ocated at the poolside within Nusa Dua Beach Hotel and Spa, Raja’s is a Balinese fine dining restaurant. The name Raja is an Indonesian term that means king, and the restaurant aims to offer a truly royal dining experience serving Balinese food from centuries-old recipes, majestically presented and made with the finest ingredients to ensure a classic taste. Visitors to Raja’s will take home much more than just memories of the beach and standard hotel food. The authentic cuisine is based on research conducted at Balinese palaces and villages, and the result of more than a year of taste testing, guest trials, and in-house cooking contests. As Executive Chef Darren Lauder says, “Raja’s shows Balinese cuisine at its

finest.” As an interesting aside, although original Balinese food is served, Raja’s is certified as a halal restaurant to cater to non-pork-eating customers. The name is Sate Gede, which literally means giant skewer. It is accompanied by three kinds of sambal, the spicy condiments that accompany most Balinese dishes and cater to those who like things extra hot! The unique Timbungan Be Kambing comes with an atypical bamboo container; inside is spiced minced lamb baked in bamboo and carved at the table by the server. The kitchen staff bade us farewell with a sweet dessert called Cendol Manis – rice dumplings with coconut milk and palm sugar, reminiscent of a typical Indonesian-style dessert. It comes as no surprise that Raja’s has won numerous awards including the Hospitality Asia Platinum Award’s (HAPA) Gastronomic Experience – Asia Cuisine during the HAPA 2008–2010 REGIONAL Series. n a nutshell, Pantry Magic is a cooking playground. Although I have passed the shop on Jalan Dewi Sri several times, this is my first visit, and I am instantly impressed by its extensive and attractive array of lifestyle kitchen ware. The Hong Kong based franchise spread to Jakarta in 2008 and on to Bali in 2010, bringing its renowned classy design, and its tagline of providing Professional Quality Kitchen tools. I
t was my first day as an Indonesian teaching assistant at an international relations school in Washington DC, and my first meal at the canteen was a Philly Cheese Steak; a long bread roll with sliced beef and sautéed onions topped with melted cheese. I will never forget that first bite - it was one of the best things I have ever tasted and this has been a favorite meal ever since. As you can probably guess the Philly cheese steak, also known as Philadelphia cheese steak, Philly cheese steak, or steak and cheese, originated in Philadelphia, United

States. Its creation can be attributed to Pat and Harry Olivier who came up with the idea of combining sliced beef, onion and cheese in a small loaf of bread. Originally they sold their special sandwich at their hot dog stand near South Philadelphia’s Italian market. The sandwich was so popular that they soon opened Pat’s King of Steaks which you can still visit today on the corner of 9th Street in South Philadelphia. Geno’s is another famous Cheese steak venue located just across the street from Pat’s King of Steak. Some people say they were the first to add the melted cheese on top. www.letseatmag.com

The meat traditionally used is thinly sliced rib-eye or top round. The steak slices are quickly browned on a lightly oiled griddle at medium temperature and then scrambled into thinner pieces with a flat spatula although sometimes thicker slices are used. Cheese steak may include optional ingredients such as fried onions, sautéed bell pepper, mushrooms, mayonnaise, hot sauce, ketchup and pizza sauce. Of course a cheese steak just wouldn’t be a cheese steak without the cheese…. white American cheese, provolone, Swiss cheese, or cheese whiz, (processed cheese) are the most common additions. Some places premelt the American cheese to achieve the creamy consistency, while others just put

freshly cut slices over the meat, letting it melt slightly under the heat. Provolone is always a popular choice due to its extra-sharp and distinctly savage bite. A true Philly cheese steak is served in a locally baked Amoroso roll. Amoroso is a Philadelphia-based, familyowned company that specializes in baked breads and rolls. If you are as hungry from reading this as I am from writing it, your best option would be to head to Philadelphia and enjoy exploring the city while you search for the perfect sandwich. If going to Philadelphia isn’t an option, don’t worry because this sandwich is now a global phenomenon and can be found even here in Bali, try Soho on Jalan Oberoi in Seminyak. \MA www.letseatmag.com

