Risotto Venezia Antica Courtesy Il Fornaio INGREDIENTS: 1 package Il Fornaio Carnaroli Rice (200g) 7 to 8 ounces boneless, skinless chicken breast, trimmed 4 cups chicken stock 4 tablespoons extra-virgin olive oil 8 cloves garlic, peeled 1 teaspoon shallots, chopped 2 ounces white wine 2 to 3 ounces asparagus, sliced 1 pinch saffron threads 1 tablespoon butter 1 ounce Parmesan cheese Salt and pepper to taste PREPARATION: Trim chicken breast of any fat. Slice lengthwise into three strips and then cut into 3/4-inch cubes. Bring chicken stock to a boil. Meanwhile in a 4-quart pot, add 2 tablespoons extra-virgin olive oil and garlic cloves. Sauté garlic until brown on all sides. Remove garlic and cool. Cut cloves into thirds and set aside. Add 2 tablespoons extra-virgin olive oil to pot; add the chicken. Cook until chicken is brown on all sides then add the chopped shallots and Carnaroli rice and stir for 30 to 40 seconds. Add the wine and asparagus and let the wine reduce. Add the saffron threads. Slowly begin to add enough boiling chicken stock to keep the rice completely covered with liquid. Keep the liquid at a low but constant boil at all times. As the liquid absorbs, continue to add just enough chicken stock to keep the rice completely covered. Stir risotto frequently to avoid burning or sticking on the bottom of the pot. Total cooking time is about 15 to 18 minutes. Risotto should be served al dente. Turn off the burner, add butter, Parmesan and roasted garlic and mix until creamy. This last step, to cream the risotto with the butter, is called “matecare” in Italian meaning “to stir in a circular motion consistently.” Do this for about 1 to 1-1/2 minutes. It is the most important step to achieving great risotto results. Yield 4 cups. Serves 4 as an appetizer; 2 as a main course.

Stuffed Chicken Feta with Raspberry Sauce Courtesy Crown Bistro PREPARING CHICKEN: 4 Boneless, skinless chicken breast (about 1-1/2 pounds) Trim any fat around the edges. Place chicken between wax paper and plastic a bag. Gently pound with a mallet, season with: Salt and white pepper to taste Cover half of the underside of each chicken breast with: Feta Cheese (2 or 3oz) for each chicken breast Fold the chicken breast in half over the cheese and press the edges firmly to seal. Insert a toothpick into the chicken breast to prevent the packet from opening during cooking. Combine in a wide, shallow bowl: 1 cup of dry breadcrumbs 1/2 teaspoon salt 1/2 teaspoon white pepper Whisk together in a shallow bowl: 2 large eggs 3 teaspoon water Spread on a plate: 1/2 cup all-purpose flour Working one at a time, press both sides of each packet in the flour, then dip in the egg mixture and coat with the breadcrumb mixture, patting with your fingers to make the crumbs adhere. Heat in a 10 to 12 inch heavy skillet over medium-high heat. Add: 4 oz olive oil Place the chicken in the skillet and cook, till nicely golden brown. Using tongs or spatula, turn the chicken over, and repeat. Preheat oven to 350, put the chicken in the oven for about 3 to 4 min more. Take the chicken out, drain on a paper towel. PREPARING RASPBERRY SAUCE: 1/2 cup frozen or fresh raspberries 2 oz. Port wine 3 oz. demi-glace* Place all in saucepan, reduce by half, coat the chicken with sauce and serve. *Note: Demi-glace can be purchased at specialty food stores, Great News Cooking School in Pacific Beach, and online at www.williams-sonoma.com

Ham, Gruyere and Apple Sandwiches on Ciabatta Courtesy Panera Bread INGREDIENTS: 1 loaf Ciabatta bread (available for purchase at Panera) 1/4 pound deli-sliced ham 2 ounces thinly sliced Gruyere cheese 1/2 apple (your favorite variety), thinly sliced Dijon mustard 1 teaspoon butter (for hot sandwich only) PREPARATION: For a cold sandwich, slice the Ciabatta lengthwise. Spread each half with Dijon mustard. Layer cheese on one half. Fold slices of ham on top of the cheese. Top with the apple slices. Cover with the other half of the bread. Cut sandwich in half to serve. For a hot sandwich, slice the Ciabatta lengthwise. Spread each half with Dijon mustard. Sauté the apple slices in a teaspoon of butter in a non-stick pan just until tender. On one slice of bread, layer cheese, then apples and top with ham slices. Top with remaining bread. Heat the sandwich on a grill press or grill pan until warm and cheese has melted slightly. Cut the sandwich in half to serve. Makes 1 sandwich. Country Bread and Tomato Soup with Mashed Basil Oil Courtesy Panera Bread INGREDIENTS: 1/2 cup fresh basil leaves, packed 3/4 cup extra-virgin olive oil Salt and freshly ground black pepper, to taste 1 teaspoon crushed red pepper flakes 3 large garlic cloves, thinly sliced 1 teaspoon dried oregano 2 28-ounce cans whole, peeled tomatoes or 12 Roma tomatoes, peeled 1 quart water or vegetable stock 1/4 cup dry red wine 1 loaf Country Bread (available for purchase at Panera), torn into bite-size pieces
PREPARATION: Mash the basil well with 1/2 cup of the oil and season with salt and pepper. Set aside. Heat the remaining 1/4 cup oil over medium-low heat. Cook the garlic, red pepper and oregano just until the garlic begins to sizzle. Crush the tomatoes with your hands over the stockpot, including all juices. Add the water or stock and red wine. Bring to a boil. Reduce heat and simmer for 10 to 15 minutes. Stir in the bread and remove from heat. Serve immediately, drizzling the soup liberally with the mashed basil oil. PREPARATION: Sauté shrimp in small amount of olive oil and garlic until three-quarters done, then add sauce and cook until shrimp are tender. Do not overcook these shrimp; they will get tough! Pasta Arrabbiata Courtesy Il Fornaio INGREDIENTS: 1 teaspoon Arrabbiata mix (available for purchase from Il Fornaio) 6 ounce pasta of your choice: penne, fusilli or rigatoni 14.5 ounce can of whole peeled tomatoes, hand-crushed 2 teaspoons extra-virgin olive oil 3 pinches salt PREPARATION: This special Arrabbiata mix will make a very spicy sauce. Use a bit less or more to your taste. Be sure to mix the spices well before using and store them in an airtight container. In a saucepan, combine the olive oil and Arrabbiata mix. Cook for 30 seconds, then add the hand-crushed tomatoes and 2 pinches of salt. Cook for 20 to 25 minutes over low heat. Salt to taste. Bring 7 cups of water to boil with 1 teaspoon. of salt and add the pasta. Cook the pasta until al dente. Drain the pasta and toss with the sauce. Optional: Drizzle with 1 tablespoon of extra-virgin olive oil and/or sprinkle with Parmesan cheese to taste.
