I’m a person who’s not afraid of colour. Cautious and judicious, yes, but not fearful. In fact, I’m firmly in the camp that believes that colour makes a room come alive. If you veer toward the other end of the spectrum and are eager to update your space with a bold injection of a juicy hue, rest assured, decorating success is achieved more easily than you’d expect: All it takes is one item to use as your jumpingoff point, and you’ll find the other elements fall into place. Whether it’s a beloved vibrant print turned into a toss cushion, a statement sofa or a not-so-neutral paint shade, even a kiss of colour can lift a room and your spirits. This issue is jam-packed with all the inspiration you need for colourful decorating. We’ve compiled the latest bright and beautiful products, including a sunny yellow armchair (page 20); took inspiration from nature in Tofino, B.C. (page 28); gave some attention to the oft-overlooked laundry room (page 54); and asked top Canadian designers to reveal their go-to paint shades (page 62). When I first read the March 2018 issue, my mouth watered just looking at the photo of the apple fritters in your Dessert of the Month column (page 22). INGREDIENTS MAKES ONE 8" CAKE

2 cups slivered almonds ½ cup granulated sugar ½ cup icing sugar + 2 tbsp for dusting (optional) ½ cup all-purpose flour ½ tsp baking soda Pinch salt 2 large eggs, lightly whisked ½ cup unsalted butter, melted 1 tsp pure vanilla extract ½ tsp pure almond extract 4 fresh figs

Preheat the oven to 350°F. Line an 8" springform pan with a circle of parchment paper and generously butter and flour the sides of the pan. Set aside. Spread almonds on a small baking sheet and toast in the oven until they turn a light golden colour, about 8 minutes. Reserve ¼ cup of the toasted almonds and set aside. Grind the remaining 1¾ cups of the almonds in a food processer until finely ground. In a large bowl, combine the ground almonds, granulated and icing sugars, flour, baking soda and salt. Add the eggs, butter and vanilla and almond extracts. Mix until smooth. The batter will be quite thick. Scrape the mixture into the prepared pan. Cut each fig into 5 thin slices and lay them along the edge of the pan, pushing 1 edge of each slice slightly into the batter. Sprinkle the remaining toasted almonds evenly over the top of the batter. Bake for 35 to 40 minutes or until a toothpick inserted in the centre comes out clean. Let the cake cool in the pan. Once cooled, run a knife around the edge of the cake and release the springform. Dust the top of the cake with icing sugar, if desired; serve.

You’re here! Breathe in that spicy-sweet air, take in the sylvan surroundings and feel your tension subside. Check into Tofino Resort + Marina (5), the central hot spot newly opened by former Vancouver Canucks Willie Mitchell and Dan Hamhuis. A fiveminute walk from town – with an on-site Adventure Centre hosting the area’s top experiences, as well as locally loved restaurants – this is the perfect place for active sorts who want to maximize every Tofitian moment. Settle in and call

TOF Cycles Co. to have a pair of fresh-hued wheels delivered. With its wide bike path and lone local taxi driver (no joke), this tiny town – population 1,932 – is best navigated by two-wheeled cruiser. Hungry? Bike a mere three kilometres to Tacofino (4), the original food truck location of the über-popular B.C. restaurant chain, and then indulge in gelato from Chocolate Tofino for dessert. Head to one of the nearby beaches to take in the action – with all the SUPers (stand-up paddleboarders), kayakers, joggers and dog walkers,

it’s a beautiful bustle. Return to the resort for dinner at 1909 Kitchen (8), where chef Paul Moran (a protege of award-winning chef David Hawksworth) whips up delectable shareables with a focus on fresh local fare. Insider tip: If you go fishing, you can bring the day’s catch to the chef, who’ll transform it into a delicious dish for you.

