t took three years and hundreds of hours of planning, designing, building and finishing, but Brian and Georgina Finch achieved their goal: a familyfriendly retreat on Lake Huron that serves as the ultimate getaway.

With their former cottage a longer drive away in Muskoka, the Finches decided to make their summer home on Lake Huron and purchased a double lot near Grand Bend.

“It’s not that far away so the kids can come up and spend the night and go back to London for work the next day,” explains Brian. But most visitors don’t want to leave the six-bedroom, seven-bathroom beachfront home so quickly.

“We love to entertain and we’ve had my wine club up for a tasting and most of them stayed overnight,” he says.

“My book club has been up too,” adds Georgina, and while having these adult visitors is high on their list, one main reason for building closer to London was being able to host their growing brood of eight grandchildren and their parents for extended stays.

The design

Myra Truer, of Detailing and Design by Myra, had helped the Finches design eight previous homes, so their “soft, contemporary style” was easy for her to capture, she says.

Using modern construction methods, the home was built to be open concept and oversized windows throughout it offer people inside the dramatic views of Lake Huron.

Truer says Steve Sims, of The Barnswalllow Company turned her drawings into

architectural plans and he “grew it out of the ground“ “The home is built more like a commercial building with structural steel,” explains Sims, “which allowed us to make it open concept.”

He designed it to have a 42-foot steel ridge beam in the ceiling, allowing the rooms to be open and not obstructed with pillars.

State-of-the-art technology runs all the home’s systems – including automatic blinds – through an iPad or smart phone, but the cottage feel isn’t lost.

One example is the elevator, which will allow the Finches to age-in-place and aids in the transportation of guest luggage to the home’s three levels: Its shaft is in the middle of the house but disguised with tongue-in-groove cladding painted beachy white.

The covered outdoor patio that can become a sunroom with a drop-down screen wall is a smart feature that maximizes indoor/outdoor living.

The dining room’s large windows provide expansive views of Lake Huron as the perfect accompaniment to dinner, while some of Brian’s extensive wine collection is housed in the tempered glass storage unit.

The climate-controlled room features an electronic inventory control feature as part of the home’s smart technology.

Form and Function

wine storage units are as beautiful as they are practical.

The same can be said about the white, bright kitchen, butler’s pantry – all designed, built and installed by Woody’s.

According to Alison Dudek, of Woody’s Premium Cabinetry, the Finches wanted to carry the beach theme into the home’s décor as much as possible, so a manufactured wood product that resembles driftwood was used to construct many of the bathroom vanities, while others are specially stained walnut to match the flooring.

The bars in the basement exercise room and the master level lounge area continue this theme. But sand gives over to glam in the master bathroom and closet.

Two special features of the latter – measuring 22’ x 14’ - are what Truer has termed “the purse gallery and the shoe library.”

A much-loved chandelier from their previous home hangs above the closet’s oversized island with drawer organizers for accessories, as well as four locking drawers for jewelry. 

Brian has been an oenophile for 25 years and has collected thousands of bottles of fine vintages —including 3,500 he keeps at the Grand Bend home.

Woody’s Premium Cabinetry built a temperature-controlled wine storage closet in the basement, which is the main storage area. A tempered glass-fronted display case provides one wall of the dining room as the other. Made of solid walnut burnished with beeswax, these

Of course, a major attraction of lakeside living is being outdoors, so developing the lot was a big part of the project. Landscape architect Richard L. Crossman, of Parterre Landscape Design Associates, developed a plan that took advantage of the lot’s natural beauty.

He used extra-large pieces of flagstone to form the terrace and incorporated kid-friendly features into the design, like a fire pit for roasting marshmallows and an outdoor shower. A covered observation deck for enjoying famous Lake Huron sunsets was also included.

Crossman included beach grasses in his design so the “home looks like it fits into the landscape, not the other way around.”

After the time, money and effort to achieve their dream home, are the Finches happy with the result? “We had the whole family there at Christmas (gathered around the dining table that can sit up to 20, specially made for them in New York),” says Georgina.

“And it was just perfect, just the way I’d imagined it.” n

ith a large family-style house, an upscale home built from shipping containers and a loft in North London, this spring’s Dream Home Lottery offers three distinctly different styles.

“We have three really exciting packages,” says Rita Fieder, spokesperson for the Lottery which raises money for health care in the London region.

