BALCONY SCENE High-rise dwellers may not have the luxury of a yard to putter about in, but even the smallest balcony can be a garden of earthly delights. After two years of going virtual due to the pandemic, the 2022 Interior Design Show was a live event this past April at the Metro Toronto Convention Centre, and showcased the best and brightest in Canadian and international design. T
here is something about an English garden, all lush and green, borders filled to bursting with a heady mix of blooms. And, it has to be said, there’s also something about an English garden bench. Designed in 1902 by renowned British architect Sir Edwin Lutyens for the garden of an Arts and Crafts-style manor house, this particular bench (occasionally called the Thakeham Seat, after the house it was designed for) has become something of a style icon. The generously proportioned piece – the original was eight feet long – boasts romantically lyrical scrollwork that plays across the curved camelback, and the kind of rolled arms you’d more likely spot on a trad chesterfield. All in all, it’s a recipe for the type of English eccentricity that makes this piece a quirkily sculptural standout. The original, often dubbed the Lutyens Bench, was hewn of English oak. These days, you’ll more likely find the design sitting pretty in durable tropical teak, as with the Sissinghurst Seat (above) by tony British garden furniture maker Barlow Tyrie. While makers have been inspired by the curves of the Lutyens, simpler, more contemporary looks also abound in glossy painted lacquered finishes. And since pedigree and patina often cost extra, charmingly battered antique versions can be found for a pretty penny online at 1stDibs. Plus, if you’re so inclined, you can even make your own. Lee Valley Tools sells a set of plans for those handy with a jigsaw and who know their way around a mortise and tenon joint. We’ll stand by with words of encouragement, gin and tonic in hand, while you get started.

INGREDIENTS SERVES 6
12 oz (340 g) sliced hulled fresh strawberries 3 tbsp granulated sugar 2 tbsp lemon juice 1 cup mascarpone cheese ½ cup whipping (35%) cream ¼ cup icing sugar 2 tsp vanilla 6 thick slices Pound Cake (see recipe below) or store-bought pound cake 1 tbsp melted butter Pound Cake 1¾ cups all-purpose flour, sifted 2 tsp baking powder ¼ tsp salt ¾ cup unsalted butter, softened ¾ cup granulated sugar 2 eggs, lightly beaten ⅔ cup 2% milk, divided 1 tsp vanilla

DIRECTIONS In bowl, gently mix strawberries, granulated sugar and lemon juice. Let sit at room temperature about 30 minutes. Meanwhile, in large bowl, using electric mixer on medium speed, beat mascarpone, cream, icing sugar and vanilla until creamy and light; set aside in refrigerator. Preheat barbecue to medium-high heat (about 375°F); grease grill. Lightly brush each side of cake slices (recipe below) with melted butter. Place on grill and cook until marked, turning halfway through grilling time, about 4 minutes. Transfer cake slices to dessert plates and dollop with reserved mascarpone cream mixture. Reserving juice, drain strawberries. Top cake slices with strawberries and drizzle with juice.
Pound Cake Preheat oven to 325°F. In bowl, whisk together flour, baking powder and salt. Set aside. In large bowl, using electric mixer on medium speed, beat butter with sugar until pale and creamy. Reduce speed to low; gradually beat in eggs. Beat in half the milk and half the reserved dry ingredients until smooth. Add vanilla and remaining milk and dry ingredients; beat until smooth. Pour batter into lightly greased 9-x-5-inch loaf pan and smooth top. Bake until cake tester inserted in centre comes out clean, about 1 hour. Place pan on rack and let cool for 5 minutes. Turn out onto rack; let cool completely. (Make ahead: can be stored at room temperature for up to 3 days or frozen for up to 1 month.) Makes about 16 slices.

o wonder this pretty-in-pink camper is now affectionately – or should we say “confectionately” – referred to as Strawberry Shortcake. Rebekah Higgs, host of the Halifax-based TV show DIY Mom, and her eight-year-old daughter, Lennon, transformed the secondhand Boler into a camper that’s as sweet as it is petite.