DAY 2 Get an early start to the day and walk 10 minutes west along the main drag, Campbell Street, to Rhino Coffee House (9). Fuel up

with one of the best breakfast wraps ever – better yet, convince a travel companion to split one so you have room for a fresh doughnut, too. Head back to home base and embark on a hot springs boat excursion. Pack your bather, wear layers and keep your camera handy for whale sightings. An hour and a half later, you’ll dock at the remote Maquinna Marine Provincial Park and Protected Area, which can otherwise only be accessed by a 20-minute seaplane ride. Stroll the boardwalk one-and-a-half kilometres through the

The first rule of the Jungalow? There are no rules. Put together whatever colours, patterns and textures feel right. To decorator, product designer, author, Instagram-envy provider and bon vivant blogger Justina Blakeney, that means bold prints, layered textures, saturated hues and plants on plants on plants: wild, whimsical, tropical and lawless, just like the jungle. “Style is about harnessing your inner free spirit,” says Justina. “For me, that manifests itself in an abundance of colour and pattern, and the free flow of energy between indoors and out.” But she’s quick to add that design is personal. “If you set boundaries, you don’t let yourself grow. I might say, ‘I would never pair a tartan with a suzani.’ But then, maybe I would. You never know.” Because, to Justina, design isn’t formulaic. It’s trusting your gut, finding your vibe and establishing your Eden.

HOME GAME Ask her about the rooms in her house, and Justina won’t play favourites: “Right now, I’m in my bedroom. It’s morning, the French doors are open, and there’s a beautiful light flooding in alongside fresh air and the sounds of birds chirping,” she says. “So I love it best at this moment.” But most evenings, Justina’s all about her dining room. “It has this gorgeous golddetailed wallpaper that shimmers in the candlelight while I hang out with my husband and daughter and download what happened during the day…. And have you seen my bathroom?” (The saturated bold blue space is nothing short of stunning.) It’s a lesson in loving – and using – your whole home, in finding meaning in each room. “For me, it’s not about what’s my favourite, but when it’s my favourite.”

SPIRIT SLEUTH A big believer that style is rooted in spirit, Justina asks design clients for more than just Pinterest boards. (“Not to clown Pinterest,” she says. “I do love it.”) Instead, she asks them questions like: “What palette represents the happiest experience of your life?” “Where does your spirit animal spend the most time?” “What’s the most soothing sound to sleep to?” It helps her tap into a person’s essence. “Often, people who aren’t immersed in the design world don’t easily articulate why they like a room, and that can make things very confusing,” says the designer, who wants to know what lights someone up. “That conjures more ideas for me.”

DEEP ROOTS Justina can’t tell you any one thing that influenced her unique aesthetic…instead, she’ll give you several: DISCO DECADE “I was born in 1979, and I think people are always nostalgic for the period right before their birth, so that could be why I favour these long trailing plants, fun folksy art, patterned textiles and natural materials like rattan, wood and sheepskin.” HIPPIE HOMESTEAD “Berkeley, Calif., where I was raised, has a very hippie vibe that’s definitely visible in my own personal style.” PATTERN PLAYER “I was an eccentric kid who loved watching people’s reactions when I wore crazy items. I loved to watch the way my clashing patterns or a funny hat brought a smile to their faces.” TRAVEL TALES “As a child, I travelled to jungles in places like Mexico and Indonesia. Indonesia was particularly special because I visited this batik factory where I learned all about wax-resist dyeing and other techniques for putting pattern onto fabric. I was 10, and I’ve been passionate about textiles ever since.”

FULL CIRCLE Though Justina worked in graphic design and as a stylist before becoming a designer and blogger, she’s now set her sights almost entirely on product design. “It’s my jam,” she says. “It marries so many of my interests and talents. I’m using the graphic art that I spent a long time studying in my 20s and then the interior design work I focused on in my early 30s.”

