raditional Indonesian cuisine meets pop art in this fun, retrostyle restaurant that’s got a whole lot of spice (and I am not just talking about the food.) From bright blue beams and banisters, to funky glass lamps and multi coloured table settings, this cheerful, three floored venue provides an atmospheric setting for a memorable meal. The ground floor has an attractive terrace set amidst ornamental palms, while the open-sided design of the upper floors reveals expansive views over Ubud’s greenery. Mosaic floors, vibrant posters and brightly coloured napkins bound with sea shells create an arty vibe, while statues of monkeys attired in hats and bikinis pay cheeky homeage to the nearby monkey forest. It is easy to get distracted by the décor, but the menu is even more eclectic than the furnishings, and is inspired by the diverse islands of the Indonesian archipelago – home to 200 ethnic groups and a huge range of culinary influences. Original recipes utilise over 60 herbs and spices and the menu reads like a culinary travelogue. Our meal takes us from the steamy jungles of Kalimantan, to the plains of central Java, the rural villages of Bali, and into the wilds of Sumatra.

We start with Tum Ayam, Balinese chicken terrine served on a bed of tender young fern tips with a hot and spicy yellow sauce. The Asinan is an old Batavian dish from Jakarta and makes an excellent vegetarian choice with its crunchy bird’s nest of noodles covered in tofu, yam bean and carrot, finished with the spicy punch of a sweet chilli vinaigrette. The Dendeng Sapi from central Java features strips of crispy beef sweetened with the tang of fresh mango pickles, while the Sate Kambing has imported lamb skewers glazed with sweet soy sauce and is served on a grill of steaming coconut husks. The generous Nasi Campur has a melting pot of regional influences, as does the famous Warung Enak Rijstafel – with more than 20 tastings providing a full culinary tour of the islands. If you are thinking about enrolling in an Indonesia cooking course then this is certainly the place to do it, with regular classes incorporating a visit to the traditional markets. Desserts are equally interesting, the Colenak which translates as ‘tasty dipping’ is just that, long, thin spring rolls with a filling of brown sugar and banana, with panas, passion fruit and chocolate sauce for dipping. The Kue Lumpur is a dense sultana and young coconut pancake, while the Dadar Gulung - coconut crepes are sweet and

moist. Cocktails like the Pimm’s Classic and Red Planet (with a garnish carved like a bird) are beautifully presented, and we feel compelled to try at least one Arak cocktail – the Crush Ginger Lemongrass which has been shaken with arak, clove and pineapple liqueur and has a strong ginger flavour. In between courses I wander around the restaurant fascinated by the design and the décor. The bathrooms are pure pop art and definitely deserve a mention, as do the old fashioned cigarette promotional posters that adorn the bright blue bar; and the long wall covered in postcards, photos and prints. The Daring Red Hot Chili Peppers

ndonesia with its 17,508 islands, has attracted traders, pirates, and adventurers from all over the world throughout its history. Spices were valued not only for their flavour, but also for their ability to disguise spoiled foods, freshen breath, and remedy health problems. By 100 A.D, curries, cucumbers, onions, mangoes, and eggplant were brought over by traders and Hindu missionaries from India as well as spices like ginger, cumin, cardamom, coriander and fennel. Around the 1400’s, Muslims from the Middle East began incorporating goat and lamb dishes into the Indonesian diet. The Portuguese were the first Europeans to take control of trade routes to and from the islands, bringing with them cassava and sweet potatoes. Cauliflower, cabbage, and turnips were brought about a century later by the powerful Dutch East Indies Company, which gained control of

the trading routes. The Spanish, later on, contributed peanuts, tomatoes, corn, and the widely popular chili pepper. The chilies, including bell peppers are all descended from plants native to Central and South America. The Portuguese are most responsible for inflicting chili peppers on the world. They took to them right off and transported them to Africa and to their trading post in Goa, India. Dried red chilies are light, long lasting and contain mature, eager to sprout seeds so chilis quickly spread everywhere traders traded. The hottest chilis are particularly appreciated in the tropics because they induce sweating which makes the body feel cooler. This is exactly what happened in Indonesia, where Capsicum Annum, famous as Cabe plays such a dynamic and central role in Indonesian cuisine that it's hard to imagine www.letseatmag.com

