Publisher’s Note As we put the finishing touches on this issue of Bethel Living our community breathlessly awaits the fall of fresh snow. The turkey has been consumed and holiday decorations are bursting from the closet to make all aglow here in our Western Maine Mountains. Given all the turmoil and angst of today’s news, please take time this season to be with loved ones and share your compassion with family, friends and strangers -- even people from away! We are a fortunate few here in this bountiful expanse of small villages, big mountains and tight community. In this issue you will read about Mt. Abram’s new GM Bob Harkins, follow Cheryl Gillespie’s suggestions for a wonderful holiday mountain-to-village pub crawl, meet Paul Chiasson of Rustics Furniture and learn how to help support the dream of a young girl who succumbed to cancer. Check out the Maine Mineral & Gem Museum’s newest outreach effort, then cook up 22 Broad’s Chicken Marsala recipe. Be sure to clip this winter’s Restaurant Specials and hang it on your fridge next to the Events Calendar so you won’t miss a thing! My production support team is wonderful, as are my advertisers, readers and subjects — you all make knocking together this magazine a joy, not a task. Every day I hear from friends and local folks who are as thrilled to live here as I am. Bethel and it’s surrounding villages, mountains, rivers and plains are where it’s at!

Mt Abram Looks to an EXCITING Mt Abram Ski Resort — Maine’s Family Ski & Ride Experience — is looking forward to a fantastic 2017-2018 winter season. Newly installed at the helm as General manager, Bob Harkins comes to Mt Abram with an extensive background in the ski industry, entrepreneurship and small business development. Formerly a U.S. Ski Team coach and a noted player in the development and success of Sunday River and the American Skiing Company in the 90’s, Bob also stoked the creation of two Maine businesses: Cold River Vodka and the Western Maine Guide Service. With Harkins and the management team in place since September, the resort has spent the fall in a big push to complete a number of maintenance and expansion projects. New for this winter are a redesigned website with e-commerce capabilities, a re-configuration of the lodge featuring an enlarged Loose Boots Lounge, a seasonal locker room, the new Norway Savings Bank Alpine Center and designs on an expanded outdoor children’s snow park. Events are a big part of life at Mt Abram. Winter programs include themed weekends, dinner service, a Telemark Festival in early February and monthly full-moon hikes to the “top shack” for hot chocolate and adult beverages. Maine Class A High School Championships and the Maine Middle School Giant Slalom Championships are among the competitive events to be hosted this year. Younger skiers and riders will be entranced by the revival of Mt Abram’s long history with 1960’s cartoonist Jay Ward’s characters from The Rocky and

6

Bullwinkle Show and Fractured Fairy Tales as they make a themed comeback throughout the season. With a very strong emphasis on family fun and a great learnto-ski program, Mt Abram is continuing a tradition that has driven the resort’s success for 57 years. A large contingency of Mt Abram skiers are third-generation family pass-holders with chalets in the Mt Abram village. The “Village People” as they are known, have been the backbone of the Mt Abram community through thick and thin. Other community social and skier support systems are constantly emerging including the “Aesthetic Committee”, “Wives of Bear Lane” and the “Ski-T-A”. Mt Abram has 51 trails, two chairlifts, two t-bars and a “magic carpet” conveyor in the Westside beginner learning area. There are two base areas servicing the 1150’ vertical drop, with trail options ranging from wide green slopes to double black diamond glades and cliffs, plus multiple race venues and terrain parks. Mt Abram is the WABAC Machine of New England Ski Areas (yes, there is WiFi in the lodge), providing skiers and riders of all abilities with fun and challenging terrain in a very laid-back, family-oriented atmosphere. Mt Abram invites skiers and riders to come experience the easygoing side of winter. FMI call (207) 875-5000, visit www.mtabram.com and see them on Facebook at Mt Abram

Mountain to Village

PubCrawl by Cheryl Gillespie

Back down and around the mountain, The Foggy Goggle resides on the second floor of the South Ridge Lodge. If the weather permits, taking a drink out on the spacious deck to watch the skiers and riders funnel down to lifts #2 and #7 provides constant entertainment.

