SYDNEY COMEDY FESTIVAL

A man who needs no introduction, comedy master Jimeoin, will be performing his show Is It…?! at the Sydney Comedy Festival this year for one night only on May 1 at The Enmore Theatre. Editor, Hilary Board, caught up with the busy Irishman to find out more.

You started out in comedy while backpacking in Sydney about 25 years ago… What was the trickiest thing for you to learn in those early days? Learning to speak a type of English that people could understand. In fact, I still struggle with that. I think my accent is getting worse. It was an advantage on stage as well, I found, as people had to listen in order to understand you. Most comedians have to deal with heckling at some point in their careers… What’s the best or worst heckle you’ve encountered and how did you deal with it? In East London I came on stage and did a bit that always works well early, which was about the audience having “their teeth out waiting for the next joke”, when – without missing a beat – a guy shouts out “waiting for the first joke, mate”. He got a big laugh. I mimed removing a hat from my head. He never said another word for the rest of the night. Pure quality. In and out.

“I think my accent is getting worse [but] people have to listen in order to understand.” The world was deeply saddened to lose comedy greats Robin Williams and Joan Rivers last year. Did you know either of them? I saw Joan Rivers at the Edinburgh Fringe [Festival] a few years back and was totally shocked at her face lift. [It was] great to see a comic still doing stand up and going to places like Edinburgh though. But she got to a good age. Robin Williams I never met, but it was very sad, as he too was a stand up. But, at the end of the day, [he was] just human. What do you love about the Sydney Comedy Festival? I like it because it’s in Sydney. I like Sydney. I go to the beach even if it’s winter. Game of Thrones will be on then – fantastic! We last saw you on our TV screens in July, when you hosted The Full Brazilian for SBS during the FIFA World Cup. Do you have any more plans for TV this year here or in the UK? I’m always up for doing a bit of TV, as it’s good for your stand-up crowd. I’m heading back to the UK in June to do a TV show and then again for the Edinburgh Fringe [Festival]. It never stops. Thank god! True! All the best, Jimeoin.

NIGHT

enjoying free drinks and dinner, and hearing our fantastic sales rep’ and MC, Ron, announce the three major prize winners, everybody had a great night. Both our customers and our suppliers aren’t shy in saying that ours is the best Trade Night they have ever attended! Your store supports breast cancer research and you held a collection for the cause at this year’s Trade Night. How much did you raise? This is the first year we have done anything like this and we are so glad we did! Our tradies and suppliers dug deep and gave so generously. Our total amount raised on the night reached into the thousands! What other fundraising activities do you do?

In mid March, Kingsford Timber Mitre 10 at Matraville, NSW, held their popular annual Trade Night, renowned for its free BBQ, e drinks, entertainment and supplier giveaways. Organiser Mare . Salter spoke with editor, Hilary Board, about this year’s event First up, can you give us a bit of background on Kingsford Timber’s annual Trade Night event? The Trade Night has been running for more than 20 years now and we have watched it evolve and grow into the huge event it is today! It’s a chance for us to give back to our tradies and suppliers, enable them to talk one-on-one and make sure everybody has a fantastic night in the process. How did the event go this year? It was a huge success! While numbers were down a little [Mitre 10 typically has more than 400 trade customers and 40 suppliers attend each year], sales were through the roof. What prizes did you have up for grabs?

ISSUE 17 // APRIL 2015

What were some of the responses from attendees? Veteran attendees know what to expect from our annual Trade Night and this year was no different. People were expecting a big night and they weren’t disappointed! Between riding the mechanical football,

Kingsford Timber Mitre 10 holds fundraiser barbecues every Saturday and Sunday. Different charities and organisations are allocated a day to host the barbecue, with everything they need supplied, and they take 100 per cent of the earnings on the day. As well as this, we have also been involved with a lot of primary schools over the years – supplying and building small vegetable gardens. This is a great opportunity for our garden guru, John, to teach the kids about growing and maintaining a healthy garden.

Do you have any other in-store events coming up in the next few months? We have Trade Breakfasts once a month, where a supplier gets one-on-one time with our tradies to promote new products and get feedback on what’s happening in the industry. CAN’T

BEAT The Tradie’s editor, Hilary Board, caught up

with Blundstone to find out more about this proud Aussie brand and its quality range of boots. boots are – quite possibly – the most durable, most comfortable ever made. Built tougher than they need to be, they reflect the place they are from. There is no place on earth like Tasmania and no boots on earth like the ones that were born here!

Q

What’s new, improved and proving popular of late?

