t's that time of year again! The kids are out of school, everything is in bloom, and the great outdoors beckons. We are blessed to be surrounded by an abundance of stunning nature and experienced people who can help us navigate it. As definite outdoors amateurs, albeit enthusiastic ones, we've found it necessary to seek the counsel of some local experts to help us learn where to go, what to do and what to avoid! Our favorite experience in publishing this magazine has been meeting people who are passionate and excited about what they do. We've chosen to highlight many of those people in this issue, from Tim and Sara to Sam, Don and Jack. Our entire family has had some great adventures (and some misadventures) in these mountains. We hope that reading through this will inspire you to go out and have your own family exploits this summer. There is no shortage of mountains, rivers, campsites and trails to explore, nor is there a lack of experts who are excited to help you take the first steps or find the best “secret spots”. To quote Terry Pratchett: “Why do you go away? So that you can come back. So that you can see the place you came from with new eyes and extra colors. And the people there see you differently, too. Coming back to where you started is not the same as never leaving.” This for us summarizes everything we see in our kids' eyes when they experience new things in nature and sense the excitement of the unknown. So take yourself and your family outside this month, and get into it!

ASHEVILLE : The East Coast’ s Cycling Hub SAM WHITE
A
sheville is the hub of cycling on the East Coast. Other cities may argue for this status, but very few offer the diversity of cycling this area. Below are samples of excellent areas for cycling in and around Asheville, all of which are within a two hour drive of the city. There are rides for the family and moderate skill level mountain bikers along with something for the more adventurous. You can find more information by visiting Liberty Bicycles at 1378 Hendersonville Road, or at libertybikes.com. BENT CREEK The Bent Creek Experimental Forest offers great mountain biking just ten minutes from most areas of town. Bent Creek offers a diversity of off-road riding, and for the casual cyclist, a variety of gravel road and light duty trails. Roads such as Hard Times and South Ridge as well as the Explorer trails in Bent Creek allow a new off-road rider to get their toes wet without getting in over their heads. For those looking for more aggressive and technical riding, trails such as Green’s Lick, Little Hickory and Lower Sidehill will offer plenty of adventure and adrenaline. Information is available at srs.fs.usda.gov/ bentcreek, or you can visit Liberty Bicycles to pick up a detailed trail map. DUPONT FOREST Dupont State Forest is located on the back side of Brevard. Many people know it by its waterfalls, but Dupont is also home to some of the best mountain bike trails in the Southeast. Go out and ride the Ridgeline trail to enjoy its fast, flowy terrain or try out Cedar Rock and get a touch of slick rock. SWAMP RABBIT TRAIL If you’re looking to do some family riding only a short drive from Asheville, check out the Swamp Rabbit trail. This wonderful path system begins just north of Traveler’s Rest High School in South Carolina and weaves through many communities and parks on its way to downtown Greenville. A great place to end your ride in downtown Greenville is Reedy River Park, and there are also lots of cafes and shopping along this route. More information can be gathered at greenvillerec.com/swamprabbit. VIRGINIA CREEPER TRAIL Located in Southwest Virginia, the Creeper Trail follows an old railroad grade. Beginning in Abingdon, VA, it passes through Damascus on the way to Whitetop Station. Lots of shade and plenty of streams are some of the highlights of the Creeper Trail. There are bed and breakfasts along the way, as well as many cafes and restaurants to feed hungry children and grown-ups along this family friendly route. Point to point from Abingdon to Whitetop Station is thirty-four miles; if you’re not ready to tackle the whole distance, start in Damascus, which is only seventeen miles to Whitetop station. 1 Tsp Kosher Salt ½ Tsp Black Pepper ¼ Tsp Granulated Garlic For the Ragout: 1 Tbl Olive Oil 1 Cup Shiitake Mushrooms, de-stemmed and sliced 1/2 Cup Grape or Cherry Tomatoes, Halved 2 Tbl Yellow Onion, Diced ¼ Cup Sherry Wine ½ Tsp Fresh Rosemary, Chopped ½ Tsp Fresh Garlic, Chopped 4:1 Ratio of Kosher Salt and White Pepper Blend Rub both sides of the steak with dry rub, and place on the grill with med-high heat. Meanwhile heat olive oil in a sautee pan over medium high heat. Add onions and cook until tender, about 1 minute. Add mushrooms, garlic, and wine, and cook until soft, about 2 minutes. Add rosemary and cherry tomatoes, and toss until thoroughly heated, about 1 to 2 minutes. Add salt and pepper to taste. Pour mushroom ragout over steak and enjoy NOTES:
I use Hickory Nut Farms Steak for this recipe because their 100% grassfed beef imparts a distinct taste, almost bordering on the flavor of wild game. I use a simple rub to enhance those flavors rather than mask them. The ragout was chosen for the combination of earthy, yet light flavors that compliment the robustness of the meat. Ragouts can be made with nearly any combination vegetables, so feel free to experiment! The sherry wine can also be replaced by Marsala, or other similarly sweet wine. Drier red wines tend to compete with the flavor of the meat, but if that’s what you have on hand, then go for it! A splash of balsamic vinegar can also be substituted for the wine that will give the meal an even more earthy base to it. Also feel free to experiment with the fresh herbs of your choice. Enjoy!

Don explains that shooting clays were developed by hunters to keep their skills sharp during off seasons and that different sections of clay courses are designed simulate various hunting scenarios. “Each station represents a different shooting situation you might experience while hunting,” he writes. “The neat thing is [that] unless the course is busy, you can usually stay at one station and shoot at a target that simulates a hunting situation with which you’re having trouble.” It turns out that a day at a clay shooting course is a great way to strengthen friendships and hunstman skills alike. Though rooted in tradition, new and perhaps unexpected groups of people are beginning to see what Don sees in the hobby. “Young professionals are getting into it,” he says, and notes that the since largest growing demographic for shooting sports is women. Green River Adventures was born after Sara graduated from Brevard College. That was where she met Tim; both had transferred to Brevard from other colleges for its world-class degree program in Outdoor Education. Tim and Sara also both had a long-standing background in whitewater kayaking — he a raft guide, she as a whitewater kayaking instructor. Sara had known for years that she wanted to open her own whitewater kayaking school, noting that she always had an entrepreneurial spirit. The couple spent some time after college leading three-week-long wilderness excursion trips for American teens in Costa Rica, which prepared them to launch their very own adventure business upon returning to the states. Their level of dedication and commitment belied their youth:

Sara was only 25 when the business launched. “The learning curve was pretty steep,” she admits. Green River Adventures got its start as whitewater kayaking school, later expanding to include inflatable kayaking trips, a term that people “use synonymously with whitewater rafting,” explains Tim. Over the years, they expanded to add multiple new adventures to their offerings, including stand-up paddleboarding, swimming hole treks, and their well-loved waterfall rappel excursions. Four years ago, they opened up a zipline canopy tour called The Gorge, located at one of the area's most remarkable natural wonders. Through this growth and development, they have remained commitment to quality: their facilities, gear, and administration raise the bar for their industry. “We have a quality standard,” Sara says. “We have a specific way that we like to run our trips.” This is evident in every last detail of their outposts offering, but what really drives it home is the sheer professionalism of their staff. Tim and Sara make it a point to work with the most experienced, courteous, and (importantly) fun-loving tour guides in our area. "The people we hire are extremely passionate about what they’re doing, have fresh ideas and a ton of enthusiasm," she says. “At the beginning of the day, they are stoked to greet the clients.” They’re also very savvy about the natural history and science of the area, and are more than happy to share educational