Sweet Spot “Boler isn’t making these campers anymore, but I found one of the last remaining fixer-uppers online and had it shipped here from Quebec,” says Rebekah Higgs. It’s now perched at her parents’ house, with views of St. Margarets Bay. Rebekah used specially formulated paint to coat the fibreglass exterior, and a Cricut Joy cutter to create a vinyl Boler logo sticker for the wheel cover (opposite page). Sofa “To Go” By the time Rebekah and Lennon embarked on their inaugural road trip to Cape Breton from their home in Halifax, the trailer was teeming with girly touches like floral wall prints and a cheery garland. At one end of the camper, a window-seat-style sofa offers a happy summer reading spot thanks to pillows and a throw. At the other end, the bed was sweetened up with cushy throw pillows in yummy berry-coloured stripes and bobbled vanilla tones. The tray is handy for snacks from the mini-fridge. A dated trailer gets a second life as a cozied-up living space complete with bold style and all the mod cons.
mall was a big dream for childhood educator Tabitha Lash. “For years, I’ve been intrigued by tiny living,” she says. “When I found this 20-foot trailer at a dealership, I knew I could transform it.” Her plans started with remedying water damage and a mouldy smell, then morphed into the fun stuff: laying new floors, painting it top to bottom, and kitting out the place with fab finds. Tabitha, who lives in Southern Ontario, now spends four months a year at her trailer in famous, rugged Algonquin Provincial Park (think: Tom Thomson and the Group of Seven). She says, “I feel so proud sitting in something I built myself.”

“It’s so calming stepping in here,” says owner Tabitha Lash, pictured on the doorstep of her 2010model Joey Layton trailer. She replaced the original vinyl flooring with engineered oak planks, and kept the sofa’s metal frame (it hides the water tank) but upgraded it with new foam and rich velour upholstery. “I saw this colour and it reminded me of the park’s autumn leaves,” says Tabitha. The runner is both stylish and sentimental. “It was my nana’s, and it was in the hallway of every house she lived in.”
Tabitha opted for a mostly white interior to impart an expansive feel and punctuated it with shots of black. She tore out a space-hogging dining area with a built-in banquette and replaced it with a statement-making live-edge table. “I cut, sanded and hand-dyed it, then poured on resin in layers, which took days,” she says. The existing kitchen cabinetry was refreshed with paint and matte-black hardware. Painting the lower cabinets black helps the appliances blend in. “The kitchen is fully functional,” says Tabitha. “Tacos, seafood pasta, muffins…I make everything here.”

Cool Comfort This teeny bathroom is big on fab DIY ideas, starting with the snazzy wall treatment. “They are actually not tiles!” says Tabitha. “I traced a hexagonal coaster onto matte-black vinyl, cut out a bunch of shapes and stuck them on the wall.” Cedar shelves and a countertop (that she made with her dad) lend a rustic edge to the mod palette, and there’s a full shower behind the black curtain. Tabitha rebuilt the bed frame to accommodate a queen-size mattress that lifts up for storage, and sprayed the brushed-nickel cabinet pulls black. A mix of cushions is a nice finishing touch. Says Tabitha: “I like adding lots of them to the bed to make it look extra cozy.”

here is no space that’s trickier to design than a small space. And that’s mostly because we want it all: comfortable seating, room for entertaining, storage galore and – oh, yes – a spacious feeling! While there’s no way to magically increase square footage, follow along and I’ll show you tips and tricks to maximize every square inch you have.

Colour Commentary Getting colour right is crucial in a small space. My best tip is to use the same colour or shades of that colour on all the major players in a space: walls and trim, floors, area rugs, cabinetry and large furnishings. When a big piece like a sofa is the same colour as the walls, it’s camouflaged, creating the illusion of space. Tone-on-tone decorating reduces visual busyness, making a room feel calmer and larger, but that doesn’t mean you have to decorate in all white or beige – use shades of blue, green, or whatever colour you love. Do note that lighter colours give an airy feel, while dark ones are enveloping, so consider what effect you want. Finally, layer in colours you love with smaller furnishings, accessories and art. In this basement walkout from HGTV Canada’s Save My Reno, we added shades of pink, terracotta, yellow and blue for an energetic vibe.

