Fifteens

These tray bakes derive from my home of Northern Ireland and are very popular in local bakeries and among those with a sweet tooth in general. They are present at almost any celebration and are a true taste of my childhood. The concept is 15 of each ingredient which gives them the name Fifteens. I love the simplicity of making them & the sweetness of eating them. You can add glacé cherries if you wish, removing the white chocolate. I personally prefer having small white chocolate chunks through these little gems.

— 15 digestive biscuits — 15 pink & white marshmallows — 15 small blocks of white chocolate — 200ml sweetened condensed milk — 80g desiccated coconut

Method
1. Crush the 15 digestive biscuits until crumbs form and add to a large mixing bowl.
2. Cut 15 pink & white marshmallows into halves and add to the crushed biscuit.
3. Chop the white chocolate into small size chunks and add to your biscuit and marshmallow mixture.
4. Add the tin of condensed milk, ensuring it covers all the biscuit mixture, and mix well.
5. Line a container with cling film and sprinkle the base with half of the desiccated coconut. 6. Add the biscuit mixture into the container forming the shape (either square or rectangular).
7. Sprinkle the remainder of the desiccated coconut on the top of the biscuit mixture, wrap the container in cling film, and refrigerate for 3-4 hours.
8. Remove the biscuit mixture from the container onto a flat surface/board and cut into the shapes and size you desire.
9. Sprinkle with more desiccated coconut if you wish, stack them on a plate and serve with a cup of tea or coffee! Enjoy.
