Alluring beach clubs
Whenever the topic of beach clubs comes up, my mind fills with a vision of a bright sunny day; I see nice comfy seats with colourful cushions, amazing ocean views, juicy fresh drinks with paper umbrellas on top; and of course, there is good music playing. I think most of us have similar images in our heads when it comes to beach clubs, so it’s no wonder they are popular places to spend time while on holidays. We can hang out at beach club for hours, taking dips in the swimming pool or ocean, soaking up the sun, sipping a martini or sangria, and enjoying tasty exotic dishes while waiting for the magical moment of sunset. Here in Bali we are lucky to have a great selection of beach clubs to choose from, and you can check out our top picks for the season in our feature article, ‘Bali’s Sizzling Hot Beach Clubs (p. 22). On our cover, we revisit one of our all-time favourite cliff-clubs, El Kabron, which boasts beautiful views and authentic Spanish cuisine (p.38), and visit the small village of Kusamba to witness the traditional process of making pure, natural sea salt (p. 42). We also take a trip to Lembongan Beach Club and Resort – you can read our glowing report on p 34, and dine on luxurious French-inspired cuisine at CasCades in Ubud (p. 60). We relish the raw, healthy choices delightfully served at Divine Earth (p.30), and enjoy a casual Asian meal at Fat Chow (p. 34). Our interview with Pullman’s Beverage Manager and Sheraton’s Sommelier provides insightful reading (p. 50), and last, but not least we proudly present the profiles of our esteemed partners who helped us to create the Big Feast, 23 August 2014 (p.16).

Take our starter, the Beef Tartar. It is a perfectly sliced Australian Wagyu Beef with a hint of ginger and teriyaki sauce, served with rice crackers and sprinkled with sesame seeds. Definitely an Asian-inspired dish and a solid start for an appetiser. For the entrĂŠe, I have the Farm Chicken Bamboo while my partner has the Gado Gado. The chicken is filled with flavours, from lime to basil, and exquisitely presented with a confit of capsicum, orange foam and local sukun crisp. It is an odyssey of uncharted flavour, halfway between East and West, so to speak. The casual Gado Gado receives a royal treatment this time with a carefully plated, elongated delight of rolled vegetables, eggs and thick peanut sauce. It will be interesting to witness what Chef Vanderbeeken will create in the upcoming days, but whatever it is, we are sure it will be more than just good. Eve

Most plants cannot live in saltwater as the water drowns their roots and the salt poisons their systems. Seaweed, however, is not a true plant and does not use systems that can be waterlogged. Seaweed is actually a complex form of algae, lives only in saltwater and is essential to the survival of all ocean life. It has also been harvested for centuries by many coastal peoples, who use it for its health benefits and delightful culinary properties.
Seaweed has no root and no flowers and creates small spores that swim away from the parent to grow.

THE FIRST Back in the days when Seminyak was still sleepy, Ku De Ta rose from its sandy shore, and Bali’s first beach club was born. Fifteen years later, surrounded by the glittering lights, designer boutiques and trendy resorts, Ku De Ta still lures the hippest island crowd with its stunning ocean views, fabulous parties, designer cocktails and gourmet menu. Famed for its modern Australian cuisine, you can also enjoy Indonesian fine dining upstairs at Mejekawi, which provides an intimate and unique chef’s table experience. In the face of an ever-cooler, everedgier nightlife scene in Bali, this iconic beach venue is still the place to see and to be seen. Jl. Kayu Aya 9, Seminyak | P +62 361 736 969

Tucked into a picturesque white sandy cove this glorious hideaway is a place to indulge in the sheerest of hedonistic fantasies. Try Them All
We are sitting on a stacked wooden palette with our backs comfortably leaning on the red brick wall that dominates the place. Lunch time passed a few hours ago and yet, most of the tables are still full with diners slurping their noodles or sipping their cold drinks. A creation of two brothers, Damian Ardika and Kevin Putra Tjiptadi, Fat Chow is “Where you go to eat Asian street-style comfort food and be happy,” explains Damian, who is also the Head Chef. My Shanghai Mocktail is finished in record time, due to its refreshing relief of orange and mango. Feeling at home in this chic warehouse, we are nonetheless delighted when our first treat arrives. The Try Them All starter menu combines four little portions of appetisers by our own choice. In delicious order, they are Mekong Roll in fresh Vietnamese style, Fat Pao the crispy pork delight in a bun, a flavoursome Thai Chick in Pandan Leaf and a deep fried Tokyo Prawn with finger-licking good dipping sauce.

