H

ere we go again – another festive season has arrived and the Christmas tunes are driving shoppers into a frenzy of preChristmas spending that many retailers depend on to carry them through the dry spells.

And the dry spells have been alarming this year. Media reports over the past few days have carried news of the imminent collapse of retail giant Edcon. The Sunday Times reported that the retailer is debt-laden and requires R2billion in emergency funding to prevent the closure of Edgars, Jet and CAN. Earlier Times Live reported that “ in a desperate bid to stave off liquidation and the loss of up to 140,000 jobs, retail giant Edcon has held out the begging bowl, asking its landlords for a two-year 41% “rent holiday” in exchange for a 5% stake in the business.” In a bid to quell the panic, Edcon

CEO, Grant Pattison, responded that Edcon has been with this risk for some time but they are close to closing a deal to fix the business. He added that the Group had a great sales day on Saturday (15 December 2018) with sales up on last year. How much of a difference a single day of good trade can make is questionable but it goes to show how important the festive season is to retailers. So, when you are out and about this season, if your conscience is nagging you to stop spending the money you don’t have to buy things you don’t need, to impress people you don’t particularly like, remember that you are contributing to the greater good. You are doing your bit to keep the wheels of the retail industry turning and saving thousands of jobs in the process. On a different tack, the Life & Style team will be taking a break over Christmas and New Year to recharge the batteries in preparation for 2019 which we are confident is going to

be a cracker of a year. There have been some really exciting developments in the company and we have been fortunate to attract some top talent for both the radio and print teams. Without going off at a tangent and overloading you with info, suffice it to say that there will be some great entertainment coming your way from the L&S group in the new season. We have been particularly gratified to see the exponential growth of engagement on our social media platforms that in turn has driven our audience and readership numbers to record highs this year. We look forward to continuing the trend in 2019 and offering our advertisers the benefit of this engagement on so many levels. Now, all that remains is for me to thank you for your continued support and to wish you and your loved ones a truly blessed festive season. If you can, help to spread the spirit of the season with kindness and gentleness in your dealings with those around you – it could be the start of something really special! MOUNTAIN BIKING 101 ROSIE CAREY

F

OR people who have never ridden before, or for those whose last memory of riding a bicycle was to school and back, starting mountain biking can be a daunting prospect. In fact, just thinking about all of the paraphernalia that goes with mountain biking, never mind the actual riding, can be enough to put you off. Do not fear! It doesn’t have to be complicated if you follow this step-by-step guide. The most attractive thing about mountain biking is that anyone can do it. Yes, anyone. It doesn’t matter if you haven’t exercised for forty years, if you’re overweight or if you believe you have zero co-ordination. With a little help, I guarantee you that you can enjoy being outdoors on a bike, and I can think of few better ways than to spend a summer’s day freewheeling through the sugarcane with the wind in your hair and the sun on your back.

STEP 1: THE BIKE Obviously you need a bicycle to mountain bike, however you certainly don’t need to own one. Not at the beginning, at least. Holla Trails has rental bikes that you can use and the staff at the trailhead (that’s what we call the Holla Trails office at Sugar Rush Park) will help you to select one that is suitable for you. Renting a bike for your first few rides is a great way to establish whether mountain biking is something you want to pursue without the outlay required to purchase a bike. A rental bike is also useful if you don’t plan to ride frequently, but rather just do the occasional outing. If you do decide to buy a bike, remember that mountain bikes vary considerably in what they offer and what they cost, so make sure that you do some research before taking the plunge and buying a bike. Good bike shops will often give you the option of riding a demo bike so that you can get a feel for a particular bike before deciding on a purchase. STEP 2: THE HELMET Don’t ride without a helmet. Ever. Even if its just around the carpark. Helmets are readily available from all bicycle shops and most sports shops, but if you don’t want to buy one just yet, you can also rent a helmet from Holla Trails. Again, speak to the staff at the trailhead for help. STEP 3: THE KIT Cycling shorts: It’s not necessary to wear padded cycling shorts (the correct term is a chamois) but it is far more comfortable. You don’t want the enjoyment of your fist ride to be dampened by painful nether regions. I know that proper cycling shorts feel like a nappy when you first put them on, but half an hour into your ride you will be eternally grateful for that nappy. As with helmets, cycling kit is readily available at bike shops and many major sports shops. SHOES: Useful when riding if you value your feet. Any takkies will suffice (unless you are super confident and are going straight into cleats- special cycling shoes that clip into custom pedals- in which

