The Local Hub with Dara Turgeon and Josh Morton

A

t one time — not too long ago — the only reason to exit the flow of cars on Route 26 while traveling through that small bump in the road known as Locke Mills was to pick up a bag of fudge and a piece of Maine kitsch. But Dara Turgeon knew that Maine had more to offer than pine tie racks, so she opened The Local Hub five years ago with a mission to peddle many of the fine sundries and food items produced by the local craftspeople and farmers in this area. Now, as passersby drop in to stock up on fresh produce, poultry and meat, they often make a point to do so around dinner time on a Thursday, Friday or Saturday night for the chance to savor a new Specialty Dinner, one of the best kept secrets around!

But first - here’s a little bit about the market end of things. The experience starts with a feast for the eyes as a rotating display featuring an artist of the month decorates the walls around the cozy store. To the left is honey, to the right are soaps, chaga, and dried mushrooms, as well as greens, spring mix, cabbage, kale and organic maple syrup. Farms such as Mountain Meadow Farms, Abbot’s Farm and Ellis River Farm provide the aforementioned as well as rotating produce, Dunham Farms provides Gluten-Free bread and Carter’s Farm beef and pork are all on sale at their freshest and ripest peak. There are sundries, wines, baked goods, soups, sandwiches, pizzas, dairy items, coffees and teas. Fresh prepared foods such as macaroni and cheese, chicken piccata, meatloaf, scalloped potatoes, chicken and veggie pot pies made from scratch are always in the cooler and ready to go. And now for the reveal: Josh Morton, culinary mastermind, has made Specialty Dinner Nights the latest rage — with Thursday, Friday and Saturday nights each having a different theme. Josh started his culinary career about 20 years ago at the Iron Horse Bar & Grill, which was built in train cars behind the current Bethel Area Chamber of Commerce. He then moved to California and worked in the Natural Food industry for a decade, becoming a cheese and food buyer in the San Fransisco area. His current passion, however, is creating comfort food to bring this community together for a weekly celebration of flavors.

Thursday night is Burger Night, with sweet potato/black bean veggie burgers or local Carter beef burgers on homemade sesame buns. From there patrons can add bacon, spicy thousand island dressing, cheeses, a farm fresh egg, micro greens, sautéed mushrooms, roasted red peppers and so much more — all making for some super tall burgers. Friday night is Taco Night with soft and hard corn, soft wheat and gluten-free shells. Endless filling choices of Carter’s ground beef, house seasoned chicken, fish, brisket, shredded carrot, carne asada, shrimp, pulled pork, mango salsa, goat and many other cheeses, avocado, pickled onion, red onion, chili aioli and hoisin barbecue sauce make the flavor permutations dizzying. A tasty side of fresh slaw, and queso dip with peppers and other veggies are available. Saturday Night is Noodle or Pho Night, again with local ingredients as fresh as can be. Diners choose vegetarian pho or a ginger chicken broth with pork broth occasionally available. Make it your own with ingredients such as carrots, pickled ginger, shiitake mushrooms, cabbage and a mix of steamed, raw or pickled veggies. Shrimp, chicken, delicious sesame garlic Asian meatballs, glass noodles, ramen,

Deep broth flavor surrounds each diner’s favorite ingredients to create a richness usually found only in large cities. A small bar with local beers on tap rounds out a delightful evening. Eat in or take away — The Local Hub will fill you with good food while surrounded by a community of great people, making a stop in Locke Mills the new must do! A new era for the little mountain that could

T

his season’s early snow storms were welcomed by all and sundry, but none more so than the new owners of — and all the folks that live, work and love to slide on — the little mountain that could: Mt Abram. Last year’s variable weather left the finances thin and the outlook for reopening more than a bit precarious. In stepped a new ownership group to pump new energy and ideas in the mountain. The group includes current owner Rob Lally and family, being joined by Ken Knudson and family, Vaughn Clark and family, Tim Walker and family and John Carroll and family. This group of folks are representative of families that have stayed with Mt. Abram for a long time, and bring some much needed capital to the mountain their families love. The ultimate goal of the new group is to create a sustainable model so that Mt. Abram remains open for all to enjoy. And, of course, what good is a lot of snow without the proper equipment? A $350,000 investment for a state-of-the-art Prinoth Bison X groomer will provide sweet corduroy for all levels of skiers. The Bison X has all the bells and whistles. It’s a park machine — a monster, a beast, the latest and greatest, according to Bob Harkins, the second year general manager. Snowmaking updates include new hydrants, new valves, new guns, and oodles of new hose.

As snowmaking crews move across the mountain they no longer need to stop and drain the system, which used to take a whole shift; the new upgrades bring efficiencies that will result in more and better snow coverage. With all these new happenings, the biggest bulletin is truly the newly moderated ticket prices - at $29 for Thursdays and Fridays, $49 for Saturdays, and $39 for Sundays, the whole family can ski and have cash left over to enjoy the great food offerings in the lodge. There will be brunches and Thursday night pizza fests, a new menu, apres ski soloists and a band every now and then. There’s a new deck out front with a grill shack soon to be added, and new tables will expand seating in the dining area. Opening day is scheduled for December 15th and the mountain will be fully ready to host all their long time patrons, as well as those looking for an exciting new ski experience. Mt Abram is family oriented, affordable and fun, with a sense of community that harks back to a simpler time. And with 51 trails, 5 lifts, 1,150 vertical feet, challenging black diamond trails and a special area just for new skiers Mt Abram may not be such a little mountain after all! Bob says one thing that has not changed are the great people that make the mountain shine — from new Chef Paul Pinkston, who has