Making Room There are two basic ways to approach designing a small space. pace. The first is to maximize what you have. How? Take advantage of vertical space and increase storage with floor-to-ceiling cabinets. Note that torage open storage lets you display pretty things, while closed storage hides away the everyday. Second, amplify what you have. This is h and d about creating a sense of space. Add wall mirrors to reflect li light give the illusion of depth. Paint cabinets, benches and entry tables the same colour as the wall, so they appear to become part of the architecture. And keep the walkways clear. Every time you bump into your sofa or have to hurdle an ottoman or squeeze between a server and a table, your home instantly feels smaller. If you keep the traffic moving, energy will flow and your space will feel more open.

All the Right Stuff Avoid using all small-space furniture – it can make it feel like you live in a doll’s house. A combo of large and small pieces will lend a balanced feel. To figure out the size of furnishings, test your layout before you buy: measure things out, use an online space planner, or tape the proposed layout to the floor. Be honest about how you live. Will you really work in an office built into a closet? Probably not. Instead, create multifunctional spaces. A dining table works well as a desk, just have a bench nearby to stow supplies when it’s time to dine. Choose hard-working furniture like side tables that double as seating, benches with storage, and sofa beds. Another tip: pair the largest sofa your space can handle with a cushy ottoman, so you can lounge out even if the sofa isn’t deep.
COMMON MISTAKES & FIXES • The Mistake: blocking the entry to a living room with the sofa. The Fix: move your furniture around until you get a seating arrangement that lets traffic flow. • The Mistake: Too many hard surfaces. So often, small furniture is also hard, a.k.a. not comfy! The Fix: include plenty of upholstered pieces. Try upholstered dining chairs and bench cushions. • The Mistake: tiny art spaced far apart. A scattering of little pieces looks busy. The Fix: install a collection of smalls or one large canvas, which can completely calm a space.

Since 1994, Barclay Butera has been the creative force behind his prestigious design firm and showroom in Newport Beach, Calif. His success there prompted Barclay to establish showrooms throughout his home state. Renowned for his passion for decorating with the colour blue and his signature look of approachable elegance, Barclay also designs products that capture his chic-meets-coastal style. We caught up with him to discuss his thoughts on blue – his favourite hue and an alltime summer classic.
KL: You use a lot of blue in your design work. Is that because of your proximity to the ocean and the big California skies?
BB: You nailed it! I grew up in California and coastal living is in my DNA. Seeing big blue skies, the ocean, sand and cliffs has certainly engrained that colour palette in my work. Also, I consider blue to be the perfect palette for any style – traditional, transitional and contemporary alike. KL: Do you have a favourite contrasting colour when decorating with blue and white? What about a favourite neutral to accompany the pair?

cated neutrals with beautiful textures. The environments we create are glamorous, but also very inviting, and the use of neutrals provides a great canvas for colour. Sand, driftwood and rich bark shades really make blue and white pop.
KL: Can warm and cool blues be mixed in the same home or should we stick with all cool or all warm tones?

KL: How can those of us living in places with four seasons decorate with blue and white without making our rooms look like a summer vacation home?
BB: I find combining blue and white with dark wood and the on-trend gold accents in lighting and hardware turns a room from coastal to classic. And I would advise you to reach for deeper, more heritage shades like Benjamin Moore’s Everard Blue. I used this hue in a stately office/library setting and it is definitely not nautical! KL: How can I use blue to create big impact in a room? Is there a particular blue that you consider a classic or neutral?
BB: Big impact for me is [making] a major commitment to blue walls with glossy white trim, shiplap, wainscot, and tongue and groove. I consider soft sky blue a total neutral: it works well with almost any other palette and sets a perfect background for any room in