t’s Friday afternoon and Jalan Raya Kerobokan is heaving with traffic, but the hustle and bustle of the outside world is instantly forgotten as we immerse ourselves in the peaceful haven that is Warisan..‌ A long graceful courtyard opens up to an extensive lawn and a serene vista of glistening rice fields; it is the sheer unexpectedness of it all that makes it so delightful! Recently reopened following renovations, the restaurant has lost none of its charm, and has gained the welcome addition of a car park and a valet service. Cetin Candan is our gracious host and explains that when the restaurant first opened 21 years ago it was completely surrounded by rice fields. Times change, and although the cuisine has evolved from Italian, to Vietnamese, to French Mediterranean; the picturesque views, dedication to quality, and warm ambience have remained a constant. The service is immaculate without ever being obtrusive and meals are delivered with such grace and dexterity that they seem to have appeared from thin air. Pick up a cigarette and a waiter will be there in a flash to light it for you. The enchanting courtyard is set for romance with well spaced tables that ensure privacy. I am particularly struck by the lovely old frangipani trees that have been grafted with flourishing orchids in shades of pink, purple and white. Live jazz music accompanied by sultry vocals sets the tone for Saturday evenings, while the monthly theme parties are legendary. We take a seat in the lounge area and soak in the views, the atmosphere, the antiques and the unique artwork. A round of Martinis sets the perfect tone for the evening. The Exotic Chocolate has an intoxicating aroma and taste with a chocolate rim adding smoothness and texture. The Lychee Rose has the fragrance of fresh roses and a sweet and mellow flavor. I also spot some lovely wines and Champagnes on the extensive wine list, which is very reasonably priced.

The Exotic Chocolate has an intoxicating aroma and taste with a chocolate rim adding smoothness and texture. The menu has a mix of predominantly French and Mediterranean influences and a thoughtful composition that makes it a pleasure to read….. Roasted Lobster Tail, delicately vanilla perfumed served with vegetable tartar and caramel ginger, Carpaccio of marinated Wagyu beef, highlighted by a Black Truffle and Brie sorbet, Drunken Lobster Ravioli in rich Lobster Bisque……. We start with Crispy Gyoza, dumplings stuffed with a fusion of Snail and Shitake mushrooms drizzled with a Garlic butter emulsion. These delicate morsels are soft on one side and panfried to golden crispiness on the other, with subtle flavors enhanced by the rich garlic butter. The Gratinated Java Oysters are also admirable - plump and juicy oysters cooked with spinach and a fluffy Champagne sauce. The Fine Pastry Tart of Bell Pepper and Tomato Confit complemented by Parma ham and Basil oil, is a beautiful dish; the sweetest of

char-grilled bell peppers resting on a bed of baked ricotta and light flaky pastry. Equally excellent are the Duo of Pan Fried Scallop & Prawn served together with green Risotto, Asparagus & Carrot Ginger Coulis and the Chicken Roll, stuffed with goats cheese, wrapped in Bresaola perfumed with rosemary and virgin sauce, served on a bed of quiona. We polish off our meal with a dreamy Chocolate Contrast, comprised of chocolate ganache and cacao sorbet. ixteen years ago the loveable Forrest Gump melted the hearts of millions with his simple southern charm. The blockbuster movie went on to win six academy awards, and spawned the birth of the Bubba Gump Shrimp Co; an ode to Forrest’s war time buddy - the shrimp obsessed Bubba. Lovers of the movie, shrimp aficionados, or anyone who likes good old fashioned southern style ‘Mama cooking’ will thoroughly enjoy the Bubba Gump experience. Portions are generous, sauces are rich and creamy, the seafood is cooked to perfection and served in a fun and imaginative style.

