In Jenn Crabbe’s previous job, she had everything—a car allowance, business trips, job security, and benefits galore. But when her creative side began overpowering her corporate side, she knew it was time to give up her royal treatment and offer it to others instead.    Last May, Jenn fulfilled that dream by launching Royal Hauteness—a boutique business that incorporates gifting, styling, designing, and event planning. There is something for men, women, and those in the corporate world as well. Imagine this: you just moved. She scours anywhere and everywhere for luxurious items at a fraction of the cost, all while collaborating with you to ensure your expectations are met or exceeded. “We created this company with the idea that we could encompass all of our passions...I love design, I love clothes, and I love a bargain!” Jenn said.    Jenn and husband Jimmy (CFO of RH) each bring a keen sense of fashion and interior design to their business. While Jimmy helped his father decorate the Royal Palace in Belgium, Jenn modeled in NYC. She learned to appreciate Haute Couture, or a “discounted sample sale,” and thus Royal Hauteness was born.    Their decision to leave the corporate world led them to move across the country and settle in the Granite Bay area. Jenn and Jimmy have acclimated quickly—both personally and professionally. Since starting the business, they have built a steady client base from small projects such as closet organization, personal styling, and home décor. Most recently, Royal Hauteness was asked to design a 25,000 sq. foot raw commercial space. Jenn will be in charge of the creative process from start to finish—flooring, paint colors, furnishings, and all while staying within her clients budget. No two jobs are the same and no budget is too small or too large.

September 22. In honor of their beloved Patriarch George Mettler, the community joined together to stomp, and to raise 5,000 dollars for the American Cancer Society. Stomp competitions filled the day with fun and laughter, while Snap Jackson and the Knock on Wood Players, played throughout the day. Fundraising included a silent auction and raffle. Wine was served wine by the glass (of course), accompanied by salami and cheese plates and Velvet Grill ice cream.

The Sacramento-area housing market took off at the start of 2013. But just how real was its recovery? Lavish Living asks our resident real estate guru, Debi Ambroff, to sound off on the past year and offer her predictions for the upcoming one. Here’s what she had to say:   “By the end of January 2013, I felt the New Year was off to a robust start. Inventory was extremely low, but that generated a tremendous amount of multipleoffer situations for sellers. Buyers, on the other hand, were coming out of the woodwork. There were tons of cash offers, and the sellers and realtors were extremely excited-- the market had finally turned. So many sellers had been underwater, and many had even lost their homes or were forced to do short sales during the sluggish days of 2009-2012. This was a year of celebration!

The short sales and the foreclosures were becoming few and far between, and we were off to a great start. This continued through the 2nd quarter and sellers were getting so confident that pricing continued to rise. Then of course, as it is won't do, the market changed on a dime and interest rates began to rise. The economic forecast for jobs became uncertain and the properties just were not moving like they had been, so inventory levels began to grow. Impatient sellers began

asking, “What do I need to do to get my house sold?” The reality is that if your property is not moving, you are either over-priced or undermarketed. In turn, this causes the pricing to stabilize somewhat.    One thing is for certain: there are still people who want to buy and those who want to sell. The inventory levels are definitely higher - the production builders now have inventory, and the custom homebuilders are actually speculating

again. Land and construction loans (a thing of the past during the recession years) have now come into play. "I have personally sold more lots and acreage this year than I have in the past 3-4 years. More buyers are ready to design and build a custom home as well, which is so exciting, and people are ready for something new and refreshing."   All of this is great news and will put many residents back to work in our area. The wealthy are still making money, the stock market is


good, and real estate is still moving in a positive direction. Land and homes have both appreciated this year in most all areas, which in turn gives sellers an opportunity sell, realize equity and become a move-up buyer, or even possibly build a new home.   Locally, if a property is priced well and has exceptional or unique features like a tremendous view, there is still a very strong chance a seller could see multiple offers. There may be some

seasonal slow this last quarter, but that is always expected. People are so involved in celebrating and bringing in the holiday season, and yet Apple Hill, wine tasting, and Christmas tree cutting makes us a great place to visit. There are few symbols that exemplify the spirit of Christmas better than a Christmas Tree. For those who celebrate this holiday, it is a tangible representation of hope, dreams, and faith. And of course, magic. Yet for the many families in the Sacramento area receiving public assistance, the purchase of a Christmas Tree remains financially out of reach. Thankfully, the GiveA-Tree program is changing that. Now in their fourth year of this annual campaign, the Give-a-Tree program is a charity jointly conceived and carried out by California Backyard, Clear Channel KFBK, and The Salvation Army of Sacramento. The concept is simple: donators wishing to contribute bring in their new or used lifelike trees to any of the four Sacramento-area California Backyard locations, the Salvation Army collects, refurbishes, and then takes them to Cal Expo where they are donated to qualifying families.