things before the Portuguese brought it here 500 years ago. There are three kinds of Cabai, Cabe Hijau (green), Cabe Merah (red) and Cabe Rawit. The later is cayenne pepper, tiny but hot chilies that are often directly nibbled on for contrast with fried tofu and even certain sweets. The chili pepper not only adds pungency to different foods, it also appears to have analgesic properties. The capsaicin found in chili peppers may release substances within the brain which control pain as well as stimulate feelings of well-being. Capsaicin cream has been shown to reduce arthritis pain. It is also used as a herbal remedy for a variety of other ailments including backaches, varicose veins, vascular conditions, swollen feet, and rheumatism. Hot red chilies are extremely high in vitamin A, but have good doses of vitamin C as well as folic acid, potassium and antioxidants. They are low sodium and very low carb. Due to the high vitamin A content,

fresh or dried red chilies are said to be effective in improving night vision. The molecule capsaican is responsible for all the excitement generated from chili peppers. It stimulates temperature-sensitive nerves on the tongue and elsewhere producing the false sensation of heat. The pain of hotness is entirely a nerve signal and is not a real pain from damage of any kind. The seeds are the hottest part and also the hardest on the stomach so it is a good idea to remove them before using in any dish if you can’t handle it the heat. Do you know that the police have also found chili peppers to be an effective deterrent, often replacing mace and tear gas with pepper spray? An interesting fact, indeed. Well, you know what they say about chilies, the smaller they are, the hotter they are and the hotter they are, the more excitement you get from them. Ready for a chili spree? \MA

ndonesian love to snack and across the islands you will find stalls, markets and shops selling a variety of sweet and savoury treats. Among all snacks, the Kroket has one of the most interesting stories behind its delicious taste, apart from the fact that it was introduced during the Dutch Colonial era in Indonesia. A Kroket is made from potato and minced chicken inside a crepe-like wrapper and fried. It is eaten on its own, even though in Holland it is traditionally eaten with white bread. If eaten on a slice of sandwich bread you should cut the kroket lengthwise and spread mustard over it. Filllings include beef, chicken, seafood, potato, noodle, rice and even goulash. Kroket is an extremely popular fast food in Holland and it is sold in all snack bars. It is also available from the frozen section of supermarkets. It's very uncommon to make them from scratch nowadays since a good kroket recipe is extremely hard to come by. The dish was previously regarded as a French delicacy of varying meat or vegetable content, in the 1800s it became a way to use up leftover stewed meat. After World War II, several suppliers started mass-producing kroket filled with beef. Its success as a fast food garnered its reputation as a cheap dish of dubious quality, to such an extent that Dutch urban myths relate its allegedly mysterious content to offal and butchering waste.

A smaller version of the kroket, the bitterballen, also as popular in Indonesia, is often served with mustard as a snack in bars and at official receptions. These days the fried snack is regarded as an international dish and can be found around the world. In Bangladesh it’s called Alu chop, a popular kroket available throughout the country, primarily as an appetizer or snack served with a chutney or sauce. In Belgium, mashed potato filled 'kroketten' are often served as a side dish in winter holiday meals, such as Christmas. In fast food cuisine, varieties exist without potatoes but with cheese, beef or goulash, often in a filling based on béchamel

sauce. In Quebec, Canada Mc Donalds sells Chicken McNuggets as 'Poulet McCroquettes'. In Hungary, ‘Krokett’ is a small cylindrical croquette seasoned with nutmeg and salt and deep fried in oil. This variety can be ordered in most restaurants as a side dish, and also bought frozen. When made with cottage cheese they are called ‘turókrokett’. In Japan, a relative of the kroket, known as korokke is a very popular fried food, widely available in supermarkets and butcher shops, as well as from specialty korokke shops. Generally patty-shaped, it is mainly made of potatoes with some other ingredients such as vegetables and

