uthenticity was the idea behind the original, and now famous Nasi Ayam Kedewatan in Ubud, a modest warung that blends perfectly with the surroundings. Ibu Mangku started the warung in 1964, with the aim of providing an eatery that everyone would enjoy. It has gone on to become an island icon, in fact some people say that you haven’t been to Bali if you haven’t been to Nasi Ayam Kedewatan! Customers from all over the world have gathered here over the last 47 years and its success has led to expansion. Ibu Mangku’s first son, Pak Dewa has gone on to open branches in Renon, Seminyak and most recently Sempidi.

The signature dish is the restaurant’s name sake, Nasi Ayam Kedewatan, comprised of white rice, ayam betutu (Balinese style marinated chicken), ayam Sisit (grated chicken), sayur urap (mixed green beans and coconut), sate lilit (Balinese chicken satay), sambal ati (seasoned and fried liver), telur pindang (spiced boiled eggs) and sambal with fried peanuts as the final condiments. Quality control holds an important role in maintaining the original taste of each item which is prepared with full attention to the composition and quality in order to maintain originality. t was in 1999 that the small bakery section of Pepito supermarket on Jalan Raya Kediri really came into its own and started its slow but steady expansion. More products were offered and then tables and chairs added so that weary shoppers could sit down and order a coffee or mocktail or a light snack. Advances in technology meant that Baker’s Corner could also offer wi fi facilities, ideal for business meetings and travellers wishing to stay connected. In 2009 Baker’s Corner expanded yet again, this time responding to a more dynamic urban market, with the opening of a new

branch in Denpasar, this is a bigger venue with an extended menu. The two story building features an upper floor that is more event focused with a capacity of 125 people, while the lower floor caters to a steady lunch and dinner crowd. Baker’s Corner main product range remains the same, although a more extensive variety is now available. Classic bakery items include European bread, donuts, assorted cakes like tiramisu and white chocolate cheese cake, cookies and fresh from the oven pies.

We visit the Jalan Raya Kediri Branch where light meals include salads, pasta, and sandwiches. For me the favorite would have to be the High Tea Package. Perfect to gather with good friends for afternoon tea and swap stories while enjoying a choice of sweets and savories and a wide selection of teas. The presentation is traditional with tea served steaming from a pot, and miniature delicacies piled on to a two tiered tray.

It’s a never ending story of creative ideas at Baker’s Corner on Jalan Raya Kediri, and all baking is done on the premises. During February they have their own Valentine’s decorations in one corner and in another, predominantly red Chinese New Year Parcels, including the distinctive Moon cake. There’s always something to celebrate at Baker’s Corner. \MA

You can’t help but notice the cakes on display, many have unique, extraordinary designs that can be personalized according to preference. Specialty cakes need to be ordered in advance but there are also delicious ready to go cakes available daily.

alentine’s Day is one of the highlights of the month of February, and a tradition that is celebrated by lovers across the world. But here on the island of the gods romance is so pervasive that every day is like Valentine’s Day, with planes delivering a steady stream of honeymooners, marriage celebrants and people in search of a romantic get away. Nevertheless, for those who wish to celebrate this day dedicated to lovers they can take advantage of the many restaurants and hotels offering Valentine’s packages with candlelit dinners, special menus and all the trappings. If you choose to spend the night at home here are some ideas to make your evening more memorable.

Firstly, make sure you know the history of Valentine’s Day, google some interesting topics on St. Valentine and don’t be afraid to spice things up with your own personal touch, like a little humor for example. Think about serving cheese as a first course, what can be more romantic than good cheese (maybe French) a bottle of fine wine and a great story about St. Valentine. The main course doesn’t have to be complicated, you certainly don’t want to be stuck in the kitchen all night. Why not ask for a quick and easy recipe from a friend that loves to cook, or choose something light that can be prepared in advance and served cold, or simply needs reheating. Lastly but possibly most importantly is a heavenly dessert. Think sweet and smart, go to your favorite patisserie and order something that you both enjoy, and don’t forget that chocolate is said to be an aphrodisiac!

