Pineapple Cake

During my childhood, this recipe used to be my mum's trick to get me and my brothers to eat our veggies. It is the most comforting one-pot meal, best for days when you are feeling under the weather. When this was cooked at home, my brothers and I got super excited, adding toppings of our choice and making it as colourful as possible. We would also compete to see who could tolerate the most spices!

Ingredients

— 1 cup rice noodles — 5 whole dried Kashmiri chillies — Handful of curry leaves — ½ tsp black peppercorns — ½ tbsp coriander seeds — 2 tsp cumin seeds — ½ tsp turmeric powder — 1 tbsp garlic, finely chopped — 1 onion, grated — 2 ½ cups coconut milk — 1 tbsp cashews, crushed — 1 tbsp peanuts, crushed — 1 tsp salt — ½ cup water — ½ cup vegetable oil — ¾ cup tomatoes and vegetables of your choice - carrots, broccoli, peas

Method

1. Grind the peppercorns, coriander and cumin seeds with the water until a smooth paste forms.

2. In a pan, heat the vegetable oil, add the curry leaves and grated onion and sauté until it turns brown.

3. Add the ground paste and turmeric powder to the pan and cook for one minute

4. Add the tomatoes and cook for a further 2 minutes, until the oil leaves the mixture at the edges.

5. Add the vegetables of your choice and continue to cook for 2-3 minutes.

6. Add 2 ½ cups of coconut milk and the salt and continue to cook for a further 4 minutes. The curry is ready. 7. For garnish, deep fry some of the onion with the crushed peanuts and cashews until golden brown.

8. In a separate pot, cook the rice noodles in boiling water for 4-5 minutes. Drain well and add the cooked noodles to the curry mixture.

9. The best part of the dish is the toppings at the end. You can add any toppings of your choice to make it colourful - lemon slices, coriander leaves and chilli flakes if you want that extra spice!

10. If you want additional protein, you can add some boiled eggs. Enjoy.