The Mountain Room Who’s game for a convivial pub crawl while visiting the Sunday River area? There’s no way to do justice to every local bar on one outing, but allow Bethel Living to lay out the possibilities. Many folks start their barhop while out for an alpine, nordic or snow shoeing adventure, so let’s begin at midday on the mountain. Scoot up the Chondola from the front of the South Ridge Lodge and ski or crunch your way into the North Peak Lodge. The Mountain Room is waiting. Harding Lee Smith — owner of The Corner Room, The Front Room and The Grill Room in Portland — charmed the ski crowd last season with this bar and eatery which overlooks gorgeous mountain views through floor to ceiling glass windows. An upgraded deck has views of the endless mountaintops trailing away to the north. Next, take a slide over to Jordan Bowl. Look for the easy, flowing green trail named Lollapalooza and go almost all the way down. Don’t pass the sign for Sliders Restaurant on the left side of the slope. Leave your gear on the snow, “slide” in and find a cozy bar tucked behind and slightly beneath the set of open circular stairs that wind to the upper level of the restaurant. This bar is lively, fun and serves great draught beers as well as mixed drinks. 10

Bethel LIVING | BethelLiving.com

Still ready to brave the slopes? Ski or ride over to Barker Lodge by taking lift #2, then navigating a couple bunny trails before stomping up the stairs to Barker Bar on the second floor. Without much fanfare or signage about its presence, this bar is dominated by locals. There is a mug club with specials for the members. Once found, Barker Bar will become a regular stop for slopeside refreshment. There are a few more bars on the mountain that really get going during the après ski hours, so it may be best to lose the sports equipment at this point. At White Cap Lodge, discover the Shipyard Brewhaus. It’s a family friendly setting with good drinks and food. A bit farther down the access road at the Grand Summit Hotel is Camp, an ample bar fronting a woodsy-themed dining room. Drinks can be accompanied by wonderful comfort food such as baked beans and brown bread. If a craving for Italian food strikes, head back up just beyond South Ridge Lodge to locate Frank’s Bar and Grille at 8 Fall Line Drive in the midst of the Fall Line Condominiums. This bar is very roomy and comfortable. One last venue — with perhaps the best views of Sunday River’s mountain peaks — is a large restaurant, formerly known as the Phoenix (and for one season, Aerosmith drummer Joey Kramer’s Rockin’ and Roastin’ Cafe), located at the bottom of the South Ridge parking lot at 9 Timberline Drive. This establishment, now called Trail’s End, has a spacious sports bar tucked under the second floor restaurant. A short scoot down the access road, at 23 Skiway, sits a new, casually elegant place dubbed The Meeting House. They feature a full-service restaurant and bar during the winter season — offering a hearty, rustic, Viking-worthy

menu of food and drinks seven days a week. Their fare will enchant intense foodies while catering to vegan and gluten free diets and is available for events.

Now, before heading into Bethel Village itself, it might help to cleanse the palette. Consider pulling into the Harvest Bar: Eatery & Alehouse at 32 Parkway Road. Order up one of the sixty-five beers, or better yet move on to something new, like ciders, wines, fresh-juiced mimosas or Kombucha, a fermented tea with a probiotic boost. A large blackboard lists exactly what local farm provided the ingredients for each dish. In Bethel proper, there are still many bars to try. Most open around 4 to 5 pm for the evening’s revelry. At 151 Main Street, Sud’s Pub lies underneath the elegant Sudbury Inn. It’s a family friendly place with a row of taps to rival any bar. Just up the street at 43 Main, is another addition from last year: Brian’s Restaurant. Their bar, situated to

The Matterhorn A bit further away from the mountain at 292 Sunday River Road sits the well-known Matterhorn Ski Bar. This restaurant is loud, fun and full of more winter sports memorabilia than a museum. The bar is inviting and hosts a mug club for the regulars. The food is good, with Neapolitan-style pizza baked in a wood-fired brick oven and an array of American eats. Live entertainment and a merry crowd make this hangout a perennial contender for Best Ski Bar in the East. At the end of the access road as it spills into Route 2 sits the Sunday River Brew Pub. It’s possible to stop in for breakfast, return for lunch and end the day with a beer sampler and pizza. There is usually an entertainer singing in the evening. The large fireplace on their deck is a grand attraction. On the journey down Route 2 toward Bethel are two great places to stop for a drink. Right across the road at 150 Mayville is Rooster’s Restaurant. Upstairs at this full-service tavern sits a robust bar with neighborly bartenders and plenty of locals chatting about the day. Right across the road at 150 Mayville is the Jolly Drayman Pub. This is the spot to drop in and have a toddy when craving something from the old country; the bar is straight from London town.