A

Q

Tell us a bit about Blundstone’s origins and growth.

A

Back in the 1870s, a couple of cobblers started up a shoe business in Hobart. A few years on, one of the cobblers bought out the other one but decided to keep the name for the business. That name was Blundstone. Today, Blundstone continues to expand around the globe, selling in more than 50 countries across five continents. But despite growing to become one of the world’s most recognisable boot brands, we remain 100 per cent Tasmanian-owned and retain our family values. The company headquarters are in Hobart, which houses a gumboot factory as well as our product 12

design team, quality control, logistics, sales, marketing and communications, management, finance, administration, human resources, IT and customer service teams. Production facilities have been expanded to cater for increased demand, and we currently manufacture our leather footwear in Vietnam, India, China and Mexico.

Q

Which are your core products?

A

Blundstone is famous for the iconic elastic-sided boot, but we make a large range of footwear, including heavy industrial safety boots, general leather safety boots and work boots, school shoes, gumboots and our Urbans range, selected from our most popular international styles. Blundstone

www.thetradie.com.au

People have really taken to the Urbans range in a big way, and you can check them out online at www.blundstoneurbans. com. Overseas these styles have largely been responsible for a trebling in international sales. Our award-winning 980 Underground Mining Boot brings a host of world-first innovations to a workforce exposed to arguably the harshest conditions of any work environment. Working in close consultation with the miners themselves, we created a new-generation product that provides high levels of ankle support and stability while being extremely comfortable and fully waterproof. The boot offers a range of world-first features that haven’t been used before in this environment. And, of course, we’re always developing new products to keep at the forefront of safety and innovation. For example, our leather steel-toe skater shoe (Style 750), our steel-toe canvas hi-top

boot (Style 755) and the new hiker styles (317 and 318).

Q

Why are your boots the best choice for tradies?

A

First of all because they’re comfortable, safe and tough. Backing up our boots is a manufacturer’s warranty and a comfort guarantee. Second, because we reckon they look good too. Whatever your job, we have a Blundstone boot for you.

Q

How does Blundstone support the community and the environment?

A

As a family company, we have a strong commitment to our local community and sponsor many events – from small school quiz nights to naming rights sponsor of the world-class Blundstone Arena in Hobart. Further afield, we have a solid record for donating to emergency relief efforts for bushfires, floods and earthquakes. We maximise our use of recycled and recyclable materials in our manufacturing and packaging, and minimise the use of raw material, chemicals and fossil fuels. In 2011, we became signatories to the Australian Packaging Covenant. See blundstone.com for more.

cutting depth of up to 170 millimetres and add to the long list of applications the Arbortech AS170 can manage. The XL General Purpose blades have been re-envisioned to handle tough, deep bricks and cinder-blocks, also known as cement-blocks. The XL General Purpose blade’s 34 mortar-cutting tungsten-carbide teeth produce the most aggressive and powerful cutting action to date from the Arbortech AS170. While the XL Woodworking blades make the AS170 the only small handheld saw capable of cutting nearly seven inches deep to chop and shape large logs and timber in ways that a conventional chainsaw never could. These XL blades are custom-tailored for specific applications, but thanks to cutting-edge engineering and machining, they can be used in a variety of construction and restoration applications – such as composite cutting – to deliver safer, more controlled cuts than traditional circular saws and diamond blades. What other blades are there? For re-caulking and waterproofing jobs between concrete slabs and tilt-ups, the new Caulking blades are far and away the fastest and most powerful option for the professional contractor. A collection of three distinctly sized blades, these tungsten-carbide toothed blades provide the fastest method to cut any standard joint from ¼ of an inch all the way up to two full inches wide. The same power used to cut a brick in half is being reassigned to cut a soft silicone material, cutting both sides of the joint while scraping and prepping the inside of the joint for re-caulking, all in one time-saving power-driven motion.

This month The Tradie got the lowdown on Arbortech’s award-winning AS170 Brick & Mortar Saw Who and what jobs would this saw be ideal for? The AS170 Brick & Mortar Saw is made for any mason, preservationist, or waterproofing contractor. It aims to be the multipurpose tool of the masonry and construction world, with a growing collection of blades available to choose from. Whether you are replacing cracked, chipped or discolored bricks, re-pointing standard-width and narrow joints, or masonry cutting in general, the AS170 has you covered. How does it perform? It features a patented orbital cutting motion, employing a set of powerful alternating tungsten-carbide toothed blades. This unique cutting action allows larger, pebble-sized particles to escape, which either fall to the floor or are 16