We are still talking about the delightful foursome when our Oriental Burger and Hawker Pad Thai arrives. The grilled home-made beef patty is a meat lover’s delight, but the secret home-made Chinese BBQ sauce within manages to take the burger into another layer of meaty heaven. In between bites, I sip my second glass of a bold Red Sangria, vodka shot included. The sun is slowly setting, anyway. My tasty Pad Thai is generously served and definitely more than enough to be shared between two people. The restaurant is quiet now, with only few people left in their reveries or finishing the last remnants of their chow. Undoubtedly, the rhythm will change in few hours where hungry diners come back to fuel their night with Asian street food delights Fat Chow-style. Eve

Warung Koming Jalan Teuku Umar Barat, better known as Jalan Marlboro, connects the tourist hub of Seminyak to the heart of Denpasar. When the sun goes down and the shops close their rolling doors, makeshift tents are erected and this busy road turns into a sidewalk ‘eat street.’ Out of dozens of food vendors along the street, there is only one offering Balinese cuisine, and it fills a small space between the fried chicken vendors. Warung Koming only sells Kuah Balung and Sate Babi. Balung literally means bones, so Kuah Balung is a bone soup. The soup is a clear yellow colour and has a very rich flavour, while the bones with a bit of meat and bone marrow take the centre part of the bowl. Several combinations of Kuah Balung are on the menu, such as Kuah Balung and Meat which is bone soup with some small cuts of meat. Another combination comes with meatballs. The Sate Babi is the most popular dish. The pork meat is grilled to a soft and chewy texture, and the seasoning is a mixture of spicy and sweet. Each of the skewers only contains meat and no fat. Even though a portion is small, with just seven medium size skewers on a plate, the taste is appetising and unforgettable. No wonder people sometimes ask them to cater for special events. Dewi

Q: Care to share your personal best hangover remedy? Andi: A very black coffee. No sugar, no milk. Budi: What hangover? That’s why I go for wine every time.
Q: Where do you find ideas for creating drinks and giving recommendations for wine pairings?
Andi: Everywhere. Once, I created a drink inspired by a woman. There’s always a new flavour, new taste, new trend and new market. The possibilities are endless. Budi: I will always talk to the guest first and find out about what they like or dislike. Most of the time I will suggest them to start with light wine than continue to a more full -bodied wine like Cabernet or Shiraz. Cuisine and herbs also give me ideas to create signature drinks.

Q: Tell us about your best creation. Andi: Inspired by a woman, I created Lessia Poison. It is made of vodka, gin, tequila, rum, cacao brown, pineapple, and grenadine syrup. It’s lethal, I tell you. Budi: Red Bene Sangria with rosemary, cherry tomatoes and a splash of brandy as well as White Bene Sangria with basil, oregano, sage and a splash of rum. Both are made using Italian wine.
Q: What do you think is the most important skill for a bartender/sommelier?
Andi: Never take things for granted and forget about thinking outside the box, don’t even think about the box! Budi: Good knowledge, be appreciative and listen well to what the guests really want. Text by Eve

Nature’s Way The raw food movement that has swept across Ubud is inching its way south to Seminyak, with Divine Earth now serving up delicious and nutritious treats including sublime desserts.
Whereas vegetarian food was once associated with hippies and peace signs, and raw food meant little more than a salad or a handful of nuts, these days healthy eating has hit the mainstream, with more and more people opting for organic whole foods. Tapping into the world-wide raw food trend, Divine Earth swung open its doors in February this year, with an expansive menu of wholesome raw dishes, nourishing juices and organic wines. Spread over two floors, the space is fresh and serene, with a calming colour scheme shaded in green and beige, and an open kitchen area with glass display counters filled with enticing desserts and snacks. A recently expanded dinner menu also includes a selection of cooked vegetarian options. Raw foodies claim that fresh ingredients retain enzymes, vitamins and proteins which are often destroyed by the cooking process.

very tasty breakfast dish. Drinks include a zingy Green Juice, and a thick and velvety Tantra – a healthy boost of blueberries, oat milk and cacao which is similar to a chocolate milkshake but without the dairy heaviness. I am a huge fan of raw desserts, which can deliver the sweetness you crave but leave you feeling lean and energised rather than full and loaded with sugar. The Banoffee Ice Cream Terrine served with salted caramel sauce is just superb, as is the Chocolate Almond Crunch with rich satiny chocolate smoothed over a nutty, crunchy base. Tucked into the sidewalk at the end of Jalan Raya Basangkasa, Divine Earth is ideally situated next to Divine Goddess (yoga wear) and Seminyak Yoga Shala, creating a wellbeing corner in the heart of town. Its location is no coincidence, as the cafe is a collaboration between Gill Plesser of Divine Goddess, and Liat Solomon, founder of Down to Earth, a ‘whole life’ company that has grown to incorporate five vegetarian restaurants/markets (including Zula and Earth Cafe), and a substantial product range. For Solomon, an experienced nutritionist and vegetarian/ macrobiotic chef who has cooked for various celebrities such as Kevin Costner, preparing healthy food is not just a
