editor’s note Talking about food foraging reminds me of my childhood when I used to play in the garden at my grandpa’s house. The picturesque red, green and purple flowers and leaves are still very clear in my memory; and as we ran around playing hide and seek, my grandpa shouted at us from afar, “Watch out for the plants, we will cook them in two days.” My grandpa has always been very good at this, and two days later we savoured delicious stir-fry eggplant with fragrant lemongrass. Planting our own food and gathering edible wild plants seems to be one of the best ways to make delicious, highly memorable dishes! Our ancestors foraged for a long time, before learning to plant their own crops, but in modern days, this way of living is challenging. However, we still can find restaurants in Bali that serve food direct from the garden to the table. A fascinating food foraging journey in the hills and forests of Ubud is described in on our musing section (p.22); we also find great inspiration at Locavore, which has won international awards for its fine dining with local ingredients (p.38). Still in Ubud, we stop by at D’ Star Br & Resto to enjoy special Balinese signature and barbeque dishes (p.16). Moving down south we visit the luscious newly opened Crab Bar in Batubelig (p.26), check out traditional chocolate-making in Canggu for our Island Life section (p.42), and refresh ourselves with healthy food, yoga and holistic treatments at Desa Seni (p.34). A special meeting with Hayu Dyah, the author of a book on food foraging provided us with plenty of food for thought (p.52), and we also bring you interesting interviews with two talented chefs for The Specialist section (p.50). Finally there is delightful coffee at The Caffeine in Kuta (p.58) and tasty new desserts coming from Taiwan at Black Ball (p.56).

A Charity Sing-A-Long The Westin Resort Nusa Dua Bali, together with UNICEF, successfully held a charity event in October. Wine & Dine Bella Cucina at InterContinental Bali Resort hosted a decadent Wine Dinner Experience with Wolf Blass wines. The legendary Australian winery provided a variety of wine to complement the delectable five-course set dinner menu, which was carefully prepared by Bella Cucina’s Italian Chef, Riccardo Illoana. Whimsical Garden The long stretch of Mas Road on the way to Ubud has never been known as a culinary destination, but D’Star Bar & Resto is ready to change that with their signature Balinese and barbeque dishes, set in a lush and artistic compound.
After parking my car under a large metal sign in the form of Bali Island, I enter the compound without any expectation of finding anything out of the ordinary. However, a large LOVE sign made of dark metal, along with a tall metal statue of a frog jazz band immediately tells me that I am not in an ordinary restaurant. Apparently D’Star Bar & Resto is a wonderland of magical metal creatures as well as a creative juxtaposition of Javanese teak house and butchered shipping container house underneath. “This place used to be a metal handicraft factory but the owner always wanted to have a whimsical restaurant with a relaxed, fun and family-friendly attitude, hence D’Star was born,” explains the manager when he comes to our table and gives us the menu. Whimsical is the right word to describe this place, I think to myself. Turning old shipping Nasi Campur

Thankfully, the creativity also extends to the food. Created by Executive Chef I Made Wanantara, the menu has everything, from traditional Balinese to barbeque dishes. The Gianyar-born chef has taken his wealth of experience from working abroad on luxurious cruises, and brought it back home. Nasi Bebek Guling and Nasi Kampung, for instance, are beautifully plated on a traditional wooden server. Both are filled with carefully prepared condiments such as minced chicken and duck satay, soup, shredded coconut mixed with vegetables and suckling duck. The taste is undoubtedly Balinese but with less pungency. My favourite is definitely D’Star Burger which is magically made of duck meat. Freshly grilled by the chef himself at the grill station in the garden, it is stacked with the usual suspects: lettuce, tomato, onion and cheese. The thick and juicy meat successfully turns it into a surprisingly good duck burger. Sitting back on my rattan chair, taking tropical sips of D’Star Cooler, I have already decided to take my nieces and nephews for a long lunch. This place encourages adventure, hide and seek and other mischievous activities to take place. Indeed, adults and children alike will find it perfect for a leisurely dining experience. Eve

Sacred Basil
The king of Mediterranean herbs, basil goes well with tomato sauce, meat dishes, fish, eggs and seafood. It’s scent is vaguely reminiscent of saffron, but also bears traces of cinnamon, liquorice, mint and cloves. While best known as a staple of Italian cookery, basil actually originated in India, where Hindus believe that a basil leaf placed on the chest of the deceased is a passport to paradise.
Used for preparing soap and toothpaste, its leaves are similar to those of sage and may be chewed to sweeten the breath. As a medicinal herb, basil is used to treat a cough, as well as to ease anxiety, stress and insomnia.