In Bayfield, Brent Hillier of Hillier Contracting Inc., has built a unique, upscale home, constructed from eight steel shipping containers.

The home, at 28 Cameron Street, is attracting considerable attention from passers-by, Fieder says. “It’s certainly something different for us,” she adds, of the style.

The three-level home, at just under 4,000 square feet, has bedrooms on the main level while the living room and kitchen on the upper level – with expansive windows overlooking a forested area. It’s decorated by Jillian Summers of Upstaging, with furnishings from Ryan LeClair at Warehouse 74.

For those with lofty dreams, the second Lottery home is a two-bedroom suite in North Point by Domus Developments, London’s first modern 

early one in six Canadians is over 65 and the senior ranks continue to grow.

The changing demographics have meant a shift in attitude toward seniors, as well as a shift in services. There are more choices for seniors than ever before when it comes to retirement living, with many facilities offering all residents need under one roof.

or the third straight year, the Lambton Film and Food Festival (LaFFF) is bringing a bit of Hollywood to Forest, ON. LaFFF kicks off Thursday, May 26, with the Youth Short Film Competition.

Films, created by area high school students during workshops with instructors from the Toronto International Film Festival (TIFF), will be screened at Kimball Hall. “It is a great experience for the students,” says LaFFF steering committee member Scott Ferguson.

Each subsequent evening, three TIFFrecommended films will be shown at Kiwanis Kineto Theatre. “We’ve picked

films we think people of the area will enjoy,” festival chair Glen Starkey says.

“We’ve got a great lineup this year.”

“Lambton has such a rich heritage of food production,” Starkey says. Local restaurants will feature special dinners during LaFFF, he says. The festival will also feature a pancake breakfast, pig roast and barbecue, art demonstrations, live theatre and DJ services.

Starkey says community volunteers are “critical to our success,” adding LaFFF receives a lot of help from local Kiwanis and Optimists clubs. In turn, LaFFF aims to support the local economy, by bringing people to Forest and

providing shops with additional exposure and foot traffic.

The event began in 2014 when Starkey was looking to “utilize the Kiwanis Kineto Theatre and bring some better quality films to the area,” he says. “Each year, it seems more and more people are coming out and they say ‘we’re going to come back and bring our friends.” b

Picking the

perfect pairing

ith the explosion of craft beers on the Canadian suds-scape, it’s easier than ever to find new and exciting combinations of food and drink. But all this variety can be a bit overwhelming, so here are some words of advice from a few local experts.

According to Rick Doyle, co-owner of Toboggan Brewing Company, many suggestions for pairing food and wine can be applied to beer. “With grilled or smoked meats, serve a fullerflavoured beer, like an amber or a stout but with something lighter, like salad or fish, try a blonde or a wheat beer,” he advises.

Milos Kral, owner of Milos Craft Beer Emporium, says when picking food pairings, wheat or blonde beers can be substituted for white wines, while darker beers can be enjoyed in place of reds. Try a glass of stout or porter with a heavier meat dish, like lobster or steak, he suggests – and wheat or blonde beer with your favourite fish or chicken dish.

Wayne Newton, who describes himself as an “omnivore of the beer world” and often writes about craft beer for national newspapers, says choosing the right pairings is a personal pursuit. “Go with what tastes good to you,” he adds, noting many crafters websites offer tasting notes.

He’s excited about the emergence of dark beers being offered by many Ontario craft beer makers.

“Ontario crafters reinvented the IPAs and now they are doing the same with dark beers.” He recommends enjoying a nice stout with a plate of raw oysters. “Railway City and Forked River both have excellent dark beers.”

Because grilling is one of summer’s great pleasures, Newton also recommends Dead Elephant from Railway City Brewery in St. Thomas as the perfect match to barbecued burgers.

All four experts agree that the perfect finish to any meal is a stout matched with your favourite dessert. and adds that he likes to pair a hoppy beer with spicy Thai or Indian dishes.

He matches Iron Spike Copper Ale with chicken dishes and The Witty Traveler with stuffed pork tenderloin.

“Wheat beers are so refreshing and often have a lower alcohol content, so they are perfect for summer socializing on the patio,” says Corriveau.

All four experts agree that the perfect finish to any meal is a stout matched with your favourite dessert.

“The roasted coffee flavours of stout are delicious with chocolate or berries,” says Doyle.

Newton agrees.