In fifth grade, the budding style savant took a sewing class in the back of a shop, where she fashioned drapes for her bedroom out of mirror-ball fabric – Justina’s mom gave her the freedom to design her own space as she saw fit. “I also had life-sized posters of Lenny Kravitz, Prince and Luke Perry from Beverly Hills, 90210,” she says with a laugh. “My mom didn’t visibly side-eye me, but I can only imagine what she was thinking.” Justina’s five-year-old daughter, Ida, has the same freedom. “If she wants to hang something up on the wall, she does. Her room [pictured below] is a total disaster, but I love it because it’s a manifestation of her having fun and being creative, and that’s what a kid’s bedroom should be about.”

“I love product design. Instead of telling people where an item should go, I get to see how people use my pieces in their own creative way. I get to be a part of millions of people’s homes.” 34 |

A

s far as first impressions go, this living room defi nitely made one – but for the wrong reasons. “A big dark fireplace, red accents and lots of wood made it lack light and life,” says Amanda Nycz, one half of Kate + Amanda Design, a team whose credo is that style should be rooted in comfort. “It’s hard to feel calm in red and charcoal,” she adds, referring to the space that also suffered from a mixed bag of disjointed furniture. The 30-year-old house in Toronto’s west end was in excellent condition, so a straightforward refresh was all that was needed. And the living room was already open to the kitchen, affording a spacious and airy feel. Turning it into a bright, inviting space the

The original sofa was too small for one of the homeowners. “The back is higher, and it’s deeper overall,” says designer Kate Krasic of the plush new one, which is piled with toss cushions for mega coziness. family of four who lives here could enjoy would simply require a few strategic style tweaks. Amanda and Kate Krasic (the other half of the duo) devised a concept centred on a white palette to make the living room cohere with the kitchen. “Going monochromatic makes a space more inviting,” says Amanda. Adds Kate, “We also incorporated wood and leather to lend a masculine feel, so it wouldn’t be too pretty.” Next, the pair removed every stick of furniture in order to start fresh. Out went two bulky armchairs

that blocked the entrance to the living room; the sofa also got its walking papers (one of the homeowners found it uncomfortable). But the stylish striped drapery and the brick fireplace, now coated with copious amounts of white paint, stayed. The designers also relocated a rug from another room – a bonus cost-saving measure for anyone on a budget. The reimagined living room is the polar opposite of its predecessor: chic and cohesive, bright and welcoming. It all goes to elegantly show the power of good decorating.

Inspired by a TV icon, a devoted mom transforms her dreary basement into a dreamy living space for her daughter.

OPPOSITE Splashes of navy and pink amp up this Toronto basement suite’s light blue and white colour scheme. “This palette is welcoming and doesn’t make you feel like you’re below ground,” says designer Margie Doyle White, who created this space for her daughter Lexie. “It’s also beautiful without being overly feminine.” Margie found the living area’s bergère chairs at an antiques store and had them reupholstered in blue and pink. “Matching them would’ve looked too formal,” she says. LEFT The bookcases boast a custom look that belies their budget-friendly pedigree. “I blew the budget on the millwork upstairs, so I fudged it down here,” confesses Margie. “These are bigbox bookshelves I framed out with moulding for a built-in effect.” The shelves display mementoes from Lexie’s childhood, as well as the voracious reader’s large collection of books.

