In recent years grueling mountain races have replaced road races as the most popular form of testing one’s fitness and grit. In that spirit of adventure, The 1st Annual Mahoosuc Ridge to the River Challenge will take place in Bethel on September 14, 2019, starting at 9 AM. Participants have the option of a half marathon race, a 10K race or an untimed 10K hike. The Challenge will start from Mahoosuc Land Trust’s Valentine Farm at 162 North Road, Bethel, with participants traversing trails up and over the mountains to finish at the South Ridge area of Sunday River. As a bonus, participants can claim one free beer at the Maine Brewfest which takes place at Sunday River from 1 to 5 PM that same afternoon. “The River Fund aims to produce events where you can have fun while doing good,” said Jim Largess, Executive Director of The River Fund, a newly formed nonprofit in the Sunday River community focused on supporting young people through educational and recreational engagement. “What better way to have fun, showcase the natural beauty of our community and benefit three area nonprofits than a mountain race through the evolving trail system connecting Newry and Bethel?”

The inaugural mountain race is the brainchild of Largess, who wanted to create an event involving three local nonprofits with similar missions. He reached out to Kirk Siegel, Executive Director of Mahoosuc Land Trust, which now conserves 8500 acres to benefit the natural areas and communities in the Mahoosuc Region, and to Gabe Perkins, Executive Director of Mahoosuc Pathways, which strives to connect communities through trails. “Jim called me when I was on vacation and told me the idea of an adventure race,” Perkins said. “I was in immediately. We want to share our new community forest with as wide a range of people as possible. Mahoosuc Pathways relies on collaboration to effectively do our work and the Ridge to the River is a perfect example of that spirit.” The three nonprofit directors formed a committee and have enlisted a small army of volunteers to help organize the event. Net proceeds will be shared equally by the three founding organizations. One goal of the event is to showcase successful recent conservation projects by both Mahoosuc Pathways and Mahoosuc Land Trust, which are a treasure for the region. The course runs through nearly 5,000 acres dedicated to habitat protection, recreation and forestry,


lying between greater Bethel, the Sunday River and the Mahoosuc Mountains. A second goal of the event is to provide a mountain race that is tough enough to attract runners from all over New England. Siegel feels confident nobody will complain that the race is too easy. Half marathoners, especially, will be in for a test. “Anyone looking for a challenge will not be disappointed,” said Siegel, who, along with several other local mountain runners, has traversed many miles this spring and summer planning the half marathon route. “But the views from the top are spectacular. I know of no other mountain race in New England that takes runners across a long, open ridge like this event does.” Watch an amazing one-minute fly-by video of the run along the ridge, that is bound to get your heart pumping: www.ridge2river.me Along with the bare rock on the ridge, surfaces include

logging roads, rutted and uneven snowmobile trails, unmowed downhill ski trails and rugged single track sections. Total elevation gain for the half marathon is over 3,500 feet. Siegel suggests that runners might want to double their typical half marathon time as an estimate for this half marathon. “The footing is challenging in a number of places, and some sections are too steep to run for most mortals,” Siegel said. “We routed the course through some gnarly terrain because we have a great 10k course for anyone who does not want an extreme challenge.” There will be a bailout option at the top for people who entered the half marathon but find themselves over their heads at that point. Both courses take participants to the top of the ridge between Bethel and Newry where they will enjoy 360 degree views. From there, 10kers will begin their descent to Sunday River, while half marathoners will spend more time running along the open ridge.

ELC Outdoors

By the time late June rolls around every kid peering out their classroom window is simmering for summertime fun. It’s no secret that teachers and staff are sharing their dream of playing in the sunny outdoors. About 11 years ago employees of The Enriched Learning Center, a small alternative day school in Berlin, NH decided to combine their nontraditional educational curriculum with the thrill of white water rafting. In essence broadening their teaching opportunities to new audiences for the summer while pursuing one of their favorite hot season activities: playing in the river. ELC Outdoors began operations in the basement of the school with the purchase of a van and two used boats. Meeting their clients at rented campgrounds and public parking lots to lead them down prime white water rapids, their plan was to pay off the rafts and the van after that first summer. High water levels quickly led to soaring customer demand and the folks at ELC Outdoors ended that first season ordering more boats and shopping for a second van. Through more than a decade of growth, and diversification into a full menu of recreational

learning adventures, ELC has stayed true to its core aspiration of getting folks excited to revel on the water in the North Country. And by expanding their offerings beyond the river, they have encouraged people to view northern New Hampshire and western Maine as a playground destination — instead of just a long drive for a single activity. Yes, ELC runs the Androscoggin, Magalloway and Rapid Rivers from their Errol, NH headquarters and has recently expanded into