More than 500 trees were collected from the various California Backyard stores last year, and this year the number is expected to climb even higher.   The originator of the EverFresh Prelit Tree, California Backyard invented their lifelike trees in 1981. Wildly successful, their unique, injection-molded technology creates an exact 3-D replica of an actual needle, not a flat needle like traditional artificial trees. With 12 tree families and 98 choice combinations, California Backyard is clearly the place to purchase a lifelike tree that will last for years to come.   But what happens when a family moves, suddenly faced with filling a vaulted ceiling or a downsized space? Or they want to upgrade their tree? Over the many years of expertise, Buzz Homsy, owner of California Backy ar d , realized there was a better option for used trees than merely taking up

space in our landfills. And so, together with KFBK and The Salvation Army, the Give-A-Tree program was born. “Because of the Give-A-Tree program, we’re able to provide some families with an item that they might not be able to afford in the first place. We’re all about trying to give families a Christmas experience and, without a doubt. Give-ATree gives The Salvation Army another way to do that,” says Major Bill Dickinson of The Salvation Army.    From November 1 to December 15, California Backyard stores will be collecting any complete lifelike Christmas tree donations, regardless of manufacturer. For these donors, California Backyard will offer a discount on a new EverFresh Prelit tree, however the purchase of a new tree is not a requisite for donation. “We’re not looking for a return,” commented Homsy. “We have a passion for this program. We’ve become known for it.” Donated trees will be distributed to families receiving Christmas assistance from the Sacramento County and Roseville Salvation Army units. “It’s just a marvelous thing,” says Homsy. Marvelous, indeed. In fact, for many, it’s downright magical.

Q:

WHY DOES OUR SKIN AGE?

A: What happened to that smooth soft elastic skin we had in our youth? Why do we form wrinkles, enlarged pores, age spots and creases as we age? Unfortunately our skin is genetically programmed to age as our body ages. The exact mechanism is still unknown and we have yet to find “the fountain of youth”. However we do know that, over time, our skin gradually thins as the amount of collagen and elastin in our tissue decreases (possibly in response to decreased hormonal production as we age). Our skins resiliency decreases and wrinkles and lines develop.

Q:

WHAT CONTRIBUTES TO AGING SKIN? A:

Excessive sun is the worst contributor to the aging process of our skin. Ultraviolet light from the sun accelerates the loss of elastin in the skin, making it firm and leathery. Sun exposure, which is cumulative over our lifetime, also contributes towards the development of skin cancers later in life. Tanning booths, (which should be renamed “Aging Booths”) provide the same harmful ultraviolet rays that the sun does and also causes premature aging of the skin. The second greatest contributor to skin aging is smoking. Inhaling the hot smoke from burning tobacco leaves cannot be good for us. The nicotine in the smoke reduces skin circulation and prematurely ages the skin.

WHAT CAN WE DO SLOW AGING SKIN?

A: Use of a good sun block with UVA and

best first approach to healthier skin. A reasonable amount of water intake each day is important for hydration of our body and skin. The use of a good skin moisturizer can also improve the skins appearance.

Q:

HOW CAN WE IMPROVE THE APPEARANCE OF AGING SKIN? A:

There is a plethora of skin care products on the market, many of which promise to restore youth and erase the signs of aging. However, the vast majority fall far short of their claims. Don’t be taken in by promotions, packing, promises, or price. The correction of aging skin usually requires a more aggressive approach than just topical moisturizers and ointments. The process of repairing aged or damaged skin usually begins with an exfoliant to remove dead skin cells on the surface. A weak acid (glycolic acid, acetic acid, or retinoic acid) is frequently the first step, applied topically or as a chemical peel. Stronger chemical peels, derm-abrasion, or resurfacing lasers can be used for more dramatic improvement. As a general rule, ‘the deeper a product or procedure penetrates into the layers of the skin, the more dramatic the improvement, but the longer the recovery’. When damaged beyond repair, surgical resection and tightening of skin is used to restore a youthful appearance. Spas are good for pampering, but when improvement of appearance is desired, a medical setting with trained skin care specialists, medical grade skin care products, and a spectrum of treatment options available, will produce a more optimum result.

SWEET DESSERTS

Dessert; Dictionary.com defines dessert as ‘cake, pie, fruit, pudding, ice cream, etc., served as the final course of a meal.’ The word dessert originated from the French word desservir, which means “to clean the table”. Simply translated: Eat dinner, achieve dessert. We know that desserts can come in variations of flavors, textures, and looks, but the rise in the demand for pastry chefs who have the ability to conjure up desserts and pastries using signature ingredients that offer the restaurant’s same level of sophistication or

experimentation is growing larger and larger. Giving diners fresh-made desserts that are visibly different, we offer up the hot spots for unique, scratch-made pastries and desserts. These edgy creations are fresh, seasonal, and sublime, and may exist just for a few moments, never to be nibbled again. Take a sneak peak at these inventions and plan your meal sections wisely because you won’t want to skip out on these angelic assortments.