ISSUE 17 // APRIL 2015

suctioned through the vacuum attachment and dust boot, thus enabling the saw to be used indoors and in enclosed areas. This “limited airborne-particle” technology is what so many users have come to appreciate. How’s the power? Since 2010, the Arbortech AS170 has featured a new 13-amp motor, with 70 per cent more power than the previous model. It now boasts 1250 watts. The saw also includes a vibration-reducing handle, for user comfort. What’s new and improved? Painstaking research and design – along with the saw’s new power – have allowed the development of two powerful new blades: the XL General Purpose and XL Woodworking blades, which have a

www.thetradie.com.au

How easy is cleaning and maintenance? The saw uses many features to help you maintain your unit, including a built-in dust-clearing centrifuge, automatic cut-off brushes (to prevent motor damage), and slip-resistant synchronous belt. What’s the warranty? The saw itself is backed-up by a 12-month limited warranty, guaranteeing you a long-lasting construction-grade tool. Does it come with a carry case? It comes as a full kit in a heavy-duty, extra-large, black nylon storage bag. It includes three sets of the most popular masonry blades at no additional charge: the General Purpose blades for large cuts, Plunge blades for individual brick removal, and Head-Joint Blades for tuck-pointing. It now also includes the new Caulking blades for a variety of applications. And the price? $990. See www.as170.com for more information.

LET’S HEAR IT

! s l r i g e h t r o f ABS statistics from 2012 showed that fewer than 2 per cent of construction, automotive and electrical tradespeople were women. But faculty manager Pat Vella, from the Northern Sydney Institute (part of TAFE NSW), believes that times are changing and the number of female tradies is set to rise.

Women are increasingly recognising the benefits of learning a trade,” Pat said. “The opportunities are endless, particularly in construction, engineering and mining. And they can earn higher salaries sooner, with apprentices taking home 20 per cent more than other non-professional occupations. “Women are also ideally suited to many trades, particularly if they have an eye for detail, enjoy problem-solving and working outside an office environment. They are uniquely-placed to run their own business.” Employing women would also assist employers in meeting the demand for specific trade skills, an issue which is becoming more prevalent. There are several examples of young female trailblazers who are showing that becoming a tradie is financially and personally rewarding. Northern Sydney Institute student, Karla Hayward, knows the value of learning a trade. She is currently completing a building licence in Certificate Four. She said she had a female teacher and believes being a tradie is no longer a male-oriented job. Karla is aspiring to one day build her own house. Ruth Wilson is also learning a trade at the Northern Sydney Institute. Having completed a bachelor degree majoring in international law and criminal justice studies, Ruth realised that her ideal career was not in the legal profession. Instead, she began an apprenticeship to become an electrician. “I would definitely recommend the electricians course,” Ruth said. “My experience has been nothing but positive. Both students and teachers are friendly and supportive.” See www.nsi.tafensw.edu.au/

ONWARDS AND UPWARDS

Strange Habit #1: Create an External Brain Where do you store all your great ideas, lists, projects or tasks? For many people it is a combination of: scraps of paper, in their head, on their phone, on a whiteboard etc. To encourage your “real brain” to be its most creative, responsive and inspired, it needs to be free of “clutter”. Create a place where you can put all this clutter in an organised fashion, so it can be easily found when required.

and energy. In fact, the majority of “to do” lists are never ending. Try creating a list of activities that no longer serve you or your business. One by one, look at ways to delegate, outsource, or stop doing. These could be as simple as: stop solving other people’s problems for them; or stop checking emails first thing in the morning. You will be surprised by the number of activities that are robbing you from being your best.

I recommend an app’ called Evernote. Evernote can be synced between your smartphone, tablet and the web, so wherever you are you can add information. It can be categorised and tagged, so you can search for information easily in the future. You can also add web links, photos and audio recordings. This way you will never have to remember where all your ideas are, just act on them!

Strange Habit #4: 30-60-Minute Walks Steve Jobs loved doing walking meetings, while Nelson Mandela would walk for entire days. There’s just something magical about the habit of walking. It’ll give you time to think and ideate. You’ll kick-start your creativity and multiply your innovation and productivity. Your moods will elevate as your endorphins are released. After studying many of the creative masters, walking has definitely been a game-changer, especially at the end of a productive day.

