This fish is coated in a simple spice rub which forms a sweet and spicy glaze and is finished off with a kick of fresh lime juice. A simple but very impressive recipe that is full of flavour.

Ingredients

— 1 large tilapia fish (use 2 if they are small or medium size) — 10 tbsp/medium bowl of cooking oil for frying the fish

For seasoning/marinating the fish — ½ tsp white pepper — ½ tsp salt — ½ tsp brown sugar — ½ tsp chilli powder — 1 tbsp soy sauce — 2-3 garlic cloves (diced) — Lime juice and zest

For the dipping sauce — 4-5 shallot slices — 1-2 red or green chilli slices — 1-2 tomato slices — 3-4 tbsp soy sauce — Squeeze lime juice as desired

Method

1. For the fish seasoning, mix the brown sugar, garlic, chilli powder, soy sauce, salt & pepper and stir. This combination gives a sweet and spicy rub that is so flavourful.

2. Season both sides of the tilapia fish with the seasoning blend, then add the zest and juice of one fresh lime - this will really help to enhance the flavours.

3. Heat some oil in a non-stick frying pan over medium-high heat and add the fish. After a few minutes, gently flip the fish and finish cooking on the remaining side. Cooking time can take anywhere from 2-4 minutes, depending on the thickness of the fish. 4. To accompany the fish, prepare a simple soy lime dressing by mixing soy sauce, shallots, chilli slices and fresh lime juice in a bowl. In

Malay cuisine, calamansi is often added to condiments for its unique sourness, which is much tangier compared to that of a lime.

However, lime is a close substitute that will still give you a delicious dressing.

5. Serve the fish hot with simple soy lime dressing and steamed rice.