We visit on a steamy hot afternoon, the sign out front says ‘Cool off inside’ and it’s a welcome relief to sit in a fan cooled booth and order some drinks. The tart and refreshing Southern Blue Lemonade is mixed with homemade lemonade and blueberries. The Mango Sparkler features thick and sweet fresh mango lightened up with a fizz of lemonade and a splash of orange juice. While the Lemon Ups are bound to be a total hit with kids, we order the strawberry version which is loaded with crushed ice and served in a glass that has flashing disco lights. The staff are fun and bubbly, our waitress shows us the two license plates hooked on the table, one says Run Forrest Run, and she tells us that if we need something we flip it over to Stop Forrest stop, and she will come right over. She also shakes us up a very good Pomegranate Martini right at the table! The restaurant is massive, with an all pervasive retro American theme. Cookie jars and bottles of hot sauce line the shelves, portions are super size and the bar is saloon style. The open air dining room at the front is designed to replicate the verandah of a southern plantation house, out back is the more private ‘Mamas parlour’ with floral wall paper and a cabinet displaying fine china. My favorite area is the ‘Shrimp Shack,’ set up in the style of an old boat shed with corrugated walls, booth seating, and plenty of memorabilia.

As befitting a Shrimp Co, we eat a lot of shrimp starting with the Cajun Shrimp, sautéed and slightly sweet, served in a heavy iron fry pan. The Cajun butter is divine and there is crispy garlic bread on the side for dipping. A Bourbon Street Mahi Mahi follows, fresh and flaky grilled Cajun spiced mahi mahi smothered in creamy gravy, accompanied by shrimps and mashed potato. I just can’t get enough of that Cajun spice! The Bubbas After the Storm Bucket of Boat Trash is a rather impressive mountain load of tasty fried shrimp, lobster tail, mahi mahi and fries, served in a bucket lined with newspaper (printed with soya ink.) A slight change of pace is the Pear and Berry Salad featuring fresh greens, grilled chicken and feta cheese, with the added delights of strawberries, pear and glazed cashew nuts, all doused in a raspberry vinaigrette. Just when we thought we couldn’t possibly eat anything else, dessert arrives – a Strawberry Dream and it’s Forrest size (that means huge!) Slabs of Buttery pound cake loaded with vanilla ice cream, strawberry puree and whipped cream. The movie plays on constant repeat and there is lots of interesting Forrest paraphernalia, with story boards, promotion pictures and photos from the set. Like the movie, the restaurant is high on the feel good factor with tasty food and a fun atmosphere. \AB

ho would have thought that in a five year time span, a simple 3 x 3 m2 space selling dim sum and pao (Chinese buns) in Tangerang Java, would go on to expand to a space ten times bigger and lead to the establishment of 20 more restaurants spread right across Indonesia?

Oenpao, Sunset Road opened its door to the public in November 2010 welcoming customers with its warm and friendly concept of Chinese Dining. A spacious eating area offers indoor and outdoor seating for up to 200 people. The plunge pool at the back is popular with families and there is a large parking area which is always a plus point in the hectic and often crowded Sunset Road. The outdoor setting is perfect for dining on a not-so-hot afternoon, or in the cool of the evening. The indoor seating area offers guests two choices, a smart and clean looking non smoking section and a comfortable sofa smoking section dominated by red-black-grey cozy cushions, good for groups of five or less. Eating at Oenpao means eating with a signature welcome method, and when we sit down we are served a complimentary traditional Welcome Soup. The assorted

Dim sum is their specialty, after all this is how it all began. We have Siomay Ayam with a tangy chicken flavor, Swekiau in a soft wrap that leaves a warm feeling in the mouth, Siomay Udang that goes perfectly well with the dim sum sauce, and Hakau that is pink and delicious. Another typical Oenpao experience is the three sambals. These hot condiments accompany every meal adding some surprising tastes. The soya sambal is a classic, made from salty soya sauce and chopped green chilies. The dim sum sambal is a chili sauce and a good match for all dim sum (and everything else.) The Oenpao sambal is a deep red sambal made out of chopped dried chilies and other spices, and leaves a hot after taste that will stay in your mind until your next visit to Oenpao. The range of soups including Tom Yam Noodle with lots of seafood (squid, fish ball, dori fish,) rice vermicelli, and flavorful tom yam spices. The soup is yummy with a light coconut milk taste. The Seafood Curry Noodle is thicker with a coconut milk burst and is best eaten while it is still piping hot in order to get the perfect curry experience. The Special Roast Duck Noodle is super crispy with roast duck meat but the real thrill comes from the crispy neck skin and can be enjoyed with the welcome soup poured little by little to keep the noodles warm and soft. ucked amidst the vibrant market stalls and bustling alley ways of Poppies 1 Kuta, is a lush garden, the Secret Garden in fact, a well known bar & cafe that stakes its reputation on a well priced menu that affords excellent value; and the coldest beer in Bali!