a second base in Caratunk, Maine for better access to the Kennebec and Dead Rivers, but their focus on cooperative experiences has fostered a truly diverse slate of programs. The Adventure Outpost in Errol, NH opened 5 years ago and features a 12 element ropes course with two ziplines, wildlife pontoon boat tours on Lake Umbagog, plus canoe and kayak rentals. There are pristine camping sites for rafting guests in primitive cabins and wall tents, plus a fully renovated New England Farmhouse on the banks of the Androscoggin for the benefit of larger groups. Yurt camping is planned as the next phase of lodging expansion. Their programming is great for families, individuals, bachelor/bachelorette outings, corporate retreats, school orientation and/or end of year field trips. They have also begun to contract out programming for various local summer camps. Interested parties should watch for further expansion through bus shuttles projected to run from Bethel and Rangely for rafting trips on select Kennebec River days. Anyone whose summer itinerary has a slot for a safe, fun outdoor experience with a focus on personal learning should get out on the river with ELC Outdoors before the snow flies and these river guides return to the classroom.

Wentworth Custom Woodworking Tom Wentworth is known locally for cutting trees from his property, dragging them to his board mill with horses, and using the finished lumber to build barns on his property. Tom’s son Robie took these experiences to heart and grew up working with his hands on all types of building projects. Now he is a custom woodworker and cabinet maker with children of his own. Robie grew up in Kennebunk and moved to Bethel, graduating from Telstar in 2002. He and his wife Mary Ann relocated to Syracuse, NY for about eight years where he learned his trade from three different woodworking companies. During this time he

perfected his skills in design and strengthened his craftsmanship. When Mary Ann became pregnant they decided to move back to Maine where Mary Ann got her real estate license and Robie started his business by filling orders for cabinets in homes near and far. Pelletier Custom Built Homes Inc., Maine Passive House, and Clearwater Builders. Robie has taken on projects like a 3-season porch, a small home, remodeling of master suites, kitchens and more. A team of 4 covers all the bases currently, and Robie concentrates on custom cabinetry. When not working, the Wentworth family hikes and enjoys the mountains. Skiing History of Oxford County From Jockey Cap to Jordan Bowl by Leigh Breidenbach

Ski Museum of Maine Satellite Exhibit in the Western Mountains Gallery, The Museums of the Bethel Historical Society The oft-used phrase “As Maine goes, so goes the Nation,” is a perfect way to describe the history of skiing in Maine — and Oxford County in particular. Ski historians have long credited Maine with the first recorded use of skis in New England. In March of 1869 the Maine legislature resolved “to promote the settlement of public and other lands” in northern Maine, and by May of 1870 the State had recruited a group of Swedes (22 men, 11 woman and 18 children) to settle in Aroostook County, creating the town of New Sweden. The settlers brought their knowledge of ski construction to the area and by 1902, the use of skis for work and transportation officially arrived in Wilson Mills when Fredrick Jorginsen ordered a pair to aid in his duties as the local game warden. The idea of skiing for fun caught on with Norman Libby of Bridgton by the winter of 1903 after a few trips skiing up and down Pleasant Mountain. He liked it so much that he decided to take on the 100 mile trip from Bridgton

to Gorham, NH as a lark. The winter of 1915 found patients at the Gehring Clinic (now the Bethel Inn) literally skiing for their health. It would not be long before skiing and ski jumping became a community wide celebration through Winter Carnivals. The Chisholm Ski Cub in Rumford put on their first carnival in 1923, followed by the Pineland Ski Club of Andover in 1929. The Rumford and Andover Winter Carnivals soon became not only each towns biggest social event of the year but also served for decades as qualifying events for the United States Olympic Nordic Team. By the 1930’s, thanks in part to winter carnivals and interest in other winter sports — including tobogganing and snowshoeing — skiing (called ski running until the advent of rope tow) became a larger part of the local economy. The Bethel Inn started advertising for winter tourists around 1925. The town of Fryeburg got in on winter tourism by promoting a ski train running from Portland to


the temporary Pine Tree exhibit in the Robinson House was the start of a beautiful friendship.