D

esigner Margie Doyle White used to love The Mary Tyler Moore Show. She admired the star’s independence, her friends, her great job and, of course, her lovely little apartment. So when Margie created a grown-up space for her almost-adult daughter Lexie, it seemed natural to take cues from the home of her vintage role model. “I wanted it to be like Mary’s place but without all the ’70s touches,” says Margie. “Lexie was 17 at the time, and I envisioned a place of her own, where she and her girlfriends would love hanging out.” The designer – who shares her Toronto semi with partner Mike, daughters Lexie, now 19, Halle, 17, and cockapoo Monty – set about transforming her 650-square-foot basement, with its dingy plaster walls and chipped orange terracotta floor tiles, into an “apartment,” complete with a cozy living area, two bedrooms (one of which doubles as Lexie’s office), a bathroom, a laundry room and plenty of storage space. “The best way to make a basement not feel like a basement is by using bright and fresh colours,” says Margie of the new space’s dynamic decor. Layers of white radiate that desired freshness thanks in large part to Margie’s cheap-and-cheerful secret weapon: vinyl flooring. “It looks like beautiful whitewashed hardwood but is so durable and practical,” she says. The basement’s playful paisley wallpaper is enlivened by large-scale artwork. “Before Lexie was born, I commissioned the artist who was painting her nursery to paint this cow for me,” says Margie. “We placed it above her crib, and it’s been with her ever since – she’s grown up with it.” Now, it makes a statement as soon as you enter her living quarters. RIGHT Margie added two bedrooms to the basement floor plan to increase the home’s resale value, but for now Lexie uses one as her office or as a guest room when girlfriends sleep over. “I separated them with a barn door, which I had painted a different colour so it stands out,” says Margie. “It’s like a piece of art.” DESK, TABLE LAMP, HomeSense.

The cheeriness continues with furnishings in shades of lilac (Lexie’s favourite colour), pink (packing a girly punch) and blue (connecting to the rest of the house). “I used a lot of light blue upstairs and wanted to continue with blue down here – but in a different shade,” says Margie, who used an azure tone in major accents, from the furnishings to the whimsical laundry room wall tiles (not shown). Perhaps the most dramatic use of this preferred hue is in the living area, where paisley wallpaper shifts Margie’s pattern play into overdrive. “This paper has a retro look, which works well in a brand-new basement,” she says. “It also suits Lexie’s personality. She loves vintage pieces.” While the basement was inspired by a ’70s TV show, it is now very much a place where 21st-century girlfriends love to spend time. It’s hard to believe this space is in a basement, and that was designer Karla Amadatsu’s goal. “You don’t often see a laundry room this large with materials this high-end,” she says, specifying that the floor tiles, countertops and backsplash are all marble. Opting for different types of the natural stone, including Carrara and Arabescato, with varying degrees of veining, she created a super-luxurious monochromatic look enhanced by traditional cabinetry. The room also gets a vintage feel from the charming farmhouse sink and wall-mounted two-handle nickel faucet.

“You don’t spend a lot of time in a laundry room, and it tends to be in an out-of-the-way spot, so why not make some bold design choices you wouldn’t make elsewhere?” says designer Ali Budd. Big and bulky, washers and dryers can overpower a small space, so designer Nam Dang-Mitchell confronted them head-on, literally starting from the ground up. “The patterned floor tiles make a unique focal point,” says Nam, who chose appliances with a mirror-like finish to multiply the bold effect. She built on the Euro look, creating a pleasing tension by juxtaposing time-tested formal and casual elements: Elegant Shaker-style built-ins feel approachable thanks to the farmhouse-style butcher block countertop, while rustic beadboard wall panelling gets an urban vibe from industriallook light fixtures. “I wanted to create an authentic feel,” says Nam. Mission accomplished.

“This laundry room was not an afterthought,” says designer Ami McKay of the bright space, which shares the home’s second floor with four bedrooms. Aiming at the feeling of hygge – the Danish term for cozy, charming and special – Ami chose crisp white wall paint and light-toned wood finishes, which take on a pleasant glow in the afternoon sunlight from the unadorned west-facing window. The main attraction, a custom built-in oak storage unit, is as functional as it is beautiful, so a select few textural accessories like the plush vintage Moroccan runner are all the embellishment needed. “The room feels spacious and attractive, so the door will never need to be closed,” says the designer.

Storage Smarts A basket for toy storage is one of the only things you’ll find lying around. “I love using these baskets because of their unique shapes and colours. They’re made by women in developing countries, so they tell a story that mass-produced versions can’t,” says the homeowner. She asked designer Joanna Vagelatos to include tons of concealed storage, like drawers and hanging space, in the room. “Keeping things tidy and organized has to be easy for my daughters or it just won’t happen,” she says.