ZOCOLO TRES LECHES

Although this classic Mexican confection isn’t the most obvious dessert order at Zocolo, once guests do order it, they keep coming back for it. Tres Leches, or three milks, as it is translated, starts off with a cinnamon hinted pound cake. Making it their own, the folks at Zocolo, use an old fashioned mason jar as the vehicle in which to hold this sweet sensation. The cake is then soaked in three types of milk overnight: evaporated milk, which has had the water cooked out of it, resulting in a thick, rich consistency; sweetened condensed milk, thick like evaporated milk but with sugar added to it, so it is syrupy; and whole milk. After the cake is sodden, it is topped with whipped cream, cinnamon sauce, and seasonal, locally sourced berries (when available) of strawberries and blackberries. The cake looks like a homespun masterpiece. With a texture similar to bread pudding, though not as solid, it is creamy and dreamy shot through with hints of cinnamon and rich vanilla infused throughout. One of the few cakes that can get away without any icing, Zocolo’s Tres Leches cake will satisfy your sweet tooth and have you day dreaming about your next visit. 38

ELLA | PAVLOVA Pavlova is perhaps one of the most elegant of all desserts, named after the Russian ballet dancer Anna Pavlova in the 1920’s after one of her tours to Australia and New Zealand. Ella’s pavlova is indeed as delicate as the dancer she is named for. Starting with beating egg whites to a very stiff consistency and then folding in sugar and cinnamon, the mixture is slow-baked, like meringue, producing a crisp and crunchy outer shell, and a soft, moist marshmallow-like center, unlike meringue which is usually solid throughout. The consistency also makes the pavlova considerably more fragile than meringue. The crust consists of a pumpkin puree on the bottom, and dollops of amaretto cheesecake are piped in while peppitas (brown sugar pumpkin seeds) are scattered atop this delicious, spirited, taste of Fall. Flavorful and sweet with nutty hints of almond accents used, this perfect pavlova is crispy on the outside and light and fluffy on the inside. While pavlova is a mainstay on Ella’s dessert menu, this seasonally flavored pumpkin pavlova is only available during the fall months. For dessert lovers who won’t compromise the last course, this extremely light and airy dessert is a pastry work of art sure to tantalize your taste buds.

ROSINA AL CIOCCOLATO Chocolate lovers will swoon over this decadently rich delight. Effortlessly elegant, this chocolate mousse is undeniably a dessert for all ages. The list of ingredients for this chocolate mousse is pretty straightforward—chocolate, eggs, sugar and heavy cream. Il Fornaio uses a high quality dark chocolate, which is responsible not only for the rich, delicious flavor, but also for the dense stability of the mousse. Also contributing to the texture of the mousse are the eggs, of course, which also provide emulsifying properties to the chocolate mousse. Heavy cream is whipped to increase its volume. Try this trio for an unforgettable treat that you won’t soon forget. The Bistro’s Dessert Sampler is three carefully selected desserts that come together for a sensational symphony of flavors. Start with the Bistro’s classic Crème Brulee, which combines minimalist flavors in a partly chilled yet partly heated dessert. This elegant dessert has a thick pudding base of cream and eggs topped by a delicate layer of caramelized sugar. In French, “creme brulee” means “burnt cream,” which refers to the process by which sprinkled sugar gets heated to a temperature that caramelizes it to a delicious brown and mouthwatering flavor. This bread pudding is a conglomeration of bread- namely sourdough baguettes that The Bistro cubes up- soaked in a liquid of milk, heavy cream, sugar, vanilla bean, eggs, with traditional pumpkin spice and pumpkin puree, then the whole ooey gooey mess is smushed together and squeezed out and cooked like a cake. One spoonful of this warm, fresh-from-the-oven treat and you will abandon all restraint.

When it comes to holiday decorating, most often it’s the exterior of our homes or the Christmas tree to which we devote the majority of our energies, while treating the dining table—probably the most important piece of furniture we own, especially during the holidays—as an afterthought. Well, no more. LL challenged Aimee Wendell, founder of 2Chic Events & Design in Sacramento, to create three holiday tabletop décor looks that command attention.   With 16 years of event planning experience that

With the holiday season upon us, it’s time to start thinking about getting your house properly prepped for the upcoming parties, festivities, and visiting guests. There’s nothing like transforming your home into a wonderland to get you into the proper cheer, but for many, holiday decorating and furniture rearranging only adds to the stress that seems to hover over these particular months. But it doesn’t have to. We consulted with award-winning local interior designer Sherrie Swass on how to update your design for a modern holiday season (and well beyond)— without turning into a downright Grinch in the process.

FIRST FIND BALANCE. Have you

ever walked into a room and felt so comfortable that you did not want to leave? Most likely your surroundings were in total balance and harmony, and that’s something you can’t buy from a store. For some people, arranging a room in such a way is an intuitive skill, for others its learned; whatever the case, the room “feels good” to people. Good design is about the way people live and the places they’ve formed lasting memories with amongst friends and family members. This is especially true during the holidays. Regardless of the season, your home should reflect your lifestyle and the individuals that live in the home. There is no right or wrong

when it comes to design style, but any changes in your home must reflect harmony and balance in order for you to feel connected to your residence. This phenomenon is the feeling of good “Feng Shui Placement”. And if your home feels good, you and your guests will feel good. “Most of us live hectic lives, operating very fast and finding ourselves out of balance; a scattered feeling comes over us. Feng Shui (means wind and water) places value on the notion that carefully arranged living conditions contribute to overall good health, prosperity and success,” says Swass. Sound too good to be true? It’s not. “Cluttered spaces create cluttered minds. Harmony is created when everything is in place. Of course, the philosophy is more complex than simply becoming more organized, but that’s a great start.”

