Publisher’s Note Fall arrived and we took a deep breath. Christmas was white and skiers and riders rejoiced. Mountain Greenery with Sally Sawyer and Leslie Kavanagh
The essential spring day which caps nature’s reawakening rush — Mother’s Day — falls on Sunday, May 14th this year and that means a lot of work is underway over at Mountain Greenery in West Bethel. For 30 years Sally Sawyer and Leslie Kavanagh have watched demand go from vegetable seedlings to flowering plants, and now back around to vegetable seedlings again as the home-farming trend gains traction. Whichever plants tickle your Mother’s Day fancy, the green thumbs working in the four greenhouses at this busy enterprise will have a large selection available when their doors open on that second Sunday in May. Seasonal favorites include many brightly colored hanging flower baskets, potted flowering plants and a generous assortment of flower seedlings — from pansies, petunias, daisies and geraniums (1392!!), to
begonias (646!!). Verbena and supertunias are grown from cuttings to compliment the extensive jumble of herbs (mint, rosemary, appletini mint) and vegetable seedlings like tomatoes (12 types!!), eggplants, hot peppers and a wagonload more. Sally, Leslie and much of their same crew returns year after year, many of whom work with Sally during the winter months where she manages the Great American Ski Renting Company. Leslie spends the ski season at the Stevens Memorial medical clinic in Sunday River’s South Ridge Lodge. They enjoy winter but their passion is cultivating the greenery that makes summer gardens beautiful and productive. Check out their photo in the 1991 People Magazine’s most beautiful people issue! Plants and seedlings move steadily out the door and into peoples gardens until about the third week in June, then business slows into July — when the planting season ends. Mountain Greenery closes from the middle of July until the grand reopening on Labor Day — with row upon row of chrysanthemums for fall decorating. Apples, cider and pumpkins round out their late season offerings. But these autumn pleasures are a full summer away and there is much to go and do — savor and enjoy — while we watch spring’s plantings grow into summer’s abundance. About 15 years ago John Amann dropped a culinary boulder into the Bethel area restaurant pond and the ripples are still being felt — pleasurably — to this day. Back then, there was a small edifice next to what is now the Ski Depot that was fondly known as the “Goat Ranch”. A shack really, but an inspiration to John, who had just purchased a Brookside condo and wanted to leave his native New Jersey to settle around here. The rock he heaved took the form of authentic New York style pizza, the thin crust miracle known worldwide as manna served up one delicious slice at a time. John could not bake the magical pies fast enough.
Quickly building on this success, John purchased the Gideon Hastings House, a Greek Revival gem overlooking the Bethel Town Common, and converted it into a B&B. Two years later he dropped his career in Labor Relations and moved to Maine permanently. After years of planning John was finally able to capitalize on his training at Peter Kump’s New York Cooking School, his passion for fine food and the kitchen skills that produce it. While the warm and cozy martini bar and restaurant at 22 Broad Street is clearly a labor of love, it is not John’s only one. In 2006 he burned the little Goat Shack and built the 5,000 square foot Barking Dawg Market on its ashes. Bill Slattery, a native of Hull, MA , earned his degree in Culinary Arts at the Cordon Bleu School in Dover, NH. After working as the Executive Sous Chef at the York Harbor Inn in Ogunquit for the past 12 years he recently made a career and lifestyle shift to the Western Maine
Fresh soups and sauces are some of Bill’s favorite kitchen creations. BL convinced him to share a couple of his signature recipes: Lobster Gnocchi and Creme Brûlée Buon appetito!
Lobster Gnocchi
Almond Créme Brulee
INGREDIENTS: • 4 oz. pancetta, sliced
INGREDIENTS: • 1 qt. heavy cream
• 8 oz. crimini mushrooms, sliced
• 1/2 cup sugar
• 8 oz. shiitake mushrooms, sliced
• 1/4 lb. almonds, rough chopped
• 1 Tbs. shallots, minced
• 1/2 cup Amaretto
• 2 tsp. fresh sage, chopped
• 3/4 cup egg yolks
• 2 tsp. fresh thyme, chopped
• 1 tsp. vanilla
Serves 4