BB: I typically don’t mix cool and warm. I think flow from room to room in a home is very important. One of my favourite go-to shades is Benjamin Moore’s Iced Slate; it’s a soft grey blue that is very sophisticated and can be used throughout an entire home as a neutral. It also goes with so many other colours – it’s always a winner! KL: You’ve designed furniture, fabrics and books. What’s next for Barclay Butera? Is blue still a colour that will be included in future projects?
BB: Oh, without question! My next furniture collection for Lexington Home Brands’ Laguna has strong blue influences, beautiful natural woods, cane and warm hardware. It’s cottagemeets-sophisticated charm with casual tones of denim blue and soft neutrals. ired of its lack of space and dated look, the owners of this kitchen had been planning a reno for ages. They found it especially annoying that only two of the four family members could be in the room at once. For solutions, they turned to designer Isabelle Filion. Isabelle focused on enlarging the room, improving flow and increasing storage. Top requests included a longer counter and getting rid of the peninsula that closed off the space. Isabelle complied by extending the wall on the left by two feet toward the dining room. She also removed all the angles in the room to make it feel bigger and make the cabinets more accessible. “Before, we could never be all together in the kitchen,” says the chef of the family. “Now I can cook while one of the children makes their lunch. No one is in the way. There’s room for everyone.”

A makeover puts function and style on the menu in this Montreal kitchen.

Decisions, Decisions “Choosing the materials was the hardest part,” says designer Isabelle Filion. “We didn’t want to make any mistakes because who wants to renovate every five years? We wanted the colours and materials we chose to be timeless.” They opted for a mix of pale wood and white with black accents. The upper cabinetry is laminate, which withstands heat and humidity; durable MDF is on the lowers. The owners wanted a countertop that would withstand hot cookware. Lapitec, a sintered stone slab made from natural minerals, has a clean look, plus it’s resistant to scratches, heat, stains and bacteria. The glossy finish amps up the light and looks sleek.
Clean Sweep The sink area is highly efficient. On the left is a large pantry and a refuse and recycling pullout; on the right, the dishwasher. A touchless faucet is ideal when cooking; it has a light that turns blue or red to indicate water temperature. Glossy white tile on the backsplash is practical and bright. For mood and task lighting, a black sconce echoes the cabinetry hardware. The space-sapping peninsula was traded for a countertop extension that’s perfect as an office area or a place for a child to draw. A comfy stool with retro lines makes a statement.

Form Follows Function Isabelle installed the upper cabinets at 24 inches high to create more space between the counter and cabinets, which gave the tall cook in the family a bit of breathing room when working. She took them to ceiling height to maximize storage, while also prioritizing smart storage in the lower cabinets. The food prep zone stashes all the cook’s tools within reach. To the left of the range, a sliding drawer holds utensils and oils. To the right is a pullout for pans and cutting boards. Beside that, drawers store more kitchen tools, while the mixing bowl, colander and tableware are in the upper cabinets. On the counter, a Thermomix takes pride of place, since the chef uses it daily. At the back corner between the microwave and fridge (opposite page), all the available space behind the wall was carved out for more storage, including a small cabinet for breakfast items.

The Back Story A difficult pick was the backsplash material. After several tries and much debate, the owners settled on a bold choice: a tile that looks like wallpaper, in a pattern that captures their personalities and looks good under daylight or artificial light at night. “We realize that it might not pass the test of time, but since it’s just the backsplash, it’s an easier fix down the line,” says one owner.