STOP BEING SQUARE.

Think of nature when you look at the interior of your home. Negative energy runs in straight lines, positive energy is created in meandering lines that simulate the free feeling of nature. Upscale grocery stores have adopted this same philosophy to keep customers in the store longer. So how do you get your home to “feel good”? Most likely it needs to be analyzed by a design professional like Swass that understands this concept. “The most important tip

I can offer is to take the “square-ness” out of a room.” Add as much softness to the room as possible by adding curved furnishings to the space. Most of us live in homes that are created from several square-like rooms; the statement ‘I feel boxed-in’ is very realistic. Imagine your home empty and count how many dead corners you can view from your entry. The addition of tall trees or folding screens will help soften corners. It’s important to remember that balanced interiors do not necessarily cost more; they just feel better. “Feng Shui placement is very important in my design business but I’m not sure if mainstream America accepts it that much,” comments Swass. “I just do it sometimes without talking about it. Clients love the results and then I tell them why I changed the placement of their furniture. The technique is placing furnishings in circles or diagonals. You feel engaged in the home as you walk through the front door. I can actually change the energy in a home by simply tweaking a client’s existing furniture. I love to look at new client’s faces when I do this. It’s like magic in their eyes.”

HOLIDAY HOW-TO.

While there is no such thing as “Holiday Feng Shui”, Feng Shui in general is about making decorations and color schemes balance out a room— a philosophy that can be extended or adapted

as the seasons change. During Christmas, the tree serves well as the focal point in the room, while providing that ever-important “roundness” when placed in a corner. Traditional colors of red and green are now being substituted with the color scheme of the existing room. For example, Swass displays sea foam green and copper ornaments on her own tree, which complement her year-round color scheme. She also utilizes small, non-invasive white lights that enhance the natural grape vines, creating texture on the tree. For Hanukkah celebrations, blue and white decorative pieces are an integral part of the holiday, as are the black, red, and green colors of Kwanzaa. Either work well with a neutral palette, which always helps to accent and balance out any seasonal color scheme. Push any existing furniture out of the way, and use a large round table to display a

menorah or hang pairs of chocolate gelt and golden dreidels as ornaments from a stick-style tree. Similarly, a kinara makes a pretty Kwanzaa centerpiece, as does the traditional fruit basket symbolizing a bountiful harvest. Either way, organic elements and well-placed lighting allow the focus to naturally center on those gathered around the table— the most important component of any holiday space. And while the thought of decorating and rearranging your home for a finite amout of time may seem stressful, just remember the changes that you make now can extend throughout the entire year. Ultimately, Swass reminds us that “balanced interiors create peace and harmony in your life, in turn giving you positive energy that enables you to be more focused on your thoughts. Many of us conduct our lives like automatons living on our own islands; we

Swass’ Solution? She placed a large round dining room

table at one end and created a short visible wall by adding a sectional that had a round curved corner that looked great from the front and far sides. This served well as the middle part of the large room and the sectional served as a great viewing area for the TV. The far space had a small fireplace that dictated the furniture placement. Swass accommodated the space by adding a one-arm sectional and

chair that was upholstered in the same color of charcoal. This created a separate space from the sectional, but also served as a grounding point being viewed from the front door. The overarching idea is that the rooms simply flow into one another. The room is designed in all grey neutrals so that accent color could be added with art and decorative pillows. The room is also designed to accommodate seasonal color for the holidays with just a few decorations.

Picking up where we left off in our Custom Home profile series in LL’s previous issue, we now move on to pre-construction and construction. As the summer months wind down and fall is settling in, the team at Smith Development and Construction Company is hard at work. For the contractor, this period, pre-construction and permitting is often the most challenging.

It is these 4-8 weeks that set the stage for construction, and for the Pettey family this is when the show truly begins. In last months article we provided some insight in the process of building a custom home. We offered advice regarding choosing a contractor, a location for your home, the importance of a budget, the design and architecture, as well as the permitting process. For SDCC’s client, the Pettey family, this journey has taken more than one year and as their contractor, SDCC has now submitted for permits to build.

struction begins.   Construction. Finally, the process begins to yield tangible results. “In all the homes our team has built, and in the thousands of projects constructed, there is always something memorable about the first days of construction,” notes Smith. For the homeowners, this is the same. While there are times when you would want to not be on the construction site, this is one when you would like to be there to see your hard work come to fruition. Smith notes that SDCC pays special attention to particular items when construction begins. Grading and drainage of the land is very important, and only rarely will they grade a lot flat as doing so is conducive to ponding water-- not exactly ideal for construction. Surface drainage and underground drainage are also especially crucial, and if planned and executed correctly can make a wet, messy winter much more manageable both during construction and the overall life of the house by helping to prevent potential problems created by excess water.   The general protocol for SDCC’s team includes the homeowners along the way as construction of their house progresses. “In our experience, half of our clients have had interests in being involved during the process, while the other half are more interested in when their move in date is. We can be flexible to accommodate both types of clients, however we do encourage involvement at certain stages.” In particular, SDCC encourages their clients to walk the house at the completion of the framing, but