Fryeburg in the winter of 1935. Soon there were two “advanced” ski trails on Starks Hill cut by the Fryeburg Winter Sports Committee, followed by wooden toboggan chutes and the first rope tow in Maine on Jockey Cap. Within a few weeks the town of Bridgton moved to cash in on winter tourism by putting up a rope tow on Bridgton Highlands. It took the Bethel area a while to add their rope tow. The Portland Press Herald ran the headline on January 8, 1949 “Ski-Conscious Bethel Pools Efforts To Erect New Tow” . . . and the rest is history. Thanks to a collaboration between Wende Gray, a board member of the Ski Museum of Maine (SMOM) and Randy Bennett, Executive Director and Curator of Collections for the Museums of the Bethel Historical Society (BHS), the story of skiing in Western Maine is being shared in a satellite location in the Western Mountains Gallery at the Robinson House on Broad Street in Bethel. The partnership began in 2016, when the New England Ski Museum, located in Franconia, NH, loaned their extensive exhibit “The Mountains of Maine: Skiing in the Pine Tree State” to the SMOM. It did not take Gray and Bennett long to see that mounting

The inaugural regular exhibit, “Oxford County Skiing History — From Jockey Cap to Jordan Bowl”, traces the local roots of alpine and nordic skiing and manufacturing. The exhibit displays photos and stories of Sunday River, Mt Abram, Shawnee Peak and Black Mountain along with some of the lost ski areas like Jockey Cap, Burnt Meadow, Evergreen Valley, Earle Brown and Lone Pine. The manufacturing wall features Paris Manufacturing, Yopp and The Claw skis, and a monitor to view the video “Tree to Ski”. The ski rack displays skis made in Oxford County from 1920-2018. Nordic skiing is well represented by the towns of Andover, Bethel and Rumford, which were once considered to be the nordic ski capital of the United States. Pictures and stories about skiers like Chummy Broomhall, Maine’s first Olympian (1940) from Rumford, who was a milkman by day and a nationally recognized cross-country athlete and coach for more than 60 years bring the history of skiing alive. The Oxford Country exhibit is updated on a regular basis. A separate exhibit will be added this winter in celebration of Sunday River’s 60th anniversary and in 2021 for Mt Abram’s. Hours for the Western Mountains Gallery matches the Bethel Historical Society; Tuesday through Friday 10 am – 4pm through October 19, and 1-4 pm on Saturdays in July and August. Admission is free. The Ski Museum of Maine is located on Maine Street in Kingfield, Maine.

Summer Recipes TIRAMISU INGREDIENTS • 5 lg eggs • 5 or 6 lemons • 1 cup sugar • 1 1/2 cups limoncello • 1 lb Mascarpone cheese • 40 ladyfingers

Limoncello Tiramisu Pour just enough water in a double boiler pan so water level is just below the mixing bowl. Separate eggs putting yolks in double boiler bowl, whites in separate bowl for whipping. Remove zest of 2 or more lemons equaling 2 tablespoons, then squeeze lemons equal to 3/4 cup of juice. Next mix yolks 1/4 cup sugar 1/2 cup of limoncello until well blended set bowl over simmering water whisking constantly until heated to a frothy sponge. When sponge has thickened enough to forms ribbons remove from the heat and let cool completely. Next in a sauce pan combine 1 cup limoncello,all the lemon juice, 1 cup water and 1/2 cup sugar, bring to a boil cook about 5 min, cool completely. In a large bowl and wooden spoon take mascarpone and lemon zest mix until light and creamy, whip egg whites to stiff peaks with 1/4 cup sugar. Next fold lemon curd and mascarpone and lastly fold eggs whites until evenly blended. Now lightly soak ladyfingers in limoncello syrup and line single layer of desired dish, then take 1/2 your mascarpone mixture over ladyfingers, repeat layers. Chill for 6 hours or freezer for 2 hours best if let sit 12 hours.

MOJITO INGREDIENTS • 1.5 oz white rum • 3-4 mint leaves • 4-5 fresh blueberries • .5 oz Fresh lime juice • Sugar cube • Club soda

Mojito Muddle the mint, sugar and fresh lime in a short glass. Fill glass with ice. Add rum, and fill glass with club soda. Garnish with a lime wedge and sprig of mint.

This years’ trail running race will reward 10k’ers with farms, paved and logging roads, beautiful views, forests and trails, while an additional 8 mountain peaks, stunning vistas, and the soon-to-be-infamous Spruce Cliffs and Aftershock await the half-marathoners. A moderately difficult 10km course, suitable for newbie racers, hikers, and seasoned runners; and a doozy of an adventure for the half-marathon. This event is hosted by The River Fund, Mahoosuc Land Trust, Mahoosuc Pathways, three local non-profits working together to promote trails, healthy lifestyles, conservation and community.