• 6 oz. white wine • 6 oz. shite stock • 1 tsp. white pepper • 1 tsp. salt • 1 lb. lobster meat • 20 ct gnocchi, cooked • 2 oz. butter • 1 tsp. truffle oil DIRECTIONS Sauté pancetta until crisp and reserve. Add olive oil to the same pan and heat. Add mushrooms, shallots and herbs, sauté to cook. Deglaze pan with wine, stock, and season with sale and pepper. Add lobster and cooked gnocchi to pan, cook just to heat. Swirl in butter to blend, and finish with truffle oil.
DIRECTIONS Roast nuts in oven to heat, remove when edges start to brown. Combine almonds, cream and sugar in heavy sauce pan over medium-low heat. Gently heat stirring occasionally for 30 minutes to infuse almond flavor and to dissolve (not boil) sugar. Strain out almonds. Form liaison with flavored cream and egg yolks by adding a small amount of the hot cream to the yokes while stirring. Then add hot egg yolk mixture to cream while stirring. Stir in vanilla. Portion 4 ounces of cream mixture into créme brûlée molds, place on sheet pan and place in oven, pouring enough water into sheet pan to come 1/2 way up the sides of the molds / dishes to create water bath. Bake at 285° for approximately 30 minutes, until set. THESE SHOULD NOT BE BROWNED. Cool and serve.

brings a new chapter of the National Wildlife Turkey Federation to Bethel Spring is a good time of year to be a turkey. The dreaded Thanksgiving Holiday is far off and the elaborate courtship rituals — featuring all that feather puffing, wing dragging and tail flaunting — help to dispel the winter blues. Which brings us, by curious coincidence, to the Bethel Beard Draggers’ first annual spring celebration of the Wild Turkey at the Bethel Inn Conference Center on April 28th. As a recently organized chapter of the National Wildlife Turkey Federation, the Beard Draggers are hosting this fun-filled get-together highlighted by raffles, displays, activities and a dinner to promote the preservation and responsible hunting of this native treasure.

Always looking to expand the sweep of their influence, the NWTF recognized local turkey hunter Autumn Fournier as devotee to their cause when they came across her picture on social media with not one, but two fine birds taken on a single day two years ago. Fred Bird, the NWTF Regional Director, reached out to Autumn and knew immediately that she was a great fit to start their new chapter here in Bethel.

Built in 2006 in a matter of weeks with the help of local friends, their homestead, nestled in the Western Maine mountains, is the perfect departure point for tracking deer, moose, turkey, bear and fisher cats. Autumn, whose future plans include acquiring a Registered Maine Guide’s license, began her life in the woods riding in her father’s backpack at the age of three. Now 21, Autumn has racked up thousands of hours in the woods studying it’s habitats, flora and fauna. Out beneath the pines or alongside a rushing river is where she feels most comfortable, developing survival skills on a never ending search for self-sufficiency. Shelter building, fire starting, fishing and foraging for wild foods embody a way of life that brings her contentment and confidence. Assisted by her brother Gunner Fournier, as well as good friends Ryan Bennett and Parker Salatino, Autumn is working to expand the Bethel
Beard Draggers by reaching out to local people interested in hunting and conservation. Come out and support the NWTF and it’s new Bethel Beard Draggers Chapter at the Bethel Inn on Friday, April 28th from 4:30 to 9pm and learn how to more fully enjoy and support this local sport!

on local events, weather updates and entertainment options to help visitors make the most of their Bethel vacation. This creative team collaborates to come up with their own plans, their own style and they make it sound like a lotta fun! Nora McCormack shoots and edits video, oversees ad sales, handles production on live shows and creates programming ideas all year round, while Eric and Matt use the off season to pursue a long slate of other projects. After she completed her degree at UNE Nora started working in the studio back when it was known as Resort Sports Network. With the growing popularity of Bethel as a wedding destination Nora has branched out into event and wedding videography through her company SP Films. Eric Souther joined up during the RSN era then left to pursue opportunities in Colorado. His return to Sunday River TV brought a new focus to coverage of happenings around the area and interviews with local characters. During the summer he is a river guide for ELC Outdoors in Errol, NH. Matt Stagliano is finishing his second year with the team and brings a varied past from managing nightclubs to spending over a decade in high-tech management at Cisco Systems. Matt is also the CAO (Chief Administrative Officer) of an online magazine called breachbangclear.com.