“A rich chocolate dessert pairs perfectly with a craft porter or stout,” he says. “Drink a lager or wine with dinner but go with stout with dessert.” n

or those who grew up in southwestern Ontario, a day trip to the beach at Port Stanley is a fond childhood memory. This seaside village hasn’t lost its original allure of surf and sand but continues to grow in ways to keep bringing us back.

Reportedly the Great Lakes’ longest breakwater, the extended pier welcomes strollers night and day to venture 1,475 feet over Lake Erie. With lighting, benches and glass look outs, visitors can take in the beauty of the water, the sunset and gaze back at the beach.

The adjoining greenspace, Hofhuis Park, is due to be completed by the summer of 2018, according to Lloyd Perrin, director of physical services with the municipality of Central Elgin.

Two new eateries join the village’s gastronomic offerings.

At Solo on Main, Lauren Van Dixhoorn returns to her roots at what was Mickey’s Boathouse. “It was my first job in a restaurant. I was a dishwasher there in high school.”

Since then the owner/chef has refined her training at Niagara College’s culinary school and high-end restaurants in Toronto, Niagara and Bermuda.

The sleek, spare décor will enhance seafood and lakefood offerings that are highlighted by citrus, oils and herbs. Van Dixhoorn describes the fare as fresh and light and the menu as offering small and large portions. “There will be many options to share plates.”

Slated to open in mid-May, Solo on Main will serve brunch on weekends, lunch and dinner nightly, and service will continue until midnight.

The New New Age, on Bridge Street, is the love child of Stephen and Katie Hotchkiss. The duo moved from Los Angeles to take over Stephen’s family’s Port Burwell area farm in 2014 and opened The New New Age last fall.

Serving dinner Thursday to Saturday from 4 p.m. to 8 p.m. during the season, Hotchkiss says that 90 per cent of all food and drink offerings are locally-sourced and organic, many coming from their own farm. “We sell vegetables, honey and tea made from herbs we grow,” he explains.

Local organic beers and wines are also available for sale, and the Hotchkisses make their own craft beers in the onsite microbrewery.

Harbourfest floats its way back into town on August 6 and 7 this summer. Make like a pirate with a ride on the tall ship Pathfinder or watch buskers, fire eaters, jugglers and musicians perform along village streets and parks.

W

ith two marquee country music events on the calendar – July’s Trackside Music Festival and September’s Canadian Country Music Week (CCMW) – it’s safe to say London is firmly affixed to the Canadian country map. But for Tourism London’s director of culture and entertainment tourism, this is just part of a long and steady process – one he hopes will continue to grow and flourish.

“You also have to add Rock the Park Gone Country, the emerging artists’ initiative, and the Country Music Association of Ontario,” Chris Campbell says. “It points to a few things. London is being viewed as a vibrant music destination – that’s the focus from a tourist perspective. “(London) is a hotbed for country music – having two country music 38 Lifestyle May/June 2016

stations in the area is an anomaly,” he says, adding the fact the city is surrounded by predominantly rural areas may help.

London’s ability to attract two of Canada’s hottest country music events due in part to the Forest City’s proven on-ice performance.

“We started working on CCMW in 2012 and it’s been a very educational process,” Campbell says.

“One of the factors that helped us was the success in major sporting events. There is a community of volunteers that help ensure these events are successful. There are also a number of sponsors and media who have been supportive of events.”

Whether it’s from hosting two Memorial Cups, the 2013 World Figure Skating Championships, or legendary acts like Cher and Elton John, London is building up a reputation as a place where events can thrive.

“London has these attributes, along with the success of country music concerts at Budweiser Gardens and the London Music Hall – the stars have started to align,” Campbell says.

So, with a summer of country music ahead, Campbell’s team and his partners at the local venues and the London Music Office have a chance to pause, right?

“We’re not taking a breath – we’re already working on things beyond this. In fact, we’d already like to host (CCMW) again before we’ve even hosted it this time,” he says. “We look at it as part of a movement. We want to establish ourselves as hosting a larger music event.”

“It’s an opportunity to showcase a lot of our venues to management groups and agents. We can show what kind of vibrant music scene London has.”

“Look for larger outdoor types of events,” he says. “We want to bring the music to the people.” n

Coasting Texas style

rom the towering hotels that border North Shoreline Boulevard, the Gulf of Mexico sparkles like a three-carat diamond, and blue skies stretch forever. Everything’s bigger in Texas and that’s true of Corpus Christi, the jewel of America’s third coast.