This article will provide a glimpse in the real world of building a custom house, the construction process, and what you should expect if you’re considering building a custom home of your own.    Pre-Construction. At this point in time, the contractor and their client seem to be lifelong friends; there will have been a great deal of time spent working through the vision, plans, and products of your new home. While you are only half way through this process, the preconstruction phase provides a bit of break for the owner, while the contractor gears up for construction. As a homebuilder, SDCC uses this time to begin working with vendors and subcontractors to create the team it takes to make a home come alive. The coordination services work with the local building department to see this project through the permitting phase, and also to prepare for the start of construction. The bulk of this particular process will be happening behind the scenes and most homeowners have little to no involvement. Owners may want to take this time to relax since the previous months have been filled with the work of making critical decisions regarding your new home. Be prepared for some small changes, warns Dustin Smith, as most building departments will have some comments about the home and may require modifications. Trust your builder to work through these changes and be sure the builder provides you ample time to review any changes the building department may require. As we mentioned in the previous article, a short break during permitting will allow the owner to look at the plans with rested, fresh eyes before con60

prior to the drywall or wall materials being installed. This serves two purposes for the builder and owner. For the builder, it gives them a specific opportunity to review the house at a point in time where the owner can see the “bones” of the house. Changes can still be made without the need to take several steps backwards. For the owner, it provides an opportunity to review the electrical layout, an item oftentimes overlooked. During the planning stages, an architect may place a light switch, outlet or fixture where is seems to be most practical. However when the owner can actually walk into a room and see where particular items will be located, they frequently desire a change of some kind to be made. This solves many problems and headaches for both the build and owner down the line. These days, with our collective reliance on smartphones, iPads, and laptops, we each seem to have a very specific location of where and how we charge these items, and this is the time when a build and owner can locate everything to accommodate the owner’s needs.    As the journey advances, regardless of whether the homeowner is heavily involved or more in the background, the builder faces significant challenges-- weather, materials, and vendors can each pose problems and hindrances. “At SDCC, we have adapted our abilities to not only have proactive management, but to also have the ability to have a reactive team in place. We have learned each project will have its own set of unique problems, and with all of the scheduling, management and experience in

place we cannot foresee and prevent every problem. However we have identified a unique ability to react quickly and accurately to problems that arise. For this reason, and to our success, we have a team of professionals rarely matched in the custom home building community. As part of our ability to react quickly to situations that arise we have developed a field construction team who can self-perform nearly every trade, thus allowing us to be “covered” at all times or when any kind of issue arises. Furthermore having the construction team on staff allows us to be more efficient and competitive for our clients,” states Smith.   While problems do arise, do not focus on them during the process, as a reputable builder will navigate their way through problems and will see the home to a successful end. Owners should enjoy this time, and be sure to stay involved in the process, if so desired. Having a knowledgeable owner is helpful for the builder and can improve the process for everyone. In general, the last two months of construction is when the owner should really start to get excited. During this time the finishing touches will begin to come together and all the hard work pays off. Pay attention to the products being installed; if you see something you are not satisfied with you should notify your builders immediately. Each family member may notice different items in the house-- what is unsatisfactory to one may be acceptable to others, and vice versa. It is the builders responsibility to provide the quality and expectations of 62

their owner, and as the owner you deserve the truly custom home you have paid for.   As the dust settles and construction slowly winds down coming to an end, it seems the owners work will continue on through the move in and thereafter. The move-in time can be seen as the most joyous moment of this process-- that is, when the builder hands over the keys to your new dream home. Any builder will hope all of the anticipation and dreams have been met with the new home, however with any handcrafted piece of work be prepared for some small items to not be perfect. Don’t worry! Any good contractor should be available to support and service our owners, as would any good contractor. As Michael Hegseth of Smith Development and Construction Company says, “A lot of builders can build great homes, however the best builders continue to service their clients after construction is complete”. Indeed, a client’s perception of a builder and a home is often formed after they move in. After all, if you’ve just built your customdesigned dream home, the dream shouldn’t end the morning after you’ve finally spent the night in it.