The Street CafE Continental Charm

T

he Street CafĂŠ is set right in the heart of Sanur and has a warm and inviting continental ambience. Walls are the colour of plum wine, the slate floor tiles are huge, and the interior is furnished with chunky wooden tables and big comfortable chairs with firm cushions. I love the old grandfather clocks and the white grand piano (you can enjoy live music on Thursdays and Saturdays.) Stacks of magazines and a free book exchange make me want to curl up on a sofa for the day. If you prefer to sit outside there is a lovely shaded terrace that overlooks the Sanur street scape. The menu features lots of different influences but I am immediately drawn to the Pide, long oval shaped Turkish pizza,

and order the classic version with spinach, feta and olive oil. It is light and crispy and the flavors are brought alive by a sprinkling of cumin. Other Turkish influences include Lahmachun Sandwiches, pita bread stuffed with your choice of filling. The cafe is also well known for its flame grilled meats and seafood. Choose from fillet or sirloin steak, chops, German bratwurst sausages, or a variety of fish and seafood. The grills include a trip to the salad bar which includes a generous range of vinaigrettes and sauces including classic favorites such as Pepper or Mushroom, as well as more unusual selections such as Lime and Capers.

Moving on to Indonesian fare, we order Ayam Betutu, served traditionally on a banana leaf in a woven basket. The generous portion of slow cooked chicken is smothered in Balinese spices and accompanied with warm salty peanuts, green vegetables and krupuk. Shifting back to Mediterranean influences, we try the Street CafĂŠ Falafal, wrapped in folds of pita bread brimming with salad. The falafal balls are homemade and only lightly fried, and are very good as is the accompanying tsatziki. Other interesting dishes to look out for are Vietnamese Noodle Soup, Burgers (including Lamb and Camenbert) and a decent breakfast menu offering Chili Poached Eggs, and a

Continental style breakfast of homemade bread with spreads, cold cuts and cheese. For dessert we have Caramel a la Orange, a homemade vanilla creme with orange caramel sauce, it is light and fluffy, and dissolves smoothly in the mouth leaving lingering hints of caramel and orange. We all enjoy our various drinks; the Pina Colada Blend is a mocktail mixed with banana, strawberry, pineapple and cream – the flavor is definitely Pina Coladaish. There is also a well named Ginger Zing made with ginger ale, ginger, lemon and mint and a Lemongrass Ice Tea which is strong and heavily laden with fresh pressed lemongrass and squeezed lemons. Cocktails are very reasonably priced and there is also a nice selection of coffees. With its easy ambience, pleasant staff and good food, The Street Café is a lovely option at any time. \AB

tree lined driveway brings us to an imposing white mansion, complete with an elaborate portico supported by towering stone pillars. As we soon discover, The Mansion Resort & Spa is decadently opulent, brimming with grand staircases, rich embroidered fabrics, floor to ceiling white drapes and enormous chandeliers. Beyond the grand lobby, Indochine restaurant occupies an equally sumptuous setting with chaise lounges, a fine collection of paintings, Ming porcelain, 14th century French furniture and intricately carved antique musical instruments. French doors open on to a terrace overlooking an infinity pool draped over the rainforest. A pool side pavilion with powder blue drapes and a table for two seems like the ultimate location for a romantic dinner.

As the name suggests, Indochine presents a French Vietnamese influenced menu, with authentic flavors guaranteed by imported ingredients and recipes prepared by French and Vietnamese chefs. We are served a fruity welcome drink on the terrace and take a seat in an alcove where golden throne like chairs are perched under red velvet parasols, backed by a wall of elaborate Jepara wood carving. We feel like royalty! Doucer D’ET E

We choose the ‘Culinary Delights’ menu which gives us a sampling of some of the signature items on offer and our table is soon filled with various dishes. Beef Noodle Soup; a superb tangy Glass Noodle Salad peppered with lemongrass and shrimp; crunchy Spring Rolls; Shrimp on Lemongrass Skewers; a very French Beef Stew Served on Warm Flaky Pastry; a Crispy Crepe filled with vegetables and chicken. Everything is good, but my favorites are the Crab Farcie Au Gratin – the gratin is superb; and the Fresh Rice Paper Rolls a quintessential Vietnamese dish filled with ribbons of fresh vegetables laced with lemongrass, chili and coriander and served with a sweet chili sauce. We then move on to mains of Crispy Duck, tender flesh encased in a crispy skin, with a choice of rich orange sauce, or a dark spicy Indonchine sauce, a mild vegetable curry, and saffron rice. Or more precisely thousands of rustic, colorful wooden shutters arranged into a towering amphitheater. The design is really quite extraordinary and as I stand at the base of the structure I find myself shaking my head in disbelief. This is the latest offering from Potato