Strange Habit #2: Use a Timer For the times you schedule to do your “creative work”, set aside blocks of uninterrupted and unplugged time to achieve specific outcomes and results. It has been scientifically proven that working in 60-90-minute bursts of intensity yield the best performance. Use a countdown timer on your smartphone to heighten your awareness about the passage of each chunk of time. You will be amazed by what you can accomplish! Strange Habit #3: Create a “Not To Do” List For many people, “to do” lists consume time 22

ISSUE 17 // APRIL 2015

Strange Habit #5: The Weekly Triple R: Review, Reflect and Respond Once a week (a regular timeslot works best), set aside an hour to review the past seven days. In the Review step, ask yourself: 1. What worked? 2. What was missing that, if present, would have made a difference? 3. If I could have the past seven days over again, what would I do differently? The Review step also sees you revisit your

annual one-page plan, reconnect with your top five values, and look at what has helped or hindered you with any progress you had planned. In the Reflection step ask yourself, “How am I performing?” Look at all the areas of your life where you play a key role, such as: • Business owner • Leader • Parent • Life partner • Friend Be honest with your commitment and input and ask, “What can I do in the next seven days to improve in these areas.” Finally, the Response step considers your commitments for the next seven days. Schedule in your key results-producing activities, such as your workouts, client interaction times, family meals and planning sessions etc. Also, look at what new habits you will introduce to take your game to another level. These five habits are not that strange to some of the most successful people on the planet. It’s how they live. Look for ways to introduce some habits into your life that will have you focusing on less with greater impact. This article was provided by the National College of Business. A

s a manager or business owner, what is your definition of leadership? Typically, people say:

authority? The “old” style of

them.

When you look at all these definitions, one word sums them all up: influence. Leadership is influence – nothing more, nothing less.

A POSITIVE INFLUENCE Do you aspire to be a better leader? Here are some tips from the National College of Business.

There are certainly times when the influential leader will need to guide and direct team players on what to do. However, they also realise that

Influence can be either positive or negative. Some of the world’s leaders over the past 1000 years have influenced people in negative ways. During World War II, Adolf Hitler was a very well respected leader by his followers – as well as his opposition. But how he influenced his countrymen to behave has been described as one of the most horrific acts of inhumanity ever known.

this is a short-term activity and ultimately the goal is to empower people to make the best choices, so that their influence grows and the leader is no longer required. Examine your various roles and ask yourself, “What influence am I having on the people in my life, and how can I improve that every single day?” See www.collegeofbusiness.

THE KEYS TO THE BANK This month “the tradies lawyer”, Peter Murphy, explains that careful consideration must be given to applying Power of Attorney.

L

ast week I was bailed up at my early opener in Sydney by a young lady, who told me that she is in a de-facto relationship with a local tradie, who is going overseas soon. The couple were worried about how to operate the business while he is away and – more importantly – negotiate the purchase of a property she has her heart set on, using his money. The pair do not have a joint bank account – which is nothing unusual – but, in some circumstances, not pooling their funds may tell against them as being in a de-facto relationship. (But that is another matter.) In these areas of the law, where one party acts with the instructions of the other, a strict “fiduciary relationship” is said to exist. In other words, the law places a major onus on people doing the right thing and being honest, and there are heavy penalties for any irregular,

24

ISSUE 17 // APRIL 2015

fraudulent or dishonest actions under the relevant legislation. So what can we lawyers do to help my tradie client’s girlfriend conduct the purchase of a property while he is overseas? We use what is known as a “Power of Attorney.” This is a document to be given with extreme care and under the complete understanding that – once signed over – it can be used to literally “plunder the till”, so beware! In my client’s case, I suggested that as he is going to be overseas for a while, he should avoid placing too many constraints on his girlfriend’s operation of his trading account, but restrict her ability to operate his savings account. This suggestion was not satisfactory to the girlfriend however, who explained that she may need to place a hefty deposit on the property if successful at the auction. Clearly the girlfriend wanted to have much more control of the purse strings, and I sensed that there was some tension in the discussion of this arrangement. We tossed around a few other suggestions, including putting some funds into my solicitor’s trust account, but my tradie client’s view of solicitors and their trust accounts was not that inspiring. In the end I drafted some restrictions into the Power of Attorney document in regards to amounts able to be withdrawn, accounting procedures and some other checks and balances. But, as I told my tradie client (who was visibly anxious by this

www.thetradie.com.au

time); once his girlfriend has the signed piece of paper, he has lost control – despite the restrictions. I suggested that I convert the ordinary Power of Attorney into what is called an “Enduring Power of Attorney” – a document that lasts regardless of the (later) mental or physical condition of the person giving it. To achieve this conversion, I carefully explained the effect to my client, complete with “war stories”, so he was fully aware of the dangers. My client did not want the Power of Attorney – however enduring it may be – to be used until he had left Australia, so we made that amendment and I signed the certificate under the Power of Attorney Act (as required by the legislation), and his girlfriend signed her consent to act on his behalf once he left the country. But there were more complications, as you cannot make use of any Power of Attorney if property is to be involved without it being registered at the Land and Property Information (the old Land Titles Office). More money to spend! As the happy couple left my office, I could hear them arguing all the way down the road! Perhaps he was right not to be so open-hearted and view the arrangement with suspicion. You read so many stories about defacto and other relationships and division of property. Who said money brings happiness! See petermurphyassoc.com.au for more information. T