Skiing with the

One of the joys of being a grandparent is to share things you love with your grandchildren. With the price of equipment and day tickets or passes now for skiing, if you are still skiing in your senior or middle aged years, it is a true passion. Getting your grandchild or grandchildren out on the slopes to enjoy skiing with you is, as the commercial tells us, priceless. Skiing or snowboarding is one of the best ways to enjoy the beauty of the outdoors with little ones who are separated from you by a couple generations. Gaps of fifty to sixty years easily melt away as you are on the top of a picturesque slope

about to traverse down. There is the talk of types of snow, perfect weather, and many other elements of a good ski/ snowboard day to be had. Even this new young generation is overwhelmed with the beauty of the mountains. Many ski areas cater to young skiers with such things as sugar shacks or mountain mascots that enchant even very young skiers. In the ski shops one can find stuffy images of such mascots and books about them for the grandchildren to take home and cherish. After talking with friends who ski with grandchildren, I discovered many things make it fun that would never
have occurred to me. The number one thing that kept coming up in these conversations was the fact that it was almost a technology-
free activity. Yes, cell phones are pulled out on the lifts to check on other open lifts, slopes, or lost ski friends, or they are used for selfies or pictures when stopped at the top or for a break on slope side. But the actual process of skiing or snowboarding does not allow for talking or texting. It is an all-encompassing activity that is simply enjoyed with all the senses. Of course, there are the grands with cell phones or Go Pros out taking videos of the grandchildren’s descent. These precious movies will be shared in person or on social media to the delight of all friends and relatives. The technology gap between grandchildren and baby boomers is something usually so divisive. An activity that dispels that gap is valuable. Brenda Silverman, a grandmother who skis with her grandson, says that their days on the slopes as she skis and he snowboards are the best times they have together. Her grandson leaves his iPad and the video games on it behind. He and his grandmother play old-fashioned, guessing games on the lifts and race and develop games to keep together going down the slopes. Brenda claims it has formed a special bond between them. She hopes to get her two other grandsons out on the mountain with them next season. Another grandmother Carol Bent relishes her time on the mountain with her grandchildren. She skis, but some of her grands snowboard. She talks of fun things similar to what Brenda does, including the technology-free bonus, but she brings up something that is a plus for the older generation, also. Carol says she goes out of her way to keep herself in shape during the off season, so she can go skiing with her grandchildren. They get a chuckle out of having Gram on skis with them, and she has many wonderful pictures to verify this.
Now if your grandchildren are a bit too young to be up on skis or snow boards, there is always the possibility of having this joy with a ski friend who does have a grandchild. This author’s husband has loved sharing stories and videos of the ski escapades he has reveled in with his longtime ski friend Don Duperry and his grandson. Another “grand uncle” Paul Dunbar joins them. They all enjoy the skiing and then the après ski with the little one. There is so much to skiing and boarding that can be enjoyed across the generations. Anyone who knows anything about this activity realizes that shopping for and playing with the equipment involved is half the fun. Is there anything more amusing than looking at tiny ski and boarding paraphernalia? For the slightly older grands, ski maps can be engrossing. This activity still can involve old-fashioned paper maps of the slopes. Highlighting the slopes conquered is an important après ski activity to be done together.
Finally, skiing and boarding are completely nonsexist pursuits. It spans generational gulfs of such things as technology, but also provides something for the grandparent of one sex to do with the grandchild of a different sex. This author and her husband cannot wait to get their new granddaughter out of the slopes. Let’s face it. Skiing and boarding are the perfect family activities.