Here in Bali, foraging has always been a way of life, and the beautiful landscape is rife with wild greens, tropical fruits, roots and edible flowers.

more about Bali’s wild side, I join a fascinating, customised rice paddy walk with Bali Eco Cycling Tours (www.baliecocycling.com). We begin in the coolness of early morning and make our way through the ancient lichen-covered temples of Goa Gajah on the outskirts of Ubud. Weda, a rice farmer from Ubud is my guide, and is passionate about foraging, deeply knowledgeable, and has a great sense of humour. The narrow trail leads us along the edge of a steep riverbank shrouded in sub tropical rainforest, where gnarly roots of giant trees cling to the ravine, and dappled sunlight dances through the leafy canopy. We stop to pick fragrant stalks from an ilak bush – used in place of sticks in sate lilit (minced fish satay). Nearby, the leaves of a simbaman bush are used to flavour

a uniquely Balinese dish known as be cundang – in which the losing rooster in a cock fight is cooked up and presented in a victory feast. Crossing the muddy creek Weda points out my favourite Balinese delicacy, dainty fern tips which are tender, juicy and fabulous with shredded coconut. Climbing up the ravine, we pass a heavily laden soursop tree – its leaves can be used in a tea and are believed to have a similar effect to chemotherapy when it comes to treating cancer. Winding through a dense coconut grove we see immense jackfruit trees, their large bulbous fruit makes a great addition to curries, soups and rujak – Balinese spicy fruit salad. Suddenly the forest opens up to a glistening verdant sea of green that stretches as far as we can see.

After parking my car in the ample parking area at the back, I enter the massive white marquee that houses the Crab Bar. A rhapsody in white and blue, the restaurant has a spacious dining area with wooden tables and marine-themed chairs. Joined by two friends, our group decides to sit on the porch, canopied by wide white canvas. A large menu is then presented to us, offering all sort of options from cooking methods to sauces. After much ado about nothing, we finally agree to have our seafood feast boiled in teriyaki black pepper sauce. A creation of celebrated Indonesian Chef, Ragil Imam Wibowo and partners; at Crab Bar it is believed that shared food equals shared fun. Casual and raucous, it definitely lives up to its cheerful tagline ‘Hot Crab, Cold Beer’. Crab Bar’s Lumpy Crab Cake is a delightful start. Served with tom yum mayo dipping sauce, the crab cake is crispy on the outside and soft in the inside. Five imported Oysters come next, fresh and juicy, with a surprisingly bold garnish of raw onion and chillies.

As we eagerly tie up our plastic bibs and sip refreshing Ginger Lemonade and Pink Lemonade, a waiter comes to our table with a clear plastic bag. We squeal in excitement and embark on a picture shooting frenzy, while he gracefully pours the contents of the aptly named CB’s Bag Hot onto our plastic covered table. Huge red mud crab, fat prawns, clams, corn and sausages are oozing with delicious savoury sauce. The sauce manages to compliment the juiciness of the crab and allows the meat taste to shine through. Nasi Sela is not only delicious with a touch of the cassava’s sweetness, but it also contains fiber. In the village, people usually go to their own backyard for cassava as it grows wildly. Not only the root is edible, but the leaves are also great ingredients for cooking. According to my grandmother, in the old time when there were no refrigerators, taluh pindang was made when the chicken laid to many eggs, as the method of pindang is a traditional method of preserving food. All of the dishes that accompany Nasi Sela are common food on the island and the recipes are handed down from generation to generation. However most of the ingredients which were once easily found in the backyard, are now often bought in the market. From the sambal menu, various types of sambal are very tempting to be tested, such as the fresh and powerful sambal matah – a mix of raw onion, lemongrass, and chilli. I also tried sambal sager – raw shredded coconut sambal, sambal manga, basically a tasty combination of dead hot chilli and sour young mango, and also sambal bongkot, raw sambal made of the pink flower of Etlingera elatior. Other delicious ingredients can be found growing wild along the edges of cultivated land and river banks. One such delicious ingredient is bongkot. Famous in Malaysia as kantan and known as kaalaa in Thailand, its young stem and flower makes a beautiful and flavoursome ingredient. Perfect in a sambal to accompany grilled seafood, the beautiful pink flower not only offers a unique taste, but also releases an appetising fragrance.
Ingredients: 8 shallots, thinly sliced 1 bongkot flower, thinly sliced 1tbsp sugar 10 cayenne pepper, thinly sliced 1tsp grilled shrimp paste 1tsp salt
Method: Mix the shallot with the bongkot and a tablespoon of salt. Slowly knead with hands and then wash with drinking water and knead to drain the water until dry. Add the cayenne pepper, shrimp paste, salt, the juice of kaffir lime and coconut oil.

