the needs of the 21st Century.

DIVERSIFIYING IN A TIME OF CRISIS: NEW KENT HOTEL TO LAUNCH AS WEDDING VENUE Boutique hotel The Vines of Rochester postpones launch and adapts to cater for wedding market in a bid to survive Mid-2020 was set to welcome 13-bedroom luxury boutique hotel and restaurant, The Vines to Rochester in Kent, following five years of extensive renovation and restoration. However, due to the effects of Covid-19 on the hospitality industry, The Vines owners, father and daughter, Paul and Rebecca Collins have decided to pursue an alternative course, diversifying the property
to accommodate the increased demand to host postponed weddings and delaying the official hotel launch until January 2021. With successful wedding and hospitality businesses already under their belt including Cooling Castle Barn and The Fire Station Brasserie, The Vines proprietors, The Montgomery Group have been able to swiftly make the transition and transform the historic Rochester venue into a magical place to have a wedding.
The Vines proposes a distinctly different offering to its sibling venues. Formerly Rochester’s old archdeaconry, the building and surrounds are steeped in history and as such, the Collins family’s aim was to create a space that lives and breathes its remarkable history. Eight of the thirteen bedrooms on site are in the main house and each room is beautifully unique following the restoration of original features. The remaining five brand new rooms are housed in the landscaped gardens and each come with an individual patio area. One of the outdoor rooms will be available as a bridal suite. Accompanying the rooms, The Vines has two restaurants – one offering a la carte and the other a more casual Brasserie affair - a separate bar and outdoor kitchen and seating area. Each entertaining space will now play host to the most magnificent of wedding celebrations.

The traditional wedding includes all of the wellestablished elements key to a time-honoured English wedding and will host up to 70 dayguests, whilst their innovative and exciting festival wedding offering is The Vines take on a relaxed and interactive all-day celebration of guests’ nuptials with live and inventive food and drink stands and capacity for 120 guests. With a wealth of experience in the wedding industry behind them, the Collins family aren’t entering unchartered territory, however these are unprecedented times and this certainly isn’t how they had anticipated the launch of The Vines. The Soho Summer Street Festival, pioneered by John James of Soho Estates has been a huge success with 90% of businesses re-opening in the pedestrianised zone, over 1000 jobs saved and the noticeable rebooting of Central London’s hospitality sector. Most importantly it has brought the neighbourhood back to life. Soho has never seen such magical evenings. Despite this, the costs to keep the initiative going are a constant strain on the hospitality businesses in the area and the alfresco dining is under constant threat. Over £6,000 is needed weekly to cover security fees for the pedestrianisation, costs currently shared by operators.
Dré Masso is a London bartending legend and has been involved in the global cocktail scene for over 25 years, working at some of the world’s most prestigious bars. Dré said of the initiative: “I’ve designed this cocktail to help save Soho, which is still in trouble. There is nothing better for the soul than spending time with people we love in the restaurants that make us feel happy, a chance to briefly forget everything going on in the outside world. Emilia’s was created to warmly welcome you through our doors and serve you a comforting bowl of pasta in the homeliest way possible. So, to keep true to what we believe in, we have decided to extend Eat Out to Help Out into October. The offer is the same as in September: Mondays and Tuesdays only and 50% off pasta dishes only, up to £10 per person. We are doing this not for financial reasons (you can be sure things are not getting better, following on from the latest set of government measures!) it’s for our teams, to
keep them in work and content every day of the week. “CREATING THE EXTRAORDINARY” - SUSTAINABLY AND STYLISHLY How do you balance rejuvenating a dilapidated Grade II* listed building with creating a carbonzero new-build extension to provide the function, form, aesthetics and efficiency expected in a luxury retreat? At Grantley Hall Relais & Chateau near Ripon, the answer has been found within the Northern Powerhouse. The £70m revitalisation project has fused architectural design, construction and M&E expertise from Yorkshire with air movement specialisation from Lancashire. Most of the refurbished hall that has been transformed into a five-star hotel and the newlybuilt, carbon-zero Spa & wellness facilities feature ventilation diffusers from Gilberts (Blackpool), installed by Wheatley Mechanical and Machenair. ‘Stand-out’ components are bespoke curved slot diffusers up to 16m long across a 5m radius, and an innovative perforated return air grille for the swimming pool. Feature elements of the ventilation include: • seven GSLC curved linear slot diffusers varying between 8m and 16m in length, with radii from 4.8m to 5.7m in the main function rooms, providing smooth, accurate airflow even when installed in a recessed ceiling, which is underlit to resemble the sky • 110 HSL high capacity linear slot diffusers between 600mm and 5500mm in the hotel rooms • GD swirl diffusers in the gym • GSFE circular perforated diffusers in the night club bar • a bespoke 1.4m x 2.6m perforated return air grille in the swimming pool, screen-printed with the Grantley Hall logo. In response to the Four Seasons’ core value of “East meets West”, the Japanese calligraphy with the meaning of “season” is harmoniously blended in a typical European pendant chandelier and ingeniously displayed on the bottom part of the dome. DMA AND DOMINVS GROUP CELEBRATE PLANNING WIN FOR NEW HOTEL IN CENTRAL YORK CONSERVATION AREA Dexter Moren Associates (DMA) has won planning consent for a new high-quality hotel at the heart of York’s Central Historic Core conservation area for client Dominvs Group. The 132-bedroom hotel, near the landmark Clifford’s Tower, will feature a restaurant facing out onto the busy Piccadilly thoroughfare, becoming part of the Castle Regeneration Area.
COMPLETION OF DMADESIGNED HAMPTON BY HILTON ADDS GOLDEN ELEGANCE TO EALING SUBURB Hospitality design expert Dexter Moren Associates (DMA) has announced the completion of the new Hampton by Hilton on the Uxbridge Road in Ealing, close to the planned Crossrail station. Designed by DMA with a sympathetic exterior of soft autumn shades, the new hotel replaces two tired 1960s office buildings and features 181 guest rooms, as well as bar and restaurant fronting onto a generous boulevard-style public realm.