Head Jakarta - a bar that is consistently rated as one of the best in the nation’s capital. Thousands turned out for the soft opening in December, and visitors have been pouring in ever since, drawn to the unique design, fabulous food and cocktails, and the beach club ambience. A spiraling path leads through the wall of windows and emerges on a wide expanse of grass leading to an infinity pool and a secluded beach in Petitenget. Day beds are ideal for afternoon lazing, while live dj sets usher in the sunsets setting a livelier tone for evenings. Three restaurants are planned for the venue, but the Potato Head restaurant and Bar Deck are the first to open and serve www.letseatmag.com

up traditional bistro style comfort food. While meals are classic and hearty, the cocktails, created by Dre Masso, one of the worlds top mixologists are pure cutting edge. Premium liquor, tropical fruits, herbs, spices, roots and palm sugar are infused, mixed and muddled to create truly ambrosial concoctions. The Kookaburra features lemongrass gin, homemade vanilla sugar, muddled mint and lime and topped with a passion fruit foam. Forget the straw, you need to sip this one straight from the glass to get the blast of sour passion fruit mixed with the sweetened gin. Zesty mandarins form the base of the intoxicating and very refreshing Bells and Whistles. And for those

who like rum, The Big Bang is dangerously delectable, a fragrant elixir of spiced rum blended with passion fruit, mango and guava and served in a glass rimmed with orange zest candy. The cocktails are a tough act to follow, but the food doesn’t disappoint, in fact everything we try is superb, a range of delightfully ‘non-fused’ international cuisine. While the Dinner menu has a strong classic French influence, lunches are lighter beach fare. The French Onion Soup is a masterpiece of French cookery, thick, delicious and topped with an Emmental cheese gratin. Ignacio confides that the Fusilli Pasta and Meatballs is his favorite and I can understand why, with its generous serving of aldente pasta topped with tasty meatballs and a rich, authentic Italian tomato sauce. ortune Cookie, Sanur is a casual American style Chinese restaurant famous for fresh food, earth-friendly recyclable take away boxes, and home made fortune cookies, which most people will agree are the best way to end a good Chinese meal. The decor is modern and the concept is to serve healthy Chinese food, prepared without MSG (which can be pretty challenging in the Chinese food business). Only the freshest possible ingredients, like egg noodles, tenderloin beef, chicken breast fillet, and organic vegetables are used. American-Indonesian couple, Marcello and Nupi are the brains behind Fortune Cookie, taking over the business a year ago. The rebranding included moving to a new location, creating healthier options, and adding a dining room, while still continuing with a strong take away and delivery service. ver the last year Bali has experienced a dining revolution with the opening of a number of organic ‘lifestyle’ restaurants that clearly challenge the ‘hippy’ connotations of health food. Clear Cafe, Ubud provides an excellent example of this trend with enticing gourmet cuisine served in stylish surroundings. The entrance is masked by a stately row of green bamboo trees. Duck behind the trees to find a magnificent carved Balinese door opening in to an impressive space that blends sleek contemporary lines with contrasts of traditional Balinese elements. Walls of alang alang are punctuated by pillars of plexiglas; a modern lounge setting perches over a dainty lilly pond, while a long strip of pale pastel hued onyx is back lit to create an eye catching wall feature. Clear manages to be elegant but comfortable in equal measure, and while it looks expensive, surprisingly it’s not!

The beauty of Clear is that there is something for everyone, thanks to an eclectic mix of design, dÊcor, music, food and beverages. Wealthy guests from Ubud’s fanciest resorts sit alongside dreadlocked travellers, tourist families and locals. Vegans, vegetarians, non vegetarians and fans of raw food will all find something tempting from an exciting menu that provides snippets from various cuisines; Indonesian, Mexican, Arabic, Italian are all represented. Food is prepared consciously and thoughtfully with an emphasis on flavorful, organic local ingredients. Nut mylk (from local cashews) is made on the property and substitutes dairy in drinks such as the Chocolate Matrix, mixed with chocolate, mint, gingko and spirulina. The result is nutty, delicious and instantly energizing. The drink list is enticing with evocative names such as Strawberry Dream, Chocolate Town, Papua Papaya, Glittery Gold. We settle on an Eletroberry with fresh strawberries, mulberries, lemon and ginger, and a Tropical Twister a juicy extravaganza of orange pineapple and passion fruit, with just a touch of beetroot.

