The Leitlhof

­Leitlhof has grown over time. It now extends from the west wing all

Winter in 3 Zinnen Haunold next door — The Haunold ski area is an intimate and friendly ­resort at an altitude of 1500 ­meters. A 4-­person chairlift located directly in the center of San Candido whisks skiers right to the top.

Winter hiking on ­Stiergarten — Stiergarten offers an easy ascent by cable car. Once you’re at the top, the only tough part follows: choosing a route from the vast network of groomed winter hiking and snowshoeing trails.

Riese Haunold ­mountain inn — If you like South ­Tyrolean cuisine, Riese Haunold is the place to go. The inn’s interior is adorned with beautiful old wood and has the most charming ­atmosphere.

An interview with our chef Markus Auer on Dry Aging, light autumn dishes and a fully stocked pantry for winter.

What makes dry-aged meat so special? — Dry-aged beef has a fine, slightly nut-like flavor to it. The long aging process makes it very tender.

Which meat is used for dry-aging at ­Leitlhof ? — For our dry-aged steaks, we use ­premium meat from local Angus cattle, which we raise at our ­Mühlhof farm or buy from regional farmers.

How long does the process take? — Aging takes about six to eight weeks. That’s a long time to wait for a perfect piece of meat, but “It’s clearly worth it,” says Markus Auer.

How does dry aging work? — Dry aging lets the meat mature under ideal temperature and moisture conditions in a special humidity-­ controlled room.

1 — This lime green risotto is a signature dish of Markus Auer’s light and healthy ­cuisine. It is refined with mountain pine butter and topped off with apples. “This ­creates a light ­freshness,” explains the chef. What are your autumn and winter specialties? — We serve light dishes utilizing regional and seasonal ingredients. I don’t like to cook heavy, rich meals – not even in winter. Instead, I design meals that create a pleasant warm feeling.

How do you achieve that? — By using more s­ pices in ­winter. Allspice and cardamom, for instance, but also juniper for game dishes. One of our absolute delights are the larch seedlings, which we c ­ ollect and process in summer.

Does that mean you already prepare for winter in the summer? — Indeed. I try to ferment or process as much as possible. I make honey from spruce seedlings and elderflower oil. I also ferment c ­ hanterelle mushrooms. Regional ­ingredients are limited in winter, so I have to find ­other ways.

How can you use resources carefully in a hotel kitchen? — Primarily by respecting food as a resource. I try not to waste any of it. For my ­porcini gnocchi, for instance, I use left-over bread chunks from South Tyrolean rye bread and mix them in with the potato dough.

3 — Caramelized pear is a sweet dream in the cold months. In winter, it is served with fresh orange slices.

2 — Barley risotto with fresh ­chanterelle mushrooms is an ­aromatic ­autumn meal. The chef also uses fresh and fermented chanterelle ­mushrooms for his polenta dishes or as a filling for his strudel and tortellini.

The Stube ­effect Original South ­Tyrolean Stube — The Stube is an ­integral part of the South Tyrolean ­culture. It is a meeting place for family and friends. When the days start getting short, the wooden panels, ­cushioned benches and tiled stove of the cozy Stube hold a special allure. Fine wines & spirits — The treasures stored in our wine cellar are the perfect companions for a delightful evening in our Stube. Among them are select wines from regional, Italian wineries, homemade liqueurs and fine South Tyrolean spirits.

Monte Piana hike — This beautiful skidoo and snowshoe hike to Monte Piana is perfect for outdoor lovers and history buffs alike. It is topped off with a downhill ride on a sledding track. 1 — Starting at Lake Misurina, the first part is done by s­ huttle. Then, a snow­mobile will take you up to the Bosi hut at 2,205 ­meters. 2 — This is where the snowshoeing hike begins. Monte Piana was a major battle site ­during World War I. Today, an open-air museum pays justice to the legacy of this place. In summer, you will even see many trenches and tunnels along the historic trail.

4 — Back at the Bosi hut, rental sleds will be waiting for you. Enjoy an exhilarating ­tobogganing ride down the many turns of the natural sledding track until you reach Lake Misurina again.

3 — Snowshoeing across the plateau, you will understand why Monte Piana is so famous for its panorama. It offers an incredible view of the famous Drei Zinnen (Three Peaks) and a 360-degree panoramic outlook.

The day is drawing to an end. We’re sitting by the window with a cup of hot tea. As the steam rises from the cup, we recall our afternoon outing, when every one of our breaths vaporized into a fine line of fog in the crisp cold air. Hiking through the winter landscape, our eyes were everywhere except on the trail, trying to take in every moment. The views were too tempting. The scenery too beautiful. We soaked up every scene, storing it carefully in our brain. We will remember them in times when we seek fond memories to thrive on.