maybe less than 5% meat and is often served with tonkatsu sauce. Cylindrically shaped korokke are also served, which more closely resemble the French version, where seafood or chicken in white sauce is cooled down to make it harden before the croquette is breaded and deep-fried. When it is served hot, the inside melts. This version is called "cream korokke" to distinguish it from the potato-based variety. Mark Dennis, the General Manager welcomes us with a typical Aussie friendliness. He arrived in Bali just over a year ago, following 14 years of working in the F & B industry in Thailand, so he is well versed to living in the tropics. He likes the fact Bali doesn’t really feel like anywhere else in the world. You can find Mark in the restaurant seven days a week, overseeing operations and welcoming guests from around the world. Pavone is open for breakfast, lunch and dinner, with different menus at each meal , as well as a special kids menu to keep the little ones happy. Seating options include a comfortable lounge area, communal dining at long tables, or romantic tables for two. Evenings at Pavone are accompanied by background lounge music from the DJ or live acoustic music.

The Greek Salad makes a fresh start to our meal with mixed greens, black olives, cherry tomatoes, bell peppers, onions, feta and a flavourful dressing. The Australian Tenderloin Herb Butter is 180grams of tender steak, char grilled with a sizzling topping of melted herb butter made with parsley and garlic. I

am really not expecting to find the rustic charms of an Italian trattoria right in the heart of Kuta, so Al Dente turns out to be a great surprise. Timber floors, furniture made from recycled teak, and tables decorated with potted herbs create a homely vibe. Cooking utensils dangle from the red brick walls, and the counters of the open kitchen are lined with baskets of fresh produce and shelves neatly stacked with jars of pasta, bottles of olive oil and tins of olives. Opened at the beginning of May this new venue has three seating areas, a sidewalk terrace overlooking all the action on Jalan Kartika Plaza, atmospheric air conditioned interior, and a shady balcony at the back overlooking the lush gardens of the Ramayana hotel. We start with a Fiori di Arancio, a sweet refreshing mocktail made with fresh mandarin, mint leaves, lime juice tea and sorbet. The Sangrina is rather more

potent with its mix of Cachaca, Ruby Port grapefruit and passion fruit. We munch on tasty home baked Walnut and Raisin Bread while flipping through the menu which is presented on a clipboard and comprised of classic Italian favourites. Pasta and pizza are predominant, but there are also Asian influenced dishes such as our first course, Insalata Asiatica Anatra e Spinachi, a colourful duck teriyaki salad with light citrus flavours of mandarin and pomelo complementing slices of salty duck, spinach, sweet red peppers and crunchy cashew nuts. The homemade Ravioli al Mascarpone e Tuorlo D’Uovo is one giant ravioli, with a wonderful filling of mascarpone and egg yolk, served on a bed of asparagus and drizzled with a subtly flavoured hazelnut butter. homemade tomato sauce with juicy chunks of lobster. By name, as by nature both pasta dishes are al dente. Dessert time brings me to the deli counter, topped with baskets of crusty bread and jars of rosemary cookies. The attractive display includes Zucchini Cake, Panna Cotta served in dainty jars and a deep crimson-hued Red Velvet Cake which proves to be an irresistible choice thanks to a silky texture, layers of fresh cream and candied nut topping. The Tiramisu Cocktail is a perfect accompaniment and is served in one of those fancy cone-shaped glasses, resting on a bed of ice. Our entree is a generous Nicoise Salad built with boiled potato, green bean, hard-boiled egg, tomato, anchovy, black olive, and topped off with tasty grilled tuna. This fresh, delicious dish is a perfect starter while we enjoy the sea breeze hissing through the coconut trees, and the relaxed atmosphere. Next, the two main courses that have been carefully crafted by the Executive Sous chef Ketut Aria Witama and his team. he Executive Chef and his restaurant alike have deeply transformative histories, and here is how they found each other on sunset beach, Seminyak. Once a daydreaming employee in the insurance world, the 26-year-old then made a bold move, taking up study of an unrelated subject in Belgium. This is where the culinary arts fortuitously met chef Quib. What the institutions had failed to notice all along was Quib’s mile-wide creative streak. If you add a dash of perfectionism, this explains the unravelling scroll of Chez Gado Gado’s remarkable tasting menu – but still doesn’t explain: why Bali? After graduation, there was idle chatter in the kitchen - the theme was both transcontinental, and culinary. For once, the pipedreams didn’t go up in smoke, and the two chefs and friends conspired to fashion Shy restaurant in Kemang, South Jakarta. Shy’s reputation added to his own, and word of chef Quib soon reached Bali. Since then, remarkable and mind-blowing pairings have been coming forth from the aptness of this harmony – this particular man and this particular, historic Seminyak hotspot.

