INGREDIENTS MAKES 6

CARAMEL PEARS 3 small sugar pears 1½ cups granulated sugar ⅓ cup water SPICE CAKES 1½ cups all-purpose ﬂour 1 tsp baking powder ½ tsp cinnamon ¼ tsp each: ground ginger, nutmeg, cardamom ½ cup unsalted butter 1 cup granulated sugar 1 tsp pure vanilla extract 2 large eggs ½ cup 2% milk

DIRECTIONS Preheat the oven to 350°F. Set six 1-cup non-stick ramekins on a baking sheet; place the baking sheet close to the stove. To make the caramel pears, peel and core the pears and cut each one into 8 wedges. Combine the sugar and water in a heavybottomed saucepan over medium heat, stirring until the sugar dissolves. Increase the heat to high and bring to a boil; cook, without stirring, until the mixture turns a rich caramel colour, 6 to 8 minutes. Very carefully divide the hot caramel equally among the ramekins. Quickly arrange three or four pear slices over the caramel in each ramekin; set aside. To make the spice cakes, stir together the ﬂour, baking powder and spices in a small bowl.

In a large bowl, beat the butter and sugar together with an electric hand mixer until wellcombined. Stir in the vanilla and add the eggs one at a time, beating for 1 minute after each addition until light and ﬂuffy. In two or three additions, add the ﬂour mixture to the butter mixture, alternating with the milk, beating well after each addition. Carefully spoon the batter evenly

over the caramel pears in each ramekin. Bake the cakes for about 35 minutes, until the tops are light golden and set. Remove the baking sheet from the oven and, working quickly, run a sharp knife around the edges of each cake to loosen; gently turn each cake out onto a small dessert plate. Serve immediately with crème fraîche or whipped cream on the side.

Display We can all learn a thing or two about styling like a pro. Here, we’ve enlisted the help of Canadian designer Sarah Richardson to share her top tips for creating beautiful vignettes around the house.

1. LEAVE SOME BREATHING ROOM

A bold piece of artwork and a sculptural console are a natural pairing, but don’t clutter the look by adding too many accessories. I like to leave a lot of the surface clear instead of dressing the entire tabletop.

2. MAKE AN EVERYDAY VIGNETTE

You may not use your dining room every day, but your tablescape can still be a work of art. I was given this set of Tom Dixon shallow brass nesting bowls as a gift and I like to leave them scattered down the centre of the table. Here they’re mixed with Eva Zeisel pottery and a couple of vases ﬁlled with blooms, but I often add in a few silver candles for a variety of heights and materials.

3. PUT IT ON A PEDESTAL

Some might think pedestals are just for sculpture, but I put a vintage chrome pair in my dining room to use as stands for my potted orchids. Since the ﬂowers last for a long time, there can be a touch of living colour in my space year-round.

4. KEEP IT FUNCTIONAL

When renovating my kitchen, I designed an open shelf in a bank of full-height cabinetry to house and display my collection of hand-blown glass – having it at eye level brings an artistic focus to the kitchen while keeping my treasured pieces out of the food prep zone (and safe from breakage).

5. ELEVATE THE ORDINARY

I like to make use of special pieces any way I can. In the bathroom, for example, I corral skin-care products with pretty packaging on a shimmery silver tray. Not only does it look neat and tidy, but it also keeps them handy for daily use.

6. STAY LONG AND LEAN

Highlight the horizontal proportions of a wide dresser by hanging a group of artwork above it in one long row. A wide dresser also offers extra display space for the practical (a task lamp) and the pretty (a collection of vases).

An unexpected element in a bathroom, drapery lends form and function. “It adds warmth and draws the eye upward, making the ceiling appear higher,” says designer Ingrid Oomen. “And having a space behind the free-standing tub means the drapery is out of the way of any overtly wet areas.”

