During my childhood, this recipe used to be my mum's trick to get me and my brothers to eat our veggies. It is the most comforting one-pot meal, best for days when you are feeling under the weather. When this was cooked at home, my brothers and I got super excited, adding toppings of our choice and making it as colourful as possible. We would also compete to see who could tolerate the most spices!

—  1 cup rice noodles —  5 whole dried Kashmiri chillies —  Handful of curry leaves —  ½ tsp black peppercorns —  ½ tbsp coriander seeds —  2 tsp cumin seeds —  ½ tsp turmeric powder —  1 tbsp garlic, finely chopped —  1 onion, grated —  2 ½ cups coconut milk —  1 tbsp cashews, crushed —  1 tbsp peanuts, crushed —  1 tsp salt —  ½ cup water —  ½ cup vegetable oil —  ¾ cup tomatoes and vegetables of your choice - carrots, broccoli, peas