The leafy garden features an island bar, and tables and chairs shaded by bamboo umbrellas. There is also a small stage where bands play nightly, creating one of the liveliest settings in the Poppies. Larger groups can be accommodated inside at long wooden trellis tables. When we arrive I notice some familiar looking statues and as I chat to Australian owner Ron Perks, he tells me that these were rescued from the old Kuta sea wall that was demolished last year. He found the statues lying on the pavements by the beach and with the help of the tourist police managed to save some of Kuta’s history. Look out for the wonderful mermaids, frogs and dolphins that once graced the seafront and are now scattered through the garden. The menu is a mix of western and Indonesian, the crowd is a melting pot of tourists and expats from around the globe and the style and portions are similar to those you would find in counter meals at an Australian pub. The vibe is suitably relaxed, friendly and just a little cheeky. Ron shows me a sign he is making for the bar, it says ‘Husband Day Care Centre,’ so the ladies can go off shopping for the day and deposit their husbands in the garden with an ice cold beer or two. Happy Hour all day is a sure crowd pleaser and the drinks are strong and

well mixed. We try a Deep Blue with vodka, lime, Blue Curacao and sprite, a pleasant drink that is not overly sweet (as blue drinks often are.) We also have a Secret Mission, a mix of white and dark rum, liqueur and fruit juice, this is one to sip slowly as it packs a punch! I also try Oxygen water for the first time, it is produced right here on the island and has a slightly sweet taste.

For those craving a good old fashioned Sunday roast, roast lamb is served monthly, accompanied with all the trimmings; roasted vegetables, mint sauce and gravy. The classic Aussie Meat Pie is a favorite with regulars, as is the authentic Cornish Pastie, choose from meat and vegetables, or vegetarian. The Chicken Kiev is excellent, a generous chicken fillet topped with a mild tomato sauce and melted cheese. The Italian sausage is served with creamy mashed potatoes and very tasty Asian greens. The Secret Garden Nasi Goreng Special is also worthy a try, it is flavorsome, MSG free and refreshingly non greasy! We finish with a warm, cinnamon laced Apple Pie topped with a lattice crust and vanilla ice cream. et in the leafy streets of the Umalas, Pulp Art Juiceteria is a lovely little cafe serving up a vast selection of juices, salads and wraps. The ‘living room’ setting is so relaxed and homely that it feels more like visiting a friend’s place than a cafe. Furniture is a mix of comfy sofas, coffee tables and funky retro bar stools. There is also a small terrace at the front. Founded by friends Orly and Sajan, the concept was simple, to provide good healthy food and fresh juice. Orly explains that she couldn’t find a proper juiceteria on the island so opened one herself. Imaginative and evocatively named organic concoctions are given an extra nutritional boost with health supplements from the Young Living range, and additions such as bee pollen, wheat grass, spirulina and flax seeds. The deli counter is filled with an abundance of fresh fruit and you can choose from the menu or create your own. Try the Some Like it Hot with tumeric, flax seed, chlorophyll, wheat grass and goji berries,
or the Elvis Parsley Cocktail with carrots, parsley, ginger and bee pollen. Fruit Smoothies include the very zingy Rasberry Ginger Lemonade, Chocolate Berry Blend and Tamarillo Passion.
We visit on a steamy hot afternoon, and find the air con, dub reggae soundtrack and mellow vibe are highly conducive to chilling out, and I am soon cooling down with an icy Strawberry Fields from the Frozen yoghurt range. It is truly sublime... made from scratch and obviously with love, this could well be the best frozen yoghurt I have ever had. Fresh berries, banana and apple have been crushed into the yoghurt, with the crunchy addition of cacao beans. I chat with one of the other customers who tells me that she is here for her daily fix – “this stuff is just so addictive,” she says....I know!