His-and-hers sinks are a dream for any couple’s morning routine.

he impetus for this undeniably elegant master bathroom, reminiscent of a luxurious European hotel suite, was more humble than you might think. “I just wanted a bathtub,” says homeowner Dayna Arron. When Dayna and her husband, Jonathan Behar, moved into their Toronto home nine years ago, they focused on redesigning the main living areas to suit the needs of their young family. When it finally came time to redo one of the couple’s spaces, Dayna pulled out all the stops, starting with hiring designers Ingrid Oomen and Vanessa Kwan of Qummunicate. The first thing Ingrid and Vanessa did was rejig the floor plan. “The bedroom had a small ensuite and a large walk-in closet that had more space than the couple needed,” says Ingrid. So the bathroom became the closet, and the walk-in became the 11-by-11-foot setting for a dream bath – a smart, splurge-worthy switch. “Moving the plumbing and adding the window were expensive endeavours,” Dayna admits, “but the room needed natural light.” That light now bathes a classically inspired space enlivened by judiciously chosen contemporary elements. “I’m drawn to the juxtaposition of old and new,” says Ingrid. “While the floor tiles and the wall panelling are traditional, the pendant light and sculptural bathtub are sharply modern.” It’s a mix Dayna also loves. “The classic features are balanced with a slight edginess that gives the room energy,” she says. “In fact, the contemporary pendant light in front of the window is almost as compelling as the tub. Almost.”

LEFT “Since this is a shared ensuite, I used a dark grey vanity to introduce a masculine element,” says Ingrid. “It ties in with the checkerboard floor tiles.” She balances this effect with a feminine finishing touch of sparkly crystal knobs. Chrome sconces are positioned at eye level – never higher, says Ingrid – for soft, flattering light.

Ingrid likes to incorporate a water closet in a shared bathroom. “This one has a subtle pocket door for privacy, and the separate enclosure keeps the toilet out of sight.” LEFT The table beside the tub incorporates one of homeowner Dayna Arron’s favourite materials. “She’s a fan of brass, and we both like how it adds a touch of warmth to the ensuite,” says Ingrid. “I repeated the metal in the drapery hardware. DECORATING THERE ARE TOO MANY COOKS IN THIS KITCHEN. Two to be exact: exhibit designer Neil Asselin and his partner, John, who recently developed a knack for baking. Snoop inside the pair’s packed-to-the-hilt knife drawer, and you’ll know they mean business. “Everything we make tends to be a big deal, from salad to coffee to cocktails,” says Neil with a laugh. It’s no surprise that it took the couple ﬁve years to ﬁnd a house with a kitchen that showed potential. The winner: a 1,600-square-foot Cape Codstyle home located in Aurora, Ont. They renovated the entire 1940s abode

over six months, paying special attention to the kitchen, “which was designed with function in mind,” says Neil. Out went the original, with its antiqued yellow cabinets that had fussy panelling and an overall clunky appearance. “Everything felt dark and over-decorated,” says Neil, who gravitates toward a clean and architectural aesthetic. Neil’s serene design is grey and white, and uses cabinetry that boasts hidden storage. “The new kitchen feels fresh and modern but respects the era of the house,” he says, referring to vintage-look touches, such as the enamel schoolhouse-style light fixtures, polished nickel cabinetry hardware and butcher block-topped island. “We call it a kitchen work table. Its design is based on something you might see in an Edwardian manor or country home like the one on Downton Abbey.” Neil ramped up on the professional appliances, added a peg rack and made sure to accommodate ample counter space for food prep. He also eschewed upper cabinets for an unobstructed, airy feel. Bigger structural changes that dramatically altered the kitchen included adding a mud room, as well as flattening a cathedral ceiling that was originally beyond the peninsula in order to build a balcony on the second floor. “It sounds counterintuitive, but by lowering the ceiling to match the rest of the kitchen, the room feels larger and more open,” says Neil. He also replaced a window with full-height industrial-look French doors. Doing so allows the couple to indulge in what they do best – cook, wine and dine – indoors and out. “The floor plan is better because we now have direct access to the barbecue and garden from the kitchen,” says Neil. And, hopefully, there are no squabbles over who gets to man the grill!