some fresh kitchen equipment, and Beth Walker, the food and beverage manager — to new and seasoned bartenders and food servers-- the dining experience will be first rate. Jim Manson handles lift operations and lift maintenance pro Krister Rollins will return as Snow School Director. Tim Hutchisen is Director of Competitions and Events. Angie Carroll will manage season passes, tickets, guest services and marketing. Tania Paul is still handling the finances, while Amy Boulanger will continue as Ski Patrol Director, as well as managing Human Resources. Another exciting change is that rental, retail, and tuning will be an in-house operation- Mt. Abram Sports will be managed by longtime industry vets Greg Luetje and Ann Crockett. Nationally known and sought after for his grooming skills, Alex Graves will lead the grooming and snowmaking departments. Summer plans call for the creation of mountain bike trails that are user friendly, lift service for downhill riding and a hopeful project to connect to the Bethel Village Trails. Cross Country skiing will benefit from those trails as well. On-mountain trails that have already been started will be finished and growth will continue. A new base lodge, a new lift and many other updates are projected to move forward if more snow and new guests drop in to make the 18/19 ski season a success. d Bethel LIVING | BethelLiving.com

Carter’s X-C Ski Shop & Centers with Anne Carter

O

ut on the Intervale Road, snaking along the Androscoggin River through woods and fields, then up and over Farwell mountain, a cross county ski trail system has quietly expanded over the past 27 years and now exceeds 25 miles of trails! The Carter Family, who have owned the land for over 200 years, have also recently broadened their lodging and event options through a flurry of new construction, and upgrades to existing structures. Anne Carter is thrilled with the newly renovated Willow Brook Lodge, where couples can book a room for $99 per night, or groups can rent the entire third floor — which sleeps up to six guests — for only $275. Those seeking a more rustic glamping experience can ski out to one of the four off-grid cabins, all of which have gas lights,

cookstoves, 3 or 4 double beds and wood stoves to keep visitors cozy. Every cabin is stocked with pots, pans, dishes and silverware — and the Carter’s staff lugs in drinking water and starts the fire for guests. Wood is available to keep that fire going, making the whole adventure rather hassle-free. “Stonewall”, the newest cabin, is quite elaborate with two lofts and nice pine detail. Larger families often book two cabins, sharing special times while exploring forests and mountains in the serene winter setting. The middle level of the beautiful Willow Brook Lodge has a pleasant function room for group events and race teams, and offers hot soup, chili, coffee and tea on weekends for recreational skiers. Oxford Hills High School practices on site and UMF hosts a race with challenging courses set up on the mountain, while easier recreational trails spread out across the river plain below. Trails for any level


skier are available, and dogs are welcome for a small fee. This year, six new wide trails have been established on the mountain, which is 1387’ of vertical terrain, all accessible for every level of skiing. The proliferation of wide trails allows room for track and skate skiing, as well as space for fat tire biking enthusiasts. After a storm, Don Gower boards the new rubber track Kabota RTV towing the Ginzu groomer to tamp down an entire trail width while forming perfect parallel grooves for classic langlauf skiing. Carter’s grooming fleet also includes a new 75% more efficient rubber chained Mahinda tractor with a 2200 RPM power tiller. After the trails are groomed, the Carter’s staff is kept

busy in the ski shop with Don and Anne tuning, waxing, mounting and working on repairs. There’s also plenty of equipment on sale at great prices in the well stocked shop, featuring a wide variety of skis — from traditional to racing, back country to skating — as well as boots, poles, wax and outerwear. Rentals of skis and fat bikes are available as well. There will be several private groups hosting events during the season, in addition to Carter’s Last Stand, the area’s most exhilarating New Year’s Day XC ski event — while the 3B Event in March — beers, burgers and bikes, is a season capper that celebrates the final weeks of a long season. Over in Oxford at Carter’s original location, the ski shop has closed but the 12 plus miles of trails and ski rental area remain open as usual. Travelers on Route 26 have noted new happenings at the old site! Oxbow Brewing has turned the barn into a tasting room, brewpub and wood-fired pizza place. They will have a shop to sell bottled beer, t-shirts, hats and more! d

Pan Seared Duck with Malbec-Golden Raisin Jus Ingredients

• 4 Duck Breasts • Salt + Pepper - To Taste • 1/4 cup Vegetable Oil

Poaching Liquid Ingredients

• 4 Pears • 2 cups Malbec Wine • 2 cups chicken stock • 3 Sprigs Rosemary • 3 Sprigs Sage • 2 Shallots, sliced • 3 tbsp. Balsamic Vinegar • 1/4 cup golden raisins • Salt and Pepper to taste • Sugar to taste

Directions

Cross Hatch duck breasts on skin Side. Season duck breast liberally with salt and pepper. Heat oil in skillet on medium high heat. Add duck breasts to pan and sear about 15 minutes. Remove duck breasts and drain oil from pan.

Pre-heat oven to 350°. Cut the bottom of the pears in order to stand upright in the pan. Add all ingredients of poaching liquid to the pan. Place pears in pan upright. Heat on stove top till steaming. Cover with foil and transfer to oven 30 minutes. Check for desired doneness by sliding skewer through pears. Remove pears from pan. Strain the poaching liquid and return the liquid to the pan. Heat on high, reducing by half. . Season with salt, pepper and sugar to taste. Slice duck thinly, skin side up. Serve with your favorite sides.

• 2 oz vanilla vodka • 1 oz Kahlua • 1 oz Baileys Irish Cream • 1 oz gingerbread syrup

Directions

Shake. Strain into cocktail glass. Top with the whip cream and sprinkle crushed ginger snap over the top. Drink and enjoy!