I could spend all day here devouring yoghurt but will leave that for my next visit, instead move on to the salads, opting for the Pulp Art Salad, in which you get to choose all your favorites, which pretty much guarantees the perfect salad. A form lists all the options from vegetables and greens, to fresh herbs, seeds and dressing, just tick what you want and the staff will assemble your customized creation. My choice includes greens, fresh mint, basil, carrot, beetroot, avocado, sprouts and a lemon dressing, each crunchy mouthful bursts with vitality and flavor. Wraps are a good option for breakfast or lunch, with choices including Omelet Feta Spinach Olive, Mexican or Grilled Chicken. I order the Middle East-Labane with homemade yoghurt cheese and vegetables, the cheese is divine, imbued with a unique Middle Eastern flavor, and is perfectly complemented by fresh chives and mint. Daily specials of Muffins, quiche and soup are listed on the blackboards, and I spot bulbous cranberry muffins, slices of Mulberry pie, delicate individual quiches, and heart shaped superfood spice bars loaded with natural goodness. Glass jars are filled with herbal teas and there is also a range of Young Living supplements and essential oils on display.

ohn Nash stumbled upon a culinary career at the age of 17, while working a summer job at a ski resort in his native USA. Each day while he was setting up the banquets he would pass the kitchen and see the chefs with their white jackets and tall hats. “It looked like a fun job” he says, and has been head over heels in love with cooking and the demanding lifestyle of a chef ever since. To pursue his dream, John, a native of West Virginia enrolled at the International Culinary Academy Le Cordon Bleu in Pittsburgh Pennsylvania. After graduating in 2002, he worked at several restaurants around the country learning the art of preparing world cuisine from reputable chefs. “I would like to work in every country in the world at some

point in my life in order to understand the different cultures and ways of life around the world, “ he says. To refine his skills and gather a broader perspective, he traveled to Japan, Qatar and on to Bali, arriving in January this year. “I heard about this job through a friend, and he refered to Bali as the Island of the gods...... Ingredients : 4 pairs of chicken’s livers and gizzards 5 pieces of shallots 3 pieces of garlic 5 pieces of red chili peppers 4 cm galangal 10 gr shrimp paste 1 cup of coconut milk 1 board of petai, salt and pepper.
Cut liver and gizzards into bite sized pieces. Skin shallots and garlic. Brown shrimp paste. Finely grind shallots, garlic, red chili peppers, shrimp paste. Brown these spices and galangal, mix them evenly. Add liver and gizzard pieces, and salt and pepper to taste. Mix evenly and add coconut milk, let it simmer for 3 minutes. Enjoy \AM

yodya is the name of the idyllic kingdom of Rana and Cinta, the lovers of the great Hindu epic, the Ramayana; a befitting name for this sumptuous and gloriously Balinese resort in Nusa Dua. In life as in the story, the Ayodya Resort, Nusa Dua is a place of peace and respite, decorated in full Balinese splendor. The driveway winds through elaborate fountains and statues depositing us at a magnificent wantilan building filled with temples, mythical statues and carved reliefs that tell the story of the Ramaya. We are here to visit Octopus Sports Bar, which initially seems like an odd addition to this typical Balinese resort but our hostess, the lovely Tressabel (Marketing Communications Manager) explains that the bar became so popular when they were screening the world cup that they decided to revamp and keep the sports concept. The moment we enter the cool, cavernous space I understand. It feels like a refined gentleman’s club with its plump sofas, multi tiered chandeliers and highly polished timber floor boards. Carved cast iron lamps cast a gentle glow over the pool table, and colourful stained glass windows are featured throughout. Amidst it all are black and white prints of sporting greats, and plasma screen televisions where major sporting events are aired.