BALANCE THE COLOURS Have a palette in mind. Pick a piece with a strong signature colour and then ﬁnd others that feature the same hue to a subtler extent. Balance out light and dark – if you’re drawn to softer pieces, for example, include something bolder to anchor the look.

rom the coffered ceiling to the kitchen sink, Jamie Alexander’s bold condo is awash in black – now that’s chutzpah. The interior designer, who also habitually dons Johnny Cash’s preferred hue, has good reason to embrace the dark side. “Black, like white, works with everything,” says Jamie, half of Peloso Alexander Interiors, which he runs alongside Glen Peloso. The designers had previously beautified 10 of the units in Jamie’s eight-storey building in the city’s historic St. Lawrence Market neighbourhood, and Jamie was finally ready to finesse his own. Even before the transformation of the space he shares with his husband, stylist and hair stylist Joshua Breau, was underway, Jamie’s friends were making predictions: “You’re going to do a black condo, aren’t you?” Indeed, he did. The inky envelope is a sultry backdrop for the dynamic elements, from the eye-catching wall treatments to the striking gold accents, that elevate the 525-square-foot abode. The renovation took a year because “we wanted to perfectly tailor it to our tastes,” says Jamie, who opted for slender appliances throughout the kitchen. “When you’re only two people in a small space across from St. Lawrence Market – a.k.a. foodie central – who needs a huge fridge?”

DECORATING In the bathroom, Jamie nixed the idea of including a soaker tub for similar spacing reasons: “We’re not the bath types,” he says, noting that the room serves as a genteel homage to “the throwback New York City loo.” Though small, it packs a punch, at once classic (thanks to the pedestal sink, Shaker-style cabinetry and subway tile wall) and charismatic (check out the cloud wallpaper, striking geometric ﬂoor tile and prominent shower hardware). Sure, the bathroom’s a stunner, but when you ask Jamie to name his favourite room in the condo, it’s the bedroom. “I was ﬂipping through a catalogue and I saw this oversized palm leaf-printed fabric,” says Jamie. “I just had to have it for my duvet cover. Joshua thought I was a lunatic.” After all, the designer had already chosen faux leatherquilted indigo wallpaper, gold drapery and an indigo ceiling – the symphony of colours could have clashed or overwhelmed the space. Instead, the union of hues results in a warm and luxurious cocoon. “Green and blue is a magnetic combination,” says Jamie. Might this mark a departure from his devotion to black? With this audacious designer, anything’s possible.

ABOVE Minutiae matters when you’re creating a little oasis, as Jamie knows from decorating the luxurious loo. “A beautiful feature is the porcelain baseboards,” he says. Though the rim on the shapely pedestal sink offers no storage, the sleek custom linen closet offers plenty. mack dab in the middle of downtown Ottawa is a robustly personalized condo that could easily act as the three-dimensional design portfolio of its owner, interior decorator Maureen Coates. With inky blue walls, bold accents and a mix of warm furnishings both country and contemporary, it’s simply riveting. Which makes it all the harder to believe that this thoughtfully composed 1,400-square-foot space began as an all-white new build. “My husband, Michael [a former PR executive], and I were downsizing from our home in the city’s Glebe neighbourhood,” says Maureen. Official empty nesters (they have three grown daughters), the couple was drawn to this condo development. “It’s on a heritage site with unobstructed views of the Ottawa River and Parliament Hill,” she says. They purchased the suite in 2011, and it was move-in ready by 2015, but not without some pre-build design intervention. “The size and the view were perfect,” says Maureen, “but looking at the plans I soon realized they needed some alteration.” Her decorator instincts prompted changes that included removing an entrance wall to make way for a small library and adding a living room fireplace framed in cherry to match the kitchen cabinets. Fortunately, the alterations went according to plan, but when they moved in, something still wasn’t right. “After six months in the condo, I was ready to change the white walls,” says Maureen. “I’ve never veered from using colour. It’s been a mainstay in all our homes for the past 36 years.” Inspired by the suite’s natural light, Maureen decided to go dark. “I knew navy blue would be a fantastic backdrop on the walls and some areas of the ceiling. My husband was, shall we say, less than enthusiastic about it.” Thankfully, he came around once the walls were painted. More than a mere backdrop, the hue effectively highlights Maureen’s mix of stunning furnishings. “I love contemporary, but I always incorporate a few well-loved antiques,” she says. To perfect the mix, Maureen custom-designed many of the living room pieces. “Those elements, as well as the lighting and the window treatments, were big splurges, but I justified the cost by measuring their longevity in the space. They are quality items that are here to stay.” The couple has only lived in the space for just over two years, yet it already seems like a storied family home rather than a city condo, thanks to Maureen’s adventurous design. “I didn’t just shop at one furniture store – I never would!” she says. “And though I’m not keen on overusing the word ‘curate’ when it comes to design, I really studied the space and spent hours and hours sourcing pieces. If I couldn’t find what I was looking for, I put pencil to paper and designed it myself.” A three-dimensional portfolio indeed.