Dining In “We weren’t planning to, but since we were already renovating the kitchen, we took the opportunity to freshen up the dining room, too,” says one owner. Isabelle suggested adding a graphic rug to define the space, and a more minimalist look for the table. “We wanted to buy Canadian and we had some success at Maison Corbeil,” says one owner. “Since they build to order, we had more colours and materials to choose from.” They opted for a contemporary table with a smoked glass top and wooden legs; its colours complement the new palette in the kitchen. Black upholstered chairs mimic the bar stool’s curved backrest. The PVC and velvet pendant creates a compelling diffused-light effect. For storage in the small space, a locally made modern console is ideal for storing liquor. On the far wall, a shelf in the same material as the kitchen cabinets connects the spaces and a creates a focal point with decorative items.

ohn and Michelle Hemeon’s vision for their 2,700-square-foot home bordering Lake Erie in Kingsville, Ont., was modern farmhouse; designer Jenny Belanger had a different idea. “I wanted to take from the area’s rich history of traditional farmhouses and historical lakeside cottages,” she says. A few tweaks to the home’s standard book-plan design (including removing ceiling joists to expose the dormer windows and let in even more light) gave the space an open, casual feel. Decorative elements, such as creamy walls, white oak floors and custom millwork amplified the airy effect. “All of these features create the character you see in homes of decades past,” says Jenny. “Forget modern farmhouse…this feels like it has always been here.”

OPPOSITE & ABOVE The kitchen brims with design details, including the unique range hood. “I wanted something that added texture, but I didn’t want another material, so we came up with this louvre treatment,” says Jenny. The venting ductwork is behind a chimney stack that was carefully clad. “I used shiplap, something commonly seen in old homes, so it would look intentional and not like an afterthought.” Glass-fronted cabinets break up the wood and afford a view of pretty dishes. LEFT “The ceiling was opened to allow light to filter in through the dormers above,” says Jenny. “It gives the space a loft effect like you see in converted barns.” Jokingly called “the aircraft carrier,” the extra-long 14-foot island has ample storage drawers on the kitchen side and stylish stools on the open side. “I wanted them to blend into the island,” says the designer. “These hit the nail on the head with the pale colour, wood grain texture, and the black leather that complements the matte-black cabinet hardware.” Linen slipcovers on the dining chairs layer in softness and are a subtle foil to the wood. OPPOSITE & ABOVE The landscaping is an exercise in restraint. Pavers add pattern, let the grass dominate, and lead the way to a garden bed that demarcates the firepit area. Classic chairs are all that’s needed. Jenny took a similarly pared back approach to the design of the back porch. “It was important to keep things simple and to keep the endless lake views the focal point,” she says.
RIGHT Jenny cranked up the cozy on the covered back porch by adding a gas fireplace and motorized screens that allow the space to be enjoyed day and night. THESE PAGES The kitchen range hood’s louvre finish is repeated in the family room’s door panels (a thoughtful detail), but leather pulls were added to differentiate it slightly. The homeowners worked with a local furniture supplier to furnish this space and Jenny guided them through the process. “We kept the colour palette to earth tones, something that works for every season,” she says. RIGHT This guest bathroom is a definite departure from the rest of the home’s colour scheme. “I always feel like there needs to be at least one element that throws things off a bit, and this bathroom was it,” says Jenny. “I like how dark wood combines well with light finishes. I knew from the start I wanted to somehow incorporate this look.”
BELOW Beyond the dark wood, there is also design continuity in the beadboard wall treatment – it’s the same finish that’s on the kitchen island. Brass is a warm contrast to the darker tones and adds a bit of sheen. “One of my favourite things in this bathroom is the wall sconces,” says Jenny. “That double black stripe on the milk glass is such a simple, country touch.” MIRROR, Wayfair.
OPPOSITE In this guest room, the homeowners’ love of symmetry is indulged again in the pair of metal beds. The black and white scheme gets a bit of warmth thanks to the natural wooden dresser. “The effect is simple and uncomplicated,” says Jenny. “It’s a welcoming room, and twin beds provide more options for guest sleeping arrangements.” BEDS, DRESSER, Nomad. LEFT The home’s original plan separated the mud room from the laundry room, but by combining them, Jenny maximized space: “I was able to incorporate millwork that covered all the homeowners’ storage needs – a place for shoes, hooks for hanging items, and niches for hats, scarves and towels.” A classic cage pendant light illuminates the pretty and practical space, while channelling the farmhouse vibe that influenced the home’s design.
ABOVE Jenny also netted counter space for folding laundry, along with a hanging rod for overhead drying. The two-tone colour palette accents the handsome custom trim and millwork, and metal hardware makes it pop.