Adorable Accessories While the traditional curved headboard is fit for a grown-up, the playful garland indicates that a kid lives here. The same goes for the cloud-shaped toss cushion, which echoes the headboard’s blue hue and pulls the cute cozy look together. While it was perfect for hosting dinners for friends, the space suffered from a wobbly table and lack of storage. It was time for a change.

NOW The dining room has been transformed into a bright and airy space thanks to a more subdued palette featuring subtle patterns and textures, from the drapery to the rug. Tim reused the same comfy wooden chairs. “They look great and stow easily, which is essential in such a small space,” he says.


DECORATING

“WHEN I FIRST DESIGNED THE SPACE, it was a place for entertaining. The colours were bold. The furniture was dark. It was all about food and mood,” says Toronto decorator Tim Lam of his stylish dining room. But life changes, and with it, decor needs change, too. “When my partner [Chris Gabriel] stays here, he uses the dining table as a desk,” says Tim. So it’s often covered with paperwork and cups of coffee – not wineglasses and flowers. That’s why Tim decided to redecorate. “The room was a disaster,” says Tim. “Truthfully, it had become one big storage locker. I’d put one stack of stuff on the table, and then, since there was already one stack, I’d add another.” In a 750-square-foot condo, desiring a dining room that serves triple duty is understandable. But Tim craved a better balance of style and function with a dining room that could easily go from “command central” to “cocktail hour.” Airy lighting, lots of storage and a serene palette with subtle accents were central to this day-to-eveningready transformation. “My tip for anyone who is redecorating is this: Start with function,” says Tim. “Think about how you plan to use the space. Making it pretty should be the last step. Making it practical should be the first.”

ABOVE “Originally, I was going to back the shelves with pale pink paint,” says Tim of the built-in hutch. “But I wanted more punch.” Metallic marbled wallpaper did the trick. “Not only does it catch the eye, but it also inspired me to showcase brightly coloured items. Before this, I’d only displayed white objects.” Ample closed storage keeps clutter, whether it’s dishware or computer cords, out of view.

A floating sideboard offers concealed storage yet is visually unobtrusive since it’s lifted off the floor. Tim, pictured, painted the artwork above it himself. “I pulled colours from the wallpaper backing the shelves and used other paint I had left over,” he says. “It was just a playful experiment that worked out really well. It saves money, and it’s guaranteed to be one of a kind.” In his old dining room, the bold botanical wallpaper negated the need for artwork.

pring arrives in East Vancouver in a canopy of pink. Cherry tree branches are covered in blush-hued blossoms, bobbing and heavy from spring showers, while hazy willows and whispering pastels offer a scene as pretty as a watercolour painting. “After months of gloomy rainy days, our neighbourhood comes alive in April,” says Kelly DeVisser, who lives here with her husband, Dave, and their two young daughters. One of the highlights of this time of year is that the local farmers’ market finally starts up. “Weekend walks to buy seasonal produce have become a family tradition,” says Kelly. “We love to cook together.” In fact, the girls, aged six and three, are already culinary enthusiasts. Kelly and Dave are quick to credit all this home-cook revelry to their spectacular family-friendly kitchen – and to interior designer Peter Wilds, who redid their 2,760-square-foot four-bedroom 1913 house in 2016. When he first came to see the home, it featured a dark and narrow galley kitchen that felt closed-off from the rest of

BELOW The open kitchen and dining area is a dramatic departure from its original state. Before the renovation, there was a partial wall between these two spaces. Interior designer Peter Wilds opened up the space, knocking down the wall and replacing the single French door that led to the deck with two modern glass ones, which suit the scale of the large island. Now, natural light spills into the room and across all of its surfaces, including the handsome wide-plank engineered wood floors. PENDANT LIGHT, LightForm.