“This wall was screaming for something large,” says Maureen. “I wouldn’t put the sofa here, facing the view, because then we’d have no place for the TV, which is an integral part of our evenings.” The stunning solution was this electric ﬁreplace with a three-panel cherry surround. “The wooden chandelier in the living room was one of the first light fixtures my sister [designer Tanya Krpan] showed me, and I couldn’t let it go,” says homeowner Melina Maierle. “It was a definite splurge, but I love the sheer volume of it.” Tempering the big spend is the high-backed loveseat, which was bought on sale. “It really rounds out the room,” says Melina. The furniture’s neutral tones are lifted by the subtle colours in the rug. omeowner Melina Maierle was in the first trimester of a very queasy pregnancy. Her sister, designer Tanya Krpan, had just had a baby. Together, they took on a huge project: designing the 4,700-square-foot home in Port Moody, B.C., that Melina and her husband, Mike, were building. “We were designing with a baby on the hip and a baby on the way,” says Tanya. “It was rushed!” But Melina wouldn’t have had it any other way. “We’re as close as two people can be,” she says. “I can honestly say that my sister – well, her design sense – was on my ‘must-haves’ list.” And that list was lengthy. Having just returned from a five-year work stint in the Bahamas with their son Mason (now 5) in tow and son Jude (now 2) on the way, the couple desired a forever home that reflected their family: young and modern but also warm, livable and kid- (and baby-) friendly (the couple has since welcomed a third child).

The dining room delivers an interesting high-low mix. Authentic Eames chairs and sculptural brass pendant lights share the space with cheap and cheerful window treatments. “Initially we planned on hanging drapery,” says Tanya, “but it proved to be too expensive, so we opted for blinds instead.” A sheepskin throw layers softness and texture into the area, as does the ﬁddle-leaf ﬁg tree. With that in mind, Tanya slightly tweaked the floor plan. “The kitchen is big so I wanted to make it feel cozier,” says the designer. “There were plans for an exposed pantry area with a sink, but I turned it into a little nook to make it more hidden. And there’s plenty of space there for baby bottles and storage.” That’s perfect for Melina, for whom organization is paramount. “My sister likes compartmentalizing,” says Tanya, “so functionality played a big part in the design.” The remaining items on Melina’s list, other than a showstopping powder room (not shown), focused on furnishings, specifically wow-factor light fixtures and a sofa big enough for the whole family to curl up on. “The floor plan is open so all the pieces had to be interesting from every angle,” says Tanya. “We wanted a bit of colour and lots of drama. I like mixing materials, and warm and cool tones, for a striking effect that’s never static.” This dynamic tension of warm and cool deftly punctuates the abode, from the kitchen’s backsplashes and island base to the dining table and pendant lights hanging above it, but