On a hill in Halifax, happy hues bring Rebekah Higgs’s mid-century home to life.
onestly, I had no idea I was somebody who likes pink,” says Rebekah Higgs, host of DIY Mom. “But during the opening season [of my show], I painted the front door pink and I can honestly say that every day since, coming home to that door brings me joy.” The same can be said of the rest of her 1950s bungalow, perched on a hill with views of Bedford Basin. The light-filled space is the happymaking home of Rebekah and her eight-year-old daughter, Lennon. But the fresh little jewel box wasn’t always this way. “Picture a dark labyrinth of hallways shooting off to lots of cramped rooms, each one with different flooring,” says Rebekah. Her solution? “Take it down to the studs. By the time I was done, the only original thing left was the windows,” she laughs. And it was then, tool belt tightened and a stack of books about mid-century architecture on hand, that she reconfigured the layout into what it is today: a sparkling, pink-positive zone for this supercreative mom and her equally fun daughter.

But a farmhouse look wasn’t right for this house,” says homeowner Rebekah Higgs (shown left), who refaced it with slats of white oak. “Now it looks MidCentury Modern, and it transitions nicely to that spacious foyer. ABOVE “This fireplace is super awkward because it’s smack in the middle of the house, so it has to look good from every angle,” says Rebekah. The arched mirror and basket-weave tiled hearth were added for texture and pizzazz. “The sconces were originally supposed to go in the bathroom, but their arches reminded me of the pendants over the island, which are nearby, so I put them here instead.” The wood carrier and fireplace tools are thrift finds. LEFT & OPPOSITE Rebekah’s DIY arched “window” makes a gem of this tiny office. “To make the arches, I worked with carpenter Julie Hing and we used my clothing steamer!” she laughs. (See how they did it on season 4 of DIY Mom.) The office walls are draped in bananaleaf wallpaper. “You get a strong statement, but it’s still neutral.” The open wall shelf and sconces make a focal point of the bargain-priced desk. The patterned vinyl rug is no-nonsense, and the modern captain’s chair was a deal from a bigbox store. The blown-glass chandelier was a splurge. “I took a chance on the bright pinks in the rug and ended up really loving it in this space,” she says. RIGHT “I tiled the powder room by myself. I went for a modern stacked rectangle design that goes two-thirds of the way up the wall,” says Rebekah. “The tropical wallpaper and teak vanity feel very Palm Springs to me, so they felt great for a mid-century bungalow.” Sconces and a mirror with curved corners are the finishing touches. I wasn’t much of a gardener back then,” she admits, but she credits her mother for her newfound skills; fab conditions help, too. Says Rebekah: “The backyard has its own ecosystem. It’s very warm, so it’s really great for growing.”

“
t this point in my career, it’s absolutely invigorating to learn from the new generation of designers coming up,” says Style at Home’s Karl Lohnes. “And that’s one reason why I invited my colleague Peter Paquette of 1982 Design to take the lead on this project.” Their clients, a family of four, loved their neighbourhood and the 1920s home they’d lived in for many years, so moving wasn’t an option. However, their stylish, relaxed energy wasn’t reflected in the home, which was weighed down by a plethora of shiny brass, traditional millwork and

dated floors. “We abandoned all that for a masculine look with a touch of hotel chic,” says Karl. Peter agrees: “It’s like a modern hotel lobby. We used different styles of furniture and a lot of textural and printed fabrics to give it a collected look that’s approachable and warm.” As the project unfolded, it was clear that certain elements had to go, such as rather odd interior Grecian columns, while other features like the signature leopard stair runner deserved a bold debut. And the redo didn’t stop there. The main bedroom was graced with a sexy dressing room, and the living room is now steps from a full-service bar. “In other words,” says Karl, “you can definitely say this house puts the ‘fun’ in function.”