The food menu is equally as appealing and contains an intriguing array of main courses, salads, burgers and pasta. I want to try everything, but for now start with the Tuna Tataki, a justifiably popular dish featuring slices of cocoa cayenne seared tuna, topped with an alluring fan of dragon fruit. The tuna is really something special, soft in flavor and in texture and complimented by an interesting blend of earthy daikon, sweet shredded beets and a tropical mangostein sauce.

s a child I Rai Nuriana dreamt of being a doctor, but financial realities caused him to change his career path. He started thinking about the culinary world which he describes as “The art of crafting and presenting delicious food in beautiful forms. He enrolled at the Hotel & Tourism Institute Ujung Pandang, majoring in Food and Beverage where he learned basic kitchen skills and fell in love with cooking. His first professional step was in 1995 at Hotel Biak Aerowisata, Irian Jaya as senior chef. In 1997 Nuriana took a position at Le Meredien Nirwana Golf & Spa Resort in Bali. During this time he received a Quality Excellence Award for his contribution to the “Black Box Challenge” in 1998. His talents were also recognized the following year at the Culinary Competition 21st Bali Art Festival. Rai’s passion for learning different culinary techniques then took him to New Caledonia and Perth, Australia. Homesick for Bali, Rai returned in 2007 and worked at Anantara Hotel Seminyak Bali as Sous Chef. Now, aged 37 he is Executive Sous Chef at Furama Villas & Spa and Furama Xclusive Ubud Bali. Working alongside the Executive Sous Chef, Nuriana successfully presents classic Balinese food with a sophisticated presentation and also brings authentic Italian delicacies to the table. Viraj Chandrakant Bhammar Fusion Style

A

s a child growing up in Gujarat India, Viraj Chandrakant Bhammar, was more interested in playing cricket and eating junk food than working in the family restaurant. It wasn’t until the age of 18 that he joined the family business and developed a deep passion for the culinary arts. It was a journey that eventually led him to Bali where he is now the Executive Chef at Impala 60’s Restaurant. His love of junk food was quickly forgotten as he learned to experiment, and to mix and match the immense amount of spices at his disposal in order to create unique dishes. One of his greatest joys is personalizing dishes and he would like one day to become a personal chef. Viraj’s culinary skills were honed, and his experience grew as he worked in hotels and restaurants around the globe, including Spain, Italy, Singapore, Thailand and Malaysia. He spent years watching, learning and observing, before finally taking the position of Executive Chef at Impala 60’s in 2009. “I was traveling to gain knowledge about food and to see what other people like to eat in different parts of the world. At the same time I also wanted to find an opportunity to work in Bali - an international tropical destination….. The Balinese people are Hindu, so am I, so it’s just perfect,” he explains. 1 Chicken, cut into 8 pieces 1 tbsp Lime juice or tamarind juice 1 tsp Salt 3 tbsp Oil 3 Shallots, finely sliced 3 cm Cinnamon stick 1 Star anise 2 Cloves 2 Cardamoms 1 stalk Lemon grass, bruised 2 Pandanus leaves, shredded, knotted 5 Curry leaves 500 cc Coconut milk from 1 1/2 coconuts 3 tbsp Roasted shredded coconut, pounded

3 Candlenuts, roasted 1 tbsp Coriander 1 tsp Cumin, roasted 1 tsp Aniseed 1/8 Nutmeg 10 Red chilies 6 Shallots 3 cloves Garlic 1 tsp Chopped turmeric 2 tsp Chopped ginger 1 tbsp Salt