If you stroll along the seawall dotted with picturesque gazebos, the waters of Corpus Christi Bay sparkle in the sun, and boats – shrimpers alongside sail boats and power yachts – give visitors the diverse flavour of this Texas town.

Your jaunt will take you by the Selena memorial, an interactive homage to the popular Hispanic singer who died in Corpus Christi and still has a strong following there. Among the dozens of fans who gather there daily, watch for the gentleman with a pet miniature horse sometimes perched nearby.

The Lex – U.S.S. Lexington, a Second World War aircraft carrier, dominates the harbourscape, glowing purple after dark and offering tours during the day.

You can also catch the RTA harbour ferry and get a closer look at the Lex from the water, which provides a panoramic view of the city’s skyline and is a cheap way ($3 US per person) to get to the municipal beach.

Across from the marina, Segcity Segway tours loop visitors through the seawall and museum districts, providing a really fun way to see some of the city and learn about its history and culture from guide Tim Heuston.

Watch for the model of the solar system, near the People’s T-head, that shows the planets relative positions to each other.

TOP RIGHT White gazebos line the harbour front and provide shade to escape the hot Texas sun for a few minutes. The popular Selena memorial is housed in one of these where North Shoreline Boulevard meets the People’s Street T-Head.

Staying at one of the many seaside hotels – like the Holiday Inn – puts you within walking distance of all these and more of the city’s enjoyable sites and eateries.

The Water Street Oyster Bar serves the freshest seafood and, of course, oysters, prepared six different ways.

To enjoy delicious seafood while actually on the sea, visit Landry’s Seafood House. Or take a drive over to Mustang Island for some beach time and stop for lunch at a casual open air eatery called Doc’s Seafood and Steaks.

The Whataburger chain of restaurants was founded in Corpus Christi and the only two-storey one resides along North Shoreline Boulevard, where you get a view of the harbour while chowing down on their famous burgers and onion rings.

Adding colour to your trip is easy with stops at the South Texas Botanical Gardens and Nature Centre or Texas State Aquarium. Interesting and active flora and fauna will greet you at both stops. 

Even if you’re not a fan of J.R. Ewing, Dallas is worth a stop. The world’s biggest domed stadium resides there and the home of the NFL’s legendary Cowboys is as beautiful as it is enormous. One of Dallas’ most infamous moments – the assassination of President John. F. Kennedy – is commemorated at the Sixth Floor Museum at Dealey Plaza.

In the wintertime, feet love in-floor heating. But this innovation can do more than keep your feet warm. It can keep your whole house warm, completely replacing other heating systems.

“We have many large, high-end homes that are completely heated with in-floor heating,” says Paul McRoberts, owner of iFH Designs and Installations in St. Marys. He pioneered the technique in Southwestern Ontario. He’s also installed in-floor heating in a seniors’ complex and an

He admits that when he introduced the concept in 1992, it was met with skepticism.

“When I first started promoting it, everyone said, ‘That’s not going to fly.’”

But McRoberts, who is trained in hydronics and hot-water heating, disagreed and pushed ahead.

“Now we’re one of the leaders,” he says.

The system works by circulating warm water through a network of cross-linked pipes placed beneath the floor. The surface

Its popularity is growing for a couple of reasons, McRoberts says.

One is long-term energy savings.

Although the initial cost is higher than traditional methods, he says homeowners will quickly reap savings.

He cites the example of his own 4,000-square-foot home. “It’s the only heating we have and I think my highest energy bill last year was $125.”

Another attraction is the clean and healthy nature of this heating.

Because there are no fans, pollens are not being circulated through the

air, and there’s less dust. It’s ideal for people with allergies.

And, because there are no heaters, radiators or vents, furniture can be arranged anywhere without worry, he adds.

While other companies offer in-floor heating, iFH has the advantage of longevity, experience and solid contacts made over the years. It services clients from Port Stanley to Goderich and Sarnia to Kitchener, about 60 per cent of them residential.

awle Blackman has been in the furniture business for more than 35 years, so he knows what sets a store apart from the competition and for the owner of Modern Living London, it’s all about service. And sometimes a location can give you an edge in the market as well.

After moving into a former car dealership on Wharncliffe Road South in 2014, Blackman feels his customers are even better served with more choice.

“This location has certainly given us a step up,” he says, with 13 lines of furniture available.