the house, which was broken up into a series of smaller rooms. Peter and the homeowners envisioned an open space with a sparkling kitchen as its focal point – and so the kitchen is precisely where he began. After the main floor was gutted and its walls knocked down, the home’s pièce de résistance was installed: a whopping 10-byfive-foot custom island. “A monolith,” says the designer. From day one, Kelly and Dave trusted Peter. They didn’t bat an eye when he suggested installing such a large kitchen island, but they did hesitate – just a bit – when he wanted to eliminate two windows to make room for a wall of chef-calibre appliances. The couple also worried that Peter’s plan to use mixed metals would end up too glitzy. “But we knew he had a vision,” says Dave, “and we believed in it.”

And thank goodness they did! Satin brass hardware now offsets function-forward stainless steel appliances befitting this foodie family, and a dance of geometric lighting illuminates the oversized island. The couple couldn’t be happier with the results. “The kitchen just glows,” says Kelly. In this open concept home, the living and dining areas serve as seamless extensions of the standout kitchen – and while the kitchen demonstrates some design indulgence, these spaces illustrate Peter’s artistic restraint. “I start a project by stepping back to see what’s already working,” explains the designer. He chose to simply enhance the gracious dining table and chairs the homeowners already owned with a custom banquette topped with toss cushions fashioned from THIS PAGE The console nestled below the TV is one of the few furnishings purchased during the redesign; Peter otherwise worked with the beautiful pieces the homeowners already had. Simple, clean-lined and floating, it takes up little visual space in this intimate living area. The swooping wooden club chair offers sculptural eye candy, and the original stained glass window highlights the home’s heritage. The homeowners (pictured opposite with their daughters) adored their low-slung sectional and deep comfy club chair, so Peter simply layered in functional flourishes through lamps, textured and patterned toss cushions and a custom upholstered ottoman. The side tables are all within reach of the seating. “Nobody should ever have to get up to put a glass down or use the floor as a table,” says Peter. Kelly’s collection of vintage Chinese textiles. Similarly, in the living area, Peter retained the existing sectional the family had long adored, but he rounded out the space with a perfect play of toss cushions, artwork, a side table and other accessories. He also visually expanded the space with a towering mirror framed in custom millwork. “Good design is all about listening,” says Peter. “The days of design for its own sake are over. A beautiful space is born of filling it with what speaks to you, in creating rooms that let you live your life – your way.” And when that’s using your expansive island to teach your kids how to bake scones and cookies, we totally agree. EVERYONE HAS A FRIEND WHO DOESN’T HOLD BACK. And when that friend is Ben Leavitt, lead designer of Vancouver’s PlaidFox Studio, decorating is a no-holds-barred topic – especially at the dinner table. Ben was at Amy Pieschel and Sean Meindl’s Yaletown, Vancouver, apartment for the couple’s regular Sunday sushi dinner. “I was tired of their unappetizing decor distracting me from my gyoza,” he says. “Everything was white, grey and lifeless – it didn’t match the personalities of this adventurous and hilarious couple.” In 2017, Ben called in his colleagues – brother Dave Leavitt and designer Kelly O’Quinn – to bring the 830-square-foot home in sync with the couple’s charisma. “I knew Amy and Sean would let my team push them with pattern and colour, so we went for it!” The purely cosmetic reboot evolved over a threemonth period, during which new furniture was sourced with one requirement – it had to be colourful. Now a luxurious midnight blue velvet sectional strikes a bold note in the living room, and Herman Miller chairs bring a burst of zesty orange to the kitchen table. “Amy had wanted a pair of these for a while,” says Ben. “She and Sean could’ve played it safe when picking their colour – I’m so happy they chose bold over boring.”

