This fish is coated in a simple spice rub which forms a sweet and spicy glaze and is finished off with a kick of fresh lime juice. A simple but very impressive recipe that is full of flavour.

Ingredients — 1 large tilapia fish (use 2 if they are small or medium size) — 10 tbsp/medium bowl of cooking oil for frying the fish For seasoning/marinating the fish — ½ tsp white pepper — ½ tsp salt — ½ tsp brown sugar — ½ tsp chilli powder — 1 tbsp soy sauce — 2-3 garlic cloves (diced) — Lime juice and zest For the dipping sauce — 4-5 shallot slices — 1-2 red or green chilli slices — 1-2 tomato slices — 3-4 tbsp soy sauce — Squeeze lime juice as desired