RIGHT Drama was the buzzword for the kitchen, and Tanya achieved it with a mix of materials and tile applications. “We contrasted the bold marble backsplash with the pantry’s light tiles, which were applied in a herringbone pattern,” she says. “You can see this wall from the island and dining area so I wanted it to be more than just drywall.” To accommodate the expense of the marble, the sisters nixed the original plan of using high-end European appliances and opted for mid-range models instead. The pairing of white-painted and unadorned oak cabinetry speaks to Tanya’s penchant for eclecticism, right down to the hardware. “The black pulls complement the grey marble and the brass ones link nicely to the dining room lights. it’s perhaps most evident in the living room. “The facade of the fireplace contrasts oak with heavily veined grey and white Calacatta marble for a truly spectacular effect,” says Tanya. But it’s not all eye candy. With Melina’s love of organizing in mind, Tanya flanked the jaw-dropping fireplace with practical white storage banks that seem to disappear into the wall and keep the hearth as the focal point. This showpiece of form and function encapsulates Tanya’s approach to designing this house: It’s super practical and family-friendly yet so utterly gorgeous anyone would want to live in it in a heartbeat. It’s an effect not lost on her sister. “When everything was done,” Melina says, “I was like, ‘Oh wow, Tanya, you know me so well. I always knew you were good at your job.’”

EVERYTHING GOES Sometimes decorating with no plan in mind turns out to be the best plan of all.

assion, not planning, is what makes a space special,” says Jamie Metrick (pictured opposite). As the general manager of his family’s home furnishings business, Elte, he should know. Since childhood, Jamie has been surrounded by some of Canada’s most elegantly designed pieces. “If I see a chair or a lamp I adore, I bring it home,” he says. “I don’t worry about scale or colour or style. There’s always a way to make the objects I love work together.” Jamie is clearly onto something. The loft-style condo he lived in for five years, which is now home to his brother, Andrew, is the epitome of industrial comfort. Situated in the upper Annex area of Toronto, the twobedroom unit is casual and moody, something Jamie attributes to his many rugs. “I am obsessed,” he admits. He has such a love for his collection that he even chose to hang rugs on his walls – to him, they’re works of art. “Making a home is about gathering beauty – however you do that. I work from the heart,” he says. In Jamie’s case, his rug collection is what accounts for the texture and sophistication in the space. “I am fascinated by the endless variation in their dyes, motifs and textures. But I chose them because I adore them, not because they fulfill a design category.” Jamie definitely isn’t one to get caught up in the typical rules of design. “I think the subconscious mind notices quirky differences and still manages to cluster objects that make sense together,” he says. So, even though a handmade foosball table from Vietnam and a custom bar

cart crafted in India don’t appear to have anything in common, they can pair beautifully in the right context. “If I’d chosen only pieces that match, one of those two things would have been eliminated,” says Jamie. The 1,300-square-foot condo has a 15-foot-high ceiling with ﬂoor-to-ceiling windows, and life here has always been about casual entertaining and family gatherings. “I don’t cook, so I didn’t invest energy or money in an elaborate kitchen. Instead, I put in a crowd-friendly bar,” says Jamie. “My typical weekend is spent having friends over for small bites and drinks before we head out to a restaurant.” And not just any restaurant. Jamie likes places with a distinct aesthetic: “To me, a restaurant’s decor is as important as the food. I go to restaurants the way people go to the theatre or a sports event. I want the excitement and the spectacle, not just the food. I love to sit at the bar, order a meal and watch the evening unfold.” In many respects, his condo echoes this sensibility. While many of the objects are dramatic, the overall feeling is welcoming and laid-back. Jamie attributes this to layering. Woods, metals, leathers and textiles appear in freestyle combinations – something that makes the rooms look collected, not contrived. “I give the objects I’m most passionate about centre stage,” he says, referring again to the rugs he’s displayed prominently on the walls of his living room, bedroom and guest room. “But if I was a surfer, for example, there’d be surfboards hanging on my walls.”

Huge windows and a high ceiling with exposed ductwork give the condo a spacious gallery vibe. To create an intimate yet dynamic seating area in the open space, traditional pieces – such as the tufted leather sofa – were arranged with more modern elements, like cowhide-covered sidechairs. RIGHT Homeowner Jamie Metrick loves restaurants – for both the food and the interiors. “Some people go to the theatre. I frequent restaurants,” he says. We’re gearing up for big family dos, lots of guests and enormous meals, and the amount of food to prepare (and eat!) can be daunting. A giant turkey or roast beef takes centre stage at most Thanksgiving feasts, but if you’re looking for something a little bit lighter, you’ve found it. We’ve rounded up these meatless recipes from Vegetarian Any Day by Carolyn Hemming and Patricia Green as hearty options for sides and mains.