CONTACT

Over the past few issues, we’ve been profiling a number of tradies and sharing their stories in conjunction with TradieExchange.com.au. This month we go behind the scenes to find out more about their fast-growing network and how it can help you get ahead.

T

radieExchange’s marketing director, Aroha Blake, has been working with the company’s network of builders, tradies and suppliers across Australia over the past few years. “Tradie Exchange is basically a contact book specifically for the trade,” she explained. “It’s a place where tradies can find, refer or pass on the details of trusted contacts and businesses quickly and easily, and save them to their contact book. It’s an alternative to Facebook (which can be a lot of fun but leave you wondering why you’re on it!), and LinkedIn (which is widely used by office workers to connect with each other). To take it that one step further, we’ve also added a Jobs Board and Trading Platform, where tradies can post items to buy, sell or swap. “When we first started in 2011, we had a team from across the trade who told us that they love getting on the tools – and the physical nature of the job – but often face difficulties running their business. A key challenge for them was securing jobs, especially when you’re in the middle of a job but then need to look ahead to lock in the next one. A big element that comes into play here is ‘who you know’ – getting referred or working in teams. And that means you’ve got to network and keep connected. “People want to find and work with good people and then recommend them. What we’re doing is providing the platform on TradieExchange.com.au for people to connect and post jobs or items to buy, sell or swap. It’s much easier to do this with a network of peers and an expanded contact book.” If you’d like to find out more about the Tradie Exchange network, see www.TradieExchange.com.au or give Aroha a call on 0411 489 360. It’s free to create a profile so why not give it a go! T

FIGHTING FIT

ARE YOU

STRONG ENOUGH? An important aspect of your health is strength. Testing and training your strength is just what your body needs to fight the loss of muscle, bone mass and strength that happens as you age. No matter how young or old you are, you should be doing some kind of regular strength training. By: Steve Roberts

S

trength training can be at home using your own equipment, at the local park, or in the gym. Resistance bands and balls, small hand weights, water and even your own body weight can be used as resistance when looking to achieve healthy levels of whole body strength. Test yourself first using these five bodyweight strength tests (below), then check the normative scoring table to see how you compare against others in your age group. If you are “below average” or “poor”, it will tell you what you need to improve on.

For tips on how to train and boost your strength, tune into the next fitness article in The Tradie’s May issue.

Procedure: Grasp the overhead bar using an underhand grip (palms facing toward the body), with arms fully extended. Raise your body until your chin clears the top of the bar, then lower again to a position with the arms fully extended. Chin-ups should be done in a smooth motion. A jerky motion, swinging the body and kicking or bending the legs are not permitted. Do as many full chin-ups as possible. Scoring: Record the total number of correctly completed chin-ups. Then see the normative scoring table.

2. SEVEN-LEVEL ABDOMINAL STRENGTH TEST

Aim: To measure upper-body strength and endurance without compromising the shoulder joint or muscles in this area. The objective of the test is to hang with the chin above the bar for as long as possible. Equipment: Stopwatch, horizontal overhead (pull-up) bar.

Aim: To measure upper-body strength.

Procedure: (See the QR code for this test.) Lie on your back with your knees at right angles and feet flat on the floor. Attempt to perform one complete sit-up for each level, starting with level one. Each level is achieved if a single sit-up is performed in the prescribed manner, without the feet coming off the floor.

Equipment: A horizontal overhead bar at an adequate height, so you can hang from it with arms fully extended and feet off the floor.

Procedure: The grip is with both palms facing away (underhand closed grip) from the body. The starting position is with the chin above the bar, and both feet off the ground. You can reach the starting position by standing on a support or assisted by others – if necessary. The timer is started when the body is in position and does not stop until one of the following occurs: the chin touches the bar; the head tilts back to keep it above the bar; or the chin falls below the bar.

Scoring: There are seven levels ranging in difficulty from very poor to elite. The highest level sit-up correctly completed is recorded.

Scoring: Record the total time hanging in the correct position, then see the normative scoring table.