case you will need to wear cycling shoes with the correct cleats). SUNGLASSES: These are not just to make you look like a pro. Sunglasses protect your eyes from foreign bodies and sugar cane and I strongly recommend that you don’t ride without them. GLOVES: Gloves are not necessary but again they will make your ride a lot more comfortable. Cycling gloves are padded so that when you’re gripping your handlebars (hopefully in excitement, possibly in fear) your hands don’t get sore. They also protect your fingers if you happen to fall. STEP 4: WHAT TO TAKE ON YOUR RIDE I recommend taking the following with you on your ride as the bare minimum: a cellphone (in case of emergency, but more importantly to take pics of the beautiful scenery), a bottle of water or energy drink, something to eat if you’re going to be riding for a while, a puncture repair kit and small pump if you don’t have tubeless tyres (remember to ask about this when you buy/rent your bike). STEP 5: THE RIDE You have your bike, your helmet and your kit. Add some enthusiasm and a sense of humour and you’re ready to ride. It sounds simple enough, but for many people the practicalities of actually getting to this point are challenging. I’m going to explain exactly what you need to do so that the thought of going for a mountain bike ride doesn’t become a mountain… If you aren’t renting a bike, you’ll need either a car into which your bike fits (you may need to take the front wheel off) or a bike rack (these usually attach to your towbar). Drive to Sugar Rush Park and head for the Holla Trails office- it’s easy to find and wellmarked. Fill in the indemnity and purchase a day permit. If you start to ride more frequently, it will be worth your while becoming a Holla Trails member in which case you pay an annual subscription and don’t need to purchase a daily permit. Head out onto the trails. The trails are all colour coded and well-marked and it’s difficult to get lost on the shorter routes. Look out for the coloured arrows, not the running man (that’s for trail runners). I always suggest starting with the green route. You can do the short green route if your fitness isn’t great and the long green route if you’re fitter but new to riding. The green route is mostly easy gravel road with a short section of single track meandering through the forest and beside the dam. The more confident beginner can tackle the silver route, which is short but has some beautiful, flowing single track. Once you’ve mastered silver route, you are ready to take on pink or purple routes. Remember that if you feel nervous riding a

eing our last edition for 2018 I think it best to pass on some tips for all that are on holiday enjoying our lovely beaches.

There is nothing more annoying than being a victim of crime while out trying to relax after a busy year and although we might not stop all crime, we can certainly contribute to less of it being committed by taking some precautions. Let’s break it down as there are tons of things one needs to be aware of.

PARKING

Avoid parking your car in deserted areas especially in the early hours of the morning. Park where there is a lot of traffic flow or park outside a resort that has a security officer at the entrance gate were he can see your vehicle. Do not take valuables to the beach and never leave them in your car. Be careful where you leave your car keys and make sure there is nobody watching where you have hidden them. Double check your locking system to insure you are not a victim of lock jamming.

ON THE BEACH

• Never leave anything unattended even when you swim. Have someone sitting with your stuff at all times. • Make sure you have packed all those needed items for the beach the night before as most car parks will be full and parking will be an issue if you have to leave to go and get something that you have forgotten. • On sunny days the beach sand gets very hot. Make sure you have shoes to protect your feet when you walk across it. • Do not consume alcohol and swim. • Swim only at beaches that have shark nets and lifeguards. Lifeguard hours are from 06h00 to 18h00 from the 15/11/18 to 15/01/19. • Be aware of changing weather conditions. Wind can blow umbrellas and gazebos away and even destroy them. Make sure they are firmly secure in the sand or you have a rope attached to a weight to hold it down. • In the event of an emergency, go directly to the nearest lifeguard station. •For all Emergencies, phone 032 9462711 (Ballito Fire Station Control Room).

E look back on the year and once again, are in awe of what has been achieved at Ashton during the course of 2018. Apart from the academic, cultural and sporting milestones and goals which our students and staff have set and attained, the campus build out has continued at an incredible pace. We have been blessed by an unprecedented number of additions, alterations and new structures across the campus this year.