PEPPER-CRUSTED MUSHROOM STEAKS

Preheat the oven to 350°F. Line an 8" square baking dish or a 9" x 13" baking dish with parchment paper. Cut around the stem of each pepper and discard the seeds and stem. Place the peppers upright in the baking dish (trim the bottoms slightly to help them stand, if necessary) and set aside. Heat the oil in a medium saucepan over medium-low heat. Add the rosemary, garlic, red pepper ﬂakes and 1 bay leaf, stirring for about 30 seconds. Add the broth and millet. Bring to a boil, reduce the heat to a simmer and cover. Cook for 15 minutes; stir in the chickpeas and ¼ cup of the Parmesan; discard the bay leaf. Spoon the mixture into each of the peppers, ﬁlling any gaps or air pockets. Sprinkle each with 1 tablespoon of the remaining Parmesan, tuck one bay leaf into each pepper and return to the baking dish. Bake, uncovered, for 25 to 30 minutes, or until the peppers are tender and the cheese is golden. Remove from the oven and let cool for 3 to 5 minutes before serving.

Crust 4½ cups cauliflower florets ½ cup grated Pecorino-Romano cheese 2 large eggs, beaten Topping 1 cup sliced white or yellow onion 1 tbsp grapeseed oil or butter 2 cups sliced mushrooms (cremini, portobello or any other mushrooms of your choice) 1 tbsp unsalted butter 1 tbsp rice flour, cornstarch or tapioca starch ½ cup 1% milk 2 tbsp grated Parmesan ½ tsp minced garlic Pinch sea salt Pinch freshly ground black pepper ¼ cup sliced brie cheese 1 tbsp pure maple syrup Preheat the oven to 450°F. Line a 12" pizza dish or pan with parchment paper and set aside. To make the crust, place the cauliflower in a food processor and process until very fine. Add the Pecorino-Romano cheese and the eggs and continue to blend until well-combined. Place the mixture onto the pizza dish and use your hands to spread and press it out evenly; set aside. To prepare the topping, combine the onion and oil in a large saucepan and cook over medium heat until the onion begins to soften and

become translucent, 4 to 5 minutes. Add the mushrooms and continue to cook until softened, about 3 to 4 minutes; set aside. In a medium saucepan, melt the butter over medium heat and stir in the ﬂour. Whisk in the milk, stirring constantly, until the mixture is smooth. Add the Parmesan and garlic and stir until thickened. Season with salt and pepper. Spread the sauce over the pizza crust. Add the onion and mushroom mixture and brie. Bake for 25 to 30 minutes, or until the edges of the crust are golden. Remove from the oven and drizzle with the maple syrup. Slice and serve immediately.

NOTE: Za’atar is a Middle Eastern blend of fragrant spices most often containing sumac, thyme, marjoram, roasted sesame seeds and oregano, and sometimes salt. If the blend you purchase doesn’t contain salt, you can add it in this recipe. You can also make za’atar with ½ cup ground sumac, 1 tbsp each of dried thyme, dried marjoram and dried oregano, 2 tsp roasted sesame seeds and ½ tsp kosher salt.

Place the oil, soy sauce, vinegar, shallots, garlic, basil, parsley, pepper and paprika in a blender. Blend until the mixture is fully combined and the shallots are puréed. Place the mushrooms in a resealable plastic bag. Pour the marinade over the mushrooms until they’re completely covered. Seal the bag and refrigerate for 1 hour or up to overnight. Preheat a barbecue or grill pan to 400°F. Remove the mushrooms from the marinade and place them on the hot grill, cap side down. Discard the remaining marinade. Cook for 8 minutes on each side or until the mushrooms are golden and the juices are releasing. Remove the mushrooms from the grill and let stand for 3 minutes before serving.