Method: Rub the chicken with lime or tamarind juice and salt. Let it stand for 15 minutes. Heat oil and sauté shallots until golden brown, then add ground spices, whole spices, lemon grass, pandanus leaves, curry leaves and chicken. Cook for a few minutes, then add coconut milk and pounded coconut. Continue to cook, stirring from time to time until the chicken is cooked and the gravy is thick and oily. Serve with rice. \AM

t’s impossible to miss Coffee Corner which occupies a massive two story building on the corner of Melasti and Jalan Legian. Flower beds filled with dense shrubbery mask a wonderful open and airy space with the definite vibe of a modern coffee house. White dominates the dÊcor with vibrant splashes of bright purple and lime green, creating a cheerful and striking effect. A gleaming glass deli counter is loaded with muffins, pastries, scones, cakes, quiches and even Aussie meat pies. Three seating areas include the terrace, an AC interior, and a cozy lounge with internet upstairs. We sit on the terrace next to the pretty aquarium which has been built into a wall and filled with gliding tropical fish. The smell of fresh roasting coffee permeates the air and I am soon sipping a very good Irish Nut Creme Coffee which is strong and creamy with just a hint of Irish hazelnut and white chocolate. The Cappuccino is perfectly executed and artfully

decorated with an elaborate chocolate design. It is obvious that there is a talented barista behind the bar, and indeed Manager Ms Rai learned her craft well at Gloria Jeans Kuta. Other coffee choices include Coffee of the day served in a plunger, lattes, espresso and a range of iced creations. Freezes are also listed on the board and flavors include Mixed fruit, Choco Mint Bomb and Crème Brulee. I can’t help myself, I just have to try the Cookies & Cream which is dense rich and chocolaty, made with ice cream, crushed oreos and milk. There is also a slightly less calorific Mango Freeze a naturally sweet frozen mango delight. I have to smile when I see the Old Fashioned Spider (icecream and soft drink of your choice) on the menu, which reminds me of my childhood in Australia. We try their newest offering, Spinach and Feta Gozleme, a traditional Turkish savory dish and also one of my personal favorites. Thin sheets of pastry are wrapped around water spinach, onion, red peppers cooked with lashings of garlic and then grilled. The taste is authentic and I really enjoy this dish which is perfect for a light lunch. The creamy garlic aioli on the side is also very good. he road to Taro leads us through Bali’s heartland, a maze of steeply terraced rice fields, traditional villages and groves of ancient forests. Here we find the Elephant Safari Park & Lodge, home to the largest herd of rescued Sumatran elephants in the world. Set amidst 3.5 hectares of picturesque botanical gardens, the Park incorporates a well appointed safari lodge, a restaurant and 30 elephants (plus three babies) who carry visitors on treks through the surrounding forests, bathe in the lake and eat copious amounts of sugar cane. The park has been created by Bali Adventure Tour founders Nigel Mason and his wife Yanie, and provides a home for elephants

that faced a grim future in government camps in Sumatra. Being an animal lover myself I am always wary of animal ‘theme parks’ but it is obvious that these elephants are well loved and well cared for, I would swear that some of them were even smiling. The park mostly employs locals from surrounding villages and everyone, from the mahouts (elephant handlers,) to the wait staff, and the GM himself, Mr Arafin Tirta Wijata, clearly enjoy the opportunity to work with these magnificent creatures. We are joining the ‘Safari Under The Stars,’ which will be followed by a buffet dinner, but we arrive early to explore the park, and www.letseatmag.com


are escorted by Mr Arafin who shares many stories about the elephants. We hand feed a couple of them and then pose for photos as they embrace us with their trunks for an elephant cuddle. We watch as they bathe in the lake, spraying themselves and all of us with trunks full of water. Two baby elephants chase each other around the park, playing like giant puppies. We also wander through the museum, which has a small but fascinating display including a 15,000 year old Wooly Mammoth skeleton. As dusk turns to darkness we alight an elephant named Desi for our twilight safari and she plods slowly and heavily down a

misty trail. We are blessed with a crescent moon peeping through the trees; its not exactly a comfortable ride, but it’s a whole different experience to enjoy the rainforest from high up in the canopy. Slowly our procession of five elephants return to the Park restaurant where a buffet, set up on wooden canoes is waiting for us. The ride was a little chilly so I head straight for the steaming tureen of Minestrone which is warm and comforting, enriched with beans, pasta and tender vegetables, true Italian style. When I meet Executive Chef Wayan he tells me that he learned this recipe from the legendary Massimo, Bali’s most famous Italian chef. Wayan honed his skills in some