Brian’s on Main St. the side of the restaurant’s entryway, offers Maine themed drinks such as the Coco Snowball and the Maine Mule. Further up the street is the Millbrook Tavern in the basement of the famous Bethel Inn Resort. The lounge is warm and family friendly with marble top tables and live weekend entertainment on the grand piano. The Funky Red Barn at 19 Summer Street will offer you just what its name implies. It’s funky and fun. There’s a large dance floor for busting some moves after a few brews. The Barn claims to be the “prime rib King of the western foothills of Maine.” On Thursdays, the rib is served with a potato and vegetable at the implausible price of $14.00 per plate. Always end a pub crawl with elegance and class. The best way to show some style is a visit to 22 Broad Street where the restaurant by that name occupies the building known as the Gideon Hastings House. This establishment, which features a martini bar, could pose a challenge as they serve well over a dozen different martinis. One would have to be a super being with a large, hollow leg to actually pub crawl all the way from the mountain into Bethel in a single burst of enthusiasm. Best to start and stop throughout an entire weekend to maximize the good times all these truly great watering holes have to offer. Cheers!

with Paul Chiasson Bethel Living’s front cover is a Rustics Kitchen The most difficult traffic problems around Bethel usually involve deer, or ice, or both. But people from away tell us that the problem with traffic in more suburban areas, like — just as an example — around Boston, is that there is way too much of it. Which means a lot of time spent behind the wheel thinking about life choices that would be more . . . fulfilling . . . or rewarding . . . or both. And so it was with Paul Chiasson. Until, that is, he and his wife Kathy sold their house in Wilmington, grabbed their two young sons and headed for the hills. The Bethel hills. The Chiassons built a home in Taylor Woods along the Intervale Road, and Paul, unable to find the type of home furnishings he envisioned for their new dwelling, decided to build his own. The project was so fulfilling that he decided to see if it might be rewarding as well. Thus, in 2006, Rustics Log and Country Furniture was born into a showroom at the Parkway Plaza and sales have grown steadily ever since. After starting with his own table and chair designs Paul moved quickly into crafting hutches, couches, beds and desks — even grandfather clocks. Customers who bought one piece would return with a request for another specific item, often something Paul had not built before. By adding versatility with materials like cherry, birch, cedar, barn board and exotic woods from Rare Woods in Rumford, the range of enchanting designs exploded. Today the store has a full line of wonderful creations for every room in the house. And the orders for custom work, mostly unique articles tailored to luxurious primary and secondary homes, roll in constantly.

Paul has done quite a bit of work for Joe Bornstein’s Portland office as well as for his Cape Elizabeth home. Dartmouth College owns a compound of several large cabins filled with beds, desks, tables, chairs and dressers from Paul’s shop. Lately, he’s been exceptionally busy outfitting three large Katahdin homes in Gilead. The robust housing construction market in Bethel will keep Paul working hard as he supplies customers both near and far with one of life’s rare gems — a high-quality, functional piece of art. A closer look at the History and Science behind Maine Mineral & Gem Museum’s Rock Garden by Myles Felch, Assistant Curator

The Granites:

Vintage postcard image from inside one of the Hallowell Granite quarries, image courtesy of Henry Minot

The Rock Garden features three granite quarrying areas of Maine; Hallowell, North Jay, and Stonington. Granite is a light-colored igneous rock that forms from cooling and crystallizing molten magma far below the surface of the Earth. Granite primarily consists of two minerals, feldspar and quartz, in an approximately 2 to 1 ratio. There are often other minor minerals (called accessory minerals) associated with granites like muscovite and biotite mica, or garnet. The color of granite is due to the color of the feldspar, which is commonly red, white, and gray. Granite quarrying in Maine began along the coast in the early 1800’s. Used primarily as a dimension stone, Maine granite has been used to construct dozens of public buildings, bridges, and monuments across the country. During the height of the granite industry at the turn of the 20th century, approximately 150 quarries were operating in the state. The two tallest granite slabs in the Rock Garden are from the Hallowell pluton. In geology, a pluton is a large

body of igneous rock that originally crystallized from magma several miles below the surface of the Earth. These two taller specimens are from the Stinchfield Quarry in Hallowell. This fine grained, grey granite was suitable not only for monuments, but also for constructing significant buildings such as the Custom House at Boston, and the Masonic Temple in New York City. The single lavender colored specimen (pictured left) is a coarse-grained biotite Lavender colored granite from the granite from Stonington, Church Quarry in Stonington. Note the and part of the Deer drill marks along the edge left by quarry Isle pluton. Within this workers from splitting the stone specimen are large reddishpink feldspar crystals, which give the boulder its color. Granite from the Stonington area was used primarily for bridges and buildings, but it was also selected and used to construct the Kennedy Memorial in Arlington, VA. While you’re walking around the rock garden looking for the third granite locality you might look down at your feet! The garden is paved with slabs of a light gray (almost white colored), two-mica granite with accessory garnet, from the North Jay pluton in North Jay. Some of them contain pegmatite veins.