As many times as we’ve visited Yosemite, we never ventured over Tioga Pass within the park to the Eastern Sierras. Big mistake! When we’ve visited the Western Sierras, usually in late fall or winter, this scenic highway east has been closed to traffic. Other times, when it was open, we just blew it off! Never again! The spectacular vistas we experienced traveling east over Tioga Pass Road enhanced our appreciation for Yosemite when we thought we had already reached the limits of our affection. The views from Olmsted Point and along Tenaya Lake and the Tuolumne River were practically inspirational. Other recommended stops are Tuolumne Meadows and Tuolumne Grove. And more importantly the trip introduced us to the spectacular splendors of the Eastern Sierras, Mammoth recreational area and the regions’ remarkably gorgeous lakes. Even

though forest fires occasionally plague the Sierras the awe inspiring beauty shall always return as Mother Nature invokes her restorative powers. www.yosemitepark.com   Our first stop after crossing Tioga Pass into Eastern Sierra country was the town of Lee Vining, on the western edge of Mono Lake. Lee Vining is home to the remarkably well known Whoa Nellie Deli located in a very upscale gas station. Yes, you read that right. One of the most popular dining spots in the Eastern Sierras is in a GAS STATION! The day we were there, a wedding rehearsal dinner was scheduled that night. These stalagmite-like rock formations resulting from petrified spring water mineral deposits have been forming for hundreds of years, giving the lake an eerie moon like appearance. It’s also one of North America’s premier bird watching destinations. www.monolake.org A few miles north of Mono is Bodie State Historic Park, one of the best ‘preserved in decay’ and non-commercial mining ghost towns in the West. The town includes over 160 buildings, some with original furnishings as if frozen in time. It is now known as California’s official ghost town and was really much more interesting than any ghost town we’d ever visited. Frankly, we were mistakenly not too excited about visiting Lee Vining, Mono or Bodie but did so at someone’s suggestion. We are now wholeheartedly recommending them as ‘should sees’ to friends, family and readers because of their unique tourism features. www.bodie.com   Heading back south, our next stopover was in the beautiful June Lake area. We stayed at the highly regarded Double Eagle Resort and Spa nestled in a stunning wooded setting with awesome mountain views. Their luxury hotel type accommodations are worthy of four star status and are perfect for those seeking a romantic escape. Their cabins, although less luxurious, are much larger, come equipped with full kitchens, fireplaces and are perfect for families or fishermen seeking more practicality. The critically acclaimed spa at Double Eagle has received national kudos and deservedly so. The spa’s ambience, utilizing a plethora of western antiques and accent pieces, is strikingly unique. Dining in their Eagle’s Nest restaurant was exceptional for both breakfast and dinner and their heated indoor pool was a welcome treat. One of the best family features is a fully stocked trout pond on property that is free to guests if you bring your own poles. A catch and release policy is in effect. The kids will LOVE it! Mammoth is probably Southern California residents’ favorite skiing and snowboarding area but is more difficult to reach for northern California snow lovers during winter sports season. Limited or no air service and highway pass closings are the major factors. But late spring, summers and early fall are perfect times for our readers to head to Mammoth. World renowned fishing, incredible hiking, rock climbing and off road mountain bik-

ing await your visit as well as championship golf and horseback riding. When we arrived in early June, there were very few tourists and virtually no traffic. Randall Selland claims he’s just a cardboard cutout that talks—but with four successful restaurants in the greater Sacramento region, we’re calling his bluff. Along with his wife, Nancy Zimmer, and grown children, Josh Nelson and Tamera Baker, the Selland family owns and operates The Kitchen, Ella Dining Room and Bar, and two Selland’s Market Cafes; in Sacramento and El Dorado Hills.

SELLAND'S MARKET CAFÉ   The Farm-to-Fork movement was (fun fact) started by the Sellands’ son, Josh, and has steadily gained momentum in the last few years. Randall is constantly at the farmer’s markets, where he rolls in with vans and loads up for the week. “We’re really lucky. Farm-to-fork isn’t just a local thing; it embraces this whole Sacramento region and celebrates what’s right under our noses. If we can promote this to the world, this whole region builds because of it,” Selland said. On their website, the Selland’s don’t just tell you how they source local ingredients—they show you as well. Each farm and its location are listed, along with the products purchased; that way when you’re eating the roasted vegetables, you know exactly where they came from.   El Dorado Hills has welcomed Selland’s with open arms, which hasn’t gone unnoticed on Randall’s part. Emphasizing over and over again, he expressed how the people are what drove his family here. “We knew they would appreciate what we do, and we knew there were lots of families. That’s what we strive on, because we’re very close at Selland’s ourselves,” he said. If you walk into Market Cafe for the first time, know you can expect a casual environment that’s non-committal. Seat yourself, order at the counter, and bring the kids after soccer practice. More than anything, the Selland’s strive to make their restaurants a reflection of the family; somewhere they would go to eat as well. “You know, people think El Dorado Hills is this fancy, highend place. But I get the sense it’s community-based more than anything else,” Selland said.    “When it comes down to it, we make the menus, cook the food, and eat it. We treat people like we want to be treated because that’s what we expect when we go places. It’s just how we are.”