“When the door to this home office is open, this vignette is visible from other parts of the house,” says Ben. “We wanted something layered and dynamic to catch the eye. RIGHT It’s hard to believe the entryway was once plain white. “When you have a winding hallway through your house, you might as well make the journey along it pleasant,” says Ben, referencing the bold stripes he added to the walls. The vibrant hits continue with generous dashes of print and pattern, most notably in the wall treatments: from grey horizontal stripes in the entryway to a retrolook periwinkle blue and white wallpaper in the living room to a maximalist black and blue graffiti-style wallcovering in the bathroom (not shown). Ben didn’t stop at these overt examples of visual interest, though. “I wanted every corner to be energetic and full of life,” he says. So in addition to the living room’s gallery wall, there are artful stacks of books throughout the space and a kaleidoscope of riotously hued toss cushions. These are just some of the ways the PlaidFox Studio team enlivened every square inch of the small space, fulfilling the more-is-more mantra with aplomb. Amy and Sean love it (Ben says he’s converted them into “eccentric, colour-laden design lovers”), and Ben does, too. “Now, every time someone opens the front door, a sea of pattern welcomes them,” says the designer. “Guests will instantly know sushi night is going to be a lot more stylish than it used to be!” FOR SOURCES, SEE OUR WORKBOOK

ith a growing family to consider, designer Christen Irwin and her husband, Dave, sought to upsize from their tiny semi in Toronto’s west end. They were hoping to find a teardown in a great neighbourhood where they could build their dream home. “But then my husband went rogue and insisted I look at this house in nearby Mississauga,” Christen recalls with a laugh. “I knew the hunt was over from the moment I walked in. I could picture us living there. It instantly felt like home.” The couple also fell in love with the 2,500-square-foot 1917 home’s original features, from its mouldings to its built-in cabinetry. “It felt cozy and comfortable,” says Christen.

Although the house was in great living condition, Christen put her design skills to work in making it functional for her family, which includes son Luke, 4, and daughter Daragh, 1. Many aspects of the renovations were daunting, especially when the couple moved in late November 2016 with a toddler and an infant, and had no kitchen. They tore down a wall between the kitchen and the dining room, creating a larger and more open space. And where a mix of different flooring made the interior feel chopped up, new wide-plank oak flooring throughout now unifies all the rooms. “We married the new materials with the home’s existing details,” explains Christen. A high-low mix was also important to the designer, who balanced splurges with inexpensive choices. She kept the kitchen budget in check by reusing, for instance, large sections of the original cabinetry in the new design, allowing her to spend more on marble countertops and a professional gas range. Once the renovations were complete, Christen incorporated traditional and contemporary furnishings, combined with plenty of heirloom pieces, to give the refreshed interior a youthful vibe that also nods to the home’s age. “It was important to me to use natural authentic materials to honour the house,” says Christen. “I chose leather, wood, marble and other organic accents that will acquire a patina over time, just like the house itself.” Although it wasn’t from the ground up, it looks as though the couple built their dream home after all.

When the living room got a new coffered ceiling, shiplap details and pot lights, the original cove mouldings were carefully preserved. Christen had the fireplace “beefed up” with a live edge-wood mantel to give it more presence in the 15-by-23-foot space. A pair of rolled arm sofas mingle with contemporary leather armchairs and mod lighting to create a warm yet dynamic mix. Blend the flour and salt in a food processor. Add the butter and pulse until the mixture is crumbly. With the motor running, add 2 tablespoons of ice water. Continue to add 1 tablespoon of water at a time until the dough comes together and forms a ball. Divide the dough into four discs and wrap each in plastic; set aside for 1 hour. Preheat the oven to 425°F. Mix the ricotta with the Parmesan, lemon zest, thyme, salt and pepper; set aside. Unwrap one disc of dough and place between two pieces of parchment paper. Roll out into a 1/8"-thick circle. Repeat with the remaining dough. Divide the ricotta mixture evenly among the dough circles; spread the ricotta, leaving a 1½" border around the edge. Working with one circle at a time, roll up one slice of zucchini and place, standing up, in the centre of the ricotta mixture. Wrap another zucchini slice around the first. Continue adding zucchini until it reaches the edge of the ricotta. Repeat with the remaining galettes. Fold over the edges of each dough circle to create a free-form rimmed edge for each galette. Mix the egg yolk with 1 tablespoon of water and brush over the pastry. Transfer the galettes onto two baking sheets. Bake for 15 minutes; reduce the temperature to 375°F and continue to bake until the pastry is golden and the zucchini is tender, about 20 minutes. Let rest for 5 minutes before serving. Crust 2 cups all-purpose flour ¾ tsp salt ¾ cup cold unsalted butter, cubed 4 to 5 tbsp ice water FENNEL & RHUBARB LEMONADE SERVES 10