The new wall was built at the corner facing the M4 proudly displaying our uMalusi accreditation and our ISO 21001.18 – Ashton being the only school in SA to have this accolade. The upgrade of the grandstands and fibre-glassing of the pool, as well as new pool blankets and lights have made an enormous difference to this area of the school and Ashton Swimming Academy has grown in leaps and bounds. The new entrance gate is in the process of being completed – this will serve as protection for the Security Guards from the weather elements, a waiting area for students, as well as a house our new dog, Posh for the security of our students. The Ashlings garden’s make-over and the new AstroTurf cycle track, sandpits, awnings, grassing and ‘pencil fence’ has given our young students much pleasure during play time. The Foundation Phase quad is also presently being refurbished, and students in this phase of the school will return to school next year, to a beautiful new space incorporating a mini Astro soccer field and exciting new wooden jungle gyms. The Grade 2 classrooms also now boast studios for enhanced learning opportunities and monkey proof vegetable gardens were built and are flourishing under the care

Eduardo Gomez, the founder of Tequila & Mezcal Fest, has revealed the perfect method for a quick - and authentic - guacamole, and pointed out that substituting lemon juice for lime is a mistake. According to Eduardo failing to use enough juice is another common mistake, with the juice of two limes being the necessary amount in order to correctly balance all of the vibrant flavours. He said people sometimes use parsley in the dip, when the correct herb to include is coriander, and he added that its kick should always come from fresh chili - not dried. When putting the ingredients together he suggests using a blender or a mixer to get the perfect blend. He says the perfect guacamole is made up of three ripe avocados, Thai chili, and as much coriander as you like. The word Guacamole comes from the Aztec language, with ‘Mollli’ meaning sauce, and ‘Ahuacatl’ meaning avocado - making the literal translation ‘Avocado Sauce’. ‘The most important thing is to use the freshest ingredients possible and the avocados have to be perfectly ripe, not super soft but not too hard either.’

YOU WILL NEED: •Three ripe avocados •One fresh green chilli. Eduardo Gomez recommends using a fresh green Thai chilli •Freshly squeezed juice from two limes •Cooking salt (to taste) •Coriander (as much as you like) METHOD: • Chop both the chili and coriander as small as you possibly can. • In a medium size bowl, mash the avocado flesh with a fork, leaving a few chunks in for added texture. • Then add the coriander, chilli, lime juice and salt to the mixture. • Mix the ingredients together with a bigger spoon or spatula carefully so as to bind it without creating too much of paste. • Taste and add more lime or salt if needed to try to find the balance of all the ingredients.

O, you’ve decided to go the somewhat easier route and serve take-out for dinner. There’s nothing wrong with that – sometimes you just have to be realistic about what you can handle given the time you have, and picking up takeaways will save you many precious hours at the end of a busy day.

The only catch is, take-out food, if served straight out of the container or flopped onto a plate, can look a little sloppy and unappealing. Luckily for you, there are a few simple hacks you can draw on to improve the aesthetics of any dish. Take these five presentation tips to heart to serve up takeaway meals that look like they’ve been prepared by a professional catering company (like us at Food Matters). FIVE CATERING TIPS TO REMEMBER WHEN SERVING TAKEAWAY FOOD

1. PICK THE RIGHT PLATES Rather than just grabbing the first set of plates at the top of the pile in your kitchen, give careful thought to what to use as the backdrop for the food you’re serving. As a general rule, use bigger plates that allow for some empty space to be left around the edges of the meal – this looks much more elegant and appetising than a smaller plate heavily laden with ingredients. Also be sure to stay away from multicoloured crockery with busy patterns as this tends to detract from the food and just look messy. A plain white plate is always a safe choice – especially if the meal is quite vibrant in tone – but black crockery or wooden boards can also look very appealing below food in more muted colours. 2. WORK WITH THE CLOCK It sounds overly simple, but this basic approach to positioning ingredients works every time. Professional chefs recommend that to achieve the perfect balance of meal elements visually, you should think of a plate as the face of a clock – place the