Summer Recipes for your Biking / Hiking / Paddling Adventures

oooh, Sweet Summer in the Western Mountains! May the days linger long as we pedal, paddle, and hike around our favorite rivers and streams, hills and mountains. Take a break on a ledge by the river, remove your shoes and dangle your feet in to rest and refresh. Be sure to pause often to look around at what is easy to forget. We live and play in such a heavenly place. And summer is but a few short months, so savor every moment. Before you head out in the morning, pack a refreshing mid-day meal with the intent of fueling your body healthily so as to keep your energy 28

levels high as you climb that extra mile, or paddle down through that crazy rip ahead. Somehow, food out on the trail or stream always tastes better after we play hard. A Summer Quiche can pack nicely into a food storage container and is delicious when eaten cold or at room / field temperature. Bake it with fresh herbs and vegetables, and you will feel the burst of energy from the protein in the eggs and cheese. Black Rice and Sweet Potato Salad accompany the quiche for a well-rounded meal. And a treat of Cranberry Pistachio Energy Bites will keep you going all afternoon. Remember your sunblock......... and eat hearty!


Summer Provencal Quiche serves 6 PREHEAT OVEN TO 350 DEGREES If you are pressed for time, choose a pre-made pie crust, it’s a snap to flute the edge for a homemade look. CHOP 1 TO 1-1/2 CUPS ZUCCHINI Saute a medium chopped onion in butter Stack Basil leaves and chop to provide a loose 1/2 cup CHOP 2 SMALLISH PLUM TOMATOES Mix all of the above together in a large bowl. Have ready 1 cup of local Goat’s Cheese torn into small chunks. FOR CUSTARD FILLING, beat these together: 6 eggs, beaten, 1-1/2 cup of half and half 1/2 tsp. salt , fresh pepper and a bit of grated nutmeg Place the cooked veggies in the bottom of the pie shell. Top with cheese, then pour in the custard mixture. Place into preheated oven and bake until set in the middle, maybe 35-45 minutes depending upon your oven. Let cool. You can also make this in a half sheet pan and cut small for appetizers! Enjoy!

Cranberry Pistachio Energy Bites Kick up your energy with these simple and healthy no-bake Cranberry Pistachio Energy Bites! INGREDIENTS 8 oz. (about 1 packed cup) chopped dates 1/2 cup honey 1 Tbsp. chia seeds (optional) 1 Tbsp. ground flax seeds or wheat germ pinch of salt 1 1/2 cups old-fashioned oats (dry, not cooked) 1 cup shelled pistachio nuts 1 cup dried cranberries 1/3 cup white chocolate chips (optional) Combine theaddates, honey, chiabyseeds, seeds and salt in This brought to you John flax Anderson a food processor, and pulse until smooth and combined.

Simple Black Rice and Sweet Potato Salad So rare at one time, this once “forbidden rice” was the rice of emperors. Chewy, nutty and nutritious, get to know black rice. It’s loaded with antioxidants, lowers cholesterol and plays well with other....like sweet potatoes! INGREDIENTS 1-1/2 cup black rice 3 cups veggie or chicken broth salt, cumin seed OR powder Tamari or soy sauce, to taste 2 medium sweet potatoes a bunch of scallions, trimmed and chopped COOK THE RICE 1-1/2 cups of rice to 3 cups broth and a dash of salt. Bring to a boil then turn down to a simmer, covered, until rice is tender. Cool it spread out on a cookie sheet. COOK THE SWEET POTATO peel, cube and cook the sweet potatoes until just fork tender, drain and let cool. FINISH THE SALAD Combine the rice and sweet potato with the chopped scallion, cumin, and soy sauce. Season to taste with salt and pepper. This travels well and keeps in the fridge for several days.

You should be able to stir the mixture -- if it is too thick, add in another tablespoon or two of honey. Transfer the mixture to a large bowl, and stir in the oats, pistachios, dried cranberries, and white chocolate chips until evenly combined. Cover and refrigerate for at least 30 minutes. Once the mixture is cool (and easier to work with), use a spoon or cookie scoop to shape it into your desired size of energy balls. (Mine were about 1-inch in diameter.) Alternately, you can line a small baking pan with parchment paper, and press the mixture evenly into the pan, let it cool, and then cut into bars. Store covered in the refrigerator for up to 2 weeks. (Storing them in the refrigerator especially helps the energy bites hold their shape.) Bethel LIVING | BethelLiving.com