Mark Wood, Partner at DMA, says: “This project continues DMA’s experience in delivering the Hilton Hampton brand, following the successful completion and opening of our 297-bed Hampton by Hilton London Waterloo. This latest development, located bordering a leafy conservation area along the bustling Uxbridge Road, will help reinvigorate the area with a high-quality, elegant design and engaging streetscape.” The nine-storey hotel is unified using a reconstituted stone frame incorporating an infill of three colours of zinc “fish tail” shingles. The combination of colours creates a subtle gradation of autumnal shades, similar in colour and tone to London stock bricks, and references the green open spaces of Ealing and the immediate context. The buildings are stepped back from one another to open out the landscaped area at the front and provide increased visual interest.

To the rear, DMA’s attentive design has reduced the massing and impact on properties to the south by stepping the building back four times, whilst flat roofs will feature sedum planting to promote increased biodiversity. As a car-free development, the old, uninviting hard standing previously used for car-parking space has been transformed into a new high-quality boulevard, with refined paving and additional trees. The restaurant will face on to this generous landscaped public realm with an outdoor seating area, enriching the atmosphere and activity along the high street. DMA worked on a unified design for the two original plots, 109 and 111 Uxbridge Road, which were purchased separately and subject to two separate planning submissions, granted in 2014 and 2015. Work started on site in May 2018, with DMA working closely with main contractor MB McNamara Construction on the delivery of the project - this proved particularly important towards the latter stages of the project due to COVID-19-imposed site restrictions.
DMA’s concept for the façade interprets a contemporary approach to York’s vernacular architecture, particularly referencing the area’s detailed window and shop front designs. The use of brick solidifies the relationship between the hotel and the townscape, as red brick is a predominant material in the area, as well as establishing a link from the present day to the historic fabric of the city. Thanks to the use of different bonds and shadow gaps, the brick creates a coherent yet varied design, articulating and defining different aspects of the hotel’s elevation. Scale and massing were key issues, leading to the new hotel being ‘divided’ into two volumes. The higher side faces towards Piccadilly and reflects its larger building typologies, whilst the lower end of the volume sits comfortably with the more intimate scale of Walmgate and ensures that the hotel is subservient to the Grade I listed St Denys’ Church. The top floor and roofline are angled facing Piccadilly, echoing York’s varied roofscape, but stepped back, simple and unchallenging facing the church. A new public realm provides an important element to hotel’s setting facing Piccadilly, giving an open and welcoming first impression, and includes new trees and planters with seating to create a wider pedestrian friendly area. It has been estimated that the proposed hotel will create between 50 and 70 full- and part-time jobs during construction and once in operation.