As for the restaurant’s own transformations, Gado Gado Beach Club was once little more than a traditional alang-alang structure with a noisy generator and a noisier tape deck, greeting the first travellers in the early seventies. One change of ownership and two renovations later, harmony between east and west has been struck and embodied – in the aling-aling entranceway meant to deter bad spirits, the high gloss teak and merbau interiors, and the nautically curvaceous bar, fashioned by former ship-builder Fredo Taffin. With no shortage of transformations, Chez Gado Gado’s menus have undergone the self same journey to perfection’s peak as the animal and his habitat - the Chef and his wantilan abode. Quib’s take on escargot - with cured ham - took over a year to find its exacted harmonies, emerging from its shell and crawling forth into a frame of cutlery - a culinary masterpiece. And perfectionism it would not be if

a happy accident were overlooked, resulting in some deliciously outrageous pairings such as the Chef Tasting Menu. Using in-season produce; especially fresh vegetables that grow at Plaga, Gado Gado’s own farm in the central hills; the courses contained in the Tasting Menu change periodically – a must try. A happy bowl of Tuna Tartar with pickled cucumber, Thai yoghurt and Avruga caviar; or perhaps a moist and tender Seeds and Nut crusted Opaka perfectly balanced with a sweet and sour carrot jus with hints of coriander. Grilled Greek Vegetable Salad

et amidst a sea of verdant rice paddies in the hills of Ubud, Bodag Mailah is one of the island’s most inspired restaurants, with healthy organic meals prepared from produce grown at the adjacent Sari Organik Centre. A second restaurant has now opened at Suly Resort and Spa, a tranquil yoga and retreat centre in Mas. The pairing of Sari Organik with Suly Resort and Spa makes perfect sense – an organic centre that supports local farmers and a host of community projects, working with a wellness resort that provides support and training for Yayasan Bali Global Charitable Foundation, a local NGO that provides education for underprivileged children. The name Uma alas translates as ‘rice fields and rain forest’ and we find plenty of both in this quintessential Balinese setting that also incorporates tropical gardens, stone statues and a traditional style pavilion housing the restaurant. Fresh juices are colourful and brimming with vitality; the fluffy Pink Treat is the exact shade of the flourishing frangipani in the garden, with pineapple, mango, mint, beet, sweet potato and honey creating a thick, sweet loveliness. While the Green Cleanser is as vibrant as the lush leafy foliage surrounding the restaurant, with its blend of broccoli, tart apple and silky honey. Sari Organik is also well known for its homemade wines with tropical flavours like dragon fruit, mango, and passion fruit which can be bought by the bottle or mixed into cocktails.

Romantic Salad

We start lunch with a Romantic Salad, i have never thought of a salad as ‘romantic’, but nothing beats organic vegetables picked fresh from the garden, with the crispiest of leaves, the juiciest shredded carrots, sweet tender beets and crunchy red pepper. The side of homemade beet mayonnaise is fluffy and delicious, while the accompanying home baked bread has a wonderful earthy flavour with just a hint of caraway seeds. cut chips. Our next dish features tofu – one of those ingredients that is incredibly bland on its own, but can be transformed into almost anything. The Tofufalafel is a shining example – actually I don’t think I ever tasted tofu this good, thanks to a thick coating of middle eastern seasoning creating a delicious crunchy outer layer. It comes with big fat grains of organic rice (red and white) and urap made with lightly cooked vegetables tossed in spicy coconut milk. The Sari Organic experience is always a pleasure, with wonderfully innovative juices, and healthy and nutritious food that tastes great. A visit to the centre and to the original restaurant, Bodag Mailah is also highly recommended. Guests are welcome to explore the farm which specialises in growing organic vegetables and rice, and also produces jams, wines and cheese. Getting there is half the fun, a 15 minute walk along across the rice fields. \AB