UniqUe to each of Us, grieving is a cyclical experience

I

n our fast-paced world, some things just can’t be fast-tracked.

Among them is grief.

This is a lesson that Victoria Cripps has learned the hard way.

The very hard way. Three years ago, the 66-year-old Londoner lost her 36-yearold daughter Alana to bladder cancer.

Previously married for two decades to a funeral director, Cripps thought she had a handle on the grieving process.

But when she lost her only child, she also lost the will to live.

Seeking help from Rebecca Machado, a psychotherapist and executive director of Daya Counselling Services, Cripps has found her way back to the land of the living, but still finds day-to-day life a challenge.

“One of Alana’s and my favourite movies was Shawshank Redemption and there’s a line – ‘Get busy living or get busy dying’ – that I remembered and it helped me decide to try living again,” says Cripps.

So she did.

According to Machado, “Grief is a part of life because we connect with other human beings and experience pain when they are absent. Often we can’t make sense of how the world can be changed in this way. How can the sun be shining and others are carrying on when our world has so profoundly changed that it seems to have stopped?”

With an ageing demographic dominating the landscape of North America, grief will more actively dominate our collective psyche. So, learning how to deal with it is important.

Sarah Hilton, of Stressed Out Solutions, agrees. “Each of the stages doesn’t last a minute or a day. It’s like a roller coaster: some days you’re feeling better and then a song or a smell can send you back into feeling anger, sadness and denial all at the same time,” she says.

She adds that those with some sort of spiritual connection are often able to move beyond grief more easily than those who have none. “People who believe in a higher power can often grieve more easily because it’s part of their culture and different types of spirituality have their own types of processes for grieving,” she says.

Lisa Evans takes a different approach to help with grieving. A reflexologist with a mobile practice, she found that doing reflexology on someone who is grieving can provide relief when a distant relative who had recently lost her husband was visiting.

“I had my stool with me and performed a reflexology session on her outdoors,” explains Evans, saying that this proved to be a cathartic experience for her relative. “She said it was the first time she could really breathe since it happened.”

Evans describes reflexology as “acupressure on the bottoms of the feet, corresponding with all the organs and glands, stimulating nerves to send more energy to every part of the body.”

Evans has performed treatments on a dozen or more people through her volunteer work with Bereaved Families of London over the past two years.

While each person’s take on it is unique, the experience has similarly profound results.

“In groups or therapy, they are expected talk but often don’t know what to say or how to process what they are feeling. When they sit in my chair their situation is being addressed, but they don’t have to do or say anything. Often this helps them feel able to open up, sometimes for the first time,” says Evans.

Since each person’s grief journey is individual, Machado says it must happen at his or her own pace. “We need to tune into ourselves and notice what’s right for each of us. Some do better with support, others by being alone.”

Knowing that you can work through it is the best encouragement. “We are set up to move through grief and to heal because throughout history death has happened, and we are wired to heal from it no matter how hard the process might be,” she concludes. n

Bearded branding Redding designs seeks to be web developeRs to the woRld

A

team of multimedia experts, based in Aylmer, is getting global recognition for its web development work.

And its collective facial hair.

With clients across Canada, the U.S. and as far afield as Spain, web development firm Redding Designs Inc. – which calls itself the ‘beard loving multimedia company’ – has put its bearded logo on websites around the world.

The beard branding seemed a natural fit considering every male employee sports some sort of scruff – from soul patch, to goatee, to lumberjack-style brush.

“We were toying with the idea of playing on that,” says CEO and founder Rob Redding. “So we designed a ‘beard seal of approval’ logo and put it out there.

It’s really taken off.”

While the unique brand captures attention, it’s the business philosophy and the team expertise that’s behind the success story.

The one-stop tech shop handles everything from website concept and design to branding, logos, maintaining search engine rankings and even social media management. Redding Designs also creates business cards, brochures and signs.

“It’s all done in-house,” Redding says. “We don’t outsource. Clients deal directly with the people who are working on their sites.”

“The customer service side, I take seriously,” he says.

“The website is the face of a company today. It’s having a quality website that’s going to push a company over the top. Our goal is to make sure the website reflects the quality of the client’s work or craftsmanship.”

It’s working. In three years, Redding Designs has grown from a one-man operation to an 11-member team, Redding says.

“Everything is moving fast,” Redding says. “We’re very busy and it’s exciting.” n
