Delightful Brunch I was raised in a family where we gathered every morning around 6 to 7 am, and my mom prepared breakfast for all of us. Sometimes, if I woke up late, my mom made me slices of bread with sunny side up eggs to eat in the car on the way to school. Those were the days where breakfast was mandatory and the term “brunch” wasn’t familiar to my ear. Time goes by, and as I grew older and started living by myself, I developed a new habit. Skipping breakfast! It became harder for me to wake up early, plus nobody prepared my breakfast anymore. That’s when brunch slowly became part of my daily routine. In Indonesia, especially Jakarta and Bali where there are many foreigners and expats, brunch has become of part of the daily lifestyle. From a la carte to buffets, brunch is the perfect way to start the day and indulge your appetite either alone, with good friends or your loved ones, or even with business colleagues, which is why the term “brunch meeting” is often used nowadays. In this special edition, we reveal more about the fabulous ritual of Sunday Brunch, and give you some great options for splurging at restaurants across Bali in our Musings article (p.22). The decadent Sunday Brunch at Soleil makes our cover this month (p.38), we also visit Sacred Ground in Seminyak (p.54) for a great brew of coffee, and check out our Japanese Sushi Brunch recipe from RIN, Conrad (p.58). Read our review of the delicious sweets at Angelique Shiraki (p.46), and learn about permaculture and the permablitz movement in our trip to Ubud (p52). My favorite brunch would be in a place where I can overlook the sea, while having a glass of freshly made sugar free Kiwi juice, and enjoying a warm croissant with slices of melted cheese, ham, scrambled eggs and some veggies on the side. Of course, as brunch accounts for two meals, there’s always room for sweet stuff

like pancakes or bite size desserts and a shot of espresso to give an energetic closing. There’s an Irish proverb, “Laughter is brightest where food is best,” so with this in mind may I wish you many happy brunches.

A well seasoned travel writer, Alison spent years exploring the world before arriving in Bali, where she quickly succumbed to the island’s exotic charms. Culinary Heritage
Aside from being known as a luxurious resort complex, Nusa Dua is also a culinary destination in its own right and deserves to be explored thoroughly. Bumbu Nusantara, one of Nusa Dua’s best kept secrets is the very reason why. As one of the very few authentic Indonesian restaurants in the area, Bumbu Nusantara or ‘The Spices of Archipelago’ is a good introduction to rich Indonesian cuisine. The restaurant is located at The Bay, a newly minted culinary complex inside Nusa Dua. Antique bicycles line the entrance of the large open-air restaurant, which guests can use to explore the adjoining herb gardens. Bumbu Nusantara Restaurant pays a lot of attention to architectural and interior details. Wooden Javanese joglo houses and classic terracotta tiles with warm yellow walls instantly make me feel at home. Chef Jaka Pamungkas, co-creator of this restaurant spent most of his cooking career abroad until one day he realised that he knew nothing about Indonesian cuisine. “I went back to Indonesia in 2010 and ate my way through the country. I spent a lot of time cajoling old ladies in their home kitchens and eateries to teach me how to cook as well as them,” he explains, and learned, “You have to make everything from scratch. There are simply no short cuts in Indonesian cuisine. We have a long and outstandingly complex culinary heritage and yet, there are not many restaurants in Bali where you can taste them. There is more to Indonesian food than just fried rice or nasi goreng.”

Brunches Bali’s Best
A unique hybrid offering the best of breakfast and lunch, Sunday brunch is a time for
lingering, savouring, and guilt-free indulgence.
The origins of brunch are vague, but seem to be associated with church goers, particularly Catholics who were required to fast before attending Sunday Mass, which would finish too late for breakfast, but too early for a full traditional lunch. The word itself was first documented in 1895, by British writer Guy Beringer in an essay called Brunch: A Plea in which he describes brunch as, “Cheerful, sociable and inciting. It puts you in a good temper, and sweeps away the worries and the cobwebs of the week.” He goes on to write, “By eliminating the need to get up early on Sunday, brunch would make life brighter for Saturday night carousers.” A rather applicable sentiment, considering Bali’s decadent nightlife. Going up seems to be a trend in Bali lately. Jicama, a rooftop bar which opened last October at the top of Taco Local is a case in hand. Inspired by a love of Asian street food, Jicama is offering tasty dishes in a casual homey atmosphere with an artistic bohemian touch. A rickety wooden staircase leads the way up to a blue door that reveals nothing, but begs to be opened. I push it slowly and enter a foyer which leads deeper into the realm of white bricks and a wonderful collection of bric-a-brac. Vintage iron chairs, comfortable rattan seating and hanging orchids are just some of the decor highlights that create Jicama. Two menus are presented to us. One is a drink list and we give the helpful bartender our orders, then peruse the food menu. A very interesting mix of Asian street food is listed, with Chinese bao and Vietnamese banh mi as the highlights. A creation of the well-travelled Sebastian Subakti and his team, the restaurant has hit a home-run with the party crowd at this busy part Jalan Petitenget.