Their focus is simple: it’s about the food, and it’s about the family. This is how the Selland’s have functioned for the last 20 years, and that’s how they’ll continue functioning in the years to come. “Even when Nancy and I had no money, we liked going to good restaurants. She’s a phenomenal cook,” Selland said.    When they first met, this wasn’t the only thing they had in common. Each shared a deep belief in practicing hospitality and treating others as they wanted to be treated. When The Kitchen opened in 1991, the Sellands committed to making this belief an integral part of the customer’s experience. “The initial idea behind The Kitchen was to have that personal connection with the client. It was two kids and us doing it all: prepping, cooking, greeting people, serving food, washing dishes, and above all, taking care of the customer,” Selland said.   Selland’s Market Cafe opened 10 years later in East Sacramento, and when frequenters 74

learned of a second location opening in El Dorado Hills last year, they were ecstatic. “We try our best to really pay attention, really listen to feedback. When we asked our customers what they thought of us opening in Town Center, they said, ‘Yes! Please come up here,’” Selland said. And now, it’s hard to imagine Selland’s anywhere else. With a menu based largely off Sacramento’s agricultural bounty, dishes range from light pasta salads to veggie pizzas to Nancy’s special pot roast.   Randall’s favorite, the Cavatappi salad, is a cold pasta with tomato, arugula, ricotta salata and buttermilk dressing. Although he confesses of ordering this every single time he eats at the cafe (which is “all the time”), he highly recommends the teriyaki chicken thighs or fresh broccoli salad, and especially the potato salad. The most popular single item for customers is the mushroom chicken, which is roasted with sherry and cream.

Established in 1993, Renwood Winery is positioned in charming Amador County, surrounded by rolling hills and bustling streams of California’s gold country. Specializing in Zinfandel’s, Renwood is one of the most respected wine producers in the Sierra Foothills, as well as the largest. When it comes down to it, four things are the cornerstone of the The Lucas Winery; the people, the place, the winegrowing, the winemaking. Coined as a Pioneer in Lodi, The Lucas Winery is renowned for its well-balanced Zinfandels and Chardonnays, and putting Lodi on the label. The People: Husband and Wife team, David Lucas and Heather Pyle-Lucas are co-owners and cowinemakers. Every year the The Lucas Winery makes a Zinfandel and Chardonnay under their namesake label; and a Rosé, a Zinfandel, and a Chardonnay under the slightly lower-priced C’T’Z’N (pronounced “citizen”) label. The Zinfandel comes from estate vineyards; the Chardonnay is purchased from nearby Lodi vineyards. The heart of the winery’s operation is the 3.5 acre, 80-year old, organically farmed ZinStar vineyard. Originally a tomato farmer, Dave Lucas believes that in a perfect world winemakers would be given two lives- one in which to create wine, and another in which to enjoy it. Heather Pyle Lucas is admittedly a grape farming junkie who can be found strolling the vineyards inspecting the fermentation in the wee hours of the night- a la pajamas. The Place: Having both worked at Robert Mondavi for many years, they each developed an 80

appreciation for the importance of place in determining the quality of a vineyard. The Lodi Appellation has a classic Mediterranean climate featuring warm days and cool evenings, allowing Lodi growers to consistently produce delicious full-flavored wines that contain a refreshing natural acidity. Lucas’ vineyard, ZinStar Vineyard, a 3.5 acre, 80 year old, organically farmed, head pruned vineyard is where balanced, food friendly wines that evolve with time are cultivated. The vineyard is unique, achieving ripe flavors at low sugars, producing low alcohol wines of pleasure and promise. Or, as Dave Lucas likes to say, “Wines that will develop with time in the bottle, for that is where the Genie, the bouquet, lives.” Winegrowing: Great wine starts in the Vineyard, and since Lucas does not blend their wines, they insist quality starts in the vineyard. Because Zinstar is head pruned, it cannot be machine harvested, which allows the fine folks at Lucas to select pure, flawless clusters. The coveted berries are de stemmed immediately, and crushing commences in the vineyard to preserve the fragile properties of ZinStar wines. Winemaking: The Lucas winemaking philosophy is simple: wines should be crafted to reflect the place they are from. “The idea is to taste the vineyard, not oak,” which is why The Lucas Winery

chooses French 100% oak barrels rather than American barrels, which protects the traditional craft of winemaking and result in zinfandels that are not jammy or peppery, but show “a wonderful briary flavor”. With the cold fronts rolling in, you’ll be sure to be craving some seasonal treats in no time at all. If you’re looking to find that perfect dessert to bring to your office Christmas party or just to enjoy by the fire this winter, the warm sugary goodness of caramel is sure to be a big hit with any taste bud or event. Made through a process of melting down various types of sugars, sometimes with butter and other flavoring agents, caramel is a favorite among delicious holiday delights. Its no secret that the holiday season is the time of year we all allow a little confectionary indulgence and seasonal favorites like thick caramel are no exception.

With its warm amber coloring and candy like fragrance, caramel is an ideal addition to your holiday traditions. Caramel, whether purchased or made at home can come in many forms from a thick syrup on pastries and ice cream to a chewy, toffee-like candy bit. It is truly impressive how just a simple cup of sugar can be transformed into such a delectable and enjoyable treat. To satisfy your sweet tooth this holiday season, go ahead, and arm yourself with a solid, lightly colored saucepan and a bag of sugar. Once you are impressed with your end result, be sure to not only share your caramel creation with those you love, but also be sure to sit and savor this culinary pleasure.