take-out centrepiece (the meat or fish, for example) at 6 o’clock, the vegetables at 11 o’clock and the starch or sauce at 2 o’clock. This arrangement will introduce a slight asymmetry that’s appealing to the eye. 3. INJECT A POP OF COLOUR Unless you’ve specifically opted for a certain food colour scheme, like all-white, for example, it’s a good idea to play with tones to add some interest and energy to the look of the food. If you haven’t opted for takeaway food that naturally features a variety of colours, pick up a few extra ingredients that’ll inject some vibrancy onto the plate. Edible flowers, microgreens, orange zest and pomegranate seeds all work well. Alternatively, you could use a brush or piping bag to add a lick of brightly coloured sauce or mustard to the dish – just make sure it complements the flavours of the take-out. 4. LAYER YOUR ELEMENTS Just like you would if you were setting up a floral arrangement, place elements on the plate at different heights to add visual interest. You could either keep your take-out components separate and position them carefully to stand at different levels – for example, a mound of rice with a lamb chop leaning against it, next to a line of peas – or you could build them up on top of each other, starting with something sticky or saucy and ending with ingredients that are light and crisp. 5. DON’T FORGET THE DRINKS A well-made, interesting drink can make a gathering that much better and add a lot to the aesthetics of a meal. Since you’ve saved time on food preparation by opting for takeaways, why not spend 30 minutes or so whipping up a delicious, beautifully

presented beverage – a customised cocktail, for example, or even something as simple as gin and tonic with various garnishes (like cucumber, rosemary or even chilli). If presentation is important to you (as it should be), and you simply don’t have the time to put together a meal from scratch for a particular occasion, you could always lower your stress

VW IS RESURRECTING THE DUNE BUGGY

hree years ago, the Specialized Turbo Levo e-bike was introduced. The 2019 Specialized Turbo Levo is v2.0 of the landmark bike and it addresses three years of ideas, suggestions, and complaints about the previous model.

WHAT CHANGED Every aspect of the Specialized Turbo Levo has been improved. RIDING THE SPECIALIZED TURBO LEVO The ride is impeccable! The descending performance is a few notches above the old Turbo Levo. First and foremost, the bike has been updated from old Stumpjumper to the 2018 Stumpjumper geometry and fit. So all the benefits experienced there carry over to this platform. Next, the platform has shifted from plus to 29er. This translates to a more planted, communicative feel in more terrain. It also opens up more options for tire brands, tread and compounds. And finally, the weight is noticeably lighter. About 800 grams has been shaved from motor/BB area so the bike feels more nimble in tight, up and down terrain. Couple that with Fox suspension that is properly valved and supportive and it really climbs and descends with enthusiasm. Mtbr test rode the Specialized Turbo Levo for two days in very varied terrain in Europe and this really is a complete, unprecedented package. The motor is quiet and it comes on and off almost incognito. Upon hitting the 33km/h limit, it even knows if you’re coming up to it fast or just hovering around that point. Thus it knows whether to shut down early at around 28km/h or let you go to around 33km/h. With the light weight, big battery, remote switch, display and app, it offers an ecosystem that is unrivalled. Go simple or go fancy, it’s all available to you. And something pretty remarkable is the family of Turbo Levos at different price points. There are 5 bikes, delivering a solution to most interested consumers.

OLKSWAGEN is resurrecting the classic dune buggy as a modern electric car, according to an anonymous source inside the automaker.

The new car is ‘under active consideration’ as a possible addition to the firm’s upcoming range of zero-emission ‘ID’ vehicles, it’s claimed. It will be inspired by the classic 1960s Meyers Manx dune buggy, which itself was built on an original VW Beetle chassis. Like the 60’s version, the modern two-seater open-top buggy will feature a freestanding windshield, oversized tires and a roll bar, according to the source. It comes after news emerged in September that the revitalised Beetle was itself to be axed 80 years after it was first introduced. Speaking to Autocar magazine, the anonymous source said that the dune buggy concept is currently under construction and is expected to be unveiled at the Geneva Motor Show in March 2019. Volkswagen never built it’s own dune buggy, but many were created using Beetle frames or chassis, from which the body could easily be removed. The 1964 Meyers Manx shaped the rise of the dune buggy phenomenon in the United States and abroad beginning. It was named after Bruce Meyers, a pioneer of the dune buggy craze who built car kits to convert VW beetle chassis for off-road use. In a similar fashion, the new dune VW buggy will be based on the company’s new battery-powered chassis platform, which has been designed to accommodate a variety of body styles. The firm is said to be working on two other retro-themed electric concept models under the ‘ID’ moniker to fit this base.