Beyond the bar is the kitchen dominated by a pizza oven with the motif of a charming blue octopus painted above. Classic sports bar fare, including pizza steaks, sandwiches, pasta and burgers are offered, as well as various snacks. A good selection of beer includes Guinness and Hoe Gaareden Wheat Beer (an absolute rarity in Bali.) The wine list is small but features some good, very reasonably priced wines, as well as classic cocktails and a Bali Moon range. fluffy and a lovely shade of pale green, essentially a virgin pina colada with the interesting addition of apple and pandanus leaf juice. The Fruit Paradise is another enjoyable frothy fruity concoction. Moving on to cocktails it’s time for a Trijata Dreams which translates as ‘dream of the gods’, a heavenly delight with an abundance of flavors; the rich coffee tones of the Kahlua softened by tinges of pineapple liqueur and smooth coconut rum. The taste is dreamy, but also wickedly potent. We follow with an Ayodya Magic, I certainly feel a touch of magic after drinking this one, with its mix of vodka, banana and melon liqueurs, Triple Sec and guava juice.

ur ongoing mission to find the most delectable desserts on the island leads us to The Deli at the sprawling tropical Padma Resort at Legian. The outside area features a lovely timber deck with stylish outdoor furniture, surrounded by lotus ponds and dense tropical landscaping. But we opt to enjoy the view from the air cooled confines of the modern lounge, where we settle into comfortable sofas. Patisserie chef Made tells me that he likes to “Create art with food,” and this is apparent in everything that we try, starting with a selection of beguiling miniature cakes from the glass deli counter…..

A wobbly sweet pyramid of Peach Mousse set on a sponge base and topped with a gooseberry; a divinely delicate baked Boston Cheesecake, topped with slivers of dragon fruit; a Chocolate Dome with soft white chocolate wrapped around a filling of dark chocolate mousse, and decorated with a pink chocolate fan; and a rectangular Praline Nougatine cake with praline mousse resting on a crispy nougat base. The menu describes the Van bass & Alexander as “Dessert in a glass.” Basically a version of the classic Brandy Alexander, this smooth creamy blend has an interesting blend of brandy, fresh lychees, ice cream and lychee liqueur. In the meantime Chef Made has been busy preparing some of the signature desserts, which can also be found in their Italian beachside restaurant Bella Rosa.

The Lemon Dome is extraordinarily pretty, a dome of tart lemon mousse with a sweet lemon sauce in the centre, and a crushed wafer base. The fresh strawberry, mint and basil salad on the side is a wonderful accessory. The Praline is served in a brandy snap basket with segments of fresh orange and a separate praline dome on the side. My favorite is the Chocolate Fondant a dark chocolate, slightly sticky, spongy tower. As I tackle the outer rim with my spoon, a warm chocolate sauce gushes out, a beautiful sight to behold, and to taste. The pairing with frozen blueberry yoghurt creates a truly ambrosial dish. Chef Made’s artistic tendencies and his passion to create is unmissable. Each of the desserts is a work of art, plates are beautifully composed, with swirls of strawberry coulis, dots of caramel, chocolate swizzles and tiny chocolate fans in various colors. Designer desserts aside, the Deli also serves up homemade ice cream, macaroons and cookies as well as a selection of sandwiches, light meals, tea and coffee \AB

he soul needs four years more or less depending on what kind of human she has left, to clean herself from all the memories. It is only when is all left behind and the soul is clean again, that she is permitted to come back to earth as a human soul, or perhaps as something else…. Maybe a vine or a bird…. The longer the soul has lived before the longer the cleaning act. To wait so long is not agonizing; it’s the same with Champagne. Each year the Champagne creates more and more pearls which mean more and more life will be breathed into it, thus changing the character of the wine. So too, the human soul changes, as all

dreams, souvenirs, patches of good and bad, are erased and changed into a spotless soul, like the Champagne that becomes an immaculate fresh pearl beverage in the wine cellar. Then the soul is ready to come back as a seed or ovum, ready to be implanted again into the body of a woman or the soil of the Champagne area. At the table of the Consul, Josef showed the elegant shaped Champagne bottle. He took care not to touch the throat of the bottle, so the Champagne would not be warm when tasted. The Consul remarked right away that the year on the bottle had changed and
asked Josef, “The year has changed Josef, is the Champagne as good as the 1990?” “Oh yes Mr. Consul, even a bit livelier than the 1990, and as you know Mr. Consul, only in the best years does Duval Leroy produces the Le Femme Du Champagne. In these two circles, in 1990 and this one 1996” to which Mr. Consul answered “Lets taste it then Josef and let me be the judge of it.” (to be continued)