Aim: To measure abdominal strength. Equipment: A flat surface, 2.5kg and 5kg weights, a results sheet and a pen.

4. SQUAT TEST Aim: To measure lower-body strength. Equipment: A chair. Procedure: Stand in front of the chair with your feet shoulder-width apart, facing away from it. Place your hands on your hips or out in front. Squat down and lightly touch the chair before standing back up. A good-sized chair is one that makes your knees at right angles when you are sitting. Keep doing this until you’re fatigued, or until your reach 60 seconds. Scoring: Record the number of squats achieved, then see the normative scoring table.

7 Stage Abdominal Strength Test

FlexedArm Hang Test

5. DYNAMIC PUSH-UPS TEST Aim: To measure upper-body strength. It is great for building your chest, triceps and core. Men should use the standard “military-style” push-up position, with only the hands and the toes touching the floor. Women have the additional option of using the “bent-knee” position. To do this, kneel on the floor, hands on either side of the chest and keep your back straight. Do as many push-ups as possible in one minute. Count the total number of pushups performed. Equipment: Floor mat, cones and stopwatch. Procedure: Start in the push-up position: with the hands and toes touching the floor, the body and legs in a straight line, feet slightly apart, and the arms shoulder-width apart, extended and at a right angle to the body. Keeping the back and knees straight, lower the body until there is a 90-degree angle at the elbows, with the upper arms parallel to the floor. Do as many as you can in 60 seconds. Scoring: Record the number of correctly completed push-ups that were performed in time to the rhythm. See the normative scoring table.

Fresh is best To lose weight, control your appetite, boost energy and improve your skin, eat plenty of fresh produce and wholegrains. Reduce your consumption of caffeine, sugars, fatty and salty foods as they can fuel stress within your body.

Avoid eating when stressed The stress hormone Cortisol can prevent digestion, impact the stomach’s acidity levels (preventing nutrient absorption), and make you more inclined to choose unhealthy food and overeat.

Eat mindfully Are you depressed and binge eating? Practising mindful eating can help. Mindful eating is a mind-over-matter technique where you think more carefully about the food you’re eating, one mouthful at a time.

SCALE

IT BACK Keen to lose some weight? Swap the all-or-nothing approach for some healthier choices that ultimately reduce calorie intake.

Try to stop yourself eating food just because it’s in front of you, and start eating when your body actually needs nourishment. Each time you’re about to dip into a packet of chips, biscuits or a chocolate bar, put your hand on your stomach and ask yourself, “Am I really hungry?” If you answer yes, opt for a healthier snack, such as sweet potato fries. As you take each bite, think about what it is that you’re eating and how it is benefiting your body. Master the art of mindful eating with these tips and tricks: • Take the time to chew your food. Try chewing at least 20 times between each mouthful. • Put down the utensils every time you take a bite. This will encourage you to check in with your body and be more aware of your eating habits. • Slow down and stop when you’re full. • Think about how you’re feeling while you’re eating the food.

By: Belinda Crestani Don’t skip breakfast When it comes to sustaining energy, skipping breakfast is not an option. Having a good breakfast is key for balancing blood sugar. Say goodbye to those sugary cereals and aim to include a protein component to help slow down any sugar release in the body.

Fill up on protein Ensure all meals and snacks include some good-quality protein to prevent bloodsugar dips (think nuts, seeds or goat’s cheese). Rice protein powder also makes a great protein addition to smoothies, soups and drinks.

Alkalise your body Aim for a variety of organic alkalising seasonal vegetables with plenty of

28

ISSUE 17 // APRIL 2015

greens. Most non-starchy vegetables give nourishment without creating blood-sugar spikes.

Eat like a rawkstar Include raw foods in your diet. They are bursting with energy and enzymes that are largely destroyed during the cooking process. Eating raw foods means the body doesn’t have to use a lot of energy to produce enzymes for the digestive process, resulting in more energy for daily activities. A good way to introduce a raw component to your diet is by having a green vegie juice as a snack. Green juices have a very low glycemic load and won’t spike blood-sugar levels. Add superfoods such as chlorella or spirulina, and you’ll get an additional protein boost.