SALTINE TOFFEE PREP TIME: 15 minutes

| Total Time: 15 minutes

INGREDIENTS:

1.5 sleeves of saltine crackers, 1 stick (4 oz) butter 1 cup packed brown sugar, 2 cups chocolate chips Recipe courtesy candy.about.com DIRECTIONS

1 In small microwavable bowl, microwave Caramel ingredients on High 40 to 60 seconds or just until it begins to boil. Dip each apple slice into caramel; sprinkle each with 1/2 tablespoon peanuts. Set aside. Cool remaining caramel slightly. 2 Spoon cooled caramel into each of 2 martini glasses. Place glasses in freezer while making martinis. 3 In martini shaker, place schnapps, liqueur and vodka; shake well. Strain into chilled martini glasses. Garnish with caramel-dipped apple slices. PREPARATION:

1. Preheat the oven to 350 degrees. Prepare a baking sheet by lining it with aluminum foil and spraying the foil with nonstick cooking spray. 2. Arrange the crackers in a single layer on the baking sheet so that there are no empty spaces in between them. Crush any remaining crackers into small crumbs and set aside for now. 3. Place the butter and brown sugar in a small saucepan over mediumhigh heat. Stir while the butter melts, and bring the mixture to a rolling boil. Once boiling, carefully pour the sugar-butter mixture over the crackers on the baking sheet in an even layer, trying to cover most of the crackers. If you miss some spots, don’t worry as the toffee will spread in the oven. 4. Bake the toffee crackers at 350 degrees for five minutes, until the toffee is bubbling all over. Carefully remove the pan from the oven and allow to cool for one minute. 5. Sprinkle the chocolate chips on top of the hot toffee, and allow them to sit for one minute to soften and melt. Once softened, use an offset spatula or knife to spread the melted chocolate over the entire surface of the toffee in an even layer. While the chocolate is still sticky, sprinkle the top with the reserved crushed crackers. 6. Refrigerate the pan to set the toffee and chocolate for about 30 minutes. Once set, break into small uneven pieces by hand, and enjoy! Store uneaten saltine toffee in an airtight container for up to a week.

GOLDEN CARAMEL CUPCAKES PREP TIME: 20 min | Inactive Prep Time:1 hr | Cook Time: 12 min Level: Easy | Serves: 24 cupcakes INGREDIENTS

1 (18.25-ounce) box golden butter cake mix (recommended: Duncan Hines) 1 stick unsalted butter, room temperature, 2/3 cup milk, 3 eggs 1/2 (13.4-ounce) can dulce de leche, Gold dragees, for decorating FROSTING:

2 cups heavy cream, cold, 1 1/2 (13.4-ounce) cans dulce de leche Recipe courtesy Sandra Lee, foodnetwork.com DIRECTIONS

Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin tins with gold foil cupcake liners. In a large mixing bowl, combine the cake mix, butter, milk, and eggs. Using a hand mixer beat on medium speed for 2 minutes, scraping down the sides of the bowl to be sure the batter is well incorporated. In a small bowl, mix together the 1/2 can of dulce de leche with 1 cup of cake batter and set aside. Using an icecream scoop, fill the muffin tins halfway to the top with the batter. Spoon a level tablespoon of the dulce de leche mixture into each cupcake liner, and with a butter knife swirl it into the batter. Bake until the tops are golden brown, and a toothpick inserted in the center comes out clean, about 10 to 12 minutes. Remove the cupcakes from the oven and cool in the tins for 5 minutes. Transfer the cupcakes to a cooling rack to cool completely. Frosting: In a cold mixing bowl, beat the cold heavy cream with a hand mixer until just before soft peaks form. Add the dulce de leche and beat until well incorporated and soft peaks form. Frost each cupcake with the caramel frosting, and sprinkle with gold dragees. As we approach the holiday season, you may find yourself savoring the reappearance of seasonal favorites like cinnamon pinecones, pumpkin pie, and get-togethers with your loved ones. While you are shoulders deep in holiday cheer that certainly does not mean that navigating the etiquette of the most wonderful time of year is without it’s pitfalls and social discomfort. When attending this seasons various holiday parties remember a few etiquette guidelines and you will be sure to keep your guests, friends, and coworkers rocking around the Christmas tree no matter what. DRESS TO IMPRESS Your holiday dresses have been waiting for you to dust them off all year, and trust us, we are just as excited as you to dazzle with winter hues. But be sure you know what the appropriate attire is for any occasion before stepping out in a stunning dress at your neighbors Christmas sweater party. Furthermore a little restraint may serve you well when dealing with the more traditional members of your inner-circle. When choosing you’re attire for any event, it is perfectly appropriate to ask your host for an explanation of the dress code just to be sure you’re not noticed for all the wrong reason. LIMIT THE LIQUOR Drinking too much or dealing with the coworker or family member who hit the cider a little to hard can be an unforgiveable a n d embarrassing o f f e n s e . If you’re an ambitious partygoer looking to keep a firm grip on your calories this holiday season, then simply saying you’ll take a bite or politely declining because you’re already so full is a fantastic way to kindly escape offending your hospitable company and ensure a repeat invite next year.