2 tbsp fennel seeds ¼ cup water 2 cups chopped fresh rhubarb ½ cup granulated sugar 1 tbsp lemon zest ½ cup freshly squeezed lemon juice 1 L cold water 2 cups ice cubes Lemon and rhubarb slices, and fennel fronds for garnish Combine the fennel seeds and water in a medium saucepan and bring to a boil. Cook until the fennel seeds have softened, about 2 minutes. Add the rhubarb, sugar and lemon zest; reduce the heat to medium-low and simmer until the rhubarb is soft and fragrant, about 15 minutes. Remove from the heat; stir in the lemon juice. Squeeze the mixture through a fine-mesh sieve into a bowl and let cool. Pour the syrup into a large pitcher. Stir in the water and ice. Garnish with the lemon and rhubarb slices and fennel fronds; serve chilled.

MINTY MELON & CUCUMBER SALAD SERVES 4

½ cantaloupe, peeled and cut into 1" slices 2 baby cucumbers, thinly sliced lengthwise 4 radishes, thinly sliced ¼ cup thinly sliced red onion 3 tbsp extra-virgin olive oil 1 tsp lime zest 3 tbsp freshly squeezed lime juice ⅓ cup fresh mint leaves ¼ cup baby cress Salt and freshly ground black pepper to taste Arrange the cantaloupe, cucumbers, radishes and onion on a platter. In a small bowl, stir together the olive oil, lime zest and juice; drizzle over the salad. Garnish with the mint and baby cress. Season with salt and pepper; serve.

Filling 2 cups all-purpose flour ¾ cup almond meal ½ cup granulated sugar ½ cup softened unsalted butter 1 large egg ½ tsp pure almond extract 4 small red pears 1 tbsp apple jelly ¼ cup sliced almonds 1 egg yolk 1 tbsp water 1 tbsp turbinado sugar Blend the flour and salt in a food processor. Add the butter and pulse until the mixture is crumbly. With the motor running, add in 2 tablespoons of the ice water. Continue to add 1 tablespoon of water at a time until the dough comes together and forms a ball. Form the dough into a large disc and wrap in plastic. Set aside for 1 hour. Preheat the oven to 375°F. Unwrap the dough, place between two pieces of parchment paper and roll into a 14" circle. Remove only the top piece of parchment paper and transfer the dough to a baking sheet. Using a hand mixer, beat the flour, almond meal, sugar, butter, egg and almond extract together in a bowl until light and fluffy, about 2 minutes. Spread the mixture over the dough, leaving a 2" border around the edge. Cut each pear in half and remove the core. Place one pear half, cut side down, on a cutting board. Cut the pear lengthwise into thin slices, leaving the tip intact. Repeat with the remaining pear halves. Gently fan out the slices and press the pears into the almond mixture. Fold the edges of the dough slightly over the filling, pleating as necessary. Microwave the apple jelly for 15 seconds. Brush over the pears. Sprinkle the almond slices among the fanned pears. Whisk the egg yolk with the water. Brush onto the dough; sprinkle with the turbinado sugar. Bake until the pears are tender and the pastry is golden, about 30 minutes. Let cool for 10 minutes before serving.