ABOVE Since Karl and Peter wanted the living room’s focal point to be the fireplace, they resurfaced the formal Georgianstyle one to create a modern marble masterpiece. To emphasize the point, they flanked it with twin lamps and window treatments. “Symmetry is the ultimate creator of calm,” says Karl. The chaise is covered in an animal print. “Fabric like that can be quite a commitment, but the clients were up for it,” says Peter. The low back on the sofa prevents the dining space from being cut off.
OPPOSITE “If the clients have a party, the twin chairs can be butted together for more room,” says Karl. “Similarly, the shorter of the two coffee tables can be slid beneath the taller one.” After the French doors that separated the living and dining rooms were removed, the thresholds were rebuilt and painted in a glossy deep brownish black. ABOVE Although the footprint of the kitchen wasn’t changed, upper cabinets that separated it from the family room were replaced with a parade of ceiling lights that define the space. Green cabinets were on the clients’ wish list. “Using deep green in here was a statement, so we balanced it with tone-ontone counter stools,” says Karl.

The dining room has no windows. However, by adding a new, larger curved metal entry, painting out the trim and suspending a knockout chandelier over a custom wood table, the designers created a stylish space. LEFT Karl and Peter wanted to try wallpaper in the primary bedroom – but, where to put it? “That’s where the ceiling came in,” says Peter. “It’s a small-scale print made up of subtle creams, taupes and browns, but it’s more of a texture than a print,” adds Karl. It also plays to the pattern in the rug. The luxurious mohair headboard has vertical channelling; above it, the metal framed mirror is hung high on the wall to amplify natural light.
RIGHT Ready-made sheers run wall to wall. “Not only do they allow for diaphanous light, they cleverly disguise the home’s original shutters and shorter windows,” says Peter. cups tightly packed baby spinach medium shallot, roughly chopped cup raw walnuts cup sun-dried tomatoes in oil, drained and patted dry 2 (13.5 oz/398 ml each) cans no-salt-added chickpeas or 3 cups cooked chickpeas ½ cup gluten-free old-fashioned rolled oats 2 tbsp nutritional yeast 2 tbsp ground flaxseed 1 tsp ground cumin 1 tsp garlic powder ¾ tsp salt ½ tsp onion powder 2 tbsp water + more if needed 3 tbsp extra-virgin olive oil, divided 1 tbsp gluten-free tamari Zest of ½ lemon Place the spinach in a colander over the sink. Slowly pour boiling water over the spinach to wilt it. Let sit to cool. In a food processor, add the shallot, walnuts, and sun-dried tomatoes. Pulse until finely chopped. Add the chickpeas, rolled oats, nutritional yeast, flaxseed, cumin, garlic powder, salt, onion powder, water, 2 tablespoons of the olive oil, tamari and lemon zest. Carefully squeeze all of the excess water from the spinach and add to the food processor. Pulse until about half the mixture looks like a paste, but you can still see plenty of distinct ingredients. You should be able to form a nice patty with ease. If the mixture is crumbly, pulse a bit more or add 1 to 2 tablespoons water, a bit at a time. In a large nonstick skillet, heat the remaining 1 tablespoon olive oil over medium heat. Place the burgers in the pan and cook until a golden brown crust forms on the bottom, 3 to 4 minutes. Carefully flip and cook for another 3 to 4 minutes. The burgers will be soft and pleasantly squishy when warm, but they will firm up as they cool.

Serve the burgers with or without buns, layered with greens, a bit of vegan mayonnaise, and some olive tapenade, if using.
PLUM AND RADICCHIO SALAD SERVES 4
1 small head red radicchio, finely shredded 4 firm black or red plums, pitted and sliced ¼ cup raw walnuts, chopped ¼ cup Medjool dates, pitted and chopped ¼ cup fresh mint leaves, thinly sliced into ribbons Tahini Yogurt Dressing (see below) In a medium bowl, toss the radicchio with half of the dressing. Layer the plums, walnuts, dates and mint overtop of the radicchio. Serve with the remaining dressing on the side.