Chef Stephan Finzer of Papa’s Limoncello Restaurant and Chef I Nyoman Suastika of Bali Dynasty Resort, share their time and chat with us regarding their love of food and why they decided to work in the kitchen.
Q: What do you like to cook at home? Chef Stephan: Fish! Usually, I will go to Kedonganan, pick some fresh seafood and then grill it at home. Chef Suastika: I love my wife’s home-cooked meals, but my family demands that I cook during weekends! Usually, I cook Balinese dishes for them.
Q: Do you have a certain habit to kick off the day? Chef Stephan: A good coffee made from a good Italian coffee machine! Chef Suastika: I love to play my guitar and sing some songs to get in the right mood for the day.
Q: Which aspects could be improved in the culinary business here?
Chef Stephan: There are so many hotels and restaurants here, but occasionally I still find it difficult to get some items for our menu. Chef Suastika: Maintaining a constant level of quality, including the freshness of ingredients and the level of

Q: Can you share your vision for Mantasa?
I came from Gresik, East Java.
Back in 2004 when I was at university, I researched wild plants and their potential nutritional benefits. I went to local villages and talked to elders, who apparently consummed quite a lot of now-forgotten wild plants when they were young. Some of those plants are quite known for their nutritional benefits, like moringa and purslane. That got me thinking, why and how did we stop eating these wild plants and change our diet so completely? That’s why I founded Mantasa on 2009, to do more research on providing alternative food for Indonesia.
A: We want people to be more open to the alternatives of what they can eat. Our current diet is very limited to the things that can be bought from the market. We are in the process of documenting edible plants and local wisdoms, and doing more research based on that knowledge, from which we will publish a book about it. As for now, we have been actively involved in educating, developing and working with a community in Jombang, East Java. There, for example, we found that the locals have been drinking tea

You won’t be served dinner before 9.30pm, or find burgers on the menu, but you will discover quiet beaches, medieval architecture and delicious local cuisine, without being just another face in a sea of tourists. Food is a serious affair in the south. Dinner with friends at their villa one night starts at10pm and it is 4am before I waddle out. I just can’t believe the mounds of food that keep appearing on the table. “Mangia, mangia” (eat, eat,) the cheerfully plump Italian mama orders me. There is homemade olive oil, homemade wine, freshly baked crusty bread, platters of seafood, meats and pasta, peaches from the garden, fresh tiramisu. Not content with feeding 12 people, the mama then hauls out the biggest pot of pasta that I have ever seen and proceeds to feed at least 20 cats which suddenly appear from the shadows. Some of Italy’s finest food is produced in this region, and the rich soil is coloured a deep earthy red. The gnarled and twisted trunks of thousand year-old olive trees dominate the landscape, interspersed with vineyards, cacti, orange groves, fig and carob trees. September is olive season and everyone is busy picking and extolling the virtues of their olives, while little three wheeled trucks piled high with olives chortle down the streets headed for the local presses. When you have tasted virgin olive oil fresh from the press in Puglia it is easy to understand why it is known as the elixir of the gods. Alison