A

career in the military clearly wasn’t meant for Christfian Nehemia. After an accident in his first year at the military academy he was forced to swap a soldiers uniform for crisp kitchen whites. “In a military academy, perfect physical form is a must, the accident meant I was no longer able to continue that dream,” he confesses. Christfian then found himself working as an electricity contractor for a year before he decided to enroll at the tourism institute in Surabaya. “This is where I was introduced for the first time to the culinary world.” He recalls. After three years of intense studying Christfian received a graduate certificate and went on to apprentice at Melia Sol Bali Resort (previously known as Bali Sol Hotel,) and Hilton Hotel before joining a cruise liner heading to the Caribbean Islands for two years. Upon his return, he worked for Hyatt Regency Surabaya (now Hotel Bumi Surabaya) as demi chef for three years and hopped from one opportunity to another within Java Island. “I worked for some hotels in Jogja and Semarang then finally returned

back to Surabaya,” he says. While working with Shangri-La Hotel Surabaya in 2000, Christfian was sent to the culinary institute in Parma, Italy for two years to polish his skills for preparing Italian delicacies. Today, this award-winning chef holds the position of executive chef at Holiday Inn Resort Baruna Bali. GRILLED COCONUT CHICKEN WITH LEMON BASIL RECIPE (Ayam Panggang Sulawesi)

G

rilled chicken (ayam panggang) is a popular dish throughout Indonesia and can be be prepared in a number of ways depending on which region you happen to be visiting. This recipe is a Let’s Eat favourite and comes from the seething capital city of Manado on the island of Sulawesi. Cuisine in this region favours the heavy use of ginger, lemonbasil and lemongrass and this recipe is deliciously rich, with chicken partially cooked in an aromatic broth of ginger fresh turmeric and kaffir lime before being grilled to crispiness. The broth is reduced to a thick paste, then used to baste the chicken as it grills. Perfect for summer time barbecues. \AB

8 shallots, coarsely chopped 5 cloves of garlic, coarsely chopped 3 to 4 red Thai chilies coarsely chopped 4 tablespoon peanut oil 2 stalks of lemongrass cut into 2 inch long pieces 8 whole kaffir lime leaves 6 candlenuts or unsalted macadamia nuts 1 piece of fresh turmeric root, peeled & ground 3 ½ teaspoons fresh grated ginger 1 ½ cups of unsweetened coconut milk 1/2 cup loosely packed fresh lemon basil (Thai basil can be used as an alternate) ¾ teaspoon salt 3 tablespoons fresh lime juice 1 chicken cut into pieces

Method: 1. Place the shallots, garlic, red chilies, green chilies, candlenuts, turmeric, and ginger in a small food processor. Pulse until you have a smooth paste. 2. Heat oil in a large skillet, add paste and sautee for five minutes until seperates from oil, then add lemongrass, kaffir lime leaves, & basil. Sautee 3 minutes until the lemony aroma arises. 3. Add coconut milk and salt and stir well. Raise the heat slightly and let the coconut milk come to a steady, gentle simmer, stirring occasionally, for about 10 minutes. Taste the broth. It should be spicy and rich. 4. While the broth continues to simmer, rinse the chicken under cold running water and pat it dry. 5. Add the chicken to the coconut milk broth and cook in a steady simmer. Stirring every 5 minutes cook for 30 – 40 minutes. Chicken should be tender and all the way cooked but not mushy or falling off the bones. Transfer to another dish. Continue cooking the coconut broth until thick and reduced. 6. Use the thickened broth as a baste and grill 5 minutes on both sides. Serve with Lemongrass coconut rice & Javanese carrots & cucumber salad! www.letseatmag.com