Coarser grained pegmatite vein cross-cutting a paver of North Jay Granite. Blue pen for scale.

These pavers are available for purchase as part of the museum’s special donor recognition opportunity. Purchasing a paver is one of the easiest and most memorable ways you can be a part of our history by literally setting your name in stone. Availability is limited, so dig in today and don’t miss out on your preferred paver location. Light gray granite from the Stinchfield Quarry in Hallowell.

Hailey Hugs

“Go Gold” License Plates Drive

On September 23rd Team Hailey Hugs — a non-profit charitable organization that champions awareness and support for families facing childhood cancer — lost their inspirational leader when Hailey Steward, age 10, finally yielded to the B-cell Acute Lymphoblastic Leukemia she was diagnosed with at age 5. During the five years that Hailey and her family spent trying to remedy her blood disorder they somehow found the time and energy to focus outside of their own tragic circumstances, aspiring to aid in the larger effort to eradicate cancer in children. In past years Hailey Hugs raised money for the Maine Children’s Cancer Fund to purchase iPads, helping families to surmount the communication hurdles of extended hospital stays. In 2016, The Firefighters Refrigerator Challenge raised $12,000 to buy and install 30 refrigerators in patient’s rooms at the Barbara Bush Children’s Hospital in Portland. Now, Hailey Hugs is trying to establish a specialty “Go Gold” license plate to put the issue of childhood cancer funding on the cars of as many Maine residents as possible. To establish the new plate 2,000 people must sign up and pay the $35 fee. Hopefully, the Gold Plates will become a common sight on vehicles around the state — particularly right here in Bethel where a special little girl looked outside herself and saw a way to extend her loving spirit beyond her time.

Hailey Hugs focuses on FOUR main areas: • Supporting families financially while their child faces cancer treatment • Supporting local hospitals, facilities and research clinics—by financial assistance for items needed to support families during hospital stays • Supporting legislative efforts in order to raise awareness and funds to support children with cancer • Organizing and managing multiple events to fund the organization’s effort. There is a fundraiser planned for this winter to purchase the Hailey Hugs license plates for families dealing with childhood cancer - stay tuned in to the website and Facebook pages

Recipes from Bill Slattery Chef at Twenty-Two Broad Street

Chicken Marsala SERVES 2 INGREDIENTS • 2 Chicken Breasts Boneless Skinless • 1/4 cup Flour • 2 Tbsp. Garlic, chopped fine • 1 Tbsp. Shallots, chopped fine • 3 Tbsp. Butter, cold • 1/2 Cup Marsala wine • 1/2 Cup Mushrooms, sliced and sauteed • 1/4 Cup Veal Demi Glace • 2 Tbsp. Vegetable Oil • Salt & Pepper to Taste DIRECTIONS Cut chicken breast into 1/4 inch thick slices. Dip Chicken breast pieces in flour and shake off excess flour. Heat oil in saute pan until hot, sear chicken pieces until light brown. Add garlic and shallots and saute until light brown about 1 minute. Remove pan from stove and add Marsala wine. Return to stove and flambe. Add demi glace, Mushrooms, Salt and Pepper and reduce until thickened. (Brown gravy could be used in place of demi glace, demi glace can be purchased at high end specialty stores) Bartender Ed Connolly suggests the following wine pairings for Bill’s Chicken Marsala: For a delicious white wine, try Novellum Chardonnay Languedoc, France It features aromas of honeysuckle and peach, balanced by flavors of tropical fruit and orange. For a satisfying red wine, Ed suggests Carpineto Vino di Montelpulciano Riserva, Sangiovese, Tuscany, Italy. This wine has bouquets of violets, cherries and wood, and an elegant texture with a long finish. Both white wines and reds work equally well with a versatile dish like Chicken Marsala. For reds, look for light to medium bodied wines, with rich fruit and earth tones. For whites, you can opt for a full-bodied Chardonnay to match the weight and buttery texture of the dish or opt for something light and acidic to cut through the rich sauce and act as a palate cleanser. These will work nicely with this version of the dish.

Ed’s Seasonal Cocktail is a Black Fig Martini INGREDIENTS • 1.5 oz. Black Fig Vodka • 1.5 oz 22 Vodka • 1 oz. vanilla vodka DIRECTIONS Mix together and shake well. Rim a chilled martini glass first with chocolate syrup, then dip in graham cracker dust. Pour and enjoy!