In a small bowl, whisk together the coconut yogurt, tahini, lemon juice, garlic, salt, cane sugar, sumac and chili flakes. If needed, add 1 to 2 tablespoons water for desired consistency. ZUCCHINI CACIO E PEPE PASTA WITH PAN-FRIED OYSTER MUSHROOMS SERVES 3 TO 4

(12 oz/340 g) package gluten-free pasta cup pine nuts tbsp avocado oil, divided cups peeled and chopped zucchini (about 1 medium zucchini) ¾ tsp salt, divided + more for seasoning ½ tsp freshly cracked black pepper + more for seasoning 2 tsp nutritional yeast 1 lb (450 g) oyster mushrooms, trimmed and separated 1 tbsp fresh thyme leaves
Bring a large pot of water to a boil. Cook the pasta according to package directions. Drain in a colander, reserving at least ¼ cup of the cooking liquid. Rinse the pasta under cool running water. Return the pasta to the pot off the heat. Heat a medium-size skillet over medium heat. When hot, reduce the heat to mediumlow and add the pine nuts. Toast, stirring often, until the pine nuts are fragrant and golden, 2 to 3 minutes. Transfer the pine nuts to a small food processor (or bullet blender). In the same skillet, heat 1 tablespoon of the avocado oil over medium heat. Add the zucchini and cook, stirring occasionally, until softened, 6 to 7 minutes. If the zucchini is browning too quickly, reduce the heat to medium-low. You want the zucchini soft and

golden, not crispy and brown. Season with ¼ teaspoon of the salt and some pepper. Transfer the zucchini into the food processor with the pine nuts. Wipe the pan clean. To the food processor, add 2 tablespoons of the avocado oil, the nutritional yeast, the remaining ½ teaspoon salt and the pepper. Blend until smooth. It will be very thick at this point. Set aside. In the same skillet, heat the remaining 2 tablespoons avocado oil over medium-high heat. Add the mushrooms and fry, shaking the pan occasionally so they don’t stick, until golden brown and almost crisp on one side, about 4 minutes. Turn the mushrooms over and fry for 2 more minutes until golden brown. Sprinkle with a generous pinch of salt, more pepper and the thyme. Add 2 tablespoons of the reserved pasta cooking liquid to the sauce. Mix together to loosen up the sauce. (I like to blend with an immersion blender.) Toss the sauce with the pasta. If the sauce looks too thick, add more pasta cooking liquid, 1 tablespoon at a time, tossing after each addition, until the sauce coats the pasta well but is not runny. To serve, divide the pasta among shallow bowls and top with the mushrooms.

Coconut or olive oil, for greasing the pan Zest and juice of 2 lemons 1 (13.5 oz/398 ml) can white beans, rinsed and drained ⅔ cup pure maple syrup ½ cup extra-virgin olive oil 2 tbsp unsweetened oat or soy milk 1 tbsp pure vanilla extract ¼ tsp almond extract 2½ cups almond flour ½ cup gluten-free all-purpose flour ¼ cup ground flaxseed 2 tsp baking powder ½ tsp salt
Preheat the oven to 350°F. Grease an 8-inch (1.2 l) round cake pan with coconut oil; line the bottom with parchment paper. In a high-speed blender, add the lemon zest, lemon juice, white beans, maple syrup, olive oil, oat milk, vanilla and almond extract. Purée until smooth, 1 to 2 minutes. In a large bowl, whisk together the almond flour, all-purpose flour, flaxseed, baking powder and salt. Add the wet ingredients to the dry ingredients and stir to blend. Pour the batter into the prepared cake pan and smooth the top. Bake for 45 minutes, until the cake is lightly golden on top and a toothpick inserted LEMON OLIVE OIL CAKE into the centre of the cake comes out clean. A bit of cracking is normal. Let the cake cool in the pan for 10 minutes. Invert the pan over a
plate and tap the bottom to dislodge the cake. Transfer the cake to a rack to cool completely before slicing. Store loosely covered on the counter for up to 4 days.