ROAST PORK

AND APPLE

This tasty dish is from the head chef at Brisbane’s Stokehouse Q restaurant, Richard Ousby. Serves: six For the roasted apple marinade Ingredients 25g cumin seeds 5g black peppercorns 85g red wine vinegar 300g honey 40g vincotto 10g fish sauce 90g extra virgin olive oil 4 Pink Lady apples, peeled and halved Directions Toast the cumin seeds over a medium heat until fragrant, then remove from heat. Grind the cumin with the black peppercorns until very fine. Add these ground spices and all the remaining ingredients (except the apples) to a medium pot and bring to the boil. Chill in the fridge, then use to marinate peeled apple halves. Place the apples and liquid in a roasting dish. Put in the oven at 180C and

bake for 20–25 minutes until slightly softened but not mushy. For the pork rump Ingredients 1 pork rump trimmed (approximately 1.2kg) 100g table salt Directions Score the pork by cutting long, shallow cuts across the skip (a clean Stanley knife, with the blade a quarter out, works well). Sprinkle the table salt in a plastic container. Place the pork skin side down into the salt and place in the fridge overnight. The next day, wash the salt off the skin and pat the pork dry. In a pan (on low heat), put the pork skin side down and cook until the crackling starts to form. Keep an eye on it, as it can burn easily. Low and slow is the safest option. Flip the pork over and

turn to high heat and colour the other sides. Place on an oven rack and roast at 180C until the core temperature is 40C. Remove from the oven and rest the pork for 20 minutes (do not cut it just yet). Flash it back in the oven to warm up. Slice into big pieces and serve with the roasted apple marinade and a light salad. See www.stokehousebrisbane.com.au

Nuts&Bolts INDUSTRY NEWS, MUSIC, MOVIES AND MORE...

HELP VANUATU REBUILD Vanuatu’s infrastructure was decimated after category five Cyclone Pam hit the region on March 13. In the capital, Port Vila, it’s estimated that up to 80 per cent of all buildings were damaged or destroyed and 65,000 people across the island have been left homeless. The Australian charity Habitat for Humanity has sent staff to Vanuatu to assess the situation and play a lead role on the disaster response operation. Based on funding availability, the response will follow Habitat’s model of assisting affected communities with housing solutions, ranging from emergency shelter interventions – such as shelter kits – to permanent home reconstruction. If you would like to donate to Habitat for Humanity’s disaster response appeal or find out about volunteering, see habitat.org.au.

NSW MINING JOBS The NSW Government’s approval of a new Development Consent will allow Rio Tinto Coal Australia’s Bengalla mine to continue mining until 2038. Stewart Butel, managing director at Wesfarmers Resources (which has a 40 per cent interest in the mine) said, “This is very good news for the workforce of 400, their families and the local community. We have been an integral part of the Muswellbrook [NSW] community since operations began 16 years ago and we look forward to continuing this into the future. Importantly our future operations at the mine will move further away from Muswellbrook on land already owned by Bengalla and Coal & Allied.” The new Development Consent provides the potential to increase employment in the future, should a decision be made to expand production to the maximum approved limit of 15 million Run of Mine tonnes a year. The operation is managed by Coal & Allied, part of Rio Tinto Coal Australia. See riotinto.com

Dinner Club

Dynamics

Keeping in contact with old friends is important but can often prove tricky to coordinate. Here, Tammy Gosling shared her experience, along with the clever method she and her friends devised to ensure they remained close.

C

onfucius once said, “With coarse rice to eat and water to drink, man still needs his friends to really enjoy a restaurant meal.” OK so Confucius wrote the first part of that quote and I added my own wisdom to the end of it because I can tell you that no matter how coarse the rice or how watered down the liquor in my experience, eating out with friends is always an event. The experience I speak of relates to another wisdom that doesn’t need a quote from an ancient Chinese guy to be obvious. If you have friends but can never get the timing right to see them, there’s a danger that friendship will ultimately pass away. Three years ago, my husband and I finally got together for dinner with another couple who are dear friends of ours. It had been so long since we had seen them that the night started out with a few of those uncomfortable silences that tend to occur when you can’t think of where to start because there is just so much to say. 32

ISSUE 17 // APRIL 2015

It was easier to latch on to the dining experience we were participating in right then instead, so we started talking about the service, the cost, the menu selection, the mood of the restaurant etcetera. Each of us had an opinion, each of us had praise or criticism for different aspects and the conversation buzzed. It was fun, it was specific to just us and open to controversial opinions and collective agreements. We loved it and decided to each rate our individual experience out of 10 (with 10 being the highest score) and – most importantly – book our next dinner right then. Just like that our friendship was resuscitated with an injection of common ground.

because a definition of what constitutes a “suitable venue” still needs to be established.

Scheduling the next date before saying goodbye became one of the rules of engagement for our fledgling “dinner club”. Some rules hardened, while others continue to fade in and out. Today, after three years and 36 successful dinner dates, there are three hard rules that we would list in our constitution, if we had one.