Grilled Pork Belly Bao

As I sip my thoroughly refreshing drink which tastes strongly of gin and watermelon and is suitably called The Merchant’s Daughter, our food orders start to arrive. First up is the Grilled Pork Belly Bao. Freshly steamed white buns separated by a thick crispy pork belly with cucumber and cilantro as a balancer. The meat is perfectly grilled and just so juicily good I’ve made up my mind to come back even before I finish it. Most of the food is made to share, and that includes our dessert Goma Bao Cups. A deep fried bao with vanilla ice cream and black sesame paste, sprinkled with toasted sesame, a unique and oddly satisfying blend of sweet and savoury flavours. They certainly don’t make it easy to share! I sit back and enjoy the unexpected calm rarely found in the middle of this fashionable street. Being up high certainly has its advantages. Then a full interactive Balinese cooking session with experienced chefs takes place. Expect to learn the right techniques and efficient methods in cooking traditional Balinese food. When we arrived, a group of international visitors in black and white aprons were learning how to soften banana leaves to be able to perfectly wrap spiced Ayam Betutu. There are two ways to do this; the conventional way is to place them on top of boiling water, and the more modern way is to put them inside a heated microwave for three seconds. The cooking program is open to the public and can include a whole package with dinner, entertainment, and even accommodation with a free flow of non alcoholic beverages also included. Other facilities include 24-hours security and on-call doctor, massage services, internet, catering, meeting, day tour and transport.

My spa ritual begins as I sip from a fresh young coconut. Packed with nutrients and electrolytes, this is the ultimate hydrator, and I feel it nourishing every cell of my body. Next I receive a Hindu blessing and sprinkle of holy water from a virgin coconut, followed by a cleansing foot ritual with scrub of Balinese sea salt and lime and a cool splash of coconut water. A scrub made from the grated flesh of a coconut is then applied to my body. Ideal for sensitive skin, it is gentle and mildly exfoliative and left to dry on my skin before being gently scrubbed off. The virgin coconut oil massage that follows is deeply relaxing, and aromatic, imbued with essential oils of lemon, lavender and ylang ylang. The coconut oil glides smoothly over my skin, a pure tonic of vitamin E and antioxidants, that soothes, conditions and seals in moisture. Hot towels remove the excess oil and a creamy coconut lotion is applied to my body. Denpasar is sadly underrated as a culinary destination. Being the place where the locals really live, the city which literally means market in Indonesian, has its share of culinary gems. Angelique Shiraki, a fabulous French pastry shop is just one example on how interesting the food scene is becoming in Bali’s captial city. A black and white awning with an ample parking area was the first thing I saw when I stopped by the cafe one afternoon. Two entrances are available; one to enter the cafe and another one to the pastry shop. An abundance of cakes, breads and cookies are displayed inside the shop while a large glass window at the back of the cashier provides a glimpse into the busy kitchen at the back. Immediately, a middle aged man greeted me, and when I asked if was the owner, he nodded and gave me a charming bow.

Cut potato and pumpkin into large cubes then boil with salt and pepper, glaze with butter then set together with prepared lamb on a baking tray. Make the Yorkshire Pudding Mix together flour, eggs, water, fresh milk, salt, and pepper in a mixing bowl, beat the ingredient until they become a thin batter. Grease muffin trays with vegetable oil, heat the trays in the oven for about 5 minutes. Take the trays out and while hot pour the pudding mixture in. Put the lamb, potato, pumpkin and pudding mixture in the oven that already been set in 180 Celsius. Bake for about 30 minutes Side dish Blanch carrot, zucchini and cauliflower and set aside. Preparing cheese sauce: heat butter until melting, combine with flour and then pour the fresh milk, stir until the sauce is smooth, add the parmesan cheese and continue stirring until combined. Dip the above vegetables in cheese sauce just before serving. Carve the roast lamb and put on a serving plate, arrange roasted pumpkin, potato, vegetable with cheese sauce and Yorkshire pudding on the side. Serve with gravy and mint jelly.

My travel buddy and I are on a serious mission to eat our hearts out in Georgetown; a living, breathing, fine example of post-colonialism. There is decaying Fort Cornwallis with rusty canons jutting out; British-named streets like Lebuh Carnavon or Lebuh Macallum, and even a monument to Queen Victoria. The town is very well connected and the size is small enough to walk around, witnessing the interesting mix of architectures.

Beside food stalls and small restaurants, the hawker centre also proves to be worth visiting. The one-stop eating solution, we call it. Between the two of us, we share a bowl of wonton mee, an oyster omelette, grilled stingray and es cendol. There seems no end to our binge eating, but when we do take a break we walk around the city visiting various temples and other places of worship. Then we eat more, strolling around the town looking for hidden stalls with a long queue. For our last meal, we go to an Indian banana leaf restaurant. A single long leaf is placed in front of you. Rice is added, then comes the server bringing two kinds of curries, and then comes another server bringing daal, and so forth. When you can’t have any more food, you fold your banana leaf to signify that you are finished. We leave the place feeling full and quite happy although I get the feeling that my Penang leaf is not yet fully folded. Eve