But you can’t have scores without totals and you can’t have totals without winners. In 2013 the Aussie cricket team brought home the Ashes, and one couple’s obsession with cricket resulted in the creation of the “dinner club Ashes”. This led to the burning of a menu from the first restaurant we visited, with the ashes reverently collected in a non-ostentatious receptacle (known as the “cup”) and held at the home of the highest point scorer for 12 months.

1. Monthly choice of restaurant allocated to individuals on a rotating roster. 2. The person who chooses the venue picks up and drops off the other couple. 3. A venue is not revisited by the dinner club. The dinner club is flexible on the rule of four-week intervals, as sometimes it is just not possible to get a date that fits. There is also some flexibility regarding the rule of “nondisclosure of venue”, as notice of unusual expense or distance is appreciated. The rule of “no fast-food venues” is yet to be tested,

www.thetradie.com.au

Over three years, 36 restaurants equals a total of 144 individual scores (36 x 4 people). But if you are wondering what the scoring criteria is, let me tell you about the seven deadly dinner club sins. Points are lost according to noise, distance, lack of menu choice, bad service, expense, presentation and ambiance. Our highest score so far has been 35 (a wonderful Japanese BBQ restaurant), while the lowest was a humiliating 11 (a local football club). These – and all the numbers in between – have provided us with wonderful memories, plenty of discussion and so much laughter.

The competition gradually warms up through the year. Points before June are tossed around with wanton abandon but points after June are seriously considered and strategically justified. At the moment the precious 2014 Ashes “cup” is in our house. And I want my husband or I to win the cup again for 2015. I think Confucius may have also said that if man can’t bring home the Ashes, he better get out of my kitchen!” T

WHAT A JOKE! WIN! This month we laughed along with Queenslandborn stand-up comedian and former roof tiler, Carl Barron.

My friends like to tell me before they fart, like it’s important. They get really excited, like I wanna know about it. “Jeez I’m gonna fart.” Or they tell you after they’ve done it. “I just farted.” But nobody ever tells you while they’re doing it. That’d be a bit weird going, “I’m farting! (Pause) Still goin’!” Do you ever tell flies to f--k off? And then, if that doesn’t work, you start getting really emphatic, “Oh f--k offfff! Do you ever threaten them? “F-k off or I’ll kill ya!” The other day I was asked by a waitress, “Would you care for an orange juice?” So I said, “If it needed me. Is it going to be all right?” The other day, I saw a bloke talking to himself. I tried to listen but I couldn’t hear him. But the weird part is, while I was watching him I was going, “That bloke’s bloody talkin’ to himself over there.” Then there was another bloke looking at me going, “That bloke’s bloody talkin’ to himself over there!”

You can’t blame being late on the traffic. What a shit excuse that is. “Man, I went out on the road and there were all these friggin’ cars out there!” I hate asking for directions... Especially when you get one of those really enthusiastic buggers who put things in that don’t even have to be there. “You’ll see this big brown church on the corner. Don’t turn there.” Too late, it’s already gone in... Brown church: turn there. Have you seen that sign: “Koalas cross from 4pm to 6pm”. That’s pretty precise for a koala! I hate going on dates. I sit at home all day and I don’t fart once. But I go on a date and I’ve got 20 in the bank straight away. Do you ever look in the mirror and think “thank f--k for clothes?” I know I’m getting old because I’m starting to get excited about tea! And then start feeling a bit depressed when it gets to the bottom.

What’s the biggest challenge? My biggest challenge is to switch off. [I’m often] waking up in the middle of the night thinking of that phone call I didn’t make or that detail that’s just not right. People who own their own businesses will be nodding collectively, I’m sure!

Q A

What is your trade? I’m a carpenter by trade but my subbies all have a laugh if they see me go near a tool! I keep telling them I’ve still got it but they aren’t convinced. My role these days is to co-ordinate my subbies and suppliers and check on the progress of each project.

What’s your favourite element? Working at the coal face and not being chained to a desk. Another favourite element is the banter that happens on a job site. I have some real characters working for me! A happy job site is a productive one when everyone works together. It makes going to work enjoyable.

Q

What service does your business, Sanctuary 28, provide? Sanctuary 28 has a long history in the individually designed home building market, but we recently completed some commercial projects. We would like to continue with our core business but look for more opportunities in the commercial world.

What are your biggest achievements to date? We have been very successful in winning industry awards for our homes but a happy client tops that. We have clients who we have built for twice, and we are building a third house for one client at the moment. I also get satisfaction from the fact I have long-term staff and subcontractors. I truly appreciate their loyalty.
